VEEL INSPIRATIE Het is zo inspirerend om iedere keer in contact te komen met mensen die wonen, werken en leven op de Zuidas echt een gezicht geven. Marijn Muller bijvoorbeeld. Hij vertelt in deze uitgave over hoe hij esthetiek en duurzaamheid in zijn meubelen combineert, maar vooral zijn passie voor circulair produceren blijft je bij. Je vindt hem niet voor niks in Circl.

Eenzelfde drive straalt Roberto Payer uit. De general manager van Hilton en Waldorf Astoria en geboren Italiaan is inmiddels 50 jaar in ons land en kan nog steeds niet van slapen van een ontevreden gast.

Recruiter Lisette Vriend is zo enthousiast over de Zuidas, dat ze er niet alleen werkt, maar ook woont.

Roberto Payer, general manager of the Amsterdam Hilton and Waldorf Astoria hotels, exhibits that same drive. He was born in Italy but has been living in the Netherlands for 50 years now; he admits he doesn’t sleep if one of his guests is unhappy. Recruiter Lisette Vriend likes Zuidas so much she not only works but also lives there.

M y morning routine

07.00 uur

Pedro Celli (30) hails from the Brazilian city of Campinas, close to Sao Paulo, but has been living in the Netherlands ever since he was 13. He studied International Business at Groningen University and works as an account executive for ZOOM, a company connecting communication and technology.

He starts every working day with a work-out at 7 am.

Pedro Celli (30) komt uit Brazilië, uit Campinas, dat vlak naast Sao Paulo ligt, maar woont al sinds zijn dertiende in Nederland. Hij studeerde International Business in Groningen en is account executive bij ZOOM, een bedrijf dat communicatie en technologie met elkaar verbindt. Iedere werkdag begint hij om 7 uur met een work-out.

“Sinds ik op de Zuidas werk, heb ik pas het gevoel echt aan het werk te zijn. Het is heel anders dan de grachtengordel, waar ik eerst werkte. Het is denk ik de omgeving van het financiële district dat de Zuidas is, waardoor je je veel meer realiseert dat hier business wordt gedaan. Hier gebeurt het.”

“Sinds ik op de Zuidas werk, sta ik vroeg op, om zes uur. Ik ga eigenlijk meteen naar de gym, naar Club Sportive. Om zeven uur doe ik een klasje. Yoga, boksen of HIIT, High Intensity Interval Training. Daarna douche ik en ga ik naar mijn werk.

Ik neem een kop koffie, ontbijt en bekijk mijn mails. Dan begint mijn dag.”

“En dat bevalt me veel beter dan in de avonduren te sporten. Ik deed dit een paar keer in de week. Het waren langere sessies en dat is veel zwaarder. Nu kom ik iedere dag met een energiek gevoel op mijn werk, ik ben juist helemaal niet kapot of uitgeput. Bovendien heeft ’s ochtends sporten het voordeel dat mijn vriendin dan ’s avonds naar haar gym kan gaan. En dan kan ik op onze baby katje passen.”

“It’s only since I’ve been working at Zuidas that I have the feeling I am actually working. It is a totally different atmosphere compared to inner city Amsterdam. Zuidas has become a major financial district so you realize that this is the place where business is done and where things happen.”

“Since I’ve been working at Zuidas I get up early, at 6 am. Then it’s straight to the gym at Club Sportive for a yoga, boxing or HIIT (High Intensity Interval Training) class. A quick shower and then I’m off to work. I get myself a cup of coffee and some breakfast and start reading my emails. That’s when my working day starts.”

“I like this routine a lot better than going to the gym in the evening, which I used to do a few times a week. Those sessions were much longer and a lot tougher. Now I enter the office full of energy instead of feeling knackered. Another advantage of doing my workout in the morning is that my girlfriend can go to her gym in the evening so I can look after our little kitten.”

Een rijdende winkel die op elk gewenst moment langskomt om klanten een pak, overhemd, jeans of schoenen op maat aan te meten. Thuis of op kantoor, soms zelfs met een geavanceerde fullbodyscanner. Klinkt futuristisch?

Reizende kleermaker Rutger Vlaming bewijst van niet: met Suittruck zet hij de traditionele maatkledingwereld op zijn kop.

Hij valt op in het straatbeeld: de Suittruck met zijn donkergrijze metallic lak. Achterin zijn vrachtwagen loopt Rutger Vlaming van de espressomachine naar de houten tafel, zet koffie klaar en neemt plaats op een bruinleren bankje. De breedgeschouderde modeondernemer is van oorsprong een sporter, hij heeft op hoog niveau gevoetbald.

Zeven jaar geleden richtte hij mannenmodemerk Frederik George op, dat ten grondslag ligt aan Suittruck. Zijn missie?

Het proces van kleding kopen makkelijker, sneller en efficiënter maken. Hij startte met overhemden en breidde het assortiment snel uit met pakken, jassen, spijkerbroeken en schoenen. Alles op maat. “Mannen houden niet van passen, ze willen iets kopen dat gelijk goed zit.”

Rijdend atelier Eerder had hij met Frederik George een pop-upstore in Amsterdam, samen met een aantal andere merken. Daar kwam Vlaming tot de conclusie dat het wachten op klanten niet aan hem was besteed. “Liever ga ik naar klanten toe. De moderne zakenman heeft steeds minder tijd om een goede kleermaker te bezoeken. Maar om nu alles in mijn Smart te gooien? Dat leek mij niet zo chique.”

Op een foodtruckfestival, waar hij langs een sushitruck liep, viel het kwartje. Alleen heeft zo’n ouderwetse foodtruck, hoe romantisch ook, een hoop nadelen. Zo mag je vanwege de uitstoot de stad niet in. Dus kwam hij uit bij een bestelwagenproducent. “Deze uitvoering is speciaal voor Suittruck ontworpen in Polen. Het woord ‘suit’ in de merknaam staat trouwens niet voor ‘pak’ maar voor ‘pas’, want de truck is ingericht als een luxe paskamer.”

Duizend stoffen Met zijn Suittruck rijdt hij voor bij bedrijven, om medewerkers tijdens kantooruren maatkleding aan te meten. Hij gaat ook bij mensen thuis langs. “Laatst kreeg ik een bijzondere aanvraag.

Een aanstaande bruidegom had voor al zijn best men thuis een etentje georganiseerd. Daarna kwam ik langs om iedereen een passend pak aan te meten.”

A mobile clothing store where customers can order a tailor-made suit, shirt, pair of jeans or shoes. A tailor coming to your home or office to take measures, using a state-of-the-art full-body scanner. Sounds futuristic? Travelling tailor Rutger Vlaming makes it happen with his Suit Truck, causing a bit of a stir in the traditional world of made-to-measure clothes.

His Suit Truck, painted in dark grey metallic, attracts attention wherever he goes. In the back of his truck, Rutger Vlaming uses the espresso machine to make a nice cup of coffee and sits down on a brown leather bench. The broad-shouldered fashion entrepreneur is a keen sportsman who used to play football at a high level.

Seven years ago, he set up fashion brand Frederik George, the predecessor of Suit Truck. His mission? Making the process of buying clothes easier, faster and more efficient. He started out selling shirts but extended his range to suits, jackets, jeans and shoes – all made to measure. “Men don’t like trying on lots of clothes; they want something that fits straightaway.”

Mobile tailor Vlaming used to sell Frederik George and a few other brands in his pop-up shop in Amsterdam, but he soon came to the conclusion that waiting for people to walk into his store was not for him. “The modern businessman has hardly any time to find a good tailor. I’d rather visit my customers, but driving to their doorstep in my Smart Car didn’t seem a good idea to me.”

When walking around at a food truck festival he saw a sushi truck and the penny dropped. However, an old-fashioned food truck, as romantic as it sounds, has a lot of disadvantages. For example, because of the emissions it is not allowed to enter most Dutch cities. So he approached a van and truck manufacturer. “This edition was especially designed for Suit Truck and made in Poland. By the way, the word ‘suit’ in the brand name doesn’t refer to a ‘man’s suit’ but rather to the ‘fit’, as the truck is in fact a luxurious fitting room.”

Op dit moment rijden er twee Suittrucks rond.

In de ene truck werkt hij met een maatserie.

“De klant trekt een overhemd of jasje aan en ik speld het handmatig af, zo ontstaat de perfecte pasvorm. Vervolgens heb je keuze uit meer dan duizend stoffen.” Hij slaat een stalenboek open: “Alles is mogelijk: effen, ruiten, strepen of een gewaagd dessin. Ook het type knopen en de voering bepaal je zelf. Aan mij de taak om klanten goed te begeleiden en sturen in dit proces. Meestal komen we binnen een uur tot een ontwerp.”

Revolutionair De andere truck, die hij de helft van de tijd gebruikt, is uitgerust met een full-bodyscan, vanuit de gedachte dat het opmeten nog makkelijker en secuurder kan. Vlaming legt uit hoe het werkt: “Je stapt in boxershort een soort paskamer binnen, trekt de deur dicht en drukt op een knop. Camera’s rondom maken foto’s en ondertussen projecten beamers een raster op je lichaam. Binnen twee seconden rollen er vervolgens alle maten uit die we nodig hebben. Online zie je jezelf terug als avatar en kun je direct zien hoe het kledingstuk staat. Ook kun je eenvoudig de kleur en stof van het pak veranderen.”

Deze geavanceerde technologie is nog in ontwikkeling. Vlaming is er volop mee aan het experimenteren. “Ik gebruik de truck met fullbodyscanner telkens twee weken. Daarna ga ik hem finetunen voor de markt. Ook ben ik bezig een koppeling te maken met de webshop.”

Minder textielafval Suittruck is niet het enige bedrijf dat experimenteert met een full-bodyscan. “Maar ik durf te zeggen dat wij de enige zijn bij wie het werkt. Dat heeft te maken met een aantal geheime toepassingen”, knipoogt Vlaming. De meeste bedrijven gebruiken een bodyscan om klanten te adviseren welke maat zij hebben van een bepaald merk, om het aantal retouren te verminderen.

“Wij scannen in de eerste plaats voor productie, maar in de toekomst rolt er ook een maattabel uit.

Een mooie manier om textielafval tegen te gaan, want geretourneerde artikelen gaan vaak niet meer terug de winkel in. Maatwerk is per definitie duurzaam. We verkopen alleen wat echt gedragen wordt, daardoor produceren we beduidend minder.”

Thousands of fabrics With his Suit Truck he drives to companies during office hours to sell their employees perfect-fitting tailor-made clothes, but he also pays home visits to his customers. “Recently I received a special request: a groom-to-be was organizing a dinner party for his best friends. He asked me to drop by and measure a suit for every dinner guest.”

At the moment there are two Suit Trucks on the road. One truck is fitted with a rack of garments.

“The customer puts on a shirt or jacket and I use pins to get the perfect fit. The customer can choose from more than a thousand fabrics.” He opens a sample book: “Everything is possible: plain colours, chequered, pinstripes or a bold pattern. The type of buttons and the lining can be personalized as well. It’s my job to guide the customer through this process.

Usually, fitting and choosing a design, fabric and all the details is done within one hour.”

Revolutionary The other truck, which he uses half of the time, is equipped with a full-body scanner in order to make measuring easier and more accurate. Vlaming explains how it works: “Wearing only his boxer short, the customer steps into a sort of fitting room, closes the door and presses a button. Several cameras take pictures while a grid pattern is projected onto his body. Within two seconds we receive all the measurements we need. The customer can check his avatar online and see how a piece of clothing looks on him. This way it’s very easy to change the colour or the type of fabric.”

This advanced technology is still in development and Vlaming is busy experimenting. “I use the truck with the full-body scanner for two weeks in a row and then I’m fine-tuning it to adjust it to the demands from the market. And I’m working on setting up a link with our web shop.”

Less textile waste Suit Truck is not the only company experimenting with a full-body scanner. “But I dare to say that we’re the only ones who are making it work, thanks to a couple of secret applications”, Vlaming says with a wink. Most companies use a body scan to help customers find the size they need for a particular brand, in order to reduce the number of returns.

“We primarily scan for production but in the future we will also use it to produce a size chart. A nice way to battle textile waste as returned articles won’t need to go back into the store. Tailor-made clothing is sustainable by definition. We only sell what people are really going to wear and that means we produce a lot less.”

Levchenko als ambassadeur Het hergebruiken van textiel heeft volgens Vlaming de toekomst.

De ondernemer lanceerde recent zelfs een exclusief maatpak gemaakt van honderd procent gerecyclede stoffen: een unicum in de textielwereld. Hiervoor werkt hij samen met de Nederlands-Indische handweverij Khaloom.

Het eerste pak maakte hij voor Evegeniy Levchenko. De exprofvoetballer heeft zich als ambassadeur verbonden aan de twee fashion-startups. Afgelopen zomer liet hij zich, te midden van textielafval, fotograferen in het stadion van AFC, in een door hemzelf ontworpen gerecycled pak van Suittruck. Vlaming: “Vandaag wordt duurzaamheid nog gebruikt als marketingtool, maar het moet uiteindelijk de norm worden.”

Olievlekeffect De modeondernemer steekt zijn ambities niet onder stoelen of banken. Hij wil zo snel mogelijk opschalen met meer soortgelijke trucks voor landelijke dekking.

Om vervolgens als een olievlek uit te breiden naar andere Europese landen. Hierbij wil hij gebruik maken van het franchiseprincipe.

Former pro footballer Levchenko as brand ambassador Vlaming believes that reusing textiles has the future. He recently launched an exclusive bespoke suit made of hundred percent recycled fabrics: unique in the textile world. For this project he worked together with the Dutch-Indonesian weavers collective Khaloom.

The first suit was made for former professional footballer Evegeniy Levchenko, a brand ambassador for two fashion start-ups.

During a photoshoot at the stadium of AFC football club in Amsterdam last summer, Levchenko wore a self-designed recycled suit made by Suit Truck,. Vlaming: “These days, sustainability is still being used as a marketing tool, but it should really become the standard.”

Ripple effect The fashion entrepreneur makes no secret of his ambitions: he wants to scale up as quickly as possible and roll out more of these trucks in order to achieve nationwide coverage. Then he is going to set up a franchise system to cover other European countries and in the near future he would like to enter the US market.

“I feel the concept could work well over there because of the vast distances. Moreover, there are a lot of clustered areas with a high concentration of people. We could drive to a business district or to a college campus. Suit Truck is aimed at progressive, fashion-conscious men with little time and it is my mission to provide an efficient service to them.”

Bij De Jonge Dikkert kon je altijd al terecht voor een mooie lunch of een goed diner, maar sinds begin september ligt de lat een heel stuk hoger. Met een nieuwe chef-kok en een nieuwe maître biedt het restaurant nu echt een geweldige gastronomische beleving en ligt een Michelinster in het verschiet.

Topkoks Ron Blaauw en Julius Jaspers hebben er al gegeten en zijn erg enthousiast, dat zegt wel wat.

Alle reden dus om zelf te ervaren wat er veranderd is bij restaurant De Jonge Dikkert. Voorheen ging je er naar toe om even lekker te eten, maar vergeet dat ‘even’ maar. Natuurlijk kun je er nog steeds twee of drie gangen eten. Maar eigenlijk doe je jezelf tekort.

Neem iets meer de tijd en kies voor vijf of zes gangen - het chef’s menu, simpelweg het beste van de kaart - , want dan ervaar je pas de enorme verfijning van de nieuwe menukaart en de meerdere dimensies van de gerechten. Want dat er van alles veranderd is, dat wordt al snel duidelijk.

Het heeft alles te maken met de komst van topkok Marcel Bonda, afkomstig uit het hoofdstedelijke sterrenrestaurant Bord’eau in hotel De L’Europe. Als souschef heeft hij mede bijgedragen aan het behalen van twee Michelinsterren onder de bezielende leiding van Richard van Oostenbrugge en sinds 2018 onder Bas van Kranen. “Ik was er aan toe om chef te zijn en voor een groep te staan. De Jonge Dikkert is een mooie zaak met enorm veel potentie.”

Signatuur Bonda is klassiek geschoold, heeft door de jaren heen een eigen signatuur ontwikkeld en houdt vooral van puur koken. “Het begint natuurlijk met het product dat van de beste kwaliteit moet zijn. Vervolgens zijn smaak en garing erg belangrijk en daarna laat je je fantasie erop los.”

En wat hij hiermee bedoelt, wordt wel duidelijk als hij ‘zijn’ zeebaars serveert. De vis is eerst gestoomd in kombu (een soort wier) en vervolgens langzaam gegaard in kelp, waardoor de mineralen en het zout in het vlees trekken. Van de graten is bouillon getrokken, die als saus wordt geserveerd en door het toegevoegde kokkelwater een mooi zilt karakter krijgt. At De Jonge Dikkert, you have always been able to enjoy a satisfying lunch or dinner. But as of the start of September the team have really raised the bar. Alongside a new head chef and maître d’, the restaurant now offers a wonderful gastronomic experience that is itching to be awarded a Michelin star in the near future.

In the recent past, one would go to De Jonge Dikkert to just have a nice meal. But these days, you can forget about the ‘just’ and ‘nice’. Top chefs Ron Blaauw and Julius Jasper dined there recently and were very enthusiastic, which certainly says a lot. With such a recommendation, you have all the reasons you need to check out the changes at De Jonge Dikkert personally. Naturally, you can still have two or three courses. But then you are not doing yourself any favors, or the menu any justice. Take some more time and sit for the five or six courses, which is the chef’s menu, and simply the best, because it is only in this way that you can experience the superb refinement of the new menu and all the dimensions of the beautiful dishes.

The reason for all this positive change is the arrival of top chef Marcel Bonda, formerly the sous-chef at Amsterdam’s star restaurant Bord’eau in Hotel De L’Europe. While there, he contributed to the two Michelin stars the Hotel obtained under the inspiring leadership of Richard van Oostenbrugge and, as of 2018, Bas van Kranen. Bonda says that he is more than ready to be the Chef, take responsibility, and that “De Jonge Dikkert is a beautiful restaurant with lots of potential.”

Trade Mark Bondo underwent classical training but has developed a personal style and loves purity. “It always starts with the quality of the top products,” he says, “next, the taste and preparation are most important, and on top of all that is completing it with imagination, with style.”

zeesla, broccoli, kokkels en zeekraal in een saus van kikkererwten. Het resultaat is ronduit tongstrelend, erg verfijnd en mooi in balans wat verschillenden smaken betreft.

Lat hoger Het bijzondere voorgerecht – Bloemkool Beurre Noisette met Pierre Robert, grapefruit en hazelnoot – , het verrukkelijke dessert Puur Caraibe met karamel, bramen en peccannoot en de verschillende amuses doen je beseffen dat de lat echt veel hoger ligt in De Jonge Dikkert.

“Met Marcel hebben we de Champions League binnengehaald,” zegt Eugène van Angelbeek trots.

Met Arjen Kräwinkel is hij eigenaar van restaurant De Jonge Dikkert. “Marcel wil alleen met de beste producten werken. Brood en boter maken we nu zelf. Hij brengt vooral een enorme passie en drive mee, dat is heel erg inspirerend voor ons allemaal.”

Minder tannine Naast Marcel Bonda geeft ook Laurence Reintjens nieuw elan aan het bedieningsteam van het restaurant. De maître-sommelier heeft ervaring opgedaan in het Conservatorium hotel en The Dylan en in restaurant Vermeer, alle in Amsterdam.

