The Power of Collaboration: Amari Watergate Bangkok And The Embassy Of Ireland Host A Spectacular Film Series Event

The glitz and glamour of Bangkok shone bright on the evening of March 25th, 2023 as Amari Watergate Bangkok proudly hosted its first-ever film series event. Led by the illustrious Sukamal Mondal, this event was made possible through a collaborative partnership with the Embassy of Ireland, and was attended by a host of distinguished guests, including His Excellency Mr. Pat Bourne, Ambassador of Ireland in Bangkok.

Lekha Shankar, the esteemed curator, was the mastermind behind this breathtaking event, which opened with the riveting film "A Girl from Mogadishu". Based on the awe-inspiring life of Ifrah Ahmed - a Somali refugee and one of the world's leading activists against gender-based violence - this film took you on a heart-wrenching journey through Ifrah's tumultuous life, from her harrowing childhood in war-torn Somalia to her dangerous escape with

a trafficker, and finally, her arrival in Ireland as a refugee.

The film chronicled Ifrah's incredible journey of evolution as an activist, from attending conferences and interacting with Irish Ministers to addressing the EU and UN. Her battle against female genital mutilation (FGM), which she herself underwent, was at the forefront of her fight for women's empowerment.

To honor International Women's Day, the Amari Watergate Bangkok team unveiled "The Girl at Mogadishu", a powerful ode to women's empowerment. As a diverse hotel, Amari Watergate Bangkok is committed to bringing art, culture, and different backgrounds together under one roof. Hua Hin’s Women’s Club Turns Ten

As the sun began to set on the picturesque town of Hua Hin, a buzz of excitement filled the air as the Hua Hin Women's Club prepared to celebrate a decade of existence. The prestigious Centara Grand Beach Resort & Villas Hua Hin had been transformed into a glamorous red-carpet affair, befitting of the club's milestone anniversary with over 200 guests on hand to mark the occasion.

Since its inception, the Hua Hin Women's Club has become an integral part of the community, raising funds for a range of charitable projects

that have benefited both individuals and families. From donating breast milk substitutes to cancer patients to providing assistance for underprivileged children and women, the club has made a significant impact in the lives of many.

Ormsby Triumphs Over Chonlatit in Play-Off at International Series Thailand

In a compelling finish at Black Mountain Golf Club in Hua Hin, Wade Ormsby of Australia won the International Series Thailand, collecting $US360,000, by overcoming Chonlatit Chuenboonngam on the first hole of a sudden-death play-off on March 12th. Ormsby secured his victory by sinking a 12-foot birdie putt on the par-five 18th, while Chonlatit failed to make his birdie attempt from eight feet.

With three holes remaining, 42-yearold Ormsby trailed clubhouse leader Chonlatit by one shot on 20 under. Ormsby made a birdie on the 16th hole and had a chance to win on the last hole. He managed to get within 12 feet of the hole from a greenside bunker but missed his birdie attempt, leading to extra time. The Australian finished with a seven-under-par 65, while Chonlatit, an Asian Development Tour (ADT) graduate from last year, shot a 64.

This victory marks Ormsby’s fourth Asian Tour win and his first since the Hong Kong Open in 2020. Dozens of players had a chance to win the U$2 million event on the final day, but Ormsby and Chonlatit eventually pulled ahead. Korean Yeongsu Kim (66) and Micah Lauren Shin (67) from the United States tied for third place, one shot behind, while Australian Kevin Yuan (67) finished in fifth place.

Ormsby expressed disbelief at his success, saying, “I can’t believe I am

here.” He recalled a difficult week in New Zealand and thanked his coach, Grant Field, for helping him prepare. Starting the day two shots behind the leaders, Ormsby quickly climbed the leaderboard, making birdies on holes two, four, five, six, and nine for a fiveunder-par 31. Despite dropping a shot on the 11th hole, he recovered with birdies on holes 12, 13, and 16.

Reflecting on his missed 15-foot birdie putt on the last hole, Ormsby said, “I hit a good putt, but it didn’t turn right,

the grain was hard off the left. It didn’t go in; all you can do is try and hit a good putt.” He was thrilled to win an International Series event, particularly at Black Mountain, a course he loves.

