letter fromTHE EDITOR It’s summertime! The Florida sun is brighter and the Heartland is already in the 90’s, the days are longer, the kids are out of school and ready for some summertime fun. It can be time for growth, recharging and just plain enjoying life. Maybe time to try something new this summer? We had a great idea to get some families and kids together for a fun photo shoot in the Heartland at Highlands Hammock State Park. Even though it was a photo shoot for the magazine, I don’t think the kids realized that. They had an amazing time running around playing red light, green light with Dad Calvin, riding bikes, nature trails learning from Ranger Laura McMullen and ice cream at the Hammock Inn Concession, served by Russ Sharp. Then, back to our campground to build a fire, cook hot dogs, corn on the cob and roast marshmallows over the fire, making S’mores. Thank you Carla Sherman, Park Services Specialist for hosting us and writing the story. A huge thank you to Charissa Greubel for the amazing photos and the cutest cover of kids having fun. Perfect for our Summer Issue! Editor of Heartland LIVING Jessica Pleger interviewed Dr. Bob Hartman, owner of Classic Caladiums from Avon Park. She captured so much knowledge from Bob in the interview about the plants and how he has cloned different species of plants to get the “restored classic”. Very interesting story for Central Florida’s Caladiums. A must read! Hometown Okeechobee student John Immerfall and his Mom Steffanie were so gracious to share his life challenges with his disease Alopecia. You will read in John’s story the initial struggle Steffanie had with this disease but she was not giving up on John having a normal life like he should. With the help of the Okeechobee Community, John has set out to bring awareness of exactly what Alopecia is, with one lemonade stand at a time. What does adventure mean? I turned to my trusty friend "Google" and it gave me this definition. “Engaging in an unusual and exciting, typically hazardous, experience or activity.” I have to say this is exactly the definition of where my adventure took me and so much more. I have learned, with my trip you will read about in this issue, to experience adventure you have to go out of your comfort zone and open yourself up to the experiences and beauty that life gives you, no matter what path you choose to go on. Whether your adventure is in your own backyard, a day trip to the beach, a long weekend with family and friends or traveling the world to experience a different culture, make the time! I hope you enjoy reading my “Trip of a Lifetime” that I took with my beautiful friends which let me step out of my comfort zone. “To my mind, the greatest reward and luxury of travel is to be able to experience everyday things as if for the first time, to be in a position in which almost nothing is so familiar it is taken for granted.” -Bill Bryson Heartland LIVING June July 2019

BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah. RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.
LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.
KATY FASSLER has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.
CARLA SHERWIN is the Park Services Specialist at Highlands Hammock State Park. She grew up along the bluffs of the Mississippi River in Hamilton, Illinois. She graduated from the University of Iowa with a B.A. in Art, and later taught English as a Second Language in Mexico City. She received a B.S. in Botany from the University of South Florida after moving to Florida. Carla has been with the Florida Department of Environmental Protection since 1989, originally working at Charlotte Harbor and Rookery Bay. Her greatest reward has been connecting residents and visitors to the Florida environment.

HANNAH TUCKER is currently a senior at Florida Southern College in Lakeland, FL. She is working towards a Bachelors in Advertising and Public Relations, as well as a minor in Integrated Marketing Communications. Hannah was born and raised in Sebring and enjoys attending college so close to home. Her biggest passion is to spread her faith through the creativity of the work she designs and writes.
SHARON CANNON Sharon's passion has always been photography. She is an award winning photographer having transitioned from amateur to professional in 2010. She is a member of Okeechobee Main Street, on the arts and cultural committee. Sharon has lived in Okeechobee for many years, and has one son, Karl. “I love the history of our little town. I want to preserve all of our ‘todays’ through the lens of my camera, for our future ‘tomorrows’.”