“Ik denk dat ik een frissere stijl meebreng. Je ziet trends naar minder zware wijn, minder tannine en meer fruit, en aandacht voor andere wijnlanden, zoals Duitsland. En jongere gasten hebben vaker een voorkeur voor biologische wijnen en willen vooral weten hoe de wijn gemaakt wordt.” Kortom, de wijnkaart van De Jonge Dikkert is ook flink aan het veranderen en wordt meer eigentijds.

And what he means by that immediately becomes clear when he serves us his “trade mark” seabass.

The fish is steamed in kombu and slowly finished off in kelp, which makes all the minerals and salt go into the fish. The broth comes from the bones and the added clam’s water, which gives it a salty character, and is served next to the dish. All the vegetables on the plate, including sea fennel, sea lettuce, broccoli, as well as the clams and samphire, are served with a chickpea sauce. The result is absolutely mouthwatering, exquisite; all the levels of tastes are perfectly balanced.

Next Level The Chef’s special starter (Cauliflower Beurre Noisette with Pierre Robert, grapefruit and hazelnut), the delicious dessert (Dark Caraibe with caramel, blackberries and pecan and the variety of amuses) make you realise that there are great ambitions at De Jonge Dikkert. “With the arrival of Marcel, we have entered the Champion’s League,” Eugène van Angelbeek tells me proudly. He is the co-owner of the restaurant alongside Arjen Kräwinkel. “Marcel only works with top products, and now we have homemade bread and butter. He brings in so much passion and drive, which is so enormously inspiring for us all.”

“Wat vooral hetzelfde is gebleven, is het authentieke bedrijf dat De Jonge Dikkert is,” vertelt Van Angelbeek. “Een restaurant waar je in het Nederlands bediend wordt, door personeel dat er echt voor opgeleid is en met enorm veel passie z’n vak uitoefent.” Maitre Paul Leeseman, inmiddels 12,5 jaar werkzaam in De Jonge Dikkert, speelt hier een belangrijke rol in. “Ik ken heel veel vaste gasten en zal ze meenemen in de veranderingen van het restaurant. Niet iedereen zal meteen begrijpen dat alle gerechten op de menukaart nieuw zijn. Ik ben er om dat toe te lichten.”

En nog steeds uniek is natuurlijk de ambiance van de oer-Hollandse zaagmolen uit 1672, waar het restaurant in gevestigd is. Eind jaren tachtig, begin jaren negentig had De Jonge Dikkert een Michelinster.

Als het vernieuwde keukenteam ligt, komt deze heel snel weer terug.

A Lighter Touch Added to provide additional inspiration, Laurence Reintjes has also joined the restaurant’s service team. The maître/ sommelier got his experience at the Conservatorium Hotel, The Dylan and restaurant Vermeer, all situated in Amsterdam.

“I think I add to the refreshed style of the restaurant. The trend nowadays is for less heavy wines, less tannin, more fruity tastes and consideration to different wine-producing countries such as Germany. Also, younger guests prefer organic wines and like to know the origins.” Subsequently, the wine menu is changing to suit that trend and is being modernized.

“In spite of all the alterations, something that has not changed is the authenticity of De Jonge Dikkert,” Van Angelbeek reminds me. This is a restaurant where you are served by thoroughly trained staff who work with passion. The spirit behind this is the maitre d’ Paul Leeseman, who has been working for De Jonge Dikkert for twelve and a half years.

“I know a lot of the regulars and I will accompany them while changes take place in the restaurant,” Leeseman assures me. “Not everyone will immediately understand all of the dishes on the menu, but I will be there to explain.”

The restaurant retains a unique ambience, thanks to its location in an old Dutch mill dating back to 1672. In both the late 1980s and early ‘90s De Jonge Dikkert earned a Michelin star. Based on the new team, they will have a star again very soon.

Geboren en getogen in India koos Simmer Madan op haar 24ste voor Londen om er psychologie te gaan studeren en te gaan werken. Als ze haar huidige man er tegenkomt, combineert ze dat met een baan in Denemarken, maar sinds drie jaar woont ze for love in Nederland. “Hier blijven we en nergens anders.”

Afgelopen week was Simmer na negen jaar weer even in Londen. “Ik was helemaal shocked! Ik vond het zoveel drukker geworden, er bleven maar stromen mensen uit de metro komen. In Londen was ik twintig minuten kwijt om alleen al van mijn werk naar de metro te komen. Hier ben ik in twintig minuten thuis!”

Simmer kan sowieso nauwelijks een minpunt opnoemen van het leven in Nederland. “De taal is wel moeilijk, dat wel. Wat heel erg helpt, is om in de krant te lezen wat winkels aan producten verkopen of welke huizen te koop zijn. Dan leer je allerlei alledaagse woorden. En ik winkel vaak bij Bol.com, daardoor weet ik wat douchegel is.”

Veel profijt heeft Simmer gehad, vertelt ze, van de inburgering die ze moest volgen door haar huwelijk met haar tot Nederlander genaturaliseerde man. “Toen ik hier met het openbaar vervoer ging, wist ik meteen hoe ik een OV-chipkaart moest gebruiken. En ook hoe je winkelt bij Albert Heijn, heel erg handig!”

Is het Verenigd Koninkrijk vrij hiërarchisch ingesteld, in Nederland zijn mensen open minded, is de ervaring van Simmer. “Iedereen is makkelijk te benaderen, mensen denken heel erg in oplossingen.” Na haar studie psychologie heeft ze een MBA Business en Finance gedaan en werkt ze sinds een jaar als projectmanager in het Atrium bij een bedrijf op het gebied van financiële dienstverlening.

“Ik vind de Zuidas echt een geweldige omgeving om te werken. Iedereen is vriendelijk tegen elkaar, kent elkaar vaak ook, en dat biedt veel mogelijkheden. En je merkt dat het supercompetitief is, er zijn veel meer mensen dan banen, het is booming.”

Heel wat rustiger gaat het toe in Amstelveen, waar ze met haar man woont. “We wilden een huis met een tuin, dat lukte niet in Amsterdam.

Ook belangrijk: mijn ouders en schoonouders uit India kunnen hier logeren. Verder zitten we 12 minuten van Schiphol, zijn hier veel restaurants en hebben we veel vrienden in de buurt. Nee hoor, we gaan nergens anders meer wonen.”

Having been born and raised in India, at the age of twenty four Simmer Madan choose to study and work in London. There she met her husband, and started combining life in London with a job in Denmark.

However, for three years now she has been living in The Netherlands, “we stay here and nowhere else,” she tells me.

For the first time in nine years, she went back to London this September. “I was shocked! It was so much more crowded. People kept pouring out of the underground. In London, it took me twenty minutes to get from work to the underground. Here I am home in twenty minutes.” Simmer can hardly find anything negative to say about living in The Netherlands. Apart from “the language, that’s hard. What does help is reading product advertisements and ads about houses-for-sale in newspapers. That way, you learn ordinary words. I shop at Bol.com, so now I know what douchegel is.”

She gained a lot from the government’s integration course, which she had to take because of her marriage to a naturalized Dutchman. “As a result, when I started to use public transport, I knew how to use the OV-chip card.

As well as that you learn how to shop at Albert Heijn, very convenient.”

In Simmer’s experience, the UK promotes a somewhat hierarchical relationship between people, while people in The Netherlands are more open-minded. “It is easier to approach people here, plus the fact that people think in terms of solutions.”After completing a BA in Psychology, she studied an MBA in Business and Finance. She now works as a project manager with a company in financial services in the Atrium building at Zuidas. “The Zuidas neighbourhood is just a marvellous work environment. People are friendly, and people often know each other, which offers lots of opportunities. The atmosphere is super-competitive however, there are more people than jobs. It is booming.”

Life is very relaxed in Amstelveen, where Simmer lives with her husband. “We wanted a house with a garden, but that did not work out in Amsterdam. And very important: we needed a room that both my parents and parents-in-law from India could stay in when they visit us. Furthermore, we are only 12 minutes from Schiphol Airport, there are many restaurants around us, and we have our friends nearby. So, we are not going to live anywhere else than here.”

Lag in de studententijd van de 41-jarige Aimée Geerts de Vrije Universiteit nog in een redelijk stil en afgelegen deel van Amsterdam, tegenwoordig is de VU het academisch epicentrum van de Zuidas. Omringd door de grootste spelers in het bedrijfsleven vindt tussen de universiteit en de Zuidas een constante wisselwerking plaats.

“Eigenlijk kun je wel zeggen dat ik vanuit mijn bureaustoel bij Commerzbank de Zuidas heb zien groeien.” Aimée werkt sinds 2006 op de Zuidas en is Assistant to the Country CEO in the Netherlands, een controllersfunctie bij de Duitse bank. Liep ze eerst dagelijks het Atriumgebouw binnen, sinds drie jaar is Commerzbank gevestigd in de Viñoly toren, het gebouw met de geveltrap op de buitenkant.

“Na mijn studie Internationale Bedrijfskunde aan de Universiteit Maastricht ben ik als assistent van de Country CEO aan de slag gegaan bij Commerzbank.

Vanaf dag één voelde ik me daar helemaal op mijn plek, maar miste iets meer focus. Bedrijfskunde is toch een generalistische opleiding. Daarom ben ik op zoek gegaan naar een studie die zou passen bij mijn functie en die voor verdieping zou zorgen.”

Perfecte plek “In mijn zoektocht naar de juiste postdoctorale scholing kwam ik terecht bij de Vrije Universiteit.

Hier heb ik twee jaar lang, één dag in de week, de opleiding Executive Master in Finance & Control (EMFC), ofwel in het Nederlands Register Controllersopleiding gevolgd. Dit leek me de perfecte plek.

Al tijdens het kennismakingsgesprek werkten de gedrevenheid en het enthousiasme van een van de docenten aanstekelijk.”

“Ook Commerzbank stond volledig achter mijn keuze. Logisch: de Register Controllersopleiding van de Vrije Universiteit is als de eerste controllersopleiding in Nederland de ‘hofleverancier’ van de financiële top van het bedrijfsleven en toonaangevend voor de ontwikkeling van het beroepenveld.”

Het feit dat Aimée pal naast het opleidingsinstituut werkte en de VU toonaangevend is als het gaat om de opleiding tot Register Controller, gaf de doorslag om voor deze locatie te kiezen. Van 2011 tot 2013 zat Aimée elke vrijdag weer in de collegezalen.

When 41-year old Aimée Geerts was a student, the area around VU Amsterdam was a fairly quiet and remote part of Amsterdam. These days, that very same university is the academic epicentre of the thriving Zuidas business district and there is a lot of interaction between Zuidas companies and VU Amsterdam.

“One could say I have seen Zuidas grow from my office at Commerzbank” says Aimée, who has been working at Zuidas since 2006 and is Assistant to the Country CEO at the German Commerzbank. Initially, her office was located in the Atrium but three years ago her company moved to the Viñoly Tower, the building with the conspicuous staircase on the outside.

“After I completed my degree in International Business Administration at Maastricht University, I started working for Commerzbank.

From the very first day I really felt at home there but I was missing a bit of focus as my degree was a fairly general one. That’s why I went looking for a course that was in line with my job but would delve a little deeper.”

Perfect place “I was looking around for the right postdoctoral degree and then I found the Executive Master in Finance & Control (EMFC) at VU Amsterdam.

This was the perfect place for me. During the introductory interview, the commitment and enthusiasm of one of the teachers really inspired me.”

Verrijking “We zaten toentertijd midden in de financiële crisis, maar mijn klas zat vol. De studie bleek een enorme verrijking. Alleen al om het feit dat je reflectie op je alledaagse werkpraktijk hebt. Je duikt met elkaar weer de boeken in en je studeert samen met mensen die allemaal al werkervaring hebben. Zo leer je van elkaar.”

“In groepjes van vier werkten we aan business cases. In mijn groepje zaten mensen uit de luchtvaartsector, de bancaire sector, uit de zorg en verzekeringssector. Vanaf het kick-off weekend studeerden we met elkaar. Ieder van ons had zijn eigen expertise, zeer leerzaam.

En natuurlijk werden we door de docenten gechallenged.”

Diversiteit aan vakken Sinds haar opleiding tot Registercontroller mag Aimée de titel RC voeren. “Een mooie titel, maar mij gaat het meer om wat de scholing mij heeft gebracht. Door de diversiteit aan vakken, finance, reporting, strategie, corporate en tax law, kan ik nu efficiënter schakelen met de verschillende disciplines binnen de bank. Al met al heb ik geen moment spijt van deze opleiding gehad.”

Als alumna heeft Aimée, met haar werk en universiteit dicht bijeen, haar draai helemaal gevonden op de Zuidas. Twee kinderen en een verhuizing naar Naarden verder, heeft ze ‘The Apple of Amsterdam’ groot zien worden.

Kon ze vroeger alleen bij de Blauwe Engel terecht voor een hapje en drankje, tegenwoordig heeft ze keuze te over. “Naarden noem ik de achtertuin van Amsterdam. Met mijn bakfiets breng ik mijn kindjes naar school en sta in 30 minuten met de trein hier op de Zuidas. Zo voel ik me toch nog een beetje een Amsterdammer.”

Alumnivereniging In het vakgebied van Aimée moet je constant bijscholing genieten. Daarom wordt er voor de leden van de alumnivereniging door het jaar heen activiteiten georganiseerd. Op deze avonden zijn vrijwel altijd twee docenten aanwezig. “Dat zijn informatieve avonden. Je ziet de ex-studenten terug en het weerzien van de docenten is ook fijn. Zo heb ik nog altijd contact met Bert Steens, sinds 2000 fulltime hoogleraar aan de VU. Mocht ik ergens mee zitten, dan kan ik altijd met mijn vraag terecht bij Bert.”

The fact that Aimée was working next to VU Amsterdam and the university’s leading role in finance and control, were the decisive factors in choosing this degree. From 2011 to 2013, Aimée spent every Friday studying and attending classes at VU Amsterdam.

Enriching experience “Back then, we were right in the middle of the financial crisis but my course was full. It was such an enriching experience. Getting feedback from others on your everyday work was so useful. You’re studying together with other people; every one of us was working in a different field so we could really learn from each other.”

“We were working on business cases in groups of four students. My group contained people from the aviation, banking, healthcare and insurance industries. Right from the kick-off weekend we were studying together. Every one of us had his or her own expertise and that gave me a lot of insight. And obviously the teachers challenged us big time.”

Variety of subjects With the Executive Master in Finance & Control, Aimée has added another degree to her impressive resume.

“That’s nice but what counts is what this degree has brought me. The variety of subjects, finance, reporting, strategy, corporate and tax law, has enabled me to cooperate more efficiently with the various departments within the bank. I’m really happy with my choice for this degree course.”

With her job and university close by, Aimée feels at home at Zuidas. She lives in Naarden with her husband and two children, but from her office she has seen the steady growth of ‘The Big Apple of Amsterdam’. In the old days, there was only De Blauwe Engel to go for drinks and a bite to eat, but these days people are spoilt

for choice. “I consider Naarden Amsterdam’s backyard. I take my kids to school with my cargo bike and it only takes me 30 minutes by train to get to my Zuidas office. This way I still feel like an ‘Amsterdammer’.”

Alumni Association In Aimée’s field of work, regular training is a necessity. That’s why VU Amsterdam organizes activities for members of the alumni association throughout the year. There are usually two teachers present during these alumni evenings.

“It’s very informative. You meet up with your former fellow-students and it’s also nice to see the teachers again. For example, I’m still in touch with Bert Steens, who has been a professor at VU Amsterdam since the year 2000. If there’s anything I need help with, I can always ask Bert for advice.”

In het voorjaar van 2020 start een nieuwe opleiding van de VU in samenwerking met andere universiteiten in het buitenland: de International Executive MBA in Finance & Control.

“Deze opleiding is bedoeld voor ervaren business professionals die binnen afzienbare tijd een rol als financial op senior managementniveau of bestuurlijk niveau ambiëren, zoals een positie als financieel directeur of CFO. Het is een executive MBA-programma waarbij de focus ligt op general management en Finance & Control en vooral ook de uitdagingen die de combinatie van beide disciplines met zich meebrengt.”

Bert Steens adds: “We have a wonderful and active alumni community and we’re very proud of that. We regularly meet former students such as Aimée. I think that is due to the good relationship we’ve built during the course, as well as to our location at Zuidas, where many alumni are working in finance positions. There are a lot of things going on, a lot of traffic and accessibility is excellent, both with public transport and by car or bicycle. VU Amsterdam could not have chosen a better location.

Students working at Zuidas can pop in during their lunch break to discuss something.”

Executive Education Senior finance specialists also find their way to VU Amsterdam for training courses and master classes. “Apart from doing a Master in Finance and Control, professionals can keep abreast of developments in their field by participating in our Executive Education programme, for example following a course in Business Analytics.”

Early 2020, VU Amsterdam will start a new degree programme in cooperation with other universities abroad: an International Executive MBA in Finance & Control.

“This course is meant for experienced business professionals who are aiming for a financial role at senior management or board level, like a position as finance director or CFO. This is an executive MBA programme with a strong focus on general management and finance & control, tackling all the challenges that the combination of those two disciplines entails.”

There is so much to see in the Cobra Art Gallery at Van Baerlestraat 8: from photos printed on plexiglass to controversial sculptures with a nod to fashion and pop art. The artworks at display are all unique or made in limited editions.

They are sold according to the ‘art-à-porter’ principle: art delivered from the gallery directly to the customer.

Een levensgrote David Bowie kijkt je indringend aan. Het is een portret geschoten door Markus Klinko, die de zanger jarenlang exclusief mocht fotograferen. Verderop volgt een non je met haar verleidelijk opgemaakte ogen wanneer je langsloopt. Langzaam verandert het beeld: onder haar religieuze gewaad draagt ze sexy jarretels. Kunstfotograaf Cécile Plaisance maakt hier gebruik van de lenticular druktechniek om beweging te suggereren. Hetzelfde principe past ze toe op een foto van een model in een Hèrmesburka met een bikini eronder.

Weer ergens anders hangt een monumentaal werk van James Chiew. Wereldberoemde persoonlijkheden en sterren poseren rond een lange tafel, onder wie James Dean, Audrey Hepburn, Jimi Hendrix, Prinses Diana en Nelson Mandela. Figuren die elkaar nooit allemaal in het echt zouden kunnen hebben ontmoet.

Het is een foto waar je naar blijft kijken. Extra imponerend door het grote formaat.

Art objecten “Veel kunstwerken in onze collectie hebben raakvlakken met popart, mode, glamour en celebrities. Oftewel: fashion on the wall”, vertelt Leon Jonkman, gallery manager van de Cobra Gallery in de Van Baerlestraat. Naast de fotografische kunst op plexiglas waar Cobra Art om bekend staat, zijn er steeds meer sculpturen bijgekomen. Denk aan brandblussers met het logo van Ferrari, Chanel of andere merken – nog echt werkend ook! – van James Chiew.

A life-size portrait of David Bowie with a penetrating gaze, shot by the internationally renowned and award-winning photographer Markus Klinko. A little bit further along, a nun tempts the visitor with her seductive eye makeup.

Slowly the picture changes, however: underneath her robe she’s wearing a sexy garter belt. In this image, art photographer Cécile Plaisance uses a lenticular printing technique in order to suggest movement. The same method is applied to a picture of a model wearing a Hèrmes burka with a bikini underneath.

Another wall contains a monumental work by James Chiew. Famous celebrities and global stars, including James Dean, Audrey Hepburn, Jimi Hendrix, Princess Diana and Nelson Mandela, are gathered around a long table. But there is a twist: they never could have met in real life… This is an image that keeps drawing one’s attention and its large size makes it all the more impressive.