Chonlatit also missed a birdie putt on the final hole, but the 24-year-old was still delighted with his performance throughout the tournament. He said, “I did my best, and I’m super happy with the result and my performance today and this week.” Chonlatit’s goal is to win an Asian Tour event after finishing

second on the ADT Order of Merit last year and earning his Asian Tour card for this season. He remains confident in his ability to achieve this goal.”

L et’s Wine , Serve Chilled Please!

Wine is a complex beverage that requires a bit of finesse to genuinely appreciate. One of the most crucial factors in enjoying wine is getting the temperature just right. If you drink it too cold, you risk numbing the flavors and aromas. Drink it too warm, and the alcohol content will dominate the taste, leaving you with a bitter aftertaste.

First and foremost, let’s understand the basics of wine temperature. White, rose and sparkling wines are generally

served chilled. However, not all whites should be served at the same temperature. A light, crisp wine like a Sauvignon Blanc or a Pinot Grigio should be served between 7-10°C. A fuller-bodied white like a Chardonnay or Viognier can be served between 10-13°C. And if you’re feeling fancy and want to drink some sparkling wine, that should be served between 5-9°C. Just make sure you don’t accidentally freeze your champagne.

Now let’s move onto the reds. Reds are a bit trickier because they have a

wider temperature range. A light-bodied red like a Pinot noir or a Beaujolais can be enjoyed at temperatures as low as 12-15°C, a medium red such as a Merlot or Tempranillo can be served at 14-17°C and a bold tannic full bodies red like a Primitivo or Shiraz can be served as high as 17-19°C.

As a rule of thumb you often hear that red wines should be served at room temperature. Room temperature refers to a temperature of around (15-20°C). Not your typical Thailandaround-Songkran room temperature, is

it? If you’re living in a tropical country, you might need to put your red wine in the fridge for a few minutes to cool it down a bit. On the other hand, if you live in a colder climate, you might need to warm it up by holding the glass in your hands for a while.

Which brings us to the importance of serving your wine in the right glass. Red wines should be served in glasses with a wider bowl, which allows the wine to breathe and lets the flavors and aromas fully develop. White wines, on the other hand, should be served

in glasses with a smaller bowl, which helps preserve their delicate flavors and aromas but also the temperature with less air contact. And don’t even get me started on sparkling wines –those require a special type of flute glass that’s designed to keep the bubbles intact and a lower temperature.

Of course, if you’re anything like me, you might be thinking, “Who cares about all these rules? Can’t I just drink my wine straight from the bottle?” And while I can’t deny the appeal of a good old-fashioned bottle chug, there’s

Siem Reap is a bucket list destination for many travellers. Angkor Archaeological Park, an iconic UNESCO-listed World Heritage Site and ancient capital of the Khmer Empire, tops most visitors’ must-do. And, thanks to a recent visit, I can confirm Siem Reap is much more than a land of temples and ruins.

This beautiful city offers a rich cultural heritage, thriving arts and creative vibe, fantastic dining, peaceful countryside, warm and welcoming people, and world-class hospitality facilities. A breadth of immersive activities for all ages awaits. Be sure to allow time in your travel itinerary to give sufficient exploration of Siem Reap’s enchanting and exotic offerings.

Post-pandemic visitors to Siem Reap will also benefit from the now-completed USD150 million infrastructure makeover. Ancient Temples

The Angkor Archaeological Park covers an area of approximately 400 square kilometres and is what remains of the ancient Khmer capital. From here, the Khmer empire oversaw much of Southeast Asia from the 9th to the 15th century. It was the largest pre-industrial city and home to more than a million people then and remains the world’s largest religious monument. Attracting millions of visitors yearly, it is considered one of Southeast Asia’s most important archaeological sites.

The Archaeological Park is home to numerous temples, reservoirs, and other structures, with Angkor Wat being the most famous of these structures and the centrepiece of the park. Other temples worth exploring include Bayon Temple, renowned for its massive stone faces. Ta Prohm Temple, famous for the trees growing around and through the ruins, and Banteay Srei, with its intricate carvings. In addition to the temples and other structures, the park contains several reservoirs used for irrigation and as water sources for the population, including the largest, the West Baray.