CYNTHIA PAXTON is a stay at home mom to two boys. She have spent the last 10 years capturing the precious moments of childhood for families across central Florida. A newborn and child photographer, Paxton loves being able to capture that small moment of time. She has also been a nurse for 15 years and love caring for others. amping can strengthen family ties, provide connections to nature and create some of our most lasting and meaningful memories. Children who help put up the tent, arrange the gear or stack the firewood will feel a sense of accomplishment, pride and well-being within the family. Once the campsite is set up, youngsters are eager to explore the park. What better way than hopping on the bikes for a ride through the campground? They learn the layout of the campground in relation to their sites, the playgrounds, the Ranger Station and the areas where families of deer gather to browse. Very young children can learn to ride a bike and develop self-confidence when bicycling with their parents. The grassy, open “Overflow Fields” at the campground entrance are an irresistible invitation to play--- everything from running unrestrained for pure joy to playing catch to group games such as Red Light, Green Light and volley ball. Kids naturally gravitate to the playgrounds where they can interact with children from other like-minded camping families, and strong bonds are often formed within a few days.

ighlands Hammock is known for its fabulous hiking trails. Families may explore the trails, observe birds, spot reptiles, discover what’s blooming and learn about hammocks, swamps, pinelands and scrub. Children can discover adventure in nature and hone skills to explore nature in the park as well as their own backyards. Birdwatching can be a rewarding experience for both novice and advanced birders. Kids will quickly get to know the birds through observation and calls. Swallow-tailed kites, red-shouldered hawks, Eastern bluebirds, woodpeckers, cardinals, and water birds such as herons and egrets are commonly sighted in the summer. As the park with more rare and endemic species than any other Florida State Park, Highlands Hammock is a place where a sense of wilderness is preserved---where visitors may walk the trails, where the Florida panther quietly passes beneath the ancient, towering oaks of the magnificent hydric hammock. „

hildren who become fully immersed in the park are assured of developing a lifelong love for the outdoors and will eagerly share their excitement when they observe a yellow rat snake quietly slipping off the boardwalk at Richard Lieber or a family of otters at Cypress Swamp. Although they may not always see wildlife, they learn to watch and listen for the signs and can become quite adept at identifying plants, recognizing tracks and distinguishing woodpeckers by their drumming. Children may have some fascinating encounters, too, such as catching sight of a golden-silk spider in an enormous orb web shimmering in the afternoon sun. Swallow-tail butterflies “puddling” together in wet sand can be mesmerizing. Young children who enjoy fairy tales and make-believe will be enchanted when they spy a fairy ring of colorful mushrooms at the side of a trail. Avid bicyclists who explore the off-road bike trail may experience the thrill of seeing a bobcat or a black bear run across the path.

ther activities that families may enjoy together include fishing, geocaching, and the Junior Ranger Program. Young people who have the fishing bug can do catch-andrelease fishing at the Seven Lakes Management Unit, located approximately three miles south of the park entrance on County Road 635. This facility is equipped with a restroom and two picnic pavilions. For those who love treasure hunts, geocaching uses orientation skills and involves hiking and seeking “caches” hidden throughout the park through navigating specific coordinates with GPS-enabled devices. Highlands Hammock maintains around 70 caches and children may trade out “swag.” Parents and children may learn about recreation, natural and cultural resources, service, outdoor safety and the duties of a Park Ranger through the Junior Ranger Program. Children who complete the program will receive the booklet, a certificate, membership card and a passport, which may then be used to work on additional Junior Ranger activities within Florida State Parks. The program is recommended for youngsters between the ages of seven to twelve years old.

s evening falls, campfires flame and the smell of wood smoke drifts through the campground as families roast wieners, toast marshmallows and make s’mores. Parents who take children on a dusk walk can acquaint them with the nocturnal realm and the mysteries of nature at night. Allowing our eyes to adjust to the darkness and using a flashlight with a red light ensure good night vision. Barred owls pierce the night with their unmistakable call “Who cooks for you? Who cooks for you all?” Night hawks and bats are on the wing and may be glimpsed diving for insects while frogs and crickets sing a full chorus. Parents may end the walk with star-gazing in open areas of the park, barring heavy cloud cover. Firelight stories about ghosts, bears and bobcats told in whispers around the campfire’s glowing embers bring the evening to an intriguing close.

