What are Vegetable Oils? Vegetable oils are oils extracted, from the seed or grain, usually with a petroleum-based solvent, to obtain a liquid fat for frying, baking or sautéing. Approximately 42 percent of a seed is oil. Oils can also be expeller pressed which is a more traditional, mechanical, way of extracting the oils. How To Buy: All vegetable oils are plentiful and readily available, both domestic and imported. Buy a size that you will consume in up to 3 months from purchase. How to Read the Label: Look for country of origin, mixture with other oils, unrefined or refined, and the suggested uses. Choices: Corn oil is available both refined and unrefined and has a neutral flavor. Palm oil (not palm kernel oil) has both monosaturated and saturated fats. Canola oil is made from rapeseed; and is one of the most popular oils.

How to Use: Most of these oils are too bland for salad dressings (stick to the more flavorful olive or flax oils for salads). For light to medium heat for sautéing and sauces, use canola, grapeseed, safflower, sunflower or soybean. For medium-high heat for baking, frying, sautéing and roasting, use corn, grapeseed, safflower, sunflower, or soybean. For high heat for grilling and deep-frying, use cottonseed, canola, corn, grapeseed, safflower, sunflower or soybean. How to Store: Vegetable oils should be stored in their original cans or glass bottles in cool, dark cupboard; do not put near stoves or other cooking appliances, as oils can spoil and become rancid. Refrigeration is not necessary, but acceptable. Decant from plastic bottles to ceramic or stainless steel containers for freshness. Health Benefits: Vegetable oils are 120 calories per tbsp., contain no cholesterol, and are 100 percent fat. Smarter Shopping: Pour in spray bottles designed for oils (otherwise nozzle may clog) to help portion control and limit amount of fat and calories, and for a more even distribution of oil.

Warm Snow Pea & Chicken Salad

Perfect late winter/early spring recipe! This recipe is perfect for saying goodbye to Winter and hello to Spring. It is warm and nourishing in nature to balance the residual chill of winter, yet light and moving to help stimulate and move Liver energy. Enjoy!! Ingredients 1 pound boneless, skinless chicken breast, trimmed 1 14-oz. can reduced-sodium chicken broth 3 tablespoons rice vinegar 3 tablespoons reduced-sodium soy sauce 3 teaspoons toasted sesame oil, divided 2 tablespoons tahini, or cashew butter 1 tablespoon minced fresh ginger 2 cloves garlic, minced 1 pound snow peas, trimmed and thinly slivered lengthwise 2 tablespoons chopped cashews Preparation 1. Place chicken in a medium skillet or saucepan and add broth; bring to a boil. Cover, Healthy Living Magazine

reduce heat to low, and simmer gently until cooked through and no longer pink in the middle, 10 to 12 minutes. Transfer the chicken to a cutting board to cool. Shred into bite-size pieces. 2. Meanwhile, whisk vinegar, soy sauce, 2 teaspoons sesame oil and tahini (or cashew butter) in a large bowl until smooth. 3. Heat the remaining 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add ginger and garlic and cook, stirring, until fragrant, about 1 minute. Stir in slivered peas and cook, stirring, until bright green, 3 to 4 minutes. Transfer to the bowl with the dressing. 4. Add the chicken to the bowl with the peas; toss to combine. My“Voyage of the Soul” by Janet Dwinells

We each live our own unique journey and make choices that change the path of our lives. Many people may consider this choice of mine a bit “crazy” but I have to tell you that for me, there was no other path at this moment in my life. Somewhere in the depths of my heart lived a longing to move ever deeper into my true self and to discover how I might fit into a bigger world. A deep desire to travel arose and as I began to acknowledge this inner impulse, doors began to open, people arrived in my life in unexpected ways and the path miraculously opened wide in front of me. In moments of doubt the question kept arising “If not now, when?” And so, it is that I said “Yes” to a new way of life.

