elcome to issue 2 Volume 6 of HOT Magazine. This month we are pleased to give you our thoughts on where to dine, where to relax and where to holiday. We also introduce you to two interesting people along the way.
Next up we introduce you to Hong Kong socialite and beauty fashionista Helen Ma. Helen grew up in a well-known family, her mother Joyce founded Joyce, a fashion retailer in Hong Kong and mainland China with 66 locations. Educated in the States, Helen knew early on that fashion was her calling but what she didn’t see coming was that she would also become a beauty queen. Pull up a chair and turn to 48 for our interview.
This month the HOT Magazine team had the pleasure of dining at the French Restaurant Brasserie Cordonnier in Bangkok. A truly creative eatery, walking thru it’s doors feels like you’ve exited a time machine where philosophy, poetry and architecture mesh to make dining an unforgettable experience. It is owned by the same group that created the secretively hidden but very popular Havana Social Club which is just down the street, page 26.
HOT Magazine also had the pleasure of sitting down with Eddie Russell, a southern gentleman from the great State of Kentucky. Eddie and his dad Jimmy are the Master Distiller’s of Wild Turkey Bourbon. Jimmy’s been with Wild Turkey for 63 years and Eddie 37. Eddie was in BKK to put on a master class for 200 bartenders but found time to sit a spell with us and talk about his interesting life in the booze business. The jewelry designer DO4LOVE chose the estate home known as R1 for their jewelry fashion photo shoot because of its luxuriousness and its gorgeous gardens. R1 is located approximately ten minutes west of Hua Hin’s center, on a very large and private land plot encompassing 4,096 square meters. Luxurious, without being ostentatious, this five bedroom, seven bathroom home, plus maid’s quarters, is a dream family and entertaining abode. MCC At The Anantara Hua Hin Resort & Spa Four years ago, a Hua Hin resident named Lizzy, later to be known as the “Grande Dame of Hua Hin,” came up with an idea to raise money for charity by holding monthly social events for Hua Hin expats and Thai’s alike. She envisioned an evening with a wonderful buffet, free flow of drinks and live music for dancing. She saw it as a way for expats and Thai’s to mingle and for friendships to be forged. She wanted to call this gathering a “Multi Cultural Community” or “MCC” for short. Of course, there were the naysayers, telling Lizzy that it would never work. But instead of listening to these people, she ventured forth, challenged to make it work. Now one might suppose that the Lizzy’s venture started small and grew over time but that’s not what happened. What happened was quite different. MCC was a huge success from the very first event and continued to fill the Hilton Ballroom month after month. Over the years it got so big that it became too much to try and do every month so Lizzy cut back her MCC to every couple of months. On January 22nd at the Anantara Hua Hin Resort, Lizzy held another of her MCC events, this one celebrating the organization’s 4th anniversary. On hand were many VIP’s including The Austrian General Counsel Gerhard Goetz, Mr. Thaweesin Pattanapiras, Member of the Provincial Parliament, Deputy Lord Mayor, Khun Montri Choophoo & Hua Hin District Chief, Khun Nukhoon Wattanatkhon.

Black Mountain to host Thailand Long Drive championship finals The word is out. Thailand will be staging its hunt to discover the kingdom’s most powerful and longest hitter of the golf ball. Tagged as the “Thailand Long Drive Championship 2018”, the event will be open to all Thai male nationals above the age of 18 years. A total of four qualifying rounds will be staged at the following venues, followed by the final at Black Mountain: • Northern Region: 2-3 February (Chiangmai Stardome) • Northeast Region: 9–10 February (Mountain Creek - Nakhon Ratchasima)

Chef Xavier Charest-réHel takes the helm at Big Fish & Bar Chef Xavier Charest-Réhel is the exciting new Head Chef at Big Fish & Bar, the seafront dining destination at Hua Hin Marriott Resort & Spa. A Canadian national, Chef Xavier is only 25 but has a lifetime of culinary experience, having been born into a family of chefs and worked in kitchens from the tender age of 12. Having started his career at L'Incrédule, the sophisticated French bistro in Longueuil, Quebec, he then joined Toqué!, the stylish Montréal venue that is headed up by star chef Normand Laprise and was once selected as the “Best Restaurant in North America”. Laprise took young Xavier under his wing and the two formed a close relationship. Having started out as a pot washer, Chef Xavier rose through the kitchen ranks to become Commis Chef and then Chef de Partie, before moving to Laprise's second restaurant, La Brasserie T!, as Sous Chef.

