Ice Skating When the temperatures dip, the Dutch start dreaming of another frozen winter and the prospect of ice skating outdoors. Weather forecasts are watched eagerly and skates sharpened just in case! But even if the canals don’t freeze this year, there are plenty of spots in Amsterdam to practice your jumps and twirls. Ice skating locations in Amsterdam Skating over Amsterdam’s frozen canals is a magical winter experience – made even more special by the fact that it’s not possible every year. The temperature generally needs to drop to -4°C or below for 4 consecutive nights to produce ice thick enough to skate on. If the conditions look right, boat traffic is blocked from certain canals to allow the water to freeze. Fingers crossed that the same happens this year! Fortunately, there are numerous spots in Amsterdam where taking to the ice isn’t dependent on an extended cold spell.

Frans Post. Animals in Brazil RIJKSMUSEUM | MUSEUMSTRAAT 1

In collaboration with Naturalis Biodiversity Center in Leiden, the Rijksmuseum presents from 7 October the exhibition 'Frans Post. Animals in Brazil'. In 1636 the artist Frans Post travelled to the Dutch colony of Brazil. For seven years the Brazilian flora and fauna inspired many of his works of art. The Rijksmuseum is showing his Brazilian landscapes and preliminary sketches, along with dozens of stuffed animals. Thirty-four animal drawings by Post make their first public appearance. The Rijksmuseum will show how Frans Post encountered and immortalized this fascinating new world. © JOHN LEWIS MARSHALL

MACHINE SPECTACLE Jean Tinguely is famous for his playful, boldly kinetic machines and explosive performances. Everything had to be different, everything had to move. Precisely twentyfive years after his death, the Stedelijk opens a Tinguely retrospective. The Swiss artist Jean Tinguely (1925–1991) played a key role in the rise of kinetic art in the fifties. With over a hundred machine sculptures, most of which are in working order, paired with films, photos, drawings, and archive materials. The presentation takes the public on a chronological and thematic journey of Tinguely’s artistic development and ideas, from his love of absurd play to his fascination for destruction and ephemerality.

This winter Stedelijk Museum presents Jordan Wolfson (New York, 1980), one of the most outspoken representatives of a new generation of artists who explore the increasing digitalization of society and other technological developments. Dutch National Ballet

In Amsterdam you'll find that there is a great tradition of ballet, led by the Dutch National Ballet. This world renowned troupe can be seen performing grand ballet spectacles each month. In 2013, The New York Times wrote that Dutch National Ballet was one of the top five ballet companies in the world that ‘makes an important contribution to the future of ballet’ through frequently presenting new work. In February 2017, Dutch National Ballet is presenting a programme of three world premieres and five highlights that have been created for the company recently. It is a programme that is completely ‘Made in Amsterdam’.

In Made in Amsterdam, the company will be dancing new ballets by David Dawson, Ernst Meisner and Juanjo Arqués. The programme also includes five existing ballets created recently for Dutch National Ballet by the leading choreographers Hans van Manen, Christopher Wheeldon, Alexei Ratmansky, Ton Simons and Krzysztof Pastor. These five ballets are now counted among the highlights of the company’s repertoire.

Forget Paris. Forget Rome and forget Venice. In Europe, there is only one city that rightfully can call itself the city of love and that is Amsterdam. With its many cozy streets and canals, fairytale views and classy restaurants and bars, a visit to Holland’s capital is guaranteed to be romantic. Haven’t found the man or woman of your dreams yet? Two young Italians squeeze themselves between the many bikes on the side of the bridge over the Keizersgracht to take a picture. In front of the eye of the camera, the two cuddle close together to share an intimate kiss. The picturesque seventeenth-century canal with its charming waterfront homes is the ideal setting for a romantic moment. “He just proposed!” the woman exclaims. “Where else but here in Amsterdam?” her soon-to-be husband adds. Amsterdam these days is more romantic than ever. Not only the historic canal ring, but just about every street and monument in the old town oozes a warm atmosphere: from Schreierstoren at the beginning of Geldersekade to the narrow alleys around 't Spui and the quays behind the Central Station with its endless views across the water of 't IJ. When it gets dark, the many waterways treat you to a grand spectacle of reflecting lights and shadows; Amsterdam surely is a place to fall in love with/in. Love is a battlefield With regard to romance, Amsterdam has much more to offer, however, than just a view. The history of the city is infused with love, though it certainly didn’t seem that way four hundred years ago when Amsterdam played a key role in the Eighty Years' War (a bitter religious battle in the fifteenth and sixteenth centuries in Europe). In 1578 the city took sides with the Protestant rebels and promptly developed into the center of the free world. After renouncing the Catholic Spanish king, city officials decided that all faiths were welcome in town (Catholics, however, were bound to celebrate mass in clandestine churches like the beautifully preserved Our Lord in the Attic). The city became a haven for all kinds of European refugees, including Spanish and Portuguese Jews, French Huguenots and German and Belgian Lutherans and Calvinists. Love thy neighbor Amsterdam’s open attitude towards strangers would turn out to be quite profitable; most seventeenth-century refugees brought not only many modern ideas but also a great amount of capital with them as well as an international business network. Through its newcomers, Amsterdam experienced a golden

century of trade. Most wealthy merchants in the city didn’t forget to what they owned their good fortune. In the seventeenth century – at the height of the city’s prosperity – groups of millionaires erected city hospitals, homes for the elderly (such as Begijnhof near 't Spui and Amstelhof, which is currently the museum Hermitage on the Amstel), shelters for poor and homeless people as well as orphanages (such as Het Burgerweeshuis, which is now in use as the Amserdam Museum). Love for hire The maritime city understandably received many thousands of seamen from across the globe. Many bars, restaurants and makeshift hotels were created to host these temporary guests. In 1700 the first brothels appeared in Amsterdam to accommodate the lonely men’s desire for affection. Due to the liberal ideology, prostitution was not illegal (and still isn’t) unlike in many other countries. The Red Light District quickly grew into one of the most famous districts in the world where love for hire" could be enjoyed. She said yes! With the growth of the Jewish community in Amsterdam in the seventeenth, eighteenth and nineteenth centuries, the diamond industry in the city also grew. Waterloo Square and Weesperstraat (where once the largest Jewish neighborhood was situated) garnered international recognition for its many thousands of diamond cutters, goldsmiths and jewelers. Amsterdam was called Diamond City, especially among wealthy young lords and nobles who wished to purchase a ring for their wives-to-be. Most of the small diamond factories have gone defunct (especially since the disappearance of the old Jewish quarter). Nowadays, however, some large diamond companies are striving to maintain the city’s position and its rich history in the field of diamond cutting. Love, peace and happiness Even in the modern era, Amsterdam has done all it can to maintain its reputation as the city of love. In the sixties and seventies, for example, the city became the

home of the hippie and “flower-power” movement. With the message of love, peace and happiness on the streets, the gay pride movement had a chance to develop. This resulted in the relatively early protection of gay rights in the city. In 2001 Amsterdam became the first city to legalize same-sex marriage, setting an example for the rest of the world.