Extraordinary fire extinguisher “Many artworks in our collection touch upon pop art, fashion, glamour and celebrities. In other words: fashion on the wall”, Leon Jonkman, gallery manager of the Cobra Gallery on Van Baerlestraat, explains. Apart from their iconic photographic artworks printed on plexiglass, Cobra Art is selling sculptures as well, such as the extraordinary fire extinguishers, made by James Chiew: they are adorned with a logo of Ferrari, Chanel or another brand and they even work!

Of de cartooneske bulldogs van Christophe Comerro die door hun glossy finish wel van porselein lijken te zijn gemaakt. In het oog springen ook de art handbags van Debra Franses Bean, gevuld met stapels contant geld, glanzende pistolen, gouden horloges, lippenstifthulzen en parfumflesjes. Ze wegen per stuk een kilo of vijftien.

“Dus nee, ze zijn niet bedoeld om echt te dragen”, lacht Jonkman. “Het zijn objecten: de kunstenares werkt gemiddeld drie maanden aan één tas.”

Bijzondere materialen Door de kunstcollectie te combineren met meubels en objecten, kunnen klanten zich een goede voorstelling maken van hoe dit ook bij hen thuis zou kunnen werken, legt de gallery manager uit. Vrijwel alles is te koop, van de kroonluchter tot het tapijt. “We zien kunst echt als verlengstuk van je interieur.”

De werken van Cobra Art zijn altijd uniek of in gelimiteerde oplage vervaardigd. Het combineren van bijzondere materialen, zoals liquid gloss, met metaalverf en hars, levert uitzonderlijke resultaten op. De meeste foto’s kunnen op vier formaten worden afgedrukt. Dat is handig als het kunstwerk bijvoorbeeld perfect moet passen in een nis of tegen een bepaalde wand. Alle werken in kleur zijn ook in zwart-wit verkrijgbaar. Twee keer per jaar, in januari en september, presenteert Cobra Art de nieuwe collectie in Parijs tijdens de interieurbeurs Maison & Objet, met telkens een ander thema.

Originaliteit Het familiebedrijf Cobra Art Company bestaat ruim dertig jaar en is uitgegroeid van een kunstgroothandel tot een internationaal merk. Eigenaren Mike en Jeannette van Rijswijk zijn zelf nog altijd van A tot Z betrokken: samen stellen zij met veel zorg de Cobra Art Collectie samen en reizen daarvoor de hele wereld over.

“Wij selecteren de fotografen en kunstenaars op basis van originaliteit, creativiteit en vernieuwing”, vertelt Jeannette van Rijswijk. “En natuurlijk moet er een goede match zijn met de stijl van Cobra Art. Met de door ons geselecteerde fotografen organiseren wij eigen fotoshoots.”

Het hoofdkantoor bevindt zich in Veenendaal. Hier wandel je door een inspirerende kunstgalerij van 1.100 vierkante meter met ruim vijfhonderd verschillende kunstwerken.

Elke compleet ingerichte studio heeft een eigen interieur, waarin de kunstwerken optimaal tot hun recht komen.

Jong en hip Het is een plek waar kunstliefhebbers komen om inspiratie op te doen of nieuwe werken te ontdekken. “Onze doelgroep is hip en jong, gemiddeld tussen de 25 en 55 jaar, veelal tweeverdieners”, aldus Van Rijswijk.

“Mensen die houden van mooie interieurs, horloges, auto’s, mode en goede restaurants.” De showroom wordt niet alleen bezocht door consumenten, maar ook Zuidas. magazine 50

Or the cartoonish bulldogs by Christophe Comerro; with their glossy finish they seem to be made of china.

Then there are the striking arty handbags by Debra Franses Bean that are filled with stacks of banknotes, shiny pistols, gold watches, lipstick shells and perfume bottles. These bags weigh around thirty pounds each.

“No, you’re not really supposed to carry them with you”, Jonkman laughs. “These things are objects: it takes the artist takes around three months to make a single bag.”

Special materials Combining works from the Cobra Art collection with furniture and objects enables their customers to get a good idea of how these things would look in their own home, the gallery manager says. Practically everything is for sale, from the chandelier to the carpet. “We see art as an integral part of an interior setting.”

The works sold at Cobra Art are always unique or made in limited editions. The use of special materials, such as liquid gloss with metal paint and resin, leads to stunning effects. Most works can be printed in four different sizes, quite handy if the picture in question needs to fit in an alcove or on a specific wall. And all the images displayed in colour are also available in black and white. Twice a year, in January and September, Cobra Art presents their new collection in Paris during the Maison & Objet Interior Design Fair, each time dedicated to a new theme.

Originality Cobra Art Company is a family business that was established over 30 years ago and has grown from an art dealer into an international brand. Owners Mike and Jeannette van Rijswijk are still actively engaged in the company: together they travel the world to carefully curate the Cobra Art Collection.

“We choose photographers and artists based on originality, creativity and innovation”, Jeannette van Rijswijk says. “And obviously there should be a good match with the Cobra Art style. We organize our own photo shoots with the photographers we have selected.”

The company’s main office is located in the town of Veenendaal (province of Utrecht). Here, visitors can walk through an inspiring art gallery measuring 1,100 sq. m² (nearly 12,000 sq. ft) with over 500 different artworks. The gallery contains fully furnished studios, each with their own unique interior that perfectly highlights the work of art on display.

Boutiquehotel TwentySeven in Amsterdam is volledig ingericht met kunst van Cobra Art, net als een aantal luxe hotels in onder andere Dubai. Jonkman: “Volgend jaar gaan we ook samenwerken met het Art’otel in Amsterdam, tegenover het Centraal Station. Het maakt ons werk heel divers: onze kunst is vertegenwoordigd in zeker 28 landen, van hotels tot luxe interieurwinkels.”

Masterpiece Het openen van een exclusieve brandstore in Amsterdam was al langer een wens van de eigenaren. Het museumdistrict, waar kunst en mode samenkomen, en vlakbij de Zuidas, is daarvoor een uitgelezen plek. Wat de toekomst brengt voor Cobra Art Company? “Wij exporteren al wereldwijd. Op dit moment hebben we Cobra Art Galleries in Amsterdam, Rotterdam, Düsseldorf en Londen. In aantocht zijn Parijs, Tel Aviv en Moskou. Maar we willen er nog veel meer”, besluit Van Rijswijk. “Uiteindelijk is het onze ambitie om Cobra Art Galleries te openen in alle grote internationale steden.”

The showroom is not only frequented by consumers but is also popular among interior designers and project developers. The Cobra Art project team is available to work with them on interior design or restyling projects.

Boutique hotel TwentySeven in Amsterdam is fully furnished with artworks from Cobra Art, just like a number of luxury hotels in cities such as Dubai. Jonkman: “Next year we’ll start working together with the Art’otel in Amsterdam, located opposite Central Station.

These things make our work so interesting: our art is represented in more than 28 countries, from hotels to luxury interior design stores.”

Masterpiece Opening an exclusive brand store in Amsterdam had long been a wish of the owners. The Museum Quarter, where arts and fashion meet, is an ideal location – especially with the proximity of Zuidas. Due to their many years of experience in the trade, Mike and Jeannette van Rijswijk know how to perfectly cater to the needs of the market and their target audience; one could say they simply sense what their customers want. Using their expertise, they’ve built their high-end Masterpiece Collection in close collaboration with leading international artists and photographers.

What will the future bring for Cobra Art Company? “We’re already exporting worldwide. At the moment, there are Cobra Art Galleries in Amsterdam, Rotterdam, Düsseldorf and London. And soon we’ll open stores in Paris, Tel Aviv and Moscow, but we would like to add even more”, Van Rijswijk says.

2020 wordt het jubileumjaar voor Bolenius, dus serveren we de komende feestdagen ons tiende kerstmenu op de Zuidas. Uiteraard wordt het weer een menu met gerechten die onmiskenbaar met deze tijd van het jaar verbonden zijn.

En die keuze heeft in augustus al consequenties, want sommige ingrediënten moeten we maanden van tevoren bestellen. Traditioneel is voor de kalkoen een hoofdrol weggelegd in ons kerstdiner. Kalkoen wordt in de ons omringende landen volop gefokt, maar in Nederland moet je een goede kalkoen met een (kerst) kaarsje zoeken. Zo kwamen we terecht in Hoeven, een Brabants plaatsje tussen Breda en Roosendaal, waar naar onze mening de beste kalkoenen van Nederland vandaan komen.

De Hoevense hoeve in kwestie is de Walnoothoeve, waar de dieren opgevoed worden volgens de Slow Food-richtlijnen. Niet alleen de kalkoenen, maar ook het Chaamse hoen, een bijzonder hoenderras dat door de Slow Food-beweging is opgenomen in de Ark van de Smaak en zo voor uitsterven behoed wordt.

Terug naar onze kalkoen, die 26 weken rondscharrelt op de Walnoothoeve, waar het dier acht vierkante meter grasweide ter beschikking heeft. In de keuken van Bolenius wordt de kalkoen ‘nose to tail’ gebruikt: bouten en borstfilets worden apart bereid om de ideale garing te garanderen. De overige delen gaan in bouillons en sauzen. Onze gasten krijgen borst en bout geserveerd met de bijbehorende saus en natuurlijk de kraakverse groenten die je van het Beste Groenterestaurant van Nederland mag verwachten. We kunnen ons voorstellen dat u al een beetje trek begint te krijgen en uiteraard bent u tijdens de Kerst van harte welkom om de kalkoen te komen proeven. Wij pakken het met onze kalkoen ook ‘slow’ aan, u kunt er bijna de hele maand december voor bij ons terecht.

SLOW KERST

2020 will be an anniversary year for Bolenius; during the upcoming festive period we’ll be serving our tenth Christmas menu at Zuidas.

And of course we will be offering dishes with a strong connection to this time of the year. That means we have to start thinking about our menu in August as some ingredients need to be ordered months in advance.

Traditionally, turkey plays the starring role in our Christmas dinner. Turkeys are bred in the countries around us, but they are surprisingly hard to find in the Netherlands. However, after a long search we managed to find a farm in Hoeven, a village in the province of Noord-Brabant, where they breed the best turkey in the Lowlands. The farm in question is the Walnoothoeve (‘Walnut Farm’), where the animals are raised according to the Slow Food principles. Apart from turkeys, they also raise the so-called Chaam fowl, a special breed that has been included in the Ark of Taste by the Slow Food movement in order to protect it from extinction.

Back to our turkey: this is an animal that roams around an 800 sq. ft grass meadow at Walnoothoeve for 26 weeks of the year. In the Bolenius kitchen, turkey is used from nose to tail: legs and breast fillets are prepared separately in order to guarantee the perfect level of cooking. The other parts are used in broths and sauces.

We will serve our guests turkey breast and leg with an accompanying sauce and super fresh vegetables, as one would expect from the Best Vegetable Restaurant in the Netherlands.

We can imagine you’re feeling hungry reading this, so we would like to welcome you to come and taste our turkey during the festive season. And we will go slow with our poultry as well: turkey will be on our menu for almost the entire month of December.

Onder het dak van Epicenter werkt een community van start-ups, scale-ups en gevestigde bedrijven samen door elkaar te inspireren en van elkaar te leren, met snellere innovatie en groei als gevolg.

Ruim een jaar na de opening vragen we ons af hoe het werkelijk is om hier te werken. Wat brengt dit ‘digital innovation house’ de bedrijven concreet? Vier members over de meerwaarde van Epicenter.

“De eerste keer dat ik hier binnenliep, was de verf nog nat. Maar het voelde al als de lobby van een vijfsterrenhotel. We besloten ter plekke dat we hier wilden zitten”, herinnert David Kat zich over zijn kennismaking met Epicenter. Hij was op zoek naar een werkplek omdat hij drie maanden eerder met een compagnon was begonnen om de in Israël opgezette startup Wasteless in Nederland te laten slagen.

“Deze locatie is perfect: dicht bij Schiphol en aan de binnenkant van de ring. Met een leenfiets sta je vanaf hier binnen 10 minuten in de binnenstad. En het gebouw is enorm duurzaam. Wasteless biedt supermarkten, door middel van kunstmatige intelligentie, dynamische prijzen voor hun producten. Via digitale prijskaartjes geeft het een slimme prijsprikkel op het product met de kortste houdbaarheid. Zo kan de 500 miljoen euro aan goede producten die supermarkten in Nederland jaarlijks weggooien, omgezet worden in winst. Doordat die producten niet op de vuilnisbelt belanden, vermindert de CO2-uitstoot. Wij brengen onze klanten winstgevende duurzaamheid, dan klopt het natuurlijk wel als je zelf in een duurzaam en slim pand zit.”

Zitkuil Zoals veel anderen, begon David in de open ruimte.

Hij en zijn compagnon werkten vanuit de zitkuil, met als groot voordeel dat hij allerlei interessante mensen ontmoette. Inmiddels is Wasteless - met een team van vier personen en vaak bezoek van internationale collega’s – doorgegroeid naar een studio.

De flexibele mogelijkheden op dat gebied zijn voor veel members een enorm pluspunt, vertelt ook Michel Spruijt van Brain Corp Europe. “Wij kijken steeds 90 dagen vooruit en sturen waar nodig de koers bij voor Brain Corp Europe. Nu zit ik hier alleen, maar aan het einde van dit jaar zouden we zomaar met twaalf mensen kunnen zijn”, vertelt hij.

In juli begon Michel met het opzetten van de Europese tak van het Amerikaanse bedrijf, dat software ontwikkelt voor machines die autonoom navigeren in publieke ruimten, zoals schoonmaakrobots.

Under the roof of Epicenter, a community of start-ups, scale-ups and established companies is working side by side, inspiring and learning from one another, pushing innovations and growth.

Epicenter opened its doors more than a year ago, so we were wondering what it is like to actually work there. And how do companies benefit from this digital innovation house? Four members tell us about the added value of Epicenter.

“The first time I walked in here, the paint was still wet but it felt like the lobby of a five-star hotel.

We decided on the spot that we wanted an office here”, David Kat remembers his first encounter with Epicenter. He was looking for a workplace in Amsterdam as three months earlier he and his business partner had decided to introduce their Israel-based start-up Wasteless to the Dutch market.

“Epicenter is perfectly located: close to Schiphol Airport and within the A10 ring road. From here, it’s only 10 minutes by bicycle to the city centre.

And the building is very sustainable. Wasteless uses artificial intelligence to provide supermarkets with dynamic pricing for their products, with digital tags displaying a smart price incentive on the product with the shortest expiration date. This way, the 500 million euros worth of goods that Dutch supermarkets discard on a yearly basis, can instead be sold and turned into a revenue stream. As these products don’t end up in a landfill site, this leads to a considerable reduction in carbon dioxide emissions as well. We bring our customers profitable sustainability, so it makes sense that we hold office in a sustainable and smart building.”

Sunken sitting area Like so many others, David started in the open office space at Epicenter. He and his business partner worked from the sunken sitting area and this really helped them to meet all kinds of interesting people. In the meantime, Wasteless has grown into a team of 4 people and often gets visitors from abroad, so they decided to move into a studio. The flexible staffing options are a big plus for many members, confirms Michel Spruijt of Brain Corp Europe. “We look 90 days ahead and adapt our staffing plans for Brain Corp Europe accordingly. At the moment, I’m the only one here but by the end of this year we could well have 12 people at this location”, he Zuidas. magazine 57

Flexibiliteit “De ontwikkelingen gaan hard en we zijn constant aan het bijstellen. Snelheid is geboden, omdat wij de Microsoft van het autonoom navigeren en robotics willen zijn. Als ik morgen extra mensen heb, sluit ik voor hen een abonnement af en kunnen ze beginnen.

Die flexibiliteit heb ik nodig.”

Voor Antler, een startup generator en venture capital fonds dat wereldwijd de missie heeft om gedreven mensen zo te helpen dat er baanbrekende bedrijven ontstaan, is de schaalbaarheid zelfs een vereiste voor de werkwijze, vertelt Kim Oreskovic. “Ons basisteam bestaat uit 11 mensen, waarvoor we een meeting room huren en de open co-working space gebruiken. Als er een programma begint, werken er twee maanden lang 100 mensen extra. In die tijd helpen we ze om teams te vormen en hun business vanaf nul op te bouwen.”

Positieve vibe “Deze teams pitchen voor het Antler investment comité en vervolgens blijven er ongeveer 40 founders nog drie maanden in Epicenter werken voor het vervolgtraject. Dat past hier, omdat er veel open ruimte is en er zijn besloten ruimtes van verschillende groottes. Wat extra fijn is, is de positieve en creatieve vibe die hier hangt. Er is veel plek voor ontmoeting, maar tegelijkertijd is de akoestiek zo goed dat toch overal een goed gesprek kunt hebben zonder dat anderen het horen.”

Opschalen zonder rompslomp is ook een van de voordelen die Katinka de Korte van DEARhealth noemt.

“We begonnen drie maanden geleden met vier, nu zijn we met vijftien en voor de Kerst zouden we met 25 mensen moeten zijn”, verklaart ze haar nood aan

‘If I need more staff tomorrow, I simply get a subscription for them and they can start working right away; that’s the flexibility I require’

says. In July, Michel started setting up the European branch of American-bases Brain Corp, a company developing software for machines (e.g. cleaning robots) navigating autonomously in public spaces.

Flexibility “Developments are going very fast and we’re adjusting our plans all the time. We need to be able to act swiftly as we want to be the Microsoft of autonomous navigation and robotics. If I need more staff tomorrow, I simply get a subscription for them and they can start working right away; that’s the flexibility I require’.” For Antler, a start-up generator and venture capital fund with a global mission to help driven people set up groundbreaking businesses, scalability is a requirement and crucial to the way they operate, explains Kim Oreskovic. “Our basic team consists of 11 employees; we rent a meeting room for them and use the open co-working space. When a new programme starts, we’ll get in another 100 people for two months. In that period, we help start-ups form teams in order to build up their business from scratch.”

Positive vibe “These teams pitch their plan to the Antler investment committee and then around 40 founders will stay on at Epicenter for another 3 months during the follow-up phase. That works out very well here, because there is a good mix of open and confined spaces of various sizes. What’s extra special, is the positive and creative vibe in this place. There is so much room to meet people, but at the same time the acoustics are so good that you can have a good conversation without others hearing what you’re saying.” Scaling up without any hassle is also one of the advantages Katinka de Korte of DEARhealth mentions. “We started out three months ago with four people, now we are a team of fifteen and before Christmas there’ll be 25 of us”, she explains her need for flexibility. The international Epicenter locations have proved a big bonus for her company as well.

“DEARhealth is a digital platform that connects all carers of a patient with the actual patient. And using Artificial Intelligence it presents the most accurate care path for the patient by, amongst other things, steering the patient away from predictable risks. This way, medical teams are getting support in their decision-making regarding treatment. As a result, patients are healthier and care costs are significantly lower”, Katinka explains.

This system has been developed with the help of a team of medical specialists in the US. With the support of its investors, DEARhealth will be scaling up in the US and will start implementing programmes in Europe in the next two years.

flexibiliteit. Maar ook de internationale vestigingen van Epicenter zijn voor haar een groot pluspunt.

“DEARhealth is een digitaal platform dat alle zorgverleners van een patiënt en de patient zelf aan elkaar koppelt. Daarnaast stelt het door middel van Artificial Intelligence het meest accurate zorgpad voor de patiënt voor, onder andere door de patiënt weg te navigeren van te voorspellen risico’s. Zo krijgen medische teams ondersteuning in het nemen van behandelbeslissingen, is de patiënt gezonder en zijn de zorgkosten lager”, legt Katinka uit. Na de ontwikkeling door een team van medisch specialisten in Amerika is DEARhealth, gesteund door investeerders, de komende twee jaar bezig met schalen in de US en het starten van implementaties in Europa.