t is perhaps already far too entrenched in the past for most of us to recreate the poetic yet tumultuous setting of early 20th century Paris. Us, a society which blessed with the advent of technology have grown so accustomed to it, that we take it for granted. It is perhaps also difficult to portray the uniqueness and the significance that food had back in the day, when mass production and distribution

didn’t bring every type of cuisine to everyone’s reach. But in the beauty of its irony, a brasserie at the heart of Bangkok’s nightlife street has recreated this feeling. Walking into the Brasserie Cordonnier is stepping into a time capsule to the past, where food, philosophy, poetry and architecture mesh to make dining an unforgettable experience. The HOT Magazine
team had the pleasure to spend an evening at this restaurant, where we were treated to a fantastic culinary experience. We started off with drinks, which would set the standard for the remainder of the evening. First came With Love from Monet. Not your regular kind of drink. But then again, none at this stylish place are. Served in a hip flask next to a

tub of lime-based jelly and a thin paintbrush, this whisky-based negroni represented the folly of artists back in the day, who gathered in these rustic bistros to drink, chat and let their imagination fly before putting thoughts to canvas. The idea resides in painting your cocktail, by dipping the brush in the lime solution and decorating the edge of the glass. Smokey and bearing a strong punch, it embodied discrete
hints of liquorice complemented by the lime. Lumière was the next cocktail. Tangy and refreshing, it was served within the confines of a hollowedout lightbulb, with the tradition being that whoever drinks it is to be photographed with an instant camera, a portrait later added to the wall behind the bar if the client doesn’t want it.
Soon came the food, which started with the Terrine de Foie Gras façon Cordonnier. This delicate appetiser consisted of home-mage foie gras and toasted brioche with grape chutney topped by grape slices. The creamy texture of the fresh foie gras was fantastically coupled with contrast from the grapes, which very beautifully combined with the brioche to bring a perfect balance.

The came the Ratatouille Froide Revisitée, an innovative version of this classic French dish with added sunflower seeds and mint. It exuded freshness, which was really brought out by it being cold. The Escargots de Bourgogne would follow: large, fresh and well cooked, the taste and aroma coupled perfectly with the garlic, finished beautifully by the sauce. Next would come the Soupe à l’Oignon Gratinée, an impeccable French onion soup which was definitely the highlight of the entrees. Served with baguette and homemade chicken stock, it was creamy, well balanced and soft to the palate, with the gratin emmental cheese stringing off the top and adding a deep smoky flavour. We’d then move on the Poitrine de Poc Confite, exquisite and tender pieces of pork belly, a house recipe which contained onions and baby potatoes and combined to perfection with the taste of the contrasting red apple. The Boeuf Bourguignon was the next dish, an incredibly rich and wellprepared beef stew which combined with perfection with the glazed carrots. The permeating taste of the bacon was the perfect companion to the mushroom and the red wine gravy. A truly classic trio.

Then would come the Magret de Canard Poêlé, an incredible delicacy of cherry duck breast seared with mashed potatoes and brown jus. The freshness of the duck combined perfectly with the surprise topping: pan-seared foie gras which provided the perfect balance to the contrasting jus. The desserts were worth a celebration. First came the incredibly rich Mousse au Chocolat, which along with the chocolate crumble and Chantilly gave it a deep flavour full of character. Then came the Nougat Glacé Sauce Fruits Rouges, a fantastically crafted dessert containing iced nougat, dried apricots, raspberries, strawberries and grand marnier, all topped with a red berry sauce. The perfect combination of soft and striking flavours made the dish incredibly special, with the citric touches of the fruit doing the beautiful texture of the nougat justice. But the highlight was without a doubt the Crème Brûlée à la Pistache: an incredible pistachio crème brûlée with beautiful texture, with a caramelised top breaking on the strike of the spoon to reveal a perfectly cooked soft centre. The aroma of this dessert permeated the palate as the creamy flavours of the pistachio base combined with the striking sweetness of the caramel, creating an incredible culinary experience. The Brassiere Cordonnier is definitely a restaurant worth visiting if one appreciated quality French food. Manila Redux
T
here are cities in the world that are known for having a mix of everything. From tropical climate, a hectic afternoon rush hour, beautiful architecture, lovable people and an incredible history, to fantastic sights, great beaches, amazing food and an outstanding biodiversity. One of such cities is not too far away from the Land of Smiles and is the capital of an iconic South East Asian nation, one of the most populous in the world dissected into more than seven thousand different islands. This month, HOT Magazine goes back to

