letter fromTHE PUBLISHER Thank you for picking up the first issue of our seventh year

of Heartland LIVING. You are the reason we continue to raise the bar and bring a fresh look to Your Lifestyle Community Magazine. I am in love with this issue and the variety of editorial content we’ve packed into it for you. It is not only informational but my photography team really outdid themselves. I hope you feel the same way, I think there is something for every walk of life. Over the years we have come across some really amazing people and stories within the 7 counties and abroad and it makes me so proud. Sometimes it’s easy to lose faith in humanity with all the negativity in the news and on social media but honestly if you look for good in people, they are all around you. That is what my team strives to do. Bring you the best of what your communities in the Heartland have to offer. And not just in our editorial content, but in my team members and advertisers as well. This is a beautiful season for the agriculture community. New crops are prospering and ready for harvest, baby calves are being born and with the warmer weather approaching, a whole new crop of fruits and vegetables are growing for spring harvest. I heard the other day there was a resurgence of interest from young people wanting a career in agriculture. This is so promising for our community as I believe people are focusing more on local grown products and becoming aware of where our food comes from. We do our best to keep you informed about local farmers and ranchers that are doing their job to keep things ‘Fresh from Florida’. Speaking of spring, this is a wonderful time to take advantages of all that’s happening in the Heartland. You will see we made a change to our calendar of events so we can bring you a more comprehensive list of things to do with your family and friends. It’s nice to see familiar faces at some of the events we cover and we encourage you to submit your special event for our listing. I would like to invite you all to keep sharing your thoughts with me on what you would like to see in the upcoming issues as well as your thoughts on past stories we have covered. After all, we strive to bring you what you want to see and read. BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning six Florida Magazine Charlie Awards in 2015 & 2017. She is arts and culture director of Okeechobee Main Street (13 years) and member of the Chamber of Commerce of Okeechobee County. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah.

RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

KATY FASSLER has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.

LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

SARAH WHITMAN is a writer and journalist living in the Tampa Bay area. She writes a weekly religion column for the Tampa Bay Times. Sarah is also a contributor for Her View from Home. She writes poetry and essays about faith and motherhood.

An eighth-generation Floridian, National Geographic Explorer Carlton Ward Jr uses photography to inspire conservation of Florida’s nature and culture. Carlton founded the Florida Wildlife Corridor campaign in 2010 to build public support for corridor science and, together with explorers Mallory Lykes Dimmitt and Joe Guthrie, he has since trekked more than 2,000 miles through the corridor to showcase a statewide vision to protect Florida’s wild places. Both expeditions produced award-winning books, PBS films and widespread outreach. Carlton is the author of four books, and his photographs have been published widely, including in National Geographic and Smithsonian magazines. By connecting the public to panthers, Carlton is currently seeking to encourage the habitat protection needed to expand the panther population and keep Florida wild.

EMILY PLANK has a photography business rooted in her hometown of Lakeland, Florida that is celebrating 7 years. She is a graduate from the University of Florida with her Bachelor’s degree in Studio Art where she focused on drawing and painting. She fell in love with photography while at Florida, studying film and digital photography –then started her business while in school. She loves to tell a story, whether it’s that of a person, place or space she is dedicated portraying her subject’s beauty. Personally she loves to give back and serve her community, she loves her Lord Jesus and being with her family and friends. CYNTHIA PAXTON is a stay at home mom to two boys. She have spent the last 10 years capturing the precious moments of childhood for families across central Florida. A newborn and child photographer, Paxton loves being able to capture that small moment of time. She has also been a nurse for 15 years and love caring for others. She has lived in Wauchula for over 25 years and is honored to help share our small town community with others.

T

hese photographs may be the most important I’ve made in nearly 15 years focusing on Florida ranches. The reason is that all the properties featured are priorities for conservation that could be lost to development if the state of Florida doesn’t take action to protect them. It was a great honor to visit these spectacular places and spend time with landowners and workers who are doing their part to save wild Florida. Now it’s time for state lawmakers to do their part. The 2018 calendar is dedicated to legendary rancher Alto "Bud" Adams, who died this year. Bud’s passing has given me reason to reflect because he was the first person I visited in 2005 when I began working toward the first annual Florida Ranches Calendar. I had admired his book, A Florida Cattle Ranch, and heard of his reputation for environmental stewardship.

