A famous American architect once said that the mother art is architecture, and without an architecture of our own, we have no soul of our own civilisation. The profound (and extremely exciting) reality is that the spaces that we see in these HOMEWORKS architectural issues are a snapshot of our generation, of the now. So if we take the homes featured in this issue and analyse their similarity, albeit in different ways, all three display an encapsulation of customised architectural design detail that is so accommodating to the inhabitant that there is very little need for further interior design. A departure from the starkness of minimalism, the evolution is the precision and familiarity and comfort of using a free-spirited range of materials both function and aesthetics. he Swieqi villa is located on a site bounded by other dwellings, which necessitated a villa concept designed with privacy in mind.
This villa combines a series of materials and volumes; luxurious marble, generously sized bathrooms, and double height ceilings, interspersed with more playful, contemporary inclusions, such as textured plywood panelling, exposed concrete finishes, and perforated steel structures. The main living area features polished concrete floors and an exposed concrete beam ceiling that stretches to double height to allow light to flood through the space via skylight windows strategically placed for privacy. A recessed plywood panelled wall provides focus, texture and houses a fireplace. Beyond, lies a custom open kitchen with an area demarcated under a lower ceiling level to encourage a warmer feel to this more intimate social space.

The master bedroom is located on the ground floor, affording the client a view of the pool area and internal courtyard. A concrete boundary wall retains complete privacy and reflects the texture of concrete used for the bedroom ceiling and its corresponding ensuite bathroom. In here, mirrored cabinets, marble and white ceramics meet floor level apertures running the room’s length to add light, yet screen it from the pool deck. Three spritely Terriers were an integral part of the homeowner’s brief to the architects. As a result, some materials and design considerations were a response to this, inclusive of the small dog door on the ground floor.

HW SPACES The polished concrete floors offer an extremely cool base for the dogs, as well as keep their hair maintenance to a minimal. On the first floor above the living area, a walkway with a perforated steel railing links two further bedrooms creating a change in textures whilst continuing the strong lines of the central volume. Plywood panels partially cover white walls and each bedroom is a mirror of the other, with minimal, contemporary en suite bathrooms available to each. The property also includes a large two car garage located below street level with a discrete sloping entryway – a necessity in an area where parking is scarce. Adjoining this are two games rooms, each with the flexibility and space to be used as a gym, future home cinema, a study, or extra bedrooms rooms should they be required. The result of this project was an angular, modernist exterior that deeply responds to the need for privacy, yet opening up into airy and light spaces, once within. A concrete boundary wall retains complete privacy and reflects the texture of concrete used for the bedroom ceiling and its corresponding ensuite bathroom. The corners of the building were designed as large glass-to-glass corner apertures to maximise views and make the space feel much larger and closer to the outdoors, actually allowing the view to define the space. The upper level (kitchen) and lower level (living room) are made of white marble tiles, which carry on outside to mirror and expand the volume of the inside space. Longitudinal timber inserts extend from inside to outside across the apertures, further emphasising the visual link.

Between these two levels is the centre dining level. This part was conceived as a continuous timber floor and ceiling (organic angled soffit) in order to contrast with the white regular upper and lower levels. The timber texture is also mirrored outdoors. This creates a warm entrance section, bringing the outdoor inside, and extending the indoors externally. A great use of mixed materials and textures are juxtaposed within the house, creating a series of graphic shapes throughout, such as the uneven grey and white patterned surface of the staircase, or the non-linear timber ceiling of the dining level. Most furniture was bespoke, to fit into the spaces and requirements of the client. Custom-built fireplaces were incorporated into the fixed designed units; mechanical gadgets add to the overall enjoyment of the property. The bath was built in-situ, with its own views, yet with its own privacy. Bedroom furniture was custom-designed to accommodate the owner’s requirements, as well as all bathrooms and living spaces. The lighting design emphasises the perimeters of the building inside and out, and is very directional, leading you from one floor to another through visual links. The same guiding concept was continued through the lighting design, where each room’s lighting pattern was carefully calculated, designed and measured to create a striking effect, which both enhances the architecture and interiors, as well as changes the mood settings of the property during the different times of the day.

