EDITOR’S LETTER
The American columnist Heywood Broun once wrote, “The most prolific period of pessimism comes at twenty-one, or thereabouts, when the first attempt is made to translate dreams into reality”. Anyone who’s well past their twenties will smile at the notion because it’s the truth. For most of us, we start realising that our dreams are actually not that easy to obtain and that’s when the divide is made between those who give up and those who keep striving for them. Everyone’s aspirations are relative and different – one man’s trash is another man’s treasure – but their communality is that they are the desired destination. This issue of HOMEWORKS is about those homeowners who have strived to obtain their ideal lifestyles and reached them. Each at different stages of their lives and with completely divergent interpretations of “living the dream”, this issue takes us to those homeowners’ castles. On a more down to earth note, it’s actually a dream for many to be able to work from home and with the advent of technology, it’s a sensible solution. We bring you three totally divergent home offices of professionals that often work from the comfort of their own address (page 052). We do some exploring this issue to bring you an idea of what’s available on the market in terms of floor lamps (page 060) and televisions (page 066), complete with technical comparisons to give you a thoroughly accurate picture (I apologise for that). Check out page 062 for our New England chic decorative feature and page 098 for an outstanding rizzi risotto. In February we brought you interior trends from IMM Cologne - this issue we bring you the overall vibe of Milan Design week 2011 (page 069). Start the summer with an aspiration-filled HOMEWORKS and hopefully find yourself more than a little motivated.

LENOX CILIA IS THE WINNER OF THE CALLIGARIS UTILITY ACCESSORY WORTH €67.50, COURTESY OF IDEACASA LENOX CILIA: “While flicking through this April’s edition, the section about HOMEWORKS spaces, I was enchanted by the ingenious bookcase featured in Jerry & Kelly White’s home on pages 26-27. Since my wife and I are both teachers, our house is hoarded with books of every kind. Add to that our kids’ books, recipes and hobby books. We have a study room where we keep books related to work, but a bookcase as illustrated in the article would be ideal to display books of leisure and hobbies in the sitting room. It would be interesting if one of your articles could guide us on how to use space in the best way possible (for instance, by using a ladder to utilise all of the wall). Also, if you could give us different versions of bookcases, from classic to modern, it would be fantastic. We also keep all back copies of HOMEWORKS so that involves an extra shelf!”
HOMEWORKS NEEDS YOU! Readers are invited to submit interesting photographs and a brief description of their homes, which may be distinct in their architectural design. Of particular interest are homes that offer outstanding elements of both interior and exterior living spaces. HOMEWORKS will select the best submissions for future features. Send a photo and information for the attention of: The Editor, Writeon Ltd., Airways House, Level 5, HIgh Street, Sliema SLM 1551 or info@writeon.com.mt (photos will not be returned)
Eman Cuschieri “I have been an avid reader of HOMEWORKS since its introduction almost 8 years ago and have found it to be an incredible source of inspiration, especially since I purchased my house about the same time as the first publication. It is safe to say that HOMEWORKS has been by my side along the way. I would like a future issue of HOMEWORKS to include some helpful tips on how to choose the perfect solar water heater and possibly solar under-floor heating, especially for the bathrooms. This could also include some information on photovoltaic systems. In an era of ever-increasing costs for utilities, one can experience considerable savings by investing in the right solar products.” Judith Zahra “I wish to have an impressive garden. We work hard in our garden but we don’t enjoy its beauty and splendour enough. I’d like ideas for a garden seating area. It would be helpful if you could give us some options on long-lasting outdoor seating solutions.”

