A New Year, a new you All those wonderful resolutions are just waiting for us to take them on. Right? I’m over the old clichés. Why change who you are? That’s way too much work. We all have room for improvement but being kind to yourself should be top priority for the New Year. At times we suffer from self criticism -- we need to be skinnier, richer, prettier..., and we could be our own worst enemy, putting too much pressure on ourselves and as a result stressing out. And what about what we could have, or should have done …With this New Year beginning and our momentum being at an all time high, it’s the perfect time to start anew. Pull out your vision boards and start projecting what you want, forget about last year’s shortfalls and harness any ridiculous expectations. Every day is a new day, a new opportunity for creating change and great things. Whether its weight loss, prosperity, love or better health you’re seeking, go for it, but you don’t beat yourself up about it! Taking a day at a time with small daily goals will yield positive results. And surrounding yourself with positive people will make it a heck of a lot easier to achieve them. IT’s time to clear out those energy vampires that remind you of your shortcomings and perhaps find new friends. My New Year’s resolution is making time for charity work. This year, Hola Latinos Magazine will sponsor a number of charitable causes, as I personally find great reward in helping others. One of my favorite charities is St. Jude Children’s Research Hospital as every dollar really goes to chemotherapy treatments for less fortunate children with cancer. In this issue, we have some great advice on new beauty technology to make you look great, but most importantly you need to feel great too so there’s some tips on staying healthy! Meditation, vacation, exercise, diet, whatever healthy road you take, the future is in your hands to make it better, you just have to set realistic goals, BELIEVE and take action! Happy New Year and success to all!

The Art of “Art Baseling” There’s an Art to “Art Baseling.” By: Nancy Esteves (nanholalatinos@gmail.com)
With the addition of Miami Art week featuring over twenty art fairs organized simultaneously between Wynwood, Downtown and Miami Beach, every year that passes the offerings overwhelmingly multiply. I tackled it like I would have any other travel destination—mapping, planning, and I “art baseled” my way through the diverse fusion of art, design, fashion, music, celebs and the bashes, in search of that celebrity glimpse, a new Picasso or art history in the making. It really is an art to work your way through all the “must sees”—and the parties in just a few days. One of the most talked about events every year, this prestigious Art Basel affair has even earned some of its own well-deserved expressions like “Happy Basel!” and “Basel Tov.” One thing’s for sure, no one experiences Art Basel quite the same way—with all the diverse kinds of art to review-art is truly in the eye of the Art Basel beholder. It’s a great place to people watch too, as many goers become works of art themselves.

Pairing curated installations of Modern and contemporary work with stimulating programming, Art Basel’s 2015 edition featured strong sales across all levels of the market. Booths sold out within hours of the VIP opening, new satellite fairs opening like X-Contemporary, Mana Contemporary and the impressive Purvis Young and Context Art Fair, featuring cutting edge work. Sixteen Louise Nevelsons sold the first day for prices ranging from $75,000 to $1 million. By the second day of the exhibit, New York’s Van de Weghe gallery had reported sales of the 1954 Francis Bacon oil Man in Blue VI priced at $15 million, Pablo Picasso’s 1971 painting Buste au Chapeaupriced at $10.5 million and Damian Hirst’s 2005 multimedia I Love You But I Don’t Like You priced at $900,000.

Art Basel boasts the largest fair in the Americas offering an unrivaled opportunity for Latin American dealers, gallerists and artists to connect with global buyers. VIP Gallerist Henrique Faria, owner of one of the premier Latin American art galleries was present again this year with some fabulous art by Latin artists. Cuban art was more visible and popular due to the changing political climate. The Sean Kelly Gallery, in New York, featured several works by Los Carpinteros: Marco Antonio Castillo Valdés and Dagoberto Rodríguez Sánchez, Cuban-born artists. Among the sculptures on display: “Surf de Lego Azul” (2014), a blue surfboard made of Legos, and “Conga Blanca” (2015), that resembles a conga drum melting into a puddle.
Presenting 267 leading international galleries from 32 countries, the show attracted an attendance of 77,000 over five days, including major private collectors as well as directors, curators, trustees and patrons of nearly 200 museum and institution groups. Collectors from over 110 countries attended the show, with first-time collectors coming from Cambodia, Ethiopia, Nicaragua, Romania, Togo and Zimbabwe. The show was spearheaded by Noah Horowitz, Art Basel’s newly appointed Director Americas.

