ospitality is an industry where employees are expected to be on their best behaviour, adhere to all the needs of the guests and ensure everyone they are hosting are well looked after. We at BNC take the opportunity to return the same hospitality to the industry every year as we host the Leaders in Hospitality awards 2019 which was held at Sofitel Dubai, The Palm on 23 April 2019. 24 winners walked away with accolades on the night as we celebrated the best of the best the industry has to offer. In this issue, you can see a list of all our winners and their thoughts on winning the award. We also held our annual GM Leaders Conference which tackled topics like the rise of vacation rentals, the impact of technology in hospitality and the issue of dropping ADR’s.

The GM Conference brought together over 100 general managers from hotels across the region to discuss these topics and find solutions that will equip them better to face challenges in the future. This edition also rounds up all the action from the recent Arabian Hotel Investment Conference that took place in Ras Al Khaimah, which included a number of expansion announcements across the region. As we step into the summer and Ramadan, I hope you have a blessed month ahead. Regards, Mahak

Arabia through the next five years, bringing Hilton’s portfolio to almost 50 hotels in each of these key markets. Speaking ahead of the Arabian Hotel Investment Conference (AHIC), Patrick Fitzgibbon, senior vice president, development EMEA, Hilton, said: “As Hilton enters its 100th year, we have almost 30,000 rooms in our MENA pipeline and have recently announced deals that will see us introduce our lifestyle brand Canopy by Hilton to KSA, as well as Embassy Suites by Hilton to the region. The addition of 100 hotels will create genuine value for the economy with

some 25,000 new jobs across these hotels as they open in the coming years.” Hilton has seen significant demand in MENA for its midmarket brands, including Hilton Garden Inn and Hampton by Hilton, with 25 hotels representing these two brands in its existing development pipeline. Hilton’s pipeline includes its recently announced fourhotel deal with Shomoul for Avenues -Riyadh which will include a Waldorf Astoria, Conrad, and Hilton Garden Inn, a well as debuting its lifestyle Canopy by Hilton brand. This development alone will add 1,400 rooms to Saudi Ara-

bia where Hilton has its largest development pipeline in the MENA region. Multi-Billion Dollar Worth Deals Signed At Gulfood 2019 Gulfood 2019 ended its 24th run at Dubai World Trade Centre (DWTC) with major alliance breakthroughs and multibilliondollar export deals reinforcing the emirate’s reputation for specialist industry events that serve as strategic gateways to hugelylucrative and transformational global markets. The 2019 edition of the show was the largest to date, attracting more than 100,000 visitors from 200-plus countries seeking business opportunities and exploring the latest F&B products and innovation. In line with its constant evolution to deliver an unparalleled experience for exhibitors and visitors, this year’s show incorporated a range of new features under the theme ‘The World of Good. The World of Food’, includingTastes of the World, which hosted 50 world renowned chefs displaying their skills in 59 cooking demonstrations. With mega F&B trade deals sealed at Gulfood 2019 stretching the length and breadth of the globe, show stalwarts and industry heavyweights emphasised the importance of the Dubai event to their annual F&B plans. Business France, the French government agency that promotes the European country’s exports, hosted a diverse range of French F&B producers across a number of the show’s sectors during its five-day run and hailed the success of the 2019 event. “French companies deem Gulfood as an essential part of their regional and global F&B plans. The show is the perfect opportunity for French decision makers to meet local partners,

confirm deals and further expand on the growth of business between France and the various countries of region,” said Marc Cagnard, managing director, Business France. Fellow European F&B behemoth Italy also enjoyed a successful outing and identified Gulfood as taking on greater significance for Italian companies annually. Gianpoalo Bruno, Italian Trade Commissioner to the UAE, Oman and Pakistan said, “Gulfood is the world’s largest annual food and beverage trade show and it is an important exhibition for the Italian Trade Agency to promote ‘Made in Italy’ products and ingredients to the Middle East region. This year, we showcased the very

