elcome to Issue 10, Volume 7 of HOT Magazine. One of the biggest Boat Shows in South East Asia takes place at the end of November in Jomtien. For the 8th year in a row The Ocean Marina Pattaya Boat Show will feature both in-tent and in-water displays from a multitude of boat manufacturers. From dreamy luxury yachts on one end of the spectrum to inflatable boats on the other, along with plenty of water toys can all be found. The boats on display represent the latest in design and styling trends, along with new technologies and innovations. This month we sit down with Simpson Marine, Asia’s leading yacht brokerage, to get the low down on the yachts they will be featuring at this year’s show. Dig out your deck shoes and turn to page 48 to see which one of their yachts you should be captain of. Every year Travel + Leisure Magazine surveys its readers for the World’s Best Awards. Readers weigh in on travel experiences around the globe—to share their opinions on the top cities, cruise ships, airlines, and more. Readers rated islands according to their activities and sights, natural attractions and beaches, food, friendliness, and overall value. In this month’s “Let’s Go” feature we take you to the island paradise of Palawan in the Philippines. An island that for 3 years in a row was voted The World’s Best Island by the readers of Travel + Leisure.
Unspoiled, sugar-white beaches and world-class scuba diving draw travelers from around the globe to this far-flung island in the Philippines. One reader hailed it as the “single most beautiful place on Earth.” Grab your snorkel and fins and turn to page 36 to see why Palawan deserves to be added, and crossed off, your bucket list. Winemaking in Thailand can be traced back nearly half a century when His Majesty King Bhumibol Adulyadej (1927 - 2016) started investigating vineyard viability. This royal project found that some areas of Central and Southern Thailand exhibited more Mediterranean-like farming potential as opposed to the typical tropical climate. Since 1995 a dynamic group of winemakers and merchants have established a small but thriving industry, producing award-winning wines. The range includes dry and sweet wines, as well as sparkling wines made in the traditional method. Pour yourself a glass and turn to page 60 to learn where your next bottle of vino should come from. Those are just a few of the stories you’ll find in this month’s issue. As always, thank you for picking us up and we hope you enjoy the read.

East Meets West happened from 14 to 30 September. Chef Ann – Kanyaphat Srijareon lead the culinary team to create four courses of innovative Thai fusion cuisine. Chef Ann’s dishes were paired with selected wines or unique cocktails, depending on diners drinking preference. The evening started with tortellini of foie-gras and holy basil. A flavourfilled pillow of pasta. This was followed by Tom Kha Pla - a spicy and sour hot coconut milk soup served in a coconut shell, and for dramatic effect, a smoked filled jar of King Mackerel pieces and fish row was served on the side. The appetiser saw crispy pork belly matched with a pineapple salsa sharing the plate with rice stuffed local squid complete with squid ink and a steamed Thai curry custard of scallop (Hor Mok). A celebration of local pro-
duce coming together on one plate. Main course offered a choice of seafood or beef. Fried Crab balls with Cha Plu leaves, vermicelli and a red curry foam, and presented with squid ink sago crackers. The grilled Wagyu beef sat on a Penang curry risotto and was accompanied with garden vegetable. A clear example of East Meets West for our dining pleasure. To finish the meal, Chef Ann created a dessert of pineapple mouse cake topped with delicate white petals filled with meringue. The dessert was then flamed once it was presented to the table. An impressive end to an elegant evening of dining. You too can enjoy Sky Gastronomy in the south wing of Vana Nava Sky. Visit www.vananavasky.com or for reservations Tel: 032 809 999.