Manila to again explore the beauty of its culture, people and incredibly rich historical legacy. Manila is one of the most iconic cities in the world. Among its most well-established tourist attractions is Intramuros. Intramuros has its origins in the day of the Spanish empire’s rule of the Philippines back in the 16th century, when an expedition of explorers set off from the South American bastion of New Spain, now modern-day Mexico, and made its way into Manila through battle and an eventual victory over native inhabitants of the island.
On doing that, the Spanish declared the area to be the new capital of the country but would often suffer setbacks from invading forces such as Chinese pirates or simply from environmental disasters. This drove colonialists to begin the construction of a wall around the city in order to stay protected. They would call this Intramuros, which in Spanish could translate to “within the walls.” It was built by Philippine and Chinese workers and given that it was not planned in accordance to any specific architectonic guidelines, it took centuries to complete, the last of
its works finishing in the late 19th century. The wall was built irregularly and thus does not have a uniform height throughout its entire enclosure, with some stretches rising to about two and a half metres and others dwarfing that with an elevation of almost seven metres in height. The wall covers about 64 hectares of land and a moat surrounds it. Inside the enclosure, one finds an array of different architectural beauties. One of them are the gates of Intramuros, which are former
entrances to the city comprising eight gates. Three of them – Puerta de Banderas, Puerta de Postigo, Puerta de Santa Lucia – face West. Another three – Puerta de Almacenes, Puerta de Sando Domingo or Puerta de Aduana and Puerta de Isabel II – face north. The one and only facing south is the Puerta Real and the same applies for the solitary Puerta del Prian, which faces east. One of the most recognisable icons inside Intramuros is the San Agustin Church, which is currently a museum. It is a roman Catholic church built in the 18th century by architect Juan
Macías and its current form happens to be the third construction of this Augustinian church on the same plot of land. It is symbolic for being the first ever religious structure to have been built by Spanish colonisers on Luzon island and it withstood eight highly intense earthquakes in 1645, 1699, 1754, 1796, 1825, 1852, 1863 and 1880. It is known for being the site in which the country was handed over to American forces by then Spanish Governor General Fermin Jaudenes.

San Agustin Church Later in the 20th century when the forces of the Japanese imperial army occupied the Philippines, it would serve as a concentration camp. It would also be the only surviving church out of seven which were enclosed within the walled city to withstand the attacks it would sustain during World War Two in May of 1945. The most infamous of events during the Japanese occupation was that which occurred during the last few days of the Battle of Manila, during which many hundreds of citizens were taken hostage inside by soldiers of the Japanese army and scores were massacred. The church’s architecture is a work of marvel, and was inspired by the temples that the Augustinians built in New Spain. The structure which currently stands was erected at the end of the 16th century in 1587 and would see completion 17 years onwards in 1604. The entire church bears symmetrical patterns and makes it a work of meticulous precision, which attracts scores of people on a daily basis. San Agustin Museum is definitely a highlight within the historic walled city of Intramuros and a site worth visiting when travelling in the vicinities. Another one of the most attractive sites within the Intramuros is Fort Santiago. Fort Santiago is a citadel within the walled ancient city which was built by the Spaniard Miguel López de Legazpi. López de Legazpi was a conquistador in charge of the Spanish empire’s assets in the East Indies and so vast was his influence that the capital of the Philippine state of Albay, is named after the conqueror. As one of the more important structures within the historical confines of Intramuros, Fort Santiago was notorious for containing prisons out of which some prisoners never made it out, especially during the period of Spanish colonial rule and subsequently during the advent of World War Two.

Its notoriety was surpassed when one of the heroes of the Philippine struggle under the rule of Spain was imprisoned at the site before his execution. Charged with rebellion, sedition and conspiracy, José Protasio Rizal Mercado y Alonso Realonda, better known as José Rizal, would write one of his last poems – Mi Último Adiós, or My Last Farewell – in a prison inside Fort Santiago and hide it in a stove, which would later be given to his family. He is the first Philippine activist believed to have been killed solely for his writings. Fort Santiago has a perimeter of about 620 metres and curiously has three prominent sides that make it resemble a near triangle. The triangles jumped to British rule in the 18th century before seeing the American flag raised from its bastion. It took heavy damage during World War Two under Japanese occupation and was the scene of at least 600 American deaths. Today the notorious prisons and the bastions within the fort can all be visited along with a memorial statue of José Rizal. The beauty of the entire area makes of the place an ideal spot in which to have a picnic or a walk, as one gazes at the historic sites and beauty of the structures.

