letter fromTHE EDITOR Hello everyone! We’ve had a changing of the guards of sorts

as my mom and your Heartland LIVING publisher, Cindy, has been on a once in a lifetime trip creating memories with friends in Paris and Morocco. I feel so privileged that she has trusted me to finalize this April | May Issue for you all and I hope you love it as much as I do! This time of the year is my favorite with crisp mornings, warm afternoons and the smell of orange blossoms all around. It’s time to get outside and add some new color to your landscape with new spring flowers, fruits and vegetables. It’s a great, affordable way to brighten up your home for spring. I find planting seeds with my daughter and watching the fruits of our labor grow a very rewarding experience for us. We currently have five pineapples growing in our garden and I can’t wait to enjoy those sweet homegrown beauties! I’m really excited with this issue and the variety of content that the Heartland continues to give us with its vast history and hidden gems. Gracing our cover this issue is iconic Pink Lady that overlooks Little Lake Jackson in Sebring. I’ve been wanting to tell her story for sometime so when my friend, Bo See, approached me about writing about Harder Hall, I jumped at the opportunity. I know Highlands County is ready to see her rise again with the new projected plans. For all of our nature lovers, we are uncovering a little piece of paradise in the woods of Venus. Lightsey Family Ranch is a unique find in the Heartland and offers a wide variety of adventure for everyone. Lee Lightsey and his wife Tracy have built a dream location where they show you the meaning of true southern hospitality. We are blessed to have the 2019 Florida Teacher of the Year, Joy Prescott, coming from the Heartland’s own, Glades County. It’s amazing to know that even if you’re from a small town, you can make a huge difference and that’s just what Joy is doing in the lives of her local students at Pemayetv Emahakv Charter School and now all across the state. What a great honor she received and we are honored to feature her. Spring is a time for rebirth and for me that’s symbolic of Easter. I love our family’s traditions of gathering together with food, fellowship, egg hunts, our traditional egg toss and the elusive chocolate bunny. I’m glad to share with you the history of Easter and Passover. Even if you aren’t particularly religious, you might learn something you never knew about the origination of the holiday. Thank you all for your continued support, we love hearing from you so make sure to drop us an email or make a social media post; you just might find your comment in the next “From our Readers” section. BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah. RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.

KATY FASSLER has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.

KATIE LADUE was born in Sebring, Florida, where she was raised her whole life. She has been an avid reader and lover of books ever since she can remember, and has long considered reading a large part of who she is. She started writing at age twelve, and decided at age fifteen that she wanted to be a writer. LaDue graduated from Bryan College in Dayton, Tennessee in the Creative Writing program in 2018, where she learned how to sharpen her writing abilities. She is working to become an author alongside writing for Heartland Living.

JAMES “BO” SEE is an intensive language arts teacher at Sebring High School, where he was recently named Teacher-of-the-Year for 2018-2019. He has been at SHS for six years and feels honored to be amongst so many amazing students and staff. After graduating from Troy University with a Bachelor’s degree in journalism and public relations, Bo moved to Nashville and worked in the music industry before returning home to the heartland area. Raised in Hardee County, Bo found his niche in the educational field. Bo has been a proud resident of Sebring since 2013 and credits his son Brady James as being his greatest accomplishment.

SHARON CANNON Sharon's passion has always been photography. She is an award winning photographer having transitioned from amateur to professional in 2010. She is a member of Okeechobee Main Street, on the arts and cultural committee. Sharon has lived in Okeechobee for many years, and has one son, Karl. “I love the history of our little town. I want to preserve all of our ‘todays’ through the lens of my camera, for our future ‘tomorrows’.”

EMILY PLANK has a photography business rooted in her hometown of Lakeland, Florida that is celebrating 7 years. She is a graduate from the University of Florida with her Bachelor’s degree in Studio Art where she focused on drawing and painting. She fell in love with photography while at Florida, studying film and digital photography –then started her business while in school. She loves to tell a story, whether it’s that of a person, place or space she is dedicated portraying her subject’s beauty. Personally she loves to give back and serve her community, she loves her Lord Jesus and being with her family and friends.

