letter fromTHE PUBLISHER I’m into my eighth year publishing Heartland LIVING and have
learned while doing research for the magazine as well as in my personal life that everyone has a story. Every person on this planet has a story to tell, something that makes him or her unique. We just need to take the time to listen. The sheer variety of paths taken in this world, from farmers to CEOs to homeless people to world travelers, is indicative of how much we can learn from each individual. Sometimes the shy, quiet person has the most amazing life story and the biggest dreams, it is up to us to take the time to find out. Heartland LIVING was created as your lifestyle community magazine and we listen to all ideas, read all of your emails and love receiving your responses on social media. We gather them all together and feature the Heartland’s most interesting stories we think are perfect for each issue. My staff and myself so enjoy to listen to the stories people want to share with us about their unique lives. Most importantly is then we get to share it with you, our readers. Editor and writer Jessica Pleger brought to my attention that she wanted to tell Michael “Smurf” Horton’s story of being a World Champion Bullfighter and Hometown Hero. Mike was raised most of his life in Zolfo Springs, FL. Speaking with Mike brought back so many nice memories of our past rodeo days. He is still the sweetest and kindest man and I know you are going to enjoy reading about his lifetime dream that he made happen by never giving up. I have to give a huge Thank You to photographer Mike Rastelli. He went above and beyond, driving from Ocala to meet me with negatives, sleepless nights and hours of scanning to get us authentic rodeo photos from 1987 to 1995. This story would not have happened without you Mike, you are the BEST... We love sharing with you some of our adventures from our writers, family and myself. This year I was turned on to Airbnb when we traveled to Atlanta, GA. It was a really cool house in the suburbs that we all enjoyed for a long weekend, maybe not in the best neighborhood but we survived. I’m excited to share with you my next experience with the cutest retro beach house right here close to the Heartland in Lido Beach. Not only did I find a place within driving distance, I was also gifted with owner Jenny Acheson who is a professional photographer. The property is a joint collaboration showcasing the skills of her and husband Dale Rieke. I want to welcome Jenny and writer Nicole Carbon to our team with their amazing talents. We try to spice things up a bit and hope you see the humor in our article “Eight Reasons I’m Singing the Back-to-School Blues,” written by Lisa Beach and graphic illustrations by Bridgette Waldau. We also welcome Florida Magazine Association winner Lisa to our team as well. What an awesome team we are blessed with. BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah. RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.
LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.
NICOLE CARBON is based in Sarasota, Florida and has been writing for both print and online media about food, wine, travel, health and wellness, and other lifestyle-related topics for over 15 years. She is certified Level 2 Award in Wines from the Wine and Spirits Education Trust (WSET) and is currently studying for the Certified Specialist of Wine (CSW). She contributes a monthly wine column in the Venice Gondolier Sun and her work appears regularly in Edible Sarasota. She finds balance with regular Bikram yoga classes, meditation practices, lacing up her running shoes, and relaxing on Lido Key.

MIKE RASTELLI first became interested in photography while in Libya and Ethiopia with the U.S. Army, working for Army Map Service. He started rodeo after discharge and rodeo photography just naturally followed. After moving to Florida in 1969, he began with the FHSRA in the late 70s. A short time later, the FJRA was formed and he started with them. In 1986, he got his PRCA photo card. His goal as a photographer is to produce the best possible shots of each contestants regardless of conditions. CAROLINE MAXCY FOX was born and raised in Central FL. She decided to be an artist at the age of five. After achieving her BSA from Florida State University, she practiced in the field of design for six years and then received a Masters in Graphic Design from NC State University. She honed her artistic craft and developed a "way of seeing" that fuels her work. Caroline is a full time photographer and lives with her husband in the heart of Sebring, FL. Together they run the day-to-day life at The Great Commission Bible Institute as the Site Coordinators and Dorm Parents. Naturally, adventure abounds.

JENNY ACHESON After a childhood following her UN parents to different countries and doing a French degree in England, Jenny worked as an editorial, lifestyle and travel photographer for 25 years in London, Paris and New York. When she met her husband Dale Rieke, she moved to Sarasota and together they set up Wood Street Studio, a wood-working studio and the vacation rental, Lido Beach House . Her photography clients are international magazines and newspapers and now include the local Sarasota Magazine and Edible Sarasota.
CYNTHIA PAXTON is a stay at home mom to two boys. She have spent the last 10 years capturing the precious moments of childhood for families across central Florida. A newborn and child photographer, Paxton loves being able to capture that small moment of time. She has also been a nurse for 15 years and love caring for others. She has lived in Wauchula for over 25 years and is honored to help share our small town community with others.