¡Pura magia!
An unforgettable evening at
LUIS MIGUEL concert in Miami
By: Nancy Esteves (nanholalatinos@gmail.com)
With that suave elegance that always characterizes him, Luis Miguel shared his romantic hits and charmed the audience with his amazing voice, charisma and sex appeal. In a sold out concert at American Airlines Arena, Luis Miguel proved once again he’s the unrivaled idol of romantic music.
Luis Miguel just began his U.S. tour and this one in Miami was definitely a hit! He gave the best of his repertoire and got a well deserved standing ovation during a magical night where he even handed white roses to women in the front rows. Hits like “Que nivel de mujer”, “La incondicional” and “No culpes a la noche” stole the evening. As the evening progressed with a musical potpourri of hits and romantic ballads like “Amor, amor, amor”, “Suave” and “Vuelve”, “Sabor a mi” and “Sin ti” Luis Miguel once again proved he has one of the most privileged voices in the world. The Mexican singer payed homage to
Mexico with his spectacular Mariachi band singing the popular tunes “México en la piel,” “La Bikina,”, “Cielito Lindo,”, “El Viajero” and “Cucurrucucu Paloma.” He sang for nearly two hours despite the fact that singer is not in the best of health because of his recent illness, rhinopharyngitis. He romanced fans with his nostalgic music that will never go out of style. Near the end of the show, he took off his tie and invited the audience to dance to the favorite tunes” “Será que no me amas,” “Como es posible que a mi lado,” and “Te propongo esta noche”--just pure unforgettable magic!

St. Petersburg: A Mediterranean- style Escape in Florida
I
By: Nancy Esteves (nanholalatinos@gmail.com)
discovered a place where you can have your beach and Mediterranean escape all at the same time, and better yet, without leaving the country. Hotel Zamora located in St. Petersburg, Florida, a city which glimmers between the Gulf of Mexico and Tampa Bay is a hidden gem. With white-sand beaches and crystal-clear water as its back drop, this Mediterranean inspired Boutique Hotel has the best ingredients for a great getaway. The first new hotel to be built in St. Pete Beach in decades, The Hotel Zamora is a white-washed Mediterranean palace with all the modern amenities yet with an old Europe feel as it was inspired by the architecture of its namesake Spanish province--Zamora. The hotel’s striking Romanesque façade is the framework for its luxury suites with “balconies overlooking the Intracoastal Waterway and Gulf of Mexico. It’s the perfect combination of the old with the new. What’s great is that it’s not a huge hotel so you have a more private experience, less touristy. As many locals visit their award winning restaurant, you can 28 | January 2016 | www.holalatinonews.com | Travel
truly enjoy the whole St. Pete’s experience. For beach lovers, St. Petersburg boasts one of the top 10 U.S. Beaches, so if you came for the beach experience, the Hotel Zamora offers sun loungers and umbrellas and even - a daybed built for two – for a luxury beach day.
The accommodations:
Stylishly decorated, The Hotel Zamora’s luxurious oversized king suites and guest rooms feature kingsize or double queen-size beds and comfortable work spaces. Walk-in spa showers, soaking bathtubs and plush Terry bathrobes create a spa-like retreat. From my balcony I had amazing views overlooking both the Intracoastal Waterway and the Gulf of Mexico. Amenities include an outdoor pool, a hot tub, a 24hour exercise room and a 7-slip dock marina. I even enjoyed a morning of paddle boarding right off the property and took a boat cruise right off their marina to view dolphins. No need to go anywhere as the property offers many services. If you’d like to check out the hotel: www.thehotelzamora.com.
Terrific Tapas: Zamora Mussels with fennel
Hotel Zamora’s Castile Restaurant
The Castile Restaurant and their rooftop bar have outstanding food and views. The Hotel Zamora, recently welcomed new Executive Chef Louis Scaramuzzi to lead the culinary team at Castile Restaurant. Chef Louis conceptualizes menus for the restaurant as well as the property’s new 360° Rooftop, which offers amazing unobstructed, panoramic views of downtown St. Petersburg and the Gulf of Mexico. Chef Louis Scaramuzzi brings more than 25 years of knowledge and experience to Castile’s talented culinary team.
and heirloom tomatoes; the boneless Short Rib with celery root puree, and sweet potatoes fries; Oak Grilled Tenderloin with crispy fingerling potatoes, and a roja cinnamon reduction; Seared Diver Scallops with manchego risotto (my alltime favorite) with smoked tomatoes prosecco cream and the coriander crusted; Ahi Tuna with mofongo, crispy pork belly and tomatoe orange broth.
The food is outstanding:
My favorite appetizers: Conch Fritters with brandy mustard sauce, Bloody Mary cocktail sauce, yucca and plantain chips; Jumbo Stuffed Meatball made from beef, chorizo, crispy Serrano ham, queso fresco and chimichurri sauce. Relaxing Sundy Brunch: I love their Fried Oyster Eggs Benedict with Creole hollandaise.
By the pool, Chef Louis prepared an amazing Paella Zamora made with shrimps, scallops, mussels, fish, saffron risotto and roasted garlic crostini.
At the 360° Rooftop, I enjoyed amazing sunsets, appetizer and great signature cocktails. During a Bloody Mary extravaganza, I made my own Bloodys in their private room that included shrimp, oysters and delicious fixings!