Spanish Wine Master Class at Centara Grand Hua Hin On Thursday September 13th a Master Class on Spanish Wines was held at the Centara Grand Hua Hin. Winemaker Jürgen Wagner started the masterclass painting a picture of the craggy foothills and olive-green valleys around the village of Capçanes in a region of Catalonia (Spain) that he calls home.
The catalyst was the demand by the Jewish community in Barcelona for a high-quality Kosher wine, which this region was able to produce, and still does. Today the Capçanes co-operative has two winemakers, Anna Rovira and Jürgen Wagner, who pool their experience and skills.
Capçanes has produced wine since the 1930s and is part of the Monsant wine appellation region (Montsant DO) - one of two world-renown wine regions in the Catalan region of Tarragona. Situated about 160 km southwest of Barcelona and 40 km west of Mediterranean facing Tarragona, it’s easily accessible for those wanting to explore.
A room of Hua Hin’s leading hoteliers had gathered to hear Jürgen present 15 wines from Celler de Capçanes. All received favourable comments, and some may, as a result of this masterclass, find their way to the wine lists of Hua Hin’s quality dining establishments, including the hosts Centara Grand Hua Hin. Their Elephant Bar provided an ideal venue for the masterclass.
The wines of Capçanes are grown by a co-operative of some 120 producers sharing around 250 hectares of mostly old vine vineyards. Their co-operative was started in 1933, but it was only in the mid-1990s that quality rocketed.
One aspect of the tasting that particularly captivated was Jürgen’s very practical explanation of an oft used wine concept ‘terroir’. A French term that literally translated means: earth or soil. For this exercise four wines were
presented – all made with the same grape variety and identical production process. The difference was the vineyard, and more precisely the soil, each was grown in. As we tasted a wine, a glass of the earth from that specific vineyard was passed around the room – pale yellow sandy loom, terracotta-coloured clay, white blue and grey limestone, and purple-grey of slate. This was wine tasting and wine terminology made ‘real’. And all in the room agreed that each wine had its own distinct and recognisable characteristics. The wines of Celler de Capçanes were presented by Bangkok based wine wholesaler, Fin Wine. Fin is the exclusive distributor for artisanal and handcrafted wines from small boutique wineries around the world. Typically, the wines presented by Fin are natural: sustainable, organic and bio-dynamic. By Michael Cullen

Bumrungrad Moves Forward Implementing Revolutionary Medical Technology Hospitals, like all major corporations, are constantly challenged to be on the cusp of cutting-edge technologies. The healthcare industry is moving forward into a new era of smart hospitals and what they call Health Care 4.0. As a top-tier international hospital, Bumrungrad International Hospital held a press conference in Bangkok on October 3rd to discuss its plans to implement innovative revolutionary medical technology aiming for worldclass holistic healthcare standards within three years.

At the press conference, Pharmacist Artirat Charukitpipat, CEO of Bumrungrad International Hospital revealed that the innovative work culture at Bumrungrad helps maximize their potential. “We hope to seamlessly bring our staff on our journey as we move further into digital globalization.” At the press conference, Khun Artirat announced their business plan emphasizing Excellence at all levels, especially focused on three main aspects: Clinical Excellence, Operational & People Ex-
cellence and Service Excellence. Concerning medical innovation, Dr. Teeradache Viangteeravat, Director of Research and Development stated. We have adopted five main medical technologies: AI/Big Data, Genomics, Robotics, Scientific Wellness, and Telemedicine to raise our standards care.” Dr. Teeradache explained, “Biomedical informatics and Big Data in the healthcare industry are complicated and sensitive because we need to take

into consideration the National Health Security Law, other relevant laws, the Ministry of Public Health’s rules, and patient rights. Big Data enables precision medicine, a medical model that customizes healthcare for specific diseases, such as cancer, which requires active and accurate treatments. To decide on treatment plans, doctors need the genetic or molecular information pertinent to each patient to make diagnoses, choose treatment options and medicines, devise preventive measures, and implement recovery plans. Moreover, Bumrungrad exploits welltrained AI (Artificial Intelligence) to
help radiologists with medical imaging like CT Scans, X-rays, and Ultrasound. Medical imaging AI has analyzed millions of medical images; therefore, it is a guarantee that diagnoses and treatments are faster and more accurate.” “Concerning DNA and Genomics – a branch of molecular biology is studying the sequencing and analysis of an organism’s genome to determine DNA sequences. This genetic mapping helps understand diseases. Bumrungrad has invested in a Big Data system called the Bio Computing Platform (BCP) to quickly and
efficiently connect patients’ genetic information with their Electronic Medical Record (EMR). At present, Bumrungrad is investing in DNAbased Scientific Wellness Screening and Pharmacogenomics. By studying how genes affect a person’s response to drugs we can create personalized medical and healthcare plans and treatments for each patient. We account for genetic abnormalities, patient lifestyle, and other factors that affect health, like the environment, diet, weather, and rest. This information helps determine the prevalence of diseases, so physicians can tailor treatment plans for each

L et’s Meet,
Chef Kuldeep What is your full name and age? Kuldeep Nautiyal (35). What is your current Job Position? Chef de Cuisine. How long have you lived in Hua Hin or been coming to Hua Hin? Two years and four months. What did you know about Hua Hin before you moved here? I was aware it was a great place to spend vacations as well as being a famous wedding destination, especially for Indian celebrations. What do you like most about your profession? I get to meet people from different parts of the globe and cook for them. I also enjoy all the new innovative cooking techniques and culinary trends. What do you like least about your profession? I do not dislike anything in my profession, cooking is my passion and I am lucky to be able to live my dream. What do you like most about Hua Hin? I think Hua Hin provides a great working environment as well as a good diversity for outdoor activities. What is your favorite restaurant and why? (please don’t promote your own restaurants) I enjoy eating in local restaurants wherever I travel to and discover authentic flavors. What do you like to do in your free time and why? I spend a lot of my free time searching for recipes and discovering the surrounding markets, looking for interesting ingredients and connecting with local people. What would you recommend to new-comers to do in Hua Hin and why? Eat healthy and exercise. Buy from the local markets instead of supermarkets as it will benefit farmer’s families as well. Tell us a surprising fact that the public might not know about you? First I know low temperature cooking technique. It’s a difficult one because the food is cooked between 4585 degree Celsius for a prolonged time. Second, I like to do a fusion style of cuisine which is innovative and motivates me to bring out creativity. What is the most outlandish thing you have ever done and why? I would like to refer to the most prestigious time in my career which was to cook for the late king Bhumibol Adulyadej. It was a golden opportunity and I am very thankful for it.

