MODERNIST MALTA: THE ARCHITECTURAL LEGACY THE MODERN MOVEMENT IN MALTESE 20TH CENTURY ARCHITECTURE IN AN EXHIBITION

Aiming to raise public awareness about the extent and wealth of Modernist architecture in Malta dating from the 30s up to 70s, the exhibition Modernist Malta: the architectural legacy, hosted at the St James Cavalier Centre for Creativity from January 23 to February 27, features dozens of black and white photographs of some 35 to 40 buildings and properties that should be recognised as part of Malta’s more recent architectural heritage. The photographs were taken by five professional photographers who were commissioned by the Maltese Chamber of Architects & Civil Engineers (Kamra tal-Periti) and the National Trust of Malta (Din l-Art Helwa) in order to capture the meaning and the beauty of the Modernist movement. All buildings on display embody unique qualities of the Modernist movement, be it in the articulation of space, the massing of built form or the programming of colour. Together, the selected buildings are a testimony to the sense of architectural exploration which emerged at a time when Malta was coming to terms with a completely new identity, purpose and role in the family of nations. These buildings are tourism related properties, ecclesiastical sites, industrial and commercial developments, and private residences. The photographers shot, amongst others, pictures of some of the country’s most remarkable schools, including the Qala School, the Msida primary school, as well as post war industrial and commercial buildings such as the Toyota Building, the Mellieha Holiday

Centre Hotel (the Danish Village) and the Rediffusion House in G’Mangia. Other notable works of architecture to be presented in the exhibition include the well known and highly accomplished Manikata Church as well as several individual residences. Visitors to the exhibition will see a timeline of the period, incorporating all the arts including painting, sculpture and literature, in order to help the public fully comprehend the context of the period under examination. The catalogue of the exhibition Modernist Malta: The Legacy in Architecture was funded by the Malta Council for Culture and the Arts, and includes a comprehensive selection of the photographers’ work as well as two significant essays: a historical account of Modernist architecture in Malta by leading architectural historian Perit Conrad Thake and a personal record of Modernist architecture as seen through the eyes of the architects themselves written by Petra Bianchi, director and council member of Din l-Art Helwa. Scottish singer, actress and teacher Denise Mulholland knew exactly what she was after when she started her search for the perfect apartment within Valletta’s quaint streets – an eclectic resting place for her treasure trove of belongings. “I fell in love with Malta, and Valletta specifically, when I was first here a few years ago – I was captivated and knew I had to move here. I quickly started toying with the idea of buying property and got the ball rolling as soon as I could. I had something specific in mind and set out to find it.

“Oddly, I didn’t see this flat until I came over to sign the agreement! I had been hunting for a long while but it’s hard to find somewhere when you’re abroad for most of the time. In fact, it was my friend Rosetta who found it for me, she assured me it was perfect and I trusted her completely. When I did see it, it was in quite a state but it was a challenge. I like the idea of making undesirable places look good. The location of the apartment was perfect and I was rearing to go. I could see that it had a lot of potential.”

Denise’s primary aim was to inject a substantial amount of light into what was a somewhat dark property, as well as to create space for her collection of belongings. True to her spirit, her home now oozes a chic theatricality. “I wanted somewhere to relax, a home that could be multi-functional. I was keen to create a space that would serve me as a place to eat, live and entertain all at the same time, where nothing was too clearly defined.” Denise and Architect Edward Cuschieri worked together to create a space that flows well and was comfortable for all Denise’s needs. Architect Cuschieri: “When the project began, the flat was bare and devoid of any character apart from some 30s furniture, fittings and the hexagonal Maltese tiles, which were kept. My immediate vision was to further simplify the experience into a holistic one where the existing compartmentalisation was reduced, allowing one area to merge with its neighbour. So we opted to remove most of the dividing walls, which was a minor intervention that added great effect. “The kitchen was now to be part of the dining and living area. The bedroom also was very restricted in space so we combined it with the bathroom into one greater volume. “Denise has a wonderful sense of theatre; the brief was to have as much space to flood the rooms with her rugs, particular items of furniture and decorative objects of art she had collected throughout her life.” In the bedroom, the dividing wall of the bathroom was removed and the internal floor landscaped to give a ‘sense of place’ to each particular area. To express continuity within the bedroom, the series of arched windows were lowered and unified, while the bed itself was designed to be part of the horizontal landscape. The room now sits on a custom-made wooden platform which holds both the bedroom and bathroom in one space. The result was aesthetically effective, as well as a clever space- saving measure. Denise: “With regards to décor, I never had a particular vision though I am inspired by the style and colours of the fifties. The pink fridge was my starting point and I brought the rest of the kitchen over from the UK in boxes, as local options were too expensive.”

