elcome to Issue 11, Volume 7 of HOT Magazine. When you think of Thailand your mind doesn’t conjure up images of cold or frost but Thailand does have its winter perks. From November through to February, the country finds itself in a perfect weather period just after the monsoon-like rains where in some areas of the Kingdom it can get downright chilly. In this month’s issue we take you to five places in Thailand where the temperatures head south. Dig out your jumper and turn to page 38 to see where you can be cool in the land of smiles. Gary Stevens played for England in the 1986 World Cup. During his career he also represented Brighton, Portsmouth and Tottenham winning the UEFA Cup in 1984 and appearing in three F.A. Cup Finals. In 1983 at Wembley, Stevens scored a late equalizer against Manchester United in the 1983 F.A. Cup Final. Khao Tao is a long way from Wembley Stadium but it is where the 57 year old has decided to make his permanent home and he says he is loving life in Hua Hin. During World War Two more than 180,000 POWs and civilian laborers toiled and slaved to construct what became to be known as the Death Railway. Enduring brutalization, malnutrition and terrible working conditions, it is believed more than 100,000 people died during the construction of the 415 km railway. The main symbol of the Death Railway is the Bridge that spans the River Kwai in Kanchanaburi. From the 23rd of November to the 2nd of December the annual River Kwai Bridge Week returns to Kanchanaburi paying respect to the memory of the Allied prisoners of war who built the Death Railway, the event is known for staging one of Thailand’s most spectacular light and sound shows. Mango Tree Worldwide Propels Asian Cuisine To The World Stage The desire for authentic experiences, sustainability in the DNA and inherent heritage appeal are key factors for why Asian cuisine is on the cusp to be the next global cuisine superstar, said Trevor Mackenzie, Managing Director/ Partner of COCA and Mango Tree Restaurants Worldwide, during the Innovation Forum of the Global Restaurant Leadership Conference held recently in Marina Bay Sands Convention Centre, Singapore. In his Innovation Forum talk, entitled “Market Intelligence – Taking Asian Cuisine to the World”, Mackenzie highlighted the tremendous business opportunities for marketing Asian cuisine globally, bolstered by the fact that Asians now comprise the world’s second largest group of globetrotters. According to data by the United Nations World Tourism Organization (UNWTO), the number of Asian travelers to various regions of the world have all doubled and, in some cases, nearly tripled during the period from the years 2000 to 2017. Europe proved to be the most popular destination with 57 million Asian travelers, Mackenzie said, followed by the Middle East (38.8 million) and North America (29.3 million). Mackenzie added that an evolution in eating habits around the world, gleaned from personal observation in his own frequent travels, also contribute to emerging opportunities presented by Asian cuisine. According to him, in Europe, it is becoming more

commonplace to eat Asian food around two times a week while in North America, Asian cuisine has rapidly become more mainstream, becoming a preferred dining choice at least two or even three times per week. “This means that there is still so much growth in the Asian cuisine segment – for at least the next 20 years and even more,” Mackenzie stressed. Younger diners are driving the growth, he pointed out, citing the need to cater to the wants of not only millennials or the Gen Y crowd but skewing even younger. “Millennials may be leading the way now but you’ve already got to wake up to the Gen Z market or you’re going to be behind the curve.”

Factors Driving Global Appeal of Asian Cuisine Among the factors attracting diners to Asian cuisine is the desire for authenticity, Mackenzie said, citing that the relative affordability and ease of modern-day travel has led to increased frequency in travel. The rise of social media and the “sharing culture” or “family-style” appeal of Asian cuisine also feed into the quest for authenticity. The result? Today’s exceptionally welltravelled dining customers now seek authentic experiences, he said. Sustainability is another factor cited by Mackenzie as key to Asian cuisine’s global appeal. He highlighted the “farm to table” dining concept as driven by the sustainability move-

ment and said that with its demand for source-fresh ingredients, Asian cuisine already had sustainability in its DNA, pioneering “farm to table” even before its mainstream popularity. Tying into sustainability, Mackenzie mentioned that with an average of 80 to 100 grams of protein per dish, Asian food presents an ideal opportunity to market to the current generation of diners concerned about reducing their consumption carbon footprint. The emphasis on plant-based ingredients in Asian cuisine, Mackenzie said, is an additional attractive feature for vegan, vegetarian and health-conscious diners. “Again, there’s a great opportunity to plug into this younger generation or anybody who feel like they want to eat healthy.” Lastly, Asian cuisine has the unique combination of possessing heritage appeal, deriving as it is from some of the world’s oldest civilizations, Chinese, Indian, Malay, Thai, Vietnamese, Japanese and more, while evolving to suit the tastes of contemporary diners, especially in presentation. Today’s diners want to know the history of food, where it comes from, the stories behind it, and with Asian cuisine, Mackenzie said, each dish has a story to tell. With the ubiquitous influence of social media, the way each dish is now presented is also evolving, becoming more “Instagrammable”, according to Mackenzie, and providing more opportunities and changes in how Asian cuisine is being marketed.