COAST Beach Club & Bistro – Centara Grand Beach Resort & Villas
U
ndercover, alfresco and overlooking Hua Hin’s beach, COAST Beach Club & Bistro is always worth a visit. A leisurely stroll through the grand marble-floored hotel foyer onto the manicured lawns, past the topiary gardens heading with anticipation towards the oceanfront. Positioned between two of the resort’s magnificent pools in prime beachfront location, COAST Beach Club & Bistro is an ideal spot for a relaxing beverage or lingering over lunch or dinner as Hua Hin’s famous beach life happens in front of you. Our visit is for the launch of COAST Bistro new menu. An annual activity, with Chef de Cuisine ‘Phu’ ensuring this year’s menu particularly heroes the fresh seafood our Royal Coast is famous for. There are also strong Mediterranean influences, known the world over for their distinct health benefits. Thai food, a universal favourite, has its own page ‘Siam at COAST’ with a selection to satisfy all Thai cuisine lovers. Chef Phu eases us into the food journey with a selection of starters. A ceviche of Akami tuna served on thin crisp tortilla rounds (tostadas). Quality tuna typically found atop rice in sashimi or within sushi rolls, diced and mixed with avocado, lime, Thai chillies, iceberg, sea grapes and chefs’ special sauce. Delicate tuna morsels of deliciousness. Duck breast rubbed with middle eastern spices, cooked and sliced on a salad of mixed lettuce, chickpeas, cherry tomatoes, cucumber, red radish, crispy pita chips, with garlic mayo on the side. Heirloom cherry tomato tossed and flavoured with aged balsamic and basil oil as the perfect accompaniment for fresh local burrata - a glistening white pillow of fresh mozzarella cheese that’s formed into a pouch and filled with soft, stringy curd and cream. This is Italian food at its most simple yet most glorious. Our final starters are ginger, and maple flavoured salmon in a light salad of avocado, mixed lettuce, radish and soft-boiled eggs; and an Italian-American fish soup - Cioppino. This tomato-based seafood soup (or stew) traditionally uses the daily catch. It’s said to have its origins with the fisherman from Genoa who immigrated to the US in the 1930s and settled in the Bay area of California.

Chef Phu’s Cioppino features mussels, clams, prawns, scallops, squid, and seabass. The serving size is sufficient to savour the garlic, oregano, thyme, and basil flavours of the tomato soup base and perfectly cooked seafood without being filling and spoiling you for further investigation of the menu. And so, our introduction to the new menu continues. Having shared the starters, our group each choose their own main course dish from the ‘Coastal Seafood’ and ‘Prime Meats & Grills’ section of the menu. Lamb rack with baby carrots, sugar snaps, chat potatoes, and rosemary gravy. Free-range duck breast with sweet potato mash, French bean, and mulberry gravy. Pan-seared fillet of baby seabass with Thai spiced cherry tomato salad, local clams, shallots, and coriander. Two Australian Angus, grass-fed beef steaks. One a tenderloin with mushrooms, baby tomato, shallot jam, wolfberries jus, and truffle crushed potato. The other a sirloin with hand-cut fries, butternut squash, and peppercorn sauce. And given the lack of chatter at the table and positive murmurings as people devoured their plates of food, it was clearly evident that all were delicious and worthy of COAST Bistros new menu.