Denise was also keen to showcase all of her belongings, which hold so much nostalgic weight. “A lot of my stimulation comes from desperation! For instance, the Elvis splashguard behind my cooker is actually four tablemats, which I put there to avoid staining the paint behind. It’s one of those places you go to and become enraptured by. You are barely in the door of Terry Shaw and Paul Barnes’s Gozo home before the stories start flowing. Every wall, nook and cranny oozes memories – from show photographs and posters to masks and memorabilia, each a reminder of its history. The couple’s lives as both British and international actors, musicians and performers have certainly been prolific and their naturally comfortable and contemporary style has merged with their past to create a beautiful and unique home that truly reflects them. “Our affair with the Maltese Islands started back in the 80s while we were on holiday here,” explains Terry, a musician, teacher and performer who toured the world as a cabaret singer. “The porter at our hotel suggested travelling to Gozo and we instantly fell in love with the beauty and character of the island. Almost straight away, we knew we would like to retire here. We looked all over for a perfect

fit and within twenty-four hours of viewing the house, we knew it was the one. The style of the building, the location and the incredible view were just what we were looking for. We’ve now been here for four years.” With individual, showbiz-related careers behind them and no intention of curbing their creativity during retirement, Terry and Paul set to work injecting some inspirational spaces into their home. Paul: “This is a place we wanted to call home, a resting place for all the belongings that we have collected over the years. We wanted to have plenty of space for thinking, composing, piano playing, writing and reading, so we started renovations by transforming our basement into a music room and library. It needed to house books, music, over 1,300 CDs and Terry’s grand piano. It was a wasted area before, but has now become one of the hearts of our home and a space for us to create in. It’s a haven and we adore being there.”

Paul: “As part of my career I worked for the famed antiques auction house Sotheby’s and it turned me into quite a collector; I hate throwing anything away. I think it’s wonderful that each item in our house tells a story. Every time we glance around a room we are reminded of places have been to and people we have met along the way. Nothing here was bought simply to fill space – on the contrary, a special space has been found for each item.” The house weaves upwards to the first floor where two large bedrooms prevail. Another pleasing feature is a small seating and office space, which looks out over the surrounding countryside and sea view, as well as down to the pool and deck area. Another ‘half’ bedroom – which often sleeps the couple’s younger relatives – is situated on the top floor. Terry: “We like to let light in – after all we came here to be warm! We also enjoy the house’s outside space; it’s not much that it’s unmanageable, but at the same time is perfect for relaxing under the sun and entertaining. As we have moved lock, stock and barrel from the UK, it’s important to us that we have enough space for visitors to come and stay – and of course to leave a little piece of themselves behind for our collection, be that a photo or keepsake.” Paul: “One of my favourite things about this house is that it fits us like a glove. We have been preparing for this home for a long time, collecting items for our retirement when we would finally have the time to enjoy them. This house is giving us the chance to do the things we want to do, rather than have to do. It feels great.”

Young, beautiful and blithe, Ed and Pip are an English couple who fell in love with a house in Siggiewi. Built by Lyndon HadleyCoates and Architect Kevin Farrugia, the space effortlessly reflects the young couple’s bohemian laid back style.