The Journey Begins . . . Good-bye to the USA I gave up a perfectly good position with a perfectly good organization, one for which I’m grateful to have worked with. With the help of my daughter I sold most of “my stuff” sending the remainder to my “angel” on Cape Cod to be stored until my return. Saying good-bye to loved ones in California was emotionally difficult yet adventure awaited and it’s always hardest on the people left behind. Life was a whirlwind of activity as with the help of friends, we cleaned out our apartment in Petaluma and said good-bye to California for good. Together, my daughter, Shoba (her dog) and I flew to Boston and I had 10 days to see old friends and family, and share time with loved ones. Finally the day of my new life arrived and here begins the adventure: Leaving on a jet plane from Boston began the longest and strangest journey of my life! Above the Earth Petaluma – Boston – New York – Brussels – Chennai – Madurai – Perumalmalai – Bodhi Zendo To say that the reality of India shocks your system is undeniable. It’s hard to believe that Healthy Living Magazine

millions of people live in this state of poverty daily without a complaint, just accepting whatever life presents to them with a happy smile. Military police at the exits of the airport didn’t provide me any comfort yet this was only the beginning. My journey led me to this most sacred space in India. The Circle of Life and Death To my western mind the reality of the sacred city of Varanasi is unfathomable. To survive here one must experience India through the open heart because the mind can make little sense of how people can live harmoniously in such immense poverty day after day. The sacred river Ganges is lined with “ghats” which are huge concrete steps making their way from high above where the buildings live, down to the edge of the river. There are over 100 ghats and our guest house was at the Assi Ghat, the last ghat to the south. Taking photographs is not allowed at the burning ghats and will most likely result in your camera being confiscated, along with incurring a steep fine and irate Hindu pilgrims. Walking the ghats becomes a pilgrimage in itself, avoiding the Brahmin bulls, the laundry laid on the steps to dry in the sun, puppies with broken legs, watching with extreme care

where you step, climbing up and down to avoid the teenage boy’s cricket games, and ignoring the “touts” relentlessly trying to part you from your Rupees. continued on page 8 . . .

Here you can buy a boat Varanasi Ghat ride along the river, a cup of chai, cheap bangles or myriad other plastic or tin ware. It’s difficult to resist giving to the poorest waifs selling postcards or flower wreathed candles you can light and float in the Ganges in honor of the dead. The beggars are bold and emblazoned with the oddest arrangements of colored strips of clothing. Holy men (Sadhu’s) along with other men of all shapes and sizes come each morning to bathe in the polluted (but sacred) river, which happens to be the repository for garbage, excrement, dead bodies and whatever else may find its way into the flow. Women can be seen washing their clothing here each day. The smoke filling the sky is overwhelming and masks are common sights. As we journeyed along the Ghats, both Lorena and I embodied a profound feeling of peace and tranquility. It was somehow more serene than

begun with families circling the loved one 5 times, one for each element, earth, wind, water, sky and fire. The fire is lit, the soul leaves the body and blessings are given with the prayers of all. Then there is the fire for the poor guy who has little wood, leaving his legs sticking out from the flames, no family, no prayers, with whatever is left of his body being thrown in the river. In between we see the “middle class” burning with family present and hopefully enough wood to cover his/her body. Yet amongst all the poverty, just as the sacred water winds itself through India, each day flows with an easy, carefree attitude. I have yet to hear one Indian complain about his/ her lot in life. Each just does what one does, day in and day out, adding his/her own unique contribution to the multifaceted tapestry that is India. I was grateful to be in this most unusual land for this auspicious 2012 New Years Eve. We attended a concert of tablas, sitars, flutes, and other native instruments to ring in the New Year. Hot Topic Keep Your Cholesterol by Phil Lempert

Cholesterol is one of those, gotta have it, but don’t want to have too much, or the wrong kind, of nutrients. Cholesterol is absolutely necessary for the formation of certain hormones and essential for other basic cell functions. It is estimated that American’s daily dietary cholesterol intake is about 300500 mg, and the oxidized version (will touch on this later) could account for up to 10 percent of this. American Heart Association recommends no more than 300mg cholesterol from dietary sources, and also reminds us that the body, particularly the liver, produces its own cholesterol. Cholesterol from eggs, pasture raised, grass fed meats, and dairy foods, when consumed with a whole foods based diet, in moderation is not harmful. The oxidized or overcooked, CAFO sourced meat and other products are where we can run into trouble. A study from the Chinese University in Hong Kong isolated oxidized cholesterol in foods and found that it both increases total cholesterol levels and promotes atherosclerosis; the hardening of the arteries. Oxycholesterol, or oxidized cholesterol, is generally formed when foods of animal origin (most contain trans-fats) are heated and cooked at very high temperatures. There has been little research comparing oxidized cholesterol with non-oxidized cholesterol (LDLs and HDLs). The Chinese study involved feeding hamsters either a diet high in oxycholesterol or non-oxidized cholesterol; those in the former displayed total blood cholesterol increases of up to 22 percent versus the non-oxidized eaters. As well as a significant increase in blood cholesterol – or because of it – the oxy-eaters also demonstrated a greater deposition of cholesterol in the lining of their arteries. For those watching their cholesterol, choosing meals can be a challenge. Here are some tips to keep you on track and your cholesterol levels health. Avoid trans-fat. Stay away from items that list “partially hydrogenated oil” on the label. Reading all food labels is essential, even if the nutrition facts states 0 trans fats. Use fresh garlic when cooking. Garlic has been shown to help lower cholesterol levels. Brew some green tea. The antioxidants in green tea help lower cholesterol and prevent the oxidation of LDL cholesterol.