ut it was spending a day with Bud and seeing the land through his eyes that shaped my life and career ever since. He treated me like family, shared his philosophy about caring for the land, water and wildlife, and welcomed me back to join him in telling the story of what Florida ranches mean to our state and world. Throughout that year and in years to come, I would stay in a cypress cracker shack on the ranch, meet the cowboys at the horse barn before dawn, and then follow them through fog-laden pastures winding among palm hammocks to gather brown Braford cattle that belonged to that place and looked like they had been grazing the same range for a thousand years. It always felt epic and timeless, like the Backus painting that hung over my parents’ mantle, or the dozen such paintings that colored the walls of Bud’s home, many of them inspired by the Adams Ranch itself. „

Bud’s ultimate wish was for his land to be preserved in reality, not just in paintings and photographs. Bud has passed that torch, and the legacy of the land now rests in the hands of his family, the politicians in Tallahassee — and us. The Adams Ranch, like every other ranch featured in this year’s calendar, is at risk of being lost to development if lawmakers don’t make major investments in conservation programs like the Rural and Family Lands Protection Program (RFLPP) and Florida Forever. When the first Florida Ranches Calendar was published in 2006, there were only 16 million people in Florida. When Bud Adams was born, there were fewer than 2 million. Today there are nearly 21 million and that number is projected to reach 35 million by 2070. To accommodate that influx of people (currently 1,000 per day) we will lose 5 million acres of natural and agricultural land — and most of the ranches in our state — if we don’t get serious about investing in land conservation.

e need to follow the leadership of Jim Strickland and Lefty Durando, who founded the Florida Conservation Group — landowners representing more than a million acres of Florida who are seeking conservation as an alternative to development. Empowering these ranchers with conservation programs is the most effective and efficient way we can steer development away from environmentally sensitive lands.

In 2014, 75 percent of Florida voters asked for one-third of real estate transaction taxes to be invested in land conservation. Based on the 2017 state budget, that would be nearly $800 million for land conservation annually. But last year lawmakers budgeted just $10 million. Meanwhile, another 100,000 acres were lost to development. „

t stake is the future of Florida ranching, the restoration of the Everglades and the survival of the Florida Wildlife Corridor, 16 million acres of public and private lands that provide wildlife habitat stretching from the Everglades to Georgia and Alabama. They all depend on one thing — making an immediate and substantial public investment in land conservation. We spend $10 billion annually on our state transportation budget. I believe $500 million, or 5 percent of our roads budget, should be our baseline for land conservation. This relatively modest investment in green infrastructure would yield tremendous dividends. „

S

enate Bill 370, with a proposed $100 million for Florida Forever, is a step in the right direction. And Gov. Rick Scott’s proposal for a similar amount suggests that we could see measurable progress in land protection in 2018. But even if all of these funds were invested in cost-efficient conservation easements at $2,000 per acre, for example, only 50,000 acres would be protected, compared to the trend of 100,000 lost to development. We need to accelerate the rate of conservation by four times what is proposed to reverse that ratio of loss and achieve a sustainable balance.

At the age of 12, Casey McKibben would have probably never dreamed that his passion for powersport racing would lead him to the community steward he is becoming today. By the age of 15, Casey went from having a powersport racing hobby that began in the sand pits of Fort Meade to a national competitor and then receiving a Honda Powersports sponsorship by the age of 18. His family, father, Charles, mother, Kathy and sister, M’lynn has always been his biggest supporters by encouraging his passion of power sports and by following him across the country to races.

Charles and Kathy are entrepreneurs with businesses throughout the Heartland from Polk County all the way through Glades; Casey refers to them as “home grown inspiration”. Everything the McKibben family takes on, they do it together; they are 100% committed to being a family owned and run business. This is the type of family dynamic the McKibben family instilled in their children and still show today. McKibben’s plans were to graduate from the University of Florida with an Bachelor of Science degree in Engineering and race professionally with Honda but that all changed

with the economic downturn in 2011. His plans took a shift when all the endorsements and money in that industry left so then turned his focus to his degree and upon graduation accepted a position at Disney. During this time, a family friend who is a company broker told them of a property in Winter Haven that he felt would be a great location for opening a powersports store. At first thought, McKibben was not interested because the family had ‘been there, done that’ in the racing scene. The friend was persistent and after a year of contemplating, they met the owner of the location and the rest is history. On December 31, 2015 they purchased the home of McKibben Powersports Honda. Honda is the family choice of brand. Casey grew up mainly driving Honda recreationally, he was sponsored by them professionally and whom he raced with as a privateer. Casey and Charles run the day to day operations but the entire family pays a critical role in the business. Growing up in Highlands County, there weren’t many businesses that offered powersports so it was required for them to drive out of town for equipment and parts. With powersport popularity growing by the day, he