As soon as the couple saw the house – the first house they saw, they wanted it. Lyndon Hadley-Coates: “We sent them off that day and told them to come back after they had seen other places, but they called in less than an hour and said they weren’t going to see any other places. They insisted that this was the one they wanted.” Before the space got to this state, the building was situated on a very small parcel of land (approximately 52 square metres) and was extremely dilapidated. It was immediately evident that a major intervention was necessary on the inside.

“I had to do away with one and the only way I could achieve that is by having one element serving as both...” There wasn’t much to retrieve, but any features that would give an added value to a new property were taken note of, conserved and integrated in the design. An instance of this is the ‘kileb’, which previously supported ceiling flagstones. Now, they make an interesting architectural feature along the length of the main bedroom back wall, which can render themselves useful as shelves or simply as light concealing elements. In order to make the property marketable at that time, the team aimed for a three-bedroom space. Considering the small plot area in hand, this was no easy task. The original structure hinted to a central courtyard as in most village houses: this heritage was passed on to the new design and the central courtyard was to be the heart and focal point of the new house. Architect Kevin Farrugia: “What the limitations left me with in terms of planning were basically a room at the front and a room at the back. The resulting space in the middle had to host the courtyard, but also had to make good for the vertical and horizontal circulation links. This presented a problem, as both a staircase and a corridor would have eaten up all the central space: I had to do away with one and the only way I could achieve that is by having one element serving as both. If the floor levels of the rooms at the back were to be half way up (or down) the rooms at the front, then a stairs

having two flights in opposite directions would be both the vertical and horizontal, or rather back to front, link provider…. and this is how the split level came to be.” Which means that the aesthetically interesting and quirky split-levels were no whim, but came out of necessity. The main feature and focus of the house is doubtlessly the fantastic staircase, which starts from the bottom level and continues up to the roof. It includes steel work and wooden treads (48 steps, each one in three pieces). The rest of the planning followed naturally: the living quarters were to be situated closest to the entrance door, since daily activities imply more interaction with the outside, while the upper levels were reserved to the sleeping quarters. The lowest level was the best to adapt to the kitchen/dining area, since the extra floor area at the centre provided enough space for eating and cooking. The entrance door was to shift to the extreme right, so as to make the most of the front room area provided. Although the front bedrooms have an additional small window onto the alley, which in themselves provide a rather concealed visual link to the outside (like as in a ‘muxrabija’) and added ventilation if called upon, all rooms were to look onto the central heart of the property.

The building had to rely on passive thermal control. A shaft at the extreme back-end of the footprint was introduced to allow further cross-ventilation and to allow warm air to rise and be expelled at top. True to the former homeowner, Lyndon Hadley-Coates’ style of stone, limestone and quartzite, natural and polished from all over India were used exclusively for walls, floors and sills, including the bathrooms.

On the exterior of the building, the existing façade was retained and an additional floor was added using the same material. Any other proposal would have been denied by MEPA. Architect Farrugia: “I have to admit that being humble on the outside allowed me to respect the existing urban context and fabric. In a way, this approach is exploited to the project’s advantage, as the outside does not prepare you at all for the hidden gem that is to come on the inside.”

Lyndon: “The building work was done by a local stone mason named Martin Smith and myself, while the tiling was done by a maniacal tiler, Simon Cassar – a man under forty with ten children. Laying the natural stone tiles is an art and he had the patience, as well as the interest in the challenge to become an expert. All the materials are exceptionally hard and need the very best cutting tools.”

On the inside a form follows function ‘modus operandi’ was adopted. All that has been executed has come along out of necessity, proper zoning and proper links of the various areas according to the type of use. It was then up to the architect to juggle around all the functional requirements and any inherent constraints to still provide a harmonious visual, as well as functional solution, which in the end, seems the simplest of all.

There are huge advantages to going vintage and restoring old items and pieces of furniture: it costs less and it adds instant character. Further to that, you get to surround yourself in those things you’ve had to reluctantly hide away for fear of clutter. Fear no more – it’s all about personality now.