ECO
GREENWORKS A spotlight on energy-saving and sustainable interiors, trends and products
TOWARDS FRUGALITY
Architecture Project (AP) and Abbate e Vigevano Arachitects recently organised the three-day ‘Towards Frugality, International Symposium and Workshop’. AP’s slogan for this symposium is ‘Frugality: simply look around you’, while their inspiring programme proposed going “back to a new culture” through a design-led creative revolution in the fields of architecture and design. Some of the world’s top architects and creative thinkers took part in the event to discuss how they are responding to the challenge of a world running out of limited resources, as well as how their visions for a new world order are already being designed and built. The event explored how the hard-nosed commercial world is embracing a design-led revolution. www.ap.com.mt
1000 NEW ECO DESIGNS (AND WHERE TO FIND THEM)
1000 New Eco Designs is a showcase of contemporary product design and interior products that are ecologically sound. Informative and visually inspirational, the book acts as a handbook, guiding readers through the complex issues involved in creating and choosing eco-friendly designs for the home. A series of icons show each product’s “green” credentials; highlighting the use of recycled, sustainable, and locally-sourced materials, as well as non-toxic, lowenergy, and low-waste manufacturing processes, so that readers can see at a glance the individual characteristics of each design. The book also provides full information on where to source and buy the products featured.
THE PRINCE’S HOUSE
Visitors to ‘The Prince’s House’ at the Ideal Home Show saw HRH The Prince of Wales’s answer to eco-living - a low carbon home made from natural and recycled materials, which his Foundation for the Built Environment claims is just as low carbon as some of its high tech alternatives. Built on eco friendly principles, the house was made from natural materials like wool, hemp, wood and lime so that it was nontoxic and kinder to the environment.
KNOW YOUR SOLAR FILM
It’s probably safe to say that by now the majority of us know that solar-controlling window films are a good thing. Some things to keep in mind: The first being that the lower the “solar heat gain coefficient”, the better. All respectable manufacturers provide this number, so ask for it. Also, be warned that some films will void their window warranty; however, several film manufacturers offer to match it, so ask them about it. Further to that, certain latches and frames make installation difficult, and a bad application can leave glass looking bubbly – so make sure it is applied by someone who knows what they’re doing. Know what’s coming: products embedded with photovoltaics, even better solar energy-blocking film content, and tinting that users can switch on and off are the future for window films. Find reliable solar film at Eco Group (www.ecogroup-mt.com), Energy Care (www.energy-care.net) and GRF (www.grfmalta.com) 021

In keeping with the ‘living the dream’ theme this issue, the homeowners from this issue’s selection of featured homes are all at different stages of their lives, yet share the common thread of enjoying their homes to the utmost. The newly retired couple that have recently finished the characteristic and chic farmhouse, starting on page 024, now have time to enjoy their homes in both Malta and Paris, while visiting their children and grandchildren in London. The Neurosurgeon who resides in a converted farmhouse in Qrendi has also just retired and is enjoying true respite with her partner for the first time in her career-demanding life (page 036). Quite the opposite of retirement, the young couple residing in Swieqi are in full throttle career wise, having planned and created a home that completely caters to their specific lifestyle (page 044).

he owners of this impressive house are an inarguably fascinating couple. Both from different parts of the world, they have spent over 35 years working out of Paris. Recently retired, the difference between their extensive travelling now and before is that these days they do it entirely at leisure, mostly between Paris and London (where their two children reside).

It’s obvious that the couple has a penchant for travelling through their unpredictable furniture pieces and art...
ZEBBUG MISSING Old mill room, which is estimated to be about 300 years old. A mixture of French décor with the Maltese architecture and materials creates an eclectic look, though doesn’t jar, due to the commonality of the colour scheme in the different furniture and fabrics
The French-inspired interconnection of the rooms creates continuity that always promises (and delivers) more. The result is both attractive and easy on the eye, with abundant sunlight streaming in throughout. It’s obvious that the couple has a penchant for travelling through their unpredictable furniture pieces and art. As they brought various things with them over from France, the result is an expression of artisanal luxury, with exotic and beautiful craftsmanship against the backdrop of simple rustic. Colours are neutral and work unsurprisingly well with the old stone of the farmhouse to create a true Mediterranean look. The homeowners: “We bought different pieces of furniture with a good idea of the style and atmosphere that we wanted to create. Given the climate in Malta, which is similar to that in Provence, we chose to mix typical painted pieces from this region, with more classical French furniture. The resulting space does not feel stiff or overtly formal, while at the same time, we feel that it’s extremely comfortable and hopefully welcoming”. The juxtaposition of the different styles of furniture offers an eclectic and harmonious result, although their relationship is not always obvious.

There is however a common thread, which is colour. The recurring theme is in the taupe, cappuccino, mushroom or cream colours throughout – all very pleasing and restful to the eye, never jarring. One of the few deviations from this scheme is the ‘pigeon’ colour of the dining room; a blend of green, blue and grey, which creates the atmosphere for long and pleasant dinners. A similar harmony has been achieved in the façade of the new building overlooking the garden and pool. Modern geometric designs blend in perfectly with parts built with traditional old Maltese stone. The spacious bedrooms in the old part of the house are the epitome of French shabby chic, while the new part is more American classic (think Ralph Lauren’s ‘California Romantic’ style) with the same neutral colour scheme and less of the rustic. The guest bedrooms are spacious and comfortable for the couple’s visiting friends and family. Each one is a small suite, complete with its own individual character but modern comforts including walk-in wardrobes. A large, high-ceilinged room, bearing the marks of its original use for keeping animals is the pivotal room between the old and the new parts and serves as a more formal ‘salon’.