Feeling like something lighter? No problems, as you check out the Artisan bread sandwiches and ‘burgers and more’ sections of the menu. Or a selection of eleven Pizzas from Italian classics to vegetarian as well a few more exotic options. All the Pizzas are cooked in the restaurant’s traditional wood-fired oven, and you can choose from a Napolitana style thin-crust or, according to the menu, the thick Ro-
man crust. To bring our food journey and study of this new menu to a fitting finale, Chef Phu offers a selection of desserts. A Panna Cotta served in a coconut shell topped with mango and caramel shards. A Crème brûlée flavoured with longan pieces and topped with the delicate crunchy, caramelised, sugary crust and more fresh longans.
Tiramisu, elegant and luxurious layers of delicate cookies, coffee, mascarpone cheese, Marsala and cocoa powder which Chef Phu has elevated further by serving in its own chocolate cup. Decadence. And finally, Mille-feuille which in French means “a thousand layers or leaves”. Layers of puff pastry filled with airy pastry cream, and in this version, topped with slices of fresh strawberries sitting on a plate decorated with a strawberry sauce and a delicate crumble. COAST Beach Club & Bistro’s new menu offers something for every diner or appetite, and does that in a sophisticated yet relaxed way, just like the setting of the restaurant itself. The fresh flavours, the Mediterranean influences, fresh local seafood, and quality ingredients are at its core. Community-Based Tourism Comes To Sam Roi Yod
E
ver wondered what life is like within the local villages of our Prachuab Kiri Khan province? Questioned how people make their living? Pondered what their daily life looks like? Recently, I had the opportunity to find answers to those questions, and I jumped at it. But more on that in a moment. While tourism is vital to Thailand’s economy, attracting over 38 million

visitors in 2018, increasing visitor numbers also generate concerns about infrastructure, sustainability and environmental impacts. Over-tourism issues are already being experienced in several locations across Thailand. To alleviate some of these issues and to help spread the tourism dollar, the Tourism Authority of Thailand has been working to promote secondary and emerging destina-
tions. Another avenue when tackling this complex issue is community-based tourism. Community-based tourism allows visitors to share in culturally sustainable activities, to learn traditional skills, and to gain an understanding of the local way of life. Community-based tourism brings direct benefits to locals but also manages the relationship between locals and tourists. It puts the locals in
charge of their destiny while opening their community up to tourism. Bangkok based social-enterprise organisation Local Alike has been working with the Nong Khao Niew community in Sam Roi Yod for the last few months. As they have done in over 100 projects across Thailand, Local Alike helps communities like Nong Khao Niew establish their own selfsustaining community-based tourism.
My experience kicked off with a comfortable 45-minute drive from Hua Hin to the Nong Khao Niew. Our group of twenty were there to experience “A Journey of Food’s Chain” tour. We were warmly greeted by community leader Khun Sanan and village members and provided refreshing rosella juice drinks and snacks on our arrival. Khun Sanan, through an interpreter, explained how his commu-
nity relies on agriculture and fishing in equal amounts, and our day with the community would introduce us to both. Following Khun Sanan’s welcome, we divided into smaller groups and hopped aboard a Saleng. In many parts of Thailand, these motorbikes with sidecars are used as work vehicles, and for getting around. With a community member riding each Saleng, we headed

to a local farm which now produces chemical-free crops, thanks to Local Alike’s guidance. Our task was to collect the key ingredients for our lunch – papaya, lemongrass, melons, pineapple, guava, herbs and flowers. Each group had responsibility for preparing one dish for all of us to experience and enjoy. Ours was a sweet and sour stir fry with pineapple, and picking the fruit direct from the plant was educational in itself. The farmers happily showed us around and helped pick the most suitable produce. Our dishes were accompanied by fried chicken wings, local fish, and Tom Yum Soup prepared by other locals. This lunch was all about eating what’s available and was exceptionally tasty to boot! Loaded back onto the Saleng after lunch, we headed to a small creek just before Sam Roi Yod Beach (Dolphin Bay) where a Crab Bank had been established. Born out of necessity due to overfishing, and with guidance from Local Alike, the Crab Bank encourages the fishermen to harvest eggs from blue swimmer crabs and cultivate them before releasing the hatchlings back to the waterways. With a survival rate of only 10 per cent of some 30,000 eggs a
female may produce, it’s a challenging task. This Crab Bank now allows for a higher potential of sustainable crab stock into the future. After a demonstration of net making, we donned bright new life-jackets and jumped aboard several local fishing boats to watch a 300-meter-long crab net being laid in Dolphin Bay and another being harvested. Once back on land at the Crab Bank, our final task was to plant mangrove seedlings in the estuary mudflats. Our little bit to help rejuvenate the local eco-system. During discussion over the day, Simon Liew, Tour Operations Manager from Local Alike explained the merits of the community-based tourism concept: “Visitors gain an awareness of local lifestyles and ancient traditions through first-hand experiences,” he
enthused. “The projects are owned and managed by the communities which generate an income stream used to improve quality of life as well as preserving traditions.” Simon went on to explain the Local Alike financial model sees communities receive 70% of the tour purchase price while 30% goes to Local Alike for their services (initial set-up, local training and support, web promotion, handling bookings & payments, and the like). And of the 70% the local community receives, 5% must be invested into agreed community development goals. Local Alike then matches that 5% contribution. Farewells said and a group photo taken, it was time to return to Hua Hin. Although not part of the regular tour, we did make one stop on our way home – to Grand Marina Pranburi. It was this local developer who facilitated the initial connection between the Nong Khao Niew elders and Local Alike. It’s great to see a developer who understands that theirs is not a stand-alone project, but one that needs to have real connections to their local community. For me, this day tour is about tourism for social change and well done Local Alike for the work you do. I find it inspiring that such a practical and forward-thinking initiative has come to our beautiful Prachuab Kiri Khan shores. Article & photos - Michael Cullen