HOT AROUND BANGKOK Asian Cuisine: The Next Big Wave In order for Asian cuisine to successfully take centre stage on the global cuisine arena, Mackenzie admitted that its biggest challenge is combining effective marketing with the right education – which means more often than not, educating the customers. “There’s a lot of Asian restaurants out there but we shouldn’t just be selling food. I see global expansion as an opportunity to educate people about Asian food, whether it’s Thai food or Indian or regional Chinese cuisine,” he said. “When we’re taking Asian food to the West, it can sometimes be a challenge to educate people about what’s real, what’s authentic.” In conclusion, Mackenzie offered Mango Tree Restaurants Worldwide as a proven case study for an Asian restaurant brand successfully going global. What would you recommend to new-comers to do in Hua Hin and why? Just relax and enjoy a great destination with fab food, markets, golf courses and lots more. Tell us a surprising fact that people might not know about you? I love scuba diving. Back home in Central Europe we don’t have any clear seas to dive in. All we have are lakes, dams and rivers where you have to use dry suits because the water’s so cold. The water’s also very dark so visibility can be 0 cm while the temperature of the water can be 0 degrees. Scuba diving here in the warm, clear waters of Thailand is much more fun. What is the most outlandish thing you have ever done and why? There are some things I would rather not mention! However, this story might relate to the topic. Two years ago, I was invited to a large Indian wedding in London to take care of their Italian food. As a Czech guy, it was quite surprising being flown all the way to London from Bangkok just to cook. But much more outstanding than that was when I proposed to my wife in Central Park, New York

Uncle Bill’s Mekong Kitchen What images come to mind when you say “Mekong”? For me, it’s the wide fast-moving river in north-eastern Thailand with Laos beckoning enticingly across the broad waterway. It’s also the mighty timber rice barges, heavily laden, lumbering slowly to port in the lower Mekong river reaches of southern Vietnam. This is a river that starts life in the high Tibetan Plateau and runs through China, Myanmar, Laos, Thailand, Cambodia, and finally Vietnam. At an estimated 4,350 km in length, it is the world’s twelfth longest river and the seventh longest in Asia. But why all this chatter about the Mekong in a restaurant column? This month ‘Let’s Eat’ visits “Uncle Bill’s Mekong Kitchen”, a Hua Hin eatery that features Vietnamese and Thai food as the name suggests. ‘Uncle Bill’ is actually Australian Bill De Cis who oversees operations along with co-owner and seasoned Hua Hin restauranteur Sirima “Lek” Narongrit (of Coco 51). The use of ‘Uncle’ in this situation is a nod to the Asian cultural practice of referring to an older person (who’s not a family member) in a respectful though friendly manner. And so, to our “Mekong” food journey which starts with a selection of appetisers. ‘Mieng Nok’ - stir-fried minced duck, crispy noodles, served with fresh iceberg lettuce cups and a dipping sauce. Light, bright, tasty and perfect for sharing. Mekong Fish Cakes - deep-fried mousse of fish flavoured with red curry paste and herbs. Delicious. ‘Chao Tom’ or Vietnamese Sugar Cane Shrimp is delicately seasoned prawn mince moulded around sugar cane stalks, fried and accompanied by vermicelli noodles and pickled vegetables. As an added bonus, when you’ve devoured the shrimp cakes encasing the sugarcane you can chew on the cane. Our final starter was Samosa. Perhaps not a south-east Asian dish, these crispy Samosa parcels with a chicken and potato filling were moreish and served with sweetened cucumber salsa.

For mains, firstly two Vietnamese dishes. Grilled Lemongrass Beef Salad ‘Bun Bo Xao’ a warm salad of grilled beef, lemongrass, and onions served with salad greens and steamed rice (instead of the traditional vermicelli). Crispy Stuffed Pancake ‘Banh Xeo’ – a Vietnamese street food classic. Crispy thin crepe made with rice flour and coloured canary yellow with turmeric, filled with minced pork, shrimp and bean sprouts accompanied by two typical dipping sauces. Finally, a Thai favourite – ‘Gaeng Khua Goong’ or prawn curry in turmeric-infused coconut milk with betel leaf accompanied by steamed rice. Delightful spicy undertones as you would hope from a Thai curry and the added peppery notes provided by the betel leaf. A very well-balanced curry and taste delight. Uncle Bill’s Mekong Kitchen also has a Tex-Mex section to their menu which may seem unusual. Bill assures us that this option is very well received by guests, adults and children alike. The Tex-Mex selection provides variety for these diners and keeps the whole table of customers happy. Our final main dish was the Pulled Pork Burrito. A large flour tortilla stuffed with refried beans, pulled pork, topped with cheddar cheese and accompanied by Pica de Gallo - a classic Mexican tomato-based salsa. Uncle Bill’s dessert offering is a choice of six from a refreshing plate of fresh fruit, fried bananas, the classic Crème

