A

friend of mine once told me that if you have the luxury to live anywhere you want you should always choose a resort city. He himself, an avid skier chose to live in Vail Colorado, a famous ski resort city in the States.

For me, after living in Hua Hin for many years I couldn’t agree with him more. There are constantly so many exciting things to do, always interesting places to go and new restaurants to try. Lather on some sun screen, turn to page 36 and see why we think living in Hua Hin is like being on one continual holiday. There is almost nothing better than a good night’s sleep, you can’t think well, love well or be well without it. With a good night’s sleep you wake up full of vim and vigor, energized and ready to start a brand new day. Sometimes though, late night anxiety brought on by perceived or real issues in your life can make that good night’s sleep an almost impossibility. If night time stress is keeping you awake, turn to page 40 where we bring you simple steps to a better night’s sleep. Our Let’s Go column this month takes us to the island of Ko Kret. This island was created during the reign of King Taisra in 1722. Taisra wanted a faster water transportation route to improve his Kingdom’s economy. To solve the problem, he brought the Mon hilltribe people from Northern Thailand to dig a canal, turning a peninsula into an island and thus enabling a quicker trade route. Ko Kret today is another world compared to Bangkok which is less than an hour away. The island retains the air of a rustic village, with wooden shacks propped against palm trees and the occasional dilapidated temple slowly crumbling. It’s a great place to wander around the streets and chill out at the many

HOT AROUND HUA HIN Fly Beyond Tonight Lands In Hua Hin The Fly Beyond Tonight Festival took place in Hua Hin over the weekend of September 28th to 30th. The 3-day event was staged at the Vana Nava Water Park and the InterContinental Hua Hin Resort with the late night after party’s happening at Vana Nava Sky located on the top floor of the Holiday Inn Resort Vana Nava Hua Hin. One of Thailand’s favorite bands Thaitanium performed Friday night with the rest of the entertainment over the 3 nights performed by wellknown DJ musicians flown in from around the world. The 3-day festival was sponsored by Grey Goose Vodka and celebrated people, fashion and Music. On Saturday night September 29th a beachfront fashion show was held in front of the InterContinental with fashions presented by Milin & 612.

The Time Is ‘Nao’ For New Dining Horizons At Intercontinental Hua Hin Resort The year 2018 is a time of change for food and drink venues at InterContinental Hua Hin Resort. Restaurants and bars at the seaside hotel are seeing the introduction of new concepts as well as updated settings and surroundings. Big changes require big talent, and in that light the resort’s director of food and beverage, Naowarat Prathet, has everything needed to put all venues on a course towards new dining horizons. Nicknamed ‘Nao’, the Thai native has been F&B director at the resort since March 2018. In the preceding months, she’s had chance to get used to the waters and thus ensure smooth sailing as changes are implemented. Nao’s background likewise will help her maintain a steady course in the months ahead. She brings to the director’s job comprehensive work experience in all facets of food and beverage operation at major luxury properties in Bangkok, Koh Samui and right here in Hua Hin. Her work roles have encompassed diverse functions related to restaurant and event management, along with supervising day-to-day operations. Nao’s international experience includes an internship at a Thai restaurant in the USA and an assistant F&B director position for a Dubai five-star hotel. Naowarat Prathet’s knowledge, skills and local expertise will be especially advantageous at Azure Restaurant & Bar. The beachside venue is undertaking a major reconceptualisation emphasising local community traditions, for instance new menus featuring seafood from surrounding fishing villages, locally grown fruits and vegetables, as well as premium meats produced at nearby farms.

Mövenpick Asara Special Chocolate Themed Dinner On October 2 I arrived at the Mövenpick Asara Resort and Spa about 5pm. My first impression, “what a tropical hideaway”. After being escorted toward the beach restaurant I met up with Eric Furer, the hotel’s Food and Beverage Manager and we were served a wonderful sparkling wine. According to Mr. Furer, every Mövenpick hotel around the world was hosting the same kind of event. The conversation turned to the dinner ahead and I was told that the feature ingredient tonight would be chocolate. I have to admit, I was temporarily taken aback. My first thought was, “Seven courses of fondue”? I would be proven so wrong. We were seated alongside Sven Walter, General Manager. Then the fun started. Executive Chef, Dennis Barton, was introduced and he explained the upcoming feast. Each dish would include chocolate, in one form or another. It could be an ingredient in a sauce, sprinkled on top, or cooked into the serving.