hen it comes to choosing paradise on earth, one thinks of several places but top of your list should definitely be the island of Palawan in the Philippines. Travel and Leisure magazine honored Palawan the title of the “World’s Best Island” for the third time in three years—and who can blame them? From its perfectly placed palms trees to the lush blue seas that splash against the thousands

of islands, Palawan has all the perfect vibes that you thought only existed in well, paradise. Palawan can refer to the island of Palawan, or the wider province of Palawan for which the island is named. The islands of Palawan are located on the western side of the Philippines, close to the north of Malaysia. Palawan has a colorful history, starting from its name. The Chinese named it as “Pa-LaYu” which means “land of beautiful
harbors.” The Indian called it “Palaws” which meant “territory.” The natives of the Palawan Island named it after a plant which was called “Palwar” and the Spanish referred to it as “Paragua” which means umbrella, due to its shape. Over the centuries, the different names it got from different groups of people have converged into one name: Palawan, a name which connotes paradise for the many people who hear of its amazing natural wonders. Yet, in
HOT MAGAZINE RECOMMEND comparison to world-famous Boracay, Palawan is a bit isolated from the main clustering of islands that make up the Philippines. Being that it takes some time to get there; many travelers leave it off their itinerary. However, with its gorgeous karst limestone geography, pristine beaches, dramatic cliffs and hidden lagoons, Palawan has no shortage of things to do and see. Puerto Princesa is the capital of Palawan and the most accessible location
on the island. For that reason, many people choose to start their trip there and then make their way up north. Most people stay here for a night or so, mainly to visit the Puerto Princesa Subterranean River National Park. A UNESCO World Heritage Site, the cave complex is one of the new seven wonders of nature and contains the second longest underground river in the world. Along with the Puerto Princesa Underground River, Tubbataha Reef is
another UNESCO World Heritage Site, renowned as host to one of the highest biodiversity of marine life in the world. Next stop would be Port Barton, a sleepy little beach town. Although not as popular as the rest of Palawan, Port Barton is the only place in the province where you can swim with sea turtles. Island hopping is popular here, each island offering amazing snorkeling spots and incredible hiking trails.

El Nido is the pinnacle of every Palawan vacation, and that’s mostly thanks to the beautiful islands surrounding it. Located on the northernmost tip of mainland Palawan, towering karst mountains serve as the perfect backdrop for adventures in El Nido. El Nido is the primary base for exploring Palawan’s star attraction, the stunning Bacuit Archipelago. Tiny swiftlets build edible nests out of saliva in the immense limestone cliffs that surround the ramshackle town proper – hence the name, El Nido (nest in Spanish). Out of the many places to visit in El Nido, Duli Beach should be high on your list. This incredibly beautiful, jungle-backed, stretch of golden sand is the center of El Nido’s surfing community. When in El Nido be sure and stop off at Amos’s Restaurant in the heart of the town for a chilled out meal or icy cold drinks after a day of island hopping or surfing in the sun. Their open for breakfast lunch and dinner. Cadlao Island looms overhead. Home to the lovely Cadlao Lagoon (also known as Ubugun Cave), the lagoon offers some good snorkeling in the shallow coral gardens that lie off the beach at the head of the bay. Miniloc Island is perhaps the most interesting of the archipelago’s islands. The main attractions are Big Lagoon, Small Lagoon and Secret Lagoon, three of the more photographed sights in all of Palawan. Coron is just as beautiful as El Nido but just as El Nido’s sandy beaches claim your attention, Coron’s underwater views will stun you. Confusingly, the island of Coron is not on the same island as Coron town but you’ll get used to island hopping here. Of particular interest to wreck and nature divers is Coron Bay, where you can have the unique experience of seeing the wrecks of sunken World War 2 ships that were taken out in the bay in 1944. These wrecks range in depth from 10 feet to as deep as 140 feet, with an average depth of 60-80 feet. Motorized outrigger boats called banca’s take divers from Busuanga Island to the wrecks, which are clustered surprisingly close together: you can spend several days just picking your way through the shipwrecks and dodging the considerable marine life in the area, including yellowfin tuna, groupers, scorpionfish and sea turtles. Apart from that, Kayangan Lake is definitely worth a visit—it was awarded the Cleanest Inland Body of Water in the Philippines—and so is the famous sandy white Calachuchi Beach where a secret lagoon can be viewed on the view deck of the island. Speaking of lagoons, it’s not Coron until you’ve seen the Twin Lagoons. The Twin Lagoon is what it sounds like – a pair of dazzling blue lagoons set amongst a backdrop of vertical, black, jagged karst walls on Coron Island. These jagged cliffs separate the two lagoons and protect them from the currents and tides, making the water clear and calm.