Camp Food with a Twist Part of the fun of camping has to be the cooking and eating! Camp food basics consists of not much more than hot dogs, corn on the cob and S’mores but the truth is all sorts of delicious meals can be roasted over an open fire. There are many great recipes and ideas that can be found in books and on the internet. But, if you like to stay with popular camp foods, check out these three popular camping favorites with a twist in preparation that can be fun for the whole family.
On A Stick Kids love cooking over a fire. Whether they are out camping or just enjoying a fire in the backyard fire pit, they are always wanting to cook something on a stick. They love to roast marshmallows and hot dogs, but you can mix things up a bit and instead of roasting hot dogs the traditional way, use crescent rolls to make a hot dog on a stick. Ingredients & Supplies Hot Dogs Crescent Rolls Extra Long Skewer Sticks Instructions • Begin by putting your hot dog on a skewer stick the long ways. • Next, take two crescents (uncooked) and mold them into a ball of dough. • Flatten with your hands until the dough makes a square. • Place hot dog on the edge of the square and roll it up until you reach the end of the dough. • Another way you can do this is take one crescent and roll it out into a long string and then wind it around the hot dog. • You can either wrap in tin foil and place in the fire for 3-5 minutes, hold it over the fire in a traditional manner or use a grilling surface over the fire. Your kids will love making these hot dogs on a stick at your next camp-out!

over a Campfire Use this easy technique to prep-ahead corn on the cob at home, so you'll be able to grill the most amazing corn cooked over a campfire. The great part of prepping at home is making it convenient for your camping trip, 4th of July BBQs or any summer cookouts! At home, remove the husks and silk from fresh corn on the cob. You do not have to bother with taking butter to the camp, as you can do that part at home, too. Rub cold butter uncooked corn on the cob and wrap up in foil. (Other seasoning such as garlic, chives, salt and pepper may also be added for extra flavor). At the camp, cook over the campfire or an open flame grille for about five minutes, turning the corn periodically so it gets evenly cooked. (The fire can hot and powerful, with the flames whipping up over the foil-wrapped corn). Roasting the corn over flame gives a subtle smoky dimension to the flavor and an extra layer of taste.
CAMPFIRE A different twist on S’mores, Campfire Cones are a yummy dessert where you can add just about any chocolate or candy into a sugar ice cream cone and melt it in the fire pit. Campfire Cones are easy & so yummy and kids can make their very own. These campfire cones make such a fun treat! Step 1: Gather all the yummy goodies you want to stuff inside your sugar cones. Examples: • mini marshmallows • caramel filled chocolate chips • mini chocolate chips • butterscotch chips • Hershey bar pieces • Reese’s Peanut Butter Cups • Rice Krispie Treats Step 2: Carefully stuff your sugar cones with your treats. This is where kids and guests can customize there dessert. For example, you can use Rice Krispie squares mixed with the peanut butter cup. Step 3: Wrap the cone in tin foil. Place it in the camp fire or use a grilling surface over the fire for 5 minutes to melt the chocolate and marshmallows. You can also bake in the oven at 400 degrees for 5 minutes or until the insides are melted. Step 4: Unwrap and enjoy! Everything is melted and gooey & yummy!

During July in Central Florida there are many local festivals celebrating the Caladium plant. These beautiful plants are known for their large, heart or arrowhead shaped leaves and adorned with colors such as pink, red and white in various patterns and designs. When I think caladium farms, I think of acres of beautiful fields with a flowing array of colored caladium leaves but in reality, most of the business is wholesale bulb sales to pot plant producers for big box stores and attractions.

