EDITOR’S LETTER HW

At HOMEWORKS we always face the challenge of finding that balance between featuring homes of aspiration, versus realistic homes. Ideally, we present spaces that offer a little bit of both, but which are approachable for those who don’t have an enormous budget. While those realistic spaces are inspirational, sometimes we just want to see glorious, breathtaking, no-expensesspared, magnificent homes. This issue we’ve dropped that balance and have featured truly spectacular homes, which are so impressive that they could compete with the finest homes globally. All the spaces featured this issue are entirely different, but the one thing they have in common is that the homeowners are all passionate about design. In all cases, their relationship with the architects and designers was a very hands-on, symbiotic relationship. This collaboration is every architect and designer’s dream: a homeowner who has a true passion for creativity, but also has the means to implement it. The results of this rapport shine throughout this issue. Apart from stunning homes, this edition also brings you autumn inspiration (page 058), followed by great wall ideas in ‘Wonder Wall’ (page 062). Due to readers’ requests, page 058 brings you an Aquarium Buying Guide, while Landscapist Melina Scodanibbio explores creeper plants this edition on page 090. The season is changing with summer officially out and autumn settling in, and is “...the year’s last, loveliest smile.” Make the most out of it by getting the home ready for the winter season. We hope our spectacular homes issue inspires you to get raring to go this season!

In return, adopters get 1lb of honey per share. www.nigelsecostore.com

MOBILE ORCHARD The Mobile Orchard was a public installation by atmos – “an inhabitable hymn to the urban fruit tree”, commissioned as the centrepiece for the City of London Festival 2013. The project seeked to create a new kind of public landscape that merges the best of man-made design and organic nature. It offered a labyrinth of complex spaces that sought to celebrate both natural trees, and the communion of cities. The installation was also edible – a constellation of real apples, refreshed daily, were ripe for the plucking by any member of the public. www.mobileorchard.info 025

This issue is all about truly spectacular homes. We begin with Remco and Jessica Slik’s perfect mix of classic Dutch design nuances amidst grand Maltese architecture in their Birgu palazzo built in 1558 by the Knights. Originally built to host and entertain people, the home continues to do so through the centuries (page 028). Our second home is a striking conversion in Bahar Ic-Caghaq by Kevin DeCesare – the home where he finally hangs his hat (page 040). DREAMHOME 1 A PERFECT MIX OF CLASSIC DUTCH DESIGN NUANCES AMIDST GRAND MALTESE ARCHITECTURE MAKES THIS STRIKING PALAZZO IN THE HEART OF MEDIEVAL BIRGU THE EPITOME OF A SPECTACULAR HOME. BUILT IN 1558 BY THE KNIGHTS, THE PALAZZO WAS ORIGINALLY BUILT TO HOST AND ENTERTAIN PEOPLE, AND HAS ALWAYS DONE SO THROUGH THE CENTURIES. NOW, IT CONTINUES ITS LEGACY WITH REMCO AND JESSICA SLIK’S ENVIABLE LIFESTYLE

his is a romantic story. Twelve years ago young Dutch Remco was appointed by his company to set up an office in Malta. In the meantime, the also Dutch Jessica was in Malta on holiday visiting her father. It was love at first sight during the dinner at Jessica’s father’s house. After a two-year distant relationship, Jessica moved to Malta to join Remco, and the couple got married in Naxxar seven years ago. After an extended honeymoon of about ten months travelling around the world, the two decided to settle in Malta and pursue another dream: restoring an old house. Remco, “Literally on the day of our return from the honeymoon, I saw the ‘for sale’ sign on the house. The number of our estate agent happened to be on it, so I rang him directly. It turned out that he had been trying to reach us for quite a while, as he wanted to show us this house. We had switched our Maltese phone off due to the journey... Two days later we saw the house for the first time from the inside, and another two days later it was ours. We immediately knew that this was going to be our home.” The couple kept close to their initial vision after buying, albeit a few developments. “We immediately ‘clicked’ with the house; the spaces, the rooms and the atmosphere. We wanted to keep it as it was, and stay as close as possible to the original.” An essential aspect of the couple’s vision for the home was always practicality: it’s important for things to look good, but most of all they should work and make sense in daily use. They also wanted to re-use onsite materials, as well as those of the highest possible quality. The use of natural products and incorporation of true craftsmanship was vital. “All of this complicated things, but it really paid off in the end result.”