Spread across the waters between El Nido and Coron are the islands of Linapacan. During the 16th century the Spanish sent missionaries to the Philippines, including one to Linapacan. When they landed on shore, they saw footprints, traced them and eventually came to a hut where a beautiful woman resided. She replied that her name was Pacan and they later discovered that she was the wife of the island’s chieftain. They thus named the island Reina Pacan, in honor of the beautiful queen, but which much later was renamed to Linapacan. The main district of Linapacan is San Miguel where the ferries stop. Aside from the crystal clear water, there are the million years old Seniora caves, an old Spanish fortress, cliff diving straight into the ocean, and even jungle trails for avid hikers. There are also two shipwrecks, but the local diving services are not yet fully developed. If playing castaway on a private island in the Philippines is on your bucket list, look no further than Taytay, a small island that’s just off the coast of northeast Palawan. Away from the crowds of El Nido, the island provides quiet, solitude and a back-to-nature approach to island life in the Philippines. Taytay was once the capital of Palawan during the Spanish colonial occupation, and although there’s not much to do in the town itself, it’s a useful jumping off point for island exploration. Taytay is also home to the Kuyawyaw Falls, a series of three falls cascading into fresh pools. Cuyo is the largest island of the Cuyo Archipelago with the biggest population and is situated in between Palawan and Panay. The oldest town in Palawan, Cuyo is full of rich culture which has evolved from both native and Spanish influences. Cuyo is perfect for those looking to relax on the white sandy beaches, take a dip in the crystal clear waters, eat tasty Filipino food, and interact with the locals who believe in a simple, carefree life. For the adrenaline junkies out there, Cuyo is an awesome place to learn kite surfing. Swimming and relaxing on the beach are great, but watch out for the sea urchins! One of the most popular attractions of Cuyo is St Augustine’s Church which was constructed by the Spanish missionaries in the 17th century. Don’t forget about Mt. Aguado where you’ll get 360 degree views of the island. Many places claim to be ‘off-thebeaten-track’ but Rizal, on Palawan’s south-west coast, really fits the bill. With many uninhabited beach coves lining the coastline, you’ll no doubt find

a secluded spot to enjoy the unspoiled white sandy beaches, calm azure waters and some genuine peace and quiet – you’ll likely be the only tourist for miles. Similarly, Balabac is a group of islands in the southernmost tip of Palawan. It is so far south that Sabah in East Malaysia is nearer to Balabac than Puerto Princesa. Although it was once an off-beat location, it’s becoming a more popular destination due to its pristine islands and sand bars. There’s Onuk Island, a private island with white sand, blue water and where you can freedive to see giant clams and turtles. Then, there’s Candaraman island, another great beach which has an area called “starfish alley” where you
can take pictures with literally dozens of starfishes. Palawan is easily accessible by flight into Puerto Princesa from the capital Manila or from other domestic airports such as Cebu, Caticlan (Boracay) with Cebu Pacific or Philippine Airlines. It is possible to fly direct to El Nido from Manila and Cebu but the flights are currently just 4 times a week and more expensive. The drive to El Nido from the airport at Puerto Princesa is quite long at 5 hours. There are also ferries from Manila into the ports at Coron and Puerto Princesa which take almost two days, if the length of your trip allows for longer transfers between islands – and you are not susceptible
to sea sickness. The best time to visit Palawan is from October to May when the temperatures average around 30 degrees with very little rain. The wet season is between June and September which makes traveling around the island less accessible. One cannot help but fall in love with Palawan. After all, when you get to experience UNESCO world heritage sites, breath-taking rainforests, beaches and the stunning natural beauty of Palawan, it is easy to see that Palawan truly is paradise on earth.

