Red Sea Global (RSG), the multi-project developer behind the world's most ambitious regenerative tourism destinations, Amaala and The Red Sea, announced on Thursday the signing of a sponsorship deal with

Saudi Arabia's Al-Ahli Football Club.

The agreement was signed in Jeddah in the presence of Eng. Of all the beautiful places here in Dubai, the unbelievable skyscrapers with insane views of the palm, the beaches with a backdrop of the Burj Khalifa or the Burj Al Arab, the desert is the thing that really does it for me. And it's because that is the natural habitat of this region; it's real, still, and alive, and it makes you feel grounded and awake when you're standing on its dunes.

I visited Sonara, the ultimate desert restaurant experience, a few months back for a private event. Sonara sent a car to Dubai to pick me up, and during my short, pleasant trip to the camp, I had the absolute best conversation with the Nara driver; he knew almost everything there was to know about the desert, its surroundings and culture, dune bashing, etc., he was also so polite and professional, always ready to whip out a beverage from his little fridge if needed and constantly

making sure the AC temperature was perfect. I was already impressed, and I hadn't even arrived yet. And then I did arrive, and it was spectacular. The scene at the bottom of the incaved dune at the Dubai Conservation Reserve was picture perfecta beautiful long dining table surrounded by tents, bohemian carpets, and décor with the piercing bright orange sun resting on the sand behind the entire set-up. Immediately I knew this was my kind of place. The team's hospitality at Sonara was one of the best I have experienced here in Dubai –and I am not saying that lightly. The attention to detail they give every single person is incredible because the space is intimate, hosting only a set amount of people at a time; the team can really afford to focus on everything and everyone with efficiency, a light touch, and personalisation. This quality-over-quantity approach is one of the best characteristics of the camp, in my opinion.

NARA’S NEST, A PLACE TO REST

During my first time at Sonara, I soaked in every sunset hour, with the view improving as the sun went down. I am more of a mental picture taker than an actual picture taker, and because the desert is so vast, I didn't struggle to find an uninterrupted spot to take as many mental pictures as I wanted.

The dinner was abundant; plates of delicious food and drinks kept coming. Everything on the table and the table itself was sustainable and raw, which I loved. The entire Sonara experience was fantastic. I must have been a good guest, too, because Sonara invited me back to experience Nara – the desert nest experience, to which I replied immediately, yes! I was excited about Nara, and I felt confident that it was going to be an extension of the incredible experience I had at Sonara. It was all that and more.

Everything at Nara has order and structure, and each point seamlessly connects to the other in a very light and undisturbed way. The lovely people at Nara showed me to my luxury nest. The structure of the nest is unique; it blends in with the desert effortlessly, each positioned in different directions to enjoy all the wonder and beauty of its natural surroundings. There are daybeds and cushions in front of the nest to chill out on. Inside the space is an open bedroom and living area elegantly styled throughout; it's simple and minimalistic, with colours that complement the shades of the sand. Little details like the fridge hidden inside the wall to ensure that it doesn't disrupt the flow of the earthy, free-spirited energy, the straw shoe rack at the entrance to avoid tracking sand in the nest, and the full-length mirror (because even in the desert we must look presentable) is very appreciated. Now for the pièce de resistance, a few steps lead to the most attractive bathroom you will ever see in the desert. Exquisitely designed with dark titles, ample windows, double sinks, artistic mirrors, and pockets of sandy accents everywhere, this open-plan design is still one of my favourite spaces in the nest. The mixing of patterns, metals, woods, materials, animal ornaments and trinkets blend to create a soothing experience that is laid-back but very intentional. It's not complex, hard to figure out, or trying too hard; it just is. The nest exists within the desert, and the desert exists within the nest, they are one, and once you arrive, you are too. Once I freshened up and soaked in everything the nest offered, an usher

collected me from the camp and took me to Sonara for dinner. The first part of the dinner is a sundowner experience with some drinks and appetisers, and then a few meters away, the show begins. You are treated to a generous menu and mesmerising fire show. Sonara's dinner is cosy and spirited. When your dinner is over, you are your designated driver will collect you and take you back to your nest. Once you settle in and wind down, nothing is left to do but rest.

When you rise early enough, there's a beautiful unobstructed sunset waiting right outside your door and a breakfast spread to die for. The entire Nara desert experience and all its excellent crew is a must-try. The overnight experience is only for one night to avoid guests getting bored with nothing to do after they have done all there is to do at Nara and Sonara, and my only recommendation is that this be extended because I, for one, would absolutely love to do nothing in a nest on the desert for days on end.

