Dear Reader Welcome to Issue 8, Volume 4. Last year we traveled to the Ocean Marina Pattaya Boat show to report first hand on this yachting spectacle. It was a fun weekend on the water and this month on page 40 we get you prepped for this year’s boat show happening November 24th thru the 27th. Pull out your boat shoes and get ready to board. Next up we take you Bangkok for the Mr. National Thailand 2016 Competition. Hosted and organized by the owners of this magazine, HOT Hua Hin Co. Ltd, the pageant saw 20 candidates vying for six titles to represent Thailand on the International stage in competitions being held in Malaysia, the Philippine’s and Myanmar. Take a front row seat on page 44 and find out who the winners were. I’ve said it time and time again, one of the great things about living where we do is that in an hour or two you can be in so many great and interesting destinations. This month, case in point, we take you to the island of Penang Malaysia. Then I moved to Bangkok for four years. During that period, I regularly visit Hua Hin, at least once a month, since I have a home here in Hua Hin. WHAT DID YOU KNOW ABOUT HUA HIN BEFORE YOU MOVED HERE? I knew that it is a quiet and charming city with a very beautiful and peaceful beach, not too far from Bangkok. I like spending a quality time with my family, especially my little, 15-month-old daughter, Kathy. I enjoy taking them out for local sightseeing. n December of 2014 we dined at the Black Mountain Gourmet Restaurant and afterwards I proclaimed it was the best meal I’ve ever been served in Hua Hin. Sadly, this high end eatery has closed but the good news is that their Chef, Chef Luigi Sica, responsible for the masterpieces coming out of the kitchen, has relocated to the La Grappa Ristorante nearby. The venerable La Grappa first opened its doors in 2003 and has consistently been mentioned as one of the very top restaurants in Hua Hin ever since. We first featured La Grappa in an article that appeared in our November 2014 issue that ran with the title “La Grappa, Obscenely Good Food”, and it was. But, with Chef Luigi creating the plates leaving the kitchen, “obscene” has transcended to a new level. Luigi is just 35 and comes from the small town of Como in northern Italy, near the lake by the same name, made famous by its Hollywood resident George Clooney. Luigi says he was born with the passion of cooking and that when he cooks something he always uses his heart. He says that is the most important part for him, otherwise his preparations would lack taste, flavor and aspect. The night we visited La Grappa, Chef Luigi had prepared a Degustation dinner for us and we also ordered a few additional items off of the menu for a total of nine courses. Degustation is a French culinary term that refers to sampling an array of small dishes served one after the other. In order of table appearance, we were served; A selection of raw and cooked marinated seafood. A pumpkin cream soup with Gorgonzola cheese foam and crumble of Disaronno amaretto. Homemade veal ravioli with Parmesan cheese fondue, shaved of black truffle and Alba white truffle foam. A spaghetti square with White Sea bass ragout, Hua Hin rock lobster and candied lemon skin. A seabass fillet baked Mediterranean style served with cherry tomatoes, artichokes, black olives and mixed vegetables. Australian black angus tenderloin Rossini style with fresh baby spinach, roasted potatoes and Madeira wine truffle sauce Chocolate lava cake with a decadent creamy heart served with white coffee Ice cream and crispy caramelized almonds. Fan of cooked pears with cinnamon Ice cream and Chianti red wine reduction. Rum babà served with vanilla cream and fresh strawberries. All of the dishes above are from La

Grappa’s ala carte’ menu but can also be served degustation style with a little advanced notice. Degustation menus are a popular option in restaurants today, particularly high-caliber establishments, allowing the chef to showcase his or her signature dishes and techniques. A degustation meal often takes place over the course of several hours and ours certainly did. Our reservation was for 7pm and it was 10:30 when we finally said good-bye to Luigi after a good-night limoncello. Although we certainly had no room for pizza, we’ll be back to La Grappa to try theirs. Luigi says he makes good pizza in La Grappa’s wood fired oven using only top quality ingredients from Italy. Luigi says he would “like to invite all to La Grappa who have never come to taste my culinary specialties,” and after spending three and a half hours thoroughly enjoying each course that came out of his kitchen we highly recommend that you do. HOT AROUND HUA HIN 5 COURSE WINE PAIRING DINNER Hua Hin’s RED Piano restaurant was the place to be on Friday night July 22nd when they held their second wine dinner. The sold out affair paired chef Ian Jones masterful cooking with the Chilean Wines of Casillero Del Diablo. My personal experience with wine dinners is that there are usually some hits that are served with a few misses but Chef Ian was firing on all cylinders and those in attendance were loving what was coming out of his kitchen. Civility was in the air as a glass of sparkling Casillero Del Diablo Devil’s Brut was served to everyone walking across the threshold and then it was time for the feast to begin. Chef Ian started us off with a White Asparagus and Goats cheese soup with a dash of truffle oil, paired with Casillero Del Diablo’s Sauvignon Blanc 2013. Normally, I am not a soup person but this was really flavorful and something I would definitely order again.