The property incorporates the best of environmental features, especially given the harsh environmental exposure of the site. All walls, roofs, and apertures were well insulated; a passive design allows for minimum solar heat gain in summer and maximum heat gain in winter with the use of the projections related to the sun angles. Custom-made timber louvers line the southwest façade, cutting down 80% of direct sunlight on those apertures in peak summer, and drastically reducing the effects of wind and rain on the apertures in winter.
The energy rating of the property is excellent, and the building performs perfectly well in the local weather patterns. Interior commodities like fireplaces and underfloor heating also augment the comfort of the property for its owner in winter. Ultimately, the hard work and detailing transpired into a unique property with detailed design in every centimetre.
Adequate cross-ventilation secures a comfortable temperature feel even in the harshest of summer days, virtually without the need of air-conditioning. 034

The bespoke sofa ‘Auguste’ placed in the living room is large enough to seat the entire family. Its square lines are balanced by the retro Vincent Sheppard armchair on one side and two linen armchairs on the other, flanked by a wood burning stove, all from camilleriparismode. Being the largest part of the house, a wall-to-wall library was designed around the two large original openings in the living room, providing ample storage. The unit also houses the central television, whilst neatly concealing all audio/visual equipment, as well as the heating and cooling system of the house

SPACES HW The juxtaposition of old and new, traditional and modern, rough and smooth is the design element that links all the areas of the house
he young homeowners of this 1920s Sliema townhouse approached the camilleriparismode Project & Design Team with the brief to transform the un-converted property into their new family home. Following several disappointing viewings of houses with little character, they knew that they had finally stumbled upon a true gem upon first sight of the townhouse.

The wide open spaces surrounding the house flood its internal spaces with natural light throughout most of the day. The warm feeling this light creates - along with the property’s location in a quiet part of a busy town, close to all the necessary amenities helped seal the deal, and the young family were eager to make the house their home. A typical townhouse hall complete with patterned tiles leads through the space until it reaches the stone staircase with original Art Deco wrought iron railings. The railings were painstakingly cleaned and repainted in muted, warm shades of grey using paints from the Zuber historical collection of colours, giving them the prominence they deserved. The original first floor layout consisted of five separate rooms, which did not suit the client’s lifestyle. The team created a new set of plans, which involved demolishing a dividing wall between the two front rooms, resulting in a larger living area and family room that could enjoy natural light through the Maltese balconies. Large framed doorways connect this room to the other parts of the house, and the original stone architrave was preserved and restored, as well as mirrored in a second new opening. The original Art Deco wrought iron railings were cleaned and repainted in muted, warm shades of grey using paints from the Zuber historical collection of colours

The furniture in the main bedroom is customised to maximise storage and space. The wall opposite the bed supports a large fitted wardrobe, while the entire space beneath the room’s large window has been designed to hold a closed shoe and storage cupboard
not accommodate two basins, a toilet, and a shower. To solve this problem, the entrance to the bedroom was shifted to the right, while another door was opened on the left. The door on the left side now leads to a spacious glass and marble cube forming a shower within the main bedroom. The shower is completely sealed from the bedroom side while a custom design vanity unit lines the rest of the space. The unit’s exaggeratedly recessed plinth helps to achieve a feeling of a wider space. The vanity top holds two in-built basins made entirely out of velvet taupe marble in a honed finish with open storage beneath. Above the basins, a hanging unit provides storage in the form of five cupboards, clad in mirrors. All the furniture in the main bedroom is made-to-measure to maximise storage and space. The bedsides are made out of the same walnut as the cladding, which doubles up as a headrest for the bed, while electric points and light switches are concealed beneath the floating drawers. The wall opposite the bed supports a large fitted wardrobe in a matt linen colour, while the entire space beneath the room’s large window has been designed to hold a closed shoe and storage cupboard. . The property enjoys another two bedrooms for the couple’s children, as well as a roof garden for entertaining family and friends. This home’s classic townhouse feel in its easy central location, along with the elegant design of internal spaces, truly makes it the perfect home for this young family.