Open-plan kitchen and living areas in the new side of the home, subtly divided by the low grey wall, which also serves as a small computer area. When seated in the living room area, a very small portion of the kitchen can be seen, but when standing up, the entire kitchen is in full view
The ground floor of the new part includes the dining room and the relatively open-plan casual kitchen / breakfast / living room area. The living room area is separated from the kitchen / informal eating area by a low wall, which offers some privacy to those in the kitchen and the living room with its open fire. So subtle is the divide that when standing in the living room, the kitchen is in full view. A seamless glass corner window in the living room offers a perch to enjoy the large low-maintenance garden pool area. As the homeowners travel frequently, they have avoided high maintenance plants and instead opted for varieties that are green all year round. “When the children visit, they really enjoy the spacious pool, and we’re lucky to have sunlight all day long. It’s the ideal place to relax and unwind.” The overall result is a division of space that permits guests to have both privacy and full comfort without encroaching on that of the homeowners. The final touches are regretfully being made without the skilful hands of Johnny Attard, who recently passed away and who spent over three years employing his multiple skills in the various parts of the house. This beautifully restored farmhouse encapsulates it all – comfort, character, state-of-the-art convenience, elegance and soul. The exciting combination of these different qualities makes it a truly glamorous Mediterranean getaway.

There’s no other way to put it. Neurosurgeon Johanna van ‘t Verlaat is a wonderful lady. Not only has she saved thousands (literally) of lives, but also she walks around knowing this without a trace of egotism. Her demeanour is open and friendly, making it clear that she enjoys and embraces life, which is precisely how her home is.

Converted over 14 years ago, it wasn’t always this way. When Dr. Johanna first found the Qrendi farmhouse with her late husband Nicolaas Bosma, it was so derelict that she couldn’t even imagine the possibilities. “If it weren’t for the Ria real estate agent showing me another
converted farmhouse in Zebbug, I would never have been able to visualise how wonderful it could become. Once I saw how beautifully they could be converted, I realised this house’s potential.” The two Dutch neurosurgeons rented a house in Madliena for a year and then set upon the immense task of converting a farmhouse without speaking a word of Maltese or knowing where to find anything. The floors were sand and dust. There was no water or electricity. There were windows in the wrong places and none in the right ones. The master bedroom had no connection to the rest of the
house. All plastering and pointing had to be done from scratch. Windows had to be opened, while some doors had to be closed. An exterior stone staircase was dropped and a corridor to the bedroom was created where it didn’t exist before. Extensions to the building were added to accommodate entirely new bathrooms. It was a tremendous job. While they were renovating, an awful stench would waft throughout the space, which they discovered was coming from the well in the mill room, that turned out to be rampant with E.coli bacteria. Skips of mud and thousands of litres of water were removed from the well, and it was

cleaned then refilled with fresh water. Now it collects rainwater and a pump has been installed for the irrigation of the courtyard flora. The real estate agent also introduced them to different people that could help with the conversion, such as stonemason Raymond Frendo and a carpenter named Joe Mallia who did the woodworks throughout the house, inclusive of all the doors, windows, internal staircase and customised furniture, such as the master bed and wall-to-ceiling bookshelves. This extensive use of Red Deal wood not only ties everything together, but it also creates a timeless style. Stone and wood

everything. It’s a large house for just two people, but it’s very comfortable in that all the rooms are so functional for the way that we enjoy living. It’s also ideal for having guests because they can have interconnecting rooms with ensuite bathrooms so it’s no problem for us either.”
The kitchen is highly original, with its solid stone surfaces, blue and white wall tiles and wood throughout. Whereas previously Dr. Johanna didn’t have the time to cook, now she spends a lot more time in the kitchen with her partner who very much enjoys taking on the culinary provider role. “Now we use all the rooms, whereas before I used the dining room for