The re-use of onsite materials was paramount, as well as those of the highest possible quality. The use of natural products and incorporation of true craftsmanship was vital

The couple did all the interior design themselves, but commissioned local architect Gilbert Buttigieg for the structural works and additional designs. The Birgu project was his first major restoration project as an independent architect. “Gilbert understood perfectly where we wanted to go, came up with some brilliant ideas, and was also always willing to listen to our own input. We’re so pleased that Din L-Art Helwa awarded him with the 2012 Prix d’ Honneur for Restoration for our project.”

Impressive entrance to the master bedroom. The blending of the interior design with the Maltese atmosphere of the house is intentional. As the couple embarked on the interior design of the palazzo, their Dutch roots became invariably visible. They combined this with items that they had seen and collected on their worldwide travels. The vast majority of all furniture, decorations and details were bought specifically for the location and architecture of the home. This was needed, due to the odd sizes and shapes found within the old house. Also, as a result of details being important to them, they ensured that all was precisely the way they wanted and needed it.

All rooms look onto it, and it’s the first space experienced upon entering. The couple decided against covering it to emphasise one of Malta’s biggest assets: the glorious weather. This space is often used as an outdoor living room with a cool temperature in summer, as well as cosy and wind-protected in the winter. The fireplace here makes is possible to even enjoy winter evenings outside.

“We just bought items that we enjoy living with, and again, are practical. Or we designed it ourselves if we couldn’t find it. A lot of the furniture and lamps are bespoke. The works of art weren’t planned and just seemed to fall into place. Some of the paintings from our collection found a totally different place in the house than first expected.” The blending of the interior design with the Maltese atmosphere of the house is intentional. Built in 1558 by the Knights, the location is in the heart of medieval Birgu. It was important to the couple to keep the original atmosphere intact as much as possible, as it gives the house its character. An immense palazzo, there are various rooms, each one with a completely different personality. The design accompanied the different functions, lay-outs and positions within the house. The colours used throughout are classic, soft and natural with a matte texture to offer a relaxed feeling. The colours are pleasant and unobtrusive, giving space to the lively artworks on the walls. The courtyard is a very important central space in the house.

Here, the furniture is kept simple, cubic and white. Designed by the famous Dutch designer Jan des Bouvrie, the snow-white sofas and stools contrast with the old environment they’re in, without asking for too much attention. The simple extra large and high white flowerpots compliment them. In the kitchen (right next to the courtyard), the same design principles were applied: simple and white, with a combination of ultra modern in an old environment and again, with practicality in mind. The kitchen is one of the most important spaces in the house for the couple, so they poured a lot of time into the design of it. The appliances are high-end, and the working spaces ample. There’s also a large space for guests to sit around while the couple is cooking. There are two living rooms; one which the couple refers to as the summer or entertainment room; the other referred to as the grand Sala Nobile, which is more of a winter room. The entertainment room receives ample natural light with a large foldable wall that opens up to the covered terrace, while the Sala Nobile is the opposite; cosy and dramatic, with dark colours (black and gold) and wood. The heavy curtains and glamorous decorations, as well as the significantly chunky furniture bring the space a sense of luxury. The room is 031