FLAT-PACK FURNITURE DOESN’T OFTEN GET A GOOD PRESS, BUT MATTHEW HILTON’S CROSS TABLE FOR BRITISH FURNITURE COMPANY CASE, MANAGES TO DELIVER A FORWARD-THINKING, HIGH-QUALITY PRODUCT THAT STILL COMES AT A REASONABLE PRICE. EASY? WE ASKED HIM… 1.“This was an early concept, showing the cross-shaped legs – hence its name. It was the first piece I designed for Case, and I wanted to end up with a reasonably priced, extending dining table, which didn’t have a leg at each corner for people to bang their legs against, so it doesn’t prescribe where you sit.” 2. “We went through loads of different ways of working out how the legs and the bar would all fit together – the bar is very important structurally, pulling it all together.” 3. “The cross-shaped legs eventually became two sets of U-shaped legs on each side,
partly because they’d flatpack and ship better – ease of packaging and transportation are huge issues. The legs also took on a more dynamic shape – something with a bit of tension and movement adds a bit of personality.” 4. “The top is basically a box, with the leaves stored inside. Using veneer rather than solid timber allows us to make the top hollow, but it’s much more economical too, obviously. You lift the leaves out manually so it’s not very whizz-bang – in fact it’s pretty analogue – but again, it’s a more economical approach.”
5. ‘This is the finished table, but it’s actually now on its third or fourth incarnation since we started selling it: if there are production problems, they need to be designed out. For example, at first the veneer ran lengthways, which meant more wastage, and the factory couldn’t guarantee that the grain of the pieces of wood would match up when the table was assembled. That problem’s eliminated if you run it widthways, and it looks better, too.”

What originally drew you to Malta? I came to the island for an internship with Chris Briffa Architects for six months. I then began working at _spacestudio in 2009, mainly on interiors alongside Architect Michael Pace. I really enjoyed that. What is your original speciality, and what has that now evolved into? I’m qualified in interior design, architecture and furniture design. Before my internship in Malta, I also studied as an exchange student at London Metropolitan University where I focused on interiors, architecture and spatial design. Now, I find myself focusing on interiors and furniture design mainly. I had never actually planned on working at an architectural firm, but I wanted to work in interiors, and this is where the good projects are. I’m quite a free spirit and I love to create, as opposed to sitting in an office in front of computer all day. I was searching for my artistic freedom, which is why I took the plunge to start on my own. I work a lot more with my hands these days. I think being away from Poland has allowed me to see my Polish roots more clearly somehow. I get quite a lot of inspiration from folk culture; patterns, textures, the combination of
colours. This definitely keeps recurring in my projects. These days I find myself rarely using monochrome schemes - there’s always something more playful and colourful in the work that I do. However, being in Malta has also inspired me to no end. I think Maltese patterns and objects are incredible. I’m amazed by so much here and it definitely manifests in my work. I think the world in general is very inspiring! What are the moments that have defined your career so far? When I began freelancing, I spent three months without any work until I got the opportunity to design Chai Bubble Tea House in Spinola Bay on a freelance basis. This is how I was reborn again. A little while later, I was commissioned to design a little space called Seagull Shop in Hamrun for an amazing client who was very open to new ideas. He trusted my opinion, which allowed me to really enjoy it. I think this project made me believe in myself - to understand that I don’t have to feel so restricted, that I can actually be myself. That was three years ago and now I’m working on another project for the same client. There were also some furniture design pieces that really motivated me to keep designing
and producing whenever possible. For instance, I was inspired by the relationship between Wladyslaw Jagiello, Grand Duke of Lithuania and King of Poland, and Jadwiga, Queen of Poland, which led me to produce these solid oak wood stools. The owner of Retroforma is Lithuanian and knew the story, which prompted her to make them available for sale at her shop. [Featured in ‘Adapt’, HOMEWORKS issue 61.] One thing keeps leading to another, which causes me to take different turns in my career. What are you currently working on? A bar called Player’s Bar. There’s also a large residential project that has just been approved. I’m also working on a lot of personal projects, and I hope to hold a product exhibition in a few months. So in Malta to stay? What’s next? I’m quite happy here in Malta, but ideally I’d work both here and in Poland. Now my projects have started to overlap, which has allowed me to gain momentum. The beginning was tough, but this is typical of me - I just throw myself in. I think it’s important to take risks in life. You have to challenge yourself in whatever you do, and I’m actually really happy that I did. I will definitely continue going down this path.