With over 70 virtual brands spanning 15+ cuisines, customers now have many options. Teams will be trained to ensure a successful onboarding process, ensuring new members comprehend their operational methods and the popularity of specific cuisines in each zone, enabling them to rearrange their kitchens accordingly.

Excited by the prospect of tapping into new markets, Mubarak and Mohammed are determined to continue delivering quality food to their valued customers across all borders.

Before brand creation, thorough market screening and competitor analysis are conducted to gain insights into the specific zone's landscape. Sample menus are then crafted, considering factors such as suitability for delivery, and tastings are performed to ensure optimal flavours. Packaging is carefully chosen to maintain the food's quality during delivery. This process continues until the team is satisfied. Once this is achieved, costing and pricing analysis begins, focusing on sensibly pricing the food within the market range and maintaining competitiveness. Brand creation and launch duration vary depending on the cuisine and menu size, typically ranging from one to six months.

Mubarak and Mohammed are also committed to sustainability, considering it a top priority in their business endeavours. They take significant measures to contribute to a cleaner environment and reduce their carbon footprint, recognising the importance of their role in helping society. HOW STEPPING BACK HELPS US MOVE FORWARD

In May 2023, we announced as part of our 25th Anniversary celebrations that we would be unveiling our Step Back Suite at Pullman Dubai Creek City Centre. The limited-time suite invites guests to immerse themselves in years gone by, decorated with interiors reminiscent of generations past. The reception to the suite has been overwhelming, which led us to think, what is it about that looking to the past that can help us to move forward in hospitality? And what is it about nostalgia has proved so popular in hospitality?

Nostalgia often plays a significant role in the hospitality industry because it has the power to evoke positive emotions and create a sense of comfort and familiarity for guests. The emotional connection that so many of our guests have had to the suite because they remember having, or a close family member owning, a piece of the furniture has meant the suite has stirred personal memories, which they have resonated with.

We have included genuine articles, such as a dial-up telephone in the room, which brings back some many memories for our guests or the quirky textiles including our vintage lampshades, which can transport guests to a loved one’s home, conjuring powerful emotions.

Our suite has provided an escape from the present. In a world that is so future-focused and technology-heavy, the suite provides a break and a return to what many consider a “simpler time”. In the same vein, the suite, to many, provides authenticity and tradition, tapping into the need for a connection to the past and create an atmosphere that feels genuine and rooted in history.

By creating a suite so different to everything else in the market, we have stood out of the crowd and intrigued guests to come and see it for themselves. It’s proof that nostalgia has the potential to make experiences more meaningful and memorable, fostering positive word-of-mouth recommendations and repeat visits.

Can you tell us more about your journey in the culinary world?

I believe it was my destiny to become a chef, as no one in my family had ever worked in the hospitality industry, let alone as a chef. Initially, I had dreams of becoming a doctor as a child, but those dreams never materialized. Instead, I found myself in a catering school, and the rest is history!

With a career spanning over 26 years and experience in eight countries, including renowned Michelin-starred restaurants, high-end cruise liners, and vineyard establishments, what unique skills and perspectives do you bring to The Crossing Dubai?

Over the past two decades, I have gained versatility and a broad range of skills through working in various genres of the restaurant industry at worldclass establishments. This experience has allowed me to understand different operations thoroughly and develop menus, concepts, teams, and deliver them seamlessly.

London played a pivotal role in your culinary journey, where you refined your craft under the guidance of renowned chefs Eric Chavot and Gordon Ramsay. Could you share your experience and provide valuable insights?

Working with chefs like Eric Chavot and Gordon Ramsay was a crucial building block in my culinary career. I not only learned cooking as a craft at the highest level, but I also gained an understanding of the importance of consistency, accuracy, and discipline in my profession.

Your time in Dubai has seen you showcase your talent at prestigious venues such as the Armani Hotel, Atmosphere in the Burj Khalifa, and the first Taj Hotel in the region. How has exposure to diverse culinary scenes influenced your creativity and culinary offerings?

The culinary landscape in Dubai differs

significantly from Europe and the UK. There is fierce competition in terms of quality, offerings, price points, and how to engage and retain guests. As a chef, I must be innovative and create memorable moments without resorting to gimmicks. Adapting my approach to the diners' preferences and meeting their expectations has been my most valuable learning experience in Dubai.