Dr. Bob Hartman of Classic Caladiums in Avon Park has been working with caladiums since his time in graduate school at the University of Florida. During his work with the University, it was discovered that a particular virus was hanging around in most of the species in the plant family Araceae, the family that includes Caladiums. He was able to take plant varieties such as the Candidum Caladium that was developed back in the 1850s which had accumulated disease over the years and clone the tissue and cells of the plant to restore that same ‘classic’ strain but rejuvenated and free of disease. A “restored classic”. In 1977, Hartman built a laboratory in Palmdale, Florida to clone different species of plants. This laboratory cloning led Hartman to an international business opportunity traveling worldwide for many years. When he ultimately decided focus closer to home, he returned to his roots so to speak when he decided to resurrect his caladium breeding program as well as establish a caladium production company.

In 2000 alongside his son Rob, with the support of Harry Hollander and his company Abbot-Ipco as well as other local individuals along the way he began a caladium production company, Classic Caladiums. Caladiums are plants that can be propagated by dividing their tubers similar to potato production. Once they received the clean lab plants, they needed somewhere to plant them. The opportunity came for them to lease land off Hwy 64 in Hardee County. It was there where Hartman came in contact with watermelon farmer, Gary Henderson and asked for his production knowledge on raised sand beds. Shortly after, Henderson became the full time Farm Manager for Classic Caladiums and has been with them ever since with 250 acres currently under production in Hardee County and another 100 acres under contract production in Lake Placid. Also, in 2000 he again began a caladium breeding business in order to make different varieties. It takes about 7 years from making a cross to production during which new varieties are vetted for their commercial usefulness. „

Each year over 30,000 varieties of new caladiums are developed through the breeding program. From Hartman’s perspective, “God has given us the earth to make discoveries, we’re not creating anything new we’re just rearranging the parts. It’s like a treasure chest that you can’t see in to but you can reach in and sometimes you get coal and sometimes you get diamonds, so with the 30,000 we’re looking for the diamonds.” Through field trials and testing, out of 30,000 only about 3-5 new varieties are introduced to the consumer each year. The breeding program has two objectives; 1) varieties with classic looks with hidden beauty’ meaning the plants have been modernized to be vibrant, disease resistant, and contain other characteristics not observable by looking at the plant and 2) varieties with brand new looks such as the new colors and complex patterns. In September, they have an open house with a garden and field tour where national buyers from all over the country fly in for a preview and select up and coming varieties for future introduction. This provides excellent feedback for what consumers are looking for from a visual standpoint. The September open house is also an opportunity for individuals and garden clubs to visit and learn about the species.

Once the bulbs are harvested from the fields, they are washed and unloaded off the semis into their unique warehouse that was once a WW II airplane hangar. The bulbs are brought directly into a temperature-controlled area where they are stacked in trays and put into parallel rows which are tented with a tarp. Once the isle is full, each station is equipped with a fan that creates even air flow through the bulb crates for approximately 14 days before they are ready to grade, count and ship. „

Although as with all companies, there is transition over the years but Hartman has a family of individuals that fuel the engine of this well-oiled machine. n March, Cindy Sebring Adams and Diana Albritton from Sebring embarked on an adventure of a lifetime. Upon meeting in 2012, there was an immediate connection of empowerment, support and adventure. Through Diana’s group Lunch Club Wednesday, a group of ladies traveled together to her home in North Carolina for a weekend retreat where they became known as the Mountain Mommas. They share trials and tribulations, travel and celebrate life together. During a 2018 Christmas gathering of the Mountain Mommas, avid traveler Kathy Day mentioned she was going on vacation again to Morocco and encouraged the ladies to join. It didn’t take much convincing for Cindy and Diana so the planning began for a whirlwind vacation. This was the first time Cindy would be traveling out of the country or for an extended period of time. Diana had studied in Spain in 1980 and visited Italy in 2018. This trip was way out of their comfort zone, for many reasons. With both women owning their own businesses and having family responsibilities, it’s not an easy task to pick up and leave your responsibilities behind. Whether you own a business, have a spouse and kids, are single or have limited financial resources for travel, it’s important to make time and discover new adventures. You don’t have to have a lot of money or friendships or travel experience, all you need is to make time to enjoy life. Yes, I said make time, because if you don’t make time, you will never find the time.