Brule. Although they were enticing, we chose two south-east Asian desserts. ‘Bua Loy Mekong’ or sticky rice balls in coconut milk. The ‘rice balls’ are ground black sesame dumplings in coconut milk with Chinese jujube and ginkgo served in coconut milk and offered hot or cold. ‘Ice Cream Boran’ was the second choice and although not the Thai ancient ice-cream as the name ‘Boran’ suggests. This was de-

lectable coconut milk ice cream served in the shell with fresh young coconut pieces and other accompaniments. Our final dessert was a crowd-pleaser and fought over by the whole table for every last morsel. Bunuelo or Buñuelos have their origins in Spain, Portugal and later, Latin America. In fact, in Mexico, Buñuelos are a traditional Christmas treat. They typically consist of a simple yeast dough, thinly rolled,

shaped into individual pieces, fried and finished with a sweet topping. Uncle Bill’s Mekong Kitchen’s Bunuelo is a thin, crispy tortilla covered in cinnamon and brown sugar served with sticky, caramelised pineapple pieces and topped with whipped cream and ice cream for added decadence. A fitting finish to the meal! Uncle Bill’s Mekong Kitchen is an inviting venue with three distinct dining areas. The two open-air relaxingly decorated garden areas, or the enclosed room ideal for larger private groups or parties. Overlooking Soi 94, the raised bar area is ideal for pre or post-meal drinks, with the knowledgeable staff waiting to mix up your favourite cocktail or cold beverage. Being Cool In Thailand

e’re dipping our toes in winter but one hardly thinks of Thailand and imagines cold, frost or even rainstorms. But don’t pack away your cozy sweaters just yet; Thailand does have its winter perks. From November through to February, the country finds itself in a perfect period just after the monsoon-like rains and just before it’s overcome with the hot season. Other than the odd downpour, you can expect smooth sailing, should you decide to jet off to any islands whilst you’re here – something that can’t be guaranteed should you come in Thailand’s rainy season instead. Cool season in Thailand also coincides with the tourist high season, which means that you will inevitably have to pay a premium to visit this beautiful country in its most temperate climate. Although most of the country will still be experiencing a temperature of around 30° Celsius, there will be far less humidity, making for a much more comfortable travelling and sight-seeing experience, and the islands will still be as pristine and inviting as ever. The only exceptions to high temperatures will be in the north of the country – the likes of Chiang Mai and Chiang Rai in the northern highlands will be pretty cool, making for perfect hiking conditions and backdrops of lush green mountains and rice terraces enveloped in mist. Most people arrive in Thailand to escape the cold, their destination being mostly Phuket or Krabi but there are some places that you must visit

1. Wang Nam Khiao Wang Nam Khiao is reputed to have the purest air in Thailand and the temperature here is no joke—it can drop to 10 ° Celsius at night. Winter is the best time to visit this district in the northeastern part of the country. The name literally translates to “Castle of Green Water” because the waters are so clear they reflect the vibrant greenery around. Indeed, with its soaring mountains, lush greenery and the delicious fresh air, you’ll find it aptly nicknamed the Switzerland of Isan. Whilst you will encounter many beautiful vistas as you travel around Wang Nam Khiao, some of the most picturesque views can be admired from Thap Lan National Park. The second biggest national park in Thailand, gaze out across the towering mountains and verdant jungles, peer down into yawning valleys, inhale the fresh air, and feel at one with Mother Earth. Also, the vibrant Flora Park is open to the public during the months of December to February. The scene of the yearly Flora Fantasia Festival held in January, the park is a magical riot of color with blooms from all around the world used to create gorgeous displays.

2. Khao Kho The district of Khao Kho is home to Petchaburi’s most beautiful mountains. Less than a 5-hour drive from Bangkok, the weather here is cool all year round and can drop to 12ºC from late December to early January. The breathtaking mountain range is reminiscent of the hilly peaks of Switzerland. From the picturesque hills to the fountains and lavender fields, this place is an absolute dream getaway. Khao Kho is a treasure trove of mountain viewpoints but the best one would be an hour away, at Wat Prathat Phasornkaew. Hidden up in the mountains, this place of worship has everything from intricately adorned pillars to a grand pagoda that stands majestically in the center. The walls, floors and pillars are plastered with different shards of ceramic, beautifully arranged to give a mosaic effect and a unique finish to the place. The impressive Buddha structure is an all-white statue jazzed up with silver embellishments that help to reflect the sunlight, giving the illusion that the statue is glowing.

If you visit during November to January, you can take a walk in Thailand’s biggest sunflower fields, Muak Lek Sunflower Fields which has been described as the “field of a thousand blooming suns”. Khao Kho is the best place to find the sweetest strawberries in Thailand so don’t miss out on that but most especially, do take the time to enjoy the stunning views from Phu Thap Boek Mountain, an hour away from Khao Koh. You don’t need to climb up the mountain for this, as you can easily drive to the viewpoint. There’s also Khao Takhian Ngo where you’ll get a view of the fog surrounding the mountains like a sea of clouds. But even if you decide to visit during the hotter seasons, you’ll still be able to catch the sun creeping up from behind the mountains with a little sliver of mist shadowing them.