If you feel like you need to do something by car however, we recommend you take a ride on the Jeepney. A trademark mode of transportation of the island, the Jeepney is a combination between a Jeep and a jitney. They were formerly made with leftover American Jeeps from the United States Army, who dispensed of them after their military presence in the area during the Second World War. Jeepneys have today become an iconic way to travel Manila, with some boasting of serious swag levels as they’re adorned with fiery contrasting colours and kitschy accessories. Think of them as song taews on LSD – or what they would resemble in Alice in Wonderland. They have however been regulated across the years, with the government imposing an age limit on Jeepneys which are older than 15 years of age. Manila is truly one of the world’s most enchanting capitals one can visit, and certainly among the most charming in South East Asia. If you’re a historical freak, the best place for you is the lovely ancient fortressed city of Intramuros. If you appreciate architectonic elegance head over to the San Agustin Church museum, where a legacy of beauty will couple the elegant design of the structure. If not, head over to the Fort Santiago and bask in scenic views it has to offer. But don’t forget to get on the Jeepney earlier or later. Whatever you may end up doing, Manila is truly a city worth visiting while on vacation.

here are some businesses which completely change the notion, idea and direction of the industry that they’re part of. In no case does this hold greater truth than in the world of beauty, fashion and skincare. Ever changing and ephemeral, trends, renovation and innovation mean that it can often be challenging to picture what else can be improved. But a beautiful new spa in the heart of Bangkok’s neighbourhood of Thong Lo has

On the top floor of a large community mall in Thong Lo lies the Penthouse by BFF. Hot Magazine had the pleasure of being invited to test it out and see what all the fuss was about, something which definitely did not disappoint. Upon
exiting the elevator, the Penthouse by BFF welcomes you into a cosy waiting room, with large curtains shielding the afternoon sun and noise from disturbing the peace of the spa, where the welcome consists of imported Taiwanese tea and water. I was welcomed by the therapist, who walked me past a number of private relaxation pods and entered the therapy room, where every detail has been meticulously checked to suit a particular ambiance. The lighting is
dim and relaxing, the music soothing, the scent hypnotising and imported, along with the ergonomic treatment chair and most of the décor. I was firstly treated to a haircut, explained to me in great detail and during the cut I was told how the spa had grown to be the favourite weekend and lunchtime destination of many a-list celebrities in the country. In an interview with Bryant Olson, managing director of the spa, he said that most of his clientele are

But not all of them come from Thailand, with the customer base ranging from Laos and Cambodia to Bhutan and Nepal. I was looking much less scruffy than I did when I entered – and ultimately ready for the hair treatment that would ensue. After careful deliberation by the therapist, he decided to put me through the Santa Monica treatment, which upon applying one of Philip B’s signature skincare products, would ensue into a gentle head massage on the automatically reclining therapy bed.

Bryant told me that the inspiration behind the Philip B product line, which has drawn acclaim from the likes of Sharon Stone, Madonna and Drew Barrymore, was born in a Beverly Hills salon, where Philip B decided most products in the market were not good enough for his standards. Chemicals, preservatives and excessive water bases made them low-grade, something he wasn’t ready to settle for. In contrast, his products are entirely natural, have no chemicals or preservatives and their richness has allowed them to do things such as reducing hair loss – something the therapist told me exultantly as he explained how even implants had failed in the past. Bryant explained how this sold well in Asia because of the amount of hair loss, something he attributes to imbalance in tap water. He said