Two entirely different dining spaces. To the left is the more formal and dramatic upstairs Sala Nobile, while to the right is the more approachable dining area which leads off from the downstairs kitchen The same design principles were applied in the kitchen as the courtyard: simple and white, with a combination of ultra modern in an old environment. The kitchen is one of the most important spaces in the house for the couple, so they poured a lot of time into the design of it

enjoys a lot of natural light, the grey produces a subtly warm feel, which even cools down the harsh light. The third suite is named The Garigor because the original stone spiral staircase ends in this room. The couple used the spiral of the staircase to inspire other design details of this space, as well as the sandy colour scheme. Some very rare stone engravings from the time of the knights were found in the spiral staircase, which depict the galleys of the knights, complete with coats of arms and flags. In the early days of the house, the sea with the knights’ galleys was visible from this room. Details to match the naval historic atmosphere of the room are found in items like the special travel books and world maps (inclusive of a rare extra large reprint of the 1665 ‘Atlas Maior’ by Joan Blaue).

The pool area is spectacular with views over the Grand Harbour. This area was designed for entertainment and relaxation in mind, with bespoke azure-coloured furniture and accessories. A three-metre long dining table made from recycled planks gives this space a rough, outdoor feeling, and is ideal for the couple and their friends to hang around together, and enjoy meals over long summer evenings. Sunbathing areas around the deck are also ideal for more private moments.

This truly spectacular home was originally built to host and entertain people, and has always done so through the centuries. “We are all about hosting people, so the house blends in perfectly with our lifestyle. Or maybe we should say: we blended in with the house. Because the house and its history was there, we are just the temporary keepers. The only thing we want to do is cherish its history and share it with as many others as possible.

he notion seems unlikely; a renowned burgeoning businessman who genuinely digs interiors. It seems improbable because there’s a certain sensitivity to those who have an enthusiasm for homes – it’s about attention to detail, creativity and being realistic about what’s really important.

T

Kevin DeCesare is the paradox. HOMEWORKS has seen the homeowner evolve; back in 2007, the move from his villa to his Sliema apartment was a big one. With the desire to start from scratch, he auctioned off most of his inherited furniture pieces and paintings. There, it was all about exploring the idea of simplified and convenient living, with gadgets being paramount. Four years later, Kevin moved into another Sliema apartment – this time the focus was on warm and comfortable living. There, he was steadfast about maintaining two key elements: space and views. It was at this time that the homeowner began the conversion of his old villa in Bahar Ic-Caghaq into a cluster of five modern houses. He engaged _spacestudio to carry out the conversion, each villa renovated with his consistent input and supervision. Deliberate that the last villa converted would be where he would live, he took the opportunity to learn what he personally wanted, and to avoid what he didn’t through the other renovations. And so, finally, under the architectural and interior design guidance of Forward Architects, the mother of all Kevin’s conversions has come to fruition; this impossibly striking house with every aspect and detail honed to suit precisely what Kevin has evolved to want. Kevin, “Although the other villas of the cluster are fantastic, this one is far more personal. As always, I gave the architects room to breathe and do their own thing, but I wanted all the decisions to go through my hands on this one.” Architect Nicola Muscat, “Kevin knows what he wants, but he’s excellent at considering good design paramount. If your argument makes better design sense, he accedes. There were other times when it was the other way around – he would be sure about something and so would insist. These choices turned out to be the best options for his particular lifestyle. He’s realistic about what he needs, which is not often the case with homeowners.”

All external lighting is LED so that the well-lit gardens, courtyards and pool patio can be enjoyed without energy efficiency concern. The wooden decking alongside the sharp blue of the water creates a striking effect. The cool, white pavilion on the patio controls sun shading so that summer entertaining is comfortable and easy Clad in a teal slate, the pool is designed for swimmers to feel as if they’re open to the horizon

Kevin chose his own furnishings and materials to retain a personal feel to the space. He wanted to choose his own, as well as bring in the items that he has accumulated over the years. The furniture that Kevin chose kept the overall look clean, yet warm. It’s clear that quality was paramount – most of the living room furniture is by Minotti. The large walnut wood clad living room wall with a mantle not only brings in enormous comfort to the space, but also acts as a showcase for Kevin’s various paintings and eclectic pieces. The suspended bulbous black steel ‘Focus’ fireplace integrates the open plan living and dining area, and is rotational so that the fire can face whichever area desired. Apart from the obvious warmth that a fireplace brings, it also became a striking feature, which gently breaks up the enormous space