A large, round loaf of country bread was served, along with a chocolate butter. The chocolate was bitter, with a slightly salty aspect to it. The entire table’s reaction was how nicely it paired up with the bread The first course was Tomato Tarte Tatin, a savory combination of tomatoes, goat’s cheeses, basil, coffee beans, and white chocolate. This was paired with a Mövenpick Pinot Grigio. Next came the “Beetroot Salmon”. It was a sight to behold. The salmon was marinated in a combination of beetroot, herbs, and citrus fruit. Root vegetables were arranged on a plate with the salmon on top. Remaining vegetables were garnished over the salmon. A slightly bitter chocolate was sprinkled on top. A slight drizzle of olive was also used. Penfolds Koonunga Hill Cabernet Sauvignon was served. Seabass and Green Tea was next. This fillet of sea bass was exquisitely cooked, then served on a bed of sliced potatoes. A green tea beurre blanc topped the fish. And, we are not done yet. A

topping of Maple Chocolate, a variety of nuts, chili flakes, and breadcrumbs crowned this masterpiece. My favorite of the evening was next, Lamb Shank and Pesto. A hazelnut chocolate was mixed into a pesto sauce. The meat was divinely tender. This was served with a potato gratin as well as glazed vegetables. For dessert, Pauve au Chocolate and Ice Milk. The chocolate in this case was raw cocoa, made into a Matcha powder. Pecans were added. Before each plate was served, our Executive Chef explained all the nuances of the chocolate used, as well as some of the cooking techniques. The evening wound down and we were given some chocolates and a cookbook as parting gifts. After scanning the recipes, which sometimes numbered up to 30 ingredients, I can say that this was an event unmatched in my culinary experiences. By Andy Klukowski

Saké Extraordinaire @ Sheraton Hua Hin Resort & Spa The ancient Japanese rice-wine has been reinvented. New varieties of the ancient tipple now have Sakés going head-to-head with fine wines – and poised to be the ‘Next Big Thing’ complementing haute cuisine. The Sheraton Hua Hin Resort & Spa’s premium location – nestled gulfside on the beach just north of Hua Hin International Airport – is well known to travellers using the main Petchkasem thoroughfare. Perhaps less universally discovered is the Sheraton’s classy, InAzia Restaurant, renowned for the very best of Asia cuisine as well as for its wine selection. (InAzia’s impressive wine cellar, maintained at perfect temperatures for serving, includes a selection of the planet’s trophy wines among its comprehensive selection.) Discerning Hua Hin gastronomes were treated to meticulously presented, exquisite dishes inspired by InAzia’s Chef Jakub Mares of the Sheraton, working with Chef Chatree Panglip of Kisso Japanese Restaurant in Bangkok. And these Chefs’ oeuvres were each artfully matched with a novel, impressive modern saké. Each of these surprises was introduced by the very knowledgeable, Naoko Saito, Japanese

product devoid of the traditional ‘sake’ aroma.)

Arriving guests were greeted with the traditional flute of bubbly; in this instance containing refreshing Kariho Kassei Junmai Rokushu. This awardwinning sparkling Sake from Akito (Northern Japan) has a fruity nose with a hint of banana, a dry finish, and was accompanied by meticulously prepared canapés.

Next, an exquisite selection of Sashimi - Yellow Tail, Tuna Belly, Salmon & Sweet Prawn - accompanied Bijofu Junrai Junmai Ginjo TAMA label, also served chilled in a whitewine glass featuring its aromatics. From Kochi Prefecture in the south renowned for its soft water, this saké is also from highly polished (to 55%) rice. Its fragrant nose with a hint of citrus, refreshing taste and subtle acidity, would confuse many white-wine lovers in a blind taste-test.

Once seated, diners enjoyed four diverse courses, each complemented with a different variety of sake. The meal was followed by dessert and saké-based aperitif. First up was Kani Avocado Salad; a Blue Crab, Salmon Caviar and Avocado dish, accompanied by a stunning, aromatic beverage, served chilled in a white-wine style glass. From the south of Japan, Dassai Junmai Daiginjo Migake Sanwari Kyubu surprises with its very fruity / melon bouquet, reminiscent of aromatic pinot gris. (The ‘junmai daiginjo’ designation signifies this sake is made from exceedingly highly polished rice – in this instance until only 39% of the original grain remained – a process leaving the

A following serving of Braised Kurobota Pork Belly, within a tofu and potato wrapper, in Black Soy Sauce, delighted diners. Delight was matched by the accompanying Masumi Junmai Okuden Kanzukuri, again served chilled in a wine glass. Befittingly a little earthier, mush roomy nose, and with a spicier complexity, this famous ‘Junmai’ sake from the mountainous central prefecture of Nagano, carries the ‘mirror of truth’ moniker.

The final ‘main’ dish was an irresistible, Tajima Wagyu Beef Rib Eye, served with Garlic Fried Rice in Sesame Emulsion. This was accompanied by both chilled and warmed versions of the same Kirinzan Honjozo, ‘Black Bottle’ saké. A more traditional sake, with distinct rice bouquet and a hint of cherry blossom. ‘Honjozo’ signified the brew is a little fortified (15% alc). A more orthodox sake, dry, smooth and savory – characteristics most evident in the warmed version. Yet another surprise lay in store with the dessert. The delicate array of watermelon and Honeydew Melon accompanied by Umeshu Plum Wine Jelly, was served with the unique, Kozaemon Shiroku Junmai Kabosu liqueur. Served very chilled, this Limoncello lookalike, is actually a true sake (5% alc), infused with the unforgettable flavour and acidity imparted by Japan’s Kubosu fruit – a citrus akin to bitter orange grown primarily in Oita Prefecture of southernmost Kyushu Island. This truly striking liqueur is made in more central, Gifu prefecture. Throw out your Limoncello. InAzia Restaurant and the Sheraton excelled again. All participants gained a new appreciation for Sake’s diversity, especially its pairing ability to enhance fine Japanese cuisine. By Norman Stacey