1. Invitation Amsterdammers are down-to-earth people and they tend to say what they think and want without much fuss. If you want to ask a nice Dutch man or woman out, then just walk up to them and plan an appointment. Keep in mind, being direct, Amsterdammers can also easily turn down your nice invitation.

All the single ladies! Even if you are not yet married, engaged or in love, Amsterdam has all you need to fall in love. As in other major cities, Amsterdam’s single population is large. According to The Central Bureau for Statistics (CBS), nearly a third of the over 900,000 residents of Amsterdam are not in a relationship. If you are looking for a single woman, then your chances might even be a little better. Amsterdam is home to far more women than men, and thus more single women than single men. One reason for this is that young women in Amsterdam, especially compared to a few years back, are investing more time in their studies and their careers and settling down relatively late.

2. The date Amsterdammers prefer to meet up in bars. So hold off on booking the finest restaurant in town – at least until date number two. Amsterdam has plenty in store for you, from pubs to trendy cocktail bars (see box XX). Be sure to come on time, the Dutch are very punctual. A delay can really start your date off badly. A tip for the ladies: don’t overdo your outfit. Trendy jeans and a nice shirt are a perfect way to show up. In turn, do not expect your partner to be clothed in haute couture on your date.

How to find your Amsterdammer? The question remains: how do you bump into that cute, sweet, and fun woman or man of your dreams in Amsterdam? According to researchers, your chances are the best in a pub or nightclub (32% of all serious relationships supposedly start on the dance floor), at work or leisure (25%) or in university (22%). You’ll also have a fair chance of meeting Mr. or Mrs. Right using apps such as Tinder, Grinder, Happn or Inner Circle (the Amsterdam-designed dating tool for which one is invited to join); the Dutch are among the most intensive users of modern dating tools. Dutch dating 101 Dutch people have their typical habits, which are apparent not only in their daily lives but also on their dating scene. The following tips and explanations should help make your date with the Dutch a success.

3. The conversation More than other people, Amsterdammers are fond of small talk. Save your thoughts on international politics, social issues or work for date number two (or even later). Family is always a favorite subject; though, be careful not to compare your opinions in that field right away. 4. The final settlement After a nice evening, the moment comes in which one of you will have to pick up the bill. Don’t be shocked if your partner proposes to split the costs for the evening (apparently ‘Going Dutch’ is a completely normal thing to do in Dutch dating). After leaving the bar or nightclub, you can always invite your date for a drink at your hotel or preferably elsewhere in the city, if you have enough confidence in a positive outcome. If not, keep in touch via WhatsApp. As previously mentioned, Amsterdammers like to keep things clear. If they feel like meeting again, you will hear about it very soon. If your first date was also the very last with your Dutchie, he/she will not hesitate to tell you in a perfectly composed (or blunt) text message.

6. Blue Teahouse – Vondelpark 5 Centrally located in Vondelpark, this beautiful building from the 1930s is one of the best places to meet up with your loved one or blind date. 2. Venus & Adonis – Prinsengracht 274 According to an old Dutch saying, “liefde gaat door de maag” (love travels through the stomach). Door 74 is a secret, luxurious cocktail bar on Reguliersdwarsstraat. The establishment offers an attractive and relaxing atmosphere as well as the best prepared drinks.

3. The Tailor – Dam 9 Last year Grand Hotel Krasnapolsky, one of Amsterdam's most famous hotels on Dam Square, underwent a complete facelift. The most interesting new feature of the establishment is its bespoke bar: The Tailor. Enjoy a glass of wine, beer or whiskey or impress your date with one of the excellent cocktails. Our favorite is Smoking Cuban Mist.

8. The Scandinavian Embassy – Sarphatipark 34 After a romantic night, a hearty breakfast might just be the most important thing. The Scandinavian Embassy is internationally renowned for its slow drip coffee and very tasty dishes (for example, the restaurant’s signature dish: lox with poached eggs and goat yogurt). Get there on time to find a place for you and your lover; this establishment run by Norwegian immigrants is one of the most popular spots in De Pijp.

4. Al Ponte – Pontplein 1 No need to wait until it’s dark to have your date. At Al Ponte you can enjoy a delicious cup of coffee (and the Italian pastries) as well as the breathtaking view of the vast IJ and Amsterdam. Take the ferry from Central Station towards IJplein with your loved one. If you are lucky, the establishment’s cozy little bench will be available for settling yourself in the sun.

9. Schreierstoren – Prins Hendrikkade 94-95 Love hurts. Find comfort in one of the most remarkable monuments in Amsterdam, Schreierstoren. This tower – the oldest of the city – was the point where seamen would say their last goodbyes in times gone by. Schreierstoren can be hired (as a wedding location) but you can also just enjoy a strong cup of coffee at the historic place.

With nearly 20,000 Internet companies in its city limits, Amsterdam has grown into one of the major IT centers in Europe. By focusing on attractive location conditions for larger tech companies and startups, city officials now hope to strengthen its position in the near future. Editor FLORIS MÜLLER

“Hey, where are you from?” People immediately start talking to me as I take a place at the bar in a trendy coffee shop in Palo Alto. I’m passing through Silicon Valley in California, the center of the tech industry in the US. Over the last few decades the area has been the breeding ground for the most innovative tech companies in the world, including Apple, Adobe, Amazon and Facebook. These multi-billion dollar companies have turned the world economy upside down. “I’m from Amsterdam,” I reply. Most patrons at the bar turn out to be developers working for these tech giants, I learn from their security badges. “Interesting city, interesting market; you guys have some exciting business going on,” they respond. “Yes. We do.” The Netherlands, and especially its capital Amsterdam, has grown into a sort of European tech hub, I learn, attracting global players and exciting young startups and laying the foundations for many Dutch ICT companies as well. Airline tickets, payments and upload services In 2016, Amsterdam has some 19,400 ICT companies, which account for 12 percent of total employment and a turnover of €18 billion. One of the pioneers in ICT in Amsterdam is Booking.com. Founded twenty years ago by then-student Geert-Jan Bruinsma, the hotel booking site has become one of the largest of its kind in the world. The company, headquartered on Rembrandt Square, has partnerships with more than a million hotels all over the globe. On a daily basis, the Amsterdam tech enterprise processes 900,000 bookings. While Booking.com still operates under the Dutch flag, the company has been part of US rival Priceline Group since 2005. Founder Bruinsma and others received over €150 million for their shares. Despite turmoil in the travel market, the company’s revenue peaked in 2015 at well over €2.2 billion. Another success story is that of the Amsterdam-founded online payment