Salvage items must be purchased with care: while a reconditioned Victorian cast-iron bathtub is a fabulous find, an ill-fitting spiral staircase is just a white elephant. There are so many things that can be found, but there are a few statement pieces that can start a whole chain of design inspiration. Buy things that you love. Decorative accessories give a sense of your touch to the space, so make sure to buy things that mean something to you or that reflect your personality and interests in some way. Part of the shabby chic look is collection. Avoid the cluttered look by purchasing more than one of the same things, even if they don’t match exactly. For instance, if you’re crazy about photographs on the wall, go all out and buy every frame that appeals to you. Don’t worry about how they’re going to match – they will if there are enough of them. Set a budget per item so that you don’t end up spending more than you would buying new items. Paint is a shabby chic lover’s best friend. Colour can create so many different looks as well as make an old item look new. Start with the thought in mind that you’re going for diverse colour tones in addition to whimsical and unique items. Wood is an important material with this style, mainly because it is so versatile – it can be stained, sanded, sawed, painted or even wallpapered. Buying discarded chairs, room dividers and tables makes it easy to restore them to precisely how you want them to look. Even covering planks of wood or mdf board in wallpaper can be useful for wall banners, bed heads and countertops.

Window treatments will add style to your interior decorating scheme or recede into the background. This method of decorating coordinates best with blinds that have a fun and funky feel or if you need an unobtrusive divider, beaded curtains or over-sized dark sheers can achieve an effective bohemian appearance. Flooring is always more important than it’s given credit for. Accent carpets are interesting and great in winter. It’s crucial to use floor covering that doesn’t make too much of a statement itself and the same goes for walls. If you’re going to cover a wall inch to inch in different styled frames, the wall underneath should be simple. In the same way, keep your floors neutral. Original Maltese tiles are ideal for the eclectic look because their designs generally pick up certain elements of the room without dominating it. To have busy on top of busy equals cluttered. There are some things that you can really go cheap on – lighting is a prime example. Pockets of different coloured lighting really add to the romanticism of this style and now there are so many paper lanterns and drop lights on the market. A really great way to use a lamp that you’re not particularly fond of is to throw a sheer scarf over it.

Don’t get salvage confused with antique hunting – the idea should always be to renovate the items and merge styles – spending a lot of money on a lot of old items that you’re not going to give any treatment to is pointless. You’re going for a personalised style, not an antique style. Many are worried that certain items won’t go together. They will. It’s all about what you like personally. Think of it this way: currently, there are probably quite a few pieces in your home that you absolutely love. Every time you see them you think to yourself that you love the way they look. Going with the salvage look is doing this with every single item in your home. You like the bright yellow colander but it doesn’t match with the red kitchen? Doesn’t matter – if you like it, it will work.

Make the distinction between character and bad condition... Old baths, commodes and sinks can easily be converted to work with modern metric plumbing. However, check that your supplier has fitted proper conversion connections before you buy. Antique brass door furniture can be a gorgeous finishing touch to your décor – a much richer colour, with more depth and patina, than modern lacquered handles. Expensive to commission new, old railings and gates can be bought pretty cheaply, and these beautiful examples of wrought ironwork can be brought into play for a variety of different uses, such as a room dividers, tabletops or even bedheads. Make the distinction between character and bad condition. A weathered lead planter is charming and old floorboards, aged to a “driftwood” finish can have huge appeal, but anything that is impractical (a rusted kettle) or unsanitary (a cracked hand basin) must be avoided.