Hua Hin Business Network Anniversary On the 28th of September Hua Hin Business Network celebrated their 3-year Anniversary of running Hua Hin’s only English-speaking Business Networking Society in Hua Hin. The event was held at Hua Hin Marriott Resort & Spa’s Amber Kitchen in the open-air patio surrounded by beautiful views of Marriott’s expansive outdoor spaces. The event was touted as a Food “Coma” event and featured their Pizza & Pasta Buffet and free flow of drinks. Leaving nobody wanting for more that night.

impson Marine was founded in 1984 in Hong Kong by Mike Simpson as a yacht sales and charter company focused on meeting the needs of the developing marine industry in Asia. By the end of the 1980’s the company had been appointed regional distributor for several leading brands namely Beneteau and Lagoon and had recruited an expanding team of sales and after sales service professionals around the region.

Both Phuket and Pattaya have yearly Boat Shows and at the Ocean Marina Pattaya Boat show, this year held from November 29th to December 2nd, Simpson has announced they will be showing the Monte Carlo Yacht 96, presented for the first time in Asia.

A proud winner of “Best Flybridge Yacht” at the 2018 Asia Boating Awards and “Best International Motor Yacht in the 24-30M Category” at the 2018 Christofle Yacht Style Awards, MCY 96 is set to be the most outstanding yacht at the Ocean Marina Pattaya Boat Show this year. At 29 meters (96 feet) in length, the yacht has a draft of 2 meters and displaces 98 tons. Accommodating up to 10 guests, the ship is powered by twin MAN V 12’s creating 1,900 horsepower each with a top speed of 27 knots.

Inspired by the aerospace industry, Monte Carlo Yachts manufacturing process constitutes an extraordinarily innovative approach in the yachting sector. MCY yachts are made of three modules – Hull, Interior Module and Deck - which are built simultaneously until the last detailing stage then joined together during final assembly. The first Asian Monte Carlo 96 was sold by Simson Marine to a Thailand based owner in 2017 and will arrive in Thailand in late 2018.

Other boats shown by Simpson at the Ocean Marina Pattaya Boat Show include the Lagoon 42 and the Aquila 44. The Lagoon 42 is sleek and modern. A bimini top provides protection from sun, while a sliding panel in the top still gives a great view of the sails above. The owner has the luxury to choose between three or four staterooms. The catamaran’s U-shaped galley is fitted with wide counters and the large rectangular hull windows brings plenty of light into the staterooms and was the “Best Sailing Catamaran” winner at the Asia Boating Awards 2016. Knowing Thailand’s love for catamarans, Simpson has also included the Aquila 44 in this year’s show line up. Developed to be an exceptionally comfortable cruising boat placing advanced technology at the forefront of all design and build decisions, Aquila 44 is easy to manoeuvre. angkok’s Lelawadee restaurant is located inside the Mövenpick Sukhumvit 15 Hotel. Set down a quiet soi, it is a great venue for escaping the city heat, noise and traffic. The visually appealing restaurant is set around a central garden that overlooks a waterfall and is surrounded by plants and large bay windows.

This is the main restaurant for the hotel, where their buffet breakfast is served and later their ala carte lunch and dinner. We had the pleasure of joining for an evening meal and found the experience extremely satisfying. The menu is extensive and there should be something here that tickles anyone’s fancy no matter what their food mood is. Inside you’ll find plenty

of salads and appetizers, different types of meats, pizzas, pastas, burgers, sandwiches as well as traditional Thai dishes like Tom Yum Goong spicy shrimp soup, Gaeng Kiaow Waan green curry, and Phad Thai. Add to this is a new range of Mediterranean cuisine with standouts like hummus, Mixed Grill and Beef Kebabs rounding out an exciting cosmopolitan dining adventure.

opened his first restaurant, which he named Mövenpick, in Zurich Switzerland. One of the Mövenpick’s signature dishes on the Lelawadee menu is their Riz Casimir with Veal. Curry and tropical fruit flavors suggest an exotic origin, yet Riz Casimir was invented in the Mövenpick kitchen

by Ueli Prager and it’s been served in their restaurants since 1952. Another popular signature dish is their Zürichstyle veal. The dish consists of their succulent veal in a mouth-watering cream and mushroom sauce, served with a traditional crispy rösti, a quintessential Swiss dish popular at Mövenpick restaurants the world over.

Something that I think makes Lelawadee really stand out is their one of a kind Chocolate Bar. No, not the chocolate bar that you buy at 7-11 but an actual Chocolate Bar where master mixologists have created chocolate cocktails and mocktails, paying homage to Mövenpick’s Swiss roots as a purveyor of chocolate excellence. In this new bar experience, you can choose the level of “darkness” in your cocktail, ranging from 70%, 80% to 90% of the highest grade of Swiss chocolate. The drink menu features some creative cocktails and mocktails, both hot and cold. My personal favorite was The Choco Castro. Highly recommended for the guys, this taste sensation is comprised of Hennessy V.S.O.P, Bailey’s Irish Cream, 90% Swiss chocolate, rum and cream; or for the ladies, how about a Brody, made with white chocolate vodka, Bailey’s, strawberry sauce, and cream.