In honor of Hua Hin’s Beachyness, it was seafood that next made an appearance. Course two was a combination of Chilled Fin Claire Oysters along with Smoked Salmon with a horseradish cream sauce. A Casillero Del Diablo Chardonnay 2013 accompanied. Moving inland, Chef Ian graced us with a Duck and Chantrel Mushroom Risotto served up with a CDD CDD Pinot Noir 2012 which was followed by the main entrée, a Roasted Black Angus Tenderloin with Sweet and Sour Caponata along with a Fennel Salad, paired to a CDD Cabernet Sauvignon 2013. Thinking I could not eat anything more, desert was placed before me. Thankfully it was a light platter of Tallaggio and Brie Cheese with a Pineapple Chutney and a final pour of a CDD Diablo Merlot 2013. HOT AROUND HUA HIN XI'AN FEAST AT INAZIA Xi’an is one of China’s oldest cities and is the oldest of the four great ancient capitals of China. It is the starting point of the Silk Road and home to the famous Terracotta Army of Emperor Qin Shi Huang. On July 8, 2016, the Sheraton Hua Hin Resort & Spa invited Master Chef Charles & Master Chef Alex from the city’s most renowned 5-star hotel, The Westin XI’AN to prepare a Xi’an feast for its special guests. The Chef pair prepared Biang Biang noodles and many more delicious cuisines at the Sheraton’s Award winning InAzia Restaurant. Chef Charles and Chef Alex created the atmosphere of an ordinary Chinese restaurant with the slight sound of Chinese melodies and the best Chinese cuisines the Westin XI’AN has to offer. In addition to the aforementioned Biang Biang noodles; one of the ten strange wonders in Shaanxi province, guests were also served Liang Pi; rice noodles combined with great chili oil and vinegar, A highlight of the evening was the Rou Jia Mo, XI’AN’s specialty Chinese hamburger. Rou Jia Mo, means "meat burger" or "meat sandwich," and is a Chinese street food originating from the Shaanxi Province which is now widely consumed all over China. It has been noted that this meat filled-bun recipe dates back to the Qin Dynasty, possibly making the Chinese Rou Jia Mo the world’s oldest hamburger or sandwich.

Other delicious dishes prepared included, Chilled Chang’an Sweet & Sour Fish Slice, Chinese Seafood Hot & Sour Soup, Braised Chicken, Fried Mutton with Cumin, Ordinary Chang’an Style Fish and Mixed Fruit Coconut Sago. Well satisfied guests of the Sheraton’s special dinner commented that they felt like they were actually sitting and eating in China. HOT AROUND HUA HIN SWISS NATIONAL DAY AT THE MARRIOTT HUA HIN RESORT The Federal Charter (Bundesbrief) of 1291 opens with the words “In the year of the lord 1291, at the beginning of the month of August”. The Bundesbrief document unified three cantons in the area of modern-day Switzerland and is considered one of the country's most important founding documents. There are celebrations in communities all around Switzerland. In most cases, the official ceremonies include a prayer and the singing of the Swiss national anthem (the Schweizerpsalm). At 8:00 p.m. church bells ring throughout the country. The Bundesfeier is a public holiday in all of Switzerland. Offices, banks, schools and businesses are closed. Public transport runs on a reduced schedule. Many may not know, but Hua Hin has a huge Swiss Community and they weren’t about to let the 725th Swiss National Day go unnoticed. Although officially on August 1st, Swiss National Day was celebrated in Hua Hin on August 2nd to accommodate the schedule of Switzerland’s Ambassador to Thailand, His Excellency Ivo Sieber. Two hundred and six Swiss and friends of Switzerland, including 43 Rotarian’s, attended a raucous party held in the ballroom of the Marriott Hua Hin Resort. Organized by the Grande Dame