I think it was important they decided to embark on this journey together because planning a trip of this magnitude isn’t easy. There are no direct flights from the States to Marrakech, Morocco so they had a few options where they could fly into for a short visit. Each destination having its advantages and disadvantages, it was decided that they would fly into Paris, France. It was the perfect choice in my opinion. As some of you know, Cindy is my mom and although I was very excited for their trip, I was a bit apprehensive. She does travel from time to time but has never left the country, much less gone half way around the world for 10 days. She was fearless. Cindy and Diana knew they were the perfect duo with like-minded hearts focused on life’s rewards, wanting to choose more and having no regrets! Seeing them take on this new adventure with such fortitude and fearlessness was empowering.

was told this was the “perfectly imperfect trip” and I think that sums it up quite well. With a packed itinerary, overloaded suitcases and minds full of imagination, off they went, out of their comfort zones. Cindy and Diana were jet setting to Paris. I’m not sure they knew what they were getting themselves into but adventure they were about to find! Upon landing in ‘The City of Lights’ their driver greeted them and promptly asked if they were familiar with the ‘yellow vests’. They were not. You can pack and prepare for a trip but the unexpected experiences along the way are the adventure. Apparently, the yellow vest represented individual rioting in the streets for governmental tax legislation. Which in laymen’s term meant, stay away. Although the situation was uneasy at first and created a minor detour for the ladies, they encountered amazing locals and guides who safely directed them to their destinations. Just a minor distraction but these gals weren’t about to let it spoil their time. A few highlights of Paris were the Hop On Hop Off Bus Tour around the city, the Opera, the divine cuisine and of course the sparkling Eiffel Tower. It was a short stay, only 3 days, but enough to relish in the beautiful city and culture.

he flight from Paris to Marrakech was only a few hours but the experience was light years apart in an amazingly humbling way, like experiencing the best of both worlds as they say. “Adventure isn’t a place, it’s a state of mind, and it’s about wanting to go into the world and meet new people and learn new things. Especially about yourself” says Diana. Arriving in Marrakech is a little different than arriving in ‘The City of Lights’. Through a maze of lanes and detailing the path with landmarks, they found themselves at the heart of Marrakech, Jemma el-Fna Square n the Medina. By night, the city transforms into a county fair meets Key West with restaurants popping everywhere, juice stands, snake charmers, fortune tellers and entertainment. The narrow streets leading off in every direction from the square are filled with an array of bazaars each selling their own goods including clothing, carpets, lanterns and herbal remedies. When my mom called the morning after they arrived, to say she was in ‘culture shock’ might be a bit of an understatement. You see, she didn’t do much research into where she was going but I did and I was ready for the call. I knew she was ready for whatever this amazing opportunity presented and to experience life outside her comfort zone. I assure you she had plenty of outfits for whatever life was about to throw at them.

pon arriving in Marrakech, they met up with Kathy Day and Merri Mann with whom they would tour the cities to take in all the sights. The next six-days were filled with lots of first for both ladies as they encountered and adapted to different language, culture, cuisine and lifestyle. They toured Bahia Palace, which is a beautiful example of lavish decorations dating back to the 1890’s, as well as Saadian Tombs housing 66 royal tombs from the late 16th and early 17th centuries. They enjoyed lunch in a beautiful garden restaurant, Le Jardin which served delicacies such as tajine, slow-cooked stews braised at low temperatures, resulting in tender meat with aromatic vegetables and sauce using a traditional pot as well as tangia, a hearty meat stew cooked in a large urn shaped terra cotta pot; Stopped in to meet Mohammed, who has worked for 34 years as a Farnatchi who feeds the underground ovens that heat the pots used to make tangia in addition to preforming calls to prayer five times a day from a local mosque; and visited beautiful gardens, journeyed off the beaten path aboard motorcycles and sidecars and enjoyed some of the finest local customs. „