provider Adyen. Destined to break the banks’ monopoly in the payment market, the tech giant currently has a turnover of 130 million dollars. Adyen serves mid-sized companies and corporations such as Facebook, Uber, Spotify, Groupon, Mango, Vodafone and KLM. In 2015 the company processed more than 250 billion in online payments through its own software and in collaboration with 400 other Internet services. Adyen is valued at approximately €2 billion. The company is one of the six largest European unicorns (tech startups that are in the books for more than €1 billion). The American business magazine Forbes positions Adyen at number ten in its annual ranking of fastest-growing Internet companies, the Cloud-100. Adyen still has its headquarters in Amsterdam, and it employs more around 450 employees in ten countries. WeTransfer, founded by Ronald Hans, Rinske Visser and Bas Beerens, is one of the fastestgrowing online service providers in the world. The company specializes in online transfers of larger documents, photos, videos, music files and presentations. Since its foundation seven years ago, WeTransfer has sent out nearly 100 million documents worldwide. In its unique positioning, the company is enjoying the growing interest of (foreign) investors and tech giants. Early adopters The success of Amsterdam’s tech companies is derived, according to my new friends in Silicon Valley, mostly from the unique development of the Dutch ICT market. “People in Amsterdam are early adopters of new technology. They are always looking for new ways to make their work and their lives easier, more efficient and less expensive.” With a few quick finger movements, the developers pull up some figures on their smartphones. Nine out of ten residents of the Netherlands use social media on a daily basis (more than anywhere else in the world). WhatsApp has about eleven million users, followed by Facebook with almost 10 million Dutch profiles – a record per capita (Holland has just

under 17 million inhabitants). Furthermore, the country tops the list of most intensive Twitter use, the developers explain. Apart from that, online sales are developing here like nowhere else. Last year alone, €142 million worth of online transactions were made in the Netherlands, accounting for a turnover of some €16 billion; an increase of sixteen percent compared with a year earlier. “Any country would be jealous of such growth rates,” the developers tell me. Dutch community More than other companies, Dutch ICT entrepreneurs rely on international markets for their growth. The unique Dutch positioning of the companies, however, appears not always to be successful abroad. Take the example of Hyves, Holland’s own social network which was launched in the Netherlands in 2004 – well over a year before Mark Zuckerberg developed the code for Facebook in his student dorm. Despite explosive growth within the country – Hyves welcomed its 10 millionth user in 2010 – the concept failed to catch on internationally. Founders Raymond Spanjar, Koen Kam and Floris Rost van Tonningen sold their business in 2012. New owner, newspaper company Telegraaf Media Groep, transformed the platform into a gaming site a few years ago and was forced to write off 90 percent of its investment. Marktplaats, the Dutch variant of online sales site eBay, is still alive in its original form. The company, founded by charity shop employee Rene van Mullem from Emmeloord (a town in the countryside 40 kilometers from Amsterdam), initially refused to ask money from consumers benefiting from the platform (declaring war on eBay, which was by then quickly growing throughout the world and actually charging certain users of the platform). To be able to afford the costs of continuous development, Van Mullem sold the majority of the shares of his company in 1999 for reportedly €12 million. After substantial modifications, the new owners of the company finally gave in to rival eBay. The internet auction application paid over €225

million for the Dutch business. That said, Marktplaats is still the most widely used sales site in the Netherlands. With hundreds of millions of transactions per year, the company is among the top ICT businesses in the country. Alexander Klöpping seems to have learned from the history of Hyves and Marktplaats. In 2014, the tech whiz, television commentator and entrepreneur launched his online newspaper kiosk Blendle where newspaper and magazine articles can be read. Although the company did not succeed in making any profit in it’ first operational years, Klöpping has already attracted international interest. His goal is cooperation toward further international growth. Two years ago, Blendle sold 23 percent of its shares in exchange for $3 million and collaboration with the New York Times and the German publishing giant Axel Springer. In 2015 the company launched a version of the platform in Germany, and this year the American newspaper and magazine readers are welcome to visit the Dutch online shop that is about to open. You’re welcome Amsterdam doesn’t depend on its own ingenuity and entrepreneurship alone. More and more foreign ICT companies are discovering the city as a business location and base for further expansion in the region. Of the 2,000 largest tech companies in the US, nearly sixty percent now have an office in Amsterdam, according to business magazine Forbes. Search giant Google, for example, opened its ultramodern European headquarters on the edge of the Zuidas business district three years ago. Microsoft too has a major office in the region (at Schiphol airport). IBM, which found its way to the capital in the eighties, has opened one of its major development centers in its colossal cube office in West Amsterdam. Among other ICT

projects, the company maintains one of the major development plants of self-thinking super-robot Watson here. When asked why Amsterdam is such an attractive location for ICT companies, Economic Councilor of the city of Amsterdam Kajsa Ollongren is clear: “International talent feels at home here.” Her colleague in The Hague, Minister of Economic Affairs Henk Kamp also points to “the central location of the Netherlands and its extraordinary investment in digital infrastructure.” Start-up hub Government officials are not only trying to get more the biggest ICT companies to open up in town. Foreign startups are also particularly interesting for politicians and administrators. “Young companies grow faster than bigger ones. Startups improve the quality of business as a whole and create a lot of new jobs,” Kamp explains. The Minister of Economic Affairs has great ambitions: “I would like to make the country – and Amsterdam as a centre therein – the hub for startups in Europe”. In 2014 the official sent out former European Commissioner Neelie Kroes to the US and Asia to promote the country’s unique position in ICT business in. Her introduction tour resulted in the creation of the so-called StartupDelta, a campus for fast-growing ICT companies located on former navy site Kattenburg in the city centre. The StartupDelta not only provides young entrepreneurs with accommodation, it also supports them with financing, facilitation of economic rules and prerequisites for newcomers. In May another big project opened at the Flower Market, Amsterdam X, or simply ‘X’. This project is a collaboration between the government of Amsterdam, The Next Web – the innovative technology platform of

entrepreneurs Boris Veldhuijzen van Zanten and Patrick Lavaie – and Internet giant Google. X provides office space to start-ups in the ICT sector as well as “an environment that encourages and supports entrepreneurship,” according to Veldhuijzen van Zanten. The office offers an international network and possibilities for funding and international expansion. A little further on, at the Beurs van Berlage, a major conference was organized this spring to show the world that the country and the city were serious about their plans. At the so-called Startup Fest, not only did Prime Minister Mark Rutte speak, but Eric Schmidt (CEO Alphabet/Google), Tim Cook (Apple CEO) and Travis Kalanick (Uber CEO) were also present. Help wanted The success of the Dutch ICT sector also brings considerable challenges. Technology companies in Amsterdam are already experiencing a shortage of qualified personnel. And with continuing growth that might well turn out to be one of the major problems for the sector. As a solution, Amsterdam has since 2000 been focusing on establishing itself as an international city. Thus far it has been quite successful. A survey of the Expat Centre in business district Zuidas shows that several hundreds of highly skilled workers from India, China and Japan but also many Mexicans, Brazilians and Southern Europeans are making their way into town. “We hope the city becomes even more popular. We need internationals to grow,” an employee of the newcomers’ service explains. Back in Silicon Valley, I ask whether the developers would consider moving to Amsterdam. “People from your city are interesting…” the techies answer, “interesting and quite persuasive.”