Fitness for Seniors

Take the initiative to find the best exercise activities for your needs and realistic goals. The areas that are important to consider for staying healthy, active and independent include: strength, endurance, balance, optimal posture, flexibility, maximum capacity for movement and more energy. Determine the best program for your individual needs. One size does not fit all. Individual needs and abilities vary and this is especially true of older adults. Seek out activities that you enjoy. Program options can include but are not limited to:

Exercise is for everybody. Studies show that regardless of your age, folks who stay active can reap the benefits of key six, intentional exercise. The National Institute on Aging (NIA) gathered some of the top experts on exercise for seniors and discovered that, for the most part, when older adults lose the ability to do normal activities of daily living on their own, it's not due strictly to age. It is more likely that they have become inactive. We know that an active lifestyle enhances quality of life at any age. Seniors just beginning an exercise program absolutely must first consult with their physician. This is imperative from a safety perspective. In addition, your physician is most likely the best and most reliable source for consultation as to what activities at the appropriate intensity level would be best to include in your exercise regimen. He or she can provide expert advice and help you to modify and progress your exercise program on an ongoing basis. Your physician may also know the best resources for exercise programs in your vicinity. Local YMCAs, community centers, parks and recreation centers, senior centers, churches/ synagogues, schools, community colleges, hospitals, rehab centers and fitness centers all are possible venues for you to find expert help for both individual and group exercise instruction. You are sure to find these resources available in your home town and have a whole lot of fun. There is also plenty of information available on the Internet regarding fitness for seniors. However, it is vital that a resistance training program be tailored and monitored to meet the medical concerns, overall physical condition and functional capacity of each individual senior. recommend incorporating resistance training into your program. Again, seek out individual or group instruction at the onset of your program to ensure that you understand the correct form for all exercise in your regimen. Good help is out there and the people who teach fitness classes for seniors are eager to help you. Modes of resistance can include free weights, tubing, Therabands, machines, soup cans or body weight exercises. Studies have confirmed that even folks in their 90s receive the benefits that we all strive for from a resistance training program. Focus on exercises for all major muscle groups. Begin slowly. out at an elevated rate continuously to supply oxygen to the muscles and improves the overall efficiency of the cardiovascular system. Many activities listed above can be considered aerobic depending on the intensity level. Again, finding the activities that you enjoy most will enable you to be consistent and will ensure success. Walking is a very common choice and an excellent activity to include in your program. You may choose to use a treadmill or indoor track at a fitness center, walk outside, or use an outdoor track in your neighborhood. Begin by walking for 10 minutes and progress to walking 20 minutes every other day. Continually build on your progress. Make sure that you have comfortable shoes for your walk or for any exercise that you choose. I always advise people when purchasing athletic shoes to wear them indoors for a minimum of two days to make sure that they are comfortable and will suit your needs. This way you may exchange them for a shoe that will work optimally for you. Buy a heart monitor and use this for all exercise activity. Consult with your physician as to an appropriate target heart rate training zone for your fitness endeavors. You may choose a non-weight bearing mode of exercise such as a stationary bike, swimming, yoga/stretching or gardening depending on the present condition continued on page 16 . . .

