SHAM MULJI DEPUTY GENERAL MANAGER M O U N T H AV E N H O T E L What have been the recent developments at the Mount Haven Hotel? The beginning of 2019 saw a renovation of our Terrace Bar and Restaurant. With an extension to terrace and restaurant with large windows, bringing in floods of light, getting us and our guests even closer to beautiful sweeping views of St Michael's Mount and Mount's Bay. In keeping with the boutique styling, we have added wood block artwork from Adrian Holmes, complimenting a great collection of Sandra Blows prints and Tom Raffield lamps. The month of September has brought a range of local musicians to Mount Haven, playing on our terrace as part of Sunday Session’s. Partnered with a few of our drink suppliers including Tinkture, Sharp’s Brewery and Enotria & Coe, our Head Chef paired small bar plates with selected drinks to create the perfect treat for relaxed afternoon in the sun.
foraged ingredients from local shores including seaweeds, sea vegetables and fresh sea food, Ross creates an exciting and ever-evolving menu for our Restaurant and Terrace Bar.
What are your plans for the future of the hotel?
Centred around St Michael's Mount – Mount's Bay brings the focal point to life. The bay encapsulates a bustling fishing trade with pockets of creativity, supporting the local industries and community. My personal highlights of the bay include the fantastic mix of wildlife environments from the ocean, wet lands and rolling country hills. Newlyn’s quaint boutique picture house, Penzance gin and cocktail bars and the array of restaurants across the bay.
We hope to continue bringing local artists, produce and drinks together, for events and in our daily offering to create an opportunity for guests to connect with West Cornwall and Mount's Bay. Continuing to tailor our drinks and wines lists to local, sustainable, organic and biodynamic to be at the forefront of the movement. As well as providing a friendly, comfortable and styled place to stay and rest during a visit. How has being so close to the coast influenced the menus in your restaurant? Our creative head chef Ross Sloan takes inspiration from the coastal landscape in curating his menus with local, sustainable and seasonal food with a target to reduce food waste. Using 14
What are some of the special highlights about visiting the Mount’s Bay Area?
What are the advantages for visitors coming to Cornwall out of season? A chance to really connect with the local community, environment and immerse yourselves in the local lifestyle. Visiting during autumn – my personal favourite season, gives a refreshing and colourful view of the bay with misty mornings, red sunsets and the odd crashing storm. A great chance to relax, take in the sights and activities at your own pace and enjoy the restful energy we create at Mount Haven.

When not working, what do you do to relax? Being a foodie, draws me to spend a lot of my down time enjoying the local café culture – find me in a coffee shop with a fresh brew and cinnamon roll, watching the world or eating out accompanied with friends and wine. Relatively new to Cornwall myself and an avid fan of the outdoors, I’m still exploring much of the coastline and hoping to find the perfect hidden gem by the sea. www.mounthaven.co.uk

Interview
SALLY FIELDING - FOUNDER OF SALLY’S COTTAGES
What inspired you to set up Sally’s Cottages? It all came about by accident really. It was a chance conversation with a neighbour who had a house that she wanted to long let, but couldn’t find a tenant for it. So I said ‘why don’t I rent it from you if I’m allowed to sublet it to visitors’. So I rented it from her for £500 a month, and sublet it for £500 per week. This was before a time of websites and online bookings; it was just at the cusp where the internet was about to explode. I happened to be self-employed designing websites so it was easy to set up a website and, before you knew it, it was booked every week. And you know how it is with small villages; before too long, Marie down the road had noticed that my cottage was permanently booked and asked me if I could let hers, too. I did that on the more usual agency model of taking a commission for the bookings I took.
Another highlight has been developing our Facebook page, despite well intentioned advice that ‘it would never catch on’. We now have the most popular and interactive Facebook page in the UK Travel Industry with a really lovely community of followers – which is not bad going for a small business such as ours.
Finally, I love that we have created something out of pretty much nothing. All it took was that first cottage and now we had a business that has grown purely through the enthusiasm and energy of everyone become it.A U T U M N E S C A P E S I S S U E H O T has BRA N D S C Oinvolved O L P L A CinE S 2 8 who
It just grew from there – I had three cottages by the end of the year and now, 16 years on, we have over 500 cottages. ISSUE˚68
You started the company in 2003, what have been the highlights for you since that time? So many highlights, so many turning points. For a long time it was just me by myself in the business and it was exhausting – I’d be working 7 days a week, from 8 in the morning to 10 or 11 each night. If ever I needed to go out, I’d take my mobile with me just in case someone called to make a booking. So a big highlight was when we employed our first person. It made a tremendous difference. In fact, if I was setting up another business from scratch, one thing I’d do differently would be to employ people sooner.
What are your plans for the future? The main plan is to carry on being awesome! But also I love taking on new cottages because I love nosing about new houses and seeing different styles of décor and furnishing. It’s really inspiring. For people who are new to The Lake District, why would you recommend it as a place to visit? It’s a great place to recharge and re-energise. Imagine having a cup of tea or a glass of wine by a lake as you watch the sun go down, just stopping all the pressures in life for a moment. And it’s a superb place to visit because, while it is dramatic, it’s also manageable. You can be up and down a mountain in a day (with well-earned fish and chips at the end of it). You can visit each of the lakes, each with their own characters and each with their own beauty, and none will take more than an hour to get to. When you are in the Lake District, surrounded by nature, you get the headspace you perhaps didn’t even realise you needed, time
ISSUE˚68
and pace of life slows. And it doesn’t need to cost a penny – you can walk by the lake for free, giving you a boost beyond anything that money can buy. What advice do you have for other small businesses about how to grow a brand? If you’re going to have a strong brand, you need to know what your values are. When you understand these, they will come across in the messages that you put out there every day. Here at Sally’s Cottages we value positivity and simplicity – it’s the little things that count. Our integrity is really important to us – we want to do the right thing and we want to make it as easy as possible for people to book a cottage and have a good time once they’re here. What make a perfect holiday for you? Give me plenty of books, a comfy bed and interesting walks from the front door, and I’m very, very happy. Oh, and chocolate too. Plenty of chocolate and lovely long lie-ins! www.sallyscottages.co.uk

