ean-Michel Gathy is a gregarious and engaging Belgian in demand worldwide as a hospitality designer. He is the creative powerhouse behind projects like the St. Regis Lhasa Resort in Tibet, Cheval Blanc Randheli in the Maldives, Chedi Andermatt in Switzerland, Four Seasons in Bangkok, and the iconic rooftop and pool at Singapore’s Marina Bay Sands. As principal of Denniston, the design practice he founded in 1983, he has four offices worldwide and clients that include royalty and tycoons. While he does turn down work regularly, he says, ‘I’m very hands-on — I design everything. From the very first site visit of a project, I’m there and involved at each stage along the way. In 2020 almost a billion dollars was spent on research and development towards electric flight, and this year another billion is expected to go towards the effort. And why not? lighting the lifts on the 54th floor of Centara Grand Centralworld feels like you are entering another world. Reminiscent of the Mediterranean Sea, the reception areas blue glazed floor shimmers in the soft light and provides a sense of arrival. On entry, the imposing bar, curving left and right, commands attention. A prominent illuminated sign on the bar front announces you have entered UNO MAS. Atop this sign, centre of the bar, a dozen or more bottles of sparkling wine sit deep in ice and enticingly lit, as if in invitation. Dominating all the space behind the bar is UNO MAS’s Wine Cellar. And not some dusty darkened room. A futuristic eight-metre-high transparent tower which cossets over 2,000 bottles. Though the cellar is a spectacle in itself, order a bottle from their 200 labelled wine list, and marvel as the ‘wine angel’ abseils up the internal cellar walls to secure and deliver your selection. UNO MAS, Spanish for “one more” is about celebrating Spain and its Mediterranean cuisine, sky-high right in Bangkok’s heart. Executive Chef, Sandro Aguilera is originally from Barcelona. He has worked at Michelin star restaurants in Barcelona and gained extensive experience elsewhere in his home country, France and Chile before moving to Thailand. UNO MAS has been awarded a Michelin Plate for the last three years (2018 through to 2020) under his guidance. Following the building’s curve with Bangkok’s skyline forever present, UNO MAS is split into three unique zones starting with the Wine Cellar. Just past the Wine Cellar is the Tapas & Raw Bar followed by the slightly more formal Dining Deck with these last two zones semialfresco. To create the alfresco feel, UNO MAS’s designers removed the expansive floor to ceiling glass windows, replacing them with a 1.8-metre glass wall. Above the glass wall to the ceiling is open, allowing diners to experience the cooling breezes at 54 floors above the Bangkok streets. This is a drawcard in itself, and those Bangkok sunsets add the crowning glory.

Moorish design elements and accessories connect the three venues together. An eclectic and warm colour palette of orange, yellow and marine, the striking terracotta hued Moroccan wall features, to the comfortable rustic sofas. All come together to highlight their Iberian Peninsula provenance. You can hang out at the Wine Cellar, sampling from the impressive 36 wines by the glass, tasting one of their eleven featured Sherry including the 50-year-old Colosía Solera Familiar Palo Cortado from Zerez, the home of Sherry. And perhaps ordering nibbles from the menu to accompany. In the Tapas & Raw Bar, you can choose the cosy seating for couples besides the panoramic and possibly vertigo inspiring glass wall; tables for larger groups on the elevated wooden deck, or bar stools around the tapas bar counter right in the middle of the action. The Dining Deck continues with impressive city skyline views along with the theatre from the show kitchen. Here chefs use special fire pits and the unique Josper oven to prepare

their signature whole roast meats and grilled seafood. Another pit uses orange wood to impart a distinctive flavour to the paellas. With the menu offering some 40 or so hot and cold tapas, including Pata Negra (Iberian breed of pig) cold cuts, it’s hard to know where to start. To solve that dilemma, we chose UNO MAS’s “2 Feet of Tapas”. We munched our way through delectable morsels like mushroom croquettes, salmon salad, fried baby squid, grilled octopus, Spanish meatballs, cured hams, potato bravas, peppers padrones, gambas (prawns) “pil pil’ and more. This is an ideal option for two people, appealingly displayed along UNO MAS’s specially made Two Feet timber tapa plank. Four paella feature on the menu – the traditional chicken and seafood; Lobster with the bottom crusted rice “socarrat“; one heavy in Pyrenees flavours of wild mushroom, black truffle, Iberico pork, and Catalan sausage; and seafood or “mariscos“ paella made with creamy “bomba“ rice, Maine lob-