there is no big factory process in the making of Philip B products and how they even changed colour overtime – owing to their purity. Some of them have gold – which is allegedly a good mineral for the skin and most have oud, or agarwood, a type of wood with an extraordinary aroma. Its exorbitant price means that the company only uses small amounts of it in its products, enough however to leave a sweet and long-lasting aroma on the skin. The most expensive Philip B product contains amber oil, harvested just once a year in Jaipur, India. As I was getting the head massage, I was told about the different types of treatment other than the Santa Monica. The West Hollywood, the Malibu or the Beverly Hills – the latter being the most requested treatment amongst the Thai elite. He may have
mentioned more, but the snooze had definitely kicked in before that. Every customer in the spa is woken up by a bell – something quick, snappy and a less awkward alternative to the cautious whisper. Helen was sent to the United States to further her education. Upon graduating, she had planned on working for an established, luxury fashion house. Unfortunately, according her, fate had another plan and she ended up in the beauty industry. According to Helen “My first job was at Guerlain. Two years later, I moved to Joyce, coincidentally at a time when they were about to introduce Joyce Beauty. Yet again, I found myself in the beauty department. I opened the first Joyce Beauty boutique in Hong
Kong’s Russell Street, Causeway Bay and it was the first multi-skin care beauty store that carried an extensive list of brands from all over the world including Aesop, Caudalie, Chantecaille, Nars, Laura Mercier, Penhaligons... you name it, we had it! It was very successful and quickly expanded, and before I knew it I was looking after 40 brands. Three years and three stores later, I found myself as the President of EviDenS de Beauté, having been appointed as their Brand Ambassador. In hindsight, I believe that this is not just a coincidence. It seems that I’m destined to be in the world of beauty and skincare after all. In 2015, after spending several weeks abroad, Helen came back to Hong Kong and proudly announced that she would be bringing EviDens de Beauté to the United States, naturally starting in Los Angeles. According to Helen, “Although this wasn’t what I had planned, I’ve embraced my ‘destiny’ and what life has given me. At the end of the day, I just want to be great in all that I do, whether it’s promoting or creating a line of products that empowers woman to be comfortable in their own skin, or being a great mother, and creating a legacy for my daughter to takeover, should that be in her destiny too.” With HOT Magazine’s ethos being Luxury Living and Exclusive Lifestyle it was only natural that we would seek out Helen Ma to pick her brain on what it is like being Helen.

HOT: Helen what was it like growing up in Hong Kong with such a famous family? HM: All though I grew up in a famous family, I was always taught to stay low profile, I grew up the same like all others, nothing made me feel like I’m any better than everyone else, it’s good to be humble, I hate to be introduced with titles, family names or even pedigrees. I can’t stand the idea of “living off one’s family or social ranking.” I’ve always wanted to be myself, to create my very own thing, which I did and I’m very proud of that. HOT: You have been labeled “Hong Kong’s Best Dressed,” but what were you like in high school? HM: I have always been passionate about fashion, inspired by my mom, as she was always dressed very glamorously. Back when I was in high school, I was like all dressed up, dressed to impressed, every day spent hours doing full make up, trying so hard to look mature and it was a bit scary. HOT: Helen, you attended University in California, did you like living in the US? And Why? HM: I actually attended high school and university in San Francisco. I liked living in the US because it was all so carefree, the weather was so nice, the people were pleasant and very down to earth. HOT: Have you always had this passion for the beauty and fashion industry? HM: I have always had the passion only for fashion industry, never on beauty until I got my first job at Guerlain which I never liked it, then my sec job at Joyce Beauty which I started to appreciate working with different brands. Since then beauty and I became one. I never got a chance to work for a fashion brand or in the fashion industry, although it was once my dream. Ever since then, I don’t dream about fashion anymore. HOT: What was the first brand that really you dazzled you? HM: The first brand that dazzled me has to be the 80’s Gucci mod look by Tom Ford and the D & G tee with the labels out. HOT: Did it take time for you to find success or was it instantaneous? HM: I am still finding my way to success, there is just so much to learn, and I love learning from experience. There is no better lessons than polishing