Epicenter Stockholm “Deze zomer zijn we gestart in Nederlandse en Belgische ziekenhuizen, vervolgens staat Zweden hoog op het wensenlijstje, vanwege het innovatieve nationale zorgsysteem. Toen ik dat vertelde tegen de medewerkers van Epicenter, ben ik gelinkt aan de vestiging daar. Dat heeft me enorm geholpen, er werd een hele kaartenbak opengetrokken, ik werd voorgesteld en gelinkt.

Ook ben ik meegeweest op een visit van Epicenter Amsterdam naar Epicenter Stockholm, waar start-ups uit beide landen pitches aan elkaar gaven. Het is uniek van Epicenter is dat ze je deze kansen geven. Het team kent alle members persoonlijk, ze weten wat je ambitie is en komen heel vaak met de vraag: heb je iets aan deze connectie? Dat helpt je echt verder.” Ook David Kat is erg blij met het team. “Ik vind het heel leuk dat ze niet alleen ontzettend aardig en professioneel zijn, maar ook met je meedenken. Als er gasten binnenkomen, worden ze op een aardige en betrokken manier ontvangen, dat schept vertrouwen.” Michel Spruijt voegt daar nog aan toe dat dat de sfeer in het gebouw en onderling nog beter maakt. “Het is hier altijd druk op een goede manier, het buzzt.”

Douwe Dirks, Country Manager Epicenter Amsterdam, is blij dat Epicenter een aantrekkelijke partner blijkt voor zo veel bedrijven.

“Innoveren en groeien gaat een stuk gemakkelijker als je onderdeel uitmaakt van de juiste community.

Epicenter Stockholm “This summer we started in Dutch and Belgian hospitals, and the next priority on our list is Sweden because of the country’s innovative healthcare system. When I told that to the staff here at Epicenter Amsterdam, they immediately put me in contact with their branch in Sweden. That helped me tremendously as the Swedish office opened a box of contacts with index cards and I was introduced to various companies. Moreover, together with people from Epicenter Amsterdam I went on a business trip to Epicenter Stockholm, where start-ups from both countries were pitching plans to each other. Offering people these opportunities is what makes Epicenter so unique. Their team knows all Epicenter members personally, they know what your ambition is and they often ask: ‘Is this connection useful to you?’ That really helps.”

Er was eens… een klassiek geschoolde bakker uit Frankrijk die verliefd werd op een Nederlandse dame. Sébastien en Susan Roturier popelden om de eerste Franse boulangerie in Nederland te openen, maar de bank geloofde er niet in. Ze kregen geen lening en hadden daardoor geen geld om personeel aan te nemen. Wonder boven wonder kwam Le Fournil de Sébastien in 2007 toch van de grond. En hoe! Buurtbewoners stonden vanaf dag één in de rij.

“Dat succes was leuk. Maar die periode was een drama!”, vertelt Sébastien. Hij had in die begintijd nog geen bakkers in dienst. Werkdagen duurden geregeld een uur of twintig.

En toen stond plotseling ook nog eens wijlen de gevreesde Johannes van Dam voor de deur in zijn illustere donkere pak en met hoge hoed. De man noemde zichzelf de beste culinaire journalist van Nederland en had de reputatie dat hij horecagelegenheden kon maken of breken.

Van Dam wilde weleens zien hoe het er bij de populaire bakkerij aan toeging. Gelukkig schreef hij een daverende recensie in Het Parool. De omzet steeg acuut met 30 (!) procent. Nu, ruim tien jaar later, heeft Le Fournil honderd medewerkers in dienst, verspreid over drie locaties in Amsterdam, Amstelveen en Hilversum.

La douce France Die recensie had overigens niet gehoeven. De geur van verse broden die zich over het Olympiaplein verspreidt, spreekt voor zich. Sommige klanten komen zelfs uit Apeldoorn wekelijks naar Le Fournil om hun brioches, pains spéciaux’ met olijven, abrikozen, vijgen of knoflook halen.

Dikwijls nemen ze meteen een paar macarons en citroentaartjes mee, want Le Fournil verkoopt ook heerlijke patisserie.

Sébastien: “Het is hier net als in Frankrijk. Kinderen rennen naar binnen en klimmen meteen op het bankje om door het glas naar de bakkers in de productiekeuken te kijken. Ik ben blij met die ramen, want zo zien de klanten niet alleen het ambacht, maar ook hoe druk de bakkers daarmee bezig zijn…”

En inderdaad. In de keuken benen de bakkers driftig heen en weer en wordt er uitsluitend in het Frans gesproken.

Immers, alle medewerkers komen uit Frankrijk.

Een goede baguette is kunst Volgens een recente aflevering van het televisieprogramma Keuringsdienst van Waarde, maakt slechts 1 procent van de Nederlandse bakkers zijn eigen croissants zelf. Sébastien: “Dat klopt. Bijna alle bakkers gebruiken halffabricaten en kant-en-klare mixen. Maar zo hoort het niet. Daarom Lees verder op de volgende pagina

Once upon a time… there was a traditionally trained baker from France who fell in love with a Dutch woman. Soon after, Sébastien and Susan Roturier decided they wanted to open the first French boulangerie in the Netherlands but the bank had no faith in their plan and refused them a loan. Still, they somehow managed to set up Le Fournil de Sébastien in 2007. And with instant success! Locals were queuing up from day one and the French bread and pastry were selling like hot cakes…

“That success was nice but the whole period was very tough!” Sébastien says. In the early days, he didn’t have any staff and he was working twenty (!) hours a day.

And to make matters worse, the much-feared Dutch culinary critic, the late Johannes van Dam wearing his trademark dark suit and hat, dropped by. Van Dam was the self-proclaimed top culinary journalist in the Netherlands and had the reputation he could make or break a business.

Van Dam was curious to see how they went about things in this popular bakery. Fortunately, he wrote a glowing review in the Amsterdam newspaper Het Parool and overnight the bakery’s sales jumped by 30 percent. And now, more than ten years later, Sébastien employs one hundred people in his three Le Fournil bakeries in Amsterdam, Amstelveen and Hilversum.

La douce France Not that Sébastien really needed that review: the smell of freshly baked bread spreading over the Olympiaplein was already speaking for itself. These days, some customers even drive to Le Fournil from faraway places such as Apeldoorn to buy brioches and pains spéciaux with olives, apricots, figs or garlic.

Usually, they also get themselves some macarons and lemon cakes – Le Fournil also sells excellent patisserie products.

Sébastien: “It is just like in France: children running inside and climbing up the bench, peeking through the windows to see the bakers in action in the kitchen.

I’m really happy with those windows as it allows the customers to see our craft but also how much work it actually involves…”

We look into the kitchen and, yes, we see people being very busy, communicating in French as all the bakers at Le Fournil are recruited from France.

The perfect baguette is a piece of art According to a recent episode of the Dutch TV programme Keuringsdienst van Waarde (‘Food Unwrapped’), only 1 percent of all Dutch bakeries actually make their croissants themselves. Sébastien: Zuidas. magazine 63

zijn baguettes en croissants voor mij ook het moeilijkst om te maken. We produceren ze van A tot Z helemaal zelf. Met slechts een paar basale grondstoffen. Zout, zuurdesem... en het Tradition Française-meel, natuurlijk.”

Dat Tradition Française-meel is zowat een heilig goedje uit Frankrijk, als we het mogen geloven. “Dit moet aan allemaal strikte wettelijke eisen voldoen en wordt gemaakt zonder ‘trucjes’ zoals broodverbeteraars. Dus de kwaliteit is ieder jaar weer anders. Daar moeten we op inspelen. (Sébastien pakt een baguette, red.) Kijk, deze is scherp, knapperig en gebruind van buiten. Van binnen moet deze zacht en luchtig zijn. Geen sponsbrood, zoals in de supermarkt.”

“En vergeet de aroma’s niet. Daarvoor moet het deeg lang rijzen, tussen de 18 en 24 uur… Dus vanaf twee uur ’s nachts staat hier altijd wel iemand een dienst te draaien. Er komen geen machines aan te pas. Dat is hard werken, maar dat is het ambacht. Ik ben er trots op. Net als het feit dat we alleen vloeibaar zuurdesem gebruiken, wat beter is voor de spijsvertering.”

Met een broodje lopen “De gemiddelde Nederlander – en vooral de bewoner van Amsterdam-Zuid – is op veel plekken geweest en weet dus ook veel van smaken”, vertelt Sébastien.

“Jullie zijn allang geen half-zes-eters meer. De stad loopt over van de delicatessenwinkels. De Franse en Italiaanse kazen liggen voor het grijpen. Ik vind het wel leuk dat de croissants hier zo populair zijn. In Frankrijk dippen we deze ‘s ochtends in de koffie of we eten ze tijdens het zondags ontbijt, maar de Nederlanders eten ze zowat de hele dag door. Ik vind het ook leuk als ze dan ’s avonds weer terugkomen voor een baguette. Want gelukkig weten steeds meer mensen hoe lekker een goed brood smaakt bij het diner en met een mooi glas wijn.”

Voor cateringopdrachten van hotelketens of andere grootschalige organisaties, heeft Sébastien beleefd bedankt. Net als een aanbod om jurylid te worden in het populaire tv-programma Heel Holland Bakt. “Ik wil absoluut geen showman worden. Of uitbreiden met een keten. Drie zaken is al meer dan zat. Worden het er meer, dan kan ik de kwaliteit moeilijker waarborgen. Ik wil hoogstens dat we bij Le Fournil alleen maar beter worden in het vak. En natuurlijk de nieuwe generatie bakkers de wijsheid bijbrengen. Ik heb het wiel ook niet uitgevonden, ik heb de kneepjes ook aangeleerd gekregen van de meesters. Die cyclus moet zich voortzetten. Vakmanschap moet in leven blijven.”

“That’s right: nearly all of these bakeries use semifinished products and ready-to-bake mixes. But it shouldn’t be that way. To me, making baguettes and croissants is the toughest job there is as we do every step in the baking process ourselves. We only use a handful of basic ingredients: salt, sourdough... and the Tradition Française flour, of course.”

This special flour is a nigh sacrosanct product imported from France. “The Tradition Française flour has to comply with very strict regulations and must be made without any ‘tricks’ such as bread improvers. This means the quality varies from year to year and we need to adapt to that.” Sébastien takes a baguette in his hand and says: “Look, this bread has a nice brown crust and inside it is soft and airy, totally different from the sponge-like French bread sold in supermarkets.”

“And don’t forget the aroma. To achieve that distinctive smell and taste, the dough needs to rise a long time: between 18 and 24 hours. So from two o’clock in the morning, there’s always someone keeping an eye on it. We don’t use any machines. It’s hard work but this is our craft and I’m really proud of it. Another big difference is that we only use liquid sourdough as that is better for digestion.”

All-day croissants “Most Dutch people – especially those living in Amsterdam-Zuid – are well-travelled and know a lot about different tastes,” Sébastien explains. “This is no longer a country of potato eaters. There are lots of delicatessen in town, with an abundance of French and Italian cheeses for sale. I like the fact that croissants are so popular over here. In France, we dip a croissant in our coffee in the morning or we eat them at breakfast on a Sunday, but the Dutch seem to be eating them all day. And I love it when they come back for a baguette in the evening. Thank heavens, more and more people know how wonderful a nice piece of bread tastes with dinner and a good glass of wine.”

Sébastien firmly but politely declines catering jobs for hotel chains or other large organizations. And he also turned down the offer to become a member of the jury in the popular TV show Heel Holland Bakt (‘The Great Dutch Bakeoff’). “I really don’t want to become a showman or start a franchise. Three bakeries is more than enough. If I were to open a few more, it would be very hard to guarantee the same quality. The only thing I want to do is to raise the bar at Le Fournil and pass on my knowledge to the new generation of bakers. I didn’t invent the wheel, the old masters taught me their tricks of the trade. To me, that cycle should continue in order to keep our craftsmanship alive.”

Martijn van Herwijnen is co-owner of bespoke suits store Sarto Undici. In his column, he offers tips and discusses the latest trends in men’s fashion.

DANDY OF DENIM? Als ik over de Zuidas loop, herken ik drie types. Het klassieke driedelige kostuum, bij voorkeur in het grijs. Mannen op leeftijd met vast hele belangrijke banen.

Dan ontmoet je de ‘dandy’, de man met een mooi jasje, chino, bijpassend shirt en mooie accessoires: een fleurig pochet, goed horloge, luxe leren tas. Een man met smaak, die het leuk vindt om er goed uit te zien. De derde groep is sterk in opkomst: eerst droegen zij gewoon een gewoon pak, maar zijn nu overgestapt op jeans, bij voorkeur bij dat witte of blauwe hemd dat eerst onder zijn pak zat. Misschien zit ik er naast, maar ik denk dat deze man ‘dandy’ een scheldwoord vindt.

Voor mij, als co-owner van de maatpakkenwinkel Sarto Undici is het duidelijk: dandy is absoluut geen scheldwoord. Het is van oorsprong de benaming van een man die om zijn uiterlijk geeft, maar zich ook niet al te serieus neemt.

Ons kleedgedrag verandert - is dat erg?

Niet per se. Wat wel erg is dat je er niets om geeft hoe je er uit ziet, dat je je pak aan hebt als een buschauffeur. Te lang, te groot, te breed en te kleurloos, zonder fantasie gecombineerd. Of altijd maar een jeans aan met een jasje, het zogenaamde nieuwe uniform. Het kan zoveel beter, het kan zoveel smaakvoller.

Hoe makkelijk kun je er niet veel beter uit zien?

Once upon a time, things were so easy: a dark-grey or blue suit, worn with a blue or red tie. This used to be a winning combination, but not anymore.

When I’m walking around the Zuidas, I see three stereotypes. First, the classic three-piece suit, preferably grey, worn by men of a certain age with important jobs. Then there is the ‘dandy’, wearing a nice jacket, chinos, matching shirt and the right accessories: a colourful pocket square, nice watch, leather briefcase.

He’s a man of taste who likes to look good.

But there’s also a third category and their numbers are growing: men who used to wear a normal suit but switched to jeans and a white or blue shirt they previously wore with their now-discarded suit. Maybe I’m wrong but my guess is that this type of man considers ‘dandy’ an offensive word.

To me, as co-owner of bespoke suits store Sarto Undici, the word dandy has no bad connotation at all. Originally, it signified a man who cared about his appearance but did not take himself too seriously.

The way we dress keeps changing and that’s not necessarily a bad thing.

What is bad, however, is not caring how you look, wearing your suit like a bus driver: too long, too big, too wide, lacking colour and imagination. Or simply going for the trusted jeans and jacket combo, the so-called “modern uniform”. With a bit of effort we can all look so much better and more stylish.

Isn’t it pretty easy to look a lot better?

Mijn tip voor alle mannen is simpel: daag jezelf een klein beetje meer uit. Een klein beetje meer dandy en veel minder jeans.

My tip for all men is straightforward: challenge yourself, throw out the jeans and release your inner dandy.

Roberto Payer behoort tot de beste hoteliers ter wereld, een prestatie van formaat. Hij heeft niet alleen het Hilton Hotel in Amsterdam op de kaart gezet, maar realiseerde vijf jaar geleden ook nog eens het Waldorf Astoria aan de Herengracht en runt sindsdien beide hotels.

Roberto Payer is one of the best hoteliers in the world, a formidable achievement. Not only did he manage to put the Amsterdam Hilton Hotel firmly on the map, five years ago he also opened the Waldorf Astoria at Herengracht and he has been running both hotels ever since.

Is er een Italiaan die meer verknocht is aan Amsterdam dan Roberto Payer, de general manager van zowel Hilton Hotel als Waldorf Astoria? Daar is weinig kans op. “Ik heb alles gevonden in Amsterdam. Het is de stad die mij gelukkig heeft gemaakt. In Amsterdam heb ik de liefde gevonden. Of ik ooit terug ga naar Italië? Ik wil begraven worden in Amsterdam!”

Roberto Payer (69) is net terug uit Toscane, waar hij een huis heeft. Italië mag dan het land zijn waar hij geboren is, gemijmer over de geweldige keuken, over de heerlijke wijnen of over het hechte familieleven komt niet over zijn lippen. Hij heeft op zijn negentiende voor Amsterdam gekozen en terug naar Italië hoeft Payer echt niet.

“Nee, dat ben ik zeker niet van plan.”

Uitdaging De vraag over teruggaan naar Italië is niet zo gek: Payer loopt tegen de zeventig en alle grote uitdagingen die op zijn pad kwamen, is hij ook aangegaan. Tegelijkertijd: er komt altijd weer een andere uitdaging.

Zoals het afronden van de derde restyling van het Hilton Hotel, sinds hij er in 1992 general manager van werd. “Dit jaar volgt nog de lounge, dan is alles klaar.”

Of het Waldorf Astoria aan de Herengracht, dat in 2014 opende. “Na zo’n opening kun je stoppen, ja, maar dat vond ik niet fair. Ik wilde ook laten zien dat het vervolgens goed kan draaien, dus ben ik gebleven. En nu gaat in 2021 het Rosewood Hotel in Amsterdam open en ben ik heel benieuwd hoe dat zich verhoudt tot het Waldorf. Dat is mijn grote probleem: er komt altijd weer wat langs. Wanneer moet je stoppen?”

Is there an Italian who loves Amsterdam more than Roberto Payer, general manager of the city’s Hilton and Waldorf Astoria hotels? Probably not. “I found everything in Amsterdam. It’s the city that made me happy and still does. In Amsterdam I fell in love. Will I ever move back to Italy? No way, I want to be buried in Amsterdam!”

Roberto Payer (69) just got back from Tuscany, where he owns a house. Italy may be the country where he was born, but you won’t hear him wax lyrical about its cuisine, the delicious wines or the closeknit family ties. Payer has been living in Amsterdam since he was nineteen and he doesn’t feel the urge to go back to Italy.

“No, that’s certainly not my intention.”

Challenge The question about moving back to Italy is not as inappropriate as it may seem. After all, Payer is nearing his 70th birthday and he feels he has seen everything under the sun during his long career. Then again, there is always a new challenge around the corner, like completing the third restyling project of the Hilton Hotel since he became general manager in 1992. “This year we’ll finish the lounge and then everything is done.”

Another challenge was the Waldorf Astoria Hotel which opened its doors at the Herengracht in 2014. “After the opening I could have stopped working but I didn’t think that would’ve been fair. I wanted to show people I could manage a luxury hotel, so I stayed on. In 2021, the Rosewood Hotel will open in Amsterdam and I’m very curious to see how it will turn out compared to the Waldorf. That is my big problem: there is always something else to do. When should I call it a day?”

Op uitnodiging van Virtuoso, een netwerk van 1.000 reisbureaus waar 17.500 adviseurs in 35 landen goed zijn voor een omzet van 23,7 miljard dollar in luxe reizen, woont hij het event bij waar tevens het beste hotel wordt gekozen. Uit Amsterdam zijn er behalve Waldorf Astoria ook het Amstel, De L’Europe, The Grand, het Conservatorium Hotel en het Pulitzer vertegenwoordigd.