These sweet drinks can take the place of dessert or else be part of a fun-filled bar and nightcap experience post-dinner. To sum up, Lelawadee offers an extensive array of international dishes along with a very creative cocktail menu topped off with the Mövenpick’s longstanding guarantee of quality and top notch service. What is your full name and age? My name is Sven Walter, a mid-age Swiss without crisis. What is your current Job Position? I am the General Manager of Mövenpick Asara Resort & Spa, one of the most private indulging boutique resorts in Hua Hin. How long have you lived in Hua Hin or been coming to Hua Hin? I’ve visited Hua Hin earlier, twice as a guest, and just last month came back to take on the Mövenpick Asara Resort & Spa Hua Hin. What did you know about Hua Hin before you moved here? Obviously as most would know, Hua Hin is the Summer Residence of the Thai royal family. I’ve been also able to experience the Monsoon Valley Wineyard with some very nice wines produced, that it is a beach resort destination with excellent accommodation such as ours, well known for golfing, has water parks, lively markets, and all that along a nice stretch of beach while only 3 hours away from Bangkok. What do you like most about your profession? The diversity of this trade makes it a unique profession. You deal with many different people during the day, involved in operation, guest contact, but then also owner’s relation, corporate, Sales & Marketing and all financial aspects that keeps you clearly on your toes, making sure your day is never the same nor tedious, always new challenges, and that’s the beauty of it. On the other hand, I enjoy seeing someone growing under my wings, and becoming successful in their field. It gives me a sense of satisfaction, knowing how important the staff is, and that I might have been able to contribute a little to her or his success.

What do you like most about Hua Hin? Hua Hin is a charming town that has a laid-back Thai feel. Being here just for a short time, I still must discover much but can say that I feel already comfortable here. What is your favorite restaurant and why? (please don’t promote your own restaurants) Haven’t really had a chance till now to discover any of it. What do you like to do in your free time and why? If there is some free time, I’d like to spend it mostly with my wife. We enjoy sport; mainly jogging and Thai boxing, nature as well as cooking and a nice wine with it. If a bit more time we at times like to have short getaways somewhere else. What would you recommend to new-comers to do in Hua Hin and why? Since I am a new-comer myself, I better leave that out. Tell us a surprising fact that the public might not know about you? I suppose to become an electronics technician but because my two older brothers have chosen to become a chef, I changed my mind last minute and started the same path as them. No regrets since… What is the most outlandish thing you have ever done and why? There is not one specific event I would be able to highlight; however, I always enjoyed intense activities. Already in early years I played many years ice hockey, I cycled from Switzerland to Paris, I was for many years a mountain climber, I do Thai boxing and so I’d like to keep myself active for sure.

What do you like least about your profession? Hard to say, and for sure there are days where you wished for a better outcome, but I tend to see the positive.

Azure's New Local Fare With Fanciful Flair

O

n September 15th a special gathering was held at the InterContinental Hua Hin Resort & Spa’s beachfront Azure restaurant to inaugurate their new Signature Cocktails and “From the Farm & The Sea to the Table” menu.” The evening started with Cocktail Impresario Joseph Boroski and his staff serving up many of the drinks that make up Azure’s new Signature cocktail menu. Joseph and his consulting group “Sip Slowly” have worked with some of the top five-star hotels, extraordinary resorts, and

exceptional restaurants around the world for close to 5 years. He has designed all of the specialty cocktails for Ashley Sutton’s bars (Iron Fairies, Maggie Choo’s etc.) and he has his own Bangkok speakeasy called J. Boroski. Joseph has also designed the signature cocktails for Hua Hin’s Vana Nava Sky which is owned by the InterContinental Hua Hin’s parent company, Proud Real Estate. For the InterContinental’s Azure Bar, Boroski has taken inspiration from diverse ports of call, such as the Amalfi coast, Cape Town and the French Riviera. A few of the favorites that were served during the night

included “A Kick in the Frangipani” which is made with the InterCon’s proprietary house whisky which is a blend of Scotch, Bourbon and Irish Whiskey and married to Thai cashew orgeat, fresh imported lemon and blooming fragrant frangipanis. Another favorite was the “Yom’s Mango” made with Tequila, fresh mango puree, lime, dried chili salt & dried mango skin. Boroski has created 12 original specialty cocktails for Azure that shouldn’t be missed. Azure’s new restaurant menu supports the hotel’s commitment to local sustainability by making the most of locally-grown fruits


and vegetables, top-quality meats from nearby farms and fresh caught seafood supplied by the area’s surrounding fishing villages. Diners can play their part in supporting this commitment while feasting at Azure’s signature Raw Bar, where local island oysters and jumbo prawns are showcased alongside premium imported delicacies. At their Azure Fish market, you can grab a basket and take your pick from fresh local seafood and organic greens, all produced primarily from right here in Hua Hin. Highlights include fresh crabs, lobsters, prawns, clams, fish, scallops, sea urchin

and imported seasonal oysters at the oyster bar. Once you have made your choices their chefs will create outstanding dishes prepared according to your desired cooking method with complimentary stirfried vegetable and a sauce of your choice. Guests at the September 15th celebration enjoyed many new menu items including their signature standout Tomahawk Steak. At 1.3 Kg, the Australian grain-fed steak is roasted with garlic, vine tomatoes and roasted vegetable and served with 3 choices of side dishes and sauces.

