Lately, gratitude has been pouring into the small spaces of my

day. You will see on our staff page Volume Vlll | Issue 1 which means we are entering our 8th publishing year with Heartland LIVING. Part of me is shocked thinking back 8 years ago this was just a thought and a prayer turned into my passion and a way of life. Believe me when I say from the bottom of my heart, I thank all of you reading this for all your support. I know Heartland LIVING wouldn’t be what it is today without my amazing team, my advertisers trusting me to give them the best coverage in the 7 Counties of the Heartland, and of course all you readers that share with me how much you love the magazine.

While sharing about communities, I have to say how proud and honored I am to be raised in Sebring, FL. I admit it has been hard to focus on the layout of this issue with what has happened in my hometown. My Great grandfather had a vision back in 1912 and established a pioneer community. He would be so proud of each and every one of you for all you have done and are doing for the families during this difficult time. They are going to need our continued prayers and support and we will be there for them. Sebring will stay STRONG! I love all the feature stories, recipes and events we have for you in this issue but one has to be my favorite being hands on from the beginning. I got to work with the most talented women or as Morgan McCullers called us, “Girl Bosses”. It warmed my heart seeing so many talented women working together and encouraging each other. I have to give a shout out to photographer Chrissa Greubel for the amazing photography and capturing my vision for “Bohemian Chic”. It brought back my “Hippie Days”. Thank you to Jessica Pleger, Bridgette Waldau and Kaila Albritton for bringing all your talent to this shoot. I couldn’t have done it without all of you involved. A special thank you to all our models bringing your beauty and talent as well. Please see our models names and all involved on page 39. I would like to welcome to our team of writers Rebecca Maglischo from Lakeland. Becca has shared in this issue her amazing knowledge on nourishment and movement for the human body. BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah. RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.

KATY FASSLER has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.

REBECCA MAGLISCHO is a wife and mother of two boys. She holds a Bachelor's degree in Early Childhood and Elementary Education and a Master's Degree in Human Movement with an emphasis on Corrective Modalities. She has completed a two year study in Full Body Systems through the Holistic Nutrition Lab and a certification in Functional Range Condition through the Functional Anatomy Systems. Rebecca opened Haka Fitness in Lakeland, FL.

SHARON CANNON Sharon's passion has always been photography. She is an award winning photographer having transitioned from amateur to professional in 2010. She is a member of Okeechobee Main Street, on the arts and cultural committee. Sharon has lived in Okeechobee for many years, and has one son, Karl. “I love the history of our little town. I want to preserve all of our ‘todays’ through the lens of my camera, for our future ‘tomorrows’.”

EMILY PLANK has a photography business rooted in her hometown of Lakeland, Florida that is celebrating 7 years. She is a graduate from the University of Florida with her Bachelor’s degree in Studio Art where she focused on drawing and painting. She fell in love with photography while at Florida, studying film and digital photography –then started her business while in school. She loves to tell a story, whether it’s that of a person, place or space she is dedicated portraying her subject’s beauty. Personally she loves to give back and serve her community, she loves her Lord Jesus and being with her family and friends. CYNTHIA PAXTON is a stay at home mom to two boys. She have spent the last 10 years capturing the precious moments of childhood for families across central Florida. A newborn and child photographer, Paxton loves being able to capture that small moment of time. She has also been a nurse for 15 years and love caring for others. She has lived in Wauchula for over 25 years and is honored to help share our small town community with others.

Dating back to the 1960s, the word

Bohemian

can be used to sketch many different fashion trends throughout the last century. Bohemian chic is a style of fashion drawing on various bohemian and hippie influences consists of floral fabrics, flowing skirts, tunics tops, bell bottoms and printed pants. The practice of an unconventional lifestyle, often in the company of like-minded people and with few permanent ties. It involves musical, artistic, literary or spiritual pursuits. In this context, Bohemians may or may not be wanderers, adventurers, or vagabonds. Many elements of boho-chic became popular in the late 1960s and some date back much further. Bohemian jewelry plays a vital role in making the difference to any outfit. I

