Hedgehogs are thought to be declining at a rate of 5% every year. They are one of the UK's most loved wildlife creatures, the gardener's best friend and entertaining to watch in the wild. Every year East Sussex WRAS helps to conserve these threatened creatures by rescuing over 400-600 hedgehogs with an aim to returning them to their home range once fit and well to help keep the populations going in East Sussex. Hedgehogs can have up to three litters a year, and unfortunately, some are born too
close to the winter a nd end up being abandoned by their mums. As a result, their young are left to fend for themselves often too small to survive hibernation. Studies have shown that Hedgehogs stand the best chance of survival when weighing 600grams or more, although they can survive at lower weights. Rarely do these hedgehogs just need feeding up and come in with high worm burdens, injuries, hypothermia or emaciation and need specialist care at our hospital. WRAS overwinters up to 150 hedgehogs each winter costing
up to £130 per hedgehog, covering veterinary bills, hedgehog food, bedding, caging and their rehabilitation back to the wild in the spring. We need your help to fund this life-saving work, either a one off donation or by setting up a standing order for as little as £1 a month will make a big difference.

Christmas for me is all about enjoying delicious food with loved ones. It's a tradition in my family to go all out for Christmas dinner, ensuring we have enough food for seconds (and maybe even thirds). As well as food for the big day, the Boxing day sandwich is definitely a Christmas staple! Personally, I believe the stuffing is what glues the festive feast together for me, whether it's alongside a spoonful of turkey with a big helping of cranberry sauce, or cut up and wedged between to slices the next day! Here's my favourite stuffing recipe to get your teeth stuck in to:

To begin soak the cranberries in port for an hour.

Then fry the onion and bacon gently in the butter.

100g dried cranberries
• l40g fresh bread crumbs

SOml port
• 2tbsp chopped parsley
•
1onion chopped
• Y2 tsp chopped thyme leaves
•
2 rashers unsmoked back bacon

SOg butter
• l40g peeled, cooked chestnuts roughly chopped
•
2garlic cloves, chopped
•
4S0g sausage meat
Make sure to add enough egg to bind the mixture.

Once the onion is tender and the bacon is cooked add the garlic and fry for another minute. Put the onion and bacon to one side to cool.
TI P: don't be afraid to get your hands dirty rolling your stuffing baubles.

Once you've rolled all of your 24 stuffing baubles, roast them in hot fat for 30-40 minutes until crisp and nicely browned on the outside.
.................................................. Once the cranberries have soaked and the onion and bacon mix has cooled, combine all ofthe ingredients in a bowl.

There's many things you can do to stay prepared - such as: ensuring you've always got at least a quarter tank of fuel for emergencies; checking and cleaning your lights to ensure you can be seen; checking your coolant levels; making sure your tyres have at least 3mm oftread.