Norbert Francis Attard first caught my attention as an artist way back in the 70’s with a number of quality production prints, immaculately drawn, depicting mythical towns and fabled cities. As an architect he was influenced by Malta’s highwalled bastions and ethnic cube townscape forms and also inspired by the chimerical renderings of Escher and Folon. “ALBURY CANTATA” (Australia, 2007)

During that period, Attard had also asked me to write an introduction to a catalogue of one of his first exhibitions consisting of these urban castle-like structures emerging from their Medusa-like telluric surroundings. I had entitled

my introduction “The graphics of Feng Shui” because of these sinuous labyrinthine earth force lines surrounding the built form of his walled citadels. In a way, the title as a reference to the geomantic science of the Far East, prophetically mirrored Attard’s later interest in this Far Eastern art of placement. Years later, he also asked me to contribute the text to his publication “Between Earth and Sky” (Midsea Books Ltd. 2007) which covered installation works he had done during his period as Kamiyama Artist-in-Residence in Japan in 2004. During his Japanese sojourn he was highly influenced by Oriental philosophies and the whole Far Eastern way of thinking.

ATTARD EVOKES TURNER’S CONNECTION WITH THE TOWN AND THAT ARTIST’S LONG-STANDING PREDILECTION WITH MERGING HORIZON LINES IN HIS WORKS.

The works illustrated in this article not only reflect Attard’s high qualities as an artist, but also manifest above all his ever-seeking search for innovative forms of expression. I particularly recall his 2003 haunting mirrored water “SALINA’S LAMENT” (Valletta Pinto Store, Malta) for which I also contributed the catalogue notes; a work oscillating between remembrance and desire, time-framed between the ‘not yet’ and the ‘no longer’.

The 2002 “I SEE RED EVERYWHERE” (Portomaso, Malta) plays on the contrast of a long, meandering, red, horizontal colour-band in relation to an isolated, colourless, vertical element; focusing on the contrast between the excess of red band and the minimalist scorched dry tree. The same year’s “BEYOND CONFLICT” (Liverpool Oratory, England) picks up the contrasting opposite positions of red and green on the colour-wheel and the dialectics of life and death on the exterior façade of this old burial site. Interlacing the fabric between the frontal columns of the building, Attard works on the theme that all opposites in death are dilated and also that in the after–life, contradictions fade away. In a way, this dichotomy of colour and that of life and death may be read as an extension of the late Victor Pasmore’s own theories and investigations of the “harmony of opposites”. In 2003, at the derelict factory of the former Lister Mills Textiles (Bradford, England), Norbert Attard in the installation

“INTERVENTION 1” transforms the space by painting the columns in colours were once used in the weaving of the cloth. In this manner, space vibrates and a derelict site is reanimated. These works served as a prelude for Attard to produce a more mature body of work produced over the last couple of years in various countries. The “ALBURY CANTATA” (Australia, 2007), involves a video projection on the glass walls of the Library Museum of the city, intermixing historical material and Australian poetry. A site specific series of time frames, amalgamating past and future, pulsates in the present while in the process extending the meaning of the space and immediate context of the building. In the “TURN. TO COLOUR” installation on the Margate Pier (UK, 2007), Attard evokes Turner’s connection with the town and that artist’s long-standing predilection with merging horizon lines in his works. Once again, Attard is transforming the physicality of place, and in the process re-utilizing the pier as a border threshold horizon line between land and sea and sea and sky, while also extending its presence and through his applied spectrum colours creating new relationships between observer and object. “INTERLACED” at the car park of the Charlton Shopping Centre (Dover, Kent, UK 2008) attempts to establish a link and bridge between the rural and urban landscapes of the area, resulting in a re-animation of both.

In “FESTA” at the Irish Museum of Modern Art (Dublin, Ireland, 2008), the artist focuses on the boundaries between “inside” and “outside”. The theme also plays on the interactions between transparency and opaqueness. Through the use of coloured gels on the glazed façade of the building, curiosity is further enticed and once again the physicality of the architecture and its contextual space are extended.

