Fine Food returns to Sydney for historic event The Australian hospitality industry’s biggest trade event of the year is back for four big days next month. Will you be there? GET READY because the juggernaut that is Fine Food Australia is preparing to once again open its doors for another year - and in 2013 it’s Sydney’s turn to host the industry extravaganza that has become one of the most important events on the Australian hospitality industry’s calendar. This year there’s a touch of nostalgia to the event - it will be the last time the giant show is held at the much-awarded Sydney Convention and Exhibition Centre which is set to close at the end of this year. End of an era WHEN you come to Fine Food this year, you’ll be part of Sydney history - you’ll be seeing the show for the last time at the Sydney Convention and Exhibition Centre. Having celebrated its 25th anniversary in May this year, the SCEC is set to close in December to allow for a new Sydney International Convention Centre and Entertainment precinct scheduled to open in late 2016. The SCEC’s CEO Ton van Amerongen said the opening of the venue in 1988 - by the Queen - was a catalyst for the development of the entire business events industry across the country. “With a million people passing through our doors each year, the Centre has formed part of the economic and social fabric of our nation,” he said. ONE of the biggest drawcards at Fine Food this year will again be the line up of top chefs coming out of their kitchens and cooking up a storm at the Australian Culinary Federation New South Wales Culinary Challenge. Chef teams from around Australia will be pitting their talents against each other over the four days across a series of competitions in a packed program with more than $20,000 in prizes up for grabs. The Culinary Challenge’s headline event is the Restaurant of Champions event which this year has been designed as a “state of origin” style battle. Australian Culinary Federation (ACF) president Peter Wright said it should make for an interesting competition. “It means the national culinary team, because they come from all different states, are going to be competing against each other,” Wright said. Watch out too for the free demonstrations program that will run alongside the Culinary Challenge this year featuring some of our most experienced chefs sharing their knowledge.

Hear it from the exec chefs AFTER the success of the inaugural Les Toques Blanches chefs theatre at last year’s Fine Food it’s back again with a series of free masterclasses from leading local and international chefs running over the four days of the show. Les Toques Blanches Australia president Dario D’Agostino said the program is again aimed at giving the industry the opportunity to learn and share “inspiration, skills, techniques and knowledge”. “The masterclasses are designed to encourage excellence amongst chefs and restaurateurs,” says D’Agostino. Returning as part of the line up will be Les Toques Blanches members including executive chefs Mark Normoyle from RACV City Club Melbourne and Ikuei Arakane from Boynton Feathertop Winery. They’ll also be joined this year by executive chefs Domenico Tellatin from Careers Australia, and Nick Blackmore from Herbert Smith Freehills. Special guest will be leading Italian pastry chef Emmanuele Forcone, aka the Artistic Sugar Maestro, who will conduct a series of masterclasses including a demonstration of the sugar work that he has become world renowned for. D’Agostino says the program is also aimed at raising the profile of Les Toques Blanche in Australia and the opportunities it offers for senior chefs in the industry.

THE LURE OF THE HUMBLE SANDWICH ONCE again the challenge has been set and the country’s best sandwich makers are lining up to show what they can do with the humble lunch time staple. They’ll come together at Fine Food for the national final of the Great Australian Sandwichship Competition, the popular event that’s run by the Australian Sandwich Association and is aimed at celebrating the creativity and talent of sandwich makers and café workers around the country. One of those competing will be Mal Gill, the owner of the Lady Marmalade Café and

Shady Palms Café in Brisbane, the winner of the Northern Final of the competition held in Sydney in June. Gill knocked the judges’ socks off with the taste sensations of his creations including his berbere-spiced shredded beef brisket wrap, and Tokyo pork belly sub. Up against five of the top sandwich makers from the northern states, it was the second time Gill had been victorious in the event. He said his winning strategy was to focus on delivering the judges something innovative that would really “stick out in their minds”. “I’m glad I achieved that,” he said.

