September 2015 Volume 9 Issue 1 Yesterday, I went by a local restaurant to eat with a co-worker from another county. The restaurant was filled with people visiting family, taking a break from work, and taking time to eat from working on community projects. I talked with several people, knew even more and introduced my co-worker. She felt so warmly greeted and accepted by our community. This morning, the boys and I stopped by a local store and was greeted and teased by the coffee drinkers discussing local goings on (and politics, I’m sure). Last night, I attended church in town and was greeted with genuine kindness. My son attended a different church in town. I asked about who were his friends in attendance. He said, we are more than friends...we are a family. Our community is filled with people who love people. Our community is poised with warm greeting and salutations. Our community comes together in times of adversity. Our community is made up of people and we are a family. A family that will grieve together. A family that will lift others up. A family that can celebrate together. A family that can learn together, work together and serve together. There is no place on earth that I would rather be‌.than with this community and this family.

Did you Know????????? Nearly a quarter of sodium in the American diet comes from restaurant foods, so choose wisely to reduce sodium from menu to mouth. About 9 in 10 Americans consume too much sodium and too much sodium increases risk for high blood pressure.

Home Canning the Right Way: County Workshop taught by Experts!!!! Few things taste better than fresh-picked produce. Hickman County residents can savor the flavor of summer’s bounty throughout the year and save money on groceries by preserving fresh fruits and vegetables. The University of Kentucky Cooperative Extension Service is teaching community members how to properly preserve a variety of foods by offering free food preservation workshops across the state. One is coming to the Hickman County Extension Office from 9:30-3:00 on September 1-3. A team of experienced home food preservationists will lead the three-day workshop, covering a variety of methods, from water-bath and pressure canning to drying and freezing. During this hands-on workshop, participants will learn how to can green beans, dry apple slices, and preserve homemade salsa, jams and jellies. You can attend one day or all three. Most importantly, participants will gain the confidence and experience needed to safely preserve food in their home kitchens. Food preservation techniques from the workshops are based on new recommendations and use the safest methods. By learning how to preserve food properly, residents will protect and maintain the health of their families. All necessary canning materials will be provided for participants. You can attend one day or all three, call for class schedule. Additional information is available as well as class registration by contacting Melissa Goodman at the Hickman County Extension Office at 270-653-2231 or mgoodman@uky.edu.

Can I Can in my Electric Pressure Cooker or Multi-Cooker? Electric pressure cookers or multi-cookers can be great time savers in cooking family meals, but they should not be used for pressure canning. In order for any pressure cooker to be safely used as a pressure canner, it must meet three requirements: 1. Be large enough to hold at least 4 quart jars standing upright. This minimum size ensures that the canner will not heat and cool too quickly and helps maintain the high temperature needed to kill any spores of Clostridium botulinum (the bacterium that causes botulism) that might be present. 2. Be able to measure and regulate pressure (at 5, 10 and /or 15 psi), to ensure that the required temperature is maintained for the entire processing time. 3. Have a port for venting excess air from the canner before bringing it up to pressure. Any air that is mixed with the steam inside the canner will reduce the temperature. Lower temperatures are less effective at killing harmful bacteria. Electric pressure cookers or multi-cookers currently on the market do not meet these requirements. They have not been tested for use with USDA-approved processes and should not be used for pressure canning.