From December 1st, 2016 until January 22nd, 2017, the fifth edition of the Amsterdam Light Festival will delight visitors to the city. The winter spectacle brings together a selection of the world’s top artists, designers and architects in a remarkable visual display of 35 magnificent light sculptures made of thousands of twinkling lights scattered in and around the monumental canal belt. For this year’s theme, A View on Amsterdam, artists from every corner of the globe were invited to send in unique ideas representing their own innovative view of Amsterdam, its architecture, future and international allure. In total, 500 artists from more than 45 countries entered the “Call for Concepts” held for the event. After being selected by a jury, the chosen participants spent months putting together their light artworks and installations which can now be admired both on and off the water and even from an amazing bird’s eye view. Be prepared to experience the city from a fresh, new perspective through light masterpieces that are sometimes historical, futuristic or even seasoned with a bold dash of humour and irony. Follow Two Routes Visitors can revel in the magical festival along two routes: the “Water Colors” route takes you on an animated boat trip through the city’s charming 17th-century canals, from the Herengracht and Oosterdok to the Amstel River; the “Illuminade”, a 2.3 kilometre-long walking route, features more than 20 interactive and cutting-edge installations throughout the Plantage neighbourhood. This area, located on the eastern outskirts of the canal belt, is known as the ‘cultural garden’ of Amsterdam and is home

Consisting of an abstract composition of thoughts and moments, the work is meant to serve as a collage of scenes of joy, love and daily life in Amsterdam. Blueprint: With the aim of connecting the city’s past to its present and future, Dutch artist Reier Pos’ metaphoric artwork uses new techniques to draw attention to the architecture of the historic 17th-century building of the National Maritime Museum. Green lasers trace the building’s original blueprint and serve as a reminder of how it was once designed. Michiel van der Eerde (1973) has worked in renowned and award-winning establishments such as De Hoefslag in Bosch en Duin**, De Bokkedoorns* in Overveen and restaurant La Rive** at the Amstel Hotel (at the time, recipient of two Michelin stars). He apprenticed at three-starred restaurant Oud Sluis*** owned by chef Sergio Herman and at the worldâ&#x20AC;&#x2122;s most famous restaurant, Noma** in Copenhagen.His career continued as executive chef at IQ Creative (including Supperclub, Nomads, Nevy, Envy and Mazzo). At BAUT, Michiel was in full command of the kitchen. Amsterdam’s most feared culinary journalist stopped by and awarded BAUT an impressive score of 10-. His talent and knowledge did not go unnoticed. Michiel was asked to present and be a judge for the popular TV show MasterChef. Recently, Michiel was named the most outstanding hospitality entrepreneur in Amsterdam. Four editions of BAUT and a beautiful, permanent restaurant named ‘C’ later, we thought it was time to ask Michiel a few questions. You have worked in many renowned establishments, but certainly the most noteworthy are your apprenticeships at Sergio Herman’s ** Oud Sluis and René Redzepi’s Noma. What do you remember most from this time? While working with Sergio Herman and Nick Bril, it was the team’s energy and stamina; it was giving it your all 18 hours a day. I highly respect Sergio and Nick. They’ve got it all together and there is total synergy. Noma, on the other hand, was horrendous. I was only allowed to pluck sprigs and clean celeriac with a toothbrush. Of course, I also learned something during my time there, but not like I did with Sergio and Nick; there, I was more part of the brigade. When you started at IQ Creative, you first worked at the Supperclub. Was that a huge change, going from Michelin-starred cooking to raw and funky? Yes, absolutely, but I was also pretty much done with Michelin-starred cooking, having to fuss over a dish for 14 hours and the hierarchy in the kitchen. At the Supperclub, we already cooked at a high level. Creating an exciting menu every week was a welcome challenge. There, I was able to apply what I had learned in all those years. After that, IQ Creative opened one catering concept after another. Which restaurant was closest to your cooking style? Restaurant Envy! This was a breeding ground for top chefs. There, Sergio Herman allowed me to temporarily place Nick Bril (The Jane in Antwerp**). After that I worked there with Richard van Oostenbrugge, who is now chef of the renowned

two-Michelin-starred restaurant Bord’Eau** at Hotel de L’Europe in Amsterdam and with Austrian chef Michael Wolf, who has now opened his own exquisite restaurant, ‘Wolf Atelier’. Envy was actually the first restaurant in Amsterdam that served small dishes at a high level, sort of like Atelier Joel Robuchon. When did you make the decision to start for yourself? Actually, it was because of my brother Lucas. During a vacation at our family home on Ibiza, he said: “You work so hard for a boss. Why don’t you start for yourself? You have nothing to lose, because if it doesn’t work out, you can still work anywhere.” I then started my first temporary BAUT on Wibautstraat with my partner at the time, who worked in the dance scene. In 2012, your first edition of BAUT received a 10- from Amsterdam’s most feared culinary journalist. What did this bring about? That ushered in a huge increase in our numbers. Before we were about 80% booked, but afterwards it immediately increased to 120%. You had to reserve two months in advance. At that point, we knew that we were on the right track with the concept of dishes from international cuisines. You were asked to be part of the popular show MasterChef. Did you immediately agree? I actually did. Then I realised that I had major stage fright, so after I committed I became quite anxious. But they helped me really well through that. They wanted me to be as authentic as possible. In retrospect, that was easier than I had expected and it resulted in plenty of exposure, of course. Everyone thought you were crazy when you opened another major high-end restaurant, ‘C’, next to BAUT. I was asked to return to our first BAUT location after it was developed. If you can permanently rent that spot, you’d be crazy to pass up the opportunity. With ‘C’, we have a restaurant with a large, beautiful terrace and a separate room with a terrace. The total interior is 680 square metres, and on top of that, there are parking spots behind the restaurant. We can really do anything there.

