EDITOR’S LETTER HW
The notion of restarting is an intriguing one because it implies an evolution; the expiration of a place or thing’s function reincarnating into something more relevant to the time. The new formation is neither identical nor entirely different from that of its former self, yet a conception of something different. The first edition of the year is a good time to celebrate this concept, which is why this issue of HOMEWORKS centres around reinstatement, rebirth and renewal. Not only are the three homes centred around it, but also the features. For the first time we’ve showed the stale to stunning metamorphose of furniture pieces submitted by HOMEWORKS readers. Interior Designers Penny Apap Brown and Sharon Borg Cesareo reinvent a sofa, egg chair and showcase piece on page 053. Stylist Jennifer Jo Barth brings us Tempus Fugit (‘time flies’) on page 060, featuring a stunning expose on ‘now’ lamps inspired by ‘then’. Hourglasses also make an appearance in the feature, reminding us of time past and passing. Not to be missed is our cuisine scoop this month, debuting Chefs Kevin Bonello and Clinton Grech from The Xara Palace Relais & Châteaux. Check out ‘Wild & Wonderful’ on page 084. Happy reading!

HW COLOUR TREND
DULUX COLOUR OF THE YEAR 2015
COPPER BLUSH As witnessed at global events from Stockholm and Milan to Shanghai, metallic colour tones are playing an increasingly important role in modern design. As a paint translation of this trend, research all points to this orangey copper tone. Great on its own, the Dulux colour also combines perfectly with pinks, neutrals, whites and other orange hues, as well as metallic colours, such as brass and gold. It reflects and complements all of the major trends that have been identified for 2015: a warmth in attitude and a renewed emphasis on sharing; the natural palette of the earth, from clay tones to sunlit highlights of yellow; the skin tones that reflect human interaction and the sepia hues of the past. It is a colour of depth and currency that combines wonderfully with the everyday.
IDEAL COLOUR MATCHES
REPLACING THE COOL BLUES AND GREENS OF RECENT YEARS, THE COLOUR PALETTE FOR 2015 BRINGS A WARMER SPECTRUM OF PINKS, REDS AND ORANGES, REFLECTING A MORE POSITIVE GLOBAL OUTLOOK. COPPER BLUSH – A VERSATILE, WARM COPPER COLOUR WITH AN ORANGE TONE – HAS BEEN NAMED AS DULUX COLOUR OF THE YEAR FOR 2015.

EGLOO The crowdfunded Egloo by designer Marco Zagaria consists of terracotta domes that heat up with the help of four hidden candles. The small heater features a double-dome layout where the smaller, inner dome heats up quickly, then slowly radiates heat to the outer dome so that the unit remains safe enough to touch. www.facebook.com/egloocandlepoweredheater
FUNGI MUTARIUM Fungi are pretty amazing. They can bio-remediate contaminated soils, lubricate chainsaws, act as medicine, and eat polyurethane and diapers. Designers Katarina Unger and Julia Kaisinger along with the University of Utrecht developed Fungi Mutarium, a prototype that would cultivate an edible mushroom product, while also digesting plastic waste as it grows. The idea is to experiment how to grow food on toxic waste. The designers envision that these prototypes could be used in a mass production setting, to create a “small farm” of sorts. www.kunger.at
OPEN UP The idea behind Designer Mark Champkins’ Open Up Lamp is that it opens up when the light is turned on, and closes when it’s switched off, demonstrating the scientific phenomenon that different materials expand and contract at different rates. www.markchampkins.com
CITYSENS Citysens is a hydroponic vertical garden that grows air-cleaning plants minimum of fuss, sans soil. The crowdfunded modular design assembles vertically into a tower of four modules in less than five minutes, and inserts into a base that holds about six litres of water. It’s made with bioplastics and equipped with an automatic irrigation system that feeds the plants with nutrients and with an irrigation range of at least 30 days. www.citysens.com 023