yourself from stupid mistakes. You see things clearer, you grow up rapidly and you feel older, you are not that little girl anymore. HOT: Can you “name drop” a few of the big companies you are working? HM: My clients are Tiffany, Van Cleef & Arpels, Hong Kong Land, DFS, Giuseppe Zanotti, The Macallan, La Prairie....etc etc HOT: We have heard you described as the “Paris Hilton’ of Hong Kong; does that flatter you? HM: First of all I’m not anywhere close to “Paris Hilton” & although people might have thought I had a life style that looked like hers, but that was a time in my life that I did nothing but jet set around the world, party and shop. That life at this juncture gives little meaning, PLUS my family doesn’t own the biggest name of a hotel chain, so I don’t feel flatter at all. HOT: Do you feel social media is important in promoting the brand and selling your products? HM: Social media is very important nowadays in promoting brand and products. I feel it became the key thing you need to do now, forget about advertising, social media is something now you can’t miss out. HOT: What are some of your favourite luxury brands at the moment? HM: Balanciaga, Givenchy, Roger Vivier, Tiffany, Chanel... HOT: We know that you have been working outside Hong Kong and into mainland China, What are two main business differences between the two? HM: Working everywhere and anywhere, all you need is connection, and you basically can’t work without a good connection, especially in China. Once you have a good connection you build your working relationship, that’s how it works and there is no other way. HOT: We understand you are now a Mom, have you found it challenging balancing career and parenting? HM: Yes I’m not just a mom, but a single super mom and I’m proud of being one. I find it very difficult to balancing career and parenting. You need to sacrifice and find time to do things, to prioritize things, make sure the passion is there, to be able to love, to give more love, bonding, hardworking and believing in all you do. It’s not easy, but nothing comes easy, when you want the best out of it.
HOT: What will we be seeing from Helen Ma in the next 10 years? HM: In the next 10 years from now, I wish to be relaxed, enjoying life the way I wanted to be, traveling, holidays and spending more time with my daughter, helping her in choosing her university and guiding her career...hopefully if my mom is still around and healthy, I will be super blessed. HOT: You have traveled over all over the world, what has been one of your favourite destinations? HM: My favourite destinations have to be London, Milan and Japan. HOT: We know that you have traveled to Thailand in the past, what was one of your best memories? HM: The best memories in Thailand was 2 yrs ago in Phuket with my daughter. HOT: Will the kingdom of Thailand be seeing you anytime soon? HM: The kingdom of Thailand will certainly be seeing me very soon I hope, I love Thai people, they are very kind and nice, I love the place, I love the food, I love the culture, I believe in Buddha and most importantly the vibes and the energy. Right now we are working some business opportunity to work there, I would be so thrilled if it happens :) if not, it’s always nice to go there once to twice a year for pleasure. I mean i live just to0 close to the paradise so I don’t see why not? HOT: Finally Helen, tell us a little more about yourself. When you have free moments, what do you like to do, where do you like to go and what is the most outlandish thing you have ever done? HM: When I find some free moments, I like to hike, I like to travel, I like to stay under the sun, I like to spend quality time with friends and family, I recently like to read books that talk about all wired healthy tricks, what to eat, how to exercise etc etc. Believe or not, the most outlandish thing I have ever done is being a single mom, it feels good to have a daughter, it feels good to raise a child, to teach them, to love them and it feels good to give thanks and to give back. Life is all about teaching, learning, loving and giving.

nantara Hotels and Resorts is once again hosting the King’s Cup Elephant Polo Tournament by the banks of Bangkok’s mighty Chao Phraya River from March 8th – 11th, and this year’s event promises to have even more fun elephant festivities for the whole family. The four day festival will have a full range of activities including an impressive opening parade, children’s educational day and Ladies Day known as The ‘Bangkok Ascot’ where visitors can rub shoulders with local celebrities. Other entertainment during the event includes a pop up Thai food festival organized by TV’s Iron Chefs, popular bands and DJs playing well into Friday and Saturday evening and wellness and fitness activities. Now in its sixteenth year, the festival has become one of the biggest charitable events in Southeast Asia with over US$1.5 million (BHT 50 million) raised and donated to projects that better the lives of Thailand’s wild and domesticated elephant population. Funds from the 2017 event were donated to various projects including the Zoological Parks Organisation of Thailand which supports veterinary and educational projects to improve the year-round lives of elephants and mahouts in the Surin Province where ex-street elephants face ongoing hardship. The donations have also funded South East Asia’s first ever workshop to teach mahouts and vets the benefits of Environmental