Extensive use of Red Deal wood not only ties everything together, but it also creates a timeless style. Dr. Johanna says of the extensive use of wood and stone: “the more natural, the better. I don’t like anything fussy, just interesting materials and the traditional Maltese way of applying them”
The impressive main bedroom is entirely exceptional, with its enormous arches, which are accented by the same lights that illuminate the artworks to the sides. Dr. Johanna created a walk-in wardrobe that is covered by a large white curtain, adding even more theatrics to the room. “It’s ideal to have this kind of space in a closet – I like just walking in and seeing what I can wear without having to open up anything – it’s so comfortable. The only disadvantage is that it can get slightly dusty from season to season, but it’s not such a big problem.” Dr. Johanna didn’t want to use part of the bedrooms for bathrooms so they got permission to build additional rooms, which is where they then included the ensuites. All the rooms are brightly lit with the natural light coming in through the large courtyard. The openaired space is a wonderful attribute within the home, with its landscaped greenery, bright flowers and stone fountain, which provides the calming sound of trickling water. The external walls were all completely plastered. The palm trees that were brought into the central built-in planter have grown so immensely that they now provide plentiful shade. Dr. Johanna and her late husband did the landscaping themselves and found a good balance of plants that could withstand the elements but also provide green all year round.

“I also like Qrendi a lot – I find that it’s very similar to Gozo with its sleepy streets and friendly people. A lot of people recognise me in the street because I would have operated on someone from their family. They are very nice to me and I even have neighbours who come to me with fruit, vegetables and even wine sometimes. It’s wonderful and quaint – I enjoy it very much!”

his is the instance of a home where the design of it has been truly well thoughtout beforehand. The first real home for them, in the sense that it really accomodates all that they require, the homeowners incorporated their requirements and interests in the actual design of the space, not just the finishing interior design. Evidence of it is extensive throughout; the long wooden desk in the living room so that they can work at home but not feel isolated, the built-in wall shelving that cases favourite pieces, the built-in wine rack to have bottles at hand, as well as collect, the art area in the living room for the same reason that the desk is there – to be able to enjoy company while working, the built-in fireplace that’s in the perfect location to be seen while relaxing in the living room, as well as warming up the entire apartment, the extensive wooden TV unit, which hides all gadgets, wires, DVDs and CDs. And finally – the broad white bookshelf in the wide hallway that is immediately seen upon entrance, but is also in the background when in the living room.

The living, dining and kitchen space is entirely open plan, each area zoned through different ceiling heights and the flooring. While the living room floor is solid wood, offering a restful feel, the dining and kitchen areas are in a neutral grey tile flooring encouraging a more active feel.

Plants and wood throughout the apartment inject life and create movement. Neutral furniture pieces in the living room, such as the charcoal sofa and chunky wooden coffee table in the living room come alive with changeable vibrant accents, such as the yellow and purple cushions, throws and bowls. The dining area – which is home to a comfortable and ideal for entertaining square dining table with wide, comfortable chairs – leads on easily to the kitchen. The large kitchen island also acts as a wide bar and not only looks great, but is extremely useful, both for extra space in the kitchen and for entertaining. Although the apartment is fairly contemporary and clean, the couple have still retained character in little details, such as the various sized black and white framed photographs in the wide passageway, filling up the large white wall with sentiment. Another room specifically for the couple’s interests is the feminine and quirky home office with a myriad of soft, pastel colours, conducive to calming, quiet and creative time. Forward thinking of how a space will accommodate interests and needs can save so much time and result in a truly ideal home for its inhabitants. The best kind of space is when comfort is married to great aesthetics – and this home has undoubtedly hit the nail on the head.