arble, concrete, glass, steel, light, lots of light, and incredible spatial understanding is what makes this threedimensional home so tremendous. Homeowners Joanna Delia and Henry Peterson wanted to continue living in Valletta and viewed 24 properties before they saw this one. Joanna, ‘When I saw it, I said, “Exactly like this - except one metre wider!” The more I discovered about the space though, the more I was convinced that we could make it work. When I was exploring the house, I climbed on top of the living room (which was originally the washroom) amidst the rubble, mould and grit. That’s when I found the sea view, which was probably what swayed the final decision to go for this house.’ When Joanna called Simon Grech (according to Joanna, ‘the best Architect in the world’) the architect found a very dark space to contend with. There were six rooms, one leading in to the other, all pitch black. The ceiling was collapsing. The walls were green with mould, and there was an abundance of pigeon excretion throughout. A permit already granted for another floor acquiesced the architects with a realistic opportunity to consider space 028
and light from the beginning. The search for as much light as possible became the inspiration point for the architects, and the solution came in the form of the indoor open courtyard concept. By working around this idea, an 11-metre high infusion of light was born.
on the kids by just looking down. The openness of the space allows for this three-dimensional living that you couldn’t get in a house unless it was totally open plan. The only rooms that are closed off are the spare bedrooms for guest privacy.’
Concrete beams became the key to both the structure and the design scheme, echoed by concrete details in the form of worktops, display units and furniture. The suspended steel structure staircase ties in the three floors both functionally and aesthetically, casting shadow lines across an expanse of white wall, mirroring the linear concrete beams.
While the architecture is undeniably of a stellar standard and referred to by other architects as “evolved” and “laying the groundwork for amazing things to come”, the character brought to it by Joanna’s innate visual culture and love of raw, real materials crystallises the overall effect.
The architects created spaces over the three floors tailored to the couple’s lifestyle, each with a specific feature; the roof terrace with a view and small pool, the sunny mezzanine with the advantage of light and height, a flexible dining area that allows for an open view of different internal spaces, an elevated kitchen with a stunningly lit onyx piece, and a more refined lounge characterised by textured marble underfoot. The open courtyard inspired space between these floors, promoting a flow of physical and visual communication. ‘We communicate from everywhere in the house. We speak to each other from totally different areas and we check
‘Once you have the function down, the only other thing that should matter is art. It’s a snapshot of our generation. It’s what makes a place contemporary. In one glance, you’re given an emotional experience, a memory.’ As a result of Joanna’s profession (she’s a doctor), she was trained to be scientific and pragmatic, ‘but I like to surround myself with the illogical and unnecessary. A house without art is useless. It’s not just the art - it’s all the furniture and pieces too. I don’t understand the point of things without stories. I’d say we get about 75% of our things from flea markets locally and abroad, while 25% of the furniture is bought from designer shops.’

The homeowner prefers bringing in any sense of colour through raw materials. ‘Simple is easier to digest. I like timeless, new classic things - things that won’t ever date. All you need is simple forms and quality materials. I’m not an expert at mixing materials, but I find that if they are real, it’s hard to get it wrong.’ There are too many elements of this to mention, but the most notable instances would have to be the onyx slab dividing the kitchen from the dining area, the concrete beams, the steel in the staircase throughout, the glass flooring amongst different levels, and the Maltese tiles in the lower level spa space. The stainless steel and concrete kitchen is significantly distinct. ’In my first apartment kitchen everything was really well hidden, which in retrospect is silly because it was only designed that way to appear clutter-less. It was totally non-functional for me. When I thought about 031

designing this kitchen, I wanted to exaggerate the ease of getting things. I wanted a one-person kitchen where I could stand there and, like an octopus, reach out for things from one rooted spot. This is what we achieved - now it’s like an open pantry and we love it.’ ‘It’s hard to truly understand a space unless you live in it. We saved a lot of money in the beginning by living here while the work was being done. As a result of that time, we really digested what we wanted and what we didn’t. Now, we spend most of our time on the upstairs terrace enjoying the view that brought us here in the first place.’ 032

ver since our arrival here, the weather has been perfectly clear and serene, without a cloud in the hemisphere; and for some time after sunset, the heavens exhibit a most beautiful appearance, which I don’t recollect ever having observed anywhere else. The eastern part of the horizon appears of a rich deep purple, and the western is the true yellow glow of Claude Lorrain….. - Patrick Brydone, A Tour through Sicily and Malta in a series of Letters to William Beckford Esq, London, 1773; pg 341’’

For a sailor, or any traveller, adventurer, especially in centuries past when journeying by sea was the norm, the importance of the horizon, not only as a means of soothing their nerves and curing their fever, but as a stabilising presence, ensuring adequate balance, level-headedness and lucidity is more than a little reassuring.