Your restaurant is called ‘C’, which stands for Celsius. Can you expand on that? The right temperature is essential for a good product. Not only does temperature influence the taste of food, but also its structure. For example, you can prepare an oyster at different temperatures; you can eat it raw or poached, but also fried. Our menu is therefore arranged according to degrees Celsius. In that order, you can eat a 4, 5 or 6-course menu with us, but you can also dine à la carte, of course. Restaurant ‘C’ has currently been opened for 14 months. How does it feel to not be behind the stove yourself? I really miss that! Of course, I am there on a daily basis, I taste everything and every once in a while I guide dishes in the right direction. Luckily, I have a fantastic team and an excellent chef, Arnout van der Kolk. Arnout was sous-chef at Ciel Bleu, the twoMichelin-starred restaurant at Hotel Okura, and also worked at restaurants Aan de Poel** and Oud Sluis***. With him, I never have to enter into a discussion. We are very much on the same level, and that’s great because it allows me to do what I do. BAUT is temporary, so on top of your demanding activities as chef/ entrepreneur and MasterChef judge, you also have to constantly search for a new location. How tiring is that? It’s very tiring. Because of the busy schedule, you always start looking for a new location too late. Sometimes you get lucky. In the case of BAUT & Dreesmann (previously warehouse Vroom & Dreesmann, ed.) they offered the location for six months. But then there’s the licensing process, and especially for this location in the centre a lot of time was required. And then of course, the actual moving, changing the interior, etc. It’s opening a new restaurant each time all over again. Fortunately, the personnel come along with it. We always hope for an extension so that we can derive the maximum profit. Unfortunately, this time that just wasn’t possible. Every move can easily cost up to 150,000 euros. BAUT & Dreesmann, with its wonderful view over the city, is, I believe, the most beautiful BAUT location thus far. What will the next location be? We always try to keep that to ourselves until the last minute, but I’ll give you a hint. BAUT 5.0 will be located close to Linnaeusstraat in Amsterdam East, the part of the city where BAUT was born. It’s going to be a bit smaller, but the location that we were able to get there is fantastic! I would have never dreamt that it would transcend BAUT & Dreesmann. We are already building. We will have this location for a year and a half and it will be spectacular. We will be working with different levels there, so that we can run all operations simultaneously – in other words bar

and restaurant – without interfering with each other. The interior was inspired by The Jane in Antwerp, which has been hailed as the most beautiful restaurant in the world. We will open on Friday, the 13th of January, 2017, and then we will have exactly 11 days to move everything from BAUT & Dreesmann. You have been named the most outstanding hospitality entrepreneur in Amsterdam. How does that feel? At first, I felt it was too much of an honour. But then I heard that I had been chosen by colleagues and it was explained to me that it was a huge achievement to have opened six restaurants within four years, with, up until that point, a personnel of 135. I then realised that it was indeed a major accomplishment, without tooting my own horn too much. When you go out to eat in Amsterdam, where do you prefer to go? I’ve had little time to do so recently, but my regular addresses are the previously named Wolf Atelier and Izakaya, the Japanese fusion restaurant owned by Yossi Eliyahoo on Albert Cuypstraat. I also like to go to the Roast Room (Michiel Deenik’s meat restaurant) and Ron Gastrobar* on Sophialaan. And of course I enjoy Richard van Oostenbrugge’s Bord’Eau**. It’s incredible how he can cook! The three preparations of oysters and the perfectly prepared mullet are still on my flavour palate. What else can we expect from you in 2017? Well, there is actually a dream that will come true. I have been able to secure what I think is the most stunning location in Amsterdam South, on Stadionweg, where the city’s first night shop was located. That will be transformed into a neighbourhood restaurant named ‘ZUID’, with a terrace of 300 square metres. We will open for breakfast and then lunch, offering everything from simple sandwiches to three-course meals. Then there will be a cocktail hour with a nice charcuterie board, and for dinner we’ll have options from steak to the small dishes that people know from BAUT and C. And, of course, the location will also function as a bar. Enjoy a real Dutch meal while visiting the Netherlands. In recent years a growing number of chefs around the country have developed an interest in the country’s culinary traditions. Visit one of the many restaurants serving Hollandse pot, enjoy a typical Indonesian rice table (which, contrary to its name, originated in the Netherlands) or have a quick snack like a croquette, a stroopwafel or a raw herring. Smakelijk eten! Ask any Dutchman about his national dish and he’ll tell you there’s no such thing. Though French, German, Italian and Asian cuisines dominate the restaurant scene in the capital, as well as the rest of the country, the Dutch do have a rich history when it comes to food. Socalled Hollandse pot, for example, has been enjoyed for over 400 years in the countryside and is thus easily taken for granted.

Locally grown produce and herbs

These days a growing number of chefs are discovering Dutch culinary traditions and improving upon historical dishes (see box XX). In this renovation of Dutch cuisine, they tend to focus mostly on forgotten ingredients, recipes and dishes. Dutch cuisine is traditionally dominated by local products, such as cheese, onion, potatoes, leeks, spinach, cauliflower and carrots, supplemented with pork, bacon, minced beef or sausage. The expansion of international trade relations in the seventeenth century led to an influx of all kinds of imported spices and herbs, which would spice up Dutch food significantly. Spices, including pepper (originally from Kerala, India), cinnamon (Sri Lanka), clove (Indonesian archipelago of Moluccas) and nutmeg (the Banda Islands of Indonesia), have become an essential part of what is now considered to be typical Dutch cuisine. Similarly, the Dutch are fond of chili peppers and other hot spices from Suriname and Brazil.

Zuurkool stamppot is stamppot made with sauerkraut and it is usually served with chopped bacon, smoked sausage or klapstuk (a thick piece of bacon). Another option, hachee (stewed meat, fish or poultry, served over potatoes) is quintessentially Dutch. The most important part of the dish is probably the thick gravy made with cloves and bay leaves. As side dishes, cabbage, apple sauce and rice are often served. In winter, erwtensoep (pea soup) is also very popular among the Dutch. It’s made with lots of peas, celeriac, leek and carrot, and usually topped with smoked sausage and served with rye bread.

Seafood

Amsterdam was founded as a fisherman’s village and grew along with the importance of international maritime trade; it’s thus no surprise that much of its traditional food comes from the sea. Mackerel, sturgeon, roach, sole, trout, snapper and tuna are traditionally baked in their skin and served without a lot of extra additives. Mussels (from the west of the Netherlands) and increasingly Oosterschelde lobster and oysters are also popular on Amsterdam’s menus. Most seafood dishes can also be enjoyed as a snack. Amsterdam’s streetfood culture has a history going back almost 400 years. Nowadays it’s still very easy to find a fish bar for a typical seafood snack, especially on

and around the city’s canal ring. Order deep-fried mackerel, shrimp or raw herring (eaten with your hands with raw onion and zuur (sour pickle and yellow Amsterdam onions) or on white bread. These can be enjoyed with a glass of jenever (Dutch gin) or korenwijn (an aged variety of Dutch gin) to wash away the taste. Herring, and in particular the special way the Dutch eat it, might seem quite extreme to most newcomers. To the Dutch, however, their beloved fish has an almost mythical status; herring supposedly contributes to a healthy lifestyle.