With the advent of technology, working from home is actually a sensible possibility. HOMEWORKS brings you three home working spaces that inspire solitude, contemplation and creative work Styling: Sharron McNamara Photography: Tonio Lombardi
CREATIVITY I he home office is one of those rooms that can end up doubling-up as a storage room if you don’t consciously make the effort to keep it clutter-free. Working from home can be a balancing act because of the obvious reason that it combines both your work and home life. There are rules you can stick to when designing your home office in order to ensure productivity and keep you concentrated.
T
When you set up your office, find a room in your house that offers positive surroundings all year round. This includes temperature and air circulation, as well as natural lighting. Adequate circulation not only helps with concentration, but it will help keep your computer and other equipment working properly. The room should also have proper lighting, either natural, overhead lighting or floor and desk lamps. Try to make sure that your work equipment and stationary is organised and out of the way. Bring in storage furniture if space permits so that you can file away papers, as well as keep any supplies that are not regularly used out of sight. Arrange the items in your office so that the ones you need the most are closest to you.
Interior Designer Sharron McNamara’s simple and uncomplicated home office: The office is clutter-free to help keep Sharron concentrated and focused. She wanted to create solitude, calm and peace, as opposed to glitz and glamour. Since she works with so much colour on a daily basis, the colour palate is deliberately white (despite her belief that hues are essential in design), which creates a blank canvas and also helps establish a peaceful feel. The subtle colour and patterns are brought in through the fabric books, sofa and striped Natuzzi floor lamp. Large windows in the room allow for good air circulation and natural light. The garden view through the fitted glass picture window is where Sharron gains her inspiration. Supplies are kept out of the way by the chunky built-in shelf, which blends seamlessly into the corner of the room, as well as mirroring the desk style. Chic Blister chairs from Studio Moda add understated design fun, while more serious sophistication is brought in through the black-bordered rug from The House Shop Lamp by Natuzzi, Blister Chairs from Studio Moda, silver vase from BoConcept, rug and leather envelope holder from The House Shop

HOME OFFICES There’s nothing more untidy looking than a tangled mess of wires so keep chords and wires out of the way by wrapping them in electrical cables or tying them together and placing them behind furniture. As with any room in the house, having a poor home office design can have a negative impact on health and productivity. There are certain rules that help ensure good ergonomics. Place the computer screen about 60 to 90 centimetres from your upper body and maintain the top of the computer at eye level or below. Make use of an exercise ball instead of an office chair at times when you are not spending long hours at the computer.
Artist & Musician Marc England’s inspiring home office: The star of the show - the view - is the main source of inspiration for Marc’s highly creative professions. Not only do the enormous sliding doors allow for great natural light, but they also allow for excellent air circulation. The colour palate is based on white due to the splashes of colour from the paint and canvases themselves. In this case, Marc’s studio is one and the same as his open plan living room, which means that fitting the space in with the rest of the home style is not a concern. Defined lines found in the BoConcept lamp and Studio Moda chair create a masculine feel while also bringing in a modern slant to the space Lamp and brown table from BoConcept, easel and art materials from Sistina, white high chair from Studio Moda

HOME OFFICES
When you choose a colour scheme, think about your occupation, as well as what you need to achieve when spending time in your office. If you use the office for paying bills or taking care of household/family management, keep the colours responsible, but light and fun. Neutral colours are interesting if your home office is for serious business activities. A bright colour scheme will help keep you motivated and not overwhelm the office space. If you need to be calm and positive, pale blue or taupe is unobtrusive and relaxing. Tie it all together by adding accessories that complement your colour scheme, and add accents such as live plants and wall art. Pantone’s online mood selector is a great tool for colour scheme help, as it suggests colours and schemes based on your mood key words.
The Reverend Canon Simon Godfrey’s eclectic home office: Though the architecture of this home office is stunning enough to hold its own, Father Simon’s appreciation of eclecticism creates a dynamic and diverse space. A large part of the look comes through the various sized and coloured books held by tall and wide shelves. The blue Persian rug, red upholstered period piece chairs, antique desk and myriad of colours ensure that the space is cheerful, as well as functional. Since the rest of the home is Baroque inspired in its eclectic nature, the room fits in perfectly within it. The bright colours keep a high level of energy in the room.

CAUTIOUSLY, Conscientiously, COMFORTABLY Milan Design Week 2011
This year, Milan Design Week was largely about conscientious materials, sincerity in composition and a deeper esteem for conventional techniques and visuals. The meaning of luxury has seemingly changed – in an age of mass man-made materials, such quality and conscientiously sourced materials represent genuine, substantial luxury

MILAN 2011
Milan Design Week 2011 HOMEWORKS issue 48’s theme was all about reinvention. It was about how as a result of hard economic times, we seem to be searching for familiarity and comfort in interiors. Further to that, due to the ominous climate change and imminent need to slow down on waste and destruction, we’ve thrown away the throwaway culture, and replaced it with coveting those old things that make us feel comfortable and safe. True to our theory, Milan Design Week 2011 was all about integrity and respect in materials and construction. Home-grown designer Gordon Guillaumier’s Orson folding outdoor chairs for Rado is an apt instance. His new collection reworks the image of one of the most famous outdoor chairs, giving it added elegance and volume with the structural fabric - Canatex which also dresses its sides, providing glimpses of the solid teak structure. The chair is enhanced by electro-polished grade 304 stainless steel details.