‘…the view of the sea alone, attractive as it may be, does not in itself make a home, nor does it make the internal spaces and rooms any warmer or more welcoming.’ I remember a discussion a couple of years ago with an architect from New Zealand, who sought to justify how the curved roof over his latest building reflected its local character by echoing the profile of the mountains in the background. Does the typical New Zealander really trace his identity to the landscape (admittedly ever present and powerful) that encompasses him, or is there some further cultural attributes tied to the idea of being a New Zealander? The answer was not clear, though the idea of rootedness evidently plays a significant role. Stranded on this rock, the native Maltese-r, even perhaps from way back in prehistoric times, also in some way relates to the inescapable presence of the vast expanse of sea and the distant horizon. We still find solace in, and purposely seek out, the distant views in our moments of leisure – but not only – and whether we head to the higher ground or a serene spot along the coast, we spend many evenings waiting for the sunset, the gradual burst of pinks, reds, purples and orange and their eventual absorption into the darkness through the quick onset of the night. The presence of the horizon is very much sought after also in our homes, our villeggiatura, and a sea view adds considerable value to the property itself (or so we are told) even if the view is obtained through an obtuse side glance or from the roof. Any property on the market can be, and generally is, categorised by whether it affords a view of the sea and the horizon, or not. This is what many an apartment on Tower Road, Sliema has to offer; an uninterrupted, private, and deceptively individual view of the distant horizon all year round, a permanently-on though not-quitetouch-screen type of real-life monitor opening onto a real world. By and large, even in the age of invasive social media, modern apartments that have replaced the older art-deco terraces of the nineteenth and early twentieth century, continue to maximise on that one form of participation in life as a spectator; watching from the security and comfort of your home. 037

Custom-built by Top Drawer, the kitchen opens onto a smaller terrace off the yard behind and the lighter shades of this area along with the reflectiveness of the glass backdrop augment the light in what would otherwise have been the darkest of corners. A second, alternative view is created, with its own virtual horizon framed behind the darker wood of the island, and negating the otherwise singular orientation of the space. Selection of pots from BUTLERS. Black Mat by Habitat from The Atrium
But the view of the sea alone, attractive as it may be, does not in itself make a home, nor does it make the internal spaces and rooms any warmer or more welcoming. The long front room we found in this particular apartment was typical enough of any mid-block apartment in Sliema, with an expanse of glass on one of the shorter sides that opens onto a terrace overlooking the seafront and the sea beyond, and its night zone tucked away to the rear at the end of a long corridor. Space in our homes is one thing we are still fortunate enough to enjoy, even if land is seriously limited on this tiny rock of ours. And space as such, though not well utilised, was not lacking in the apartment itself. The task, we felt, was to tame the space and organise it, to turn it in on itself a little while retaining the openness to the outdoors.
The planning was tackled simply, through the introduction of a couple of devices. The first was two long dark blue/grey/ green units (the colour of the sea itself, we’re told) which run down the full length of either side of the longer walls of the main space, making the space physically narrower, yes, but simultaneously opening it up through the varying configurations of the deep recesses of the shelving, and through the introduction of a limited area of reflecting mirrors. The wall units play with openness and closure, at times concealing, at others revealing. They unify the space while distinguishing, through a seemingly casual playfulness, the separate zones of sitting, dining, entrance and kitchen, a reading and lounging area appearing beside the front balcony overlooking the beaches below and the sailing yachts beyond. A place to be alone – idle, and serene, but never bored.