Enrichment to keep elephants happy as well as the construction of a watch tower in a village whose crops are raided by elephants, allowing villagers to watch and warn other villagers of approaching elephants in a safe manner for both people & elephants. Donations also funded a conservation education trip to a National Park for the children and next generation of hereditary mahouts to learn the importance of elephants in the wild; the transport of Thai elephant vets to international conferences; funding Thai Government aid to teach mahouts to act as veterinary assistants and provide basic first aid and other medical care to their elephants; as well as community based Human Elephant Conflict mitigation projects in two Thai and one Tanzanian National Parks and the purchase of equipment for anti-poaching rangers in a Cambodian National Park. Other significant benefits from the money raised by the tournament include: the ongoing Thai Elephant Therapy Project which has been underway since 2009 in conjunction with Chiang Mai University’s Department of Occupational Therapy, with future clinics to include children with Down’s syndrome and other conditions now committed until the end of 2018 as well as the funding of Asia’s first workshop to show traditional elephant trainers and camp owners the benefits of Positive Reinforcement Training for captive elephants with additional workshops this year in Myanmar reaching teams responsible for over 200 elephants.
A total of 20 unemployed exstreet elephants will take part in the event, during which they will receive full veterinary checks from the Zoological Parks Organisation of Thailand, under the patronage of His Majesty the King of Thailand and the Department of Livestock Development. In addition, all elephants are given essential vitamins, food and care which are not available to them during their normal daily lives. The welfare of the elephants that participate in the King’s Cup Elephant Polo Tournament is of paramount importance, with strict rules ensuring that the pachyderms are well cared for at all times. By imposing a “no micro-chip, no game” rule, Anantara guarantees that all participating elephants have been domestically bred and not captured from the wild or smuggled in from neighbouring countries. The annual event was awarded a silver medal for Sports CSR Initiative of the Year at the Asia Sports Industry Awards in 2016. A Conversation with
Eddie Russell
I
n the American State of Kentucky, about 20 miles West of Lexington, along the banks of the Kentucky river, is a factory, a distillery actually, that manufactures the great American invention known as bourbon. Up the road is a 3-generational family called the Russell’s. For the last 64 years they have been unapologetically distilling a little bourbon we know as Wild Turkey. There are many instances of famous fathers whose sons have followed in their footsteps, Julio & Enrique Iglesias, Kirk & Michael Douglas and even Presidents, George H. & George W. Bush.

In the bourbon world, that corollary is Jimmy & Eddie Russell. Both have achieved the title of Master Distiller and both have been inducted into the Bourbon Hall of Fame. In the Bourbon world, 84-year-old Jimmy Russell is a Rock Star who holds court with bourbon aficionados wherever he goes. In 2014, the now 83 year old master distiller, celebrated his 60th anniversary at Wild Turkey. During his tenure — the longest of any master distiller in the industry — Russell has seen some three million barrels distilled under his supervision. Fittingly, Russell’s milestone fell during National Bourbon Heritage Month and was celebrated with a
new special blend, Wild Turkey Diamond Anniversary, crafted by Jimmy’s son, Eddie, who himself has spent 37 years with the company. Eddie Russell was recently in Bangkok to share his knowledge of Bourbon to well healed bourbon drinkers as well as to 200 Bangkok based bartenders at a special event held at the Pullman Grande Sukhumvit hotel. It is here that HOT Magazine had the distinct pleasure of sitting down with Eddie to discuss bourbon and his family’s place in its history.
HM: Eddie, we saw a few facebook posts of you with a large group of Bourbon connoisseurs at the Character Whiskey and Cigar Bar in Bangkok two nights ago and it looks like they were enjoying hanging out with you. ER: Yes, when I travel like this I always make a point to get out and meet the consumers but what I’m mainly here to do is to educate the bartenders because they are your first ambassador. They are talking to their customers, serving a bourbon drink and sharing their knowledge about it HM: How do you become a master distiller? ER: Well, there’s no school, no appointment, no test. When I came thru, a master distiller was someone who started out at the bottom of the barrel so to speak and worked their way up. Now days it’s a little different, people are calling themselves a master distiller when they aren’t even making Whiskey. For my dad, it took about 17 years
before he became a master distiller. It was 34 years for me because my dad is still working, you should really only have one master, but its just learning everything. I started as the bottom employee, rolling barrels, mowing grass, painting buildings, whatever anybody else didn’t want to do. I did that for about six years and then my father brought me into the distillery and taught me how to make the yeast and mashes. I worked in bottling, I worked in maintenance and then I took over the maturation end of it, so it’s just learning everything. For me, you can be a distiller but to be a master there shouldn’t be that many of us. When I was growing up there were just 4, Booker Noe, Elmer T. Lee & my dad, Jimmy Russell & Parker Beam, those were the few that were out there. But they had all grown up in the industry and most of them have been past down from generation to generation HM: You were inducted into the Bourbon Hall of Fame, is that a pretty close-knit organization?