In the most recent of works, “WHERE ARE YOU FROM” (Freedom Square, Valletta, Malta, 2008), Attard utilizes a series of portraits depicting physiognomies from Malta to question the diversity of our local identity. The collection mounted on the ill-designed surrounding portico of the Square is laid out on a system freely following Far Eastern colour symbolism. This sad place (hopefully now to be invigorated and enhanced by Renzo Piano’s contribution) is transformed through Attard’s installation into a more amiable environment, changing not only the place itself, but also the way in which passers-by react to the context. This reflects the effect of how added environmental installations can contribute to a transformation of the space within which they are placed. Here, the combination of the installation and

When thinking about flooring, we always come face to face with the genuine dilemma: why stone, as opposed to the huge range of excellent synthetic products on the market? The reasons for our natural inclination to natural stone are quite complex and I believe relate to our spiritual connection with our past and the days when we were all primitive cave dwellers. It seems a natural instinct for children to want to camp out, to “set up house” in

the garden, using natural materials. There’s a reason for this. The stark beauty of stone is quite spectacular and it offers something beyond its sheer physical strength. It is raw, elemental and it connects us back to the earth even more than its spiritual cousins – wood, leather and linen. They are all amazingly tactile elements, they make us feel warm and grounded and they always seem to improve with age. Rooms can always derive spirituality from the rough embrace of earthy materials.

THE STARK BEAUTY OF STONE IS QUITE SPECTACULAR AND IT OFFERS SOMETHING BEYOND ITS SHEER PHYSICAL STRENGTH.

Our emotional attachment to mellow timeworn materials should not deflect us from bringing together the old and the new into what could be a stunning combination. Care must be exercised however, as concrete and steel might not be a natural progression if used to ‘modernise’ a 15th century cottage and a degree of finishing; too polished, too flat, too perfect can ruin the overall effect. What’s more, it must be always noted that the building is much more than just a structure, but a shelter for people and their dreams. When an old house is re-worked, messages are left to the inhabitants who will follow. In our own home in Zejtun we have kept some of those messages from the past where possible; the lovely pale blue paint of a bedroom and the dark blue line defining the zoklatura and burdura, which is now in our mill-room kitchen. We try never to forget that we are merely the custodians of our home and one day it will pass into the hands of someone else. Our interest in stone began in the quarries of India, where the huge blocks of stone are hewn. Intersecting holes are drilled vertically and horizontally at the back of the block and a diamond studded wire is threaded and welded to complete a loop. A machine rotates the wire and the block is cut, rather like cutting cheese with a wire. Owners were only too pleased to give us a

personal tour of their quarries and the workshops where great gang saws cut the blocks into slabs. We stayed a week in Jaissalmer; a town built entirely of desert limestone, a semi hard stone that polishes just by touch. There we saw beautiful pink and black marble quarries. Until recently, Granite and Marble were the only stone varieties commonly available. Granite is a very hard igneous (once molten) rock, with usually dark, densely packed grains – hence its title. Personally, I find the stone too fussy aesthetically, although its physical properties, strength and chemical resistance are excellent. It polishes beautifully (but scratches) and has limitless applications. Its chemical composition is around 75% silica (sand) combined with other oxides of Aluminium, Calcium, Iron and Magnesium. Marble is a word derived from the Greek Marmaron, ‘shining stone’, because of marble’s ability to polish. Marble was originally limestone (Calcium Carbonate), which has undergone a process of metamorphic transformation (aging at high temperature and pressure). The origin of the limestone is the organic matter settled in lakes and seas, the fossils of sea creatures, then compacted over millions of years causing chemical reactions that turn it into solid stone. The metamorphic stage then produces the marble. To differentiate marble and limestone – let’s say that marble will polish, limestone will not and/or limestone has visible fossils, whereas marble does not.

A MACHINE ROTATES THE WIRE AND THE BLOCK IS CUT, RATHER LIKE CUTTING CHEESE WITH A WIRE...