ster and the red Carabineros deep-sea prawns. Or for those who can’t decide, can I suggest the Half & Half paella. Served in a specially divided pan – one half with the lobster paella and the Pyrenees on the other. Here you have the best of both worlds and paella heaven. One of UNO MAS’s signature main courses is “Cochinillo” or Suckling Pig. The province of Segovia northwest of Madrid is famous for roasting suckling pigs in this style and is a dish that dates back to medieval banquets. Three to four-week-old piglets still on their mother’s milk are butchered and roasted very simply, typically in woodfired ovens. UNO MAS serves half of a roasted suckling pig Segovian style to the table, and in line with tradition, cuts your pork with the dull edge of a plate to demonstrate its tenderness, before theatrically smashing the plate in front of you. Our group can attest to the pork’s melt in your mouth tenderness and subtle flavour, and it’s complemented with traditional and Thai sauces.


And of course, dessert, including two favourites! Crème Catalan is served with salted caramel ice cream for added naughtiness. The traditional Churros, light and airy Spanish fried doughnuts came with gloriously cocoa-rich Valrhona chocolate dipping sauce. Be sure to ask what’s on offer. UNO MAS opens its doors at lunchtime the first Sunday of every month, for their “Domingo Fabuloso“ Champagne Brunch complete with G.H. Mumm Champagne. Displays laden with all the best cold cuts, including Joselito Iberico – named the best ham in the world, and diverse tapas, are just the beginning. Dive into the imported fresh oysters and a mind-boggling selection of seafood on ice including Phuket and Maine lobsters, varieties of crabs and prawns plus a range of condiments and bread. Leave room for the most tempting selection of fruits, chocolates and desserts. This is one bottomless bubbly brunch worth slotting into your calendar. The company was founded in 1976 with the acquisition of the Hotel Cipriani in Venice from the Guinness family for ÂŁ900,000. It then bought what was left of the legendary Orient Express to restore it and offer rides from Paris and London to their hotel in Venice. The new routes criss-cross through Italy, Switzerland, Belgium, and The Netherlands and call at the finest cities along the way. J

ean-Michel Gathy is a Belgian who’s been based in Asia for almost four decades. The gregarious and engrossing Gathy is in demand across the globe as a hospitality designer and is the creative powerhouse behind projects like the St. Regis Lhasa Resort in Tibet, Cheval Blanc Randheli in the Maldives, Chedi Andermatt in Switzerland, Four Seasons in Bangkok and the iconic rooftop and pool at Singapore’s Marina Bay Sands. As principal of Denniston, the design practice he founded in 1983, he has four offices worldwide and clients that include tycoons and royalty. Gathy maintains a personal interest in every project, hence his relentless routine. While he does turn down work regularly, he says, ‘I’m very hands-on — I design everything. From the very first site visit

of a project, I’m there and involved at each stage along the way. I am totally passionate about and addicted to what I do.’ The hotels Jean-Michel Gathy designs are off the decadence Richter scale. With his firm Denniston, he has designed for nearly every major super-luxury hotel brand you can think of, from Banyan Tree to Aman, Mandarin to Four Seasons. Gathy has a profound and pragmatic understanding of how hotels function and what wealthy, discerning guests expect. “We’re not just architects,” he continues. “We’re lifestyle product designers. Design is also about daring and challenging rules. I know what people like, what people talk about. It’s actually more important to please the heart than the eye. A lot of architects and designers forget this.”