Drink Up COFFEE IS GOOD FOR YOUR HEALTH
E
very morning, we drink our coffee (sometimes a bit too personalized) enjoying every sip of it, but really we put no thought into how healthy coffee really is. It turns out coffee beans are incredibly healthy fruits, and are one of the greatest source of antioxidants in the American diet. The good news is that the average American drinks about 3 cups of coffee per day. The bad news is that in order to achieve coffee’s greatest protective benefits, one needs to drink anywhere from 4-12 cups of coffee every day. In doing so, coffee can quite possibly prevent some of the most horrific killers of our society, such as cardiovascular disease, cancer, diabetes, liver disease, Alzheimer’s. How can coffee do this? Apparently coffee contains chlorogenic acid (an incredibly powerful anti-oxidant), which has amazing health benefits.
Cancer Institute drinking 6 cups of coffee per day lowered the risk of developing prostate cancer by an outstanding 18%. In an issue of Breast Cancer Research, women who consumed 5 cups of coffee per day had a 57% decrease risk of developing breast cancer. Another study showed that women who drink coffee consistently, had a 30% decreased chance of developing endometrial cancer when compared to those women who do not drink coffee. Lastly, coffee drinkers had a 30% lower incidence of colorectal cancer. Again chlorogenic acid is a compound believed and credited for these amazing results.

New Year Resolution:
SLEEP MORE FOR A BETTER BODY & BETTER HEALTH IN THE NEW YEAR It’s the New Year and we are all concerned about those extra pounds we’ve put on. There’s an overwhelming amount of information and programs to make your head spin. Good Sleep Aids Diet The debate about the best way to achieve a healthy weight always revolves around eating and movement. If you want to look better, the most common suggestion is “eat less and move more.” Many of us don’t realize that sleep is the key to being rewarded for your diet and fitness efforts. According to the Centers for Disease Control and Prevention, more than 35 percent of people are sleep deprived. And when you consider that the statistic for obesity is nearly identical, it’s easy to connect the dots and discover that the connection is 36 | January 2016 | www.holalatinonews.com
not a coincidence. Not sleeping enough—less than seven hours of sleep per night—can reduce and undo the benefits of dieting, according to research published in the Annals of Internal Medicine. But not only that, the body heals itself when it is in a state of complete relaxation, therefore if you are not into daily yoga, which has similar benefits, the best thing you can do for yourself is get a good night’s sleep. It’s that simple. Your mood will also be better and we all know the effects of a positive attitude on your body. Of course, along with a good night’s sleep: -Eat meals that focus on lean protein and vegetables. -Exercise at least three times per week, focusing on both weights and cardio.
Be aware of which foods are truly healthy and which they need to limit—and they do. A little meditation will go a long way too: • Decreases stress, anxiety and depression • Boosts immune function • Decreases pain and inflammation • Increases memory and improves focus and attention • Increases capacity for emotional regulation and selfcontrol • Increases overall happiness and life satisfaction And most importantly, water—drink enough and give yourself a cheat day…you have to be kind to yourself, otherwise the stress of it all will make you gain more weight!! Mind over matter…