The sumptuous meal was finished off with the Azure Grand Desert Platter which consists of a Chocolate Dome, Tiramisu, Cheese Cake, Fresh Fruit Skewers and Chocolate Praline. A great night was had by all in attendance celebrating the Inter Continental Hua Hin’s new Azure beach front restaurant offerings.

friend of mine once told me that if you have the luxury to live anywhere you want you should always choose a resort city. He himself, an avid skier chose to live in Vail Colorado, a famous ski resort city in the States. For me, after living in Hua Hin for many years I couldn’t agree with him more. Living in Hua Hin is like being on a continual holiday. There are constantly so many exciting things to do, always interesting places to go and new restaurants to try. 2017 ended with the Annual Hua Hin World Tennis Invitational held outdoors at True Arena Hua Hin. Thrilled ticket holders were treated to the opportunity to watch up close four of the top 10 Women’s tennis players in the world compete in the two-day tournament. The players included (ranked at the time) World No 1 Simona Halep, Karolina Pliskova World number 4, Jelena Ostapenko, World No. 7 & Johanna Konta ranking 9th in the World.

Simona Halep went on to win this year’s French Open. True Arena hosts many tennis tournaments throughout the year, bringing in top talent and almost all of them are free to attend. Living in a resort city there are many businesses that cater to tourists, to the benefit Hua Hin’s residents. The billion-baht Vana Nava Water Jungle is a good case in point, but it’s not our only water park, we also have Black Mountain and in Cha Am, the next city to the north you’ll find the Santorini waterpark which is also a great shopping and entertainment venue. Additional water fun includes the many kite boarding schools where you can learn this exhilarating sport from trained experts, jet ski rental and banana boats. On land you have 10 great golf courses, Go Carts to race, elephants to ride, quad bikes to tour, horse’s to gallop, fun runs, marathons and a gun range to test your shooting skill. If you are interested in getting off the beaten track to see the real Thailand

while talking with locals and local expats about what life is really like in Thailand then you can join “The Hash”. Every Saturday afternoon the Hash House Harriers get together for a 1 hour run and walk thru the Thai countryside. Additional fun things to do in Hua Hin include the Cicada Market open Friday, Saturday and Sunday. The Cicada Market was created as a medium of connection to artists, creators, designers, tourists, students and the community. At the center, there are two white buildings with raised floors that serve as a venue for art exhibitions, called Cicada Art Factory. Exhibitions feature young artists as well as those from further afield. An amphitheater-style venue provides a form of entertainment designed to educate as well as to amuse visitors. Visitors can enjoy edutainment activities performed by bands, dance troupes, or theater groups.


The food zone called Cicada Cuisine is where visitors can choose from a wide variety of local and international delights, such as grilled seafood, grilled pork satay, Pad Thai, Fried Mussels Thai Style, Chinese noodle, Korean B.B.Q, various forms of rice-based dishes, American and Italian pasta dishes, and variety of desserts. Also, many choices of drinks are served both alcoholic and non-alcoholic. Next door you’ll find the Tamarind Market that is open Thursday thru Sunday. Tackling Night-Time Anxiety For A Better Night’s Sleep

D

uring the day we have dozens of tasks occupying our energy. Bedtime brings a halt in activity that can be a difficult transition for our brains. Lying in bed after a long day, tired yet wide-awake with your mind racing. We’ve all been there. According to Dr. Kate Cummins, a licensed clinical psychologist. “When you have a list of to-dos or business meetings to participate in, your thought process is geared towards frontal cortex functioning, which is the judgment, planning and reasoning areas of your brain. Once you are finding yourself at the end of your day, your frontal cortex has the ability to relax a bit, shifting gears into things you enjoy or pieces of you that are not connected to higher level functioning, mainly in your emotions and limbic system. When your thoughts start connecting to the emotional part of your cognitive functioning, especially at night, the anxious thoughts or anxious emotion that has been lying dormant all day has a place to go and becomes the forefront of your thinking patterns.”

To triumph over night time anxiety for a better night’s sleep we suggest the following: “First, decide what it is specifically that you are focused on that is causing you anxiety,” says Dr. Cummins. “Is it something that you have control over? Is it something in your future that has not yet occurred? If so, mentally state the negative thoughts or anxious concerns and then follow them up with alternative and positive thoughts or solutions for your problems.” “You have to be able to soothe yourself out of the uncontrollable and irrational black or white thinking by combating it with alternative thinking.” The power of your imagination can help get you to a place of ease when you’re fretting. “Visualization of positive events and relationships in your life will help you increase your connection to positive emotions that are also lying around within you, but you have to work at accessing them when the anxious feelings or thoughts have already shown up,” says Cummins.