uniforms are made at the Ridge Area ARC and personal and business banking transactions are all through a local bank. Although McKibben Powersports Honda is a Polk County business, the majority of his expense sheet contains Highlands County businesses. During Hurricane Irma, Casey made sure that he made it his personal mission to locate and bring every possible generator and have them available at McKibben Powersports Honda as well as delivering to counties throughout the Heartland on a daily basis. He went above and beyond to make sure his community was taken care of. wants to provide the Heartland with local resources for families to have fun right in their back yards. Casey actually takes equipment to River Ranch to show people the latest and greatest products in their own territory. Bring the product to the actual element. Growing up in Summerfield, Fl., Miss Rodeo America 2018 Keri Sheffield fell in love with western life. At 5-years-old, she learned to ride, rope and kick up dirt. Soon after, she entered her first rodeo competition. Sheffield’s parents, Joyce and Scott Sheffield, knew little about the sport. Supportive, they called on aunts, uncles and cousins to teach their daughter to navigate the arena. They drove her to events and cheered. Through the years, Sheffield, 24, took to calling herself a first-generation cowgirl. She won multiple awards as an adolescent and teen, including the Florida High School Rodeo Association Queen title. She excelled at pole bending, goat roping and barrel racing. „

Dec. 10, Sheffield became the first Florida woman to be named Miss Rodeo America. At the pageant, held in Las Vegas, she accepted the honor wearing a pink sequin dress and cowgirl hat. She then hit the road, jeans packed and ready to attend appearances nationwide. “I am so excited to travel the country this year representing Miss Rodeo,” Sheffield said. “Rodeo is something I am very passionate about and I am grateful for this opportunity. I believe life is best lived by trying to give selflessly to others and that easily transfers into the rodeo world.” Sheffield will appear at 120 rodeos this year. She will visit hospitals and schools, be featured on radio and television, and host events. She will speak to her platform of service. “We were hoping she’d make the top 10, because that is an accomplishment, but then she made the top five, then the top three and we thought, ‘Oh my gosh, she may actually win this thing,” Joyce Sheffield said. “We are all so proud of her and know she will do a great job.”

A former member of the Junior Rodeo Association, Keri Sheffield holds a Bachelors of Science in Nursing from Berry College. She works as an Intensive Care Unit nurse and, using the scholarships awarded her by Miss Rodeo, plans to continue her education to become a nurse anesthetist. “I will graduate virtually debt free,” she said. “Then, I want to do missionary work in the health care field.” Sheffield once considered going to veterinary school. She served as president of her local 4H club and surrounded herself with animals. A church trip to Costa Rica shifted her focus to nursing. “I was a senior in high school on my first mission trip and I was a carrying a first aid kit,” Sheffield said. “I realized I wasn’t carrying it by accident. God was showing me how I could make a difference helping people. That’s when I decided to become a nurse.”

Sheffield, who attends Meadowbrook Church in Ocala, puts faith first in everything she does. She lives by the verse Colossians 3:23, ‘whatever you do, work at it with all your heart.’ The sentiment kept her positive throughout a physically and mentally tasking Miss Rodeo America competition, she said. “For eight days straight, I had to be on my A-game all the time,” Sheffield said. “That was the hardest part.” Founded in in 1955, the Miss Rodeo America Pageant showcases women from across the country, each representing their home state. This year’s event included horsemanship competitions, contestant interviews and 4 a.m. wake-up calls. The 35 contestants competed on stock horses, memorized multiple riding patterns and answered impromptu questions. Sheffield gave a short speech about how small acts can make a big impact. In addition to the main title, she earned the personality and appearance awards. Brad Pagh, who coached Sheffield throughout her teens, wasn’t surprised to learn she earned the Miss Rodeo America hat. “When a friend called to tell me she’d won, I said, ‘Of course she did.’,” Pagh, now an Ocala blacksmith, said. “She is so smart and so genuine. She has always been well spoken. She is the total package.” Though Pagh no longer coaches Sheffield, he welcomes her to ride at his farm anytime. She visited the day she left for Vegas, rode a while and then bathed the horses. She put them away. “She isn’t a princess,” he said. “She gets in there. She does the hard work. She loves the animals. She loves the life.” The rodeo world functions like a family, Sheffield said. She feels supported and encouraged everywhere she goes. Friends she made a decade ago, continue to brighten her life. “These are the best people in the world,” she said. “There are people I haven’t seen in years and I know if I needed help, I could call them and they would be there.” Sheffield’s immediate and extended family support her as well. Sheffield’s older sister helps proofread speeches. Her