MILAN 2011
The true evolution was in the lights this year. By and large made of glass or metal, their feature was the flex or bulb. Highlights were American lighting company Roll & Hill with their display of two spectacular lighting installations, while Innermost revealed their latest collection of work by lighting brand Anglepoise. Wood was rampant this year, generally smooth and looking unfinished with matte coatings. White was popular too, with various combinations of white and unpainted wood within single items to create a clean and beautiful contrast. Industrial was also widespread and could also even been seen in more subtle forms, with metal being used as wire, lattice, chain and mesh in the construction of numerous chairs, sofas and tables. Milan Design Week 2011
MILAN 2011 Touches of industrial were even found in the usually sleek and polished Natuzzi brand. This year the Italian furniture brand launched the Regia chair, which although covered in supple leather, it is adorned with a metal foot and frame detail – a comfortable design with its unique quilted side pocket detail. Furniture maker Benchmark presented simple yet sophisticated new work by Terence Conran, Russell Pinch, Jens Risom, Steuart Padwick and Simen Aarseth. Channels presented Gillespie, their new series of furniture and
accessories, alongside a selection of award-winning designs from the Motley collections. Comfort was found largely in the sofa designs, which predominately had a ‘come hither’ attribute, rather than making a style statement. Even though we’re still within the low-rise trend, a few sofas with cosy high backs made an appearance, very possibly for the sake of comfort. Ample tanned leather was abundant, stretched tight, thin and matte over chairs and sofas, while plump knits also remained prevalent.

“...we were given a beehive as a wedding present so keeping them happy has become even more important”
A sprawl of flowers and vegetables creates balance in the garden
few months ago we spoke about edible ornamental gardens, or potagers, and what a delightful combination vegetables and flowers make. This month we discover the perfect example, sheltered behind the high walls of Villa Bologna in Attard. It’s immediately apparent that this is no ordinary vegetable garden. Neat rows of thriving vegetables are peppered with splashes of vibrantly coloured blooms, the walls are clad with pretty climbers and simple cane tripods support fragrant sweet peas, runner beans and climbing French beans.
A
The garden is very obviously lovingly looked after, and the person who lavishes all this care and attention on it is the very aptly named Fleur. She is quick to point out though that the merit is not all hers. “My Uncle Anthony and Aunt Gabrielle helped with the design, as they have been growing vegetables for a long time in England and have had a vegetable garden in Malta for the past ten years. They suggested the idea of raised beds, which is what they had in their garden in England. It makes watering, composting and weeding much easier, as they are contained.” Raised beds in fact are also more easily accessible and ideal where soil is rocky and depleted of nutrients, or irregular and rough. Works on the garden started in September 2009 and the first wooden beds were built in January 2010. This took a few weeks to complete, as all the wood had to be treated first to prolong its life.

Vegetable species are constantly being experimented with and this year’s focus is on Cavolo Nero, or black leaf kale, asparagus and rhubarb
I ask Fleur whether the idea of an ornamental vegetable garden was there from the start. “It started as a vegetable garden and we added the flower borders later to fill in the gaps.” Fleur’s husband, Jasper de Trafford, was keen for the garden to be more than a vegetable garden and thought of introducing a variety of plants and flowers that would enhance the area. Jasper took over the management of the huge property from his parents and restoration of the gardens is underway in view of opening them to the public in June. “We are also aware of the global threat to bee populations, which is serious and depressing,” Fleur continues, “so we wanted flowers to attract bees and do our bit to support them. We planted lots of mint, hyssop, thyme, nasturtiums and rosemary, which bees love. Then we were given a beehive as a wedding present so keeping them happy has become even more important.” Fleur also believes in keeping the environment happy, by not using any pesticides or slug pellets and practicing companion planting. Nasturtiums for example, are a great method of natural pest control and are a magnet for aphids, slugs and caterpillars. Grow them to protect cabbages, tomatoes, beans and strawberries, and use the lovely edible flowers and umbrella-shaped leaves
as a tasty addition to salads and soups. Calendula, sunflowers, lavender, chamomile and many other herbs are valuable companion plants too. Vegetable species are constantly being experimented with, and this year the focus is on Cavolo Nero, or black leaf kale, asparagus and rhubarb. For now the vegetable garden’s produce is only for personal use and for distribution to lucky friends, but the long-term plan is to increase production for sale. Avocado, narcissus and citrus from the over 300 citrus trees at Villa Bologna are already being sold through the pottery shop next door (the old stables of Villa Bologna). Fleur’s delicious marmalades, for which she won a bronze star at the World’s Original Marmalade Awards in England this year, are also for sale at the shop. Annoyingly the first prize went to Lord Henley, the UK’s environment minister, but she’s sure to try again next year! Works are ongoing and Fleur and Jasper are currently working on a seating area, which will become the perfect vantage point during the upcoming garden tours. The vegetable garden and citrus orchards around the pottery building, opening in June, form part of the first phase of the Villa Bologna regeneration project, which will eventually include the Villa’s other gardens. The gardens are accessed through the pottery shop (Ceramika Maltija) next to Villa Bologna 095