What originally drew you to Malta? Four years ago, I had just finished a large shop interior in Catania with Architect Luigi Pulvirenti and headed off to London. There I met the director of ARCstudio, Claude Busuttil, who was looking for an architect specialising in restoration and interior design. It took me a whole four days to decide to come to Malta! I loved the island instantly. It’s so similar to Sicily that I feel really at home here - the attitude and colour is the same. It’s also so close to fly in to Catania. What is your original speciality, and what has that now evolved into? I specialise in the restoration of buildings and interior design. What I do best is to take a building from a derelict state, restore it, then end with its interior design. I also specialise on customising furniture for the space. I have the same philosophy as ARCstudio, which is why I love working with them - respect the old building without treating it like a museum. People have to live there in the end, so it has to be comfortable with additions, such as lifts or toilets (sometimes they’re outside in the courtyard!). Also, my background in theatre is really important for my interior design because it helps a lot with lighting and the romanticism of the home. When I began working, I knew I wanted to focus on the historical side of things, but also creation. If I only restored, I wouldn’t be able to explore my passion for creativity. With the interior design side, I get to do both. This is where I currently am.
What are the moments that have defined your career so far? I worked in Sir John Soane’s Museum in London. This was so exciting because he was an important architect during the early 19th century in London. It was a highly theatrical space, which inspired me to return to my theatre roots. When I first started at ARCstudio, I began working on a proposal for the Abbatija tad-Dejr Catacombs Visitors’ Centre, which was amazing for me! Then we worked on the Salina Restoration Project, on the interior design of Villa Bighi in Kalkara, as well as the Auberge de France in Birgu. The mix of projects not only kept it really exciting for me, but it also gave me a lot of experience very quickly. Every project brings an in-depth research study into the history and the architecture of the time. I also had the opportunity to work with lighting specialist Stefano Dall’Osso and Peter Cutajar (Light Design Solutions) for the Italian Cultural Centre in St. George’s Square, Valletta. I worked with Stefano and Peter to improve the lighting for the various different tasks that the room was needed for. We considered many different elements, such as the typography of the paint on the wall, the type of material that could be used, what the room was needed for… It was a great experience to gain such insight into lighting design. Last year I worked on the interior of the Italian Embassy, and the cleaning of the facade.
What are you currently working on? Together with the team at ARCstudio, I am currently working on three boutique hotels in Valletta and Senglea, and a large band club in Zabbar. I have also just completed work on the main reception at Ganado Advocates and am about to embark on the second. Restoration-wise, we’re working on developments within Fort St. Angelo, the restoration of landfront fortifications and some niches around Malta (such as the one at Crucifix Hill in Floriana). We’ve also just recently launched our new website (www.arcstudio.com. mt). So in Malta to stay? What’s next? Malta is my home now. The experience here is so great because Malta is a young country. The time directly post university is a difficult time for graduates in Italy, and other European countries. Here, if you have the capacity, you can work. A lot of my colleauges back home are going through tough times. There is so much interesting creativity happening in Malta at the moment, especially with Valletta being the European Capital of Culture in a few years. I’m really enjoying working with the theatres in Malta as well. My dream would be to actually work on the restoration of a theatre - but of course, Renzo Piano beat me to that! However, you never know what opportunities lay in the horizon! We will see…