The insight from the previous conversions was invaluable – the trials and errors had already occurred. This one was a home run. Retaining the site’s greenery was one of Kevin’s highest priorities. Excavation was carried out around the existing trees, which resulted in stunning pockets of plantation throughout, such as the palm trees in the courtyard, side atriums and back garden. Nicola, “This is something we as architects really appreciated; it’s not often that you get a client who understands so clearly the need for greenery. It helped us immensely in merging the indoors and outdoors. Kevin is truly committed to his garden, which means that maintenance is not an issue.” The other converted villas were designed in a minimalist style with simple architecture, neutral finishings and colours. Kevin wanted his own home to be more colourful and obviously individual. “I wanted to be much more involved in this one. I wanted the structure to perfectly accommodate my particular way of living. In terms of furnishings and materials, I wanted to choose my own, as well as bring in the items that I’ve accumulated over the years.” The furniture that Kevin chose kept the overall look clean, yet warm. It’s clear that quality was paramount – the furniture is by Minotti, outdoor furniture by B&B Italia and Gandia Blasco, bathrooms by Boffi, and wardrobes by Porro. Other options, such as the deep purple ceiling in the dining room and the black fittings as opposed to white, created further warmth. The large walnut wood clad living room wall with a mantle not only brings in enormous comfort to the space, but also acts as a showcase for Kevin’s various paintings and eclectic pieces. The suspended bulbous black steel ‘Focus’ fireplace that integrates the open plan living and dining area is rotational so that the fire can face whichever area desired. Apart from the obvious warmth that a fireplace brings, it also became a striking feature, which gently broke up the enormous space. One of the principal architectural goals was to retain as much ceiling height as possible. Apart from the various anomalies that had to be made to achieve this (such as placing an air conditioner outside in one case), glass was used extensively. Sloping ceilings – which were adapted from the architecture – offer the space more interest throughout. Some were reinterpreted, such as in the dining room, while others, like the kitchen, are actually sloping.

The wooden decking by The House Shop alongside the sharp blue of the water creates a striking effect. The cool, white pavilion on the patio controls sun shading so that summer entertaining is comfortable and easy. Whether Kevin’s design evolution stops here is yet to be seen. DUE TO THE COMBINATION OF VARIOUS DESIGN SOLUTIONS BY ARCHITECTS DANIEL SCERRI PERITI, TOGETHER WITH THE OPEN-MINDED PROPERTY OWNERS, THE RESULT IS A ONE-OFF HOME IN SAN PAWL TAT-TARGA THAT’S A JOY TO LIVE IN, COMPLETE WITH ALL THE REQUIREMENTS FOR A GROWING FAMILY he site for this villa was part of a new district of villas and semidetached villas, including another two designed by the same architect – Daniel Scerri – in the same road. As a result, the potential for a streetscape here became a conscious factor in the design. The land also neighboured a small old chapel, with its own great charm, which needed to be respected in terms of size and height.

T

To this effect, the house was kept lower than its allowable maximum building height, in order to respect the proportions of the neighbouring chapel, to keep human-scale proportions to a high-standard residential area, as well as to maximise the sun-kissed area of deck space in the garden. This site had a particular L-shape, so the best use of it in terms of circulation and sun paths was chosen. The architecture of the villa was designed as a conceptual ‘floating’ first floor volume that wraps around the garden space, with its own ‘brie-soleil’ (permanent sunshading structure) that creates a play of shade and shadow, as well as gives a human-scaled horizontal proportion to the building.

The external lighting system both highlights and accentuates the main features of the dwelling, as well as creates options for different mood settings, all linked to an intelligent home system

The ground floor is in turn designed as a recessed textured heavy wall wrapping around parts of the ground floor, which allows a play of shadows on its rough horizontal strips.