of Hua Hin herself, Khun Lizzy, along with the Marriott Hua Hin Resort, it was a night filled with great friendship, food, entertainment and an abundance of wine. The top VIP was of course the Swiss Ambassador who only the day before hosted a large Swiss National Day party at his embassy in Bangkok. Other guests of note included Khun Suvit Reanroogruang Past President of the Rotary Club of Hua Hin and Advisor to the Mayor, Mr. Andrew Elliot, Head of School, Da Vinci International School, Mr. Ari Parnanen, Public Relations, Da Vinci International School and Michael Kehnscherper, Board of the Tourism Association of Prachuap Khiri Khan (TAP) as well as the translator for the evening translating Thai, English and German. Marriott G.M. Goetz Bauer, a proud Swiss himself, was away on holiday so the Marriott’s Director of Rooms, Alexander Schoell took to the podium to officially welcome all of the guests. The Marriott’s P.R. Executive, “Par Excellence,” Ms. Gina Sansoni, also Swiss, did her best to make sure everyone was enjoying themselves and felt welcome. You can bet that the 726th Swiss National Day will be celebrated in Hua Hin next year and if it is even half as much fun as this year’s, you’ll want to be sure to mark it on your social calendar.

THE MED COMES TO THE INTERCONTINENAL HUA HIN RESORT’S AZURE RESTAURANT The InterContinental Hua Hin Resort’s Executive Chef, Riccardo Ioanna, is working his magic once again. We first profiled Riccardo back in April when he was fairly new in his position. Before arriving in Hua Hin Riccardo was at the InterContinental Resort in Bali and prior to that he was Chef on the World Cruise ship, the largest residential cruise ship in the world.

WHY YOUTH FITNESS? Youth Fitness and a healthy lifestyle. It is important to teach children and young adults the benefits of exercise and leading an active life. In my opinion the number one way to tackle this problem, is to lead by example. To tell a child to go out and play while you are watching TV is not sending the right message. Leading an active lifestyle as a family can be fun, healthy and rewarding. This passion and enjoyment for fitness should start at home at an early age. As adults we are all responsible for promoting youth fitness, to educate our children and teenagers on the benefits of leading a healthy active lifestyle. Youth Fitness plays a very important role in the physical development of children. The percentage of children that are considered unfit and obese by clinical terms is staggering. The childhood obesity rate has tripled in the last 30 years, but advocating an active lifestyle and developing healthy eating habits at an early age will help combat this trend and create healthy, fit children. It is our role as parents, teachers and coaches to promote the Student Athlete,

In addition to regular daily activity and Healthy Eating, children should also be introduced to regular exercise. If your goal is to become a professional tennis player, then you will have to spend thousands of hours on and off the court to reach a really high level. Here are 3 of the most common mistakes people do when starting to play tennis and how to correct them: 1. Play once per year with and walk away thinking tennis is too hard.

Correction: Take a couple of lessons to learn the fundamentals of the game. You will feel better going onto the court and will be able to enjoy playing a lot more. 2. Trying to hit every ball as hard as they can!! Correction: Slow down and try to make every ball in, no matter how slow the ball is or how your swing looks like. What to do if you are a Mosquito Magnet?

hailand’s wonderful climate is perfect for outdoor entertainment, especially in the evenings as temperatures cool. Outside BBQ’s and pool parties are one of Thailand’s many pleasures. Unfortunately, mosquitoes can play havoc with your outdoor party plans. Web MD (www.webmd.com), a fantastic resource for pretty much everything that has to do with the human body has some interesting insight’s regarding those pesky pests and why they are attracted to some people and not others. According to experts, mosquitoes do exhibit blood-sucking preferences. "One in 10 people are highly attractive to mosquitoes," reports Jerry Butler, PhD, professor emeritus at the University of Florida. But it's not dinner they're sucking out of you. Female mosquitoes -males do not bite people -- need human blood to develop fertile eggs. And apparently, not just anyone's will do. Genetics accounts for a whopping 85% of our susceptibility to mosquito bites. Researchers have also identified certain elements of our body chemistry