rom its natural appearance and warmth underfoot, wood can be striking, and has a timeless appeal. Whichever the preference, there are pros and cons to buying real hardwood versus laminate wood flooring. The decision between one or the other lies in lifestyle and budget. Laminate wood flooring is made from composite wood pressed together at high temperatures. The photograph or image of hardwood is then covered over the composite wood to form the laminate, which is why it’s far less expensive. Also, laminate wood installation costs are a lot less than hardwood. Alex Sant Fournier at M. Demajo (Timbers) says, “Sometimes laminate is even up to 65% cheaper to install. It all depends on how the solid wood is installed and if the solid is pre-finished or just a raw wood, which needs sanding and varnishing.”

Since laminate wood flooring is made from pressed wood it’s actually more durable and resistant to scratches, moisture and wear than hardwood flooring, as well as easier to clean. Hardwood is susceptible to scratching, can get damaged from excessive moisture and will show wear, especially in areas of the home that see heavy traffic. On the flip side, hardwood is the ‘real thing’. It’s striking to look at, and depending on the variety grade, it can add considerable value to a home. Despite its durability, laminate is known to be less visually appealing, and the lower the quality of laminate, the more artificial it will look. When it comes to repair, laminate isn’t as easy to maintain as hardwood. If it’s the laminate that’s installed in individual pieces and snapped together, it’s easier to replace. However, depending on sunlight and age, the new piece may not match properly. Hardwood can be repaired by sanding and refinishing out imperfections. This advantage gives hardwood a plus over laminate, in that it will last for years into the future. HARDWOOD

The beauty of natural wood is that it offers infinite and unique variations in knotting, markings, grain and colour. An idea of what is will look like can be surmised by display samples, but once laid, it will have a character of its own. Each piece of timber is unique with an individual character and inherent natural features - the knots, splits and blemishes actually add character. An oiled finish will offer a very natural and different look compared to a lacquer finish, although the latter is more water-resistant and easier to maintain. If in a household with children and/or animals, the wise choice is lacquer.

The harder the wood the better for areas of the home with a lot of traffic. The best way to find the type of wood that suits you is to visit the recommended showrooms for samples and prices. The lighter the colour, the more light will be reflected, but wear and tear is likely to show more easily. Once the wood is exposed to normal sunlight, it’s subject to colour change. Wood expands and contracts with extremes of temperature, to the extent where small gaps may appear temporarily.
purpose. The backing layer is designed to provide structural integrity, as well as a barrier against moisture. Backing layer materials will vary depending on the manufacturer, and range from paper to a thin melamine. The materials used to construct the backing layer can effect the flooring’s longevity, so look for laminate or melamine backings to better protect against water damage and provide stability. The core can be made of a variety of materials, again depending on the manufacturer. Most commonly used is HDF (high density fibreboard) or MDF (medium density fibreboard). Quality laminate floors will have resin-treated exposed edges to resist the swelling effects of water. Beneath the surface layer on top of the core is the high-resolution photographic image of a real hardwood board. Similar to a photograph, image resolution and laminate printing processes can vary depending on the manufacturer. Poorly reproduced images are susceptible to colour changes over time, so look for a quality photographic image. The wear layer is the surface of the board that seals the photographic design and provides an extremely hard surface to resist foot traffic and other wear and tear.
If laying on a new concrete floor, parquet needs time to dry out completely. Wood flooring should be placed in the area where it is to be installed to enable it to “acclimatise” or adjust its moisture content to correspond with that of its surroundings. When acclimatising wood flooring, the packs should be stacked to enable air to circulate around them. They must never be opened during this period, and expect pre-finished wooden flooring to take 48 - 72 hours to acclimatise. Engineered wood is made of layers of wood boards glued together and topped with a layer of timber. It’s strong, stable and easier to lay than solid wood, so a cleaner, sharper finish can be achieved. It’s resistant to warping and cracking, even during variations in temperature and humidity. Quality engineered wood flooring has a wear layer that is thick enough to allow the floor to be sanded at least once. However, underfloor heating is not usually considered suitable for solid wood flooring, but it’s fine for engineered wood with its high resistance to heat. As a natural product, bamboo has variations in colour and press, and it’s these which add to its defining features. It’s an extremely hard wood and competes with the best hardwood species, yet less expensive. A lot of bamboo floors are officially assessed to be CO2 neutral or better over the complete lifecycle. They’re often anti-static and anti-allergenic, which facilitate a healthy indoor environment. Also, with a growing speed of up to one metre per day, bamboo is the fastest growing plant on earth, which makes it highly sustainable. LAMINATE Laminate consists of four layers, each constructed with a specific
For the most part, wear layer coatings are made out of tough materials, typically a resin coated cellulose and aluminium oxide or melamine. Wear layers are given an abrasion class (AC) rating for durability. An AC rating of three or higher will offer an attractive, hardwearing finish. The four layers are fused either by direct pressure (DPL) or by highpressure (HPL). DPL is when the laminate is assembled all at once, then heated and pressed under extreme pressure to form a bond. HPL is a more recent innovation (often found in quality brands) where the top and bottom layers are first treated separately and then fused again to the core layer under extreme pressure. Today’s laminate flooring comes ready to assemble, as smooth or textured individual planks with tongue and groove edges. These edges slide together with a glueless click joint or locking system, which allows the floor to be quickly assembled by hand or with a mallet. When purchasing laminate flooring, weigh each factor carefully against the price of the product and choose the highest grade affordable in order to ensure a good-looking, lasting laminate floor and the best value for money.