SET YOUR GOALS FOR 2016! The beginning of a New Year brings us the opportunity to look back and take a moment to be grateful for the experiences and learnings that have contributed to our journey in this human experience. Now is a great time to refresh our goals and plan for the experiences we would like to have. The core of Ayurvedic teachings is based on the concept of purpose, or dharma, which defines perfect health as a life with purpose. How can we define our true purpose? Where shall we start? The question can seem very deep and broad at the same time. The spiritual laws of the Vedic science can help us in respond to this internal puzzle and reveal our answer in a very simple and unexpected way. Start with the basics… There are many layers to our
own being, including a physical, emotional, mental and spiritual body. In order to feel fulfilled, there must be harmony in every single layer of our existence. Here is an exercise that can guide you to set your new resolutions. Physical Body – Determine what you want to achieve regarding your state of health and wellbeing. Identify whether you need to change your lifestyle, daily routine, or begin a new whole food diet with supporting fitness practice. List the three most important goals. Emotional State – Identify the type of relationships you have established with people around you. Do you experience toxicity at this level? Determine any changes that could make you feel better. Include in your list the three emotions most important to you and

set them as goals for 2016. Mind – The activity of our mind never stops, not even when we sleep. Do you have a project to guide our mind towards a more creative outcome? List one or two projects you would like to accomplish in this area. It could be reading a new book, enrolling to a course or workshop, or learning a new language. Spirit – This might be the simpler goal as our spirit only requires from us awareness. Identify one goal to nurture your spirit this year. It could be to commit to a daily meditation practice or connecting with nature for a few minutes every day. May you fulfill your goals and enjoy health, happiness and wellbeing this New Year!
Después de las fiestas
Viene la Limpieza Por: Maribel Ruiz, Beauty of Wax

I was born on Christmas Eve. In the Holiday Spirit I am giving the floor to PETS TRUST MIAMI. I am sure you have seen the TV spots with President Michael Rosenberg spending the night in the Miami Shelter to show people how innocent pets are subjected to a life in a cold cell. People’s votes just don’t seem to matter to shelter scrooges. Not everyone is as fortunate as me to have a home sweet home. So sad if a Pet Parent passes away and their pet winds up in the Miami Shelter. The term shelter is not the real description, it’s quite the opposite. We must get together and set an example to the Shelter Scrooges of the South they may not be aware of the emotional intelligence that pets have. For that matter farmers ignore the intelligence farm animals have too. It’s sad enough that many pets are surrendered and abandoned why do they also deserve to be euthanized especially when all of the kind Miami residents voted for a no kill shelter? It’s naughty not nice to disregard the peoples votes. I would be FUREVER GRATEFUL if the Miami Residents would protest the fact that their votes do not matter. Connie Francis Sings Spanish and Latin American Favorites
Cuchi -Cuchi Charo’s trademarked expression
After the success of her 1959 album Connie Francis Sings Italian Favorites (which remained on the albums chart for 81 weeks and peaked at No. 4), Francis released more albums which appealed to immigrants in the United States. Francis, who had studied Spanish in school, was fluent in the language which prompted her to perform the songs either entirely in Spanish or bilingual with a few lines sung in English. The album was originally released in October 1960 on MGM Records. The album consisted of 13 songs, although 15 playbacks had been produced. First pressings of the album contain the complete intended listing of all 15 tracks on the cover. The songs Amor and Aquellos ojos verdes were not released in the U. S. and at that time were only available on singles and EPs in Spain and South America.