On the first floor, apertures were carved and angled into specific directions to make the best of the viewpoints onto the nearby chapel and long distance focal points. The entrance approach into the property starts across a bridge that spans over a sunken ‘Zen’ garden at basement level, so a glimpse of the various zones and spaces of the house are perceived. 053

For weatherproofing purposes, custom-made solutions were devised by the architect and integrated for various construction details, which proved to be very effective for weatherprotection and minimisation of maintenance requirements. External finishing details were also designed with this in mind.

Thanks to the combination of various design solutions, together with the open-minded property owners, the result is a one-off property that’s a joy to live in. This relaxing home is free from unnecessary burdens of discomfort, with all the requirements for a growing family.

Aquarium

AQUARIUMS HW

BUYING GUIDE

DUE TO VARIOUS READERS’ REQUESTS ON AQUARIUM ENLIGHTENMENT, HOMEWORKS BRINGS YOU THE MAIN ELEMENTS TO CONSIDER BEFORE MAKING AN AQUARIUM PURCHASE

BUDGETS AND FISH TYPES The most expensive part of having a home aquarium is the start-up costs. Purchasing an aquarium, filters, lights, and other essentials can add up quickly if you are not careful. Fish themselves can range from inexpensive to very expensive for special or rare species. Marine (saltwater) fish and marine tank setups will cost more than freshwater setups. In both cases, the larger the tank, the higher the cost will be. A typical tropical freshwater aquarium can safely support three centimetre of fish per four litres of water, although this will vary with the amount of water surface area. More surface area allows more oxygen, which supports more fish. Some fish are schooling fish, which by nature are more comfortable in bigger groups. Other fish may not like to be in an aquarium with any others of their own species. If they are territorial, as most marine fish and some freshwater fish can be - they will need more room in the aquarium than the average rule of thumb. Both marine and freshwater setups have benefits and drawbacks. Marine fish are more colourful and striking, but require a higher level of care and expertise, so for a beginning fish enthusiast, a freshwater aquarium is recommended. Freshwater aquariums tend to be easier to maintain than marine aquariums because there are fewer chemical imbalances to worry about. 065

AQUARIUMS HW

SIZE & SHAPE A good way to determine the size and type of aquarium needed is to get an idea of what kind of fish are desired. The choice will be further restricted by where the tank can be placed in the home, as well as by budget. With aquariums, bigger is always better. The larger it is, the more room there is to add more fish later. Larger aquariums also hold more water, which can help thin out chemicals or other substances that may pollute and cause illness in fish. The shape of the tank also affects the number of fish it will support. Avoid tall thin tanks, and opt for longer ones. The extra length will also give the fish more room to swim than in a tall aquarium. PLACEMENT IN THE HOME Regardless of its size, an aquarium needs to be located somewhere with a level, sturdy, support surface, and where it is not in danger of being bumped into or knocked over. It should be kept clear away from heater vents, windows, or doors, as these can produce harmful temperature fluctuations. Proximity to windows is also dangerous for aquariums, because it can allow too much light into the tank, and excess light leads to algae build-up. ACRYLIC OR GLASS

The furniture aquarium with an avant-garde design, Eheim Incpiria, is inspired by classical beauty. Find it at Akkwarjumalfa