Traditional Chinese Medicine Springtime is associated with the Wood element and Liver energetic. Living in harmony with nature and the cycles of the seasons can assist us in finding balance throughout the year. As we prepare to welcome in the Spring season, it is interesting to keep in mind how Traditional Chinese Medicine (TCM) views this season. Spring is the season for regeneration and renewal of spirit, mind and body. It's time for cleaning out winter's clutter, heavy foods, and inactivity. The ancient Chinese looked at Spring as the time of year to "rise early with the sun" and take brisk walks. The recommended diet of this season is light and fresh, with foods that accentuate the ascending and expansive quality of Spring. In TCM theory, Spring corresponds to the "Wood" element, which in turn is conceptually related to the Liver and Gallbladder energetic organs. The Liver is responsible for the smooth flowing of Qi (energy) throughout the body. When the Liver functions smoothly, physical and emotional activity throughout the body also runs smoothly. When the Liver energy is blocked, stagnation sets in, along with a plethora of symptoms, including digestive troubles, headaches, insomnia, and many more. So, for optimum health this spring, move your Qi! We recommend the following-Stretch - According to TCM theory, the Liver controls the tendons by storing blood during periods of rest and then releasing it to the tendons in times of activity. When you are active, blood goes to the tendons to maintain tendon health and flexibility. Incorporate a morning stretch into your routine. Try yoga or tai chi. Healthy Living Magazine

Eye exercises - The Liver energetic is said to "open into the eyes". Although all the organs have some connection to the health of the eyes, the Liver is connected to proper eye function. Remember to take breaks when looking at a computer monitor for extended periods of time and do eye exercises. Eat green - Green is the color of the Liver and of springtime. Eating young plants - fresh, leafy greens, sprouts, and immature cereal grasses - can improve the liver's overall functions and aid in the movement of Qi. Taste sour - Foods and drinks with sour tastes are thought to stimulate Liver Qi movement. Put lemon slices in your drinking water, use vinegar and olive oil for your salad dressing and garnish your sandwich with a slice of dill pickle. Do more outdoor activities - Outside air helps Liver Qi flow. If you have been feeling irritable or "stuck" (more signs of stagnation), find an outdoor activity to smooth out that Liver Qi stagnation. Try hiking or a round or two of golf. Open Eye Meditation

Stepping into Colored Light and Sacred Geometry

Many of us are looking for simple ways to stay in alignment with our Higher Selves in spite of our daily stresses. Meditation is an excellent tool. There are many types of meditation, some require us to be still while others give us the opportunity to focus quickly, allowing us to rapidly receive the benefits. One of these quick types of meditation is know as "Open Eye Meditation". Here we use images based on the natural order of the Universe know as Sacred Geometry along with the beautiful colors of the rainbow. The best images for meditation have a combination of Sacred Geometry and Color which together form what is know as Light Language.

Light Language is of special help to us now that it is 2012. We can use the energies and alignments embedded in the images to help us to stay abreast of the changing energies around us. We can consciously enter into the higher frequencies with very little effort by triggering our memory of this internal language.

Licorice Root Pinyin: Gan Cao, Zhi Gan Cao

Raw form of licorice root (gan cao) Licorice root is one of the most ubiquitous herbs in the Chinese herbal pharmacopeia. It is sweet in taste and neutral to warm in its thermal nature, depending if it is raw (gan cao) or dry-fried (zhi gan cao). Natural Skin Care for Pets

• Constant foot-licking or facerubbing (with or without runny eyes or itchy ears)

Often pets have unexplained bouts of dry skin and dandruff, but you can ease your pet's frustration if you take a few simple steps. 1. Brush your pet regularly, and bathe him often. 2. If you have a lawn, keep it watered and mow it regularly to keep the grass short. 3. If you have carpeting in your house, vacuum it frequently. 4. Make sure your hands are clean when you pet your animal. 5. Feed your pet fresh, organic foods and give it filtered water, just like you drink. 6. Make sure your pet's bed is made of natural fibers, and clean it often. 7. Don't use pesticides in your home unless absolutely necessary.

A note of caution: according to the American Animal Hospital Association (AAHA), your pet's scratching may indicate more than dry skin. If your pet shows any of the following signs on its skin, see your veterinarian: • Redness rashes or bumps • Open sores • Excessive hair loss (patchy or all over) • Dull, dry hair that easily falls or pulls out

To prevent a tick infestation, brush your animal well before venturing out into known tick habitats, like open fields or forests. Remove as much loose hair as possible, and treat the coat and skin with a natural flea and tick repellent (as noted previously). Work it in as well as you can.

Try sprinkling it on carpets, furniture and areas where fleas tend to hide. In his book "Natural Health Care for Pets," Dr. Richard Pitcairn shares a simple flea repellent recommended by Anitra Frazier in her book "The Natural Cat." It's ideal for use just after you give your pet a bath. Boil 1 pint of water and add 1 teaspoon of dried rosemary (or 1 teaspoon fresh). Let this steep for 10 minutes and strain. Cool until it reaches body temperature, then pour over your pet's coat, rub it in, and dry as usual. This will not only repel fleas, but will give your animal a glossy coat, as well.