E
ver wonder: at which point did man find a sea urchin or rizzi (in Maltese) stuck to a rock, open it up and try to eat it?
As the Mediterranean people well know, despite its prickly, unappetising appearance, rizzi is a delicacy for foodies all over the world. It can be challenging to prepare, but the reward is well worth the effort. Rizzi likes sheltered bays and cold water with high salinity. It’s legal to free dive for them around the Maltese Islands but buying them from the fishmonger is not difficult, as the meat is sold in small tubs. If you have purchased the rizzi whole, store them in a container covered with a damp cloth. Do not immerse them in water or place them in an airtight container, which would prevent them from breathing. In their shells they will keep for 3 days; shelled for 1 or 2 days.
Chez Philippe’s Rizzi Risotto with Crostini Ingredients (serves 4) 500g arborio rice 1 onion 3 garlic cloves 2 tubs of rizzi 1 cup white wine 2 anchovy fillets 1 lemon, zested 2½ litres fish stock 1tbsp fresh mint, chopped
25g butter 1 tbsp mascarpone bean sprouts to garnish juice of half a lemon 4 slices maltese bread pinch fresh ginger, grated pinch poppy seeds 1 tbsp fresh dill ground pepper and salt to taste
Method Saute the onion and garlic in olive oil on a low flame until soft and translucent. Add the rice, stirring until coated and glossy. Fry for a couple of minutes. Add the anchovies and stir. Add the white wine and stir until cooked out.
The rizzi’s globular “test” is made up of calcareous plates with two openings: the anus, in the centre among the spines; and the mouth, found on the underside, having five teeth but no spines. This is where the edible parts of the animal are found: the five sex glands, namely the coral and the liquid that surrounds them. The five glands form five “tongues,” arranged in a star shape.
Start the process of slowly adding one ladle of fish stock at a time. Cook on a medium flame until the rice is just tender. Add the lemon juice and half of the mint. Cook until the rice reaches desired moist and creamy consistency.
When opening rizzi be sure to use a thick cloth or gloves. Cut off the top quarter or half of the shell with pointed scissors, beginning from the soft area where there are no spines (the mouth).
Remove from the flame and add the rizzi - the more you add the stronger the flavour, so this is up to you. (However, be sure to reserve some for the crostini). Stir in the lemon zest, mint, the Mascarpone cheese and a knob of butter. Cover and leave to stand for 5 minutes while you prepare the crostini.
Discard the lid and remove the digestive organ. Gently remove the tongues with a very small spoon. Save and strain their liquid. If eating it alone, rizzi can be served raw, simply marinated with a drizzle of olive oil, lemon juice, shallots and/or salt. It can also be lightly cooked for a few minutes in its shell by steaming it like an egg.
For the crostini, mix the fresh rizzi, fresh grated ginger, poppy seeds, fresh dill and crushed black pepper with olive oil. Toast the Maltese bread and top with the mixture.
The liquid is excellent. If you want to serve it, add gelatin according to its volume and place in the refrigerator to set. The liquid should be gelatinous but not firm. Rizzi can also be made into a sauce or purée, used to flavour sauces or eggs. Chef Michel Rostand from Paris coins it: “Sea urchin has the briny flavour of the sea… a little cloud to awaken the taste buds!”
WINE ACCOMPANIMENT by Bill Hermitage 2010 GRAN CAVALIER SAUVIGNON BLANC – D.O.K. MALTA SUPERIOR – MACERATION PELLICULAIRE
“There are refreshing clean flavours in this dish, like mint and lemon zest, together with the creaminess of the Mascarpone and butter. The strongest ingredient by far is the saltiness of the anchovy and then there are the seafoody flavours of the rizzi themselves, depending on the amount used and how fresh they are. This dish is definitely a dry white wine dish and it needs to be a clean unoaked white, so it doesn’t clash with the Mascarpone - and preferably one with lots of citric flavours that will combat the saltiness of the anchovy. Then all we need is some weight (body) to cope with the rizzi and the Alboro rice. My choice would be the 2010 vintage Gran Cavalier Sauvignon Blanc with its delicious tropical, pink grapefruit-like palate and its extra weight, coming from the time the juice was left on the grape skins before fermentation. But don’t forget to serve it well chilled.” 099