One-, three- and seven-day Passes can be purchased at the new Archaeological Park ticket office. You must show this at each temple, so keep it handy. Once armed with your Pass, visitors can explore the ruins independently or on organised tours. Local Tuk Tuk drivers will also take you around, but be sure to have a registered guide to understand the details of what you are seeing. For something different, operators like Grasshopper Adventures have half and full-day bike and e-bike tours. While Vespa tours with Adventures Cambodia are a great option.

Museums and History

Visiting the Angkor National Museum before touring the temples provides excellent insight and perspective on the historic site. The displays are well-signed, and an informative audio guide is available.

Opening the door to another part of Cambodia’s history, the civil war is NGO APOPO. Cambodia is one of the most land mine-impacted countries. APOPO, with its HeroRATs, is helping clear the country of these heinous and deadly leftover munitions. A tour of their visitors centre will help you understand and support the life-saving work they are doing. The Landmine Museum also divulges a wealth of information about this sad part of Cambodian history.

Naturally, many restaurants and markets offer tasty food at inexpensive prices, featuring Cambodian and international cuisine. Pub Street is an entertainment hub with pubs, clubs, restaurants, and cafes. Becoming increasingly popular is the Wat Bo precinct, with more low-key, laid-back restaurants, bars, and lounges. The pace of this development has been remarkable. Work on levelling the ground, fencing and official land documentation of the plots only began in November 2022. As of this writing, 7 of the 16 available plots are already sold.

HOT Magazine recently had the pleasure to sit down with Khun Gift to learn more about her new development.

HM: With 15 years of building experience, how did you decide on the concept and designs forLa Felice?

GN: Due to being in the industry for so long I have seen that all the projects in Hua Hin have very similar designs and not much has changed in the past 10 years so I wanted to give clients a new option in choosing their dream home. I wanted something very homey, more than just the regular villa style that is why I chose modern tropical contemporary style for the homes in La Felice. If you see from my design there’s a lot of earth tone, using wood to make it look very cozy.

HM: Can you tell us why you chose the land off of Soi 112 to build your first development geared towards expats, and how many land plots are available?

GN: I actually spent my time during covid scouting for the perfect location, I decided on this location because it’s not far from the city, you have Bluport, which is approximately 5 minutes away, Bangkok Hospital is just a little bit further away and the Banyan Golf Course is approximately 3 minutes away. The land is big enough to accommodate 16 plots. It is close to the city but surrounded by peaceful nature.

HM: Is La Felice an ECO- friendly development, and is solar standard or an option?

GN: Yes, we are eco-friendly, all the homes come with a solar system, but there are some buyers that request without the solar system. Being eco-friendly for me is more than having solar panels, it is the management system within our project and material choices that help in making it a very clean and green living community.

HM: You have launched this development early, even before the showhouse has been completed why is that?

GN: I actually wanted to complete the show house first, but by surprise one of my old clients from previous projects saw that I was working on La Felice and decided to buy the show house that we are currently building. From word-of-mouth people started to contact me and reserve more plots. On the day of the Grand opening of our sales office we have already sold 7 plots. I am very happy about the positive feedback. The hard work is just starting, because the handover of the house is what I look forward to. I want to really give the buyers the best quality home.

HM: Why did you choose Hua Hin for your first development and how confident are you that the property market in Hua Hin will continue to grow?

GN: I have been working in Hua Hin, Cha Am and Pranburi in my early years but the only market that was really moving and I could sell many townhouses was Hua Hin. I am very confident with the real estate market in Hua Hin, especially now with so much developments going on, even the big real estate companies in Bangkok are starting their housing projects in Hua Hin. Hua Hin is a perfect city for

families and retirees so the market will definitely keep growing.

HM: When buyers move into the homes you’ve built for them, what do you think they will be most happy about?

GN: To really be able to live in their dream home, I really like to encourage the buyers to have their input so it really is built uniquely for them. The concepts of functionality and sustainability are of high importance to today’s home buyer. How do you incorporate these in your planning and designing? The architect team I choose to work with are professionals from

Bangkok and have completed many famous projects throughout the country. So my experience of 15 years being on site and doing everything myself I have great knowledge on functionality, plus the experience of the architect team we are able to incorporate all of this into the design.