sister-n-law, a cosmetologist, keeps her looking beautiful. Her brother paints her cowgirl boots. “We are a big supportive family,” Joyce Sheffield, who has resided in Summerfield 24 years, said. “It’s become part of life for all of us.” Keri Sheffield will not spend much time at home this year. Probably 30 to 35 days total, she said. But she loves the travel. As Miss Rodeo Florida 2017, she booked most of her own flights and hotels. Miss Rodeo America has her schedule planned out, which is actually a bit easier, she said. “You travel alone 98 percent of the time,” she said. “But everywhere I go I have a contact to meet up with. And I always have my Facebook followers with me.” Joyce Sheffield said her daughter is independent and accustom to travel, so she doesn’t worry much. She too follows the Rodeo Queen on Facebook. When possible, they talk by phone. “We have so much fun watching Keri and following what she is doing every day,” Joyce Sheffield said. “Rodeo is a part of who she is. The whole western way, when you love it, it’s just in you.”

In the coming year, Sheffield will visit the nation’s top rodeos, including Cheyenne Frontier Days in Wyoming. She will also ride at the Calgary Stampede in Canada, a rodeo she has not yet attended. She will meet new people and hopefully make an impact, she said. When her reign ends, she plans to focus on school. Since its inception in 1982, the Florida Strawberry Growers Association (FSGA) has been the voice for Florida strawberry growers. The Plant City-Dover area is actually known as the Winter Strawberry Capital of the World because of its ability to grow this delicious fruit in the winter months for centuries. The FSGA plays many roles in the community of strawberry farmers and residents alike. „

Sue Harrell, Director of Marketing and Tiffany Dale, Director of Member Services and Community Relations, were gracious in allowing me to join them on a tour of a farm called Strawberry Station. The four Ambassadors that were chosen this year through the Ambassador Scholarship program, which receives approximately 50 applications from local schools annually, also joined us. This is a great opportunity for high school students to have access to educational opportunities, receive hands on experience with the farmers as well as receive a scholarship of around $1,000. There are various other scholarship opportunities and each year the FSGA is able to award around $20,000 in scholarships to deserving students. This year’s Ambassadors are Amber Boykin of Strawberry Crest High School, Caroline Brummer of Plant City High School, Jake Fitzpatrick of Newsome High School and Hannah Spivey of the Central Florida Aerospace Academy with Kathleen High School. to use two different types of plants is because they usually allow different production times so that all plants are not ready to be harvested at the same time. This year, that wasn’t exactly the case with our warm climate, the bare roots have produced just as good as the plug plants so production time has been about the same. Mark shared with us the importance of the FSGA’s affiliation with the University of Florida’s Institute of Food program. A large portion of the FSGA’s revenue if contributed to research in order to improve production, berry appearance, flavor and resistance to disease to name a few. The University of Florida is constantly developing and testing new variety of berries to keep production level at its prime.

The harvest time is usually from November through April but preparation of the farm begins around August. At that time, the mounds are made and the black plastic is laid on top creating the perfect environment for growing a strawberry. Because of advances in technology, this process is done by solely by electronics. GPS coordinates are set in the tractor and the rows are built in perfectly straight lines, the plastic is laid and the holes are punched in the plastic for planting. This process takes anywhere from three to five days for the entire farm.

Then the drip irrigation is put into place to provide the electric fertilizer for the plants. And finally, sometimes as early as September, the plants are put into the soil and the growing begins. From this point on it’s strictly manpower on the farm as the strawberries are inspected and harvested by hand. Harvest usually begins around 7 AM and finishes around 3PM so that the strawberries can be hauled to the cooler for processing and shipping. The berries have taken the recent cold weather very well and the temperatures we have experienced are not unbearable for the crop. It was a regular type cold that was faced by farmers about 10 years ago but our winter weather hasn’t been too cold for the past several years. During cold days like we’ve experienced this year, overhead water is used to create a barrier on the plants because the ice doesn’t hurt the plant; it is used as an insulation layer to protect the plant. The berry plant is a hearty plant that is able to take the cold temperatures. Actually, the cooler temperatures increase the sugar in the berry making them sweeter. The strawberries are brought into the cooling facility from the fields they are inspected to determine the grade and labeled to identify the field they