that, when found in excess on the skin's surface, make mosquitoes swarm closer. There are a number of chemical based sprays that do a medium to good job of keeping mosquito’s at bay, but not everyone likes the idea of slathering their unprotected skin with repellant products, not knowing the long term affects they might have. Ocean Marina Pattaya Boat Show Returns For Its 5th Year

ith the largest display of boats and lifestyle products yet, the Ocean Marina Pattaya Boat Show returns for a fifth year. Running from November 24th thru the 27th, the Boat Show will once again be a catalyst for the Gulf of Thailand’s marine industry, showcasing not only Ocean Marina’s onshore facilities but also offshore cruising grounds worldwide. “Since launching Ocean Marina Pattaya Boat Show five years ago we have seen considerable growth in marine tourism and boat use in the Gulf of Thailand. n July 28th, HOT Hua Hin Co. Ltd., the parent company of this magazine, presented their first Mr. National Thailand pageant which was held in the grand ballroom of the Westin Grande Sukhumvit Hotel in Bangkok. Close to 400 people joined in this inaugural event including local, national

and international media. Twenty men competed for six titles; Mister Continental Tourism Thailand 2016, Mister United Continents Thailand 2017, Mister National Thailand 2016, Mister Amity International Thailand 2016, Mister Tourism World Thailand 2016 and Mister Southeast Asian Thailand 2016. From the evening competition, six

winners were picked to represent Thailand in the six aforementioned international male pageants that will be held in Malaysia, the Philippine’s and Myanmar in 2016 and 2017. Awards were also given at the competition for the most photogenic and congenial. The honorary chairwoman of the event was well known Thai celebrity, socialite


and businesswoman Khun Sumanee Guna Kasem who spoke to the audience prior to the start of the competition. Ten celebrity judges oversaw the competition which included socialite/businesswoman Khun Vachini Krairiksh Venvell, former Miss Thailand Universe, Ms. Chutima Durongthej, Chalomjit Chankate, former runner-up in the Miss Thailand World competition and Oneruk “K” Sittiwong,

famous Thai shoe designer and the only Thai to win the Prestigious Jimmy Choo Award. The competition actually started on Sunday July 24th when all 20 contestants boarded a bus in Bangkok and traveled to Khao Yai for several days’ jam packed with events. Contestants enjoyed photoshoots at different Khao Yao

locations, cooking classes and fitness. Returning to Bangkok on the 26th the men had two days of fittings and rehearsal prior to the Thursday night competition. Similar in scope and style as the much more well-known female beauty contests, the Mr. National Thailand competition started with a runway parade where

each candidate was introduced with all dressed in casual sportswear. The catcalls from the women in the audience went into a high fever pitch as the men next came out in their swimsuits, all designed by Franco, another sponsor for the evening. One of the many highlights of the evening came when Mr. Wichaya “Tack� Wongsuriyan from the Voice Thailand came out next and performed for the capacity crowd, singing several songs as the men came out again, this time shirtless, wearing sport coats and slack or shorts. One of the tenants of the pageant was that contestants must speak English well and present themselves with poise as representatives of Thailand to the various international pageants. This was put to the test when the judges and audience got to hear each contestant speak in the next segment introducing themselves and telling the the audience their thoughts on what representing the New Gen of the Future was all about, The New Gen of the Future being the motto of the event. It was then time for the Judges to go to work and narrow the field from 20 to 10 Candidates. Once done, the 10 contestants were brought back on stage and each asked a different question that they had to immediately answer off the top of their head. And with that it was time for the judges to go to work and decide who the winners would be.