L et’s Eat , Siem Reap - Embassy Restaurant

Helmed by Chef and Culinary Director Kimsan Pol, the Embassy restaurant

is staffed by an all-female team. Yes, the kitchen and service staff are all female, with the continuing desire to promote the strength and talents of Cambodian women. And that talent starts at the top. Chef Kimsan Pol is French trained in Cambodia and has completed additional skills development elsewhere in Asia and France under Michelin awarded Chefs. She has also been highly successful in international culinary competitions.

Embassy’s dining experience is centred on a five to six-course set menu that changes monthly. All dishes are inspired by and use seasonal local ingredients from Cambodia’s provinces. Guests can take the four-glass wine pairing or an organic herbal tea pairing to accompany their meal. Each is crafted to suit the menu.

with artistic metal panels and part walls creating partitions. Various warm shades of orange are present throughout, be it light fittings, a curtain, the predominant tone in a hung painting, and even the apron and head coverings of the kitchen team. Chef Kimsan Pol’s kitchen is on full display, glassed like a fish bowl, and it gleams as one would expect a show kitchen (rather than a working commercial kitchen) to do.

Arriving guests are ushered to a lounge adjacent to the open bar for pre-dinner drinks. The evening’s menu is also explained, and a small shared plate of Khmer street food is presented. Food presentation is refined with an artistic flair, as expected in an upscale restaurant. Embassy’s service style is polished, with the females in each group of guests receiving deferential treatment. It is as if an international industry-wide norm where males are

automatically treated as the hosts is being subtly rectified.

With pre-dinner drinks enjoyed and the street food snacks sampled, diners are welcomed into the kitchen. Here, Chefs present the first (official) dish of the evening’s food journey. An Amuse Bouche (mouth amuser if literally translated from French). For our visit, this was a delicately spiced Crab Curry with Crispy Rice Crackers for dipping.

On arrival at our dining table, a small platter with many ingredients used in the evening’s menu is presented. Varying from month to month, it could be vegetables, nuts, herbs and spices, funghi, lotus roots, tropical fruits, and other elements. Each is patiently explained with their Cambodian origins and where they fit into our food journey. The Embassy dining experience is more interactive and pleasingly involving than many we have had.

Appetiser was a homemade Smoked Duck Salad with red Kampot pepper. The spicy, fruity and intense flavours of Cambodia’s famous pepper are ideal with the smoky character of the duck, and all are set off with the crispy rice wafer crunch on top. With its raspberry nose and pepper flavours on the palate, a Grenache from France was a most suitable wine pairing.

Next, the soup showcases a signature dish from Svay Reang Province, bordering Vietnam. This traditional soup is cooked with Khmer spices, taro, ivy leaves, rice balls and Wallago River fish fillet. A palate-cleansing sorbet of tamarind and crushed salted chilli sorbet, which truly speaks to these South East Asian flavours, is served between the soup and main course.

There are two main dishes sized to not overwhelm. A Crispy Prawn Dumpling served with vermicelli, chive leaf, tofu, and a Kapi (fermented shrimp paste) sauce. And the Slowcooked Beef Cheek is artistically presented with fresh coconut cream, rounds of eggplant, and a sweet and sour tromoung leaves sauce. Both are delectable and elegant in their taste and presentation. Once again, the wine pairing was inspired – either a South African Pinotage or Chilean Pinot Noir-Monastrell.

Dessert concluded the evening and spoke to Chef’s accomplished hand at showcasing Asian ingredients in a compelling, decidedly tasty and refined manner. The Baked Keo Romeat green mango is one of Cambodia’s favourite species and is served with palm sugar and a moreish sesame seed candy ice cream. Sparkling Cava from Spain was the perfect wine partner.

Though our dining experience finished at that point, we, like other diners, were presented with a small branded bag of restaurant-made items to take home, including the yummiest macarons. These were presented in person by Chef Kimsan Pol as she made her way around the tables to chat with guests about their dining experience and thank them for their patronage. This is an excellent example of the true sense of hospitality.