he historical elegance of Old Siam has been redefined at Centara Grand Beach Resort & Villas Hua Hin. Built along the classic lines of the 1920s, this colonial style resort was originally known as the Railway Hotel, when the new railway line to Malaysia was transforming the sleepy fishing village of Hua Hin into Thailand’s first beach resort. of elegance. Set on the beachfront, with a wide expanse of gardens perfect for strolling and enjoying the sea breezes, and with a prime town center location ideal for exploring and shopping, the resort is a prime destination for couples and families. Hua Hin is situated on the sunrise side of the stunning Gulf of Siam and remains Thailand’s oldest and most desired beach destination. Being known for the warm, soothing climate along with its serene beach, Hua Hin gradu-
ally became a vacation destination for the kings, the royal households and noble families. Centara Grand evokes that oldworld charm of Hua Hin with its teak furnishings, high ceilings and gracious décor in all of its 209 luxuriously appointed rooms and suites. Each guestroom has a private furnished balcony overlooking the landscaped gardens, the swimming pools, or the Gulf of Thailand. The suites feature generous living space ranging from
60 to 170 square meters, including the option of duplex accommodation. In addition, 42 villas are set amid the extensive gardens in a separate area and feature a colonial décor and the option of an outdoor Jacuzzi or a private pool. Each villa provides absolute privacy while the Premium Deluxe Pool Villas are a luxurious retreat with private pool and outdoor pavilion. With all of its quaint furnishings, the resort does have modern amenities including a bedside control panel, safe deposit box, mini-bar, satellite channels and Wi-Fi
for ultimate comfort and convenience. Recognizing the charm of Hua Hin, in 1921 the director of the state railway, Prince Purachatra personally oversaw the construction and when it opened in 1923, the Railway Hotel became an instant favorite among Thais and foreigners alike as the most luxurious and modern hotel in the region. During the chaos of World War II, stories of Hua Hin’s tranquility continued to spread throughout the East. In 1986, Central Hotels and Resorts and Accor
re-launched the hotel as a Sofitel after two years of extensive refurbishment and their efforts were praised by The Architects Association of Thailand who awarded the Sofitel the grand prize for “outstanding conservation” in the category dedicated to preserving historic Thai buildings. In 2007, the Sofitel was renamed Sofitel Centara Grand Resort and Villas, Hua Hin—the “cen” coming from Central and “tara” which means water in Thai.

hailand has long been known for its beautiful beaches, Buddhist temples, welcoming people, outstanding natural environment and world-renowned cuisine. Not so well known is the regional image it is cultivating as a wine destination. Thai winemaking can be traced back nearly half a century when His Majesty King Bhumibol Adulyadej (1927 - 2016) started investigating vineyard viability.

An Expanding World Of Wine Until recently, the accepted division of the world’s wine-growing regions has been into Old World and New World categories. Old World wines – typically from Europe, steeped in tradition and speaking of terroir and deep-rooted, even ancient rootstock. New World wines – full of fruit and built on sleek modern lines, honed by new technology from countries like Australia and New Zealand, the USA, Chile and Argentina. All of these winegrowing regions fall within the temperate latitudes of 30 and 50 degrees in the Northern and Southern hemispheres. Times are changing, and a host of developments, from climate change to technological and viticultural advances have combined to broaden the world perspective on suitable latitudes for grape growing. What might be called ‘New Latitude’ viniculture can now be found in Thailand, Vietnam and Bali as well as unlikely locations like Bolivia, Ecuador, Kenya, Namibia, India and Sri Lanka, to list a few. It was Thailand based international wine writer, Frank Norel, who at a wine industry conference in 2004 first coined the term ‘New Latitude’ wines to describe this expanding world of wine.
Top Thai Wine Regions Close To Bangkok So where in Thailand can you experience these ‘New Latitude’ vineyards and their wines? Thankfully that’s easy as tourism is well entrenched in Thailand’s wine regions. Vineyards are eager to showcase their goods to local and international audiences and educate guests on how they manage to succeed in such an unlikely climate.