Indonesian rice table

Although the name suggests otherwise, Indische rijsttafel (Indonesian rice table) is very much part of Holland’s culinary tradition. Incorporating popular dishes from Indonesia during the colonial occupation (from the seventeenth century to the middle of the last century) and adapted to the tastes of Westerners, Indonesian cuisine still enjoys great popularity in the Netherlands. The rijsttafel offers small servings of dishes with wonderful names like Ketjap Babi, Babi Pangang and Sambal Goreng. The full range of the traditional dishes on the Dutch-Indonesian rijsttafel is distinguished by its contradictions; next to any sour dish, a sweet dish is placed, each rich dish is served with a dry dish, etc. Moreover, the use of hot peppers, which are milled and processed into sambal, is remarkable. Nowadays most Indonesian restaurants and nearly all supermarkets in the Netherlands offer up to 8 different varieties of sambal: badjak (fried), bandal (fried spicy), katjang (mild), oelek (salty and sweet), pedis (very spicy), ajam (served with chicken), setan (very spicy, setan literally means "devil") and tjampoer (with shrimp paste extract). Because of its specific and lengthy preparation processes (some dishes take up to 24 hours to create), Indonesian food is primarily purchased at traditional restaurants. Most of these eateries can be found in areas of major Dutch cities with many residents with colonial roots. In Amsterdam the very best establishments may be found on Utrechtsestraat. The Dutch have a real sweet tooth. Every year around Sinterklaas (the celebration of the birthday of Holland’s patron saint of children) people in the Netherlands enjoy traditional sweets like speculaas (crispy cookies made with spices and brown sugar), pepernoten (–small, chewy spiced cakes) and taai taai (crunchy spiced cookies) are very popular. Throughout the year the Dutch enjoy stroopwafels, which have become the country’s most successful sweet export product. Treat yourself to these round, caramel-filled wafers at any souvenir shop, supermarket or street market. They’re made fresh at the stroopwafel stalls at Albert Cuypmarkt – the city’s biggest day market in De Pijp quarter.

A croquette from the wall

Authentic Dutch food is not only to be enjoyed in restaurants; it’s available as street food as well. You can ‘pull’ your freshly fried croquette, cheese soufflé or meatball from out of the wall of a so-called ‘Automatiek’. Dutch fried snacks are best enjoyed on white bread with mustard and mayonnaise. FEBO is one of the most famous fast food vending establishments in the Netherlands; this year the company (founded in Amsterdam and named after FErdinand BOlstraat) celebrated its 50th anniversary. Highly regarded in the snack-food trade is producer Van Dobben, known for its veal croquettes. Visit the flagship bar of the brand on Korte Reguliersdwarsstraat, close to Rembrandt Square. Order one of the many different types of croquettes and a glass of milk – like most Dutch customers do.

Wilde Zwijnen

Though the place has only been open for a year, it has become our favorite pick among traditional Dutch restaurants in Amsterdam. Hidden in one of the narrow alleys near 't Spui, the establishment stands out with a nicely decorated interior. Lt. Cornelis has beautiful wooden floors, blue painted panel walls and impressive paintings (which seem to follow your every step). The menu is also full of surprises: carrots with Dutch East India Company herbs and Remeker cheese, venison steak with pear, mushroom and coffee. A rich experience.

Located near Mortelbaanstoren, this attractive Dutch restaurant in quiet Peperstraat is totally Dutch. Greetje uses only local ingredients for its traditional dishes. Hap-Hmm

Perhaps not one of the most fashionable restaurants in town, but without a doubt one of the most famous places to enjoy a Dutch dinner. The Dutch are huge fans of film, from popular American blockbusters from to underground art house productions and everything in between. It is therefore not surprising that for 70 years Amsterdam has maintained a museum dedicated to the art of film. ARCHITECTURAL MASTERPIECE

The white rectangular building, which sits like a swan on the banks of the river IJ, is a highlight of rapidly developing North Amsterdam.

Designed by the famous Austrian architect duo Roman Delugan and Elke Delugan-‐Meissl, the modern complex was completed in 2012 as one of the pioneers in the urban development in the area. EYE has four screening rooms and an exhibition area of up to 1,200 square meters. The building also has a spacious café-‐restaurant with a panoramic terrace on the water. The new building is a worthy successor to the building where the museum had its home until a few years ago, Renaissance Vondelpark paviljoen in the heart of the city’s biggest park. EYE is worth a visit for its architecture alone.

CINEMA

EYE’s movie theatres show a range of different genres; from art house to silent films and famous classics to avant-‐garde. The museum’s collection of over 40,000 films has been amassed over a period of 70 years. Each of the four cinema’s at EYE has its own unique character. Cinema 1, the largest theatre of the museum, has over 300 seats. The hall is often used for premieres of national and international film productions. In the venue you can admire its original historic organ, which was taken from Holland’s first cinema in The Hague. This instrument is still used to accompany silent movies. Cinema 2 has an electrically retractable stand with which a large floor can be created for live performances and lectures. Cinema 3 – also known as 'The Black Box' – is inspired by the "Invisible Cinema" of Austrian experimental filmmaker Peter Kubelka. The room is completely black to create an unforgettable movie-‐viewing experience. The fourth theatre of EYE is a

contemporary copy of Cinema Parisien, a historic movie theatre that once stood on Nieuwendijk in the city centre and was known as one of the first cinemas in Amsterdam to be built in Art Deco style.

MOVIE HISTORY

Apart from lots of movies, EYE also shows special collections and exhibitions. The permanent presentation in the Panorama on the complex’s ground floor offers a variety of interesting attractions related to the history of film and film production. See all kind of cameras, projectors and pre-‐cinema devices that were used by cinematographers from early last century. At 360°, you are surrounded by nearly one hundred film clips from the extensive oeuvre of EYE, with themes such as slapstick, exploration and movie stars. In ‘the Pods’, a series of cosy mini-‐theatres, you’re able to dream away with fragments of classics and so-‐called ‘pearls of movie history’, including productions of Jacques Tati, Martin Scorsese and

Stanley Kubrick. Finally, be sure to check out the Green Screen, which is just like those currently used in most major movie productions. You can play in a movie and after your performance recordings can be sent via social media or email.

CHILDREN’S MOVIES

A visit to EYE is a treat for the whole family. The museum has several attractions especially designed for your young ones to discover the history and production process of movies using writing, puzzles and tinkering. Throughout the museum is a series of optical illusions and devices that explain how movement is portrayed on screen. The EYE Walk – a thirty minute video tour for children between 7 and 12 years – tells a lively story about movies, taking your children through every part of the museum. Cinemini is a weekly film screening on Sunday mornings for the youngest moviegoers. Parents are, of course, also welcome to join in at the special screening. All children’s shows can be booked through the box office.

GETTING THERE

Visit EYE Film Museum by free ferry (boats from Central Station 24/7 leave several times per hour and take less than five minutes to arrive at Buikslotermeerplein, the stop near EYE; the trip is free of charge). You are, of course, also able to visit the complex by taxi. However, the journey takes approximately three times longer, depending on traffic. The film museum is open daily from 10 in the morning until 10 o'clock at night. Prices for movies vary; tickets for various exhibitions are sold for 10 euros for adults. Book your movie tickets at the counter or online at the museum’s fully English website. That platform also contains a listing of film screenings, lectures and exhibitions.