Once you return home, check your pet’s body for ticks by using a fine-toothed flea comb. They will be evident as tiny black spots, and you may find the area around them raised or inflamed. If there aren’t too many of them, you can pick them off manually with a pair of tweezers. Grab them as close to the skin as possible, and slowly but firmly pull gently to eject them. Pulling slowly is key; if you pull too quickly you could dislodge the body without the head. (Not a big deal, but may lead to more inflammation.) If you find a large number of ticks or find them hard to remove, contact your vet immediately. Fleas can be a nuisance, especially if your home has pets that frequently go outdoors. 1. A Bio Accessible to Newbies The key to garnering attention from a new audience is to have copy on your website that responds to just that—a new audience! Too often, what we write ends up being a reflection of what we find interesting. Unfortunately though, WE are not our target market. One of the most important parts of a website is the bio and especially in an industry like health and wellness (one of the fastest growing and changing), we have to be friendly to the newcomers and talk about ourselves and our field in a way that can clue in the clueless. 2. Newsletter Subscription Form Did you know the most important part of any website is located in the upper right hand quadrant? This is where our eye is drawn first whenever we visit a page. For that reason, this is where you need to get the most bang for your buck. Including an opt-in form for your newsletter is the perfect way to use this piece of digital real estate. How do you get people to sign up? Provide a bonus (e.g.. a coupon, a free eBook). You can get really creative with the bonuses. {PS – Having a newsletter is CRUCIAL to reminding your customers you exist and to convert web visitors into loyal clients.} 3. Contact Us You’d be shocked to learn how many businesses forget to list their contact information on their site. Don’t stop at providing the address. Provide directions as well for those of us who do not have a GPS! (We exist… really!) Remember to list a phone number and email Healthy Living Magazine

address. Visitors also tend to love to use a handy contact form. 4. Photos of People This sounds like an odd request, I know. But really! People like people. In the age of SOCIAL (which I’ve decided to name our current Facebook-y era), people are attracted to businesses that have a human feel. If your website only has photos of zen objects, nature scenes, and miscellaneous artwork, you need to change things up. Including photos of people also means including a photo of you on your bio page. If you’re a service provider, you (in a sense) must be selling yourself! In order to do so, you must be likable. And to be likable, you have to put yourself out there. 5. Social Media Links What did you do after work today? Check Facebook. What did you do when you woke up? You checked Facebook. What did you do at 3:30 this morning when you awoke from a deep sleep? You turned on the TV and saw nothing interesting. Then you checked Facebook. Get it? If that’s where YOU are spending your time, there is a good chance other people – potential clients – are hanging out there right now. Include links to your business’ Facebook and Twitter pages on your website to create buzz and increase engagement with your brand. There are so many ways that a company and it’s owner can get the word out as to just what they do. This next tip is another that does not cost the proverbial appendages. Word of mouth marketing. This may seem self serving on my part, but here goes. BNI is one great way to get the word out about your business. I said self serving because I belong to a BNI group and it helps me immeasurably in getting new business. BNI stands for Business Network International and you can find a group that would fit your needs by going to www.BNI.com. (Imagine over twenty five individuals being your sales force and you don’t have to pay them!) These meetings of various professionals allow only one person to represent a category of business. For instance, there would be only one landscape architect and one physical therapist

and one gourmet shop owner, etc. But there are so many of these groups around that, even if one group has your field represented, that doesn’t mean that another group in another town or region or that meets on another day and time wouldn’t have an opening. Word of mouth marketing works. Plain and simple. If you aren’t out there networking with people, give it a try. And don’t forget to try and reach out to professions that are not necessarily in or close to your field. You never know where a lead or referral could come from. Getting news and information into our NEW online E-Mag often requires writing a press release.

Be concise: If possible, keep the press release to 100 words. If we need more information - we will call you.

Here are some tips for doing that well :

Be factual: Provide information, but don’t embellish or offer opinions.

Provide the basics: Every press release should answer the Five W’s – Who, What, When, Where and Why. Be specific: For events, tell exactly what is planned and who is invited. For announcements, tell what happened and when, to whom and why it is important.

Be timely: To publicize an event, send the press release to us before the 1st of the month for our deadline on the 15th at least two weeks in advance. For an announcement or similar type of news, send the press release when the news has just happened, not weeks or months later.