Recently, you've been captivating audiences with your culinary prowess at the Dubai Expo and successful guest chef pop-ups across various cities. How do these experiences fuel your passion for culinary innovation, and how will they contribute to your role at The Crossing Dubai? Pop-up experiences are a complete contrast to the aforementioned Dubai dining scene. During pop-ups, chefs create menus that showcase their art and guests come to witness the chef's creations, rather than simply deciding what to eat that night. These pop-up events often feature set or tasting menus, creating memorable experiences for the guests. At The Crossing, we have a Private Dining Room (PDR) where we plan to host both local and international chefs, collaborating to deliver exceptional menu experiences through four-hand dinners.

As the new Culinary Director of The Crossing Dubai, what are your aspirations for the establishment's dining experience?

How do you plan to push the boundaries of gastronomy and redefine the culinary landscape? Our goal is to expand Lemon Butter as a group of restaurants and establish a global presence. The Crossing serves as our flagship restaurant, and we have a second site set to open in Gallery Lafayette, Paris in July. Additionally, we have an Asian Streetery concept in JLT, and we are continually creating new concepts to expand our portfolio and push the boundaries of gastronomy.

Could you share some insights into the kind of dining experiences and flavours guests can expect at The Crossing Dubai under your leadership?

At The Crossing, our culinary approach is rooted in classic methods, combining innovation with contemporary presentations. Our spicing is well balanced, achieving a subtle harmony. I believe that it is easy for chefs to hide behind the guise of authenticity and create an overwhelming spice experience, rather than achieving a delicate balance. Mastering this craft takes years of dedication.

Are there any particular culinary highlights or signature dishes you're excited to introduce?

In our tasting menu, we showcase the best of our dishes. Some exciting new creations include Laccha Matthi Chaat, a pastry nest served with chutneys and pickle, and hand-rolled chicken dumplings inspired by the North East of India. We have also drawn inspiration from the holy city of Benares to create a no-onion, no-garlic Benaresi tamatar chaat using heirloom tomatoes. Recently, we have emphasized our tasting menu, and we are delighted to see diners placing more trust in our cooking and opting for this culinary experience.

THE VIETNAMESE FOODIES STORY

The Inception

Vietnamese Foodies was established in Istanbul, Turkey, in 2014 as a series of cooking classes led by two Vietnamese friends, Thu Do and myself. Our aim was to introduce the expat community in Istanbul to authentic Vietnamese cooking methods. At that time, there were no other Vietnamese restaurants in Istanbul, and the Asian food scene was limited. The cooking classes provided not only delicious and healthy Vietnamese cuisine but also a sense of camaraderie and togetherness within our community.

When I relocated to Dubai in 2016, I decided to continue offering cooking classes as it brought me immense fulfillment and joy. The classes consistently received 5-star ratings on Google reviews, thanks to the meticulous planning I put into each lesson, from the cooking sequences to the timing of each step. I made sure that every participant had hands-on experience in recreating the recipes exactly as they were taught. During these classes, I also learned about the preferences and dislikes of Dubai expats when it came to their food, such as their aversion to bone-in chicken in noodle soup or roasted dry shrimps in salads.

The Opportunity

With only two Vietnamese restaurants in Dubai at the time (now more than 10), my cooking class students often urged me to open my own Vietnamese restaurant, as they couldn't find the same taste and quality elsewhere. Although starting and running my own restaurant seemed like a distant dream for someone working in the corporate world, I seized the opportunity when we discovered a suitable location – a small lakeside restaurant in Cluster D, JLT. I believed there was a market demand for healthy and delicious Vietnamese food in Dubai and the UAE. In January 2018, we proudly opened our very first Vietnamese Foodies branch, which quickly gained popularity and became the talk of the town. We were the only restaurant in JLT with a wait time of 20 to 40 minutes for a table. Subsequently, we received recognition from Time Out Restaurant Awards, What's On, and BBC Good Food, earning nominations such as "Best Budget Restaurant," "Best Asian Restaurant," "Best Homegrown Restaurant," and "Best Healthy Restaurant." This solidified the fact that Vietnamese Foodies was a concept embraced and in demand in Dubai and the broader GCC market.