You’ve heard the term “Mommas, don’t let your babies grow up to be cowboys” but for some mommas, curbing that inner desire to rodeo isn’t that easy. The same is to be said for Frances Money, but the difference is her son, Mike wanted to protect the cowboys from 2,000-pound angry bulls in the rodeo arena.

oving to rural Zolfo Springs, Florida at the age of 8, Mike Horton was no stranger to working cows and was even known to tease the bull or two in the cow pens. While his friends found this humorous and a little risky, Horton credits these times for making him ‘bull savvy’. These times in the cow pens fired a passion for bulls. When he was working as a ranch hand, much to Momma Frances’s dismay, he would slip off to the arena and ride bulls and even step in to help protect the cowboys. By high school he had a pretty good handle on the job and was assisting Hardee High School Ag teacher at the time, Ronnie Durrance in putting on Future Farmers of America rodeos at James Cowart’s old arena east of Wauchula.

orton had approached Durrance asking if he could fight bulls in the upcoming rodeos. Being a recreational bullfighter himself, Durrance agreed-under one stipulation. Horton had to agree to participate on the FFA Parliamentary Procedure team; Horton obliged. “He was smart and had a lot of talent to go along with it. He did a great job for our team,” says Durrance. Knowing Horton’s talents and abilities, Durrance allowed him to bullfight in the upcoming rodeo and gave him all of his gear and clowning stuff. You see sometimes bull fighters don’t just protect the cowboys, they provide entertainment for the crowd as well.

his was his first opportunity to put on a pair of baggies as a Rodeo Clown/ Bull Fighter. The problem though, he didn’t yet own a pair of baggies or an oversized pair of pants, preferably Wranglers, that are way too big and cut up so they are not constricting, which are then held up by suspenders. The idea is to catch the eye of the bull and the eye of the crowd. He called Durrance to borrow a pair who in turn called his wife, Diana. She went and purchased a new pair of oversized Wranglers, cut them up and created Horton his first pair of baggies. It was that first performance, in Wauchula, where Mike “Smurf’ Horton put on those handmade baggies and painted his face with the iconic red with white outlines for the very first time as a sophomore in high school.

orton loved his work on the ranch for Pat Hansel in Arcadia, Florida knowing that once the workday was over, there was a good chance he could go to the arena and ride bulls. Hansel operated the ‘Granddaddy of ‘Em All’ PRCA rodeo in Arcadia for many years and little did he know at the time that he was about to give a rising star the opportunity of a lifetime when he let Horton assist in the arena as a bull fighter in the Professional Rodeo Cowboy Association rodeo in Arcadia. This ignited a fire in his soul to do what many don’t dare to achieve and he wasn’t going to let anything stand in his way. In 12th grade, he skipped school to enter a PRCA rodeo where he split winning the bull riding with World Champion Saddle Bronc Rider Bobby Berger. He was hooked and this gave him the momentum to achieve his permit to compete on the PRCA circuit as a bull rider, which was his way of getting to know the right people to get his foot in the door as a bull fighter. In 1982, he earned his way onto the rodeo circuit as a bullfighter and Lynn Barlow got him a job with Bob Barnes. Working for Barnes meant you would be doing everything asked upon you. It wasn’t an easy job but it was a good education and a gold star on the resume.

hen I asked him, who gave him his nickname, Smurf, he quickly replied, “Charlotte Mann and her sisters Cheryl Lynn and Clara Lou (Carter) just wouldn’t let it go, so it stuck”, which made me chuckle. Growing up around the funloving Mann sisters, their tongue in cheek humor is always good for a laugh. It made complete sense that they would give him such a fitting moniker. At a stature of 5’5”, Horton became known for his darting by and sometimes over bulls in an old straw hat, red and white face and vibrant colorful shirts, most adorned with long fringe that would fly in wind.