best of the Italian agri-food sector and our culinary heritage at The Italian Food Lab. We organised cooking masterclasses with renowned Italian chefs based in Dubai and focused on the health benefits of the Mediterranean Diet and spreading knowledge to a wide audience. “Italy has many talented producers that now offer iconic Italian ingredients such as pasta, pizza, sweets, and snacks that meet the requirements of the contemporary culinary trends of gluten free and veganism, and Gulfood was the ideal platform to showcase them. The country exports more than 320 million euros of food and beverage items annually to the UAE, one of Italy’s most important international markets. ITA’s participation in

Gulfood has helped strengthen Italian presence in the UAE and across the wider GCC countries and Middle East.” Across the five days, Gulfood also facilitated an additional 6,700 individual trade meetings with an average of $1 million in deals per participating company. The ringing endorsement of the 2019 edition underlines the show’s position as a driver of a booming global F&B industry and key contributor to Dubai’s economic success. “Gulfood has been a resounding success this year, with deals totaling more than $21 million signed at the Chilean pavilion. This eclipsed the business done at the event last year by over one million dollars. Forecast for business related to the show will reach $50 million this year,” said Carlos Salas, trade commissioner of Chile in Dubai. “Our pavilion partners witnessed unprecedented demand this year. We saw a huge amount of traffic and interest from buyers from around the world enquiring about our fantastic produce, many of whom have signed deals, which will see Chilean produce exported around the globe. We have a long-term strategy to broaden our F&B exports further. We are already in discussion with several exporters from Chile who are keen to join our pavilion at Gulfood 2020, which will allow us to showcase an even greater number of products and ultimately increase the strength of our export business. Some of our exhibitors of dried fruit have said that Gulfood is already the most important trade show of the world.” Hotel & Catering NEWS ME

A New Spanish Restaurant Is Opening At Le Meridien Dubai

The new restaurant will bring the famous culinary tradition of Tapas to Dubai. Le Méridien Dubai Hotel and Conference Centre is all geared up to introduce a new dining spot, Bebemos, this month. Steering clear from Spanish clichés of bullfighting, flamenco, and castanets, the hotel is bringing Spain’s tradition of Tapa and authentic Spanish cuisine to Dubai. Taking references from a culture that is renowned for its culinary vibrancy and relaxed way of life, Bebemos marries robust Spanish flavours with the country’s artistic heritage. A simi-

lar rationale is evident across Bebemos’ decor, with splashes of vibrant colours inspired from artist Joan Miro modernist sensibilities that co-habits in perfect harmony with raw brick walls and fluid arches, highlighting the artistic and neo-modern duality of Spanish culture. The dining philosophy at Bebemos is a nod to the Spanish lifestyle, more inclined towards Barcelona, and will stay true to Las Tapas culture of socialising, sharing food, and sangrias. Exhibiting a deep understanding of authentic Spanish flavours is Chef Marc Mañosa who will lead the kitchen at the

restaurant as head chef. Having spent the formative years of his culinary journey working across Barcelona’s restaurants, Chef Marc’s culinary style is rooted in the city’s vibrant culture, and his culinary creations express the city’s unique vibe. Home to a large live paella grill, diners at Bebemos can take their pick from five different types of paellas, with proteins ranging from assorted seafood to crustaceans as well as chicken and artichokes. “Highlighting the Spanish way of life, Bebemos will bring the country’s most famous culinary tradition of Tapas to Dubai.