were picked, the variety of berry and even down to the specific detail of the person who picked the flat. This is how they decide what product to send to what location because they have certain customers that request specific characteristics. On this particular day, Chris Smith, Sales Manager with BBI Produce graciously showed us around his facility and the process that a picked strawberry takes before it hits the supermarket shelves. Once the fruit is delivered to the cooler, there is a typical 24-hour turnaround time for the strawberries to be in your local grocery store or shipped to its destination. The berries that get shipped a further distance are picked based on the color at the tip of the berry. The whiter the tip, the better they will ship a further distance, as they will have a longer shelf life than a deeper red berry. The buyer always has the right to reject the fruit so it’s important to correctly match the buyer with the right type of strawberry. After the strawberries are inspected, they are placed in a forced air cooler where they are covered and cooled to 32 degrees in about 45 minutes from a field with a temperature of around 80 degrees. It is imperative to cool the berries as quickly as possible once they are picked. Once they reach 32 degrees they are then transferred to a holding room where they are kept at 34 degrees and shipped from there at the same temperature. The ideal temperature for a strawberry is 32 degrees. The packaging that the strawberries are placed in is strategically made so that the air flows through the flat evenly in all directions for maximum cooling in a minimum amount of time. At the cooler/shipping facility sales requests and historical data is used to determine the demand needed by vendors. The primary markets for Florida berries are east of the Mississippi from Florida all the way North to Maine and New York then a little to the East in Texas. California strawberries take care of the West coast demands.

Packaging is a big deal for the industry, especially for Florida. Fresh from Florida is the main focus in marketing because FSGA wants consumers to know and be aware of where the fruit is coming from because people aren’t checking the label on the strawberries they are purchasing. Strawberries from Mexico are placed right next to berries from Florida so it’s important for consumers to be aware of what they are buying. This has been becoming more of a factor over the past 10 years as Mexico is a direct competitor in the industry.

Puree strawberries and basil in a food processor. You’re going to want to break down the basil just to the point it’s small enough to fit through a straw. Next we’ll pour the puree into a pitcher, add in the fresh-squeezed lemon juice, the simple syrup, 1 quart of water and ice. That’s it! Now enjoy and stay cool.

Florida Strawberry Shortcake Ingredients: 3 pints Florida strawberries ½ cup granulated sugar 2 ¼ cups all-purpose flour 4 tsp baking powder 2 tbsp granulated sugar ¼ tsp salt 1/3 cup shortening 1 egg beaten

2/3 cup milk 1 tsp real vanilla extract 2 cups heavy whipping cream 2 tbsp powdered sugar Mint for garnish (optional) Balsamic vinegar (optional) Chocolate for dipping (optional)

Rinse, drain and remove caps from strawberries. Slice lengthwise and toss with ½ cup granulated sugar; wrap and chill.

Preheat oven to 425; grease and flour one 8- inch baking pan. In a medium bowl combine the flour; baking powder, sugar and salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg, milk and vanilla

Top with a sprig of mint and drizzle with balsamic vinegar. Try dipping the tips of a few strawberries in chocolate for an even more delectable treat!

Florida Strawberry Caipirinha 1/2 cup sliced fresh Florida strawberries 1/2 lime sliced 2 1/2 teaspoons superfine sugar 1/4 cup caipirinha (or white rum) 1 cup ice In an old fashioned glass, muddle sliced strawberries and lime with sugar until juices are released, leaving some pieces of fruit intact. It has long been said that “a dog is a man’s best friend” and while that may be true, there are over a hundred dogs and cats at the Highlands County Humane Society in desperate need of forever homes. The Highlands County Humane Society was built in 1965 in Sebring under the leadership of Sally Giffard. Over the years, hundreds, if not thousands of dogs and cats have passed through its walls on their way to a new life. Not only have lives been changed, but the Humane Society itself has grown. It has transformed from a small building with FEMA trailers and a handful of dog runs to a state of the art welcome center and office with specialty cat and small dog rooms, an amazing dog kennel, and a pool.