Acrylic aquariums are lightweight with smooth corners that don’t chip. Acrylic also offers a less distorted view than glass. On the down side, acrylic requires a stand with support beneath the entire length of the bottom, and is easily scratched. Glass is easy to clean because it doesn’t scratch easily, and requires support only along the outside edges of the tank. On the down side, glass is heavier and the edges can chip. FILTRATION Essentially, aquarium filters work in three different ways. Biological filtration takes advantage of the natural bacterial process involved in the nitrogen cycle. Biological filter medias provide larger surfaces for beneficial bacteria to colonize, ensure that water passes through the colonies, and help to protect those bacteria from being disturbed. Mechanical filtration removes unsightly particles from the aquarium. This may include fish excrement, sludge, uneaten food, or dust. Tank water is passed through a mechanical filter media, and the particles are strained out. To prevent build-up, the filter media must be cleaned regularly. Chemical filtration can remove some dissolved wastes from the water that a mechanical filter is unable to take care of. When water passes through a chemical filter media, the filter media chemically bonds with the waste molecules and holds onto them, thereby removing them from the aquarium. LIGHTING Proper lighting is essential for tanks containing live plants, or fish that are dependent on light for food. Good lighting will also make the aquarium and the fish within look more attractive. Since the fish are no longer exposed to natural sunlight, providing the proper spectrum and intensity is vital for their overall good health.

This freshwater labyrinth aquarium is designed out of acrylic with silk plants and three doughnut-shaped lights that are placed underneath the black central hoods. The stand conceals the lighting and filtration components of the aquarium

HW AQUARIUMS

Wall mounted aquariums are becoming increasingly popular because they free up valuable floor or shelf space. Most of them feature advanced filtration, lighting, air pump and heating systems

Acrylic is lightweight with smooth corners that don’t chip and offers a less distorted view than glass. On the down side, it requires a stand with support beneath the entire length of the bottom, and is easily scratched

AQUARIUM CHECKLIST

Since fish in an aquarium are no longer exposed to natural sunlight, providing the proper light spectrum and intensity is vital for their overall good health

As a general rule of thumb, a tropical freshwater aquarium can safely support one inch of fish per gallon of water, though this increases with larger aquariums. Use the following table as a guide: Total Length of All Fish (cm) TANK VOLUME

IS MOULD DRIVING YOU UP THE WALL? Mould can grow on almost any substance when moisture such as condensation is present. Moulds, when they produce, make spores which can be carried by air currents and when these land on a moist surface they begin to grow. Mould feeds on nutrients such as cellulose which can be found in most papers and paints. Crown Trade Steracryl has a proven pedigree in the prevention of mould growth. Stringent testing by the PRA (The Paint Research Association) has found it to be an effective mould inhibitor over long periods of time.

It’s not just paint.

Solid wood Bamboo parquet is a natural surface material that has many of the properties of hardwood flooring. Even though it is actually produced from a type of grass it shares many of the positive benefits of a hardwood floor, it is also the cheapest solid flooring and one of the strongest and most resistant to humidity, it is composed of complex fibers that do not absorb moisture as easily as wood. Bamboo is 27% harder than oak and 13% harder than maple making it very durable. Bamboo flooring boasts a unique appearance that is complimentary to many decors. Exotic and elegant, the beauty of Bamboo will enhance your interior while remaining true to its natural origins.

CLIMBERS

The value of climbing plants is often underestimated, and yet in today’s smaller landscapes they can play a very important role. Landscaper Melina Scodanibbio tells HOMEWORKS how Words: Melina Scodanibbio

Climbing roses fall under the category of scramblers - plants that have long, flexible stems, but which are unable to attach themselves on their own. Their thorns will help them to cling somewhat to a structure but they will still need to be tied and trained in the direction they are required to grow

plant that grows up rather than out is a brilliant way to save space in a small plot, and can still provide the illusion of a garden. This way, precious ground space is left clear and an interesting vertical dimension is added. Climbers of course need an adequate support in order to perform their spatial role, be it that of separating, enclosing or sheltering. They can be trained up walls, trellises or fences, and grown over pergolas, archways and arbours. Without a support, climbers – especially those with a trailing or scrambling habit – will form very effective ground covers. They can quickly spread over sloping banks, look great tumbling over low walls or the edge of planters, and can be grown under trees where little else will cover those bare patches of soil. Ivy, being shade tolerant, is particularly useful in these cases. Other climbers, which can be successfully used as ground covers are Trachelospermum, Ficus pumila and Senecio macroglossus.