Gathy has long been an innovator and a trendsetter. Without him, reflecting pools might never have become a key component of late 20thcentury tropical resort design. Nor, for that matter, Buddha sculptures as decorative objects and the current fashion for firelight might‘ve never taken off, which he used in The Chedi in Muscat back in 2003 and again at its sister hotel in the Swiss Alps. Then there’s overwater hammocks, or ‘basking nets’, which he dreamt up for the One&Only Reethi Rah in the Maldives in 2005 and immense spalike bathrooms with freestanding tubs and places to sit and recline. Naughty bathrooms, he calls them. He pioneered the vogue for private plunge pools and show-stopping swimming pools – witness the pool at the St.Regis Lhasa, lined in glazed gold plate, the black volcanic rock pool at Amanyara in Turks & Caicos, the three parallel 30-metre pools at The Setai, Miami or the 150-metre long curved infinity pool that balances on the roofs of the three towers of the Singapore’s Marina Bay Sands.

“Luck and opportunity” is JeanMichel’s answer to how he ended up being the go-to architect and designer for some of the top luxury hotel brands in the world. He says in the early 90’s he met Adrian Zecha, then Chairman of Aman Resorts, who gave him the chance to design the Amanwana in Indonesia. He discovered he really liked designing luxury hotels. As he says, “It went on from there: the more you design the more people want you to design. I’m not necessarily the best but I’ve got more experience than anyone else in the niche of super-luxury hotels. It’s like a top cardiologist: there might be other doctors as good but why would you risk going to an unknown when you have one with a proven track record? I’m basically the spoiled kid of

the hotel industry! Also, I am someone who loves luxury. I like top-class things – watches, art, design and so on. I like beauty, I like what is unnecessary: that extra thing.” When it comes to hotel design, Jean-Michel says an element that he particularly enjoys is water. “In hotels, it’s paramount. It gives reflections, movement, noise – it changes constantly, and humans love watching it. It fascinates like fire. At night it really comes into its own: you can no longer see the landscape, so water, which reflects the lights of the building, gives depth to the view. It’s also a sound: it can be calming or lively, but it also covers up other noises, like people having drinks on the terrace.

Designing some of the most highend hotel brands on the planet means you have a very demanding clientele. When asked if that creates a lot of pressure, he answers, “Of course! You simply cannot fail. You will always find me running all the time. Yesterday I was in London, next week I am in China, today I have to go to Dubai. ‘No’ does not exist in my world – you are dealing with top people. It’s superpressuring, but I love it. If you can’t do it, don’t design luxury hotels.

Loei Province

W

ho says Thailand is only about the beach and the seaside? There exist locations across the Northern part of this geographically diverse nation where you’ll find the purest of mountain breezes. This month we explore one of them in-depth, that being the province of Loei. Sharing a Mekong River border with Laos, Loei province is in many ways more similar to the north of Thailand than to the rest of Isan, even earning the nickname “the Mae Hong Son of the northeast.” Loei is an upand-coming Ecotourism region surrounded by undulating mountain ranges, abundant with various kinds of flora and capped with fog enshrouded summits. Loei was believed to have been founded by people from the ancient Kingdom of Lan Na, which reigned for five hundred years between the thirteenth century and the eighteenth century. During that time, there was prosperity amongst Dan Kwa and the Dan Sai villages. However, the province’s remote location was a disadvantage and led to both places succumbing to crippling famines. Starvation led many of Dan Kwa and Dan Sei’s people to what is known today as Loei, subsequently proclaimed a province by King Chulalongkorn at the turn of the nineteenth century. Loei is located approximately five hundred and twenty kilometres away from Bangkok and can be travelled to in three different ways. The most common is by land, in the form of a car or a bus. If you decide to drive from Bangkok, highway number one is the point of departure, also known as Phahonyothin Road, which will then take you there. If you prefer a stress free and comfortable ride, then buses are an economical and enjoyable option. These can be both air-conditioned or not, although the former is highly recommended. Getting to Loei takes approximately ten hours by bus, so not having to worry about melting into your seat is a big plus. If you prefer a faster route, then Thailand’s low-cost carrier Nok Air is a great way to go.