A DINNER FOR THE STARS

EYE has a great restaurant with a wonderful menu; it’s the perfect stop before a movie or after the museum’s exhibition. In fact, the restaurant is worth a visit on its own. Enjoy a variety of tasty dishes such as fried scallop with cauliflower cream, apple and capers, pumpkin carpaccio with goat cheese, rib-‐eye steak with mushrooms, roasted cod fillet with bread crust, mussels and Norwegian lobster-‐ saffron sauce, and (our personal favourite) cauliflower risotto with hazelnut, red beet foam and red beet chips. Of course, you are also welcome for a cup of coffee, a beer or a wine in the beautifully decorated arena and (weather permitting) on the spectacular terrace overlooking the river IJ.

Mikio Naruse 12 – 29 January Discover the very best of Japanese cinema in January with the epic works of Mikio Naruse (one of the biggest names in Japanese cinematographic history, but until now quite unknown in the West). EYE has scheduled fourteen movies that are centred around the lives of ordinary people in Japan in the 30s, 40s, 50s and 60s. Béla Tarr - The End of the World 21 January – 7 May Early next year EYE will show the work of the Hungarian filmmaker Béla Tarr, the so-‐called long-‐ take master. FOUR SENSES

A UNIQUE PRESENTATION OF THE MASTER’S EARLIEST WORKS IN HIS AMSTERDAM HOME It reads like a thrilling novel: the accidental discovery of a long-lost masterpiece. The incredible idea that a prized work of art could be found in someone's basement may seem like fiction, but sometimes it does happen in real life. Last year at an American auction house, a lost work of Rembrandt suddenly emerged. Editor JOLENE DEN BOER

New Jersey treasure

The story begins in July 2015, when adult children clean their family home after the death of their parents. They find a small piece of art in the basement of the house and get in touch with the small auction house Nye and Company Auctions in the American city of Bloomfield, New Jersey. John Nye, the owner of the company, described the wooden panel as “remarkably unremarkable”. The paint was flaking; the three figures on it were dark and discoloured.

The presentation of the Four Senses is the first project under the supervision of the new director Lidewij de Koekkoek. In an interview, she comments on this special occasion.

In September of that same year, the work goes up for auction, estimated to collect anything up to a mere $800. In the weeks before the sale, the work is displayed in the online catalogue of the house. The description reads “from the continental school, nineteenth century, seems to be undated”.

“This is indeed a great start. It has been thrilling to think of the best way to showcase these extraordinary treasures of the early Rembrandt in a small presentation. We have come up with a beautiful presentation, with the help of a great design team. We will present the works in a jewellery pouch, with the works as jewels in it. There is also a place reserved for the fifth sense, as to point out that a part of the jewellery set is missing. In the Ashmolean Museum in Oxford, where the works were presented before, there was an empty frame next to the four works. We wanted to do something slightly different. I am happy with the result and excited to share it with the audience”.

This is where it is spotted by art specialists, who recognize it as possibly being the very special work that it is. Soon after the actual bidding begins, the auctioneer realizes something extraordinary is happening. The bidding price starts at $250, but goes sky high in no time, ending in a winning bid of $870,000. If you include the sale premium, the total amount for the small, dark, flaky panel of 21.6 x 17.8 cm (8-½-by-7-inch) adds up to $1.1 million.

Allegory of the Five Senses

The panel is sold to an art dealer Talabardon et Gautier in Paris. They clean it and do some extensive research, bringing in experts specialized in seventeenthcentury painting. They ascribe the work to Rembrandt, naming it The Unconscious Patient (An Allegory of the Sense of Smell). The work depicts three figures; one of them appears to be unconscious. One of the other figures tries to wake him or her up by using a handkerchief with smelling salts. The third figure is watching the scene. The Unconscious Patient unmistakably belongs to a series of presumably five senses that Rembrandt painted around 1624. Rembrandt was only 18 or 19 years old and still lived in his hometown of Leiden. He had just finished his first learning period, and was beginning his career. In fact, this newly found art piece might even be the earliest work we have of the Dutch Golden Age master. In the background, the monogram ‘RHF’ can be seen. This stands for Rembrandt Harmenszoon Fecit or Made by Rembrandt Harmen’s son (in Latin). It is the earliest signature of Rembrandt that we know of. After experts confirm it is indeed a Rembrandt painting, Talabardon et Gautier contact the New York art collector Thomas Kaplan. He is the founder of the Leiden Collection, one of the largest private collections of Dutch Golden Age art. Kaplan buys the work, adding it to two of the other senses he already owns, The Operation (Touch) and Three Singers (Hearing). The fourth painting in the series, The Spectacles Seller (Sight) belongs to the Dutch Museum of De Lakenhal, which is in Leiden. The fifth sense, Taste, has never been discovered. Many still hope it will surface some day.

The Rembrandt House Museum

Now, for the first time ever, the Four Senses are being presented on Dutch soil, at The Rembrandt House Museum. This impressive building in the heart of Amsterdam was the house and workshop of Rembrandt for twenty years. It has been turned into a museum and offers a true Rembrandt experience. The museum has an almost complete collection of Rembrandt etchings, and it stages inspiring exhibitions about Rembrandt, his predecessors, contemporaries, and pupils.

Congratulations on acquiring this presentation. It must be a great way to start your work at the Rembrandt House Museum.

Why was the Rembrandt House Museum chosen as a venue for these early Rembrandt works? “The contracts for bringing the works to the Rembrandt House were already made by the last director, Michael Huijser. The Leiden Collection and this museum have had a warm relationship for years. We have worked together on numerous occasions. Of course, the works were made in the earliest years of Rembrandt as a painter, when he still lived in Leiden. However, the Lakenhal Museum, which owns the painting of Sight, is closed for renovation. Both the Lakenhal and the Kaplan family want to share their artworks with the people. Therefore it was not difficult to select the home of Rembrandt in Amsterdam to be the venue of this presentation. What could be a better place to present these Rembrandts than in his own home? After the presentation at the Rembrandt House Museum, the four works will travel to the Louvre in Paris, which also is a very special venue.”

What is so remarkable about these works?

All works of The Allegory of the Senses date to around 1624, which makes them the earliest works of Rembrandt we know of. The paintings show the young artist in the throes of development: with talent and bravura, assiduously seeking convincing ways to tell stories and convey human emotions.

It is assumed that the four senses are part of a series of five. Why do we make that assumption?

There are no documents whatsoever that tell us that there are indeed five works. Yet, it is very likely. A painter usually made all five of the senses, once starting on one of the series. We do not know how the works came about or if they were made on commission, for example. This gives us no clues as to where the fifth painting could be, unfortunately. Over the centuries, the works got separated and travelled the world. The last one only emerged last year, at the unlikely place of New Jersey. We don’t know if Taste still exists, but we hope that this fifth painting will one day also resurface. That would be spectacular.