‘What it takes to start and sustain an F&B business in the UAE’

The Scaling-Up Journey

Although our first location in JLT was thriving, it was essential to expand into other neighborhoods in Dubai to fulfill our vision of becoming a leading brand in the Vietnamese and Pan-Asian casual dining market segment. Staying in a single location would expose Vietnamese Foodies to competition from other similar Asian and Vietnamese concepts. To achieve this, we invested our savings and secured financial backing from the bank to open our second location in Downtown, right across from Burj Khalifa, one of the most prestigious areas. We believed it would elevate the dining experience at Vietnamese Foodies and enhance our brand image. As soon as our Downtown branch gained popularity, we started receiving inquiries from prestigious developers such as Emaar, Majid Al Futtaim, Nakheel, and Aldar, inviting us to be part of their dining outlets. This made me immensely proud and encouraged, as it demonstrated that Vietnamese Foodies could stand alongside global brands like Wagamama, Starbucks, and Din Tai Fung and thrive in such a highly competitive environment.

The Global Playground

In just five years, Vietnamese Foodies has opened five branches, with plans for three more branches in 2023 and 2024. The business has transitioned from an independent outlet to a chain operation, and my daily efforts are dedicated to maintaining

high standards of food and service quality while safeguarding the brand from imitation attempts from around the world. It is evident to many that Vietnamese Foodies is ready for global expansion, as it is the only Vietnamese restaurant chain of its kind outside of Vietnam. We are building and developing internal processes and capabilities to prepare ourselves for future growth opportunities beyond Dubai. At the same time, we remain committed to staying true to our identity as a homegrown, family-run business with a passion for serving the best Pho wherever we go.

What Could Have Been Done Differently?

Not a thing. Bringing authentic Vietnamese cuisine to Dubai's food enthusiasts and staying consistent with our identity have always been my top priorities, even if it meant sacrificing some financial gains. There are no regrets. Healthy, delicious food will always remain at the core of our business and serves as the driving force behind our growth.

Summer’s here and it traditionally brings with it travel season for expats and a slight emptying of our playgrounds in the Middle East. Leaving aside the fact that cities like Dubai are now much more “year-round” than they were when I first arrived in the region, I do always enjoy the summer break.

Traveling, whether for business or pleasure, isn’t just about moving from A to B and on to C for us hospitality folks, though, isn’t it? It’s also always a chance to see “how the other half lives”, what the competition is up to, and what’s new in hotels around the world.

Having just stayed in several hotels of different types in vastly different locations, here’s a little summary and story time of my personal observations. We’ll start with soap bars.

It forces you to shift into a slower gear and offer a chance to recharge.

I’ll be spending the summer in our house by the sea in Spain – not noticeable cooler than Dubai in July or August, but more laid back.

I just finished an intensive travel period with gigs in Abu Dhabi, Dubai, Berlin, Munich, and Lisbon, so I’m looking forward to staying

Yes, soap bars. Odd things. I mean, it’s 2023, people are judging hotels by how Instagram-able they are, we’ve just been through a major pandemic, cost pressure is a thing and yet, soap bar are also still a thing. Perhaps it’s because I’m old, but I can’t help, but judge the quality of a hotel by the soap bars. It’s ridiculous, totally unsustainable, and shouldn’t be done anymore, but here I was walking into a place in the Algarve not

having read up on the hotel beforehand at all. The car drops me off outside the hotel and first impressions are that it’s not the most modern of places, but service is good in an understated kind of way that you only get from top-end places. Duly noted. I enter my room and the bathroom to freshen up after the journey only to discover the most ridiculous oversized piece of hand soap by the sink. We’re talking half a kilo of soap wrapped in a very fancy wrapper. That’s a lot of soap for just washing your hands. To be blunt, it’s a ridiculous amount of soap. Nobody needs this much soap for three days, but I couldn’t help to be impressed. First impressions count, soap bars help to subsequently solidify them. Did I use it? No. Did I take it with me? You bet (if only to show the wife).

Next stop was one of the European capitals over what was a very busy public holiday weekend. I changed hotels lastminute trading a fairly high cost,

internationally flagged and central location for a cheaper, independent and out of the centre location and I’m glad I did. I ended up staying in what was probably the cleverest hotel building and room I had stayed in for a long time. Check-in was automated and it actually worked, the room was good size and, get this, the toilet paper had a design printed on it that matched the wallpaper. Please do not accuse me of being swayed by bathroom-centric points, but the place was on the same level as an Ibis or Premier Inn, yet it screamed “personality” rather than “box”. Someone thought about every little detail here. Sure, it wasn’t half a kilo of soap by the sink, but if you’re checking into a place and you see that the toilet paper matches the wallpaper design you know that you’re in good hands and that you have nothing to worry about. Sure enough, this was the case here.