For that reason, you often hear it being called the City of George Town, especially among the locals. George Town is located on a cape to the northeast of the island. The very tip of the cape is the site of the earliest British settlement, when the island was opened as the first British trading port at the end of the 18th century. Today a lasting reminder of British occupation stands there in the form of Fort Cornwallis, one of the must-sees in the island. History shapes this state so much, that even the name "Penang" itself comes from the colonial days while under the British Empire until 1957. The pronunciation of the original Malay name of the island would be Pulau Pinang, but this name has almost been erased and it no longer applies since today even the locals still call it Penang while speaking in English. The area within a radius of about a mile from Fort Cornwallis forms the famous old quarters of George Town, what today can be seen as the George Town UNESCO World Heritage Site. This area holds some of the oldest and most historically significant structures on Penang Island. In this zone one can find whitewashed colonial buildings alongside gleaming temples, exotic mosques, old churches, intricate alleys that will please wanderers and all the popular sites that most tourists come to visit during their stay. T

here are dinner courses that mark a before and an after in the life of a person. It is easy nowadays to find a Japanese restaurant at a stone’s throw away from any one point in Bangkok, which at times leads us to undervalue the astounding delicacy that is a simple looking meal from the nation of Nippon. But there is one place at the very heart of Bangkok’s centre, tucked up in what at first sight seems an unassuming eighth floor of the Westin Hotel, which holds an ambassadorial role in the representation of the culinary tradition from the Land of the Rising Sun. It goes by the name of Kisso, and the HOT Magazine team had the marvellous honour of being treated to a true spectacle of the palate during the evening we spent there. As one enters Kisso, up its wide and veering staircase, the realisation that it is hiding something special is apparent. Classically themed, with beautifully sharp yet discrete colours, soothing Japanese music, an open kitchen and aesthetically rounded lamps, it harbours an undeniable class, comforting the guest before he has had any food at all. As one sits down, before the craftily folded serviettes, the utmost trademark notion of Japanese care commences: waitresses with a modern-styled attire hinting a contemporary kimono design, are quick to bring you a hot towel, along with a drinks menu. We started in no other way than with a classic Asahi beer, which would be a great companion for the meals that came subsequently. The first to arrive was the Japanese Wagyu Shabu-Shabu Salad. Beautifully garnished, it had a flavourful hint of sesame, which accompanied the wholesome combination of the cherry tomatoes and the rockets, which complemented the smokiness of the beef to perfection. With it came the Avocado and Tossed Prawns with Tobiko Mayonnaise, the smooth texture of which was enhanced by the marvellously blended flavour of the smoky prawns and the soft avocado. Mediated by the mayonnaise and the touch of spice, it was a sign of many things to come. Next came the Salmon Bento Box: A Kisso popular, it took little to find out why. The freshness of the salmon was incomparable. Time and again we are accustomed to semi-fresh or pseudoprototypes of salmon, and while this settles for standard after some time, it also shows how categorically superior the one at Kisso is. Tender, meaty, aromatic, simple, yet entirely distinct, its different styles are testimony to how premium quality salmon is a meal fit for kings. Variations of it were caviartopped, infused in a tangy ceviche-like marinade, garnished with lemon or grilled, all of which were impeccable. The sashimi set followed, part of the Kaiseki

Menu course, with an assortment of different types of fish and with a quality that astounded taste buds, and they all melted on the palate, with the tuna being the pearl highlight of them all. We were then treated to a dish of Satsuma Beef and Foie Gras Sushi Rolls, and it wasn’t as delicious as it sounds – it was better. Slightly spicy, intense in flavour, combining hints of salmon and caviar with its distinct meaty flavour of foie gras and a dash of serenity from the wasabi, we were in true awe at this one. The dishes kept coming, and they kept besting themselves at every given chance. The tempura was one to relish, and the Unagi No Sumibi Yaki to Foie Gras Balsamic Teriyaki Sauce was as complex to the palate as it reads, a true delight: beautifully cooked, incredibly tender, sweet, aromatic, with a distinct intensity of the teriyaki sauce and a soft finish, it combined to perfection with the asparagus, and we couldn’t get enough of it. Nor could we keep our chopsticks off the Grilled Snow Fish, which captivated our attention for looking so simple but amassing such a rich flavourful kick. The freshness was, as per protocol, to be duly noted, and the development of its beautiful taste along with its subtle finish was a highlight. Lastly came the highlight of the night: a searing flat black stone was placed as a table centrepiece, attracting all of our attentions to the middle. As we began accommodating the strips of Wagyu Beef on the sizzling platform, the mere sound made our mouths salivate. A quick double turn of the meat and the meal was ready: it melted on the palate completely effortlessly, whilst it released the grandest of smoky aromas we had known. Tender, juicy, with a full display of quality and a marvellous subtle ending, it reminded us why the Japanese hold this to such esteem.