Best hotelier After this interview, Payer will fly to Las Vegas to attend the award ceremony for the best hotelier in the world. Virtuoso, a network of 1,000 travel agencies employing 17.500 travel advisors in 35 countries with an annual turnover of 23.7 billion dollars in luxury travel, has invited him to attend this prestigious event where there will also be an award ceremony for the best hotel in the world. “Ik verblijf er drie dagen en heb iedere dag 80 afspraken, plus lunches, aperitief en (gala)diners. Dat is echt hard, maar leuk, werken. Het belangrijkste voor mij is de verkiezing van het beste hotel ter wereld. The best of the best. Dat zou de kroon op mijn carrière zijn. Het Waldorf behoorde al eerder tot de beste vijf; dat is wel leuk, maar niet goed genoeg. Ik ben er een paar weken ziek van geweest.

Ik kan totaal niet tegen verliezen, ik wil winnen! Als een gast zegt dat hij het hotel niet goed vindt, kan ik er niet van slapen.”

“I’ll be staying for three days and I have around 80 appointments every day, plus lunches, social drinks and gala dinners. That is hard work but good fun. The most important thing for me is the Hotel of the Year Award.

The best of the best. That would be the crown on my career. The Waldorf has already made the top-5; that is nice but still not good enough. For a few weeks I was sick of not getting the no. 1 spot. I simply hate losing, I want to win! If guests tell me they don’t like our hotel, I don’t sleep at night.”

Beste vijf hotels Inmiddels behoort het Waldorf wederom tot de beste vijf hotels van de wereld, maar veel effect op wat hij verder gaat doen, zal het niet hebben.

Hij houdt gewoon veel te veel van zijn werk en van Amsterdam om er mee op te houden. Op zijn negentiende kiest hij na de hotelschool in Italië bewust voor Nederland; sinds zijn achtste droomt hij ervan om ooit directeur van een hotel te worden.

Five best hotels The Waldorf may be one of the five best hotels in the world, but that won’t have much of an impact on what Payer is going to do next. He loves his job and Amsterdam too much to stop working. After graduating from hospitality business school at age nineteen, he applied for a job in the Netherlands. Since he was eight years old he had been dreaming of becoming general manager of a hotel.

“Ik heb alleen maar leuke dingen in Amsterdam meegemaakt. Toen ik hier kwam in 1969, woonde ik in de Jordaan en kende er de groenteman, de garnalenpelster, de poelier, ik was er kind aan huis. De Jordanezen waren dol op Italianen. Het was fantastisch!”

“I’ve only experienced nice things in Amsterdam. When I came here in 1969, I lived in the Jordaan area and I knew the local greengrocer, the shrimp seller, the poulterer. I really felt at home; the people in the Jordaan loved Italians. It was great!”

Culturele opvoeding Klassieke muziek leert hij kennen door dirigent Bernard Haitink – ‘hij heeft mijn ogen geopend, vooral voor de muziek van Mahler en Bruckner’ –, in het Concertgebouw is hij kind aan huis. Beeldende kunst neemt Payer tot zich in het Stedelijk Museum. “In de jaren zeventig was het Stedelijk voor mij de basis voor mijn culturele opvoeding. Ik was er iedere zondagmiddag te vinden. Nog steeds geldt voor mij dat ik niet kan leven zonder het Concertgebouw, zonder de opera en zonder mijn drie musea: het Rijks, het Van Gogh en het Stedelijk.”

Amsterdam mag Payer dan veel gegeven hebben, hij geeft zelf ook veel terug. De Haringparty in de tuin van het Hilton bijvoorbeeld, elk jaar weer een enorm succes en zijn eigen idee. Of het Tulp Festival, waar hij voorzitter van is. Dan is hij verder nog president-commissaris van kunstbeurs PAN en voorzitter van het Chocoladefestival, benevens diverse andere bestuursfuncties, waaronder bij hotelopleidingen.

“Ik heb een relatie en die geeft mij de ruimte om te doen wat ik belangrijk vind; ik vind dat ik iets moet terugdoen voor de gemeenschap.”

Overtuigen Hij heeft ook een belangrijk aandeel gehad in de komst van het Waldorf Astoria in de stad. Het Hiltonconcern, waar het topluxe hotel onderdeel van is, zag Amsterdam aanvankelijk niet zitten. Payer heeft hen weten te overtuigen. Glunderend: “Het is er door mij gekomen.”

Het heeft er toe geleid dat welgestelde reizigers eerder Amsterdam aandoen en de gemiddelde luxurygast besteedt al snel vijf- tot tienduizend euro binnen drie dagen. “Dat geven wij ook terug aan Amsterdam.” Lady Gaga, koning Mohammed van Marokko, Keith Richards, Michelle Obama en Leonardo Dicaprio verbleven er, al hoor je dit uiteraard niet uit zijn mond.

Niet consequent Payer mag dol zijn op Amsterdam, kritiek op zijn stad schuwt hij zeker niet. Al jaren betoogt hij dat Amsterdam een wethouder toerisme zou moeten hebben. “Er gaat 240 miljard euro in het toerisme om en er is niemand die hier echt op stuurt!” En er is meer dat hem dwars zit. “De stad heeft AirBnB toegelaten, maar over de consequenties heeft niemand nagedacht. Amsterdam telt meer dan een miljoen fietsen en die kosten de stad aan weghalen en zo, heel veel geld; laat iedere fietser een tientje betalen en doe hier mooie dingen mee voor de stad. Het ontbreekt aan consequent beleid.”

Cultural education Famous conductor Bernard Haitink introduced him to the world of classical music – ‘he opened my eyes, especially for Mahler and Bruckner’ – and Payer is a regular visitor to the city’s Concert Hall. For contemporary art he heads to the Stedelijk Museum. “In the seventies, the foundation for my cultural education was laid in the Stedelijk. I went there every Sunday afternoon. I really cannot live without the Concert Hall, the Opera and my three museums: Rijksmuseum, Van Gogh Museum and Stedelijk Museum.”

Amsterdam may have given Payer a lot, he himself has certainly given back to the city in equal measure. For example, he launched the Herring Party in the garden of the Hilton Hotel – a huge success every year. And he is chairman of the Tulip Festival, president of the supervisory board for the PAN Art Fair and chairman of the Chocolate Festival, plus he holds various other positions on boards and commissions. “I’m in a relationship and my partner gives me room to do what I find important. I really feel I need to give back to the community.”

Convincing Moreover, he was instrumental in bringing the Waldorf Astoria to this city. The Hilton concern, owner of the Waldorf Astoria, initially didn’t want to open a luxury hotel in Amsterdam. Payer managed to convince them.

“The Waldorf Astoria is here because of me,” he says, beaming.

The Waldorf has caused an upturn in the number of wellheeled tourists visiting Amsterdam. The average luxury guest spends five to ten thousand euros in three days.

“That’s what we give back to Amsterdam.” Lady Gaga, King Mohammed of Morocco, Keith Richards, Michelle Obama and Leonardo Dicaprio all stayed here – not that Payer would ever confirm this as discretion is his middle name.

No consistent policy Payer may be fond of Amsterdam, he doesn’t shy away from criticizing his adopted hometown. For many years he has been saying that Amsterdam needs to appoint a councillor for tourism. “The turnover in the city’s tourism sector is 240 billion euros and town hall doesn’t even have one dedicated manager focusing on this industry!”

And there are other things bothering him as well. “The city let AirBnB in, but nobody thought about the consequences. And there are more than a million bicycles in Amsterdam and they cost the municipality a fortune – providing bicycle racks, removing them, etcetera. I would say: charge every bike owner a tenner and use this money to do nice things for our city. There is just no consistent policy.”

Maar voor alles is Payer hotelier in hart en nieren. “Een hotel staat of valt met de sfeer die je creëert. Waarom zijn gasten bereid om 1.200 euro of meer te betalen voor een overnachting in het Waldorf Astoria? Ze komen voor een geweldige ervaring en voor de enorme service. Alles moet kloppen. Ik heb een script, waardoor iedere medewerker precies weet wat er moet gebeuren vanaf het moment dat een gast arriveert in het hotel, tot aan het moment dat hij naar de kamer gaat. Dat is de ultieme service.”

Vreselijk boos En voor minder doet het Payer het ook niet. “Ik kan vreselijk boos worden als de portier niet goed opgesteld staat naast de auto van een gast die arriveert. Doe je de deur open, dan sta je rechts; vervolgens laat je de deur los en ga je aan de linker kant staan en houd je je arm tegen de boog van de ingang, om te voorkomen dat de gast z’n hoofd stoot.

Gebeurt dat niet, dan spreek ik die medewerker er meteen op aan, en ik wacht niet tot morgenochtend, nee.”

Om dit hoge serviceniveau te realiseren beschikt het Waldorf over 200 medewerkers voor 93 kamers. Ter vergelijk: het Hilton telt 220 medewerkers voor 271 kamers. “Het Hilton is meer een zakelijk hotel, de Zuidas is de kern van onze business.” Elk hotel heeft een andere sfeer. “Ik houd erg van stijl. Ik ben niet geïnteresseerd in trends, die volg ik niet, die gaan dood. Ze duren maximaal 6 of 9 maanden, dan is het over. Restaurant Roberto’s (klassiek Italiaans restaurant in het Hilton hotel-red) bestaat 25 jaar, hoeveel restaurants in Amsterdam kunnen dat zeggen?”

Puur eten Je zult Payer sowieso niet snel aantreffen in een ander type restaurant. “Ik wil puur eten en niet dat ermee gespeeld wordt. Probeer maar te koken, dat is al moeilijk genoeg.

Er zijn niet zoveel koks als onze twee-Michelinsterrenchef Sidney Schutte die echt fantastisch kunnen koken. Ik wil gewoon lekker eten; poespas op het bord interesseert mij niet. Ik ben gek op lever met spek en uitjes, dat eet ik bij Myrabelle (eet- en drinkcafé in Amsterdam-red).”

Pretenties zijn hem vreemd, zegt hij zelf. “Niemand is geïnteresseerd in mij. Gasten komen voor een beleving. En als directeur ben je in principe niks. Je team bepaalt ieder moment van de dag wie je bent.” Als een echte Italiaanse familie eet het personeel in het Waldorf iedere dag aan één hele grote tafel. “Ik ga zitten waar een plek vrij is en dat kan naast de bordenwasser zijn of het kamermeisje. Die relatie onderhouden vind ik heel erg belangrijk. Ik kan alles tegen hun zeggen, maar tegelijkertijd: kom niet aan mijn team.

Dan wordt Roberto Payer een hele vervelende man.”

But above all, Payer is a hotelier through and through.

“The atmosphere you create with your team makes or breaks your hotel. Why are guests willing to pay 1,200 euros or more for a night in the Waldorf Astoria? They come here for a wonderful experience and for the tremendous service. Everything has got to be perfect.

I have a script, so each staff member knows exactly what needs to be done from the moment the guest arrives at the hotel entrance until the guest goes to his or her room. That is the ultimate service.”

Incredibly angry And Payer won’t go for second best. “I can get incredibly angry if the doorman is wrongly positioned when a guest arrives by car. When you open the door, you are at the right-hand side; then you release the door handle and move to the left-hand side and keep your arm against the arch so the guest won’t bang his head.

If my employees don’t follow the correct procedure I’ll let them know I’m unhappy, and I won’t leave it till the next day.”

To achieve this very high level of service, the Waldorf has 200 employees for 93 rooms, whereas the Hilton has 220 employees for 271 rooms. “The Hilton is a business-oriented hotel, mainly serving people visiting the Zuidas.”

Each hotels has its own atmosphere. “I really love style.

I don’t care about trends and I don’t follow them. They always simply die out. They last 6 or 9 months max, and then it’s over. Roberto’s, the classic Italian restaurant inside the Hilton Hotel, has been in business for 25 years.

How many restaurants in Amsterdam can actually say the same?”

Pure food And it would be unusual to see Payer in a different type of restaurant. “I want pure food and I don’t like people toying with my meal. Try cooking something nice, that’s difficult enough. There aren’t many chefs who can really create a fantastic meal like Sidney Schutte, our chef and proud owner of two Michelin stars. I just want to eat very good food; no ostentatious stuff, please! I love liver with bacon and onions, a dish I regularly eat at Myrabelle (a cafe and restaurant in Amsterdam).”

He says he’s totally unpretentious. “Nobody is interested in me. Guests come here for an experience. And the general manager of a hotel is really nothing without his team: they decide who you are – every moment of the day.” Like a real Italian family all the employees of the Waldorf eat together at a big table every day. “I’ll sit wherever there is a chair available and that could be next to the dishwasher or the chambermaid. It’s really important to maintain that relationship. I can be tough with them, but at the same time: If you dare touch my team, Roberto Payer turns into a very nasty person.”

Wie Circl binnenloopt, komt ofwel Marijn Muller tegen, of ziet er een van de meubels van zijn bedrijf Cartoni Design, die er uitgestald staan. Circulair staat centraal in alles dat Marijn onderneemt en uitdraagt.

In Den Haag waar Marijn Muller opgroeide, werd hij de jongen met die hond en met die gekleurde kleding genoemd. Daar is in al die jaren niets in veranderd. “Onbewust heb ik een vaste stijl. Ik draag veel roze lamswollen truien en roze shirts. Voor meer officiële gelegenheden heb ik altijd een tweed jasje bij me. Ik voel me er comfortabel in.”

“Ik sprak laatst een vriendin van de middelbare school en die zei tegen me dat ik helemaal niets veranderd was. Tot de Ray Ban Wayfarer van de Blues Brothers aan toe, die ik ook nog steeds draag.”

Visitors entering Circl are likely to come across Marijn Muller or a piece of sustainable furniture from his company, Cartoni Design. Circular is keyword to what Marijn does and stands for.

Marijn grew up in The Hague and was soon known as ‘that boy with the dog and the colourful clothes’.

And that hasn’t changed in all these years. “I guess I just have my very own style: I like to wear pink shirts and pink jumpers made of lambswool. For more official occasions I always take a tweed jacket with me. It makes me feel comfortable.”

“Recently, I talked to a highschool friend and she said that I haven’t changed one bit. I’m still wearing my Ray Ban Wayfarer, the classic Blues Brothers sunglasses.”

Het is tevens een statement van Marijn om te laten zien dat hij meer tegen de creatieve industrie aanschuurt, dan al die andere bedrijven op de Zuidas. “Met Cartoni Design laten we zien dat esthetiek en duurzaamheid samen kunnen gaan. Nog maar vier jaar geleden vroeg men zich echt af of dit wel kan en nu zie je dat iedereen ermee bezig is. Een bedrijf dat duurzaamheid niet op z’n netvlies heeft, is out of business.”

Marijn also uses his outfit as a statement to show that he is closer to the creative industry than the other companies at Zuidas. “With Cartoni Design we show that aesthetics and sustainability can go hand in hand. Only four years ago, people were wondering if this was actually possible and now everyone is doing it. A company that is not looking at sustainability, is doomed and will soon be out of business.”

Marijn adviseert de ABN Amro op het gebied van interieurinrichting, houdt daarom ook kantoor bij de bank en laat in Circl – het circulaire paviljoen van ABN Amro - voorbeelden zien van wat mogelijk is. “De hele wereld komt hier langs. Ontwerpers, architecten, een bedrijf als DSM. Ik connect ze, houdt voordrachten, organiseer exposities. Er wordt veel kennis gedeeld, dat is mooi, want niemand heeft de oplossing voor een echt circulaire samenleving.”

Marijn gives ABN Amro advice on interior design, that’s why he holds office in Circl – ABN Amro’s circular pavilion – and exhibits durable and innovative solutions here. “The whole world visits this place: designers, architects, large companies like DSM. I connect them, give presentations, organize exhibitions. There is a lot of knowledge sharing and that’s a good thing because no-one has yet found the perfect way to create a real circular society.”

In dit digitale tijdperk ligt de wereld aan onze voeten. Toch kennen we allemaal wel het eindeloos zoeken en speuren naar bijvoorbeeld het, in onze ogen, ideale hotel. En als we die ‘droomplek’ dan eindelijk hebben gevonden, blijkt het volgeboekt of, erger nog, in werkelijkheid helemaal niet te lijken op die perfecte plaatjes die op de website te zien zijn.

Marianne Kuiper, eigenaresse van het bedrijf Efficient Hotel Partner, biedt samen met haar team nog ouderwetse dienstverlening.

In het Oude Dorp van Amstelveen treffen we Marianne en haar 5-koppige team. Hier, aan de Badlaan nummer 1, zit al 21 jaar het sfeervolle kantoor van Efficient Hotel Partner, in het kort EHP. “Ja ja, eindelijk volwassen”, lacht Marianne. “Veel mensen vieren een 20 of 25-jarig jubileum, wij vieren deze volwassen leeftijd.”

Allereerst maar even een uitleg waar het bedrijf exact voor staat. “Wij regelen de meest geschikte accommodaties voor onze klanten”, legt de eigenaresse uit.

“Wanneer bedrijven op zoek zijn naar bijvoorbeeld een geschikte ruimte voor trainingen, bijeenkomsten, vergaderingen, brainstormsessies of congressen - met of zonder overnachting - dan nemen wij die zoektocht uit handen en zoeken de perfecte locatie. Alle vijf hebben we onze expertise en vullen elkaar zo mooi aan.”

Zorgeloos uitbesteden “Jacco Verschoor, onze enige man in dit gezelschap, komt uit de reiswereld en Jennifer Lam is door haar werk in grote hotels in Australië, onze expert op het gebied van complexe boekingen. Mieke van Middelkoop is ons creatieve brein en Mirna van Driel onze vraagbaak en uitvoer op financieel gebied. Zelf heb ik 15 jaar lang bij de Bilderberggroep gewerkt. Met elkaar werken we snel, doeltreffend en zoals onze naam al doet vermoeden, efficiënt. Wat heel erg helpt: we hebben heel veel plezier in ons werk. En dat merkt de klant. Onze beloning? Dat is, hoe afgezaagd het ook mag klinken, een blije klant. En een blije klant komt terug.”

Vandaag de dag is alles vanuit de luie bureaustoel te regelen via online platforms, zoals Booking.com en Trivago. Waarom hebben bedrijven Efficient Hotel Partner dan nog nodig? “Als een secretaresse de vraag krijgt een mooie locatie voor een brainstorm te boeken, met of zonder overnachting, voor een groep van 20 of 200 medewerkers, dan gaat ze op zoek en begint te googelen. Ze heeft waarschijnlijk zelf wat ideeën en haar collega’s ook. Dan begint het mailen. Is de locatie beschikbaar op de gewenste dag, dan worden de offertes opgevraagd en het plan voorgelegd aan de baas. Misschien moet er ook nog wel iets leuks op het programma staan, een fiets- of boottocht met gids, een dagje schapenscheren. Ook dat moet worden uitgezocht, prijzen worden opgevraagd. Een heidens én tijdrovend karwei.”

In the digital age the world is at our feet. Yet we all know how long it can take the find the perfect hotel. And once we’ve managed to get that ‘dream spot’ we soon find out it’s either fully booked or – even worse – it’s nowhere near as perfect as the pictures on the website suggested. Together with her team, owner Marianne Kuiper of Efficient Hotel Partner provides a good old-fashioned travel service.

In Amstelveen’s Oude Dorp area we meet Marianne and her 5-strong team in the stylish office that has been the home of Efficient Hotel Partner (EHP) for 21 years now. “Yeah, we’ve finally grown up”, Marianne laughs. “Many people celebrate being 20 or 25 years in a certain business, but we liked the idea of celebrating the age of maturity for EHP.” First things first: what does Efficient Hotel Partner do exactly? “We arrange suitable accommodation for our clients”, she explains. “Whenever companies are looking for a venue to hold a training course, meeting, brainstorm session or a congress – with or without overnight stay - we help them find the location that’s perfect for their needs. Every one of us here is specialized in a certain field so we really complement each other.”