Limestone colours are soft, contemporary and fortunately some of them are extremely hard with great strength, whereas local Maltese limestone with a few exceptions is generally quite soft with poor weathering properties. White marbles like Carrara from Italy have been used by sculptors since classical times. This preference relates to its softness and homogeneity (same structure in all directions) and relative resistance to shattering. The most serious drawback with Limestone and Marble is their poor resistance to acids, which might include fruit juices, acid rain and wine. Unless a marble worktop, for instance, is sealed and well maintained it will stain and deteriorate quite rapidly. Sandstone and Quartzite are related in the sense that they are composed mainly of very inert silica (silicon dioxide), which is simply a compaction of tiny grains of quartz settled out on the beds of seas and lakes, subjected to high pressure from the overburdening layers of rock. Quartzite is the metamorphosed form of Sandstone, producing a smooth surface rather than a granular one. Sandstones are available in various colours, from near white through beiges and rusty reds. Quartzite on the other hand is largely white or grey with colour linked to metal oxides at the boundary. Coloured quartzite tends to have some foliated structures (layered) and the glue between the layers being the source of the colour. Sandstone and Quartzite are in general strong and not very porous with the exception of two popular varieties, which are probably the most attractive. Teak wood and Rainbow are beautiful, but are relatively porous and definitely need an impervious underlay.

Although Slate isnâ&#x20AC;&#x2122;t a favourite of mine, it holds plenty of colours due to the layering effect, but is usually dull and dark. It is a shale type of sedimentary rock composed of clay or volcanic ash. Chemical resistance is good; it has low porosity and weathers well, but has a tendency to flake in high traffic areas. Some of the materials I have written about are now available in Malta, much of them from China, but beware, as Quartzite is often referred to as Slate. Sandstone and Limestone are not yet as popular, but Iâ&#x20AC;&#x2122;m sure that the beautiful colours and excellent physical and chemical properties will soon attract designers and architects. The choice of finish is wide, polished, sawn, honed, bush hammered and various degrees of brushing will give you just the feel you are looking for.

c Garden Eclectic gardens tend to combine various styles of gardening. Using a creative approach, designers take their inspirations from all the garden traditions, combining plants, garden accessories and outdoor artworks to create distinctive and highly individual landscapes. The trick is to combine the components carefully and not to go overboard with excessive contrasts. Excessive contrasts may end up as a confusing, jumbled mess, without any prominent features. When designing a formal garden, lines are clean and there is a symmetrical balance between the features in the garden. With a naturalistic garden, you are aiming to do the opposite â&#x20AC;&#x201C; that is, you are avoiding symmetrical balance and hard, clean lines. In an eclectic garden, however, you are attempting to mix styles with the aim of not allowing one particular style to become dominant.

The most interesting gardens are those with a framework of individual compartments, with pockets for the eye to wander off to. There are various ideas of how to create a bit of playfulness in the garden. One of the best ways is to simply reuse and/or recycle your existing containers around the home. Thinking outside the box and using existing home accessories in a new way is a fun way to create inexpensive and innovative garden containers.

If you spend a lot of time out in the garden, then it’s important that you have what makes you comfortable out there. If the area is large enough, there are no rules that say you can’t place a sofa under a tree with a side table to rest your drink and book on. If the kids like computer games, there’s no reason why they can’t play them in a tree house. If you adore your cats, why not create an outdoor cat living area? Why not place that to-die-for mirror hanging from a tree instead of inside, above the mantelpiece? The ideas are limitless. The same principle as creating a shabby chic look inside the home goes for gardens: it’s all about merging various historical styles with modern elements. It’s about making your garden space all about you so that you’re as comfortable outside as you are inside.