Evolution of an Australian icon THE COUNTDOWN is on to the annual event guaranteed to attract the attention of our most passionate bakers and pie lovers from around the country each September - the Official Great Aussie Pie Competition. This year the long-running competition that’s been championing excellence in pie making for 24 years has again attracted record entries in a range of categories that reflect the dynamic nature of the baking business today, and the skill and creativity of the bakers and pastry chefs who are part of it. But while the new moniker that was launched last year dropped the direct reference to meat, organisers say it’s the traditional Aussie carnivorous pie that’s still the largest category. The competition has become a must for serious pie makers, from bakers to chefs, and not just for the kudos that a win delivers - it’s also a guaranteed business booster with past winners reporting sharp sales increases as pie lovers seek out their award-winning pies.
Bart Honig, the owner of last year’s overall winner, Mooroopna Bakery in Victoria’s Goulburn Valley, who will be back defending his title, said sales heated up immediately after winning and the effect was still being felt. “Our pie sales doubled and other bakery products sales increased too,” says Honig. “The first months after the competition were crazy. We had people coming in buying four or six or eight pies at a time.” The baker with a passion for producing top quality pies says the secret of his champion beauties comes down to the quality local ingredients he uses. “We have local flour from the Laucke Flour company and our butcher is just ten minutes up the road,” he said. “Plus we’ve got a fantastic oven too - a great stone based one. THERE’S no denying that the field of bakery is pretty hot right now. There’s been strong interest in the category that has intensified with major bakery-focused foodservice businesses expanding and a prime time television show focused on baking grabbing ratings. At Fine Food the seductive lure of bakery will again be a big part of the show as some of our best young bakers show off their talents across a range of categories in the national Bake Skills Australia competition that’s traditionally held at Fine Food. Bake Skills sees state teams of top young guns of the baking industry competing over four days with their eyes firmly on the national title - and the prize of a Singapore trip to the Food Hotel Asia show to see the finalists of the Asian Pastry Cup in action, and to visit the Callebaut chocolate academy. South Australia currently holds the title - it was won by Matt Thorpe and Olivia Lutze last year. Defending for SA this year is the aptly named duo of Cassie Whitbread (Coles, Firle), and Trent Baker (Boulangerie). Pizza the best WHO will represent Australia on the world pizza stage? That’s the question that will be answered next month at Fine Food. During the show some of our best pizza masters will be competing live on the show floor as part of the Australian National Pizza Selection competition. Over the four days passionate pizza makers, junior and senior, will be going head to head showing off their skills in pizza making and also in the entertaining area of pizza acrobatics. The winners of the competition will form the Australian Pizza Team and the Australian Pizza Acrobatic Team, which will represent Australia at the World Pizza Championship in Italy. They’ll be competing in five different categories - Pizza Classica, Pizza Napoli, Pizza Dessert, Gluten Free Pizza and the foot stomping, hand clapping acrobatics event. Each competitor will be required to produce and present their pizza to the judges within a maximum time of 30 minutes. Organiser Dario D’Agostino said the competitors will be judged on preparation, taste, baking, talent and innovation, while the acrobats will be selected on speed and talent.

This year, for the first time, the event is about individuals rather than teams. It will include 16 baristas competing head to head in a fast-paced, café themed format. Each barista must prepare 11 beverages in ten minutes, each being judged based on taste and artistry. The winners of each round then progress to the next round and so on until

the grand final showdown. Each barista must produce his or her coffees from two menu cards of five beverages. The eleventh beverage is their ‘signature cup’ - a chance for them to show off their creativity with coffee. The judges are armed with poker chips to place beside each of the winning drinks from the baristas, with the highest score of all the cups winning the round. Justeen Single, from organiser Cafe Culture, says the competition recreates the working cafe environment. “This format challenges baristas as if they were in a busy cafe, not knowing what coffee they will be required to make until they pick up their order cards,” Single says. “It’s a great format to showcase all aspects of the barista’s skills.” The winner of the event will receive an all expenses paid trip to the Natvia Golden Bean Coffee Roasters Competition 2013 running in Port Macquarie this year.