HW SPACES The tones become gentler in the bedrooms and the walls are more tactile with a silver-grey velvety surface of the box-like insertions that enclose the newly introduced bathrooms, within which, the play with variations on the tones found in the main space continues. The maple timber flooring used throughout unifies the whole apartment adding further warmth and familiarity. Towels and soap from InsideOut. ‘Blue’ litograph from JE T’AIME
The deep tones of the units temper the harsh daylight as the splays of any Georgian bay window would in the earlier houses, introducing deep shadowy recesses as well; places for storage, but also for memorabilia, for memories and the imagination rest within the shadows, and it is those memories that bring us home. And even though we lengthened the front room further, drawing it right in to the centre of the apartment, the space is today more contained and controlled. A satisfying balance in the levels of natural light is achieved throughout. The kitchen opens onto a smaller terrace off the yard behind. The lighter shades of the kitchen and the reflectiveness of the glass backdrop augment the light in what would otherwise have been the darkest of corners. A second, alternative view is created, with its own virtual horizon framed behind the darker wood of the island, and negating the otherwise singular orientation of the space. Moving into the rear more intimate spaces of the apartment, the tones become gentler, fading first into a paler (shallower perhaps) green that leads towards the bedrooms, the walls becoming more tactile with a silver-grey velvety surface of the box-like insertions that enclose the newly introduced bathrooms, within which, the play with variations on the tones found in the main space continues. The maple timber flooring used throughout unifies the whole apartment adding further warmth and familiarity. On opening the landing door onto the main space, you know you’ve come home, to withdraw from the stresses of a typical day into the tranquillity and calm of uncluttered space cloaked in subdued colours. 040

RESTART After living in different corners of the world, Gill and Gerhard Patzer finally hang their hat in this distinguished contemporary classic Sliema duplex apartment Photography: MAS Styling & Interior Design: Gill Patzer Words: Lisa Borain
m finding myself nostalgic for that creative side to interior design, you know?’ Gill Patzer says with her eyes bright and full of energy. ‘When I retired I thought that I was done with it, but now I find myself missing it.’
I
A person can see where this is coming from. Gill’s obvious talent and love for interior design is epitomised in this striking apartment. The homeowner has been an interior designer for over 30 years and specialises in feng shui after studying under the famous Master Lilian Too. ‘I took time off from my design business to study the system, which turned out to be a phenomenal year of growth for me. As a result, I automatically incorporate feng shui into my life, as well as my design.’ Feng shui is a Chinese philosophical system of harmonising everyone with the surrounding environment. Qi (pronounced “chee”) refers to energy in the sense of life force. Qi in a home includes the orientation of the structure, its age, and its interaction with the surroundings.

The colonial style of mixing a subdued and neutral canvas with plants and gold accents is inspired by the homeowners’ 30-year stint in South Africa. The laid-back nature of how the couple’s pieces are arranged derives from the designer and homeowner’s native England, while her love for all things Italian is reflected through the ample use of natural materials, striking gilded mirrors and attention to the entertainment areas

‘I believe so strongly in feng shui that I honestly wouldn’t buy a home if it had the wrong door direction. My daughters tell me that I shouldn’t talk about it because people might think I’m strange, but there is so much logic and truth to it! It could get superstitious, but I don’t go in that direction with it. I use it to create balance, symmetry and harmony.’ The apartment is a great example of this, despite its eclectic style. The home also embodies Gill and husband Gerhard’s spirit for travel, and is a reflection of the different corners of the world they have inhabited. The couple spent a large stint in the Middle East, hence the beautiful objects d’art and sense of luxury that can be found throughout. The colonial style of mixing a subdued and neutral canvas with plants and gold accents comes from 30 years of living in South Africa. The interior designer’s personal style reflected is easy on the eyes; monochromatic with a predominantly light palette canvas, while colour comes in through the details. A wide range of materials are used, such as silk, linen, leather and suede
The couple were looking for a country to relocate to from South Africa when they first came across Malta in 2003. They were looking for the English language and sunshine, so on their first visit to Malta, they bought the property three days into the trip. The plan was to rent out the space until they retired and were ready to settle in Malta for good. In the meantime, Gill began helping Malta Enterprise represent the island in South Africa. Following this, she became part of a local relocation consortium. During this time, Gill helped decorate and furnish eight homes for South African clients in Malta. As a result, she effectively gathered a team of workers to help complete the designs from A-Z. The interior designer’s personal style reflected here is easy on the eyes; mono-chromatic with a predominantly light palette canvas, while colour comes in through the details. She loves using a wide range of materials, such as travertine, glass, perspex, stainless steel, silk, linen, leather and suede. While the home is organised and symmetrical, Gill also likes mixing in a diversity of interesting items. ‘It’s an organised, symmetrical clutter! All the books and objects d’art in a home tell a story. That’s the person’s experiences and life. I find that a home can be somewhat soulless without this. We always pick up something interesting when travelling.’ 047