3. Chiang Rai In comparison to its more popular neighbor, Chiang Mai, Chiang Rai doesn’t get much visitors but that is precisely why you should go. There is a real mystique to the surrounding mountains and hill towns, and winter flowers weave in color at every turn. The cool breeze sweep in from November to February, making it one of the coldest places in Thailand. Clear blue skies and relatively cool temperatures encourage ticking outdoor adventures off your list, from cruising down the Mekong River to joining a guided trek to visit hill tribes in the Golden Triangle, where the borders of Thailand, Laos, and Myanmar meet. One of the best places to visit would be Phu Chi Fah (translates to mountain pointing to the sky) mountain area and national park where you’ll find a spectacular view of the sunrise and sunset. The mountain is part of the Phi Pan Nam range and its tallest peak stands at 1628 meters. It’s most iconic view, is at sunrise where you can see the mountain tops, peaking above a sea of morning fog. Even the site of this viewpoint itself, is a dramatic image. Standing from afar you can see the silhouette of its jagged cliff-top edge, and the outline of the dramatic cliff-drop, which overlooks a sweeping valley below.

4. Pai The district of Pai is a three hour journey from Chiang Mai but it is definitely worth it. The streets of Pai town seem quaint at first glance but it is the countryside that will make you stay. Pai has a number of awesome waterfalls to visit, which is perfect because the area can get pretty hot during the day. But as the temperature drops, head over to the Muang Pang Hot Springs. Just an hour away from town, a cold-water stream flows over boiling-hot rocks to create a soothing, heated pool surrounded by lush scenery. Soaking in the hot spring here is just as good as an onsen in Japan but if you would rather be alone, then you need to search for the secret of Pai—the super-secret hot springs. They’re a bit out of the way, near the Ban Tin That village but the trip itself is breathtaking. Here, the water from the hot spring flows in and mixes with the cool river water, making it a place to cool off and warm up at the same time . And don’t miss the sunset from Pai Canyon, 7 kilometers away from town. Pai is part of Mae Hong Son province and the village of the same name is just two hours away from Pai, should you decide to visit. Tranquil and rugged, it is a small Chinese village and it is just the place to be if you want to experience a blend of Thai and Burmese culture

5. Lampang A part of Northern Thailand with much to be discovered, Lampang is a small and peaceful town with a rich history infused with Lanna, Mon and Burmese culture. The exquisite beauty of Lampang is evident throughout the area and if you are looking for a unique and offbeat location to explore, this is the place. The name of Lampang, which is also called “mueang rot ma”, translates to “horse carriage city”. It is the last city in Thailand where you can still find horse-drawn carriages in regular use for transportation. So travel back in time and look at Lampang as the locals did a century ago. During the cold season, Lampang has an all-day sweater weather of 16ºC. You can head down to the hot springs at Chae Son National Park and pamper yourself at their hot and cold mineral pools. However, don’t mistake all their hot springs for bathing pools. Lampang is known to have pools with temperatures as high as 39ºC, and since they’re too hot to bathe in, they’re used to cook eggs instead.

While you’re here, don’t miss this once in a lifetime opportunity to visit Lampang’s most mesmerizing attraction – a literal “Castle on a Hill”, Wat Chalermprakiat. The name may be a mouthful, but it’s the way the complex is perched among the mountain pinnacles that will make you stutter in awe. It may be a long climb, but you won’t be complaining once you reach the top and set your eyes on the 360º panoramic view of Lampang. Far and away, Thailand’s cool season is the most comfortable time to visit. This is when the northeast monsoon blows in cool and dry air, which offers a much-needed reprieve from the heat. This also marks the celebration of different Thai festivals such as Loy Krathong Festival where people release small boats made of banana leaves and decorated with flowers and a candle in the center into ponds, lakes, or rivers to thank the Goddess of Water, to honor the Buddha and to let go of the past and welcome in the future. Thousands of flickering lights floating quietly in the water make this a truly magical sight. Just prior to that would be the Yee Peng Lantern Festival in Chiang Mai where people release thousands of paper lanterns with candles in the center into the sky. And although Thailand isn’t predominantly Christian, Bangkok gets into the holiday spirit every year and in a pretty extravagant manner. In a country where the seasons barely change, the cool season is one of the best and most popular times to explore Thailand.

Gary Stevens Makes Hua Hin His Home

ua Hin has everything. Beautiful beaches, upmarket hotels, fine dining and a wide selection of shopping malls, water parks, golf courses and fun family activities. It hasn’t been home to many international celebrities but one famous former footballer has decided to call the seaside resort home. Gary Stevens played for England in the 1986 World Cup. During his career he also represented Brighton, Portsmouth and Tottenham winning the UEFA Cup in 1984 and appearing in three F.A. Cup Finals. Khao Tao might be a long way from Wembley, where Stevens scored a late equalizer against Manchester United in the 1983 F.A. Cup Final. But the 57 year old has decided to make it his permanent home and says he is loving life in Hua Hin, “I live in Khao Tao, I have always dreamed of living on the beach and my condo is a stone’s throw away. There’s a few restaurants and cafes and it is ten minutes to Bluport or Market Village so it’s a little bit out of town but Hua Hin is still really accessible.” Stevens spent several years living in Bangkok. But when Hua Hin Airport started offering international flights the opportunity to live by the coast became irresistible, “Hua Hin was a place I explored with my girlfriend and we both loved it. I work as a pundit for Astro Supersport in Malaysia and when Air Asia opened up the flight from Hua Hin to Kuala Lumpur it meant I could fly there directly.”