Smurf quickly became well-known on the rodeo circuit and by ’84 he was touring with stock contractor Mack Altizer and Bad Company Rodeo on the Wrangler Bull Fighting Tour. In June of ’87 he received an ankle injury that could’ve sidelined even the toughest of cowboys. He then went onto Wolf Point, MT where a bull busted his lip and chin. powered through and went on to win the Winner Takes All Bullfighting competition in Cheyenne, WY that year and it set him up for a year he would never forget. “Bullfighting is a rough old game and if I wouldn’t have toughed it out, I wouldn’t have had a chance at the championship”. That year in Lovington, TX, bull rider, Lane Frost came to Horton inquiring about whom he wanted to fight bulls with at the Wrangler National Finals Rodeo that year, basically confirming Horton was selected to be a bullfighter in the ’87 NFR. Frost was on top of the world at the time as well and was a well-known and well-liked figure in the sport so coming to ask Horton’s opinion meant a lot. Horton took home the Bull Fighting World Champion that year and Frost won the title of World Champion Bull Rider. Horton made a second appearance at the NFR in ’88 where he was the runner-up. In addition, he was invited to participate in some of the biggest rodeos on the circuit such as the Texas Circuit Finals Rodeo, Calgary Stampede and Cheyanne Frontier Days. In addition to thousands of rodeos across the country and abroad. Horton returned home to Florida in ’91. During the week he was a day working cowboy and then worked the local rodeo circuit with Troy Weekley and the Five Star Rodeo Company on the weekends. Texas was calling him back, so in 1994 he moved and joined Bad Company again. He continued on the rodeo trail for many years. In addition to being a great bullfighter he has quick wit and had a way of working with the crowd to keep them

entertained with his acts and stunts. On the Bad Company tour he was known for riding bulls backwards, Bad Company Style. Over the years he always stepped up his game to keep the crowd entertained and cowboys safe which earned him great respect from stock contractors and cowboys alike. In 2013, he received one of the highest honors a cowboy can receive by being inducted into the Texas Rodeo Cowboy Hall of Fame. This museum in the Ft. Worth Stock Yards pays tribute to the men and women whom have shown excellence in the business and sport of rodeo. It wasn’t long after that at a rodeo performance in Poteet, TX he sold his barrel, stunt car, “…I sold everything. I wasn’t going to let anyone talk me into doing another rodeo so I decided the only way to do that was get rid of it.” It was the last time that he would hang up his baggies. Those same baggies that Diana Durrance made for him over 30 years ago that took him around the world living his dream. They now hang in a shadow box at his home in Mineral Wells, Texas where he enjoys piloting his plane and living slower paced life. He also builds new locations for oil fields where he finds it nostalgic to run into old rodeo friends along the way. What he’s the proudest of though are his daughters, Makiah, 18, who is beginning her junior year at Texas Tech while Mariah, 21, is on the rodeo trail somewhat following in her daddy’s footsteps.

o say he’s lived a star-studded life
fulfilling his dreams of being a bullfighter would be an understatement but now for Horton it’s time to finally rest the broken bones, reflect on the accomplishments of the past and enjoy knowing the days of staring in the eyes of an angry bull are past. “He took the business a lot farther than I ever thought, I’m really proud of him,” says Durrance. I think a lot of people can probably say the same, proud to call Mike “Smurf” Horton their own hometown hero.

It’s
2006 and Jenny Acheson is at a surf/yoga retreat in Costa Rica taking a reprieve from city life. She fills her days with yoga, nature, and photographing the locals. Dale Rieke is visiting there too – to surf and visit his old friends Brad and Nikki. The two met while at the property, Tierra de Milagros, and clicked. After the trip they went their separate ways to resume daily life, Dale back to Sarasota, Florida to his job in woodworking and Jenny to New York City to resume her photography career. They reconnected a short time later. Fast forward a few years to 2009 when Jenny made the move to Sarasota and their two worlds converged to create a dynamic synergy. Dale has been a Sarasota resident since the age of twelve and a passion for woodworking stemmed from working on boats at a young age. Recognizing an innate talent, he honed some skills and started Dale Rieke Inc, which later became its present-day name of Wood Street Studio. The business is thriving three decades later. “I realized early on that Sarasota, with its many affluent and discerning residents, was a good place to make custom furniture. It’s also a wonderful place to live – the water, the arts…” says Dale.