The feng shui compass that helps with balance and harmony through direction
Illuminated by back-lighting, the stunning old Bahraini door hanging on the wall upon entrance is the perfect beginning of what the duplex apartment holds. Gill shows me one of her favourite items - a gorgeous belt sword from Oman, adorned with silver detailing. A vintage rocking horse downstairs is her favourite piece above the others, since she taught her daughters how to horse ride on it when they were children. Relics of these beautiful reminisces go on and on throughout the home, making it a highly interesting one to explore. The apartment reaches from one side of the street to the other, bringing in ample light and air circulation. Two balconies on either side create interesting features and areas of respite with a view. Two of them contain gravelled floors, which appear like natural carpets and bring in three-dimensional colour. Further to this, they’re excellent for dust collection and water drainage, which helps keep the apartment tidy. With the bedrooms located downstairs, the entire home is utilised. The couple took advantage of the local grants and installed solar panels, which has reduced their electricity bills by half. ‘Because we travel so much, we’re actually in credit. This is the best thing we’ve done and we urge everyone to do it, particularly with Malta’s consistent sun.’

Malta and this apartment are currently perfect for the Patzers. The couple has integrated quickly, embracing the country and people whole-heartedly. ‘This is home now. We’ve finally decided to settle and we made the right choice by doing it here. We wouldn’t want to be anywhere else in the world right now!’

Gianluca: “This egg chair has been part of our family ever since we can remember. I wanted to revamp the chair to place in my new home in Mellieha which is designed in a retro look.” Sharon’s Inspiration: “This egg chair lends itself to retro so I went for this in the fabric colour and pattern. Micro suede is a soft stretchy fabric mostly used for garments, but also suitable for furniture, as it’s easy to wipe clean due to its smooth texture. I chose the symmetrical Herringbone pattern, as it’s been around since 600 B.C, making it the epitome of retro.”

Submitted by reader Andrew Saliba Material and buttons from JB Stores Upholsterer Grace Alexander - The British Upholsterer Andrew: “We purchased this sofa from Immagine Casa something like 12 years ago. It was bought to replace an older sofa and was placed in what we used to call the games room. Eventually this room became my bedroom/living room, which I use all the time. “For the past few years I’ve been covering the sofa with a blanket because I couldn’t bear looking at it. I was going to throw it out until I saw the call for the HOMEWORKS Revamp competition. I can’t wait to see it fixed and reupholstered in a nicer fabric and colour!”
Penny’s Inspiration: “I wanted the sofa to have a balance of feminine and masculine so I thought of mixing a deep grey colour and fabric with vibrant lining and buttons. The fabric is reminiscent of a man’s suit, while the red buttons are suggestive of flowers. The material around the buttons is removable if a more toned-down look is required.”

SHOWCASE REVAMPED BY SHARON BORG CESAREO Submitted by reader Alexia Sciberras Trigona Paint from camilleriparismode Glass by Float Glass Carpet from BoConcept Alexia: “This piece of furniture was left by the previous owners of the house two years ago. They obviously had no interest in it and so left it there for us to keep or dispose of. At the beginning we were thinking of giving it away, but soon changed our minds after we started doing up other pieces of furniture we had acquired here and there. Very soon we both found ourselves caught up in this magical business of doing up pieces of furniture nobody would give a second look at. This specific item was last on our ‘to do’ list because we were not sure how to go about breathing new life into it. When the HOMEWORKS feature came up, the story of how our little piece of furniture got a new lease of life begins.” Sharon’s Inspiration: “Zuber, a French company that has been in business since 1797, is the oldest wallpaper manufacturer in the world, using hand block printing techniques still to this day. The newest addition to Zuber is the wall and furniture paints with colours inspired and researched from the original prints used for their murals, which led to the inspiration of the yellow and turquoise used for this showcase. I chose paint colours PAN034-Hermitage and 2.3 Siempre/D from the Zuber Collection at camilleriparismode.”