With the launch of this tapas bar, LeMéridien village is adding more fun and energy to its varied dining experiences,” Carlo Javakhia, executive assistant manager at Le Méridien Dubai Hotel and Conference Centre, said. “Bebemos will offer great food and beverages, a vibrant ambience, and great entertainment. The décor will offer the distinct culture of Barcelona with art and music where the food menu is creative and simply delicious. Chef Marc has created an exotic selection, boasting of robust Spanish flavours that are as authentic as they are creative.” Hotel & Catering NEWS ME

RFP: Request for Proposal Procrastination A monthly column by Martin Kubler, CEO, chief cook, and bottle washer of sps:affinity Strategic Partnership Solutions. When was the last time you received an RFP? I remember a time (back when I was still gainfully employed and less grumpy) when RFP Season was almost as important as Christmas or Eid. I believe that, hotels at least, still receive a lot of RFP requests throughout the year, and I recently added to the Request for Proposal flood, by sending out an RFP for a fairly large event to various hotels and restaurants. However, my joy of having put together what I thought was a very solid RFP, grumpiness quickly set in when I saw the first replies coming back. The RFP’s deadline was a few weeks back and I can now look at all the submissions we received for our client together and – how shall I put this diplomatically? – I’m afraid that most of them were abominable. Just to recap: A Request for Proposal is a document that solicits a proposal, often made through a bidding process, by an agency or company interested in procurement of a commodity, service, or asset, to potential suppliers to submit business proposals. When I send out an RFP, I’m letting you know that I have business for you and I’m encouraging you to make your best effort to respond factually to the requirements outlined in the RFP. I’m sure that many RFPs your company receives are badly put together, but I assure you that the one we sent out wasn’t. In other words, it was clearly structured, not overly long, and specified all the important matters our client needed to know in order to make an informed decision. It even contained an indication of the amount the client was willing to spend and, for once, the budget wasn’t totally hopeless, but actually very realistic – it 18

Hotel & Catering NEWS ME

would have allowed most companies we sent the RFP to, to make a decent profit. It’s also important to note that it’s 2019 and not 2005, when – in Dubai at least – RFPs were somewhat of a joke, because everyone was always full anyway. Business, let’s face it, isn’t exactly as abundant as it used to be, which, I would have thought, means that companies would really try their best to a) submit the requested information by the deadline specified in the RFP, b) submit the complete information, and c) use the amounts stated in the RFP as a guideline to prepare a competitive bid. Sadly, I was mistaken. Although we received a number of very good submissions, the bulk of what we received failed for various reasons, which made me think that, perhaps, it’ll be good to outline what an RFP is not. Firstly, an RFP is not an exercise in creative writing. If a client asks for a venue with natural daylight, you cannot enthuse over your lighting system that lights up your windowless venue almost as perfectly as daylight.

Secondly, an RFP is not an invitation to ask for the amount of money you’re currently behind in your yearly operations budget. Sure, I get +/- 10%, but if the budget is, say AED 50,000 and you submit a bid for AED 320,000, you either can’t read, are numerically challenged, or your calculator is broken. Thirdly, while RFPs are fairly formal and often text-heavy documents, often the subject matter could benefit from the inclusion of some visual content. If you have a nice venue and the RFP hinges on the quality of the venue, why not submit a number of suitable images? No, not images taken on your mobile phone or via your Internet-enabled microwave, but actual, professionally, up-to-date images that align, as far as that is possible, with the client’s request. What I mean is that of a client asks for, say, a sit-down dinner, it’ll be great if you could include an image of your venue dressed for a sit-down dinner, not a classroom-style conference set-up. Lastly, deadlines. I got a call requesting for more information from one of the companies we sent the RFP to, two weeks after the RFP’s deadline. Do you think I’m just sitting on everyone’s submissions for two weeks waiting for the companies that didn’t manage to send us anything in time to get their acts together? If you haven’t already done so, summer is a great time to put together RFP templates and make sure you have all the necessary ingredients for future RFP submissions, including images, floorplans, and menus. It’s also a good time for some RFP refresher training and to look at your decision-making structures and agility. www.hotelnewsme.com

GM Leaders Conference 2019

The GM Leaders Conference, presented by du, 2019 this year was held at Sofitel Dubai The Palm and attracted over 150 leading general managers from the region to discuss, debate and find the answered to some of the biggest challenges the industry is currently facing.