Jenny was born in Ndola, Zambia. Her father worked for the World Health Organization, which meant their family lived in many different countries including Turkey, Iran, Thailand, India, and Switzerland. She recalls her mother picking up extraordinary textiles and beautiful furnishings for their homes through the moves. Jenny says, “After an incredibly blessed childhood following my parents around, the extreme joys of traveling set in deep. Solo traveling came easy to me, and with my camera I always felt fearless and euphoric walking into different cultures and lives, reveling in the kindness of strangers, capturing spontaneous moments and embracing anything that would let me close.”

After school and university in England, in 1990 she landed in New York City. “I finally found something I was good at! New York called me from London soon after establishing a career in photography. I happily shot beauty and lifestyle for magazines, each shoot a little exploration in itself, while sneaking off every so often on larger journeys.” In Sarasota, her work is regularly seen in Edible Sarasota, and Sarasota Magazine, she also shoots for architects and restaurants and other lifestyle outlets.

Vast ceilings are the backdrop to a stylish space used as an office/showroom where clients come to discuss projects. A mid-century modern sofa has been reupholstered with cool African fabric, wood-framed art adorns the walls, and Dale’s furniture pieces fill the space to the brim. On the desk, there’s a black and white photo of Jenny’s mother, a stunningly beautiful lady to whom she credits her eye for style and design.

Walking through the workshop, intoxicating aromas of eucalyptus, camphor, and pine fill the air. “We are in a tropical zone here; you don’t realize how many gorgeous local trees there are growing. We are so lucky to have access to these logs – Norfolk Pine, West Indies Mahogany, Rosewood, Guanacasta, Australian Pine.” Dale gestures to the piles of slabs everywhere. “The trees here are ones that have died or fallen after a storm, ones that are cut down to make way for development, or ones from a client’s own property. We are saving these logs from the chipper. Even all our sawdust goes to local horse ranches.” They try to be a zero-waste environment. Something that sets Wood Street Studio apart is the use of book-matched lumber. Dale explains, “This is when you can do a project using the sequenced boards of the same tree, something not many furniture makers can offer. We have a sawmill so we can cut and dry the logs ourselves too. Great for the client to have their whole job grain-matched and they can be part of a story of conservation too! Also, sometimes the wood just directs us, it dictates to us what it will be – a straight table, curved coffee table, or a sculpture.” When the wood is cut open you never know what will be inside, what the patterns of the grain will be, and the different shapes. It’s something that still excites Dale to this day, often running to get Jenny to show her. Inside the workshop, state-of-the-art equipment is being used. One of their latest pieces of equipment is a CNC machine, which efficiently flattens large slabs or cuts them into more intricate designs read through a computer. Dale is involved in each project from beginning to end as he brings clients’ wishes to life. There’s the meet up, the field visit to measure, the designing and hand drawings, approval, fabrication, finish, delivery and install.

“Sometimes a customer will simply choose a milled slab we already have in the workshop which we then make into a bespoke table or bench,” Dale explains. Along with individual clients, local designers come to Dale for quality custom-made furniture that tell a story instead of choosing something picked out from a catalog. He has created cabinets, beds, tables, side tables, etc., for some of the most gorgeous homes in and around Sarasota. He has also worked on a few remarkable projects like the Walker Guest House replica that sat on the grounds of the Ringling Museum for a few years (now in downtown Palm Springs) and the Japanese Tea House, also at the Ringling Museum. The whole interior of the tea house was constructed of old-growth cypress including wall panels, shoji screens and doors.

“I was honored to have been asked to fabricate and install a sculpture of two huge Australian Pine trees in front of the Ringling Art School Library–it was 4500 pounds of wood to be crane lifted and slotted carefully into stainless steel rods in a concrete foundation. Nerve-wracking install! The art school also had me teaching a continued education woodworking class recently. That was very rewarding – I do love to share the skills and techniques I have learned all these years.” Dale adds, “Jenny has been a huge help to Wood Street Studio these last twelve years. She has a great eye for design and is a perfect soundboard for me. Her photography skills are quite helpful too! In the near future she and I hope to design a collection of furniture pieces that will appeal Heartland to all those people who are moving LIVING downtown to smaller condos, and to August a younger generation too. Right now, September the thrill is to be saving the trees from 2019 the dump and sharing the beauty of the wood with as many as possible.” 51

Jenny and Dale’s collaboration continues through their vacation property, Lido Beach House on Lido Key. They purchased the triplex in 2012 after driving past it for six months on their regular trips to the beach. It happened to be the week they decided to get married! The property is a joint collaboration showcasing the dynamic skills of each individual.

