What’s the Buzz with Honey Homemaker Learning Session Honey is one of our most ancient food sources, but what do you really know about honey? This lesson is designed to inform you about Kentucky honey production, its benefits, and ways to use honey in our diets and cooking. Please invite anyone you think might be interested in the topic. Everyone is welcome to attend. This class will be taught by Anna McCoy on August 29 at 1:30 PM at the Carlisle County Extension Office and September 1 at 1:30 PM at the Hickman County Extension Office. New Cookbook Coming!! A special heartfelt thanks to those who contributed recipes, shared their barn quilts, and volunteered hours on end on the cookbook committee. Hickman County Homemakers will host the Purchase Area Homemaker Council Meeting On August 1st at the Hickman County Extension Office. If you can serve as a hostess, call 270-653-2231 to RSVP for Lunch. Lunch is $12.00 and catered by The Jewell’s. Pressure Canner Testing available at your local County Extension Office Lisa Adams, SNAP Food Assistant will be available to check dial gauge pressure canners. You only need to bring the lid with gauge attached. Gauges should be checked yearly for optimum food safety and quality. Appointments can be made by calling 270-653-2231 or 270-6285458.

Did you get at least 30 minutes of physical activity today? Menu labeling a reality in 2017 When the U.S. Food and Drug Administration released its final guidance on menu labeling in late April, it was the last step in a process to require restaurants, convenience stores, take-out, retail establishments and supermarkets to publish the calorie content of their food on their menus. Some chain restaurants were already publishing this information on some items in anticipation of this announcement. Others have until May 2017 to implement the change. As food consumers, this means that for the first time, we are able to make informed decisions on all of our dining out meal purchases based on the food’s nutritional content. This is good news, as about 40 percent of the average Kentuckian’s food budget is spent on meals outside of the home. Kentucky is also known to have high rates of childhood and adult obesity. Choosing healthier items when dining out could help us stay within our daily caloric limit and reach our ideal weight. In the 2015-2020 Dietary Guidelines, this calorie limit varies based on age, gender and activity level. To learn what these limits are for you, visit http://health.gov/dietaryguidelines/2015/guidelines/appendix-2/ #footnote-3. A 2011 survey conducted by Janet Mullins, University of Kentucky extension professor, showed the need for menu labeling. She found that at least half of the nearly 1,000 survey participants, which were professionals in nutrition-related fields, could not identify menu items with the fewest calories on their own. Several factors can play into an item’s calorie count including preparation methods, amount of fat or oil used and portion size. FRESH FISH TACOS Ingredients: 2 tablespoons vegetable oil 1 pound mild fish filets (such as fresh water bass, catfish or tilapia) 1 teaspoon taco seasoning 3 tablespoons fresh or bottled lime juice, divided 3 tablespoons honey ½ cup low fat mayonnaise 2 cups coleslaw mix ½ medium onion, finely chopped 8 4.5-inch soft corn tortillas

bowl. Add the coleslaw mix and onion to the dressing and mix to coat. If desired, add about ½ cup chopped cilantro to the cabbage mixture. Wrap tortillas in a damp paper towel and place on a microwave safe plate. Microwave for one minute, until warm and pliable. Place 2 ounces fish and cup coleslaw mixture in each tortilla. Add toppings of choice if desired.

Tips for Insect Repellent Use

If you are in an area with mosquitos, you will likely find that repellents are very helpful tools in preventing many mosquito bites. Insect repellents are made for use on bare skin. There are many different types of repellents available including creams, sprays (aerosol and pump spray), solid repellents (sticks) and liquids. There are also products available that produce a smoke or vapor that is used to prevent insects, usually mosquitos, from bothering and biting people. These types of products may be torches, candles or coils. Although repellents do not kill insects that may pester you this time of year, they certainly discourage bites from happening. Here are a few rules to remember when you are using insect repellents: Some of the best protection can come from wearing long sleeves and long pants when you are outside. Remember light colored clothes are important for keeping cool in warmer temperatures. When applying insect repellent, use it only on exposed skin. You do not have to put it on underneath clothes unless the mosquitoes can pierce through the clothes. Avoid breathing in the repellent and keep it away from eyes. Avoid putting repellents on children’s hands. Children are more likely to put their hands near their eyes and mouth. You should never put repellents on skin that is irritated or broken. Make sure to cover all exposed skin. A mosquito has the ability to find an uncovered spot the size of dime. Make sure to read how long the protection will last. Different types of repellent have different amounts of time for protection. Make sure to wash all skin that has had repellent on it after coming indoors. Make sure to use repellent according to the directions on the packaging.