Stevens has coached two teams in the Thai Premier League, or T1 as it is now known. He regularly receives offers from elite clubs in Thailand and beyond but says he really enjoys the lifestyle in Hua Hin, “I came here to coach Army United in the Thai Premier League, I coached Thai Port too but clubs here hire and fire managers very quickly. Thai Port used five different managers in a single season, so there is not a lot of job security in football. I have had a few offers but nothing that would tempt me to leave Hua Hin.” Stevens might no longer be coaching in the Thai Premier League. But he is still extremely busy and is the head coach and coowner of the Black Mountain Hua Hin Football Academy as well as working part time as a football expert for the Astro Supersport television network in Malaysia. He holds a UEFA Pro License, the highest coaching qualification in the sport of football. But Stevens is no stranger to coaching young children, “I ran my own football coaching business in England called ‘Football Tots’ and we worked with children from 4 years old up to 18. For me the coaching principles are the same whether you are working with young children or senior professionals; they have to enjoy it and you have to help them develop and improve” The Black Mountain Hua Hin Football Academy opened its doors in 2018. But it has grown very rapidly and Stevens says he is very impressed by the facilities,

“We are really lucky to be able to use the pitch at the Hua Hin International School, it is better than the pitches I worked on at Army United or Thai Port and the equipment is better too so even though the players aren’t professionals the setup is actually more professional in many respects.” As well as coaching the players Stevens has also spent some time with the coaches, sharing the extensive knowledge he has accumulated during his own career, “I have been very impressed with the other coaches so far and we have put in place a development program so I can work with them and help them improve. It’s also a really valuable experience for me, even after decades in the coaching game there is always more to learn.” It is a long way from the cut throat world of top tier professional football in Thailand. But Stevens says he gets a lot of satisfaction from working with children who are just there to enjoy the sport rather than to forge a competitive career, “It has been a breath of fresh air for me to work with children who have so much enthusiasm, their love of the sport really shines through. What I really get a kick out of is seeing children gaining in confidence, making new friends and learning life lessons that will help them away from the football pitch. Plus there’s a real sense of community at Black Mountain, everyone is very friendly.” He has also helped to pioneer a charitable scheme to give children from impoverished backgrounds the opportunity to train at Black Mountain, “I am a keen golfer, albeit a bit out of practice at the moment, and the golf course at Black Mountain is one of the best in Asia so I’ve really enjoyed getting a few rounds in. But I am also aware that a lot of children in the area don’t have the opportunity to attend a prestigious international school or to live on an award winning golf course resort and we have set up a scheme that allows them to come and play football completely free of charge.”

Under the scheme that Stevens helped to introduce children from the nearby Wang Bost and Nong Hieng schools are able to come and train football at Black Mountain for no cost, “Thanks to the generous support of Black Mountain and Sansara we are able to offer scolarships to local children who attend the government schools. They get free training, free kits and even free boots and now that I have made Hua Hin my home I feel it is important for me to give something back to the local community with a project like this.” The Hua Hin International School first opened its doors four years ago and has grown rapidly. The golf course at Black Mountain was founded in 2007 and has a reputation as being one of the best in Asia, there is also a water park and the brand new Sansara development is close to completion. The area has been transformed from a remote rural community to a thriving international destination with world renowned facilities. Stevens sees a lot of potential for the football academy to grown and has ambitious plans for the future, “The school seems to have grown very fast and we have new players signing up at the football academy every single week. We have already organized some small tournaments for local teams and schools at Black Mountain and now that there is a brand new road we plan to put on more competitions for teams in Hua Hin and beyond.”

Stevens was in the headlines earlier this year because his old club Tottenham Hotspur reached the final of the UEFA Champion’s League. The last time they reached a European final he was heavily involved, scoring a in the penalty shoot out to secure a dramatic victory over Anderlecht in 1984. As a pundit for Astro Supersport he follows the fortunes of his former clubs very closely and Stevens has been pleased by the progress both Brighton and Tottenham have made in recent years, “For Tottenham to reach the Champion’s League final was huge, even if the match itself didn’t go their way. I started my professional career with Brighton so I’m really pleased to see how they are progressing, as a pundit I am strictly neutral but it gives me a lot of pleasure to see them playing in the Premier League.” Any local veterans teams hoping to add the former England international to their ranks are destined for disappointment. Stevens says he has hang up his boots for good, “I got invited to play at the opening of the new Tottenham Stadium last year but I said ‘no’ because I am a very active person and I worry about getting injured and losing my mobility so I think my playing days are behind me. I still enjoy a game of golf and one of the best things about living in Hua Hin is that there are so many course to play on and so many different people to play with.” Stevens played football before the start of the Premier League era when player salaries surged to levels that would have been unimaginable in the 1980s. So he might not have the same jetsetting lifestyle as famous former England internationals like David Beckham or Rio Ferdinand But the 57 year old is very clearly enjoying life and feels that Hua Hin is the perfect place to do just that, “I like the weather, the people, the beaches, the food and the local culture. If you had told me 30 years ago I would have ended up living in Hua Hin I would have thought you were mad but I’m really happy here, life is good.”