“We stripped it of the typical tired beach decor and started the improvements – central air, new windows, major landscaping and pavers, and we filled it with mid-century furniture and goodies. Then came the custom birch kitchens and high-gloss paneled walls. It was a labor of love combining Dale’s talent for making and mine for shopping,” Jenny says with a grin. The entrance is through a bougainvilleacovered pergola with Lido Beach House inscribed at the top. An Australian pine path leads to the property which houses three separate fully equipped units and a lovely outdoor area. There are grills, beach cruisers, outdoor showers and a vintage tandem bicycle. Dale made the wooden benches and a large inviting Australian pine dining table that seats twelve. Dotted all over the garden is Russell Woodard-designed spun fiberglass furniture, with which Jenny says she’s obsessed with!

The interiors are kitschy yet on point, with no detail left overlooked. Furnishings include lamps and chairs purchased at auctions and thrift stores, items collected during their travels, Jenny’s mother’s Turkish rugs, African blankets and cushions from Shine Shine in Cape Town, art by local artists like John Pirman and Steven Strenk, and a giant hand-shaped surfboard made by Dale. He made all the beds too, as well as the credenzas and dining tables. In two of the units, there are retro Big Chill appliances in powder blue and sage green. “Guests go crazy for the gas stoves!” Jenny adds, “It’s the mid-century style we love – the house had terrazzo floors and pink and blue tiled bathrooms! We just added to it. It is all an expression of the two of us. I didn’t think of it at the time, but I guess that’s what it is!” Just back from a recent trip to Sayulita, Mexico, even though an Airbnb super host herself, Jenny expressed, “There are things I want to do to up my game. I was totally inspired!”

Avidan MD, MPH the Director of UCLA’s Sleep Disorders Center. Most adults should aim for seven to nine hours of sleep a night.

I’M SINGING THE BACK-TO-SCHOOL BLUES...
but it’s not what you think. I’m not one of those moms who wants to be around her kids 24/7 and dreads when they go back to school. In fact, I’m not one of those humans who want to be around other humans 24/7. I need my space. You can easily notice when the first day of school begins, because on that glorious, bird-singing, sunshine-filled morning, Panera Bread needs a bouncer for crowd-control with all the exuberant moms on coffee dates. I am one of those moms. Now that summer is over, I am thrilled that I no longer have to listen to my two teens fight with each other all day or rouse them from their screen-induced coma and force them outside to inhale some fresh oxygen and soak in some sunshine. Nevertheless, as happy as I am that school is back in session, it does bring its share of hassles that drive me crazy.

SUPPLY LISTS...
I agree that teachers are underpaid and education is underfunded and we all need to do our fair share. And I don’t mind chipping in for classroom supplies of tissues and hand sanitizer so my kids don’t haul home some awful virus from school and infect the whole family quicker than the latest Zika outbreak. However, the level of detail that goes into these lengthy, very specific supply lists borders on insanity. One teacher required an oddly over-sized notebook that even Office Max didn’t carry. I could have hunted down a first-edition of Beowulf quicker than I found this 10” x 12” spiral-bound, college-ruled, acid-free, archival-quality notebook . . . for middle school geography. Another teacher listed “2 calculators and 4 three-ring binders” on her required supply list for algebra. When I questioned her about this, she replied, “I’ve found that the students often lose their calculators half-way through the year, so I recommend buying a back-up. Also, the students need to bring 1 three-ring binder to class and keep the other 3 at home to store their work after each quarter.” So just because a few irresponsible, disorganized 13-year-olds can’t get their act together means all parents until the end of time need to overbuy specialty graphing calculators at $50+ a pop? Uh, not gonna happen, even if this means deducting 20 points from my son’s “classroom participation grade.”

FUNDRAISERS...
football games and food service accounts, oh, my! I need a full-time job just to pay for the onslaught of wallet-draining expenses in a typical school year. From extra lab fees to uniforms, from art supplies to testing fees, from field trips to coaches gifts, from game tickets to lunch accounts, school fees add up quicker than a two-year cell phone contract. And if, on top of all these extra fees, schools still decide to do a few fundraisers, why don’t they sell things that parents might actually use, like a Wine of the Month Club. „

3 CRAZY-EARLY START TIMES...
I could almost hear the collective snore of my neighbors when we leave the house for school in the dark at 6:45 am. Does anyone on the school board know anything about teens, adolescent development, brain functioning or sleep patterns? Teens don’t do mornings, but hey, let’s just throw them into lit analysis first period.