Self-clinging vines attach themselves by means of aerial rootlets or adhesive pads. These are not suited to a framework, rather preferring a solid surface to stick to

GARDEN HW Climbers are roughly divided into two general groups depending on their method of attachment. Twiners are those which attach themselves by means of twining, flexible stems or tendrils and require some sort of structure or framework to weave in and out of, and climb up. They are ideal for pergolas, and if grown on a wall they will require the support of a trellis or wires. If left unattended they will also clamber up trunks of trees or over shrubs. Typical examples are Passiflora, many types of jasmine and trumpet vines (Bignonia family), honeysuckle, grape vine and Ipomoea. Self-clinging vines make up the second group and are those that attach themselves by means of aerial rootlets or adhesive pads. These are not suited to a framework, rather preferring a solid surface to stick to. Those with aerial roots, ivy for example, prefer a coarser surface such as a stone wall or the bark of a tree, while the second group, which includes Parthenocissus, will stick to just about anything including a smooth facade. Without a support these climbers will very happily grow horizontally, adhering to anything in their path.

Ficus pumila: a climber, which can also be successfully used as a ground cover

A third category is that of the scramblers, essentially plants that also have long, flexible stems but which are unable to attach themselves on their own. Bougainvillea and climbing roses fall into this group; their thorns will help them to cling somewhat to a structure but they will still need to be tied and trained in the direction they are required to grow. Other varieties include Jasminum sambac, Tecomaria and Plumbago.

The mixture of climbing roses is a great way to add colour and interest to a trellis or wall 093

HW GARDEN

Trumpet vines (from the Bignonia family) are ideal for pergolas, and if grown on a wall they will require the support of a trellis or wires. If left unattended, they will also clamber up trunks of trees or over shrubs

Parthenocissus will stick to just about anything including a smooth facade. Without a support these climbers will very happily grow horizontally, adhering to anything in their path

Some climbers, such as grapevines are very ornamental, but also have the added benefit of providing fresh edible produce

Climbers are extremely versatile plants and are invaluable for covering unsightly areas, softening strong architectural lines, clothing bland walls, dressing up narrow walkways and effectively transforming and bringing colour to the dullest corners. Aside from their many functional uses, they also offer great ornamental appeal with their graceful appearance and broad variety of floral and foliar interest. Many climbers are highly aromatic too, and when trained around a door or window their heavenly fragrance is carried all the way inside the house. This can also be appreciated when sitting under a pergola dripping with scented blooms. Some plants have the added bonus of being edible, so again – when space is limited, what better way than to grow food vertically! Passion fruit (Passiflora edulis), grapes, many vegetables and climbing Nasturtiums, apart from being very ornamental, all have the added benefit of providing fresh produce.

Beauty abounds: climbing roses

Bougainvillea is part of the scrambler category; plants that also have long, flexible stems, but which are unable to attach themselves on their own. Their thorns will help them to cling somewhat to a structure but they will still need to be tied and trained in the direction they are required to grow

Maintenance for climbers depends on the varieties and growth rates, but is generally limited to trimming back to keep them in bounds or away from doors and windows. Since they have a lot of above ground growth and need to reach great heights, their roots need a bit of extra care. It is best to provide a good depth of soil, making sure it is well drained, and to dig in some organic matter. The roots will also benefit from some mulching around the plant to keep them cool in summer. There is a vast selection of supports available, and these can be chosen according to the type of plant and style of garden: trellis designs in wood, plastic or metal, stainless steel cable trellis systems, free standing trellis supports or simply stretching wires horizontally between screws directly in the wall.