take a deep breath in the darkness before I unlock the

door of Haka Fitness. It is January, my fifteenth January in the business, actually. I’ve watched countless goodintentioned people set out on a health and fitness journey, doomed before they even take the first step. I’ve watched a million “diets” come and go and come back with another name. I’ve watched people literally destroy themselves with burpees and boot camps. Over the next month, people will walk through my doors for the first time. They are coming in for me to tell them how to diet, how to exercise. uring the 1940’s Mess Sergeant Bill Gerstman, a farm boy from Alabama, was stationed in Saipan in the west Pacific. The 714th Rescue Squadron soldiers were given meals of mutton and goat but were so disgusted with its taste, they threw their rations into the sea. “When I got there, they were throwing the lamb into the ocean. They wouldn’t eat it” said Gerstman in 1985. Knowing the secret of great tasting food and desiring to eat hearty meals, Gerstman began experimenting with spices and herbs to please the Army troops. Through trial and error, Gerstman created a secret recipe that made the food, not only edible, but absolutely delicious. No longer was bland food being thrown into the ocean but devoured by hungry soldiers. His secret recipe, called “Monkey Dust”, was used on everything from scrambled eggs to burgers and Gerstman quickly realized he had created something special. “They didn’t know what they were eating and asked for more” said Gerstman.

After Sergeant Gerstman completed his tour, he returned to the States and resumed his career as butcher at the LaBelle Trading Post in LaBelle, Florida. With more spices and herbs readily available, he perfected his recipe. The people of LaBelle loved it. He was selling seasoned meat and plastic bags of his secret mixture. Using only word of mouth advertising, more and more people were requesting Gerstman’s special blend of herbs and spices. In 1976 Gerstman patented his secret recipe as Everglades Seasoning with its iconic logo. Its success spread like wildfire. In 1985 he sold the recipe to Gene and Martha Cross, the owners of the LaBelle Trading Post where sales continued to grow, and this special seasoning was distributed throughout Southwest Florida.

n 1992, four Heartland area businessmen purchased Everglades Foods and made the difficult decision to move from LaBelle to the Sebring Regional Airport in 2001. While it was a tough move from its birthplace, Sebring offered more space to grow and was closer for the new owners. Currently, Everglades Foods is owned by one of the four business men, Chris Sebring and his wife, Kristine along with daughters, Lindsey and Sara. Chris Sebring is a great-grandson of Sebring founder, George Sebring. They have since moved from the airport to their new, larger location on State Road 66 with plans to further expand. Their daughter, Sara, is an integral member of the team and is proud of their family legacy.

Serve these hearty St. Patrick's Day recipes, and you just may feel the luck of the Irish.

Open Face Reuben This open-face version of a beloved sandwich—a rich, tangy, meaty mix of corned beef, sauerkraut, and melted cheese—makes a satisfying meal. The sandwich may become a little soggy thanks to the sauerkraut, but since you eat it with a knife and fork, that’s not such a big deal. It’ll be delicious regardless.

Ingredients 2 T. mayonnaise 1 T. ketchup 1 T. dill relish (not sweet) 1-1/3 cups sauerkraut, preferably bagged, not canned

3/4 lb. thin-sliced corned beef 4 large 3/4-inch-thick slices rye bread 2 T. unsalted butter, softened 6 oz. Gruyère, thinly sliced

Instructions Heat the broiler on high. Combine the mayonnaise, ketchup, and relish in a small bowl. Cut two 12×18-inch sheets of foil. Reserve 1 Tbs. of the liquid from the sauerkraut and then rinse and drain it. Squeeze the sauerkraut with your hands to remove as much liquid as possible and put it on 1 piece of foil. Put the corned beef on the other and sprinkle with the reserved sauerkraut liquid. Draw up the sides and seal each to make a package. Put both packages on a baking sheet and bake until warmed through, about 5 minutes. Meanwhile, put the bread on another rimmed baking sheet and broil until well toasted, about 1 minute per side. Butter one side of the toasted bread and arrange butter side down on the baking sheet. Spread each piece with 1 Tbsp. of the dressing. Divide the corned beef among the bread slices. Top with the sauerkraut and the cheese. Broil until the cheese is bubbly and browns lightly, 1 to 2 minutes. Serve immediately.