In addition, laminate is given an AC rating to measure resistance to moisture, burns, abrasions, impact and stains. The AC determines whether the product is suitable for a particular residential or commercial application. Keep in mind that most residential rooms need no more than an AC rating of three, which is even suitable for commercial use in spaces such as hotel rooms and small offices.
Thickness is not necessarily an indicator of quality. A 12mm laminate may seem like the best choice because more material can be seen, but without quality of construction you’re simply paying for more fibreboard. Contrary to common belief, board thickness has no bearing on how well a laminate floor will hold up over time. In fact, it’s the materials and methods used to manufacture the product and the quality of the embossing that makes for a long wearing floor.

Tall hedges can double as walls, the canopies of trees can provide a ceiling, a ground can cover the floor, a tree-lined passage can create a corridor. Of course plants on their own are usually not enough, unless the setting is completely naturalistic, and the hard landscaping layout needs to be determined before, or at least in conjunction with the selection of plants.

A sound horticultural knowledge is a crucial starting point. When choosing plants we must be perfectly aware of their requirements, their preferred microclimate, water, light and soil needs, and how they interact with one another. It is useless to select plants with the ideal form, colour and texture for a particular site if they cannot thrive in the given conditions. That would result in a horticultural as well as design failure. Understanding of the material is therefore essential, just like in any other design form.
The functional role of plants is also decisive when it comes to choosing varieties and an initial site analysis can identify the problems and possible planting solutions. An unsightly corner which needs to be screened, privacy from overlooking buildings, windbreaks, shade creation, soil erosion control, and security issues can often be resolved with the correct choice of plant. On the other hand plants can also be used to draw attention to and emphasise certain elements like entrances, a pleasant view, steps, water or other features of note. This can be achieved with areas of intricate planting, striking colour or a single specimen plant with outstanding characteristics. Specimen plants can also provide a focal point in themselves, and are typically complemented by simple, uncomplicated planting which wonâ&#x20AC;&#x2122;t detract from their form. Once the functional matters have been resolved, and the structure, of both hard and soft landscaping, laid out, the more detailed design phase starts. Setting the theme and mood for an outdoor space can draw inspiration from

In practical terms, we start by placing the woody plants, trees and tall and medium shrubs with permanent stems which form the backbone of the design. These are followed by lower shrubs and herbaceous plants and in turn by the ground covers and fillers which fill in at the lowest level. These are always best planted in large sweeping drifts rather than single specimens, remembering that in nature complete cover of the soil at various levels indicates favourable growing conditions, while bare soil is a sign of stress. Equal attention should be given to the horizontal and vertical planes, and since plants are three dimensional and we usually donâ&#x20AC;&#x2122;t view a garden from a single perspective, we must ensure that planting compositions look good from all angles.