UPCYCLE GOT THE BUG BUT JUST CAN’T FIND ITEMS WORTH UP-CYCLING? JULIA PERRY IS DOING WHAT SO MANY CAN’T FIND THE RESOURCES OR TIME TO DO: TRACKING DOWN REAL AFFORDABLE VINTAGE AND ANTIQUE ITEMS
J
ulia Perry has always been interested in the past - a time when she wasn’t around or old enough to witness and absorb what went on. ‘I became fascinated (albeit a little obsessed) with objects that represent a different age, since they almost always have a story to tell.’ “Second hand” objects are often perceived to be old, used or cast out, yet Julia believes that one man’s junk is another man’s treasure, which holds a strong resonance. The idea stemmed from a long time passion in collecting vintage items, such as film posters, art work and other ephemera, children’s illustrated books and toys, as well as pottery and ceramics. This, combined with a desire to recycle goods rather than discard them eventually translated into the birth of her company Stuff & Tales.
‘In an effort to bring real vintage to the fore and become recognised on the island I select items which are a little bit quirky, interesting and exciting, as well as stuff that is affordable without compromising on quality. Each individual item that I come across is unique - I select individual pieces from various markets, fairs and private homes (where people are willing to sell) and upload to our page with a story about each item.’ We like Julia’s vision - to allow more versatility of vintage and antique items on the island and to share their passion for things that they like and have personally selected. Let the up-cycling begin!

tructure plants form the backbone of the planting scheme. In this issue we are focussing on the architectural side of structure, which brings us to succulent and sword-leaved plants. Typically characterised by a bold, striking appearance, these plants provide an instant focal point and the result is comparable (and just as important to get right) to placing a sculpture or art piece in the perfect spot. Architectural plants are the ideal complement to unfussy, contemporary landscapes and are often the highlight of the design, especially if allowed to stand out against a relatively plain backdrop. They are usually central to the design concept and not merely an add-on or afterthought. In fact, they are design materials in themselves and with their strong presence, acquire the same relevance as other more permanent elements. YUKKA

A unique, distinctive shape is the common characteristic of architectural plants. This can be seen for example in the stiff, linear leaves of certain sword-leaved plants such as Yucca and Furcraea, or in the slightly softer appearance of Cordyline, Dasylirion and Beaucarnea. More examples are the striking silhouettes of Dracaena draco and tree Aloe (A. barberae), or the sculptural forms of Euphorbia ingens, the candelabra cactus, or the various Agave. 073

Architectural plants look great when combined with soft, billowing underplanting, which will allow the structural plant to emerge while not detracting attention from it. An even more minimal approach is to cut the underplanting completely and substitute it with gravel, mulch or deck, allowing the plant to be the star of the show. Appropriate lighting completes the picture and creates stunning nightscapes. By placing a light source directly behind the plant and shining it up a surface (a technique called silhouetting), the subject’s dark outline is enhanced against a plain background. HW CUISINE & WINE
ROASTED BEEF RIBEYE (Serves four)
Ingredients 800g 4pc 8pc 50g 500g
whole beef ribeye bay leaf medium sized potatoes virgin olive oil root vegetables (ie baby carrots, parsnips, squash, celeriac) salt and pepper
Tableware: Cose Casa 080
CUISINE & WINE HW
Method Ask your butcher to tie the ribeye with ‘spag’ to hold its shape better. Season the ribeye with salt and pepper, seal on all sides in a hot pan until it’s completely brown. Insert some bay leaves and thyme for flavour, then place in a roasting dish, transferring into a 160C hot oven and cook until the desired degree of cooking is reached. Once the is ribeye cooked, cover with a sheet of aluminium foil to allow to rest for 20 minutes before serving. While the ribeye is being cooked, wash the potatoes while leaving the skin on.
Then place in a pot of salted water and bring to the boil. Once boiling, take off the heat and drain (they should not be cooked through). Slice them vertically into three millimetre thickness, but not right through they should still be holding at the bottom. Transfer them to a roasting dish, season with salt, pepper and olive oil, and roast in a 175C oven until golden brown. Serve the rested ribeye with the potatoes alongside roasted root vegetables cooked with olive oil and fresh thyme. 081