Carefree outsourcing “Jacco Verschoor, the only man in our team, is a travel industry veteran and Jennifer Lam, who has worked for large hotel chains in Australia, is our expert in complex bookings. Mieke van Middelkoop is the creative mind and Mirna van Driel is our source of information and financial expert. As for me, I worked for the Bilderberg Group for 15 years. Together we operate in a fast, effective and, as our name suggests, efficient manner. Above all, we really love our jobs and our clients can feel that. Our reward? A happy client. And a happy client is someone who will definitely use our service again.” In this day and age everything can be arranged from our comfy chair using online platforms such as Booking.com and Trivago. So why should companies contact Efficient Hotel Partner? “When a secretary is asked to book a nice venue for a brainstorm session – with or without overnight stay – for a group of 20 to 200 people, she’ll start looking on Google. She probably has a few ideas and her colleagues will chime in as well. She’ll start emailing to see if the venue is available at the requested date, then she’ll ask for a few prices and presents the plan to her boss. Maybe the programme needs to contain a fun outing, like a guided bicycle ride, a boat tour, or sheepshearing. Again she’ll start looking around, asking for prices. It’s a hell of a task and very time-consuming.”

Een stem aan de andere kant van de lijn en iemand die vraagt naar je wensen. Én daarna luistert en handelt. Daar hebben mensen weer behoefte aan merken we. Na een periode van economische crisis en online boekingen, zien we dat er meer en meer vraag is naar persoonlijke service. Geen keuzemenu, niet do it yourself. We zijn in feite jouw Personal Assistent.”

“Vanaf de eerste dag hebben wij een solide reputatie en kennen het aanbod in Nederland als geen ander. We bezoeken vrijwel alle hotels en vergaderlocaties. We hebben een fantastische klantenkring opgebouwd waar we trots op zijn. Ons geheim? Wij houden van onze klanten en dat gevoel is wederzijds. Daar staan we om bekend en dat is ook de reden dat grote bedrijven als Nationale-Nederlanden en Henkel, maar ook Martin Garrix, zaken met ons doen. ” Creativiteit op scherp Zoveel bedrijven, zoveel medewerkers, zoveel wensen. Hoe krijgen jullie het voor elkaar om iedereen tegemoet te komen? “We ervaren vaak versnippering, 1.001 leveranciers, keuzestress. We structureren het boekingsproces, maken het makkelijker. En we vragen de klant het hemd van het lijf: wat is het budget, waar gaat de voorkeur naar uit: stad, platteland, kust? Moet de accommodatie of hotel goed bereikbaar zijn met het OV, moet je er goed (en betaalbaar) kunnen parkeren? Zijn er buitenlandse klanten bij die moeten worden opgehaald van Schiphol? Is de vraag eenmaal duidelijk, dan gaan we aan het werk. We stellen een paar locaties voor en maken offertes.

Ook handig, het facturatietraject wordt door ons uit handen genomen. Er is maar één leverancier en dat zijn wij.” Tijdens het interview voor dit magazine zitten we in de prachtig ingerichte vergaderlocatie, de Music Meeting Lounge. Een aparte ruimte, maar wel onder hetzelfde dak als EHP. Dit is het jongste kindje van Marianne. “Omdat ik het miste om gasten om me heen te hebben, ontstond het idee van een eigen vergaderlocatie. Een plek in het Oude Dorp op loopafstand van De Poel en het Amsterdamse Bos waar het woord gastvrijheid met hoofdletters wordt geschreven.”

Dit jaar is de Music Meeting Lounge uitgeroepen tot beste kleinschalige vergaderlocatie van Noord-Holland. Een mooie prijs. “Best wel knap in nog geen anderhalf jaar tijd toch?”

Your Personal Assistant What does EHP have to offer, other than what people can find out themselves? “Good old-fashioned service, personal contact. A voice listening to you at the other end of the line, someone asking you what you need and acting upon this information. We’ve noticed that people really want this. After a period of economic crisis and online bookings, there’s a growing demand for personal service. No phone menu, no ‘do it yourself’. You could say we are a kind of personal assistant to our clients.”

“From the very first day we’ve managed to build a solid reputation; we know the Netherlands inside out and we’ve visited virtually all hotels and meeting venues. We’ve built a great client base and we’re very proud of that. Our secret? We love our clients and that feeling is mutual. That’s our trademark and the reason why large companies like NationaleNederlanden and Henkel, but also DJ Martin Garrix, like to do business with us. ” Sharp and creative So many companies, so many employees, so many requirements. How do you manage to meet all their different needs? “People experience fragmentation; they have to deal with myriads of suppliers and suffer from choice overload. We structure the booking process, making it easier for them. And we ask our clients lots of questions: What is your budget?

What do you prefer: city, countryside, or the coast? Should the accommodation be easily accessible by public transport; is parking space required? Are there any foreign guests that need to be picked up from Schiphol Airport?

Once we know the ins and outs of their request we start our search and soon after we send them proposals for a few venues. Plus we do all the invoicing so the client only has to deal with one supplier: us.”

The interview for this magazine was conducted in a beautifully decorated room, the Music Meeting Lounge, at a separate location but under the same roof as EHP. This is Marianne’s youngest brainchild. “I really missed having guests around me so I came up with the idea of having our own meeting venue. A location in Amstelveen’s Oude Dorp, at walking distance from De Poel and the Amsterdamse Bos, where hospitality is written in capital letters.”

This year the Music Meeting Lounge was hailed as the best small-scale meeting venue in the province of Noord-Holland. A very nice award to receive. “Not bad, given that our Meeting Lounge only opened 18 months ago!”

Y uan’s Hot P ot

Wie bekend is met Chengdu Hot Pot, oftewel de echte Chinese manier van fonduen, komt helemaal aan z’n trekken in restaurant Yuan’s Hot Pot. Het lekkerste vlees, de fijnste vis en beste groenten kun je er zelf aan tafel klaarmaken. En voor wie dit een nieuwe manier van uit eten is, is het absoluut een geweldige beleving.

Meer in China dan in Yuan’s Hot Pot kun je je nauwelijks wanen in Amsterdam. Het restaurant in de Rijnstraat is niet alleen ingericht als een echt Chinees restaurant – houten tafels en bijzettafeltjes, Chinese prenten aan de muur, een strak en licht interieur, een Chinese zender op de tv aan het plafond – , zeker de helft van alle gasten in het stampvolle restaurant bestaat uit Chinezen.

Verder weten expats en gewone Amsterdammers Yuan’s Hot Pot inmiddels zo goed te vinden, dat het restaurant in november op het Marie Heinekenplein een tweede vestiging opent.

Echt Chinees eten En dat is niet zo gek, want hotpot is de populairste keuken in China. Het is een Chinese manier van fonduen, waarbij er een grote pan hete bouillon op tafel staat waarin je zelf vlees, vis en groente gaart aan bamboestokjes. Echt Chinees eten dus en in restaurant Yuan’s Hot Pot staat, zoals de naam al aangeeft, alleen maar hotpot op het menu.

Wat er allemaal te kiezen valt, zie je op de iPad die het uiterst vriendelijke personeel je aanreikt. En op de iPad doe je ook je bestelling, door gewoon het gerecht aan te klikken dat je wilt bestellen. Ook bijzonder: iedereen krijgt een schort, in plaats van een servet.

Those familiar with Chengdu Hot Pot, the Chinese equivalent of fondue, will find everything they could ever wish for at Yuan’s Hot Pot. Prepared with the delicious meat, the most delicate fish, and best vegetables by yourself at your table. For those who have not had this sort of dining adventure before, let me assure you: it is an absolutely great experience.

Yuan’s Hot Pot makes you feel like you are in China! Although located on the Rijnstraat in Amsterdam, the decor is identical to eateries in China: the wooden tables, wall decorations, sleek and light interior, and the Chinese TV station displayed on the ceiling.

Since expats and Amsterdammers have started to frequent Yuan’s Hot Pot, the owners have initiated a second establishment at Marie Heinekenplein, set to open its doors in November. This news is not surprising at all. Hot Pot is China’s most popular cuisine, and quickly becoming mine. It is the Chinese way of having a fondue. At your table you cook your meat, fish or vegetables in a large hot pot of broth or soup, using chopsticks.

Wear an apron In short, Yuan’s Hot Pot serves authentic Chinese food. As the name suggests, there is only Hot Pot on the menu. The helpful waiter will hand you an iPad on which you can browse the menu, make your choice of dishes, and order. Plus, everyone gets an apron rather than the more typical napkin.

Eendentong Je begint met het kiezen van een fonduebasis – spicy of niet. Wil je beide in dezelfde pan, dan kan dat ook, keurig half om half. Vervolgens kies je welk vlees je wil, en dat is nog niet zo makkelijk, want er is zoveel keuze!

Lamsvlees, varkensbuik, maar ook bijzondere dingen zoals eendentong, varkensnier en runderaorta.

Het aanbod vis is al net zo uitgebreid: tong, mosselen, garnalen, inktvis, krab, noem maar op. Natuurlijk ontbreekt kip niet en is er een groot variëteit van groenten, van allerlei soorten paddenstoelen, tot spinazie, watermeloen en kelp. Ook ontbreken tofu en rijst natuurlijk niet op de kaart. Wanneer je je drankje hebt aangeklikt, plaats je je de gehele bestelling, op de iPad. Prachtig geserveerd Nog geen minuut later staat letterlijk de ‘hotpot’ op je tafel te dampen. Het erg behulpzame personeel komt meteen met het eerste vlees aanlopen, prachtig geserveerd. Van de fonduebasis gaat een klein deel in een kommetje, dat je als soep eet. Als een amuse krijgen we ieder een garnalen dumpling, die we in de hotpot doen en al een paar minuten later kunt opeten. Om de tijd in de gaten te houden krijg je een zandlopertje met de tijden erop voor vlees, vis en groenten.

Binnen no time staat onze tafel vol met allerlei bakjes – eentje met koriander, uitjes en soja olie, een ander met pinda’s – en schaaltjes met paddenstoelen, kip, tong, lamsvlees en noem maar op. En de jasmijn thee natuurlijk, in een echte pot, want we willen wel in stijl blijven.

Vlak voor de open keuken staan schalen met verschillende sauzen die je zelf kunt pakken. Als extraatje krijgen we een schaaltje met springrolls, die we in ons enthousiasme ook in de hotpot onder dompelen, terwijl ze net uit de frituur komen…

There is a great variety of vegetables and bean products on the menu To begin, choose a spicy or mild broth. It’s alright if you want both in the same pot, you’ll get a nice 50/50 mix. Next, select the meat. That is easier said than done, because the selection is extensive. There is lamb and pork belly, as well as specialities like duck’s tongue, pork kidney and bovine aorta. What’s more, there’s an incredible selection of beautiful fish such as sole, mussels, shrimp, squid and crab, just to mention a few.

Great variety There is also chicken and a great variety of vegetables on the menu. There’s all kinds of mushrooms, spinach, winter melon, kelp, and don’t forget the tofu and rice. Eventually, you choose your drinks. Just one click more on the iPad and you have ordered your meal.

In less than a minute your steaming Hot Pot is served, instantly followed by a beautifully arranged dish of meat, brought in by the graceful staff. A small amount of fondue broth is served to the individual bowls for guests to enjoy as a soup, and each person gets a shrimp dumpling as an appetizer, which are cooked in the hot pot in only a few minutes. Thankfully, to keep track of time, we are given a little egg timer. Soon our table is filled with numerous small dishes - one with coriander, onions, soya oil another with peanuts - and bowls with mushrooms, chicken, sole, lamb and so much more. To complete it all in style we have a pot of aromatic jasmine tea.

In front of the open kitchen, there is a variety of sauces you can help yourself to. In addition, as a little treat, on a recent visit we were given a bowl of deep-fried spring rolls, which, by mistake, we put in the hotpot.

Market-leader That this establishment is related to a community of 400 restaurants in China, it is not surprising at all to find that this restaurant is extremely well managed. “Yuan’s Hot Pot opened its first restaurant, called Yuan’s Chuan Chuan Xiang in Chinese, in Chengdu in 1996,” manager Sen Sun tells me. “Ever since, Yuan’s has been a market-leader. In 2017, we opened our first restaurant outside China, in Vancouver, Canada, followed by this one in Amsterdam in 2018.”

Proof that this is an excellent spot is the queue of hungry arrivals waiting to be seated. Don’t forget to make a reservation! Chinese and non-Chinese expats, locals, the young and the old, everyone seems to know that Yuan’s is the place to be. Moreover, it is more than suitable for larger groups. This place is a true communal experience in an authentic atmosphere.

We over-ordered for sure, we couldn’t even finish everything. If our serving sounded a bit too meat-heavy for some of you, don’t be scared. At Yuan’s, there is a wide vegan and vegetarian range on the menu, including a separate broth.

For dessert, we had vanilla ice cream and delicious Illy coffee.

Marktleider Als we om ons heen kijken, zien we een goed en strak geleid restaurant, en dat is niet zo gek als je weet dat het deel uitmaakt van een groep die 400 restaurants in China telt.

“In 1996 opende de eerste Yuan’s Hot Pot - Yuan’s Chuan Chuan Xiang in het Chinees - restaurant in Chengdu,” vertelt bedrijfsleider Sen Sun. “Sindsdien is Yuan’s marktleider gebleven en openden we in 2017 in Vancouver, Canada, het eerste restaurant buiten China. In juni 2018 volgde het tweede restaurant, in Amsterdam.”

Dat dit een goede zet is geweest, kun je aflezen aan de rij mensen die buiten staat te wachten om te kunnen eten.

Reserveren is echt aan te bevelen. Chinezen, expats, Amsterdammers, jong en oud, iedereen weet Yuan’s te vinden.

Ook voor groepen is het restaurant erg geschikt: omdat je zelf je eten klaar maakt als het ware, is het samen met de typisch Chinese sfeer echt een belevenis. Intussen doen wij ons tegoed aan pittige kip, echt erg lekker, tong, spinazie, krab en lamsvlees. De rijst en tofu laten we ongeroerd, want gek genoeg vullen al die verschillende gangen sneller dan je zou verwachten. Tegelijkertijd is het natuurlijk supergezond: de groenten (spinazie, broccoli, zoete aardappel, zeewier, kool, pompoen, mais) zijn binnen een paar minuten gaar. Wonen en werken op de Zuidas, Lisette Vriend combineert beide.

“Buitenveldert en de Zuidas ademen een hele prettige sfeer waar ik gelukkig van word. En het is alleen maar mooier, hipper en gezelliger geworden.”

Als je als fervent Ajacied een tikkeltje schoorvoetend een avondje in de Johan Cruijff ArenA overslaat om bij de buurtvergadering te zijn, dan mag je jezelf simultaan een trotse Amsterdamse én een trotse Buitenveldertse noemen. Lisette Vriend voelt zich al jaren thuis in de buurt. “Alleen al boodschappen doen is een feestje. Ik stap de lift in, en kan zo overdekt door naar de super.”

“Ik ben in Aalsmeer geboren,” vertelt Lisette. “Maar daar had ik het als jonge meid ook wel weer vrij snel gezien. Dus verhuisde ik naar Amsterdam en ben daar nooit meer weggegaan. Na de havo koos ik voor Schoevers. Overigens heb ik nog even de droom gekoesterd om stewardess te worden. De wereld rondreizen, een tijdje op mooie plekken blijven, heel leuk leek me dat…

Maar daar ben ik snel van teruggekomen. Het luchtverkeersleventje is lang niet meer zo glamorous als vroeger. Ik kwam er toentertijd bovendien achter dat ik veel beter iets anders kon doen: sales. Daar bleek ik goed in te zijn en echt blij van te worden. Dus ik heb jarenlang op allerlei vlakken gewerkt op het gebied van accountmanagement.”

Ingerold Lisette woont op het Gelderlandplein. Sinds een jaar werkt ze zo’n beetje om de hoek, op de Boelelaan, als assistent/officemanager. Dat doet ze bij Vanderkruijs, een recruitmentbedrijf voor eindverantwoordelijke functies in de publieke en publiek-private sector. Hierbij kun je denken aan hoge functies binnen allerlei overheid gerelateerde banen, voor bijvoorbeeld ziekenhuizen, universiteiten en hogescholen en gemeenten.

“Het voelt alsof ik er echt ben ingerold. Ik zocht een tijdje geleden naar werk in de buurt, omdat ik hier behalve wonen ook wilde werken. Op de Zuidas barst het van de recruitmentbedrijven.

Maar deze functie in specifiek, bleek een schot in de roos.” Lisette noemt zichzelf een ‘vliegende keep’. “Ik vind het geweldig om de hele dag van alles en nog wat voor mijn voeten geworpen te krijgen en dat in goede banen te leiden. Evenementen organiseren, afspraken inplannen…”

Hoe zit het met de vrouwen?

Volgens Lisette hoeven we ons trouwens niet al te veel zorgen te maken over de vertegenwoordiging van het aantal vrouwen op de Zuidas. “Ook in hogere functies zie ik ze overal. In ons kantoor werken zelfs toevalligerwijs meer vrouwen dan mannen.”

Lisette: “Ik woon al jaren in Buitenveldert. Maar vroeger vond ik dit stukje maar een beetje een oude truttenbende. Dat voelt nu bijna onvoorstelbaar, want het heeft zich op zo’n niveau ontwikkeld dat het nu super-de-luxe is om hier te wonen… Buitenveldert Lees verder op de volgende pagina

Lisette Vriend combines work and life at Zuidas. “Buitenveldert and Zuidas both have an atmosphere that suits me, and it has only become more attractive, trendy and sociable here.”

If you skip an Ajax football match to attend a community meeting, you can call yourself a proud Amsterdam-Buitenveldert local. Lisette Vriend feels at home in this neighbourhood. “Even grocery shopping is fun. I get in the elevator to enter the indoor shopping centre”.

Lisette tells me that “I was born in Aalsmeer. Even as a young girl, I was bored there. So later, I moved to Amsterdam and have never left. After college, I studied at Schoevers. For some time I had ambitions to be an air hostess, see the world, hang around pretty places for a while, it sounded nice... But I stopped dreaming eventually as life in the airline business is not as glamorous as it used to be. During that time, I realized I should do something else: sales. I proved to be good at it, and it made me happy.

For a long time I worked at all levels of account management.”

Life just found a way Lisette lives at Gelderlandplein and works around the corner, at Boelelaan, as an assistant/office manager at Vanderkruys.

Vanderkruys is a recruitment firm for responsible positions in the public and private-public sectors such as the government, hospitals and universities.

“For a while, I had been looking for a job in the neighbourhood. I wanted to live and work here. At Zuidas, recruitment is a booming business, but this specific role suits me.”

Lisette calls herself an “all-rounder”. “I like to get everything thrown in my direction and take the lead. Especially for activities such as organizing events and planning meetings.”

What about women at Zuidas?

According to Lisette, we do not have to worry about the number of women working at Zuidas. “In prominent positions around here, you see women. As a matter of fact, there are more women than men at my office.

“Als ik boodschappen wil doen, stap ik zo in de lift om beneden bij het overdekte winkelcentrum te shoppen. Met steeds meer leuke tentjes. En die internationale allure spreekt me ook wel aan. In ons gebouw tref je zo’n beetje alle nationaliteiten aan. Er wonen ook veel expats. Dat geeft ’s avonds soms een best wel bijzondere geursensatie. Want dan ruik je alle verschillende kookkunsten door elkaar, haha.”