Same city, second stay, if you can call it a stay, because I only had about 8 hours between flights. I wanted to book a snooze cube at the airport, but they were all fully booked, so I did what we’d all do, sat in an airport café, opened booking.com and booked the cheapest place nearest to the airport. It was about 35 EUR. A quick 10 minutes Uber ride later and I’m there, but nobody else is. I mean, there’s no reception and no people. I call the number in my booking confirmation and a friendly voice on the other end of the line tells me I’ve been assigned room no. 3 and the door is open with the key in the look inside and could I please leave it like that when I leave. Okay. Automated check-in without technology. I found room no. 3. It was wild. I mean, it looked like a prison cell decorated by someone of psychedelic drugs. It had a

ets on the wall near the bed. In about 2 meters height. There was a fridge in the bathroom, too, though – needless to say – no soap bar the size of an expensive steak. Guess what, though? It was quiet. The bed was comfortable. The Wifi was to connect to and worked. There was a vending machine for coffee and beer in the hallway. There were also, which I luckily only discovered when it was light the next morning, a bunch of skeleton statues with scythes on the roof of the building. Think Skeletor or violent Nordic hell beasts. Not sure, I’d have picked this place if I had seen these when I checked in.

Building a hospitality brand can be a complex business. From matching capacity with demand to ensuring growth doesn’t come at the cost of quality, there are various factors that require careful consideration during this journey.

Nevertheless, with the right strategy, it is possible to scale operations without jeopardising the elements that led to your initial success.

Here are five priorities that should remain top of mind throughout the expansion process…

Understand your market

Before you think about scaling your operations, it is imperative that you understand your market. Conduct a thorough evaluation of what your guests are looking for and take the time to figure out what an excellent customer experience looks like for your brand.

You’re unlikely to succeed in establishing your niche unless you have a solid frame of reference, so researching your competition is equally important. Rather than trying to do everything, gauge what is currently being offered in the market and what is missing, and work out how to fill those gaps.

Build your dream team

Always try to recruit based on your organisation’s core values and unique selling points. For example, if you have built your business on bespoke customer service, focus on hiring personable candidates with a keen eye for attention to detail. If, on the other hand, value is your priority, look for individuals with experience delivering streamlined, efficient operations.

Ultimately, scaling is all about trusting others, so you’ll need to be confident in your team’s ability to help realise your vision.

Work strategically

When it comes to scaling a business – especially in the hospitality sector –an ad hoc approach is rarely the most conducive to success. Instead, devise a concrete roadmap that you and your team can refer to over the longer term.

Even though you are scaling an existing business, it sometimes helps to view expansion as the ‘launch’ of your brand. From here, ensure that your roadmap contains elements such as marketing, growing your network of customers and building brand loyalty.

Try starting with your goals before working your way back. Clearly articulating what it is you want to achieve at the outset will increase your chances of creating a practical plan of action.

Embrace innovation

Innovation is the lifeblood of the modern hospitality industry. From the optimisation of your social media channels and website to the implementation of AI-powered back-ofhouse tools, always be on the lookout for solutions with the potential to give you a competitive edge.

But keep in mind that innovation is not limited to the realm of technology. Now more than ever, guests are looking for brands that reflect their values and positively impact their surrounding communities and ecosystems, so build environmental, social and

governance (ESG) policies into your operations as early as possible. Doing so should enable your team to work flexibly and respond to the needs of your customers within a clear framework.

What’s more, you don’t necessarily have to start from scratch. Organic growth is great, but it may also make sense to consider whether your goals could be achieved through mergers and acquisitions. Remember, there are no right or wrong approaches to expansion; it all depends on your organisational priorities and vision.

Track your progress

If you succeed in integrating these four steps into your business, the odds are you’ll start to see your brand’s operations scale up. However, it’s vital you don’t allow complacency to set in.

Continue to monitor your performance against clear and measurable success criteria. Not only will this offer tangible proof that your efforts are bearing fruit, but it will also provide valuable insights into what’s working and what isn’t.

This proactive approach to growth will enable you to identify the measures that are returning the highest dividends and tweak your tactics as you progress. Keep in mind that scaling hotel operations is a journey, not a destination. However, it’s important to understand whether you’re moving forwards or backwards.