Desi Arnaz
Domingo Samudio
Born to a wealthy family, the Arnazes fled Cuba for Miami after a revolution in 1933. After working a number of odd jobs to help support the family, Desi got his first musician’s gig as a guitarist for the Siboney Septet. After working briefly for Xavier Cugat in New York, Arnaz returned to Miami to lead a combo of his own and introduce the Conga Line to American audiences. It was such a hit, both locally and nationally, that Arnaz returned to New York to start his own band. He was offered a role in the 1939 Broadway musical Too Many Girls and later starred in Hollywood’s film version. It was there that he met his future wife, Lucille Ball. They were married in 1940 and the rest is history.
was born near Dallas Texas to a Spanish speaking couple of Mexican descent. He made his singing debut while still in second grade, representing his school in a live radio broadcast. Later, he took up guitar and formed a high school group with some friends, one of whom was Trini Lopez, who would later have several hit records of his own. In the summer of 1964, Samudio went into the studio with a song that used the words “Hully Gully”. When told by the record company that they couldn’t use that phrase, Sam said, “OK, let’s kick it off, and I’ll make something up. “The name of my cat was ‘Wooly Bully’, so I started from there. I was just goofing around and counted off in Tex-Mex. It became the first American record to sell a million copies during the onslaught of the all the British groups.”

“Mambo King” Tito Puente is born
Jose Feliciano
Jose was born blind, to humble beginnings, on September 10, 1945, in Lares, Puerto Rico. One of eleven boys, his love affair with music began at the age of three when he first accompanied his uncle on a tin cracker can. When he was five, his family immigrated to New York City. Young Jose learned to play the concertina at age six, using a handful of records as his teacher. At eight, he entertained his classmates at PS 57, and at nine, performed at The Puerto Rican Theater in the Bronx. Venturing beyond the accordion, he taught himself to play the guitar with undaunted determination and again, with nothing but records as his teacher, practicing for as many as 14 hours a day. Exposed to the Rock’n’Roll of the 50’s, Jose was then inspired to sing. He played in coffee houses, clubs and cafes from Boston to Cleveland to Detroit, Chicago and Denver. Jack Sommer, an A&R executive from RCA, went to the Village to audition a trio who was there, saw Jose perform and signed him to RCA, instead. This was, indeed, the Birth of a Star. Jose’s first major break in the industry, however, happened in the Spanish market when, in 1966, RCA execs in Los Angeles assigned him to staff producer, Rick Jarrard. Rick closely studied Jose’ intriguing style and recommended that he record a Doors’ song that he’d heard him perform in concert — a tune called, “Light My Fire”…
Tito Puente, the bandleader and percussionist who helped popularize Latin dance music and jazz in America, is born on this day in 1923 in New York City. During a career that spanned six decades, the dynamic showman nicknamed “El Rey” (The King), recorded over 100 albums, won five Grammy Awards and was referred to by The New York Times as “the most important Latin musician of the last half century.” Ernest “Tito” Puente, the son of Puerto Rican immigrants, grew up in the Manhattan neighborhood then known as Spanish Harlem. As a child, he learned to play various instruments, including the timbales, a type of drum that would later become his signature. During World War II (1939-45), Puente who performed a variety of Latin music styles, received the title “King of Mambo” for his role in popularizing the fast-paced, rhythmic form of Cuban music. (Puente later played himself in the 1992 movie “The Mambo Kings,” based on Oscar Hijuelos’ novel “The Mambo Kings Play Songs of Love.”) In 1958, Puente released the album “Dance Mania,” which went on to become an international best-seller. In 1963, he recorded “Oye Como Va,” a song that would be a huge hit for rock guitarist Carlos Santana (1947-) and his band in the 1970s.
Celia Cruz Celia Cruz was born in Havana, Cuba on October 21, 1925. She first gained recognition in the 1950s, as a singer with the orchestra Sonora Matancera. Relocating to the United States after the ascent of Fidel Castro, Cruz recorded 23 gold records with Tito Puente, the Fania All-Stars and other collaborators. Cruz won a “La hora del té” (“Tea Time”) singing contest, propelling her into a music career. Cruz’s first recordings were made in 1948. In 1950, her singing career started its upward journey to stardom when she began singing with celebrated Cuban orchestra Sonora Matancera. Cruz helped propel the group— and Latin music in general—to new heights, and the band toured widely through Central and North America throughout the 1950s. At the time of the 1959 Communist takeover of Cuba, Sonora Matancera was touring in Mexico, and members of the band decided to leave Cuba for good, crossing into the United States instead of returning to their homeland. Cruz became a U.S. citizen in 1961, and Fidel Castro, enraged by Cruz’s defection, barred her from returning to Cuba. Cruz is remembered as one of the 20th century’s most beloved and popular Latin musicians.