Dr. Paul Coleman, a psychologist, motivational speaker and the author of “Finding Peace When Your Heart Is In Pieces: A Step-by-Step Guide to the other side of Grief, Loss, and Pain” suggests that you imagine a simple relaxing scene to focus on and to keep going back to that image if your mind wanders.” Paul also advises to make a pledge to accept uncertainty stating that your anxiety may be tied to a problem that is understandably keeping you up at night. But you have to let it go if only for this moment. “Repeat the phrase ‘I accept uncertainty for now. I will take action when action is possible’,” says Coleman. “Accepting uncertainty is crucial because otherwise one is resisting uncertainty at a time when resisting only adds to your tension.” If before bed you already know that you are going to have a hard time getting to sleep then there are some pro-active steps that you can take to overcome anxiety’s onset.


Dr. Whitney Roban, a clinical psychologist and family sleep specialist’s number one piece of advice for people suffering from night-time anxiety is to keep a journal where you can write down all those clingy thoughts. “When you get these thoughts out of your head and onto paper, there is a good chance they will not infiltrate your mind when it’s actually time to go to sleep,” Dr. Roban says. “Many people also like to make lists in their journal of the things they need to do the next day.” Getting lost in a book is beneficial for many reasons, and it can be pivotal to sleep health. “Reading is a great way to quiet your mind and distract yourself from any anxious thoughts that might creep up at night. When you are engaged in a story, your thoughts are in the moment, instead of worrying about the future,” says Dr. Sal Raichbach, a licensed clinical social worker at Ambrosia Treatment Center. “On the other hand, the blue light emitted from cell phones does the opposite. Even if you turn down the brightness, blue light from LED screens interferes with the production of essential brain chemicals like melatonin that tell your body it's time for bed.”

Pick up a real book, and I recommend from extensive experience with insomnia, that you pick the densest, dullest tome in your collection. A few other simple suggestions for a better night’s sleep include ensuring that your bedroom is quiet, cool and dark, even a small amount of light in your bedroom can disrupt the production of melatonin and overall sleep.” Finally, one of the best ways to deal with anxious thoughts in the evening is to reduce the stress you have to deal with during the day, according to Benjamin Ritter, a coach and consultant specializing in personal and professional leadership development. “Avoid stressful people, be more open and honest about your feelings, and most importantly plan and strategize areas of your life”. Reducing the number of decisions you have to make during the day will lead to less stress and anxiety at night.

L et’s Go, Ko Kret

T

hailand is known for its many islands, Samui Pha Ngan, Lipe, Phi Phi Don, Phuket, etc., but one that is not quite so well known, yet near the Country’s capital, is Ko Kret. Ko Kret was created during the reign of King Taisra in 1722. Taisra wanted a faster water transportation route to improve his Kingdom’s economy. To solve the problem he brought down the Mon hilltribe people from Northern Thailand to dig a canal, turning a peninsula into an island and thus enabling a quicker trade route. Ko Kret thrived until the Burmese invaded the area in 1767. After fighting off the Burmese, the new King, King Taksin, allowed the Mon Hill Tribe people to settle down on Ko Kret. Ko Kret is another world compared to Bangkok and much of it retains the air of a rustic village, with wooden shacks propped against palm trees and the occasional

Ko Kret is renowned above all as a centre for kwan aman, a style of Mon pottery, which is unglazed terraocotta carved with intricate patterns. Prices for the simplest and smallest pots start from as low as 5 baht a piece but can go up to hundreds or even thousands of baht for large ornate pieces. Particularly popular among visitors are candle and incense holders with ornate patterns of holes to let the smoke or light out, averaging around 200 baht. There are some 20 pottery workshops on the island and you will see many kilns as you walk around.

One of the primary attractions for Thais and foreigner’s alike visiting the island is eating. There are numerous vendors cooking up a number of local treats mainly Thai and Mon snacks and desserts. Favourites that the island is known for include "Khao Cher." This dish is a Mon specialty of rice served with chilled fragrant water and a number of little side dishes. It was a royal favourite for hot summer days, but now is hard to find most anywhere besides here. "Tod mun pla nor gala" is another treat. This is a spiced fish cake with the shoots of local ginger. There is a food market near the ferry pier featuring the usual suspects, but also including a local specialty best described as Mon tempura: deep-fried vegetables, fish, shrimp

and such served in a large bananaleaf krathong (leaf-shaped bowl). A number of stalls also serve chaa yen (Thai iced tea) and other drinks in red pottery cups with carrying handles, which you can keep as a souvenir for a few baht extra. Another popular stop is Chit Beer, the island’s micro brewery. At Chit they offer a chit load of different types of beer and great ambiance where you can grab a table by the river and watch the world go by. Prices are very reasonable for a glass and snacks are available and tasty. Chit’s is definitely worth a visit if you are looking for a lazy day to hang out and want to escape from the crowds of Bangkok. A friendly mix of Thai’s and foreigners enjoying the beers and good vibes overall.