The province of Loei has one of the more curious mottos out of all Thai provinces. It is extravagantly known in full as “City of the Sea of Mountains, Coldest Place in Siam, and Beautiful Flowers of the Three Seasons,” quite the boast. Loei is a genuinely wonderful paradise of mountainous ranges. Three peaks in particular are of note: the Phu Kradueng, the Phu Reua and the Phu luang all stand tall and proud above the province’s skyline and provide its distinctive identity. Another distinction of Loei is that it is one of the few places in Thailand that can reach temperatures below zero degrees Celsius. Loei’s winters have often reached the minus two mark on the thermometer, making it one of the coldest places in the kingdom. Temperatures are not freezing year-round however, far from it. Thirty degrees Celsius is commonly observed during the summer and early spring. In that sense, Loei’s climate can be said to be truly continental. If there’s something that they forgot to include in Loei’s kilometric motto, it is probably “City of the bizarre but decidedly charming cultural ghost mask festival.” It is left to the imagination whether this is because they didn’t want to scare visitors away or because their motto was already getting out of hand. Regardless, this festival is the province’s pride and joy, amassing much of its populace’s cultural essence. Covid permitting, the festival is held sometime between March and July. Once the visionaries and mediums reach consensus over a specific date, the Phi Tha Khon ghost festival extends across three entire days, during which several ceremonies take place.

Day one sees Wan Ruam, which translates to “day of assembly” during which the town’s inhabitants ask Phra U Pakut for protection from evil. Phra U Pakut is the Mun River’s spirit, over which he supposedly guards. A sequence of games and activities is held for the remainder of the day, whilst people wear extravagant and intimidating masks made from coconut leaves and rice husks. These take the shape of grinning demon-like creatures with horns and multiple facial and body ornaments. Ornaments range from the more common wooden bells to the more unorthodox wooden phalluses which are waved around displaying the blessings inscribed on them. This festival is said to have originated long ago when in one of his past lives, Buddha unexpectedly returned from a long and arduous journey that had left everybody beginning to suspect his death. The celebration upon his reappearance was said to have been so clamorous that it awoke the dead.

On day two, the Thai Rocket Festival is held. Many rockets are launched into the sky in what is seen as a merit-making ceremony. The dances and the mask parades continue throughout the day. On the final third day of the festival, all the village gathers to listen to sermons and lectures imparted by the more prominent and respected Buddhist monks. Loei is a region that, so far, hasn’t been gripped by mass tourism, even though it has much to offer. It is one of Thailand’s most sparsely populated provinces, which means that if you seek a touch of tranquillity and solitude, it is exactly the place to go. The Loei traveller will find bliss in the freshness of its mountainous breeze and the quietness of its natural forestland, and see a side of Thailand not customarily encountered. All in all, Loei is a province that is well worth the time to get there. Discovering its rich and unique culture whilst simultaneously enjoying the cleanliness and peace of its environment is something that can be truly gratifying. If time allows, schedule your visit during their Ghost Festival, you won’t find anything like it anywhere else in the country!

Founded in 1984 by Mike Simpson, over the years Simpson Marine has gone from strength to strength, cementing its position as market leader in Asia. Despite 2020 being a turbulent and challenging year for many businesses, boating became a safe haven to turn to when people’s usually busy lives and diverse leisure agendas have been

Bluegame, a new brand under the Sanlorenzo group, attracted a lot of interest in Hong Kong and elsewhere in Asia, following the arrival of the first BGX70 into Hong Kong in November. The innovative Bluegame yachts, ranging between 40 - 70 feet, complement the highly successful SX range of the parent company, Sanlorenzo. The first BG62 is also scheduled to arrive in March 2021 and is eagerly anticipated in the Hong Kong market. The Beneteau Group brands, with Beneteau and Lagoon on offer from Simpson Marine, have been equally successful with double digit sales for each brand and significant growth of the Beneteau Outboard ranges including the Antares and Flyer with flagships Antares 11 and Flyer 10 due to arrive in Hong Kong in early 2021. On the sailing side, Simpson Marine has delivered the new models from the historic Oceanis range including an all-new Oceanis Yacht 54 and Oceanis 51.1, 46.1, 40.1, 38.1 and 35.1 models and contracted two new First Yachts 53, confirming the appeal of the new cruiser racer relaunch from Beneteau. Another notable achievement was the launch of the Simpson Marine Sailing School in Thailand with eight boats from the new First line including five First 14s, two First 18s and a First 27 set to arrive in Pattaya in Spring 2021 and more bigger yachts scheduled to join the fleet later in the year.