BILL WIGHT considers himself a passionate photographer. He was born in Bridgeport, Connecticut and now lives in Arcadia Florida. He strives to give his clients exactly what they want and if they are not sure, he relies on his instincts. Bill started photography seriously after a motorcycle accident. During his recovery, Bill went to Myakka park, walked around and saw many types of birds and animals. It was there he got an epiphany to get a camera. Bill is an award winning photographer and has won a 2017 Florida Magazine Charlie award for best original photography, that was published in Heartland LIVING Magazine. His studio, located in Arcadia is Wight Zebra Photography. CAROLINE MAXCY FOX was born and raised in Central FL. She decided to be an artist at the age of five. After achieving her BSA from Florida State University, she practiced in the field of design for six years and then received a Masters in Graphic Design from NC State University. She honed her artistic craft and developed a "way of seeing" that fuels her work. Caroline is a full time photographer and lives with her husband in the heart of Sebring, FL. Together they run the day-to-day life at The Great Commission Bible Institute as the Site Coordinators and Dorm Parents. Naturally, adventure abounds.

CYNTHIA PAXTON is a stay at home mom to two boys. She have spent the last 10 years capturing the precious moments of childhood for families across central Florida. A newborn and child photographer, Paxton loves being able to capture that small moment of time. She has also been a nurse for 15 years and love caring for others. S

he’s seen her share of snowbirds, senior citizens, natives, and neighbors come and go, but the Harder Hall Hotel has remained a loyal legend that connects the city’s past, present, and prospective future---perhaps more so than any other historical commodity in Highlands County. Taking its name from a couple of out-of-town developers, Lewis F. Harder and Vincent Hall, the Spanish-style hotel and golf resort was constructed by Schutze and Weaver. The firm was also famous for crafting the renowned Biltmore in Coral Gables. Hall owned a 2,000-acre tract and plans were promptly made for a massive Mediterranean-style hotel to serve as the focal point to the adjoining golf-course, as well as the 40 high-dollar houses that Hall and Harder originally envisioned would surround the municipal. Ground broke on the magnificent manor, located at 3300 Golfview Drive, in 1925 during the midst of the “roaring twenties” and just prior to the famous fall of Wall Street. Although it took nearly two years to complete the dream-like project, Hall and Harder knew they were at the forefront of a legendary design and dwelling.

hen Harder Hall officially opened its doors in 1927, it boasted 134 rooms that included a great room and banquet room with ceilings stretching 22 feet in height. Guests were treated to the grandest amenities of the era, outstanding customer service, and incomparable views of the lovely Lake Jackson. The beauty and charm of the Sebring structure would prove to withstand the test of time.„

T

he 1950’s brought both a change in ownership, as well as a major makeover to the grounds that would turn out to be lucrative for years to come. Prominent architect, Dick Wilson was called in to transform the original greens into a top of the line championship course. Two of the new co-owners, Victor and Eva Jacobson, also ran a widely successful tennis and golf camp for teenagers, which was the first of its kind. These were arguably the resorts best years for both business and popularity. In fact, the prestigious lake-side lodge played host to many celebrities during its prime, including Mario Andretti, Paul Newman, and Steve McQueen, just to name a few.„

Lights Go Down Over Little Lake Jackson For half of a century, Harder Hall served Sebring well, providing both lodging and recreation to folks far and wide while fostering too many epic memories to tally. However, a failed attempt at a much-needed facelift in 1982 brought the lights down over little Lake Jackson, and the legendary lakefront resort closed its doors. A venture that started out to be seemingly innovative ended in bankruptcy after a time-share developer out of Miami purchased the property and lost everything before the project was completed. For the better part of 37 years, the “Pink Lady� has sat alone and desolate. Rumors seem to be the only company she keeps these days. Some say the ghosts of past guests haunt her. Others say she curses anyone or anything that attempts to breathe life back into her existence. There have been stories of tragic death falling upon the lives of developers who attempt to bring her back to life. True or not, one thing is for certain: to date, no developer has yet to complete an attempt at restoration. In 1990, the aging building was added to the National Register of Historic Places, saving it from serious talk of demolition. At least one or two projects were undertaken with failure before the city of Sebring gained ownership in 2007.