What photography think-tank got together to price these portrait packages and write and design an order form that only Sherlock Holmes can decode? The cheapest package, which includes 24 fingernail-size photo stickers that I will never use, a photo magnet and 2 3”x5” photos, costs $28. I can literally get a 20”x30” poster at Costco for $9.99. And the order form is like a shell game, leaving parents bewildered with confusingbut-similar options that require a Ph.D. in logic to figure it out. Package 1 includes 2 3”x5” photos, a photo magnet and 24 photo stickers, while Package 21 includes all of Package 1 plus 4 large wallets and basic retouching (does this mean only 1-3 pimples?) plus digital downloads and Package 7 includes all of Package 1 plus Package 21 plus premium retouching (perhaps pervasive acne scars?) plus personalization.

DROP-OFF/PICK-UP LANES... From the get-there-first parents who park in the carpool line two hours before school lets out to the parents who double-park their cars, block all thru-traffic and run into the front office “for just a sec,” this free-for-all drop-off/pick-up process simply stinks on all levels. (And no, rebel mom, that safety rule doesn’t apply to you – you just drop your kids off on the main highway in busy morning traffic so you don’t have to weave through that safe, slow-moving car line like everyone else. It’s all about you.) While I’m still working on a danger-free, beat-the-system drop-off procedure that could shave 15 minutes off my morning, I did finally wise up for the after-school pick-up plan by arriving 10 minutes after classes end in the back of the school.

BACKPACKS... In 6th grade, when my son weighed about 80 pounds, his backpack weighed 22 pounds – about the size of a small toddler. The brilliant architectural planners of his newly built middle school decided not to put any lockers, so the kids must carry around a quarter of their body weight on their backs all day long with oversized notebooks and college-sized textbooks for every class. Throw in a jacket, umbrella and lunchbox and the kids practically tip over in a gentle breeze.

DRESS CODES ... I’m all for kids expressing themselves and I am not pro-dress code, but I do think a little common sense needs to prevail, as kids head to school with butt-crack-baring low-rise jeans and see-through crop tops. While kids don’t need to go all Amish, they (and their parents) do need to use good judgment so school districts don’t need to adopt four-page dress code manifestos that prohibit the weirdly inappropriate “slippers, pajamas, trench coats, bathing suits, bike shorts, dog collars and chains that connect one part of the body to another.” Because of a few extremist, overly self-expressive, head-shaving, eye-brow-piercing, gang-symbol-wearing rebels, my kids can’t even wear a baseball cap or sunglasses on campus.

BOMB THREATS... Like my teen doesn’t have enough to worry about in high school – pimples, gossip, bullying, SAT, homework, tests, learning to drive, club meetings, breakups, fitting in, soccer tryouts, AP classes, fighting with parents, peer pressure, and the frenzied high-school-to-college pipeline. Throw a bomb scare into the mix (which literally happened in my 10th grader’s third week of school last year) and you’ve set the stage for some major-league teen angst to rival The Breakfast Club.
SO...
while I’m thrilled with seven teen-free hours of quiet, uninterrupted writing time five days a week, these public-school hassles are almost enough to make me yearn for summer break.