FISH RAVIOLI WITH PRAWN BISQUE Ingredients Dough 200g flour ‘00’ 2 egg yolks 1tsp olive oil pinch salt 1tsp water

Filling 200g 30g 1pc pinch pinch

white fresh fish fillets onions, chopped orange zest salt pepper

Sauce 100g red prawns 50ml fresh cream 20g onions, chopped 5g garlic

Method For the dough, combine all the ingredients together, and work the dough until it’s smooth. Leave to rest for one hour in the fridge before using. For the filling, fry the onions and leave to cool. Chop the fish into small cubes, and mix with the onions, zest and seasoning. Shape the ravioli as desired. It’s important to brush with egg yolks when closing it. For the sauce, fry the onion, garlic and prawns, and cook well on low heat for about 20 minutes. Then add cream, and cook for another five minutes. Blend everything together and finally, pass the sauce through a strainer to remove all the prawn shells.

BEST WINE ACCOMPANIMENT – 2012 MEDINA VERMENTINO ZIBIBBO D.O.K. MALTA “On their own, the white fish ravioli are light and delicate, but with the addition of the prawn bisque this dish is transformed into a rich, full-flavoured plate of pasta, with the dominant flavours of prawn and orange coming to the fore. The use of fresh cream is also important in guiding me towards either a white or rosé wine. In the end, I have opted for a delicious blend of Vermentino and Zibibbo, the spiciness of which works particularly well with the zesty orange flavours in this dish, as well as the wine’s fullness and body that copes admirably with the richness of the bisque.” 098

HERB CRUSTED RACK OF LAMB WITH ROSEMARY JUS Ingredients 2pc 40g 100ml 50ml 40g 30ml 1tbsp pinch

lamb rack rosemary lamb stock red wine bread crumbs fresh herbs olive oil dijon mustard salt & pepper

Method For the crust, blend the bread crumbs, rosemary and other fresh herbs with salt and pepper, and some olive oil. Pan fry the lamb until it’s nice and golden brown, then brush with the Dijon mustard, and sprinkle the crust on to it. Cook in an oven at 190c for about 10 minutes, and leave to rest for five minutes before serving. For the rosemary jus, use the same pan that the lamb was fried in, and reduce some red wine with rosemary and lamb stock. To finish the jus, whisk some butter and add salt and pepper to taste.

BEST WINE ACCOMPANIMENT – 2012 MEDINA SYRAH - D.O.K. MALTA “The lamb in this dish was cooked to perfection – nicely pink, moist, and very mild in flavour. The stronger element of this dish is not the meat itself but the fresh herb crust and the rosemary jus that accompanies it. Therefore my choice of red will be a young ‘jammy’ red with ripe upfront fruit, rather than the softer more mature red that I normally prefer to drink with lamb. The Medina un-oaked Syrah is exactly that; ripe, fruity and packed with black fruit flavours.” 101

COCONUT CAKE Ingredients

400g sugar 200g butter 30ml vegetable oil 200g egg whites 1tsp coconut extract 1tsp vanilla extract 400g flour 1tsp baking powder ½tsp baking soda pinch salt 400g coconut flakes 200g nutella

BEST WINE ACCOMPANIMENT – GELLEWZA ROSE FRIZZATO I.G.T. MALTESE ISLANDS “The first thing that hits you when you bite into this cake is its lightness and the delicate flavours of the vanilla, Nutella and coconut within. But then on the top, you have a generous covering of coconut flakes, and for me there is no better grape variety to pair up with coconut than Gellewza – particularly when it comes in the form of a demi-sec rosé wine. On top of that, you have the added bonus of this particular wine being semi sparkling, which is ‘oh so’ complementary with cake. But make sure you chill it down well first and enjoy!”

Cover Mix 400g cream cheese 200g sugar 1tsp coconut extract 200g coconut flakes Method Combine the flour, baking powder, baking soda, salt, butter and coconut, and mix well. Mix the egg whites and sugar until they’re medium stiff, and fold to the other mix until smooth. Cook for about 30 minutes in an oven at 165c. For the cover mix, mix the cream cheese and sugar until the sugar dissolves, and then mix in the coconut flakes and coconut extract. When the cake is cool, cut it into three layers and between the first layer, second layer, and top and sides spread the nutella. Spread the cover mix over the cake. To finish, sprinkle and cover with coconut flakes.