River Kwai Bridge Festival

he annual River Kwai Bridge Week is set to return this year from 23rd November to 2nd December in Kanchanaburi. Paying respect to the memory of the Allied prisoners of war who built the Death Railway, the event is known for staging one of Thailand’s most spectacular light and sound shows. The event is held in conjunction with the Kanchanaburi Red Cross Fair with an aim of promoting tourism and creating greater awareness of Kanchanaburi as a destination for both domestic and international tourists.

For the duration of the Second World War, Thailand was still known as Siam and, until Japan invaded Siam in December 1941, the country had been officially neutral. The invasion meant Japanese troops could – with Siam’s cooperation rather than an entirely forced hand, it has to be said – pass through the country en route to invade Malaya (modern-day Malaysia and Singapore) and Burma (now Myanmar), both British colonies. Kanchanaburi’s proximity to the British colony of Burma made it an ideal spot for Japanese forces to gather and prepare for offensives

against the British. Originally called the Thailand-Burma Railway, more than 180,000 POWs and civilian laborers toiled and slaved to construct the railway, while enduring brutalization, malnutrition and terrible working conditions. It is believed more than 100,000 people died during the construction of the 415 km railway – showing precisely why it came to be known as the Death Railway. Yet whilst the bridge may be the most well-known section of the railway, it wasn’t the most arduous – the Hellfire Pass has that distinction even if it isn’t used today. Workers toiled

for as many as 18 hours a day and long into the night having to cut into rock in remote hills without proper tools for the job. Yet they completed the railway ahead of schedule. This isn’t a fairy tale – there’s no happy ending. Over one hundred thousand laborers died, all for a railway that wouldn’t survive for much longer after the war was over. The sheer loss of life was shocking. Today, this event pays respect to their memory while balancing the freedom of all who attend. Their story is told in an exciting yet poignant reconstruction through

Light and Sound where the audience sees an exciting battle scene with simulated effects including life-like explosions, flying bomber planes and the most memorable of them all, trains running through fire when the bridge is first revealed. With two shows a day, a total of 1200 seats will be available per show. Tickets can be purchased before the show. Many other archeological exhibitions, folk shows, food stalls and more and a complete schedule of actives and events round out the fair. Cemetery and, further afield, Chungkai War Cemetery – both spotlessly cared for by the Commonwealth War Graves Commission – are the places to pay respect to the fallen. Museums also offer the opportunity to learn more about the Death Railway, including the JEATH War Museum and the Thailand-Burma Railway Centre. But while you’re here, you can also visit other famous attractions including Sai Yok Noi waterfall. The waterfall is 2km from Nam Tok Sai Yok Noi station, one of the area’s war related attractions and part of the surviving railway line.

Kanchanaburi is a three hours’ drive out of Bangkok and a little longer from Hua Hin. Both history and nature lovers will love this place. It really doesn’t matter if you’re neither—Kanchanaburi is one of those hidden gems you can’t help but love. There are waterfalls (23, officially known), caves, rivers, jungle trails, national parks and a remote part known as Sangkhlaburi. This remote part of Kanchanaburi is located 200km north-west of Kanchanaburi, towards the Thai-Myanmar border. Sangkhlaburi has some amazing attractions in the jungle such as the Kratengjeng Waterfall a beautiful waterfall accessed via a heavily overgrown jungle trail. The most iconic attraction in Sangkhlaburi is the Wooden Mon Bridge which crosses Lake Vajiralongkorn, the longest of its kind in the world. Other attractions include an underwater temple, Srinakharin Dam, Vajiralongkorn Dam, Mueang Sing Historical Park, Wat Ban Tham, Wat Wang Wiwekaram, Three Pagodas Pass on Myanmar’s border, elephant sanctuaries and floating night markets and last but not the least, the Bridge on the River Kwai.

The River Kwai Bridge is one of Thailand’s more recent historical attractions. When the bridge was built, the water beneath it was actually the Mae Klong River, although it did join the Khwae Noi River elsewhere. As the bridge became famous, it was referred to using a not only incorrect but also mispronounced name, soon becoming known as the River Kwai (which means ‘Buffalo River’). To make life easier, the waterway was renamed the Khwae Yai, which at least comes closer to what tourists now know it as. The bridge that stands today is a reconstruction of the original bridge but it serves as a tribute that commemorates the sacrifice of British, American, Australian, Dutch, and New Zealand prisoners of war, in addition to many Thai, Myanmar, Chinese, Vietnamese, Malay, and Indian laborers.

n comparison to the neighboring town of Chiang Mai, Chiang Rai is far from its description as a sleepy provincial town. Close to the borders of Laos and Myanmar, the city is home to an incredible number of temples—from historic jeweled monuments to unusual contemporary artworks. Situated in the Golden Triangle (the region bordering Myanmar and Laos), Chiang Rai was once a hub for the opium trade. Today, however,

it’s famous for more benign attractions like the Black Temple and eye-popping White Temple yet it still doesn’t see the same influx of tourists that Chiang Mai does. Although a quick search of things to do in the area leaves many feeling a bit underwhelmed, there is more to Chiang Rai than meets the eye. There are 1,011 temples in Chiang Rai, that’s about three times more than in Bangkok. Some of these temples date back to the early 13th Century

in the time of the Lanna Kingdom, while others have been constructed only in recent years. Wat Rong Khun (the White Temple) is by far, Chiang Rai’s premier attraction. Carved with painstaking detail, the pure white, ornate facade and path leading to the entrance are deeply symbolic of desire, greed, suffering and the heavenly. It’s a religious complex unique even in Thailand. It was designed and created by local artist Chalermchai Kositpipat.