‘Lunchen-lunchen’ Lisette: “Ik houd wel een beetje van ‘lunchen lunchen’, zeg maar. Dus niet even snel een broodje eten, maar wat uitgebreider, er een middag voor uittrekken met een voor- en hoofdgerechtje. Dat je ’s avonds eigenlijk niet meer hoeft te eten, fijn toch?”

Dat doet Lisette in de regio, vertelt ze. “De restaurants van Ron Blaauw. Maar ook Het Bosch aan de Nieuwe Meer, dat is trouwens typisch zo’n favoriete lunchspot van het werkende publiek op de Zuidas.

En Aan de Poel in Amstelveen vind ik ook te gek.”

Als Lisette dan toch nog een verbeterpuntje moet verzinnen tussen de moderne glorie rondom de zuidelijke A10, dan zou het hier volgens haar nog wel wat autovriendelijker mogen zijn. “De parkeergelegenheid gaat helaas echt achteruit. Op de fiets ben je overal zo, maar heb je die niet, dan wordt het lastig. Dat vind ik soms nog weleens vervelend voor mensen die hier niet wonen. Oh, en een bioscoop in de buurt zou ook wel fijn zijn. Daarvoor moet je nog de tram pakken naar het centrum. Maar ach, waar hebben we het over?”

Ajax missen Lisette en haar man hebben duidelijk een hart voor de buurt. Een buurtvergadering zullen ze niet zo snel overslaan. Zelfs niet als hun geliefde voetbalclub AFC Ajax diezelfde avond een thuiswedstrijd speelt in de Johan Cruijff ArenA. “We vinden het van dusdanig belang om betrokken te blijven bij alles wat hier gebeurt, dat we zo’n bijeenkomst absoluut niet willen missen. Dus ja, daar hebben we zelfs een keertje een avondje Ajax voor overgeslagen, haha. Dat vond ik best moeilijk, maar hoort erbij. Ik vind het geweldig in die ArenA te zijn. Echt heel leuk! Maar ik moet je eerlijk zeggen, dat, nu het weer winter wordt, het ook best wel prettig is om het soms gewoon lekker thuis te kijken.

Vooral nu al die Champions League-wedstrijden allemaal om 21:00 uur beginnen. Lekker op de bank.

“I have lived in Buitenveldert for years now. I used to think it was a bit old fashioned. But not anymore, it has developed and it is now a super luxurious place to live. Buitenveldert and Zuidas have an atmosphere that suits me. It has only become more attractive, trendy and sociable. Here you can find everything you want and need, right at your doorstep.

“The international feel appeals to me.

There are many nationalities and expats in our apartment building. In the evening there is a variety of smells coming from everyone’s different cooking habits.”

A proper lunch “I like to have a good lunch, not grab a quick sandwich, but an extensive one, it might even take up the afternoon.

With a lunch consisting of starters and a main-course, you do not need dinner at night.” She visits restaurants local restaurants a lot. “Ron Blaauw’s restaurants, as well as Het Bosch at Nieuwe Meer; all the typical hot spots for Zuidas people. And Aan de Poel in Amstelveen is a favourite as well.”

If it were up to Lisette, the only thing that would improve this new, glorious southern part of the A-10 would be if it were more car friendly.

“There are few parking options. If you don’t have a bike it is hard to get around. That proves to be annoying for people that do not live here. Oh, and a local cinema would be lovely. To go to see a film right now you need to take the tram into the centre. But really, what is that as a complaint?”

Skipping an Ajax match Lisette and her husband love this neighbourhood, and won’t miss a community meeting here, even if Ajax is playing at the Johan Cruyff ArenA on that particular night.

“We think it is essential to be involved.

We would not miss a community meeting for the world. We even skipped an Ajax football match for one once. Harsh, but that’s life. I do like to be in the ArenA, real fun! But to be honest, as it starts getting colder in the winter months, it is good to sit on the couch and watch the games at home.”

De winkel van Otentic Perfumes in het Stadshart van Amstelveen oogt modern en licht. Langs de kant staan alle geuren opgesteld, tegen een achterwand van verschillende kleuren. We worden ontvangen door Marie-José Keur, Retail Manager bij Otentic. Zij legt uit wat het concept van deze winkel is.

“Bij Otentic Perfumes gaan we uit van je persoonlijke voorkeuren.

Otentic Perfumes doet niet aan marketing met bekende mensen en ook niet aan grote mediacampagnes of aparte verpakkingen. Bij ons is je neus je gids bij het kiezen van een parfum. Wij nemen je mee in de wereld van Otentic, op ‘reis’ naar jouw persoonlijke parfum.

Een ontdekkingsreis naar geuren die het beste bij jouw persoonlijkheid, stijl, stemming of gelegenheid passen. Die geuren stellen we vast door middel van diverse selectierondes.”

Verschillende geurstijlen Het vertrekpunt in de reis naar jouw ultieme parfum zijn acht verschillende stijlen: Aquamondo, Lemonia, Grasslands, Arborath, Fyori, Elegantia, Sensuali en Sedux. Deze geuren zijn elk ook weer onderverdeeld in acht parfums met elk een eigen karakter en eigen intensiteit. Iedere geurstijl heeft een bijpassende bodylotion.

Daarnaast zijn er nog twee specialiteiten: Anno 1785 en Pure. The Otentic Perfume store is located in Amstelveen’s Stadshart and looks contemporary and bright. All of the different fragrances are lined up along the sides of the space, behind them sits a colourful backdrop.

Upon arrival, we were welcomed by Otentic’s retail manager, Marie-José Keur. She explained the concept of the store to us: “We do not have a marketing programme with celebrities or media campaigns or special packaging. At Otentic Perfumes, we start with your personal preferences.

At Otentic Perfumes, your nose is your guide for choosing your perfume. We take you into the world of Otentic, a journey to discover your fragrance.

This process is a discovery of scents which suit your personality, your style, mood, or a special occasion.”

Styles of fragrances This journey to find your ultimate perfume starts with Otentic’s eight different styles: Aquamondo, Lemonia, Grasslands, Arborath, Fyori, Elegantia, Sensuali and Sedux. These styles are then further divided into eight perfumes which each have an individual character and intensity completed, of course, with its body lotion.

On top of these options, there are two more speciality scents: Anno 1785 and Pure. The Pure perfumes are based on a unique ingredient. “The Anno 1785 line is a very special perfume,” Marie-Jose tells us. “Its name refers to the year the Saisse Family started developing perfumes. Jean-Denis Saisse is the current creator-perfumer of the whole Otentic Perfumes collection.”

Ruiken en leren Het selecteren van de geuren kost redelijk wat tijd (reken ongeveer op een uur), maar het is een ontzettend leuke ervaring. Eerst leer je de diverse stijlen kennen, daarna noteer je op een kaart welke geuren je aanspreken, in de volgende ronde worden je keuzes gereduceerd door ‘blind’ te ruiken. Ondertussen geeft Marie-José veel uitleg over de geuren en de ingrediënten die gebruikt worden. Zo leren we dat musk afkomstig is van de klier van een hert en dat amber van een potvis komt.

Deze ingrediënten mogen tegenwoordig niet meer van dieren geoogst worden vandaar dat ze synthetisch worden nagemaakt. Er worden vooral heel veel natuurlijke ingrediënten gebruikt. Otentic werkt samen met de parfumfabriek Accords & Parfum in Grasse voor het vinden van de beste ingrediënten voor hun parfums.

Definitieve keuze Als je uiteindelijk de keuze gereduceerd hebt tot maximaal vier, wordt je kleding hiermee geparfumeerd. Op deze manier ruik je zelf het beste de geur die bij iedere beweging wordt verspreid en voorkom je dat je teveel gebruikt, omdat je je eigen parfum niet meer ruikt. Daarna kun je je definitieve keuze bepalen.

Er wordt dus heel veel tijd gestoken in het vinden van jouw perfecte parfum. Desondanks zijn de parfums verrassend betaalbaar en alles wordt ook nog mooi ingepakt!

‘Parfumproeverij’ Er worden ook Perfume Explore Sessions gegeven. Dit is eigenlijk een ‘parfumproeverij’, een leuk alternatief voor bijvoorbeeld een wijnproeverij. Leuk om te doen met een groepje vriendinnen of als moeder-dochteruitje. Voor een hapje en een drankje wordt dan gezorgd. In Amstelveen kan dit alleen tijdens openingstijden van het winkelcentrum, maar in de nieuwe winkel in Haarlem kun je op afspraak ook ’s avonds terecht.

De slogan van Otentic is: Otentic Perfumes designed to be you! Een parfum dat jouw persoonlijkheid benadrukt. Dat sluit aan bij wat Marie-José zegt: “Parfum is emotie. De essentie van onze parfums is om een geur te vinden die je persoonlijkheid weerspiegelt.”

A journey of smelling and learning Selecting your fragrance is quite a time-consuming matter, it takes about an hour, but it is a marvellous experience.

First, you learn about the different styles, from which you list which fragrance you prefer. Next, your wish list is further reduced through ‘blind-smelling’. During this whole process, Marie-Jose is on hand to explain the fragrances and their ingredients. On our visit we learnt that musk comes from a deer’s gland and amber comes from a whale. These specific ingredients are now synthetically manufactured in order to be animal-friendly, but overall, Otentic uses natural aromas. Otentic Perfumes has joined forces with perfume factory Accords&Perfume in Grasse, France, to find the best ingredients for their perfumes.

Final choice At the end of your selection journey, you choose between four scents. The team at Otentic are cared not to ‘overdo’ the testing process, as by overdoing the application of fragrances you are not able to properly identify the perfume of your choice. In the end, you make your final composition and make a final decision. As we discovered, a lot of time and support is put into finding your perfect personal perfume. Moreover, these perfumes are surprisingly affordable and beautifully packaged.

Perfume try-outs At Otentic Perfumes you can partake in perfume try-outs, an excellent alternative for a wine-tasting session, for example. This is a perfect outing for a group of friends or perfume-obsessed family. A try-out includes drinks and food. In the Amstelveen store a visit can be arranged for the opening hours of the shopping centre. Otentic’s new store in Haarlem is available for evening visits.

NEXT LEVEL In 2025 gaan de deuren open van de nieuwe openbare bibliotheek op de Zuidas, â&#x20AC;&#x2DC;OBA NEXTâ&#x20AC;&#x2122;. Ingericht op de toekomst van kennis en informatie moet de vestiging vooral ook een cultureel en maatschappelijk hart van de Zuidas worden. Alleen al in Europa zijn drie bijzondere bibliotheken te vinden, die ter inspiratie kunnen dienen voor OBA NEXT. Zuidas. magazine 92

Helsinki De gloednieuwe centrale bibliotheek van Oodi in Helsinki, die eind 2018 werd onthuld, is meer dan alleen een bibliotheek. Je kunt het al zien aan de futuristische architectuur, waardoor het gebouw er vanuit sommige hoeken uitziet als een golfslag en vanuit andere als een echt schip. De imposante drie verdiepingen tellende structuur is volledig gemaakt van glas en hout en is niet alleen een meesterwerk van Finse architectuur, maar ook ecologisch verantwoord.

In 2025, the new public library at Zuidas, ‘OBA Next’, will open its doors. Dedicated to the future of knowledge and information, this branch of the Amsterdam Public Library should above all become the cultural and social heart of the Zuidas area. In Europe alone, there are at least three special libraries that could be an inspiration for OBA NEXT.

Helsinki Oodi, Helsinki’s new Central Library, was completed in 2018 and stands out because of its futuristic architecture: from some angles the building looks like a wave, whereas from another perspective it resembles a ship.

The impressive three-storey structure is made of glass and wood; it is not only a masterpiece of Finnish architecture but also a ‘green’ and sustainable building.

O P ENBARE BIBLIOT H E E K

Kopenhagen De koninklijke bibliotheek van Kopenhagen, ook bekend als de ‘zwarte diamant’, is een echt neo-modern juweel, gelegen in het historische centrum, met uitzicht op de zeestraat van Øresund. Het is gebouwd in 1999 en een uitbreiding van de oude bibliotheek.

Het is één van de belangrijkste gebouwen in de stad. De zwarte kubus betovert aan de buitenkant met zijn schuine lijnen, glanzend zwarte graniet en glazen oppervlak, terwijl het aan de binnenkant verleidt met zijn kronkelige lijnen, brede ruimtes en roltrappen. Op het terras kunnen maar liefst 600 personen vertoeven, tijdens concerten of toneelstukken.

COPENHAGEN Copenhagen Royal Library, also known as the ‘Black Diamond’, is a real neo-modern jewel, located in the historic centre with views of the Øresund strait. It was built in 1999 as an extension to the old library and is one of the city’s most important buildings. The outside of this black cube offers a bewildering spectacle of angled lines, shiny black granite and glass surfaces, while the inside has charming curvy lines, open spaces and escalators. The large terrace can house an audience of up to 600 people for concerts or theatre plays.

WENEN Veel mensen kennen de prachtige nationale bibliotheek van Wenen, met zijn barokke stijl en majestueuze kamers. Op de universiteitscampus, op een steenworp afstand van de Donau, staat dit futuristische gebouw, de bibliotheek van de Universiteit van Economie en Business. Het dateert uit 1898; na een brandstichting in 2005, waarbij een deel van de bibliotheek werd verwoest, heeft het atelier van Zaha Hadid Architects het gebouw gerenoveerd.

VIENNA Viennaâ&#x20AC;&#x2122;s beautiful National Library is a well-known landmark with its baroque style and majestic rooms. A stoneâ&#x20AC;&#x2122;s throw away from the Danube, the university campus houses this futuristic building, the library of the University of Economics and Business. It dates back to 1898 and was renovated by Zaha Hadid Architects after it was partially destroyed in an arson attack in 2005.

nhow Amsterdam Rai Hotel will become the new social hotspot for tourists, business travellers and Amsterdam locals. Designed at the OMA Architectural office by Rem Koolhaas, the new lifestyle hotel will boast 650 rooms, and will open its doors at the beginning of 2020.

Een nieuwe sociale, multiculturele hotspot voor toeristen, zakenreizigers en Amsterdammers, dat wordt het nhow Amsterdam RAI. Begin 2020 opent het 650 kamers tellende lifestyle hotel, dat ontworpen is door het architectenbureau OMA van Rem Koolhaas.

Het gebouw is geïnspireerd op één van de meest iconische kenmerken van RAI Amsterdam: de reclamezuil, beter bekend als ‘Het Signaal’. Door de drie op elkaar liggende driehoeken wijst het gebouw in vele richtingen en symboliseert het zo de diversiteit van het verleden, het heden en de toekomst van de stad Amsterdam.

Het ontwerp van de kamers is geïnspireerd op de zes windrichtingen waarnaar de hoeken van het gebouw wijzen: zuid, oost, noord, zuidwest, zuidoost en noordwest. Thema’s uit de ‘Gouden Eeuw’ van Amsterdam als een commercieel centrum van Europa zijn duidelijk zichtbaar in de kamers, in combinatie met bekende internationale symbolen, zoals mandala’s uit India, Mexicaanse ‘Día de Muertos’ doodshoofden of kersenbloesem uit Japan: alle symbolen komen terug in een moderne, internationale setting.

Inspiration for the building came from Amsterdam Rai’s most iconic landmark: the advertising column, better known as ‘The Signal’. With its three superimposed boxed triangles, the new hotel points in many directions. It symbolizes the diversity of the past, present and the future of the city of Amsterdam.

The design of the rooms has been influenced by the six wind directions which come into contact with the many faces of the building: South, East, North, South-West, South-East, North-West.

Cultural references made in the rooms include themes from the 17th century, when Amsterdam was a commercial hotspot, as well as other international symbols such as Indian mandalas, Mexican skulls from the Dia de Muertos and Japanese cherry blossoms.

With 650 rooms, divided over 25 floors, at a height of 91 metres, the nhow Amsterdam Rai Hotel is the largest new-build hotel in the Benelux. nhow (the lowercase first letter is a stylistic choice) is an unconventional brand name. The company operates a range of lifestyle hotels, each of which is characterized by extraordinary designs from distinguished architects. In 2014, the NH Hotel Group opened the nhow Rotterdam, also a design by Rem Koolhaas at OMA.

Met 650 kamers, verdeeld over 25 verdiepingen, en een hoogte van 91 meter is nhow Amsterdam RAI het grootste nieuw gebouwde hotel in de Benelux. Het behoort tot het onconventionele merk ‘nhow’. Dit merk bestaat uit diverse lifestyle hotels met ieder een uitzonderlijk design, ontworpen door gerenommeerde architecten. In 2014 opende de NH Hotel Group al het nhow Rotterdam, dat eveneens ontworpen is door OMA van architect Rem Koolhaas.

Concierge Plus

Het zijn echte eyecatchers, die prachtige hoge woontorens op de Zuidas. En je woont er natuurlijk fantastisch, met geweldige buitenruimtes op mooie hoogtes. Maar fijn wonen lukt alleen als de bewoners zich ook veilig voelen.

Door de hoogbouw en het feit dat de Zuidas in de avonden wat stilletjes is, is het een uitdaging te noemen om dat veilige gevoel op straat te waarborgen. Daarom is er nu de Nachtwacht van de Zuidas.

Rondom Intermezzo, één van de spraakmakendste wooncomplexen op de Zuidas, is het op een maandagochtend een drukte van jewelste. Overal gebeurt iets en is er reuring. We treffen er Emile Rietveld (35), eerste bewoner van het statige pand en voorzitter van de Vereniging van Eigenaren.

De reden voor de afspraak met Emile is zijn initiatief om de bewoners van de Zuidas datzelfde veilige gevoel te geven als bijvoorbeeld in een dorp of een wijk. “Maar vanwege die hoogbouw en het feit dat de Zuidas in de avonduren behoorlijk stil is, is dat best een uitdaging”, geeft hij eerlijk toe.

Er valt wat te halen…

Het is geen geheim dat het boevengilde zich graag ophoudt op de Zuidas. En dat is ook niet zo gek, zegt Emile. “Hoe je het ook went of keert, hier valt wel wat te halen. Er

‘One way or another, the area offers rich pickings’ wonen hier veel bekende Nederlanders en andere succesvolle mensen. Die hebben geld, dure spullen. Tel daarbij op dat de sociale controle hier veel minder is en je creëert een walhalla voor kwaadwillenden. Maar dat drukken we ook graag weer de kop in!”, haast Emile zich te zeggen.

Daarom bedacht hij Avenue Services - De Nachtwacht van de Zuidas. “In het buitenland is professioneel buurttoezicht heel gebruikelijk. Met de internationale allure van de Zuidas was het dus een kwestie van tijd dat collectief toezicht ook hier ingevoerd zou worden.”

“Het begint bij mensen met de verkeerde intenties uit de anonimiteit te halen. En dat kun je al heel eenvoudig doen door zichtbaar te zijn, ook in de avonduren en de nachten. Mensen aanspreken, goedenavond wensen en bij onraad vragen wat er speelt. Daar houden inbrekers niet van. Dit is eigenlijk wat er in andere buurten vanzelf gebeurt door de sociale controle en de activiteit die zich daar in de avonden afspeelt. Dat hebben wij hier beide niet, dus moeten we dat kunstmatig gaan creëren.”

Conciërge Plus De professionele sociale controle van Emile zal zich door de buurt begeven op… een Segway. “Een Conciërge Plus, noem ik het graag. Een conciërge, die net als de conciërges van de panden binnen, een vertrouwensband heeft met de bewoners. Hen kent en hen of hun visite begeleidt van en naar hun auto of naar het station bijvoorbeeld.”