TRAVEL BY DESIGN Xi’an Horticultural Expo 2011
by Plasma Studio and Groundlab with LAUR studio in Beijing Words: RAY DEMICOLI
ver the last decade, China has taken first place on the podium as the world’s factory with the fastest growing economy, largest population, largest workforce and now the biggest importers of contemporary design and architecture.
six months, is going to be the Xi’an Horticultural Expo 2011. The world expo will run for six months aimed at garden enthusiasts and horticulturalists interested in seeing the latest in plant technologies and an extensive plethora of thousands of plant types.
The next big event in China, with a projected 12 million visitors for the coming
The Horticultral Expo is situated within the Ecological District of Chan-ha in

Xi’an – a former marshland which since the 1980s’ proliferation of industry, the water quality of the rivers further upstream has saturated the marsh with chemical impurities. The significance of the site for the expo is a demonstration of what can be accomplished through the ingenuity of advanced technology, ideas and material application.

Guangyun Entrance allows for visitors to flow over the motorway and directly into the heart of the expo
The crystalline geometry of the ‘greenhouse’ emerges from the hillside, maximising solar gains in order to passively heat up the zone for desert plants
The three fingers of the Creativity Pavillion extend over the lake giving the visitor direct views of the greenhouse across it The tensegrity trellice system for the Guangyun entrance is designed to slowly be inhabited by vines and creepers
The project “Flowing Gardens”, the central 37 ha of the expo, was won in 2009 in an international competition by Plasma Studio and Groundlab with LAUR studio in Beijing. The main architectural concept driving the project is the use of circulation as a form of choreography of flows and experiences. Three buildings emerge from the flux of circulation and gradually bring the visitors indoors into a more controlled and artificial landscape. In the architecture of expos and large events, the age-old issue of reintegration and reuse has been a constant challenge for architects and master planners. Plasma Studio & GroundLab’s proposal makes use of the large artificial lake within the site as the main drive for a sustainable project. All water entering the lake begins a micro-cycle within the landscape. Reed beds scrub the water for impurities as it is pumped using photovoltaic solar panels to the top of the hill where it begins its journey back to the lake - stopping to irrigate all the plants for the expo. The key feature lies embedded within the landscape as a series of micro wetlands and detention pools, which expand and contract according to season and demand for water. These pulsating wetlands ensure the water remains clean; promotes biodiversity within the site and greatly reduces the costs for maintenance. In six months time when the expo is over, these wetlands will continue to work autonomously circulating water throughout the site and encouraging a steady and robust growth of the environment.
The Guangyun Entrance is conceived through the bundling of paths leading from the car park as an infrastructural stent bringing people up and over the major road and guiding them directly into the project. As guests flow through this green land-bridge they are able to see a bird’s eye view of the entire expo - enhancing the anticipation of the experience. The sinuous paths course through the gardens in a network of intermingling circulation; landscape and water leading up to the second building. The Creativity Pavilion sits at the threshold of the lake emerging from the articulation of the landscape and extending into three cantilevering fingers over the lake. From here visitors can enjoy direct views of the greenhouse across the lake. The crystalline geometry of the greenhouse submerges itself into the hillside creating a contorted horse-shoe circulation path through three types of climatic zones. Flowing Gardens sets out to challenge the disconnection between urbanism and the landscape typical to China’s recent development. It proposes a paradigm, which evolves from the need for a syncretic balance between man’s environment and the natural one. The holistic approach to defining the project’s concept, as well as the integration of technology and design ingenuity makes Flowing Gardens unique not only as an experience, but also as a prototype for exploring symbiotic relations with the environment. It is the necessary step forward for the environment and architecture.