Getting around Ko Kret is easy: the most popular option is walking. The island is roughly square in shape, each side measuring about 2 km, and a path runs around the entire island. The walk at a pleasant pace takes about 1.5- 2 hours. Other options are renting a bicycle from the outfit located in Moo 6 or there are motorcycle taxis that will take you around. If you walk and get tired, you can proceed down one of the paths leading out to piers by the river. From these local piers, you can flag down a small water-taxi. These miniature versions of the famous Thai long-tailed boats will zip you around the island and back to the Pak Kret pier on the mainland if you like. While the locals speak little English, there are useful multilingual maps of the island near the ferry pier and at a couple other points around the island. There are occasional distance signposts along the footpath, and most sights around the island have been labelled in English.

Things to see in Ko Kret include; Wat Poramaiyikawat, at the northeast corner right next to the ferry landing. The main temple on the island, this old monastery is constructed in Mon (Burmese) style and is a focal point of Thailand's small Mon community:

both the scriptures and the daily prayers here are in Mon. The ubosoth is decorated in Italian marble brought in by King Rama V, and a wooden pagoda near the pier houses the remains of one of the abbots. The white, Burmese-style stupa, modeled on Phra Tat Chedi Mutao in Hongsawadi, Myanmar, is said to contain the Buddha's relics. Wat Chimplu Suttahawat is on the east coast, about 1 km south of the ferry landing and a good point to turn around if you're not planning to make the full circuit. The temple has a beautiful small chapel in a very good condition. Phra Wiharn. This is the venue where the 9.5 metres long reclining Buddha of the late Ayutthaya period is enshrined. The edifice’s outside is decorated with King Rama V’s emblem. Nonthaburi’s Buddha image named ‘Phra Nonthamunin’ enshrined here behind Phra Wiharn was formed in the late Ayutthaya period. Besides, a charming marble Buddha image offered to King Rama V by a Burmese named Sang Sew Sun is placed in front of the Viharn. Wat Sao Tong Thong. This long-dated temple used to be called ‘Wat Suan Mak’ and is the site of Amphoe Pak Kret’s first primary school. Behind the chapel, the tallest pagoda of Pak Kret is constructed in the Ayutthaya style. Inside the chapel, the gorgeous ceiling paintings finely decorate the edifice. Another name of the temple in Mon is ‘Pia Arlart’. Wat Phai Lom. This monastery built in the late Ayutthaya period and called by Mon people ‘Pia To’ has a charming chapel. Kwan Aman Pottery Museum. This pottery museum is notable for its large collection of the distinctive ancient Mon design ceramics. Recently, the Mövenpick Hotel Sukhumvit 15 opened its third tower and it is there that the HOT Magazine team recently had the pleasure of staying. Just like chartering a jet or a helicopter, chartering a yacht is easy. There are many websites setup specifically for this purpose. An easy to navigate boat charter website that I use is Simpson Yacht Charter’s, www.simpsonyachtcharter.com. Here you can charter a sail boat, a catamaran, motor yacht or superyacht in Thailand, Myanmar, Viet Nam, Malaysia, Indonesia, China, Hong Kong, Singapore, South Pole, Mediterranean or even the Caribbean and French Polynesia. The process of chartering a yacht is pretty straightforward and starts with you paying a 50% deposit upon booking confirmation once you have decided on the size and type of boat you want as well as where you want to go and for how many days. 60 days prior to your Charter you need to pay the balance. In case of "last minute bookings" which is considered less than 40 days before the Charter then 100% payment is charged at charter confirmation. Insurance is included in the charter rate which covers the yacht and 3rd party liabilities. When chartering out of Phuket you will also have “passenger insurance”, which is mandatory by Thai law for charter operators. On top of that, a security deposit is collected upon check in, similar to the arrangement when you check in to a hotel. This deposit amount is to cover the deductible amount of the yacht’s insurance package, in case of any damages caused by the charterer. If you want to skipper the boat yourself then you will need to present a valid boat driving license and a sailing resume to prove your boat handling capability. For those who simply want a relaxing holiday without having to lift a finger, you’ll want a crewed yacht providing top-notch luxurious service. According to Simpson Yacht Charter brokers, day charters are just as popular as multi day charter. When chartering for the day, fuel for 3-4 hours of engine run time is normally included. If you prefer a destination that is further afield then the charter cost will be higher. If you would like a day charter from Phuket on a sailing catamaran you could go to Phang Nga Bay and with a motor yacht you could go to further to destinations such as Krabi / Koh Hong, Koh Phi Phi, or Koh Racha. With a day charter out of Pattaya you could check out the islands of Koh Larn and Koh Kram Noi. The Most popular boat type and size for day charter's on the lower end are usually catamarans and these come in several sizes 40-77ft and higher end charters are usually larger motor yachts over 50ft, up to big superyachts.