major highlight for the ladies was the day of camel riding, commonly referred to as riding a ‘ship of the desert’ in the Oasis Palmeraie. They enjoyed a taste of the village life while stopping for mint tea in the nomadic desert. After checking off this bucket list item, they went on to The Henna Art Café where they enjoyed a local art gallery, gift shop, henna studio and delicious café, all in one. Both of them picked a beautifully artistic pattern of Henna, a temporary lacy tattoo made from plants.

hen they voyaged on the Medina Food Tour Walk for a fabulous night of walking around tasting traditional Moroccan street foods. Specialties included lamb cooked in a tangia, beef and sheepshead cooking in a pit in the ground, every kind of olive available, and donuts drizzled with honey that are popular with the school children. They made a final stop at ‘The Souk Mama’ for some vegetarian couscous served with traditional sliced oranges dusted with cinnamon before hopping on the Tok Tok to take them home.

is your typical, going into 5th grade, sports loving, boy. He runs, plays with friends, and drives his older sisters crazy. Like over 650,000 other Americans, John also has alopecia. „

Alopecia is an autoimmune disease, meaning the body’s immune system mistakenly attacks some part of your own body. Alopecia areata results in partial or complete loss of hair on the scalp and body.
john’s
journey with alopecia started when he was very young. “When John was 2, he had this beautiful, long flowing blonde hair,” says Steffanie Immerfall, John’s mother. “When he was 2 it started to fall out. I took him to the pediatrician. My pediatrician actually laughed at me because, you know kids with blonde hair don’t have that much. She said to not worry about it. As time went on, I began seeing a pattern with his hair falling out.” After much testing, John was diagnosed with alopecia. “ They sent us to the University of Chicago Pediatric Dermatology Clinic. They came back and told me ‘John has alopecia’. I was scared,” adds Steffanie. “The doctor came back and told me ‘This is not a medical issue; this is a social issue. This is a problem about people that have problem with people without hair. There is nothing medically wrong with John’.” The doctor added further that John was going to be a happy and healthy child. “It was a scary experience, but at the same time I knew I was blessed to have a healthy kid.”

the years, John’s hair has come, gone, and come back again. In kindergarten, John was able to wear a hat to school. Steffanie wrote a small book to help others understand. “I asked John’s teacher if I could read it to the class to help answer questions and she said ‘sure!’ The book was about how some people are allergic to dogs, some people are allergic to cats, some people are allergic to flowers, John just happens to be allergic to his own hair.” Three years ago, Steffanie and her children moved to Okeechobee. During that time, John’s hair fell out completely. “As John got older,” says Steffanie, “kids got meaner. We were dealing with a lot of teasing. In 3rd grade, last school year, he was completely bald. People were making fun of him and I said we had to do something.” While John has equipped himself with witty comebacks, it does not take the sting away from kids being mean. Seeking out for help and answers, Steffanie found a woman on Facebook that had alopecia and spoke out about it. Steffanie was encouraged to get out into the community and educate others about alopecia. Educating others would empower John to be brave and help others understand what John was experiencing.

was planted. An idea began to form. Steffanie approached John and asked, “Hey, do you want to do something? I don’t know how we came up with ‘No Hair? Don’t Care’ but that has always been his attitude.”
“We weren’t out to make money,” says Steffanie, “We wanted to bring awareness and talk to people about alopecia. We had cards made up about how Alopecia affects kids. We invited people to donate whatever they wanted.”
“September is National Alopecia Awareness month. We decided to do a little lemonade stand. A friend of mine, Angie Griffin, owns Staffords Salon and she offered to help us. We made some really good lemonade!”
Someone gave John a $2 bill. He kept it and calls it his lucky $2 bill.
“We squeezed over 200 lemons. We had a strawberry lemonade with actual strawberries. We did a basil lemonade too,” says John. “We even had lemonade fudge and lemonade cookies.”