PB Valley Estate It was 1989 when Dr Piya Bhirombhakdi started his mission to produce world-class wines. In the pioneering years of Thai wine-making history, this was indeed a very significant challenge. Spread over 20 hectares, the first vineyard was planted with Shiraz and Chenin Blanc, featuring French rootstock, and Tempranillo from Spain. With the harvest of 1998, PB Valley Winery celebrated its first milestone. A Master Brewer in his own right, and CEO of the Boon Rawd Brewery Co, maker of Singha and Leo beers, Dr Piya Bhirombhakdi gave his initial to name the PB Valley vineyard. Management of the winery falls to Mr Prayut Piangbunta as Managing Director and Winemaker, Thailand’s first nativeborn Oenologist. PB Valley Estate’s current grape varieties include Chenin Blanc, Colombard, Shiraz, Tempranillo, Durif, Dornfelder and Cabernet Sauvignon with varieties like Pinot Noir being added. Now with over two decades of operation, PB Valley Winery sits amidst a lush 320-hectare plantation, of which 80 hectares are dedicated to grape growing. Visitors can take a guided tour of the vineyard and winery before tasting their Sawasdee Khao Yai, or PB Khao Yai Reserve branded wines. GranMonte GranMonte “big mountain” Vineyard is named in honour of the Khao Yai mountain ranges that provide the backdrop and is the story of a vision, driven by Visooth Lohitnavy’s passion for wine. In 1999, a 12-hectare plot of land in the Asoke Valley section of Khao Yai was secured. Visooth, wife Sakuna and two young daughters, Nikki and Mimi soon settled here in preparation for his entrepreneurial pursuit. Visooth studied vines and soil types, choosing the right varieties of ‘vitis vinifera’ to grow and yield fruit for this environment. In 2009 a larger parcel of land was added creating the GranMonte Asoke Valley Winery. At 350 metres above sea level and in a valley with a total area of approximately 16-hectare, GranMonte has the ideal microclimate for growing high-quality grapes for winemaking. Current grape varieties include Syrah, Cabernet Sauvignon, Chenin Blanc, Viognier, Semillon, Verdelho, Durif and Grenache. Having graduated in 2008 with a Bachelor’s degree in Oenology and honours in Viticulture at the University of Adelaide (Australia) daughter Visootha “Nikki” Lohitnavy now oversees the family business. As Thailand’s first female oenologist, she is undoubtedly setting trends within the industry. Visitors to GranMonte can partake in an informative tour of vineyard and winery operations finishing with a tasting of four premium awardwinning wines. ‘Montino’ the cellar door, offers their wines along with 100% fresh grape juice, seasonal fruit jams, cookies, olive dips, red wine jellies, salad dressings, pasta sauces and baked goods. While onsite, visit their VinCotto restaurant for lunch or dinner. More details: www.granmonte. com.

Bumrungrad Health Briefs How Genomic Profiling Finds The Best Cancer Treatment Comprehensive genomic profiling (CGP) is an advanced diagnostic testing method Bumrungrad oncologists are now using to match individual patients with the best possible treatment for cancer. Thanks to recent advances in the diagnostic testing field known as genomic profiling, doctors can match a patient’s test results to the specific cancer treatment with the highest likelihood of success. Here are three important facts about cancer and genomic profiling that help explain the significance of this recent breakthrough, and how patients can benefit from it.
1. Genomic profiling is different from genetic testing.
3. Scientists and Bumrungrad doctors collaborate on results interpretation.
Genetic testing typically focuses on a particular gene or set of genes. Genomic profiling analyzes all of a person’s genes — approximately 22,000 genes in total, though doctors tend to focus on the roughly 300 to 400 genes known to be highly associated with cancer — looking broadly at the genetic code in order to find gene alterations that produce harmful changes at the genetic level. In the case of cancer, gene alterations are associated with faster growth of cancerous tumors.
Genomic profiling yields a complicated set of test results that must be analyzed and interpreted before being put to effective use in a patient’s cancer treatment.
2. Conventional cancer diagnosis has some limitations. The conventional way of identifying cancer is based on where the cancer is located in the body, e.g. breast cancer is in the breast and prostate cancer is in the prostate. Generally speaking, the location is the key characteristic a doctor would use to evaluate various treatment options and decide which is most likely to deliver the best patient outcome. Using lung cancer as an example, the conventional process can sometimes fall short of identifying the most effective lung cancer treatment. One reason is, different lung cancer patients won’t necessarily respond in the same way to the same treatment. In addition, a patient’s lung tumors may have different alterations than the tumors of another lung cancer patient, while sharing similarities in alterations with other cancer types.
Bumrungrad established its own molecular tumor board (MTB), the best-practice process for evaluating patients’ genomic profiling results. The Bumrungrad MTB holds regular meetings with experts from molecular and other science disciplines, together with the hospital’s oncologists using genomic profiling in the treatment process. At the MTB, each new set of profiling results is presented, discussed and deliberated by the doctors and scientists. The global medical community is in the early stages of a shift toward precision medicine, which holds the promise of individually tailored healthcare for each person’s health profile. Conventional cancer treatments are still highly effective. But genomic profiling is making it possible to do even better, and the benefits it offers for diagnosing cancer and identifying the best available treatment can be significant. As the procedure grows in popularity, the benefits are likely to become even more compelling. By Dr. Harit Suwanrusme, a U.S. boardcertified specialist in Oncology and Hematology, Horizon Regional Cancer Center at Bumrungrad International Hospital
Bumrungrad International Hospital in Bangkok is home to over 1,300 doctors and surgeons providing quality in-patient and out-patient care in state-of-the-art diagnostic, therapeutic and intensive care facilities.