We capped off with some dessert. The Plum Wine Jelly, the Homemade Green Tea Ice Cream and the Tiramisu Ice Cream were truly a stupendous manner of ending the evening. The first was cleansing, citrusy, with a hint of grape and a refreshing taste of plum, adorned with the most curious of semi-liquid textures. The Green Tea Ice Cream was equally marvellous, intense with an emanating flavour of matcha. But the highlight of this was without a doubt the Tiramisu Ice Cream. With a passionate and wholesome flavour culminating in a splendid coffee taste and a beautifully formed chocolate dough core, it was truly a marvellous way to end an enlightening evening. Kisso really demonstrated why it holds Bangkok’s Gold Standard when it comes to Japanese food. A meal at this restaurant is an ultimate highlight, no matter what else happens that day. Jim Thompson Museum

I

f there is a man who made himself a name amongst Thailand’s (and Asia’s) most loved Farangs, it is without a doubt Mr. James Harrison Wilson Thompson, best known to the world as Jim Thompson. American by birth, from the hometown of Greenville, Delaware, he was born in 1906 as the youngest amongst five siblings. Having attended the prestigious Princeton University, he completed a significant

amount of his degree in architecture, which he did not complete due to his feebleness in calculus. Nonetheless, Thompson remained a passionate architect, which would be reflected later in his life. For the moment, he was content with sitting on the board of the Ballet Russe de Monte Carlo, until the Second World War erupted, something that would forever change his life. Whilst

in a military outpost in Fort Monroe, Virginia, Thompson met a Second Lieutenant from the US Military Academy who encouraged him to join the Office of Strategic Services (OSS), which would in time become the Central Intelligence Agency (CIA). Sent to tour much of Northern Africa and Europe, Thompson was transferred to Ceylon (modern day Sri Lanka) late into WWII, and was assigned as a mission to aid the


liberation of Thailand, which was then under Japanese occupation. Japanese surrender took Thompson to the land of Smiles, which led him to set up an OSS office in Bangkok. Thomson’s days in the army were over a year later, from which he sought to be discharged in order to return to Bangkok. As he did, he became part of the group of investors who subsequently bought the Oriental Hotel. But disagreements with

the group saw him beginning to work on silk project, in which he bought eighteen percent of the Thai Silk Company Limited, valued then at 25,000 dollars. In 1951, the fabrics of his firm were used to make the garments for the famous film The King and I, which bolstered him into prosperity. His idea of allowing the many people he employed to work from home, lifted thousands of Thais out of poverty, women in particular, who in

this way could dedicate time in being the main wage earners. For his contribution to the development of the Thai Silk industry, Jim Thompson was awarded the Order of the White Elephant, a decoration bestowed upon foreigners for having rendered exceptional service to Thailand. Thompson's success story in Thailand has become one of the most popular post-war legends of Asia.

Still passionate about architecture, he went about constructing his own house, bringing authentic and original materials from around the country, in a quest for originality which led him to purchase many old and valuable antiques, which today continue to grace his museumturned house. The sculptures in the house are Southeast Asian, principally from Thailand and Cambodia, with a few pieces from Burma. The collection consists of Buddha images and fragments covering fourteen centuries and contains some of the finest pieces reflecting the principal styles in Southeast Asian art. At the heart of Bangkok’s National Stadium, a few hundred metres up the street from the famous MBK shopping mall and the Bangkok Art and Culture Centre, it is today a gallery, art shop, restaurant, museum and hangout place situated next to the river. Beautifully crafted and well designed, guided tours of Thompson’s legacy are organised both in English and in Thai. In 1967, Jim Thompson went on holiday with friends to the Cameron Highlands in Malaysia. There he set out for a walk in the surrounding jungle but never returned. Thus began the Jim Thompson legend. Jim was never found, nor were any traces of his body. Nobody heard of him, nobody had seen him and no one has since. Rumour has it that his past in the OSS had to do with it, but the truth seems poised to remain an enigma. A large international search and rescue operation was put underway in vain, before he was declared deceased in absentia by a Thai court seven years later. He would have turned 110 this year. His legacy remains and his home is worth a visit. If you haven’t yet, you definitely must.