According to Highlands News-Sun, the facility will feature 75 independent living units, 64 assisted living units, and 23 memory care units. The project is expected to take close to two years to complete, and the company promises to preserve as much of the structure’s original history as possible during restoration.

The Pink Lady is on the Rise…

W

ill the Pink Lady rise again? Actually, it looks particularly promising these days. Working alongside of the Industrial Development Authority (IDA), the property has been purchased by South Florida Senior Living. Plans are being made to turn the gigantic treasure into a senior living facility. This makes perfect sense considering the median age in Sebring is 50, and the city seems to attract its share of retirees yearning for warmer weather to guide their golden years.


An Elegant Atmosphere for the Elderly The project will also include 104,000 square feet of new constitution. What sets this project apart from previous ventures? South Florida Senior Living aims to provide amenities that are exclusive to this area like the anticipated memory garden, which will provide patients with dementia a beautiful botanical sanctuary to safely wonder about with ease and comfort. Plans for a pool with a zero entry will allow residents to transition into the water without difficulty or fear. Astonishing views of the lake and an incredible inn and eatery right next door will also provide spectacular views and accommodating lodging for guests of the residents. These are just a few features visualized for the elegant elderly haven in which was once regarded as the honorable Harder Hall. „

Only Time Will Tell...

C

onstruction on Harder Hall was anticipated to begin during the latter part of 2018, but the bond process is taking longer than originally projected. The process is still active but monies have yet to be issued. WDG Construction has been named as the general contractor with promises of local subcontractors to follow suit, as needed.

Meanwhile, the Pink Lady continues to hover over little Lake Jackson with plans and promises of better days. So, will one of the most historic hotels in Highlands County make a comeback? Stay tuned‌ only time will tell.

T

he Lightsey Family Ranch is a fully outfitted destination ready for your best hunting experience, wedding venue, or company retreat. Lee and Tracy Lightsey had a dream of starting a business to help men and women experience the wonder of Florida's greatest adventure. “We have been married 14 years.” Says Lee. “The first 10 years of our marriage we owned a couple hundred acres in eastern Highlands County where we actually raised alligators from eggs and had our hunting business. As our business and other dreams grew, we knew we needed to find a bigger piece of property to support our ideas.” Five years ago, the Lightsey family purchased the property and began working to make the dream concrete. Through years of hard work, building projects, and word of mouth, The Lightsey Family Ranch has quickly become a bucket list must for hunters and adventurers of the area.

The Lightsey Family Ranch is truly a family business. Tracy and daughter, Reagan, 14, breed and raise whitetail deer. When the deer have been weened and ready to explore the 2,000 acres, they are released to Lee and son, Mason, 12. Each member of the family takes part in handing animals, helping around the property, and are proud of their family legacy. The Lightsey family is community minded, serving surrounding counties. With little to no advertising, word of mouth keeps the family busy with scheduled hunts and lodge stays. “Right now,” says Lee Lightsey, “three-fourths of our business has been local from the three counties around us.” This past year, the Lightsey Family Ranch donated a special Valentine’s Day dinner for 25 couples to Moore Haven High School’s Project Graduation.

The main attraction at the Lightsey Family Ranch is hunting. With nature rich grounds, the Ranch is the perfect location to make a “once in a lifetime” score. Guided hunts of hogs, alligator, whitetail deer, quail, and turkey are offered year-round. Stay overnight in the lodge, eat well with Chef Mike Styer, and experience and all-inclusive hunting adventure. “We currently hatch, on an average year, 22,000 alligators from eggs,” says Lee Lightsey. “This is possibly one of the highlights of our facility during August and September as people are so intrigued by a hatchling popping out of an egg and immediately trying to bite you! After the hatchlings fade away, we go right into deer season, which runs from September until March 1. We stay steady with deer until Christmas. After Christmas, our quail hunting really picks up and it runs until April 20. We hunt hogs and alligators year-round. In July we start collecting the alligator eggs off private ranches and fill the incubator, to start the process all over again.”