Method: Fillet the salmon and the rock fish and blend. Add single cream, salt, pepper and the Noilly Prat. This will give you a smooth fish mousse. When smooth, fold in the scallops, langoustines, crab meat and herbs. Butter the terrine mould. Layer a 20 cm “Le creuset” terrine mould with the green and yellow courgette strips and thinly sliced carrot strips using the outer part of the vegetable. Fill with the mousse and then cover with cling film and foil, Cook in a bain marie in the oven at 1100C for 45 minutes. Blanch the tomatoes, remove the skin and seeds and cut into petals. Put in the oven at 1100C with olive oil, thyme, a paper – thin sliced clove of garlic and a touch of sugar for 13 minutes. Chill terrine overnight, cut into 1.5 cm slices and serve with crispy leaves and extra virgin olive oil. BEST WINE ACCOMPANIMENT: 2007 VICTORIA HEIGHTS CANNONAU D.O.K. GOZO SUPERIOR For this dish I have selected a fruity, dry, rosé wine, which is fairly low in acidity because the dish has a lot of rich, full flavoured seafood components. In addition, there are other ingredients like single cream, the nantua (shrimp) cream and tomatoes that would also benefit from a soft rosé rather than a crisp white or a tannic (even low tannic) red. This dish has lots of rich flavours that will be enhanced by a glass of well chilled, soft, round rosé wine made from the Cannonau grape variety.

Roast Fillet of Veal with Dauphinoise Potatoes, Sautéed Spinach, Cep Mushrooms and Lavender Jus Ingredients Serves 6 200g 100g 4 1ltr 2 2 Sprig Sprig 4 1 1 1 350ml 200ml

Method: Pan-fry the fillet of veal, finish with butter and roast in the oven for 10 minutes. Slice the potatoes finely, layer with garlic cream and parmesan, and roast in the oven at 1400C for one hour. In a hot pan add a knob of butter and sauté the spinach with salt and pepper. Slice the mushrooms and panfry with salt, pepper and garlic. Slice the onion, garlic and celery, and put in a hot pan with the trimmings of veal. Add a glass of red wine and reduce by half, add beef stock and again reduce by half. Finish with fresh herbs, lavender and butter. BEST WINE ACCOMPANIMENT: 2007 VICTORIA HEIGHTS CABERNET SAUVIGNONCABERNET FRANC D.O.K. GOZO SUPERIOR This particular recipe of fillet of veal, which in itself is not an overly strong flavoured meat, has other delicate ingredients such as cep mushrooms and lavender, which should not be overpowered by the accompanying wine. This is why I have chosen a red wine with medium to low tannins, but has lots of flavour and up front fruit. There is also beef stock and red wine used in this dish’s preparation, so a red wine is the obvious choice. This will also accompany the spinach and the potatoes, which have parmesan cheese on them – much better than a full white wine that can be used sometimes to accompany veal quite adequately.

Method: Simmer the chocolate to a melt with a teaspon of milk. Add the sugar, butter, salt and egg yokes into the mixture. Beat the egg whites until very stiff. Progressively pour them into the chocolate while stirring from the bottom to the surface of the bowl. Pour in a mould and then cook in a bain marie at 1600C. Milk Chocolate Mousse Ingredients: 85g 40g 4g 26g

semi whipped cream milk coverture chocolate sugar (with a little water) egg yolks

Method: In a bain marie melt the chocolate and then let it cool. Cook the sugar in a sauce pan until it reaches 1200C. Cook the sugar to 1200C, whisk the egg yolks and gently add the cooked sugar mixture. Keep on whisking until the mixture is firm. Then fold in the cream. Pour in mould and refrigerate until it sets. Method: BEST WINE ACCOMPANIMENT: DELICATA BRUT GIRGENTINA FRIZZANTE Mix in a bowl the eggs, icing sugar, ground almonds and the candied fennel. In a sauce pan, melt the white chocolate in the butter and then leave to cool. Fold the flour in the mixture and then the butter. In another bowl, whisk the sugar and egg whites until fluffy and then slowly fold into the mixture.

There is a lot of chocolate in this dish, plus other ‘not so sweet’ ingredients, such as orange, coffee and fennel. Thus, I chose a wine that will accompany these ‘not so sweet’ ingredients and at the same time refresh and lift the palate when it’s confronted with all that rich sweet and bitter chocolate. A well chilled glass of something dry and sparkling, in this case Delicata’s Brut Girgentina Frizzante, will accompany this delicious dessert perfectly.