Add the bay leaf, thyme and beef stock, bring to the boil, then allow to simmer for 90 minutes or until the cheeks are very tender. In a separate sauté pan, heat some oil, season the wings with salt and pepper and sauté until light brown. Then lower
the heat and keep cooking for another five minutes. Squeeze the juice of the orange and keep cooking until the wings are cooked through and glazed. BILL’S WINE RECOMMENDATIONS: SNAIL RAGOUT WITH JERUSALEM ARTICHOKES 2013 GRAND VIN DE HAUTEVILLE VIOGNIER D.O.K. MALTA
CUISINE & WINE HW
SNAIL RAGOUT WITH JERUSALEM ARTICHOKES (Serves four)
“There are a profusion of flavours in this dish for the wine to contend with, which in reality could either be white, red, or even certain rosés. If you are choosing a red however, it would need to be light-bodied and fruity, but I am going to choose a white wine, mainly due to the sautéed artichokes, which work so well with fuller flavoured dry whites. The white I have chosen is such a wine, made entirely from ripe Malta-grown Viognier grapes that result in a wine that’s soft, round, refreshing and well-balanced.”
ROASTED BEEF RIBEYE 2012 GRAN CAVALIER MERLOT D.O.K. MALTA “This is a tasty beef dish that’s simply prepared and cooked with little interference from other strong flavoured ingredients. Additional flavours will play a role, such as the bay leaves and thyme - yet nothing that will overpower the meat. The amount of celeriac used might change the overall flavour of the dish, but all in all this is a straightforward, robust red meat dish that will benefit from a full-bodied red wine. I would recommend a soft smooth, silky red wine with soft tannins, rather than a leaner red with astringent tannins. So I’ve opted for the Gold Medal winning Gran Cavalier barrel matured Merlot.”
BRAISED PORK CHEEKS AND ROASTED CHICKEN WINGS SERVED WITH FRIED EGG 2014 MEDINA SYRAH CARIGNAN GRENACHE D.O.K. MALTA “The most difficult part of this dish to pair a wine with is the fried egg! If you would prefer to drink a white wine with this dish, then make sure it’s soft and gentle, rather than tart or overtly dry and fruity. If you would prefer to go for a red (which would be my preference because of the pork cheeks and use of beef stock), do not choose a red that’s full-bodied with tannins, as it will clash terribly with the egg. My selection would be this delightful light-bodied red that has been made using the maceration carbonique method to remove tannins and soften the fruit, which will make it a great accompaniment to 90% of this dish – less the fried egg!”
Ingredients 1kg 200g 1tsp 2pc 1tsp 1tsp 100g 1tsp 300g
local snails, well washed onion, garlic, carrot, celery, chopped black peppercorns bay leaf fennel seeds curry powder onion, chopped garlic, finely chopped jerusalem artichokes, peeled parsley, chopped virgin olive oil salt and pepper
Method In a stock pot add the washed snails, fennel seeds, bay leaf, curry powder, chopped onion, garlic, carrot, celery, salt and peppercorns. Fill with water until all is covered. Bring to the boil, then allow to simmer for 90 minutes. Drain, then allow to cool slightly. Once cooled, remove all the snail meat, discarding the end part of the meat. Sauté the chopped onion and garlic in olive oil until soft, then add the snails and sauté for another five minutes. Season with salt and pepper, then set aside. Slice the peeled Jerusalem artichokes into five millimetre thickness and quickly sauté in a hot pan with some olive oil until soft. Season with salt, pepper and chopped parsley. Serve the sautéed artichokes in the centre of the plate topped with the sautéed snail ragout. Tableware: Cose Casa 083