The effect of vacation rentals on the industry, how technology is changing the way we host our guests and facing the challenges of a growing market, were a few of the topics discussed at this year’s GM Leaders Conference.

Panel 1: The changing phase of hospitality Although the hospitality industry is still dominated by hotels, home-stay services are changing the landscape drastically however, there are a few pros and cons in both the business models. While vacation rentals are relatively cheaper than hotel room, they cannot match up to the services hotels provide with the staff and people interaction. On the other side, the convenience of living in a vacation rental can be appealing to the younger generation who like to travel independently. Points of discussion: • What is the scope for expansion of such services in the Middle East and how can the hotel industry gear up to compete with them? • Is there opportunity to join hands and benefit through each other’s success? • What should hotel operators change in their business model/hotel rooms and services in order to attract customers who would prefer a home-stay apartment? • What do tourists coming to the UAE want, is there a shift in trend? • How does pricing differ between the two? Speakers • Caroline Trichet, general manager, Pullman Dubai JLT • Chris Gregory-Pasha, senior sales manager, Middle East & Africa, TripAdvisor • Glenn Nobbs, general manager, Copthorne Hotel Dubai

Panel 2: Mastering the technology landscape Ensuring you are up-to-date with technological advancements in today’s market is an integral aspect of the business, from mobile check-in to OTT in-room services, however, too much AI and technology can take away the human and personalisation aspect from hospitality which is a tricky area for hotel operators. Properties today need to find the right balance between human interaction and technology in order to excel in the current landscape. Points of discussion: • What are the pros and cons of mobile check-in, is it essential for all guests? • With the increasing number of millennial travellers being extremely tech-savvy, what aspects of hotel and in-room services can hotels integrate in order to win their business? • How important is human interaction in hospitality, and does it trump technological convenience? • Advancement in technology can also mean increased self-service, is the Middle Eastern guest ready for that? • Can Chatbots and AI ease the workload on staff? • We also want to hear from hotels that have integrated blockchain within their supply chain, to find out the benefits of the technology. Speakers • Nayla Chowdhury, general manager, Hampton By Hilton Dubai • Nila Pendarovski, general manager, Rove Dubai Marina • Paula de Keijzer, senior director, Market Management Middle East, Africa, Greece, and Turkey, Expedia Group • Khaled Zaki, cluster general manager, Crowne Plaza Abu Dhabi and Holiday Inn Downtown • Mohammed Iqbal, general manager, Khalidia Palace Hotel

Panel 3: Growing pains in the Middle East hospitality market This panel discussed a number of current challenges in the industry including the ADR war between hotels and concluded that there is no straight forward solution to the issue. It is the collective responsibility of the industry to ensure they do not drop their rates to unmatchable prices in order to win business. Points of discussion: • Several international events that bring in big numbers are slotted in over the next few years within the region, how do hotels prepare for the influx of visitors and what should the industry know about what comes next? • The falling ADR’s are a global issue, how can the industry collectively resolve this problem and is a correction in the works? • With the increase in lifestyle brands entering the market targeting millennials, what is the balance between 5-star and midmarket brands, where is the demand coming from and how does competition cope? • Does outsourcing F&B outlets benefit the hotel and ease the pressure on revenue? • Is the region ready, with respect to infrastructure, for an increased number of visitors? Speakers • Iftikhar Hamdani, cluster general manager, Wyndham Garden Ajman Corniche, Ramada Hotel & Suites by Wyndham Ajman, and Ramada by Wyndham Beach Hotel Ajman • Ahmad Shaban, vice president, sales & marketing, Barcelo Gulf • Anne Scott, general manager, W Dubai- The Palm • Richard Haddad, CEO, Jannah Hotels & Resorts • Joanne Williams, general manager at Citymax Barsha, Citymax Barsha 2, and Citymax Business Bay