Stuffed and Smoked Bacon Wrapped

Ingredients 1 lb. Venison Backstrap 8 oz. Cream Cheese 1/4 c Parmesan Cheese, grated 1/4 c Mozzarella Cheese, shredded 1 JalapeĂąo, minced 1/4 c Onion, diced 1/4 c Chives, chopped 1 c Button Mushrooms, sliced 1 lb. Bacon

Things You Will Need Smoker Everglades Swamp Spice Meat Glue Plastic Wrap Instructions • Butterfly Venison backstrap lightly season, place in fridge. • Place cream cheese in a mixer while on slow speed add Parmesan and Mozzarella and blend until incorporated. Set aside. • Sauté onions, mushrooms and jalapeño in butter. Season with salt and pepper. Cook until onions are transparent. Roughly 4-8 minutes and place in fridge and allow to cool. • Once mushroom mixture is cool, add into cream cheese mixture. Add chives and finish blending. • Lay out bacon on plastic wrap vertically according to size of backstrap, sprinkle bacon with meat glue. Cover lightly, place seasoned backstrap horizontally onto bacon. • Spoon cream cheese mixture into backstrap. (Be careful not to over stuff) • Using the bottom of the plastic wrap, roll bacon and backstrap until sealed. Wrap tightly in plastic wrap making sure both ends of plastic wrap are twisted tightly. Place in fridge. (Glue will activate after 12 hours) • After 12 hours or more, remove backstrap from plastic. Season with Texas Smokehouse Blend. (Set smoker to 225°)

Ingredients 2 lbs. Red Bliss Potatoes 8 oz. Sour Cream 1/4 c Chives, chopped 1/2 c Butter, melted 1 c Milk Instructions • Rinse Potatoes and place in pot. Bring to boil. Season water with salt and pepper. Boil till fork tender. • In separate pan, bring milk and butter to a boil and turn off. Allowing butter to melt and milk to get hot. • Strain Potatoes and place in mixer. • While mixer is on, pour chives as well 1/2 of the milk and butter mixture into potatoes and taste. If needed, add the rest of the milk and butter mixture. Salt and pepper to taste.

2 c self-rising corn meal 2 eggs 2 T. bacon grease 1/4 c Vegetable oil 1/4 c sugar 1-3/4 c buttermilk 1/2 c shredded cheddar 1 jalapeno, minced Salt and pepper Pre-heat oven to 400 degrees. • Combine eggs, buttermilk, bacon grease and sugar in mixing bowl. Whisk till eggs and grease are emulsified. • Next, fold in cornmeal, cheddar and jalapeno into egg mixture. Season with salt and pepper and set aside. • In a large cast iron pan, pour in the vegetable oil and turn on medium heat. Once oil is water popping hot, pour corn bread mixture into the skillet. Prescott is a fourth-grade math teacher at Pemayetv Emahakv Charter School on the Seminole Indian Reservation, where she has taught for the past five years. Prescott has a strong background in teaching, as she started in 2001, and has been teaching many different subjects throughout those years. She has been applauded for her work in encouraging children to be interested in learning, her work ethic, and her active teaching style. „ Heartland LIVING April May 2019

ast year, she was awarded Glades County Teacher of the Year, but this year she has outshone that feat by receiving the Florida Teacher of the Year award and being granted the title of Ambassador of Education. When asked how she felt about receiving this title, Prescott said, “Teachers, you know, we go home every day and it’s not an average job where you don’t take your work home with you…I’m not talking about schoolwork or you’re grading papers…I don’t just load up the papers I need to grade, I load up twenty-seven kids that I think about constantly when I get home. So this role as the Ambassador of Education has switched my mindset a little bit to I’m not just taking twenty-seven kids home with me, I’m taking almost 200,000 teachers home with me.”

ne of the things Prescott mentioned was that math was one of her favorite things to teach in school. She stated that she loved helping give kids an in-depth look into how problems work so that they can actually understand the problem instead of just memorizing how to solve it. When asked about how she helps students who may have difficulty with understanding math, Prescott answered, “A lot of kids have a difficult time just trying to remember the steps on having to solve the problem but when you dive deep into the math problem… then they have much, much better, deeper understanding…We focus on that word “yet” a lot. Instead of saying “I can’t” we say, “I can’t yet”.” Prescott said that she tries to focus on whole-child learning, meaning that she focuses not only on teaching the kids math, but also on teaching them “skills that they need when they leave us, like communicating with each other, treating each other in respectful ways, collaborating, teamwork,” and that through her, the school has begun to focus on that more than they did in the past.