I understand you also have a new original album?
-14 songs all original songs I produced myself, I also produced “Into the Future.”
Do you have a favorite Latino song that you love to sing?
- I always loved “La Bamba” as my father was a singer, actor, musician and dancer. I was singing “La Bamba with my father since I was eight years old but somebody beat me to recording it --Richie Valens.
It’s by the “Grace of God” that Trini’s father gave him a guitar that he later nailed his career with the No.1 hit song, “If I Had a Hammer.” To follow were many hits that he wrote as well songs like “I’m Coming Home Cindy,” “Michael,” “Lemon Tree,” Kansas City,” and “America” and of course, everyone’s favorite-- “La Bamba.” Trini Lopez formed his first band in Wichita Falls, Texas, at the age of 15. In 1958, at the recommendation of Buddy Holly, Trini and his group “The Big Beats” went to producer Norman Petty in Clovis, New Mexico. Lopez left the group and made his first solo recording, his own composition “The Right To Rock”, for the Dallas-based Volk Records, and then signed with King Records in 1959. Trini then landed a steady engagement at the nightclub PJ’s, where his audience grew quickly. He was heard there by his all time favorite singer and his idol, Frank Sinatra, who had started his own label Reprise Records, and signed Trini Lopez. His debut live album, Trini Lopez at PJ’s, was released in 1963.The album included a version of “If I Had a Hammer”, which reached number one in 38 countries (no. 3 in the United States), and was a radio favorite for many years. It sold over one million copies, and was awarded a gold disc. As to his still-to-date famous hit, “La Bamba” it was later reissued as a single in 1966. His popularity with that song led the Gibson Guitar Corporation to ask him in 1964 to design a guitar for them. He ended up designing two: the Trini Lopez Standard, a rock and roll model based on the Gibson 46 | January 2016 | www.holalatinonews.com
Did the Producer’s of the film La Bamba contact you to do the sound track?
- I was always singing La Bamba. It was written in the1920’s as a wedding song and then in 1957 I heard it on the radio. Richie Valens, who sang it was involved in a fatal plane crash, and then a year or so later I was called to go to Hollywood and they took advantage of my popularity and then I recorded it, and I made the song international…everybody thought the movie was about my life story but it really was about Richie Valens. ES-335 semi hollow body, and the Lopez Deluxe, a variation of a Gibson jazz guitar designed by Barney Kessel. Both of these guitars were in production from 1964 until 1971, and are now highly sought-after among collectors.
Exclusive Interview with Trini Lopez: What inspired you to produce your new album “Into the Future?”
-I wanted to do Frank Sinatra songs my whole life ever since I was eight years old. I always loved his voice; he’s the best singer ever. I used to dream that one day that I would see him walking down the street.
Did you ever work with him?
-I started in a club in Hollywood California called the “Ye Little Club”, where Connie Stevens would come in; I was there for a year but I really wanted to work in PJ’s and that’s where I met Sinatra. He signed me up
You just finished your life story for your novel, what will the title be?
- “By the Grace of God.” “My secretary took years to do my life story.
Tell us about the February 14th Valentrini Day event at the Seminole Hard Rock? Do you enjoy helping charities?
-I’ve been working with charities since 1963 there is a list at my website.
How did you become affiliated with the Footlighter’s Club?
-It was my turn I guess. They will be playing one of my songs from my new CD “Fly like an Eagle” by Steve Miller, will performing it at the Hard Rock show in February.
At age your age, how do you keep your voice so fabulous?
-I take care of myself. I play tennis and golf.
Are you a health freak?
-I am a health conscious person. Even since I was young, I never drank hard liquor, never smoked or used drugs. I love Budweiser. I am a happy camper just with my beer. My mind and soul are in the right place because I like people, I love my fans.”
-Were you friends with Elvis?
Elvis was my friend he was a great guy he was so nice, very down to earth, that’s why I liked him, he would always want to talk to me about religion, he was my neighbor in Palm Springs. I met all the Memphis Mafia.”
Who are some of your favorite legends?
- Frank Sinatra. Bob Hope, Jack Benny, Woody Allen, and Carol Burnett.
Would acting be of interest to you again?
-I would love too! I was in “Marriage on the Rocks and the Dirty Dozen”.
What do you think about the new music compared to the music of yesterday?
- There are some pretty good songs and talented artists out there... As a matter of fact my new album is even going to have some Reggae. Music before was more romantic--I love ballads. Some of my favorite songs are Frank Sinatra songs.”
Where do you live now?
-I live in Palm Springs. I retired in 1981. I got bored of traveling around the world, like twenty times, so then I would sleep nine to ten hours a night and play tennis and golf.” To read more about Trini Lopez, you can visit his website: www.trinilopez.com