Hij vervolgt: “De ruimte rondom Intermezzo en de buurt eromheen is vrij overzichtelijk, maar te klein om met een auto toezicht op te houden. Door op een Segway te surveilleren, ben je wendbaar, verplaats je je snel (zo’n 20 km/u) en ben je een stukje groter. We zullen van 22.00 tot 06.00 rondes rijden. Deze mensen, onder wie ikzelf, houden een oogje in het zeil in de buurt”, legt hij uit.

Inmiddels heeft hij zelf een aantal proefrondes gemaakt.

“Het viel mij op dat niet altijd alle deuren van de portieken goed gesloten zijn. Dat is natuurlijk vragen om problemen. Daarnaast kom je af en toe ongure types tegen en of mensen die hier feitelijk niets te zoeken hebben. Die spreek je dan aan. Kwaadwillenden zijn op dat moment niet meer anoniem en zullen snel vertrekken.”

The residential towers at Zuidas are real eye-catchers, housing wonderful apartments with large balconies and terraces. Great places to live but as Zuidas is pretty quiet in the evenings, it is a challenge to guarantee safety on the streets for local residents. Cue the newly-established Zuidas Nighwatch.

It is Monday morning and there is a real buzz around Intermezzo, one of the stunning buildings here at Zuidas. We meet Emile Rietveld (35), first resident of this stately building and chairman of Intermezzo’s Property Owners Association.

We talk to Emile to discuss a new initiative he started: giving people living at Zuidas area the same feeling of security one could expect in a village or a suburb. “Due to the high-rise buildings and the fact that Zuidas is pretty quiet in the evenings, that’s a bit of a challenge”, he honestly admits.

Rich pickings…

It is no secret that thieves like to hang around Zuidas. And that’s pretty logical, Emile says.

“One way or another, the area offers rich pickings. A lot of famous Dutchmen and other successful people live here. They have money, expensive stuff. Plus there is much less social control and that creates a fertile stomping ground for malicious people. But we do our best to fight that!”, Emile hastens to add.

So he came up with Avenue Services - The Zuidas Nighwatch. “In other countries, having a professional neighbourhood watch is quite common. With the international appeal of Zuidas it was only a matter of time until a collective monitoring system would be introduced here as well.”

“It starts with discouraging people who have wrong intentions. We do that by being visibly present, also in the evenings and at night, and talking to people on the street, asking them what is going on – these are things thieves and burglars don’t like. This is what happens automatically in other neighbourhoods with a higher level of social control and more people on the streets at night. We don’t have that here so we’ll need to create such an atmosphere.”

Concierge Plus Emile’s security professionals will be moving around the area on a… Segway. “I’d like to call what we offer a Concierge Plus service. A concierge in a building has a relationship of trust with the residents; he knows them and helps them or visitors to and from their car or the train station, for example.”

He continues: “The space around Intermezzo and the nearby area is actually too small to monitor by car. By patrolling on a Segway, we are agile, relatively fast (around 12 miles per hour) and we stand a little bit taller. We will be doing our rounds from 10 pm to 6 am. These night guards, myself included, will be keeping an eye out in this area”, he explains.

He has already completed a few test rounds. “It struck me that not all the entrance doors to the buildings are locked. Well, that’s just asking for trouble. When we run into suspicious-looking fellows or people who have no reason to be here at night, we’ll approach them. If they have bad intentions they usually disappear out of sight very quickly.”

Professionele sociale controle Het nieuwe veiligheidsinitiatief wordt enthousiast ontvangen door ondernemers, de bewoners van Intermezzo en de omliggende panden. “Zij en hun bezit moeten goed beveiligd worden en dat willen zij zelf ook. Gelukkig is er ook geld om deze professionele sociale controle tot stand te brengen. De dienst is een collectief van alle ondernemers en bewoners samen. Iedereen vaart er wel bij op deze manier”, legt Emile uit.

Hij heeft zoveel vertrouwen in deze nieuwe manier van een veilig gevoel creëren dat hij zijn oude carrière vaarwel heeft gezegd om met Avenue Services te starten. “Ik ben specialist op het gebied van risico- en incidentenonderzoek in de luchtvaart- en telecomsector. Ik hield mij voornamelijk bezig met het onderzoeken van voorvallen en bracht adviesrapporten uit. Ik heb veel kennis op het gebied van risicobeheersing en veiligheid en beschik daarnaast ook over een goed netwerk.”

Vlotte babbel Op dit moment worden de teams samengesteld. “We zijn nu zorgvuldig de mensen aan het selecteren die deze diensten moeten gaan draaien. Omdat we geen traditioneel beveiligingsbedrijf zijn, is professionele training in beveiliging voor ons geen harde eis. Wat wij wel verwachten is oog voor afwijkend gedrag, sterke sociale vaardigheden en niet bang zijn om mensen aan te spreken. We zijn een extra oog van vlees en bloed, naast de camerabeveiliging en andere – niet zichtbare – beveiligingsmaatregelen.”

Emile benadrukt ook dat de Segway-rijders niet zullen ingrijpen als er misstanden gebeuren. “Nee, dan schakelen zij de politie in. De gemeente en de politie zijn ook nauw betrokken bij dit hele verhaal en we zullen dus ook goed contact hebben met de politie. Dit zal een kort lijntje worden. Deze nauwe samenwerking heeft recentelijk geleid tot de succesvolle aanhouding van drie inbrekers op de Zuidas.”

Professional social control This new security initiative has been met with enthusiasm by local business owners and the residents of Intermezzo and the surrounding buildings. “These people and their property deserve to be well-protected. Thankfully there is money to realize this kind of professional social control. This service is a collective supported by the local business owners and residents. They all benefit from this system”, Emile says.

He has so much confidence in this new way of creating a safe environment that he has said goodbye to his old career in order to launch Avenue Services. “I used to work in the aviation and telecommunications industries as a consultant on risk assessment and incident investigation. I have a lot of knowledge of risk control and safety, plus I have a good network.”

Good social skills At the moment he is busy building his team.

“We are carefully selecting people to carry out these shifts. As we are not a traditional security company, professional training in security is not a hard requirement. What we do expect, however, is a good eye for suspect behaviour, good social skills and a willingness to approach people. You could say we are a human level of crime prevention, alongside monitoring cameras and other – invisible – security measures.”

Emile emphasizes that his ‘Segway riders’ will not intervene in case of any wrongdoings. “No, they will immediately contact the police. The municipality and the police are fully behind this concept. Our cooperation with the police has already proven successful as we recently managed to help the police to arrest three burglars in Zuidas area.”

The largest Dutch courthouse, the New Amsterdam Courthouse, is undergoing a complete renovation.

It is a project being headed up by Heijmans, a leader in the construction industry. Amer Mahmutovic is a crane operator, and one of the many people working on the site.

Werkschoenen en veiligheidsjasje aan, helm op. Drie ladders omhoog, de lift in, weer drie ladders omhoog.

Dit interview vergde wat voorbereiding én we moesten het hogerop zoeken, letterlijk. Maar we zijn er, op 65 meter hoogte bevindt zich de cabine van Amer Mahmutovic. Vanaf deze duizelingwekkende hoogte werkt Amer mee aan de realisatie van de gloednieuwe Rechtbank Amsterdam. Amer heeft het hierboven goed voor elkaar. Voordat we de piepkleine ruimte binnenstappen, gaan de werkschoenen uit en sloffen aan.

De kruimeldief, snoetenpoetsers en glassex verklappen dat Amer van een schone werkruimte houdt.

Was Amer een jaar geleden nog rijinstructeur, vandaag de dag bedient hij deze immense kraan. “Rijles geven vond ik niet meer leuk, de jeugd is erg veranderd. Ik heb me dus omgeschoold tot kraanmachinist. Eerlijk is eerlijk, het leven als bouwvakker was even wennen. En in mijn geval eenzaam. Zat ik vroeger de hele dag naast mijn leerling, tegenwoordig breng ik mijn werkdagen vooral in mijn eentje door. Maar dat komt de concentratie alleen maar ten goede, want die moet er te allen tijden zijn.”

Zo’n 8 maanden werkt Amer nu als kraanmachinist. Bouwde hij eerst mee aan het nhow Amsterdam RAI hotel (het hotel met de drie driehoeken), vanaf februari 2019 ziet hij vanaf deze immense hoogte de nieuwe rechtbank groeien.

This interview took some preparation as we needed to go high up. I met him at ground level, wearing who wears the expected combination of work shoes, hi-vis jacket and hardhat. From this staggering height. Firstly, we went up three levels on a ladder, and then a further three levels via an elevator. Once sixty five metres above ground, we were in a cabin, from where Amer is key to the realization of the renovated courthouse.

Before we set foot in the tiny space, we changed our shoes for slippers.

Once inside, the hand-held vacuum cleaner, baby wipes and bottles of surface and window cleanser reveal his love of a tidy workspace.

Up until last year, Amer was a driving instructor. Nowadays he is operating the enormous crane we find ourselves near the top of.

“I was fed up with giving driving lessons; youngsters have changed so much. So, I re-trained to become a crane operator,” he says. “I had to get used to life in the construction industry. And in my case, this is quite a lonely life, being up here. I was always used to always having a student sitting next to me. But, this isolation is for the best, because for this job you need to be fully concentrated at all times.”

Amer has been working as a crane operator for eight months. His first job was contributing to the building of the nhow Amsterdam Rai Hotel (the one with the three triangles).

He is currently watching the New Amsterdam Courthouse grow beneath him at a great speed from a dizzying height.

“Of ik nu een balk, draadconstructie, stuk beton of vlechtwerk naar boven hijs, alles voegt iets toe aan de rechtbank.

Soms is het een knap staaltje vakmanschap al zeg ik het zelf, precisiewerk. Aan het einde van de dag haal ik daar mijn voldoening uit. Maar het is ook een risicovolle baan.

Daarom draait alles hier om veiligheid. Wie werkt met machines moet voorzichtig zijn, we hijsen dus veilig óf we hijsen niet. Zie je die twee andere kranen op het terrein?

Mijn collega’s en ik hebben constant contact, maar zijn onze gieken toch te dicht bij elkaar in de buurt, dan stoppen ze automatisch. Te vergelijken met de nieuwste auto’s die automatisch afstand van elkaar houden op de snelweg.”

De kraan van Amer weegt 32 ton, de giek (de lange arm) kan tweedraads max 8 ton tillen, vierdraads wel 16 ton.

Dat is te vergelijken met ongeveer 10 auto’s! Er moet dus rekening worden gehouden met gewicht, maar ook met factoren van buitenaf, zoals wind. “Alles wordt hier dubbel gecheckt. Vanaf het moment dat ik begin te hijsen, is het millimeterwerk. De jongens beneden reik ik met grootse nauwkeurigheid de goederen aan. Via de mobilofoon geven ze aanwijzingen. Nog twee meter, nog één, 50 cm, 30, 10… Ondanks mijn afgezonderde positie werken we nauw samen. Anders gebeuren er ongelukken.”

‘We lift it safely or we do not lift at all’ “Whether I am lifting a beam, a wire construction, a block of concrete or braided concrete, it all adds something to the Courthouse. Sometimes it is a serious piece of craftsmanship if I might say, with real military precision. But at the end of the day, that gives me my satisfaction.

On the other hand, it is a hazardous job.

Everything here is about safety.

When working with this kind of machinery, you have to be careful, we lift it safely or we do not lift at all! Do you see those other two cranes over there? My colleagues and I are in touch constantly via radio. However, on the rare occasion our booms are too close, they are brought to a halt automatically, just like the automatic distance device in the latest cars.”

Amer’s crane weighs 32 tons. When dual wired, the boom (the long, moving arm) can hoist up to eight tons, and, when four wired, at least sixteen tons, which is comparable to the weight of ten cars.

As well as taking into account the weight, there are also weather factors to consider, like wind.

“Everything here is checked, checked again, and then triple checked. From the moment I start to lift, it is all about millimetres. With the utmost accuracy, I hand the boys down there their goods.

They advise me via their radios. Another two metres, one more, fifty centimetres, thirty, ten, etc. Though I am physically secluded, we have to work together as a team in order to avoid accidents.”

Zo’n 40.000 kunstliefhebbers komen op de kunstbeurs af

Tijdens de 33ste editie van PAN Amsterdam, die dit jaar van 24 november tot en met 1 december in de RAI plaatsvindt, is een expositie te zien waarin werk en belevingswereld van Nederlands’ gevierde ontwerper Jan Taminiau centraal staat.

The 33st edition of PAN Art Fair, taking place in RAI Amsterdam from November 24 until December 1, features a special exhibition highlighting the works and ideas of famous Dutch fashion designer Jan Taminiau.

It is the first time in the history of this fair for art, antiques & design that this honour has been bestowed on a couturier. In his exhibition The World of Jan Taminiau, the fashion designer – hailed for his use of traditional techniques in contemporary designs – enters into dialogue with the art on show at PAN Amsterdam.

Het is de eerste keer dat de beurs voor kunst, antiek en design deze opdracht geeft aan een couturier. In de tentoonstelling ‘De wereld van Jan Taminiau’ zoekt de ontwerper, die geroemd wordt om het gebruik van traditionele technieken in hedendaagse ontwerpen, de dialoog met de kunst van de beurs.

Taminiau painted a cloth and embellished it with beads and sequins. The image he created contains trees referring to the famed Goblin and colour surfaces reminiscent of the modernism of Bauhaus.

Taminiau maakt een met de hand beschilderd en met kralen en pailletten bewerkt doek. De voorstelling bestaat uit bomen die verwijzen naar de vermaarde Gobelin en kleurvlakken die refereren aan het modernisme van Bauhaus.

Since the 2016 edition, PAN Amsterdam has commissioned artists to translate their view on the art fair in pictures. The collaborators thus far are photographers Eva Roovers, Koen Hauser and Erwin Olaf. Around 40,000 art lovers visit the PAN Fair every year.

This restaurant is a little gem at the edge of the Veluwe national park. It’s an old villa in a very leafy area that has been converted into a restaurant, with the former garage now a very nicely decorated cabin where guests are treated to an aperitif and a bite to eat. Culinary delight in a wonderful environment.

Canggu, Bali Het surfersplaatsje ten noorden van Seminyak. Niet dat ik surf maar deze omgeving geeft mij rust. Niets moet hier, maar alles kan… Ik geniet ervan om op een scooter de omgeving te verkennen, want er komen continu nieuwe horeca-concepten bij. Eén van de bekendste straten is dan ook Batu Balong. Tevens investeer ik hier in een fantastisch concept, Zin Hotels.

A surfers’ spot north of Seminyak. I don’t surf but this place gives me a lot of peace and quiet. It’s absolutely easy-going… I really enjoy renting a scooter and exploring the area as new bars and restaurants keep popping up, with Batu Balong one of the most well-known streets. This is also a place where I’m investing in a fantastic concept: Zin Hotels.

Venice Beach

W Hotel Barcelona Sinds de opening in 2009 kom ik hier om te genieten van de stad Barcelona. Ik zit niet graag op mijn kamer als ik in het buitenland ben, maar hier bestel ik altijd een mooi flesje wijn en geniet ik van het uitzicht. Ook zijn er veel goede restaurants in en om het hotel, plus een goede club op de 26ste verdieping.

I’ve been a regular visitor of this Barcelona hotel ever since it opened its doors in 2009. I don’t like staying in my room when I’m abroad, but here I always order a nice bottle of wine and simply enjoy the view. There are lots of good restaurants in and around the hotel and it has an excellent club at the 26th floor.

Venice Beach is één van mijn favoriete plekken om te verblijven. Het is zo een culturele en creatieve omgeving dat ik hier ook veel inspiratie opdoe. De diversiteit aan restaurant-bar-take away concepten is ongelofelijk. Enkele voorbeelden; Gjusta (bakkerij zoals wij het niet kennen), South End (fantastische pizza), Salt & Straw (beste schepijs) en The Wee Chippy (friet zoals wij het zelfs niet kennen).

Venice Beach is one of my favourite hangouts. It is a wonderful cultural and creative environment that brings me a lot of inspiration.

They offer an incredible variety of restaurant & bar take-away concepts including Gjusta (a bakery like no other), South End (great pizzas), Salt & Straw (the best Italian ice-cream) and The Wee Chippy (delicious French fries).

De Zuidas mag booming zijn, louter succesverhalen zijn het niet, weet Ronald Gans inmiddels. In 2013 opent hij The TailorMates om maatpakken aan de advocaten, bankiers, notarissen en makelaars op de financial mile te verkopen. Eind 2018 is hij failliet.

Hoe pak je de draad weer op na een faillissement? In de VS begin je gewoon opnieuw, maar in Nederland ben je een beetje een loser, al dan niet terecht. Een relatie brengt Ronald Gans (1957) op het idee om zijn ervaringen op te schrijven en dat heeft hij gedaan in het net verschenen â&#x20AC;&#x2DC;Had ik maar naar mijn vrouw geluisterdâ&#x20AC;&#x2122;.

Het is een vlot en goed geschreven relaas geworden, over de start van The TailorMates in 2013, als het nog volop crisis is en er leegstand is op de Zuidas. Maatwerk als enige segment met groeipotentie, in combinatie met 70.000 werknemers in de directe omgeving als doelgroep, dat moet wel business opleveren redeneert Gans. Forse investeringen en tegenvallende verkopen zetten het bedrijf vanaf de start al meteen onder druk.

Begin 2015 is een kapitaalinjectie noodzakelijk voor een doorstart en kort daarna volgt een crowdfundingactie om investeringen in online mogelijk te maken. Tal van ludieke en minder geslaagde marketingacties ten spijt draait The TailorMates nog steeds verlies en eind 2018 is een faillissement onafwendbaar.

Gans heeft het ogenschijnlijk nonchalant en met veel gevoel voor humor opgeschreven, maar dat het hem niet in de koude kleren is gaan zitten, is wel duidelijk. Zijn relaas en de 110 wijze lessen moeten vooral ondernemers voor dezelfde ellende behoeden die Gans is overkomen.

Ronald Gans in betere tijden

Zuidas might be a place for booming business for most nowadays, but this has not always been the case. Specifically, Zuidas was not been a site for success for Ronald Gans.

Gans opened his business The TailorMates, in 2013, through which he sold tailored suits for lawyers, bankers, solicitors and real estate agents working in The Financial Mile. Then, at the end of 2018, he suddenly faced bankruptcy. How to pick up the pieces after you have gone out of business? In the US, you start all over again, but not in The Netherlands. People tend to view you like a loser here. Someone suggested Ronald Gans (aged 57) should write a book about his experiences. So he did, he wrote everything down. His book is now published under the title Had ik maar naar mijn vrouw geluisterd (If Only I had Listened to my Wife).

The story of the opening of The TailorMates in 2013 is a generally well known. Back then, Zuidas was empty and suffering due to the repercussions of the economic crisis.

However, Ronald Gans believed that the 70,000 professionals working in the neighbourhood were all the potential clients he needed to make his suits business a success. Disappointingly, significant investments and downward-pointing figures put pressure on his concern from day one. In 2015, Gans found it necessary to pump a large amount of money into the business to sustain it, and shortly afterwards, crowdfunding was needed to invest in the digital side of his project. Despite many sympathetic patrons, The TailorMates had to face its losses at the end of 2018.

Although Ronald Gans has written his story in a casual and humorous style, the impact of the bankruptcy was enormous.

His book is packed with one hundred and ten golden rules and is meant to protect fellow entrepreneurs from the misfortune that he endured.