rescott talked very highly about Pemayetv Emahakv Charter School, saying that, “I’d like to just highlight my school… I work for an amazing school. I cannot ask for a better place to work. Our leadership is amazing... The teachers I work for, I feel like are the best of the best. They come to school every single day and work hard for their students. Our culture department, they do an amazing job of making sure that the students understand their heritage and where they come from, and are working hard to recreate their language because it is a dying language.” She also talked about how she wanted to be a teacher from a very young age; her parents had been hard-working people who wanted her to be better-off in life than they were, and had told her that what they wanted for her to “be somebody”. Prescott stated, “In my mom and dad’s opinion, teachers were somebody. They respected teachers, they made it a priority for their children to respect their teachers, and so I think because of that I correlated the two. And so, I just knew from that very young age that I wanted to be a teacher. It’s something I never wavered from.”

To any students who are studying to be teachers, Prescott advised having a student-centered classroom where the students are doing more of the talking and helping each other than the teacher at times. The second piece of advice is to be willing to disconnect for a little bit; that teachers need to be aware of their own emotional well being. Prescott commented, “that’s hard, going into teaching, because you want to do the best job that you possibly can for your students, so you’re constantly trying to figure out ways to better yourself or better your practice, make your students more successful, and in that time period, I think you kind of lose track of yourself and so it’s very important for teachers to learn when to disconnect and take those moments and really force themselves to take those moments.”

ne of the things that Prescott mentioned being the most interested in when it comes to her goals for being Ambassador of Education was that she wanted to emphasize the importance of socialemotional learning in the classroom. She said that while social-emotional learning is coming to the forefront with discussions of school safety, mental health, and kids dealing with trauma, there is a difference between social-emotional learning and mental health. Prescott said that students need to learn more than just their school subjects; they need to develop what were originally called “soft skills” but are really better described as “essential skills” like communicating with their peers, building relationships, collaborating, critical thinking, and problem-solving. She hopes that this change will be coming soon, saying, “What I would like to see is we’re going through this huge standards review right now… just kind of reviewing this thing, what is best for education in Florida. And as they’re reviewing and rewriting the standards, I would like to see social-emotional learning really be a focus… just trying to integrate the standards so that we go back to more of a whole-child learning.” Prescott believes that teachers have a great opportunity in the classroom to teach kids these essential skills through academic lessons, and as she spends the rest of the year speaking to other teachers during events or in general acting as a spokeswoman for teachers and education in Florida, she will have an opportunity to bring those beliefs farther into the limelight. As Prescott said, “So this is definitely a huge responsibility, but one of the biggest honors I could ever possibly imagine. And I hope that I’m doing a good job. It means the world to me.”

More than Egg Hunts and Chocolate Bunnies By Jessica Pleger Easter is a Christian holiday that celebrates the belief in the resurrection of Jesus Christ. In the New Testament of the Bible, the event is said to have occurred three days after Jesus was crucified by the Romans and died in roughly 33 A.D. The holiday concludes the “Passion of Christ,” a series of events and holidays that begins with Lent—a 40-day period of fasting, prayer and sacrifice—and ends with Holy Week, which includes Holy Thursday (the celebration of Jesus’ Last Supper with his 12 Apostles), Good Friday (on which Jesus’ crucifixion is observed), and Easter Sunday. Although a holiday of high religious significance in the Christian faith, many traditions associated with Easter date back to pre-Christian times. Easter Sunday and related celebrations, such as Ash Wednesday and Palm Sunday, are considered “moveable feasts,” although, in western Christianity, which follows the Gregorian calendar, Easter always falls on a Sunday between March 22nd and April 25th. Despite its significance as a Christian holy day, many of the traditions and symbols that play a key role in Easter observances actually have roots in pagan celebrations and in the Jewish holiday of Passover.

Religious Tradition of Easter The resurrection of Jesus, as

described in the New Testament of the Bible, is essentially the foundation upon which the Christian religions are built. Hence, Easter is a very significant date on the Christian calendar.