ucked between beautiful orange groves and the gorgeous Lake Lotela lies The Sandhill Grill at Pinecrest Golf Course. This beautiful 18-hole course is receiving a face lift so to speak and now features a newly renovated restaurant, The Sandhill Grill. Being natives to Avon Park, the new owners paid special attention to incorporating namesake item and special touches to the eclectic menu. With a modern, open concept, the restaurant allows for versatility of family dinner, cocktail and the bar or business meetings. Ten televisions adorn the walls of the sports bar area and will soon be featured in the outdoor patio dining area. If more privacy is needed, they can accommodate up to 25 in their private event room overlooking the golf course. Reservations are accepted for large parties. You will find their namesake item in quotation on their menu so by nature I had to taste a few of them. Rumor has it that the Hartt’s Desire was a ‘secret make out spot’ near the course so it naturally made its way on the menu as “Your Hartt’s Desire”. This appetizer or Chipshots as they’re referred to on the menu features four Fried Green Tomatoes topped with pimento cheese, pickled red onion and fried jalapenos. They are delicious…crispy tomato, creamy cheese with a touch of spice, perfectly southern. Did I mention those picked red onions are perfection?! Made in house, the pimento cheese is showcased a few times on the menu and pays tribute to the famous sandwich at August National. Ever since I caught a glimpse of their Cobb Salad on social media it was a must try for me! This salad is filled with marinated grilled chicken, avocado, bacon, blue cheese crumbles, tomatoes, red onion, cucumber and a perfectly poached egg. It was everything I expected it to be and it won’t be my last one. This salad is one of few featured in On the Green section along with French Onion and Loaded Baked Potato Soup.

he Front Nine features an array of sandwiches and such and served with homemade chips. Named after of group of club members that have played the course religiously for decades, the house specialty “Bandit Burger” is a fresh burger patty topped with bacon, homemade pimento cheese, picked red onion, lettuce and tomato on brioche bun. I’m sure a few friendly wagers will be made over a burger and a beer before their 1 o’clock tee time.

I love Chicken Piccata; it’s a go to for me anytime it’s on the menu. This is hands down one of the best piccata sauces I have ever tasted. It’s bold and fresh with lemon and capers, tossed with pasta and topped with herbed chicken breast. Paired with one of their great selections of wine, it’s the perfect meal. In addition to their wine selection, they offer a variety of can and draft beer. And for all local beer lovers, they will feature local craft beer rotating on tap. The menu is rounded out by fresh seafood, pasta, steaks and pork chops served with fresh seasonal vegetables and options of garlic herb mashed potatoes, potato au gratin or baked potato.
The owners have made a name for themselves in the restaurant industry in Highlands County and The Sandhill Grill is a great addition to their other establishments, Cowpokes Watering Hole and the Wild Turkey Tavern. Breakfast
Burritos Ingredients 12 burrito sized flour tortillas 12 eggs 1-pound ground breakfast sausage* Shredded cheese * Any meat or vegetable can be substituted. Instructions • Cook meat until browned and crumbled. Drain off any fat from the meat. You can reserve the fat for cooking the eggs. • Crack eggs into a bowl and whisk to mix well. Heat oil in skillet or use reserved fat from meat. Pour eggs into skillet and cook over medium heat scrambling them as you cook them until done. • Once eggs and meat are cooled place about 1/2 cup of filling on each tortilla. Place desired amount of cheese on top. Roll tortilla over the top of the filling. Fold in sides and continue folding to make a burrito.

• Place each burrito onto a piece of waxed paper or parchment paper. Roll burrito in waxed paper and place in a zip top type freezer bag. Freeze or place in refrigerator until ready to heat and eat.
Scrambled Egg Muffins
Ingredients 12 eggs 1/2 teaspoon seasoned salt 2-3 Tablespoons onion (diced) 1 cup cooked ham, diced (could also use cooked bacon or cooked sausage) Salt & pepper to taste 1/4 teaspoon garlic powder 1/4 cup red bell pepper or tomato (diced) 1/4 cup fresh mushrooms (diced - sautéed) 1 cup shredded sharp cheddar cheese 1/2 cup baby spinach (finely shredded) Instructions • Preheat oven to 350 degrees. Spray a 12-cup muffin pan with non-stick cooking spray or use thick muffin liners. • In a large mixing bowl, beat eggs. Add in remaining ingredients and mix together. Scoop 1/3 cup of mixture into each muffin liner. Bake for 20-25 minutes or until the center of the muffin is completely cooked. Any meat or vegetables can be substituted to fit your family’s taste!

Ingredients 1 banana 1 cup frozen strawberries 1 cup frozen blackberries, plus more for garnish (optional) 1 cup frozen raspberries 1 1/4 cup almond milk 1/2 cup Greek yogurt Instructions • In a blender, combine all ingredients and blend until smooth. • Divide between 2 cups and top with blackberries, if desired.