Wat Rong Suea Ten translates to the house of the dancing tiger, however, it is commonly referred to by foreigners as the Blue Temple. This temple was only recently completed in 2016. Though the exterior is similar to the White Temple, the interior is painted in a bright blue color with gold detailing, and a large Buddha statue at the end of the main room making it one of the most photogenic spots in Chiang Rai. And you won’t find much informa-

tion about it online because it’s a new temple but don’t forget to visit the Big Buddha, Guan Yin at Wat Huay Pla Kang. Mountain trekking may be one of the most adventurous things to do in Chiang Rai. In these regions, you will also get to visit some of the authentic minority tribes such as the Karen, Akha, and Hmong ethnicities. In addition, Northern Thailand is filled with hidden waterfalls, the best being Khun

Korn Waterfall. The 1400 meter walk isn’t that bad when you get to have a refreshing dip at the end. Pu Kaeng Waterfall (also spelled Phu Kaeng Waterfall) is considered to be one of the best waterfalls in Chiang Rai and all of Thailand. This waterfall consists of 9 levels flowing through the dense jungle. You will hike through the jungle for about 45 minutes from the starting point up to level 9. The trail is slippery and overgrown as not many

people visit. Pu Kaeng Waterfall is a great destination to get out into wild Thailand. But if you want to stay safe, the Pong Phrabat waterfall in the Lam Nam Kok National Park consists of a couple of pools and a small cascading stream. The entrance to the waterfall is at the end of a long road veering off to the mountains behind the Rajabhat University. That area is a great picnic location. Last but not the least, don’t forget about the Huay Kaew Waterfall. It is a beautiful two-tiered waterfall, located deep in the forest. Hardly any tourists make it out this far. The road to Huay Kaew Waterfall in Chiang Rai is a steep and badly potholed dirt/ concrete trail. The route follows the

Kok River before heading deep into the forest. Near the end, you will pass tea plantations surrounding the Pha Soet Village and come across a sign for the waterfall. From here it is a bit of walking up the hill, but not far. Combine the Huay Kaew Waterfall, the Pha Soet Akha Village and the Huay Mak Lium Hot Spring for a great day trip from Chiang Rai. There’s no better way to get the lay of a city than from above. Doi In Cee is a viewpoint on the western edge of the city few make it too. The temple grounds are worth a quick look around, but the panoramic view is the main attraction here. One of the highlight of

Chiang Rai would be Phu Chi Fa. As one of the province’s most scenic locations, it lies tucked away in the northeastern corner, two hours’ drive from the city itself. The jagged rocky summit of Phu Chi Fa allows you to stand way above the clouds where you can watch the sunrise. Down below in the valley is a small village along the border of Laos. Another fantastic viewpoint is Doi Pha Tang. It is located 30km north of Phu Chi Fa, near the small ethnic Chinese settlement called Ban Pha Tang. Be sure to stop by Ban Pha Tang on your way to try out the delicacy – stewed pork and steamed buns. The local restaurant offers a fantastic view of the mountains.

The liveliest attractions in Chiang Rai are the weekend night markets. Much like the ones in Chiang Mai, the large open-air markets can be found with lots of pop-up stalls selling food, clothing, souvenirs, and artworks. You’ll find yourself among a large crowd of tourists here with live music pulsing along in the background. If you can’t decide between the two markets, why not do both? Or go to the Chiang Rai Night Bazaar. The bazaar is open daily from 6 pm to midnight and it is a popular place to hang out at night for good food, cold beer, and live shows. Some nights there is live music, other nights there may be live theatre or Thai comedy shows. You won’t always

understand what they’re on about, but its great entertainment. The stalls around the bazaar offer a wide range of handmade goods from the surrounding ethnic villages. You can also find other typical market type goods such as clothing, food, and painting by local artists. Chiang Rai is considered one of the art capitals of Thailand. There are a multitude of talented artists, their skills ranging from landscape paintings to modern sculptures. Don’t miss out on the Black House (Baan Dam), once the home and studio of the late and renowned artist, Thawan Duchanee, it is now a museum for his work. The Black House is often referred to as the Black Temple and it contrasts sharply

with the stunning aesthetic of the White Temple. Be warned, it is not for the faint hearted. The Black Temple consists of 40 unique buildings, mostly designed in traditional yet gothic Thai architecture. Inside lies a bizarre but impressive, intricately carved woodwork, exhibits of animal remains: meticulously displayed skulls and bones, black thrones made of antlers, an entire elephant skeleton and skins hanging from wood beams. The vibe here is dark and, for animal lovers, seemingly sadistic but surprisingly peaceful. There’s serenity to the museum that you won’t find at its often crowded counterpart