The French Paradox Wine and Cheese Pairings
Maybe you’ve heard of this term before, but if not, look at Parisians who are well known for eating lots of cheese (with an almost unlimited supply of the best) and soufflé, Éclair, Crêpes and Crème Brûlée and every imaginable gratin, and they can actually stay thin. After much research and digressions, it was concluded that the influence of the Mediterranean diet and above all, the wonderful wine, are responsible for such a fascinating balance, favorable to the senses, and responsible for good nutrition. A good and worthy glass of wine is great with any food, any time (in my case I pair it with a snack at the end of the morning or late breakfast). Also very important are quantities. Our nearly perfect bodies need very little to run, so quality rather than quantity is key. As my grandmother Aura would say, “less is more.” Want to know learn more, just email me. TURKEY ROULADE WITH WONDERFUL PISTACHIO PESTO
Pistachios, apples and onions are stuffed in this impressive, but easy main course. A nutty Wonderful Pistachio pesto is the perfect accompaniment. Prep: 1 hour 15 minutes / Time to Table: 2 hours 30 minutes / Serves: 6 to 8
Ingredients: Wonderful Pistachio Pesto: • 1½ cups baby spinach (about 2½ ounces) • 1 cup Wonderful Pistachios Roasted No Salt (about 4½ ounces) • 2 large cloves garlic • ¼ teaspoon salt • ¼ teaspoon pepper • ¾ cup olive oil Turkey Roulade: • ½ cup dried cranberries • 4 tablespoons olive oil, divided • 1 yellow onion, diced into ¼-inch pieces (about 1½ cups) • 1 granny smith apple, cored, and cut into ½-inch pieces (about 1 2/3 cups) • 2 cups low-sodium chicken broth • 4 teaspoons fresh thyme • 5 teaspoons fresh rosemary • ¾ teaspoon salt, divided • ½ teaspoon ground black pepper, divided
• 3 ounces day- old french bread, cut or torn into 1-inch pieces (about 1¾ cups) • ¾ cup unsalted pistachios, toasted, and roughly chopped • 1 skinless, boneless, turkey breast half, butterflied (about 2½ lbs) • 3 small red onions, cut into wedges Directions: 1. To make the pesto, place spinach, pistachios, garlic, salt and pepper in the bowl of a food processor. Slowly pour in oil, while machine is running, about 20 seconds. Pulse to completely combine. Set aside in the refrigerator, up to one day ahead. 2. To make turkey roulade, position oven rack in the center and heat oven to 375°F. Place cranberries in a small bowl and cover with boiling water. Let sit for 5 minutes until softened. Drain and set aside. 3. Meanwhile, heat 1 tablespoon of oil in a medium skillet on medium heat. Add onion and cook 5 to 7 minutes until softened. Add
apple; continue to cook, 5 to 7 minutes, until onion and apples are golden. Add ½ cup chicken broth, thyme, rosemary, ½ teaspoon salt and ¼ teaspoons pepper, and simmer. Stirring occasionally and scraping up any bits that stick to the bottom of the pan, about 5 minutes, until broth is absorbed and apples are softened. Transfer to a large bowl. 4. Add bread and cranberries to apples and stir to combine. Pour in ⅓ cup chicken broth and stir to combine. Add additional 2 tablespoons chicken broth, as needed, until bread is moist, but not wet. Stir in pistachios and set aside to cool. 5. Place turkey between sheets of plastic wrap, and pound with a meat mallet or rolling pin, to about ½-inch thick. Season each side with remaining ¼ teaspoons salt and ¼ teaspoons pepper. Place turkey, skinned side down on working surface. Spread stuffing over turkey leaving a border uncovered, about 1½-inches all around. Roll
up and secure tightly with kitchen twine. 6. Heat a roasting pan (or large skillet), with 2 tablespoons olive oil, on medium to medium-high heat. Brown turkey roulade on all sides, 12 to 15 minutes. Set aside on a plate. Add wire rack to roasting pan and place turkey on rack. Combine onion wedges in a bowl with 1 tablespoons oil and place in roasting pan alongside turkey. Add ½ cup chicken broth to roasting pan and place in oven. 7. Cook for 1 hour and 15 minutes, until turkey temperature reaches 165°F. Remove from oven, transfer to a cutting board and tent with foil. Allow to rest 10 to 15 minutes, until juices have had time to absorb, before cutting into 6 to 8 slices. 8. Meanwhile, add remaining chicken broth (about ½ cup) to roasting pan, and scrape up any bits with a wooden spoon. Serve pan drippings alongside turkey with pistachio pesto.