PINEAPPLE GLAZED RIBS Ingredients
3 pounds pork back ribs 1 (12.5 oz) can Pineapple tidbits, drained 1 cup apricot jam 1/4 cup soy sauce 2 tablespoon white wine vinegar 2 tablespoon brown sugar 2 cloves garlic, grated or minced 1 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon cayenne pepper Preheat oven to 350 degrees. Line roasting pan with aluminum foil. Rinse and pat dry ribs, place bone side up in pan. In bowl, combine remaining ingredients. Pour 1/2 mixture over bone side up ribs. Bake for 45 minutes. After 45 minutes, carefully flip ribs meat side up. Cover with remaining pineapple glaze. Bake additional 45 minutes, or until ribs are browned and pulling away from bone. Baste with pan drippings and pineapple glaze every 20 minutes or so; making sure entire rib rack is coated.

2 cups Napa Cabbage (shredded) 2 cups Red Cabbage (shredded) 3/4 cup Grated carrots 1/2 cup Cilantro 1/2 large red bell pepper, diced 1/2 cup (or one small can) water chestnuts 4-6 Green onions, sliced

1/2 cup Almond Butter 3 tablespoon Lime juice 2 tablespoons Soy Sauce 1 tablespoon Toasted sesame oil 1 tablespoon Sriracha 3 teaspoon Honey 3 teaspoon Rice vinegar Sea Salt, to taste

Toasted sesame seeds Crispy Wonton strips Toasted almonds Mix all slaw ingredients in bowl until well combined. In medium bowl or large measuring cup, whisk all dressing ingredients until smooth and creamy. Season to taste with sea salt. Pour dressing over slaw and stir to mix well. Preheat oven to 425 degrees. Melt butter and peanut butter in microwave. Stir until smooth and allow to cool at least 5 minutes. Prepare pie crust in 9-inch pie plate. In large bowl, combine sugar, flour, salt and buttermilk. Add beaten eggs. Add the cooled peanut butter/butter mixture. Mix thoroughly until smooth.

Bridgette Waldau Receives Florida Main Street Secretary of State Award

At the awards event, she also accepted two other awards for OKMS; Outstanding Florida Main Street Image Campaign or Promotional Materials for the Cattle Drive Sculpture Campaign and Florida Main Street Awards for Anniversary - for OKMS 15 years of accreditation with Florida Main Street. Waldau is an instrumental part of OKMS. An artist, she uses her talents and tenacity towards the development of making downtown Okeechobee vibrant. After attending a Florida Main Street conference in 2004, she discovered how the arts played an important role in the revitalization of a community. With virtually no art programs in Okeechobee at that time, it became her mission to develop meaningful art programs. As the OKMS Arts & Culture Director for 15 years, she leads the Mural Program, Top of the Lake Art Fest, Taste of Okeechobee, Art & Wine Walk and Oktoberfest City Walk.
Waldau and her committee formed a partnership with Okeechobee County, presenting art exhibits in the Historical County Courthouse; worked on the purchase of an abstract horse sculpture which is installed at the County Library and organized a butterfly sculpture project installed in Flagler Park. This project caught the attention of the Florida Division of Cultural Affairs. OKMS was invited to become a Florida LLA. Waldau followed up and the County signed a resolution making OKMS an LLA June (2018). OKMS Arts & Culture of Alliance was developed and OKMS became the first Main Street to become an LLA.

Champion for Children Foundation Celebrates
25th Anniversary Photos by Caroline Maxcy Fox This June the Champion for Children Foundation celebrated their 25th Anniversary of providing prevention programs and early intervention services to children and families of Highlands County. Founding members and sustaining benefactors were invited to celebrate their positive impact on the community with an evening at the Circle Theatre which was adorned with kites, swings and silver toys centerpieces depicting childhood playfulness.

A three-course meal of tapas, catered by Pink Pineapple Catering, was served by Foundation board members and their spouses. The J3 Vocal Band performed throughout the evening as a gift to the honored guests and strong supporters of the Foundation. The evening’s program culminated with the giving of gifts. Each guest received a Challenge Coin in celebration of their partnership with the Champion for Children Foundation and 25 years of incredible impact on the community.

The Independence Day Adam Bryant Minimal Regatta, Okeechobee’s homemade boat races, was held on July 6 at the Okeechobee Agri-Civic Center. It was a fun-filled day of fun and splashes. The event, organized by For Okeechobee, Inc., was held in conjunction with Independence Day Celebration, which included fireworks organized by the Fraternal Order of Police Okeechobee.