Near the center of town, you’ll find the Chiang Rai clock tower. One of the city’s most distinguished landmarks, the clock tower was designed by the same artist who decorated the famous White Temple. However, if you want to see the clock tower at its best, then you must watch the 10 minute light show which runs every night at 7 pm, 8 pm and 9 pm. The King Mengrai Monument is another popular attraction right near the town center in Chiang Rai, about a 15 minute walk northeast of the clock tower. This monument is dedicated to the founder of the Lanna Kingdom in northern Thailand (the ancient kingdom of Chiang Rai and Chaing Mai) back in 1296. It is a good way to learn a bit about the history of Northern Thailand, and an easy stop if you’re doing a quick walking tour around Chiang Rai. Going to the beach may sound odd, but it is actually one of the most relaxing things to do in Chiang Rai. Chiang Rai beach is located about 4 km outside of town along the Kok River. It is a great place for a local lunch in one of these bamboo huts surrounded by the forest. You can go for a swim in the river which is a refreshing break. Be careful swimming during the rainy season as the current can get danger-

ously strong. It is fairly safe to swim or tube down the river in the dry season from October to March. Thailand is hot, but in the winter, Chiang Rai is in a place of its own. As the air temperature drops to freezing one of the best things to do in Chiang Rai is to soak away in a natural hot spring. Many of the Chiang Rai hot springs can be difficult to get to, and drivers may even refuse to go to those which are further out but if you have the opportunity to go, don’t hesitate. The Secret Hot Spring is a naturally heated lake set high up in the mountains and a natural infinity pool. If you’d rather not be in a large crowd, there is the Pong Phrabat Hot Spring. Although it is cheap and the closest hot spring to Chiang Rai, don’t expect a scenic setting like the Secret Hot Spring. However, few venture here so you have your privacy. And saving the best for last, the Huay Mak Lium Hot Spring is located along the Kok River in the Lam Nam Kok National Park, about 24 km north-west of Chiang Rai. This is one of the nicest hot springs in Chiang Rai. The hot spring is set in a relaxing forest setting. The water temperature is extremely hot at 65 degrees Celcius, unsuitable for swimming but good for boiling eggs.

Chiang Rai is three hours north of Chiang Mai by bus although you can fly in directly from Bangkok as well. Weather-wise, November to February is the best time to visit the region. Itâ&#x20AC;&#x2122;s the coolest and driest time of the year. The annual Yi Peng festival happens in November every year and it is one of the most festive times to be in the region, the other being Loy Krathong. The rural vibes are soothing and a great place to unwind and relax. Chiang Rai is often overlooked, and tends to be a place used as a stopover for Thailand to Laos or Myanmar. If you take the time to stay here, you will find it has so much more to offer than a city to just breeze through.

Bumrungrad Health Briefs How Testosterone Replacements Protect and Restore Vitality Testosterone and other hormones decline with age. Fortunately, hormone levels can be restored, giving men the energy and vitality of their younger selves. Testosterone is the predominant male hormone and plays a major role in a man’s health and well-being. It is a source of energy and vitality, helping build a man’s muscle mass and bone strength, maintain his sexual function, sharpen his memory and concentration, and keeping his mood under control. The bad news is, testosterone levels decline as a man ages. After peaking in the late 20s, testosterone declines about 1% per year. By the time a man turns 80, he is likely to have only about 20% of the testosterone he had at 25.

Testosterone Deficiency (TD) Explained Hormone levels fluctuate frequently. Doctors typically consider a normal testosterone level to be in the range of a minimum 300 nanograms per deciliter (ng/dL) up to a maximum of 1,000 ng/dL. A man with an average testosterone level below 300 ng/dL is classified as having low testosterone (low-T). A testosterone level at least 20% below the 300 ng/dL normal minimum is termed testosterone deficiency (TD).

Rising Health Risks Declining testosterone can produce unwanted changes — reduced energy levels, mood swings, reduced sex drive, erectile dysfunction, declining bone mass, and more. Hormonal decline raises the risk of chronic diseases, including cardiovascular disease, cancer, diabetes, osteoporosis, dementia, depression and obesity.

What can be done? There are proven ways to restore hormones to optimal levels, i.e. the level of hormones at age 25. Diet, exercise and sleep changes can make a significant positive impact on hormone levels. Incor-

porate more foods that promote hormone production and healthy body weight. Exercise stimulates hormone production; you will need to exercise 4 to 5 times per week. Cutting back on sleep can produce a quick and drastic decline in hormone levels. It is important to go to sleep at the same time every day for 7 to 8 hours and to be asleep at the time the body produces hormones, which means well before midnight, the peak time for hormone production.

Bio-identical Hormone Therapy If lifestyle changes do not achieve enough of an improvement, the next best option is usually bio-identical hormone therapy. Bioidentical means completely natural and identical in structure the body’s own hormones. These are not steroids or synthetic hormones. Before any recommendations can be made, your doctor will measure various hormone levels. There are number of methods available for taking the replacement hormone, including tablets, gels, creams, injections and implants. Periodic blood tests will help your doctor monitor the changes in your hormone levels over time. Men who begin testosterone replacement therapy usually notice a difference almost immediately in terms of feeling more energetic and vital. If you are experiencing symptoms similar to those described earlier, talk to your doctor, first to rule out other possible causes, and be sure to ask about having your hormone levels checked.