In their first year, No Hair? Don’t Care raised over $300 in just one Saturday. They were then asked to come to Touch-a-Truck. All money raised was used to purchase books on alopecia to support the writers and to give to local elementary schools and library.
Steffanie and John, with their family and friends, have continued to participate in their annual lemonade stand and Touch-a-Truck events to bring awareness and support for alopecia. “I set up a Go Fund Me account for my family and friends that are not here to support our lemonade stand. I had so many people that wanted to donate. We did a ‘virtual lemonade stand mostly for my parents, my sister, and others that wanted to support us. What happened was John was selected by Go Fund Me as a Kids Hero. It was Giving Tuesday and they sent John $1,000. I took John outside and unwrapped this giant check. John just started crying.”

Elementary schools across the US are trying to combat loneliness and kids being left out by installing buddy benches on playgrounds. Whether you’re picking out bridal or groom attire, planning the party, or making floral decisions, the journey should be exciting, fun, and memorable in good ways. Try to remember this in the midst of the chaos.
Your fiancé is now your forever partner, so ask him for ideas and input. The more decisions you make together, the closer you will become—and the more personal your wedding will be to the both of you. It’s a great experience to learn how to compromise and choose your battles. Remember who you are marrying. It takes two to get married, so there are two who have to be considered in the planning stages. The convocation began with a reception Friday evening in the Historic Okeechobee County Courthouse. In conjunction with the reception Okeechobee Main Street hosted an artist reception featuring local artist Brad Phares’ artwork. As an 8th generation cattleman living in Okeechobee Brad is a storyteller at heart and channels his multi-faceted background into his oil paintings to provide a perspective on ranch life unlike any other. His featured art celebrated the Seminole lifestyle.

Saturday events included time spent at the Veterans Building at the Brighton Seminole Reservation. There were presentations by Willie Johns, chief justice of the Seminole Tribal Court; Dr. Paul Backhouse of the Ah-Tah-Thi-Ki Museum; Dr. Andrew Frank of FSU; Pedro Zepeda, Seminole historian & artist and authors John & Mary Lou Missall and Joe Knetsch. The 2019 Frank Laumer Legacy Award was presented to Billy Cypress (posthumously) by The Seminole Wars Foundation. Cypress widow, Carol Cypress, along with his daughter Carla, accepted the award. Lewis Gopher led a tour of the Seminole Tribe Administrative Building and the Red Barn. Closing the evening was a performance by Seminole music artist Rita Youngman. Sunday’s closing events were held at the Okeechobee Battlefield Historic State Park with presentations by Archie Marshall, Seminole War historian, and Steve Carr, amateur archaeologist. The Okeechobee County Tourism Development Council provided a grant to help fund the event. CHICKEN TACO MEATLOAF 1 pound ground chicken ½ pound ground pork 1 cup diced raw bacon (divided) 1 ½ cup Herb flavor croutons ½ cup milk 1-15-ounce jar Salsa (divided) ½ packet Taco Seasoning (or Cumin) 1 cup diced onion 1 jalapeno (seeded) diced 3 cloves garlic 1 t. butter 2 eggs 1 cup Pepper jack cheese S&P 1 T. brown Sugar Preheat oven 350 degrees. In large mixing bowl, place croutons; pour milk and ½ jar salsa over to soften. Set aside 15 minutes stirring occasionally. Place onion, garlic and jalapeno in pan or microwave with 1 pat butter. Cook until softened and translucent. With softened croutons, place meats, ½ cup bacon, onion mixture, salsa (reserve 2 T.), eggs, seasonings, and cheese.