Traditional Irish Potato Soup Traditional Irish Potato Soup is as simple to make as it is delicious and nutritious, and this creamy soup is perfect for a St Patrick’s Day meal or any meal. Ingredients 2 T. unsalted butter 1 medium onion, chopped 3 ribs of celery, chopped 4 large potatoes, peeled and chopped 3 cups chicken stock 1/2-1 t. kosher salt

1/2 t. garlic powder 1/4 t. ground black pepper 2 cups whole milk or 1/1-2 cups whole milk and 1/2 cup half and half 1 T. chopped fresh parsley for garnish optional

Instructions Melt the butter in a Dutch oven or large pot over medium heat. Add the celery and onions and sauté for about 5-6 minutes until they are tender. Add the potatoes, garlic powder, kosher salt, pepper and chicken stock. Bring to a boil and reduce the heat to low. Simmer for 20-25 minutes or until the potatoes are completely done. Use an immersion blender and blend until the potato mixture is smooth and creamy. Be extremely careful with the hot mixture. When the mixture is smooth and creamy add two cups of whole milk or 1-1/2 cup of milk and 1/2 cup of half and half. Taste and add additional salt and pepper if needed. Serve immediately.

The Black Velvet The Black Velvet is a beer cocktail made from a stout, often Guinness and white, sparkling wine, traditionally Champagne. Guinness is considered by its many aficionados to be extremely creamy, but when you add it to Champagne or prosecco, its fruitiness emerges as well. The proportions are roughly two parts bubbly to one-part Guinness, but you can mix it to taste. The differing densities of the liquids cause them to remain largely in separate layers and it’s best observed when prepared in a flute glass. The effect is best achieved by pouring over a spoon turned upside down over the top of the glass so that the liquid runs gently down the sides rather than splashing into the lower layer and mixing with it. The drink was first created by the bartender of Brooks's Club in London in 1861, to mourn the death of Prince Albert. It is supposed to symbolize the black or purple cloth armbands worn by mourners. It's a bit of a novelty drink, but, like Irish Coffee, it's found all over Ireland. Black Velvet is a terrific party drink. It's Irish, you can mix it to order as guests arrive, it's delicious—and it stretches your Champagne farther! Yield: Makes 1 Ingredients 4 ounces (1/2 cup) chilled Champagne or prosecco 2 ounces (1/4 cup) chilled Guinness Extra Stout Instructions 1 Pour the Champagne into a flute or other tall glass. 2 Pour the Guinness on top. (Guinness is heavier. If you mix it the other way around, it won't combine evenly and will need to be stirred.)

Instructions Fill footed mug or a mug with hot water to preheat it, then empty. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add the brown sugar and stir until completely dissolved. Blend in Irish whiskey. Top with a collar of the whipped heavy cream by pouring gently over back of spoon. Serve hot.

A Fashionable Afternoon with the Chamber

On Saturday, Jan. 26, the Chamber of Commerce of Okeechobee County presented their second annual fashion show at the KOA Convention Center in Okeechobee. Opening the show were models wearing the designs of Sabre Mochachino, owner and designer of Mochachino L.A. | N.Y. Sabre founded the boutique label, Mochachino: Los Angeles | New York and forged it into a prototype brand for most of his ground breaking ideas. For 20 consecutive seasons, Sabre has continuously delivered product that personified a luxurious experimentally chic lifestyle. Over 50 local models walked the runway, not only modeling the fashion of Mochachino, but also clothing from 14 local small businesses. Prior to the fashion show, local retailers were also set-up, selling clothing, jewelry and accessories. The show's theme was "Enchanted Forest" and the venue was beautifully decorated and featured many lovely faries helping the guests and models. The Okeechobee Ballet Company entertained at intermission.

1 pkg. ready-made Beef Tips & Gravy (ex: Hormel) 1 can Golden Mushroom soup 1 pkg baby Bellas (cleaned, quartered) Optional 1 small pkg. frozen Mixed vegetables Ÿ cup instant mashed potatoes 1 pkg. Pillsbury Pie crusts 1 Ribeye (or tender steak) 2 T. butter ½ onion, diced 2 medium potatoes, small dice 1 beef bouillon cube Salt & Pepper, Garlic Powder

Preheat oven to 400 degrees. Cube ribeye steak. In Dutch oven, stove-top, brown cubed steak in 2 T. butter. Season. Add onion and potato, cover and simmer until potato tender. Add bouillon and stir to dissolve. Add remaining ingredients and cook until all ingredients warmed through. Set aside. Prepare pie crusts in deep pie dish (or baking dish). Pour meat into bottom crust. Cover with remaining crust. Cut slits to allow steam to escape. Place on aluminum lined baking sheet and bake until golden brown.