And did you know that, due to its liberal principles, Amsterdam was the very first city in the world to acknowledge the right of same-sex couples to marry in 2001? From Amsterdam’s miracle to an early electric car The museum's collection includes about 80,000 valuable objects, paintings, sculptures, prints and drawings as well as ancient books, furniture and art objects made of textiles, glass and ceramics. In the Amsterdam Museum you’ll find one of the oldest maps of the city which was made by historic cartographer Cornelis Athonisz (dating 1538) – a brilliant object on which the first sketches of the famous canals are not even visible yet. You’ll also find the so-called Miracle Casket from the late Middle Ages; it’s been said that this wooden box preserves the only remaining evidence of the Miracle of Amsterdam (the Catholic miracle which would have taken place in the sixteenth century). The modern art treasures of the museum include the Witkar, one of the first prototypes of the electric car, which was designed and built in 1979 in Amsterdam. Apart from its many historical objects, the Amsterdam Museum has a grand collection of valuable paintings: from the Anatomy Lesson of Dr. Deijman (of master painter Rembrandt van Rijn) to a series of romantic paintings of the nineteenth century city painter George Hendrik Breitner. Burgerweeshuis

Since 1975, the Amsterdam Museum, formerly known as the Amsterdam Historical Museum, has been housed in one of the best-preserved seventeenth-century complexes in the city. The socalled Burgerweeshuis, built as an orphanage with donations from wealthy merchants, includes some ornate courtyards, a modern passage (which is also accessible for non-visitors and exhibits not only classic paintings but modern interpretations of the city’s art as well) and a large number of modernized spaces in which the original features are easily recognizable.

The exhibition shows how at the start of his career, Vincent van Gogh teaches himself to translate his view of the world into images. Unlike contemporaries such as Isaac Israels or George Breitner, he focuses not on the cosmopolitan city life, but instead on the fringes of society. On people who have to work hard for their living, in humble workshops and on farmlands in all weathers. Van Gogh tries to sincerely express his compassion for their way of life. Or, as he puts it himself in a letter to his brother Theo: ‘I say it again – work against indifference – perseverance isn’t easy – but things that are easy mean little.’

SWYCH - VEGGIES IN THE SPOTLIGHT Located in the inviting conservatory of the NH Collection Doelen hotel in the heart of the city, restaurant Swych offers you a charming contemporary setting with a beautiful view of the canal. This is the location where Rembrandt painted his ‘Night Watch’ in 1639 and where chef Rudolf Brand and his team now share a passion for preparing vegetables to the highest ‘main course worthy’ standards, without compromising on seafood and meat. The seating is very comfortable and there is a pleasant and vivid interaction between kitchen, servers and guests. With a glass of refined and elegant Coutier Champagne, we taste ‘amuses’ of homemade potato crisps and lovage mayonnaise, chicory with beetroot and mustard vinaigrette and a surprising sushi of parsnip.

The starter, pumpkin with orange, smoked cow’s yogurt and pumpkin seed oil, looks like autumn on our plate. The dish is matched with a Chenin blanc from Domaine Cady. Experienced and inspired Maître Roelof Ligthart guides us with his wonderful selection of organic wines and we love the Rheinhessen Riesling that further deepens the next dish, the brushed BBQ potato with salty sea vegetables such as rock samphire and a delicious sherry and burnt leek broth. Until now the protein has not been missed, but with the Jerusalem artichoke with red cabbage, tapioca and autumn truffle there is a perfect portion of halibut with Chinese artichoke and a sauce of ratatouille. This adds to the charm of flexitarian dining. The Macon Chardonnay brings a nice touch of depth to both dishes. We move on to Savoy cabbage

with miso oil, olives and a mix of mushrooms including the best of the season, chanterelles. The Bourgogne Hautes-Cotes de Beaune matches this warming vegetable dish just as well as it matches the beef flank steak with béarnaise on the side. The rice pudding with coconut, dried mango and lime sorbet combines summer and autumn, but the Grande Maison Monbazillac wine brings us right into wintery Dordogne. At Swych you see how vegetables can have a much more important place in fine dining and also how the variability of wine can be perfectly matched with the flexitarian concept.

AMSTEL BRASSERIE - 150 YEARS OF CHARM AND ELEGANCE Around the mid-1800s visionary and city benefactor Samuel Sarphati wanted to make Amsterdam a modern city by building a grand and luxurious hotel equipped with all sorts of facilities and its own restaurants. Since that time, guests of all sorts and conditions have visited this genuine temple of elegance and hospitality. It is not only a landmark for world travellers; many Amsterdam citizens also enjoy the beautiful location along the important Amstel River where boats and rowers keep passing by. The Amstel Brasserie is the little brother of famous restaurant La Rive and makes an excellent alternative for relaxed drinks, lunch or dinner. The duck confit starter with quince and chicory salad receives a soft touch with the addition of a slow-cooked egg yolk. The Escudo Rojo Chardonnay from Chile adds to the subtlety of the sweetness and bitterness of this dish. The starter of fish is perfectly smoked salmon in pleasant cubes with maple syrup and Jerusalem artichoke. The herring roe and fresh herbs follow the Staete Landt Sauvignon blanc from Marlborough quite nicely. For the main course the meat choice is a saddle of venison, red cabbage and potato puree. A classic on paper but chef Rassin definitely knows how to put taste sensations in his creations. The tender autumn game

meat is complemented by the velvety potato mousseline and deep flavour of red cabbage. The rich jus and parsley oil stay in harmony with the full-bodied Barossa Valley Shiraz. For fish there is the Victoria bass fillet, in varied preparations with turnip and a light but creamy shellfish foam, a beautiful, light dish topped off with a classic Joseph Drouhin Meursault. In the cosy atmosphere with a view of the lights of the Amstel River, we end this elegant evening with a frangipane gateau with poached pear, vanilla crème and star anise ice cream and a Guanaja chocolate tart with raspberry and almond, served with or followed by coffee or tea.

How do you make cooking great and still affordable? Slats: We’ve chosen to have a very small menu, with only one fish, one meat and one vegetarian dish. We change our menu every six weeks. Our famous entrecôte is the only thing we always serve. Plus, we cook with local and seasonal products throughout the year.

What is your specialty?

Slats: Our specialty is to make our guests happy, with great food and excellent service. Also, lobster season is now in full swing. Fresh lobsters taste so good, and to ensure we have the best, we have ours flown in daily – straight from the coast of Nova Scotia in Canada.

How’s the lobster prepared?

Arts: Our kitchen staff works very hard – it takes a lot of time to clean lobsters. We make sure the lobster is ready to eat when it arrives on your plate. The tastiest flesh is in the claws; they are the ultimate delicacy. Normally the price for lobster will vary from €35 to €55, but we already serve them for just €27.50 – a great deal.

What types of guests visit your restaurant?

Slats: We have different areas that serve different types of guests – from group reservations to romantic dinners, from business meetings to family meals. Everybody is welcome here. You find Looks in a 3 minute walking distance from Amsterdam Centraal Station.