With the new construction, the shelter was also able to build a new surgery center with exam rooms and an operating room. The Humane Society, a no kill shelter, which solely runs on donations, has built everything and runs day to day operations through the goodness and generosity of the people of Highlands County. “I am sometimes in awe,” says long-time president Judy Spiegel, “of the kindness of people. At Christmas time we couldn’t even walk in the lobby because it was so full (of gifts, food, and supplies) and we emptied it three times! It just kept coming in! Whatever we needed, we often post on Facebook, it just shows up.” The Highlands County Humane Society exists to advocate for the abused, neglected, unwanted, and abandoned animals of our community. It is their mission to help its furry citizens to find a new and healthy home. Its goal is to provide shelter to lost, homeless, and unwanted animals, to furnish medical and other services, and to further the education and bond between people and animals.

Highlands County Humane Society, is a no kill shelter, which solely runs on donations. The shelter currently holds almost 200 cats and dogs. While on average 10-12 animals are adopted weekly, just as many enter the shelter. With 9 paid staff and almost 50 active volunteers, the Humane Society is thriving but always needing more supplies and volunteers. One of the biggest fund raisers for the shelter is the annual Halloween Terror Trail. This year will be the 10th annual. Unfortunately, due to Hurricane Irma and a tornado during the storm, the wooded area in which the event is held was badly damaged. While efforts are being made to remedy the situation, volunteers and funds are desperately needed to make this year’s event happen. In addition to the various fundraisers, the Highlands County Humane Society hosts many adoption events at the shelter as well as the Sebring Petco and Pet Supermarket.

Looking Forward President Judy Spiegel has big goals for the coming years. “Our goal this year is to open a low cost primary care clinic. We get calls on a daily basis for needs. We have everything we need except an x-ray machine. We have half the money but need to raise the rest. Once we have the machine, we will open the clinic.” The clinic would be an affordable option and available to pets who are sick, injured, or for wellness visits. Another large goal is to petition Highlands County Commissioners

to create and vote in a law to enact limited tether laws. “Right now it is legal to tie up a dog, give it a cardboard box, and leave it 24/7. It is horrible, horrible, horrible. Most counties already have this.” With the Florida heat, the dogs are often severely dehydrated and overheated. This law would protect pets from extreme heat and cold and ensure that pet owners take responsibility of their furry family members. All goals of the shelter are to move forward in making the lives of its animals and owners better, and to offer low-cost options for medications and treatments available to all.

Why Adopt? Having a pet is an American staple. There are thousands of animals in need of a home and adopting a pet from the Humane Society does so much good. Not only are you saving a life, but enriching yours as well. Adopting from a shelter fights against puppy mills and reduces the population of unwanted pets. “If people knew where these puppies came from, how the parents lived, they would never buy one. It’s horrific. It’s a horrible thing all around. There are thousands of wonderful animals dying that need a home.” The Highlands County Humane Society is a wonderful place to find your perfect pet.

How You Can Help The needs are many at the shelter. While food is always needed, there are many things that most do not realize. Donations of anti-bacterial cleaner, office supplies, postage stamps, and Gerber baby food (chicken and gravy or turkey) are the most needed. Food (dry and canned), toys, and puppy pads are also always needed. All donations can be brought directly to the shelter.

You can volunteer! People are needed to help walk dogs, clean, and play with the animals. A few hours of your time will be some of the most rewarding. “Of course we can always use volunteering. Nine people cannot do what needs to be done. So we need people to help; walk the little animals, feed the dogs and cats, clean areas. It is nonstop.”

Leroy and Judy Mason have been involved in the rodeo lifestyle for most of their life so its no surprise that for the over 50 years, Mason Pro Rodeo Productions has been bringing spectators and contestants first class rodeo performances. In January, Mason Pro Rodeo brings to you the Peace River Pro Rodeo Classic and the Lakeland Pro Rodeo Classic, Extreme Edition. Additionally, they host a weekly rodeo at Westgate River Ranch in Lake Wales. Judy was kind enough to invite us to Lakeland to take a behind the scenes look at the ins and outs of rodeo production. Being greeted by The Patriotic Cowgirls and white horses was a great way to start and is just how MPR begins their rodeo opening performances each evening. heartland SCENE manages the group of beautiful ladies, drives the truck and trailer to events and makes sure the horses and well taken care of, the tack is clean, the horse hooves are painted and the horse/rider team is perfectly paired. The patriotic cowgirls are local horse loving gals from as young as Ryla Bryant, a 12 year old Lake Gibson Middle School Student and barrel racer. Perhaps the most popular entertainment is Tim "Wild Thang" Lepard and Team Ghost Riders! Riding on the back of sheep dogs, these cowboy monkeys round up rams onto the back of the signature "Wild Thang" truck. It was really amazing to see the relationship Tim has with monkeys and their trust in him. Tim has been a part of the PRCA for over 35 years and has won many national awards for his performance.