According to the New Testament, Jesus was arrested by the Roman authorities, essentially because he claimed to be the “Son of God,” although historians question this motive, with some saying that the Romans may have viewed him as a threat to the empire. He was sentenced to death by Pontius Pilate, the Roman prefect in the province of Judea from 26 to 36 A.D. Jesus’ death by crucifixion, marked by the Christian holiday Good Friday (the Friday before Easter), and subsequent resurrection three days later is said, by the authors of the gospels, to prove that he was the living son of God.

Passover and Easter Notably, Easter is also associated with the Jewish holiday of Passover, as well as the exodus of the Jews from Egypt, as described in the Old Testament. These links are clearly seen in the Last Supper, which occurred the night before Jesus’ arrest and the sufferings Jesus endured following his arrest.

The Last Supper was essentially a Passover feast. However, the New Testament describes it as being given new significance by Jesus: He identified the matzah (or bread) he shared with his 12 apostles as his “body” and the cup of wine they drank as his “blood.” The highlight of Passover is the Seder, observed on each of the first two nights of the holiday. Seder is a fifteen-step family-oriented tradition and ritual packed feast highlighted by eating matzah, eating bitter hers, drinking four cups or wine and reciting the Haggadah. To commemorate the unleavened bread that the Israelites ate when they let Egypt, they don’t eat or possess any leavened grain from midday of the day before Passover until the holiday concludes. These rituals would come to symbolize the sacrifice he was about to make in death, and became the basis for the Christian ritual of Holy Communion, which remains a fundamental part of Christian religious services.

Easter Traditions In western Christianity, including Roman Catholicism and

Protestant denominations, the period prior to Easter holds special significance. This period of fasting and penitence is called Lent. It begins on Ash Wednesday, and lasts for 40 days (not including Sundays). The Sunday immediately prior to Easter is called Palm Sunday, and it commemorates Jesus’ arrival in Jerusalem, when followers laid palm leaves across the road to greet him. Many churches begin the Easter observance in the late hours of the day before (Holy Saturday) in a religious service called the Easter Vigil. In Eastern Orthodox Christianity, Easter rituals start with the Great Lent, which begins on Clean Monday (40 days prior to Easter, not including Sundays). The last week of Great Lent is referred to as Palm Week, and it ends with Lazarus Saturday, the day before Palm Sunday. Palm Sunday marks the beginning of Holy Week, which ends on Easter. Traditional Easter dinner of lamb also has historical roots, since a lamb was often used as a sacrificial animal in Jewish traditions, and lamb is frequently served during Passover. The phrase “lamb of God” is sometimes used to refer to Jesus and the sacrificial nature of his death. As we spend time with family and friends this Easter holiday, let us take time to truly reflect on the meaning of holiday. Unlike other “Hallmark” holidays, this is a holiday that has meaning and has impacted the lives of every person, regardless of your religious beliefs.

24th Annual AdventHealth Gala Weekend Photography by Caroline Maxcy Fox On Feb. 8-10 the AdventHealth Sebring, Lake Placid and Wauchula Foundations hosted their annual Foundation Gala weekend to help fund lifesaving programs at local AdventHealth hospitals. The three major events were made possible by dedicated board and community members, local high school students, and more than 120 passionate volunteers. AdventHealth, formerly Florida Hospital, is a connected system of care with more than 50 hospitals and 80,000 employees all unified by a mission to Extend the Healing Ministry of Christ. Thanks to our Highlands and Hardee County community members’ support, AdventHealth can continue to provide exceptional health care, delivered with a unique brand of inspired, compassionate care, close to home.