PRAWN CARPACCIO Ingredients
fresh red king prawns natural rock salt fresh black pepper corns, crushed purple water cress Dante extra virgin olive oil mint and parsley, finely chopped Method Cut the prawns in thin slices and gently flatten by using a beater. BEST WINE ACCOMPANIMENT 2012 MEDINA ROSÉ GRENACHE D.O.K. MALTA “This is a really refreshing, clean ‘seafoody’ dish with simple salt, pepper and herb flavours to accompany it. The prawn meat itself has a slight natural sweetness to it, which would make me lean towards a rosé wine to accompany it, although many crisp, dry un-oaked whites will work as well. The Malta grown red Grenache grapes that go into the 2012 Medina Grenache Rosé are ripe and fruity, and will accompany this dish perfectly. But as with nearly all rosé wines, buy them young and drink them well chilled.” 087

GRILLED COD WITH BABY CUTTLEFISH Ingredients
Salad Ingredients
cod fillet baby cuttlefish king prawns
rocket leafs radicchio cherry tomatoes cucumber gherkins leeks olive oil lemon natural rock salt
Method Sprinkle the skin of the cod with rock salt and grill until the skin is crunchy and bake for four minutes in an oven at 185C. Marinate the cuttlefish in garlic, oil, and salt & pepper. Grill the cuttlefish for about four minutes until tender. Pan-fry the prawn in hot oil and flame it with some white wine. For the salad cut all ingredients in small pieces, and dress it with olive oil and lemon juice.

MALTA â&#x20AC;&#x153;Cod is a nice fleshy fish, but very clean and light, whereas the grilled baby cuttlefish are slightly heavier in flavour, but both deserve a clean, dry, white wine as an accompaniment. The Malta grown Viognier vines are producing full flavoured grapes that result in refreshing wines with good weight and body. The 2012 vintage Grand Vin de Hauteville Viognier has sufficient weight for both the cod and the cuttlefish, but not too much to overpower them.â&#x20AC;?

PEAR & RICOTTA CAKE Ingredients 200g hazelnuts, finely ground 150g flour 3 eggs 60g sugar 50g butter, melted
40g 1pc 300g 50g 1tbs 70ml
sugar lemon ricotta sugar vanilla essence double cream
pears, peeled and 4 sliced 2tbs brandy Method For the base of the cake, start by whisking the eggs and sugar until they’re stiff. Then fold in the hazelnuts and the flour with a spatula. Finally, mix in the butter. Divide the mix into two baking trays and cook at 170C for about 13 minutes. Poach the pears for few minutes in water with the lemon juice and sugar until soft, then drain and soak in the brandy. For the ricotta filling, mix the ricotta, sugar and vanilla until smooth, then fold in the pears and whipped double cream. Lay the cake by using one of the cake bases, spreading the ricotta mix on top. Finish by using the other cake on top. Sprinkle with icing sugar, and leave to rest for about two hours before serving .

MALTESE ISLANDS “Rather than the usual sweet white wine that we know goes so well with sweet dessert dishes, I have opted for the crisp, dry, refreshing semi-sparking Girgentina Frizzato to help balance out the richness of this delicious cake dish. The Maltese indigenous Girgentina as a sparkling wine is also particularly good with pears and ricotta. What is vital however, is that this Delicata Frizzato is drunk well chilled and preferably served in a nice, elegant flute.” 089