New to the rodeo arena this year and the first time they have performed at a rodeo in Florida was PRCA Specialty Act Cody Cavanaugh and Ed Rossi, professional freestyle motorcycle riders from Nina, Wisconsin. They performed a variation of death defying tricks, stunts, and jumps on Honda motorcycles. This is what the Masons specialize in, bringing two things that spectators would never expect to see together, FMX riders at a rodeo. At her first Florida rodeo since being crowned Miss Rodeo America, Keri Sheffield joined the rodeo family and dazzled the hometown crowd at the RP Funding Center. She stated she was “honored to be at the Lakeland Pro Rodeo and to bring the Black Hills Gold (crown) back home”. Judy, who likes to stay more behind the scenes these days, credits thick skin and a strong faith in the Lord with their rodeo success. “We’ve been blessed in the rodeo business, we’ve stuck through good times and bad times but we’re rodeo junkies so we’ll be with it until the end of time” says Leroy. Salad Romaine Pears Blue Cheese (crumbled) 1 Avocado Thinly sliced sweet onion (or green onion) Candied Pecans (1/4 sugar & 1/2 cup pecans, 1/4 t. cayenne)

1/4 cup butter 1/4 cup AP flour 1 1/4 cups milk (whole milk) 1/4 t. cayenne

Dressing

1/3 cup olive oil 3 T. Red Wine Vinegar 1 T. white sugar 1 t. prepared mustard 1 clove garlic, grated 1/2 t. salt (pepper to taste) Prepare candied pecans. Place pecans and 1/4 cup sugar and 1/4 t. cayenne in skillet and slowly roast, stirring Heartland regularly. Once sugar liquifies, toss well and turn off. LIVING Allow to cool. February March 2018

To make dressing, combine all ingredients. Assemble salad. Apply dressing right before serving.

Preheat oven 375. Butter one large soufflé dish or six small ramekins.

Cheese sauce:

In pan, melt butter; add flour. Combine until smooth and bubbly. Whisk in milk and seasonings. Continue stirring until sauce thickens. Remove from heat. Add cheese, stir until melted. Add egg yolks and stir until well blended. Set aside. In mixer, beat egg whites with cream of tartar until stiff. Starting with a third of the sauce, fold into egg whites gently. Repeating procedure until all sauce has been incorporated into whites. Soufflé makes stunning presentation when “crown” rises above top of dish. Fill dish 3/4 full. Bake 25 to 30 minutes for large dish. (Shorter baking time, 15-20 minutes for small dishes) Serve immediately!

CHOCOLATE WAFER WHIPPED CREAM CAKE 1 Box Chocolate Wafers (Nabisco’s FAMOUS) or 1 pkg. Thin Oreos 2 cups Heavy Whipping Cream 1/4 cup Confectioner’s Sugar 1/2 tsp. clear vanilla

Place beater and bowl (metal) in refrigerator to chill one hour. Remove chilled bowl and beater and whip whipping cream, add confectioner’s sugar, vanilla. Dollop whipped cream down center of oblong plate. Spread whipped cream on wafer; stack four-five wafers then place on edge. Create wafer log. With remaining whipped cream, cover wafer stacks and refrigerate at least 4 hours. Sprinkle with grated chocolate or cocoa powder or confectioner’s sugar. Slice and serve. Guests enjoyed a wonderful reception and gallery talk on January 10 at the Lake Wales Arts Council. Nature Meets Art was a free gallery exhibit featuring the photography of Sheriff Grady Judd and Photographer Mike Potthast of Potthast Studios of Winter Haven, capturing an amazing display of color, light and intimate perspectives of Central Florida's natural world. Photography is on display until February 28.

South Florida State College Foundation held the first Million Dollar Hole-in-One Golf Shootout on January 18-20, 2018 at Sun’n Lake Golf Course in Sebring. Although no one snagged the $1 million during the SFSC Shootout the four top golfers who hit golf balls closet to the hole were: first place, Scott Hitt (15' 4-1/2"); second place ,Jose Jimenez (23' 9"); third place, John Vicker Jr. (27' 6") and fourth place, Michael Kelly (34' 6-1/2").