Simpson provides an onboard Thai menu, snacks and fruits, as well as soft drinks and local beers with their day charters. For overnight charters (bareboat), you can choose to do provisioning yourself or have Simpson handle the provisioning for you. For overnight charters with a crew, you provide the menu and cash in advance and the crew will purchase your preferred food & beverages and have them onboard upon your arrival. According to Simpson, the most popular type of boat for multi day charter are the Lagoon sailing Catamarans and the most popular size is 40 to 45 feet as they can do both bareboat and crewed charter. More exclusive would be 50ft+ yachts. A lot of us have taken a tour boat to Koh Phi Phi and other Thai islands but experiencing them from your private yacht adds a whole new luxurious dimension to the adventure. A sample four-day charter from Phuket will see you leaving Ao Po Marina on day 1 heading to Phang Nga Bay. You’ll want to cross through the heart of the bay to the Pan Yi fishing village. This incredible sea village island consists of buildings atop stilts, complete with homes, shops, schools, a mosque and even a market. After exploring Pan Yi you’ll want to visit the North end of Phang Nga Bay where you will find the James Bond Island which was made famous in the Bond film “The Man with the Golden Gun.” Phang Nga Bay is gorgeous and one of the natural wonders of the world.

Day 2 would see you heading south to Krabi and the beach at Ao Nang Bay. Here you will find many resorts, shops, restaurants and lots of nightlife. Just to the South is the world famous Railey Beach, protected from road access by rock walls on either side, you can enjoy kayaking or rock climbing. Further South you’ll find excellent diving and snorkelling. Day 3 of your yachting adventure could take you to Koh Phi Phi with spectacular cliffs rising vertically out of the clear blue sea. Idyllic tropical beaches and lagoons surrounded by rock walls is what has made Phi Phi Islands famous all over the world. You can snorkel in warm turquoise water in secluded bays and see the famous Maya Bay or other surrounding bays. In the evening you can eat and relax on the Yacht or head ashore and enjoy the restaurants and nightlife of the island.

Day 4 you’ll set sail for the numerous small islands off the east coast of Phuket that can be explored on your final day. It will be temptation to see them all but you will have to make a choice. Maybe do some snorkelling at Coral Island, or feeding the fish from the beach at Khai Nok. A Day Amongst Elephants

ver wanted to get up close to elephants? Yet seeing them in the distance at a National Park just did not do it for you? Or perhaps you have ethical issues with trekking on, riding, petting or feeding, captive elephants? Well, we recently visited a place where you can spend a day amongst the elephants (wash their back even) without the usual ethical concerns. We're talking about the Wildlife Rescue Centre and Elephant Refuge operated by The Wildlife Friends Foundation Thailand (WFFT). Located just 50 or so kilometres north-west of Hua Hin near the village of Tha Mai Ruak in the Phetchaburi region, it's a simple one hour drive (or even closer from Cha-am) and is a fantastic day trip.

What is Wildlife Rescue Centre and Elephant Refuge? Since it's inception, the centre has rescued over 5,000 wild animals and provides full-time care for almost 1200 animals. The majority of these animals have been abused and exploited for profit and human gratification. This animal mistreatment often takes place in the tourist industry. For example, photos with 'wild' animals (e.g. infamous Tiger Temple), animals performing in degrading spectacles, as well as elephant rides, elephants camps and shows, and elephant trekking. Additionally, there is still a thriving illegal trade in wild animals for pets and medicine, with most of these animals taken unlawfully from their natural habitat. WFFT was founded in 2001 by Edwin Wiek with the help of the local people from Phetchaburi province, including the Abbot of Wat Khao Look Chang who donated a large parcel of land so the centre could be established. The centre has expanded its local land footprint over time with the acquisition of neighbouring properties thus allowing for an enlargement of facilities including a new state of the art elephant hospital. In recent time WFFT has extended into Laos where they now operate another world-class animal rescue centre.

Full-day Tour A group of four friends booked ourselves on the 'full-day experience' at the Wildlife Rescue Centre and Elephant Refuge. Their promise to enlighten us about Thailand’s wildlife, its beauty and its problems, and how this centre is leading the way in wildlife conservation and animal welfare education in Thailand.

What we experienced was a day, full of stories of the many animals we met. Often sad or even heartwrenching stories. These animals who, having been rescued from horrific captivity or entrapment, are now experiencing a new life. Either recuperating before being released back in the wild. Or enjoying their new 'home for life' in a safe environment, as close to nature as WFFT can achieve.

We did get up close and hands-on with a pair of elephants which we fed and washed. We visited with bears, orangutans, gibbons and dusky langurs, plus spent time with several more groups of rescued elephants. Care for the animals is provided by a team of dedicated volunteers and full-time staff.


Worthwhile Investment Our full-day experience cost 1,600 THB per adult which is not a cheap day out. We were reassured that the fees for the day tours go directly into the centre's conservation programs. From what we saw, monies were definitely being reinvested in these facilities. Starting at 10:00 am our personal guides for the day provided access to and informative tours of the Wildlife Rescue Centre and Elephant Refuge plus the Elephant hospital. We also enjoyed a quality Thai food buffet at the newly built onsite eco-lodge “I-LovePhants Lodge�. In the afternoon we were driven around newer sections of the ever-expanding centre. Going behind the scenes to see the volunteers go about preparing food and enrichment activities for the various groups of animals. We also visited other elephants as they went about their day purely being elephants in their 'as close to natural as possible' enclosures. Our day concluded at 3:30 PM with smiles on our face and a great sense of satisfaction. Glad that we had made the effort to visit WFFT's Wildlife Rescue Centre and Elephant Refuge. This is wildlife preservation and ethical tourism coming together fantastically.