Simpson Yacht Charter has registered unprecedented growth for day and overnight charters in Hong Kong with 600 charter days booked in the city alone in 2020 (until the new restrictive policies came to life in early December 2020) and numerous short term charters (half-day, day, weekend, long-weekend) in Thailand including Phuket and the Pattaya region, accounting together for a total of over 1000 charter days sold throughout Asia in 2020. Likewise, in Singapore, Malaysia and China, the countries with restrictive cross-border travel policies, local charters are now more in demand.

Benjamin Breyton What is your full name and age? My Name is Benjamin Breyton, and I am 31 years old. What is your current job position? I am the co-owner of the East Rooftop cocktail bar and owner of the Lucky 13 sandwich franchise in Hua Hin. Both businesses are located in soi 94. How long have you lived in Hua Hin or been coming to Hua Hin? I have been living in Hua Hin for a bit more than a year now, I moved here from Phuket after a lengthy investigation on where to invest and buy a business in Thailand. What did you know about Hua Hin before you moved here? Over my 5 years in Thailand, I always heard good things about Hua Hin, so I came to visit on weekends a few times before I decided to move here. I knew this area is quite famous as a retreat for Bangkokians, as well as famous for the kitesurf community. I myself do not kite but have been involved in water board sports for the past few years and looking forward to kiting. What do you like most about your profession? My interest for the hospitality business came quite young as i wanted to be a chef, in my young years of professional experience, I started to develop an attraction to the front side of the business, in touch with the clientele rather than in the kitchen. After a few years in restaurants, I started work as bartender in a night life venue. The combination of Entertainment, Food and Beverage is what i like most in this profession. What do you like least about your profession? Well, things are different now that I own a business, but I would

say one of the constraints of hospitality, which is also what makes this profession beautiful, is that you are always working when others are having fun, weekends, holidays, new year eve, every celebration, this is a profession that requires passion. What do you like most about Hua Hin? I very much enjoyed my life in Phuket before I moved to Hua Hin. To compare, I find Hua Hin to be peaceful, and I appreciate that. It is a close community where you can develop long term relations with locals, both Thais, and Expats. There is a lot of support and solidarity in this town, which has been a blessing during the pandemic and these difficult times we share. I haven’t yet discovered as much of the area as I would like to because of work, but everything comes in time. What is your favourite restaurant and why? I highly recommend the restaurant of V Villa resort. I’ve gotten to know Cedric, their F&B manager, over the past year. He arrived in the same period as I did. We had the pleasure to celebrate my mom’s birthday on her last visit in March, with a private dinner on the beach. It was so very well organized and I’ve been back many times since. Their food quality is very high, very fair pricing and very professional staff. I also want to mention “Little Spain,” I won’t spoil any details, just google it and make a reservation! What do you like to do in your free time and why? Meeting and hanging out with friends has been my biggest occupation besides work since I moved to Hua Hin. I’ve gotten to know so many great people over this past year and made a whole lot of new friends.

What would you recommend to new-comers to do in Hua Hin and why? Hua Hin has an incredible choice of luxury hotels, therefore a wide range of high-quality hotel restaurants. Treat yourself to a great brunch, seafood buffet, BBQ by the beach … and much more. Tell us a surprising fact that the public might not know about you? Well, this is no secret, but I adopted a Siberian Husky puppy in my first month in Thailand. She’s been with me for 4 years now, and she enjoys her life very much! Some people might think it’s too hot for a Husky in Thailand, but she was born in Phuket, and her favourite thing is taking a nap in the sun at 2pm by the swimming pool! What is the most outlandish thing you have ever done and why? Back when I lived in New Caledonia (French island in South Pacific), my favourite activity was spearfishing. I had the chance to dive and fish on the second biggest reef eco-system after Australia’s great reef barrier. Locals with many years of experience took me fishing to the edge of the lagoon barrier where you can barely see the coast anymore, diving with all sorts of sharks and other marine animals. It is an experience both frightening and exciting. The water is so clear, and diving in apnea, in its immensity, is literally breath-taking !

oday half of the world lives in cities, and the United Nations projects that by 2050 it will be closer to 70%. There is a belief that the time needed to scale the ground infrastructure, roads, and bridges is too long and costly. One way around this conundrum is to build safe, high-performance electric aircraft with almost infinite scaling potential. Many believe we are at the

start of a new golden age of aviation, one which we haven’t seen in 100 years. In 2020 almost a billion dollars was spent on research and development towards electric flight, and this year another billion is expected to go towards the effort. And why not? A report by Morgan Stanley estimates the Electric Aircraft market will be worth $1.5 trillion by 2040.