Book Reviews
Now that Autumn has arrived, here is our selection of cookery books packed full of wholesome goodness and delicious recipes!
Super Food in Minutes – Donal Skehan
Little Green Kitchen - David Frenkiel, Luise Vindahl
Easy Recipes 30 Minutes or Less. Good for you too!
Simple vegetarian family recipes
Description: Super Food in Minutes is all about real, fast and delicious family food that just so happens to be good for you! Donal’s latest book includes 90 delicious recipes, and tips and tricks, for healthy home cooks that will change the way you cook.
Description: Like most families, David and Luise know that the road to feeding your children isn’t always a straight one. They have raised three kids while writing their acclaimed vegetarian cookbooks and have experienced a fair share of food tossed on the floor and soup bowls left untouched.
Using 10 ingredients or less, each recipe uses streamlined, quick cooking methods with minimal effort and maximum results that help you make the most of your time spent in the kitchen. There are clear nutritional breakdowns, vegan, vegetarian and paleo options for each recipe, and a clean cook-friendly design. With Super Food in Minutes, you’ll have exciting everyday dinners, made with healthy ingredients at the core, on the table in less than 30 minutes.
But they have also learned ways around this. In this book they share their passion for cooking fun, modern, wholesome meals with kids’ palates in mind, but that also are interesting enough for adults to enjoy. Take your own inspiration from their quest to bring joy back to the dinner table: whip up a batch of Dino Burgers (made with spinach, quinoa, oats and peas), Spinach Waffles, or Stuffed Rainbow Tomatoes with black rice, feta, raisins and cinnamon. This latest collection from will include more than 60 recipes, with ‘upgrade’ options for adults (top with a poached egg, add a spicy sauce, stir through extra herbs, swap in quinoa), tips on how to include the children in the preparations and methods to get them more interested in food.
www.amazon.co.uk
All of the dishes are veggie-packed, colorful, kidfriendly and simple – with most taking under 30 minutes to prepare. Featuring stunning photography and irresistible recipes, this is the cookbook families will be turning to night after night for quick and satisfying dishes everyone (hopefully) will love. www.amazon.co.uk

Five Ingredient Vegan - Katy Beskow
From The Oven To The Table – Diana Henry
Description: Five Ingredient Vegan shows you how to cook a range of tasty meals using just vegan ingredients, all of which can be purchased from a supermarket; in fact, it’s likely that you’ll already have most of the ingredients in your store cupboard! Whether you are vegan or just want to try a few vegan recipes, this book will show you how to make the most of your time in the kitchen, with tips along the way making the process easy and fuss free.
Description: Simple dishes that look after themselves. Whether you’re short of time or just prefer to keep things simple, From the Oven to the Table shows how the oven can do much of the work that goes into making great food. Diana Henry’s favourite way to cook is to throw ingredients into a dish or roasting tin, slide them in the oven and let the heat behind that closed door transform them into golden, burnished meals. Most of the easy-going recipes in this wonderfully varied collection are cooked in one dish; some are ideas for simple accompaniments that can be cooked on another shelf at the same time.
Author Katy Beskow proves that vegan cooking doesn’t have to be complicated, and this book is full of simplified meals that are packed with flavour and substance, despite their minimal ingredients lists. They don’t require advanced cooking techniques and hours spent in the kitchen, making this book ideal for busy home cooks everywhere. Organized into five chapters: Soups, Lunches, Suppers, Sweets and Basics, these recipes will help you fall in love with making delicious meals. For evenings of comfort, try a rustic and chunky Country Lentil Pottage served with fresh 3-Ingredient Beer Bread, or indulge in Boston Beans with a sticky sweet and smoky sauce. For those bright summer days, enjoy Santorini Tomato Fritters bursting with freshness.
From quick after-work suppers to feasts for friends, the dishes are vibrant and modern and focus on grains, pulses and vegetables as much as meat and fish. With recipes such as Chicken Thighs with Miso, Sweet Potatoes & Spring Onions, Roast Indian-spiced Vegetables with LimeCoriander Butter, and Roast Stone Fruit with Almond and Orange Flower Crumbs, Diana shows how the oven is the most useful bit of kit you have in your kitchen.
Reclaim your evenings with a simple all-in-one Pear and Butter Bean Traybake full of sweet, melt- in-the-mouth flavour, or settle in to a big bowl of slippery Pappardelle with Creamy White Wine Mushrooms. Indulge your sweet tooth with a Pretzel and Popcorn Fridge Cake guaranteed to please the crowds, or a Victoria Sponge Mug Cake for days you don’t feel like sharing and need cake in a hurry!
www.waterstones.com
Katy is a firm believer that a few simple, good quality ingredients can make the most satisfying of home-cooked meals. In Five Ingredient Vegan, she shows you how to strip it back, keep it simple and think about versatile ways to use your fresh and store cupboard ingredients to create something memorable every day of the week. www.amazon.co.uk