Stir until just combined, place in loaf pan. Spread 2 T. salsa and brown sugar on top. Spread over mixture. Sprinkle remaining bacon over top. Bake 1 hour. Rest for 10 minutes.

LEMON BLUEBERRY ALMOND CRISP
1 can Blueberry Pie filling 1 cup fresh or frozen blueberries Pinch salt 1 box Lemon Cake Mix 1 stick butter melted 1 cup sliced almonds Note: Double ingredients to make larger dish. Also, can use different flavor of cake mix. Preheat oven 350 degrees. Spray 9 x 9 baking dish with Butter Spray. Spread pie filling in dish. Sprinkle fresh/frozen blueberries. Sprinkle salt over blueberries. Sprinkle dry cake mix over filling. Pour melted butter over dry cake mix to cover well. Bake 30 minutes. Remove from oven, spread almonds over top and press down to make sure all cake mix is moist (with butter). Bake additional 30 minutes. Great with ice cream. Enjoy!
PI-STA-L (PICKLE PASTA) SALAD ½ pound shell macaroni (3 cups) 1 cup sliced dill pickles 2/3 cup diced cheddar cheese 3 T. finely diced onion 2 T. fresh dill ½ cup plus 2 T. pickle juice DRESSING: 2/3 cup mayonnaise 1/3 cup sour cream ¼ t. Cayenne Pepper S&P
Cook pasta shells al dente. Drain-while still hot, pour ½ cup pickle juice onto shells and pasta to soak up juice as it cools. While pasta is cooking/cooling, prepare remaining salad ingredients. Toss with pasta. Add dressing ingredients. Season to taste and if necessary add 2 T. pickle juice. Place in lidded plastic ware in refrigerator. The longer it sits, the better. If pasta shells were warm, chances are that much of the dressing has been absorbed. To serve toss with spoonful of mayo and/or spoonful of pickle juice.

Sebring Fire Department 3rd Annual Bicycle Rodeo By Hannah Tucker
The Sebring Fire Department hosted the 3rd Annual Bicycle Rodeo on May 4th, which is an event to help teach kids the importance of bicycle safety, but in a fun way. Along with the help of the Sebring firemen and the Sebring Police Department, the local first responders were able to set up a bike course for each of the kids to take turns riding through, in a way to test their safety skills. The event also had local DJ Ian Belanger to play music, inflatable games and the firemen took kids on firehouse tours. The kids upon arrival were given a free helmet that was customized to fit them perfectly, which they were also able to take home with them. Josiah Berry, who is a local fireman at the Sebring Fire Department said, “This is our 3rd year putting on the Bike rodeo and by far the best. We had a wonderful turnout and the kids had a blast. That’s what it’s all about giving our community a fun event for the kids and teaching them all about bike safety. Next year is going to be even bigger and we can’t wait to see everyone come out again.” The kids also got free hotdogs and snow cones, as well as a bike inspection from Legacy Bicycles. The best aspect of the event is that it gives our kids a chance to not only meet our incredible first responders, but to also create a bond with them!

Avon Park Rotary Bluegrass and Blueberry Festival
The Avon Park Rotary Club hosted their 9th Annual Bluegrass & Blueberry Festival at Donaldson Park on Saturday the 27 of April, on the shores of Lake Verona. It was a beautiful Saturday for family-friendly outdoor event. There were numerous vendors to shop from along with plenty of food and traditional BBQ dinners prepared by the Avon Park Champions Club. Everyone enjoyed the signature blueberry lemonade as well as blueberry pies, baked goods, blueberry pie and ice cream from one of the food trucks. You even could take home some fresh picked blueberries from Frostproof sold by Hinton Farms.

By popular demand the bluegrass band, Hwy 41 South returned to the stage adding a fifth member, Tammy White. The grass lawn was packed with chairs for the awesome entertainment.