PERUCHO’S PERUVIAN CUISINE A Hidden Gem in North Miami Peruvian cuisine is one of my all time favorites. If you’re on a health kick this New Year, there’s a great variety of seafood dishes featured in traditional Peruvian cuisine which make it a very healthy food choice. Ceviche, a sushi lover’s dream, made from fresh raw fish or seafood cured in citrus juices and spiced with “ají”( yellow chili peppers) as its base is actually very low in calories with virtually no carbs. Peruvian gastronomy is a culinary art that is renowned for its fusions of flavors and superb presentation. One traditional dish and my favorite, “Kausa,” is made with yellow potatoes and is stuffed with crabmeat, tuna or chicken--great as either an entrée or appetizer. If you’re a Peruvian food lover like me, I discovered a fantastic hidden gem called Perucho’s Restaurant located near 163rd Street and NW 6th avenue where you can try all these amazing traditional dishes. What I mostly like about Perucho’s is that they serve scrumptious good size, freshly prepared portions at very reasonable prices. You can actually get a fabulous meal (fish on the menu), with a salad and a soda for only $8.99 during their daily lunch specials

(11 am -3pm). Their ceviche is exquisite and they outstandingly prepare one of my other favorite dishes, “lomo saltado” which is a hearty meal that includes a stir fry combining marinated strips of sirloin, or other beef steak, with onions, tomatoes, served with French fries and rice. The spicy side sauces are amazing too! Traditional dishes served at Perucho’s include: LOMITO A LA HUANCAINA, LOMO SALTADO CON RISOTTO, AJI DE GALLINA, TALLARIN SALTADO, TACU TACU CON LOMO, PARIHUELA and more. You can check out their menu at www.peruchosrestaurant.com. Perucho’s also has a cozy family friendly ambiance and they have karaoke and live music on Saturday nights featuring local artists. They are open for lunch and dinner. 666 NE 167th St Miami. For more information: 305-944-7102.

CASTANNETTE CASTING Presents January 2016 Model of the month
Sidney
Hello! My name is Sidney and I am 19 years old. I live in Miami Beach however I grew up in a small town called Henderson located in the state of Nebraska. Moving to Miami was a huge change for me but I am enjoying the weather and of course the ten minute walk to the beach. It also helps that I have some family close by in Florida from Honduras. I currently play the ukulele and the mandolin; In addition I used to play the drums in high school. I also practice a variety of physical activities such as yoga, bare, kickboxing, spinning, and running. Cooking and baking is also an important hobby for me and my healthy fit lifestyle.