Golf Tournament

Kicking off the weekend was the annual Golf Tournament held on Friday, Feb. 8, at Sun ‘N Lake Golf Club. More than 150 golfers enjoyed the Deer Run and Turtle Run courses. The tournament featured a 50-foot putting contest – generously coordinated by Southern M Printing and Events – that concluded with two golfers winning new Indian Motorcycles. More than 450 people attended the AdventHealth Foundation Gala on Saturday, Feb. 9, at the South Florida State College Gymnasium. Chaired by Traci Smith, the event was the first since the news in January announcing Florida Hospital as one national brand of care under one new name, AdventHealth. The heartwarming night featured an exciting auction and ended with a crowd of 1,300 enjoying a concert by country music star Scotty McCreery. „

Eleven local chefs showcased their tapas style signature dishes at the Achievement Academy’s fifth annual Top Chef of Polk County event on February 25 at the RP Funding Center. Each dish was accompanied with a wine or libation the complimented the flavors of the dish. The sold-out audience of 250 guests was given the opportunity to sample each of the chefs’ dishes. The net amount of $148,000 raised at this event will benefit children with special needs at the Achievement Academy located in Lakeland. GLAZE: Apricot Preserves and Maple syrup Line metal roasting pan with heavy aluminum foil. Place ham (bottom up) in pan. Sprinkle soy sauce to moisten ham. Season with above seasonings (or your favorite spices). Pierce meat with knife and stuff garlic into cut. Turn ham over, fat side up. (if skin-score). Repeat seasoning process. Repeat garlic pockets. Cover tightly with aluminum foil and store in refrigerator overnight. Take roast out of refrigerator and allow to sit at room temperature one hour.

Preheat oven to 475 degrees. Uncover ham and place in oven for 30 minutes. Flip ham and reduce temperature to 350 degrees: cook an additional 1 ½ hours. Check internal temperature for 160-170 degrees. Flip ham again (scored/fat side up). Glaze with favorite preserves and drizzle maple syrup. Turn off oven and place roast back into oven for 5 minutes. Remove from oven, allow to rest 20 minutes before serving.

NOODLE KUGEL 1 bag wide egg noodles 1 stick butter, room temperature 1-8oz cream cheese ½ c white sugar 4 eggs

¼ c heavy cream ½ c golden raisins (optional) 1 t. cinnamon 1-12oz jar apricot preserves ½ c brown sugar

Cook noodles just until tender, in salted water. Drain. Place in bowl with softened butter, cream cheese and sugar. Stir until butter and cream cheese have melted; coating noodles. Add beaten eggs, heavy cream, cinnamon and raisins. Toss until mixed well. Place ½ noodles in buttered 9 X 13 baking dish. Spoon ½ apricot preserves over layer and sprinkle handful of brown sugar. Add remaining noodles and repeat preserves and brown sugar. At 350 degrees, bake uncovered for 35-40 minutes.

COCONUT CREAM PIE

One 9” piecrust, baked and cooled 1 c sweetened flaked coconut 1 c sugar 1/3 c cornstarch Pinch salt 3 egg yolks, beaten 2 ¼ c whole milk 1 t. vanilla MERINGUE 5-6 egg whites ¼ t. cream of tartar 6 T. sugar ½ t. vanilla Sprinkle coconut in crust. Stir together sugar and cornstarch and pinch salt in measuring cup. Place egg yolks in saucepan; whisk in sugar/cornstarch mixture and milk alternately until smooth. Cook and stir over medium heat until boiling and thickened, 10 to 15 minutes. Remove from heat, stir in vanilla; pour over coconut in crust. MERINGUE: In deep bowl, beat egg whites until soft peaks form. Reduce speed, add cream of tartar. Gradually add sugar, one tablespoon at a time. Beat until stiff peaks form. Add vanilla and beat until evenly distributed. Spoon meringue over hot filling; sealing to edge of crust. Bake at 325 degrees until meringue is lightly golden-10 minutes.

For the second year in a row, Knotty Girl Loves, Inc., hosted a Clay Shoot at Quail Creek Plantation in Okeechobee. With her rope and knot body, Knotty Girl is a visual representation of what breast cancer can feel like…round and hard like a KNOT! Following the Clay Shoot, attendees were invited to enjoy lunch, an awards presentation ceremony and a keynote speaker (sponsored by the Florida Breast Cancer Foundation) presented by Amanda Lucero, APRN. Lucero’s presentation focused on, “Do you WEAR pink or are you DOING pink?” and emphasized the importance of monthly breast self-checks, annual mammograms, and clinical breast exams in a doctor’s office. Funds from the Clay Shoot will be used to continue the improvement and expansion of Knotty Girl’s already successful programs.