POTATO ROSES 4 Medium Potatoes ¼ Extra Virgin Olive Oil 2 t. salt 1 t. garlic powder 1 t. black pepper

1 t. ground Thyme 2 t. Whole Thyme (Fresh and/or Dried) divided 12 slices center cut bacon 2 T. Parmesan cheese

Use muffin tin (for six)-spray with cooking spray. Place on lined baking sheet (to catch any bacon grease overflow). Wash potatoes and pat dry. If potato has thin skin, do not peel. Slice potatoes 1/8-inch round slices (or mandolin). Place potato slices in bowl; toss with oil, seasonings and 1 t. whole Thyme. Toss slices to evenly coat. Overlap two slices to make slice 4-5 inches longer, on countertop.

Place potato slices (overlapped slightly) along entire length of bacon. Begin at end of bacon/potato strip and begin rolling. Roll tightly and place “potato rose” in muffin tin. Repeat for remaining. Bake 400 degrees for 35 minutes. Remove from oven, sprinkle remaining Thyme and Parmesan over potatoes. Continue baking additional 15 minutes.

1 Small bag frozen small-sized meatballs 1 large jar Ragu Spaghetti Sauce 1 Bell Pepper, cubed 1 Onion, diced Salt & Pepper, Garlic Powder 2 T. Whole oregano ¼ t. cayenne pepper ½ t. hot pepper flakes 6-6” Hoagie rolls Pepper Rings, sliced ½ cup Red onion, diced Sliced Provolone Cheese In prepared glass baking dish, layer first eight ingredients. Toss to evenly coat. Cover tightly with aluminum foil. Bake at 350 degrees for at least one hour. After one hour remove foil, stir and bake additional 15-30 minutes. Prepare rolls as for garlic bread. (Can use garlic toast if desired). Set all ingredients on table for self-assembly or assemble and place in decorative platter. Can cook meatballs mixture in slow cooker. Quantity can be increased.


CHEATER BROWNIES 1 pkg/bag brownie mix 1 egg 1 can sweetened condensed milk (3/4 can) 1 bag Ghirardelli dark chocolate chips, divided 1 cup walnuts or pecans ½ cup oil Line metal baking pan with parchment. Spray with cooking spray. Preheat oven to 350 degrees. Combine all ingredients (reserving handful for top of brownies) just until combined. Batter will be thick. Spread in prepared baking pan. Sprinkle remaining chocolate chips on top. Bake 20-25 minutes, testing with toothpick in center, until done. While still warm, cut with plastic knife. Remove from pan and enjoy!

The SFSC Museum of Florida Art and Culture Features

Ceramics by Bert Bogdany

The Museum of Florida Art and Culture at South Florida State College presents “Organic Geometry, Ceramics by Bert Bogdany.” This exhibition is running from December 5 to February 6, at MOFAC’s gallery located in the Alan Jay Wildstein Center for the Performing Arts on the SFSC Highlands Campus in Avon Park. Bogdany’s work exemplifies and challenges the malleable nature of clay. According to the artist, many of the forms in this collection are a combination of wheel-thrown and hand-built constructions. Using a potter’s wheel, these structures are formed by altering, shaping, and compressing the clay`s surface area. In rotation, the clay is methodically worked until the surface is no longer recognizable compared to its original state. “The forms are meticulously shaped to include an organic geometry that has occurred thematically within my work for over two decades,” Bogdany said. “It is my hope that these works express the same feeling of balance and unity to the viewer, as I receive when creating them.” The horizontal and wall structures are a combination of hand building and relief carving. “Working in the medium of clay for many years, I have discovered the inherent beauty within the unaltered, raw state of the material. Realizing the dichotomy of attempting to perfect a surface with a potter`s wheel that already holds an inherent flawlessness has caused me to expand upon my research. This awareness has influenced my desire to create a sculptural series that holds a truth in materials. Celebration The Gilbert Family of Companies recently celebrated their 85th Anniversary with an event at Gilbert Chevrolet. The Okeechobee community, invited to attend the historical celebration, enjoyed music by The Sweet Talkers, as well as food and drinks. Gilbert Chevrolet is being run by its 3rd generation of owners. Christa Luna Culbreth is the Dealer/Owner of Gilbert Chevrolet. The dealership opened in 1933, in the heart of the depression, by Gilbert Culbreth, Sr. It was originally located on State Road 70 West. During the anniversary celebration, more than 300 cans of food for Big Lake Missions was collected. Jonathan Bean, Executive Director of Martha's House, presented a "birthday" gift. He told the crowd, "This artwork is a gift from Martha's House and everybody whose handprint that is on the canvas, marks 85 years of positive influence & growth that the Gilbert Family of Companies has had on Okeechobee."