Archer, a California-based company, is working towards building the world’s first all-electric airline/taxi utilizing vertical takeoff and landing vehicles with the goal of bringing new efficiencies to air travel for short-route flights. One stumbling block for startups in aviation – electric or otherwise – has always been access to a capital-efficient supply chain, the kind that gives established durable goods manufacturers their competitive edge. Building such a supply chain is a decades-long process, and manufacturing composites at scale is difficult under the best circumstances. To that end, the company has recently partnered with Fiat Chrysler Automobiles (FCA), entering into a supply chain agreement that enables Archer to benefit from FCA’s advanced composite material expertise and its low-priced supply logistics. Through this collaboration, Archer and FCA will work together to significantly decrease the cost of production while leveraging FCA’s manufacturing know-how against Archer’s startup nimbleness.

“Electrification within the transportation sector, whether on roads or in the air, is the future, and with any new and rapidly developing technology, scale is important,” said Doug Ostermann, Vice President and Head of Global Business Development of FCA. “Our partnership with Archer has mutual benefits and will enable innovative, environmentally friendly transportation solutions to be brought to market at an accelerated pace.” The partnership will prove key to Archer’s bid to manufacture high-volume, composite, electric vertical takeoff and landing (eVTOL) aircraft. Archer says their all-electric aircraft will be capable of traveling distances of up to 60 miles at 150 mph. The beauty of eVTOL is that the electric motors allow an aircraft to land like a helicopter and cruise like a plane, quietly. Reducing noise and cost will help bring urban air mobility to more people in more places while being carbon-zero.

“We’ve been hyper-focused on a customer-first approach to vehicle design and aircraft operations,” says Brett Adcock, Co-Founder & Co-CEO of Archer. “Now we are working with a seasoned, industry-leading automotive partner to leverage cost benefits and experience that will allow Archer to produce thousands of aircraft reliably and affordably every single year.” Other players in the increasingly competitive space include Blade Urban Air Mobility and Lilium. Lilium GmbH is a Germany-based startup co-founded in 2015. Initial funding came from the European Space Agency, and the European Union’s Climate-KIC program, Europe’s largest public-private innovation partnership focused on climate innovation to mitigate and adapt to climate change. On May 4th, 2019, Lilium had its first flight of an untethered and unmanned five-seater Lilium Jet at the Oberpfaffenhofen airport in Munich. The full-scale prototype is powered by 36 all-electric ducted fans, which allows for a vertical takeoff and landing with an efficient horizontal flight.

Another company in the electric aviation sector is MagniX, but they are in it with a twist. The company is developing technology to convert existing aircraft into electric vehicles. Based in Washington State, the firm recently consolidated its operations to a new 40,000 square-foot facility with a mission of all-electric aviation for planes carrying up to 40 passengers.

MagniX has already retrofit small turbine-engine airplanes with its electric motors. The Pacific Northwest, home to aviation giant Boeing, has long been a hub of aviation innovation. Vancouver-based Harbour Air, North America’s largest seaplane airline, is working with MagniX on an all-electric fleet, a move that’s being watched as a bellwether in the sector.

“In 2018, 75 percent of worldwide airline flights were 1,000 miles or less in range. With MagniX’s new propulsion systems coupled with emerging battery capabilities, we see tremendous potential for electric aviation to transform this heavily trafficked ‘middle mile’ range,” Roei Ganzarski, CEO of MagniX, said.

The news from Archer Lilium, MagniX, and others is indicative of the activity in electric aviation development, and this technology is likely to reach commercialization well within the decade.