ER: Yes sir, 99% of the bourbon is made in Kentucky and most of us are within 40 miles of each other. We’re all good friends with one another and help each other out. It was really 5 or 6 guys that kept this industry alive when it wasn’t going so well. In the 70’s Bourbon and all brown goods weren’t doing so well because Vodka came out and my generation didn’t want to do anything our parents did so we went with something different. HM: We read in an interview that you did that you had come from a small town and that you never envisioned that you would follow in your Dad’s footsteps. That you wanted to move to the big city. How small is your home town?

ER: My little hometown is only 10,000 people. The reason we are there is because we’re next to the Kentucky River where we get our water for making Wild Turkey. Growing up I wanted to get a college degree and get away, which was one thing, and the other thing was that my dad worked 7 days a week. I was never out of the State of Kentucky until I got out of high school because my dad worked every day. He worked all the time because he loved what he did. My dad’s 83 and he doesn’t get their everyday anymore, he doesn’t walk so well, but he’s there most days, and he still loves it. HM: We saw the television interview you and your dad did on Fox News where you mentioned
how you got hooked on the distillery. ER: Yeah, I had a year of college left and I was hoping to kind of take it easy that summer. My mother however wanted me out of the house, so I went to work there. It’s a Union atmosphere and I was the bottom man doing the worst jobs but within a couple of weeks I just knew it was home for me. I always tell people that one of the big reasons was that I figured out that they paid my dad to drink bourbon every day. And that’s definitely part of it but it just felt like the place for me. I just loved being there. Most of the people that worked there I had known my whole life, it was and still is a very family type atmosphere.
HM: Going back to the Fox interview, Jimmy said that you have employees that are 3rd and fourth generation family’s that work there. ER: Yes, certainly. When I came there, there were husbands and wives, one man had 3 sons there, but mainly in those days the ladies worked on the bottling line and the men worked in the plant, because your foolin with 500 pound barrels. Now adays there are women working out in the plant and the bottling is much more computerized and machine run so you don’t need as many people. Today it is different, we have a lot of management people, but back then my dad was the master distiller, human resources, union negotiator, everything. Me personally, for years, I hired every person, I took care of all vacations, I got everyone to work every mornin, it’s a little different now. My son is coming along and he won’t have to do that, he’ll be strictly learnin the bourbon business. My son Bruce will be 4th generation and he has been a brand ambassador for us in Texas and he was the same way. He wanted to move to a big town but now he wants to come back and basically apprentice. HM: When you come out with a new brand like Russell’s Reserve, is that something you and your dad do together or is there a whole group of people involved?

ER: There is only about 5 of us who do the tasting. For my dad and Booker and those guys I always used to tease them that if it was up to them we would have only one brand because they thought they made the best Whiskey. For us it was 8 year old 101. That’s still our biggest seller. For Jim Beam it was White Label. Our industry was so small focused; who they promoted too, how they marketed, everything, because they mainly marketed to a 50 and older southern gentleman because that’s who they thought the market was. So me, comin in there as a younger, I wanted to get more people into drinking bourbon. Doing the Russell, it was a little smoother and softer but still had the Wild Turkey spice. We then did the 81, making it more of a mixable bourbon for the bartenders. For my dad, you don’t put anything in the bourbon but some ice cubes. When I first went out on the road everyone was like, “son, you’ve got some big shoes to fill” because my dad was considered the master distiller of master distiller’s, that’s what his friends called him. I learned
really quickly not to screw up what he had built, because he built this company basically. But I had to show my way too and that’s where the Russell’s and the 81’s and a few others I have goin on now. It’s just a little different taste profile to try and bring more people in. But as I said earlier, the bartender community has really changed our industry because the average consumer now is a male or female in the 25 to 40 year old range. HM: When you sit home at night, and you have the full Wild Turkey product line in front of you, which bottle do you reach for? ER: Well I like the Russell’s line because I developed it and its more my taste. I drink more 101 than any product we’ve got because you can get that anywhere, but at home it’s usually Russell. I have a 10 year old and a single barrel Russell. It’s a little different in the taste profile, it’s a little smoother and creamier. My dad and Booker liked a whiskey where you knew you had a drink, it’s big and bold and stuff.
HM: Are you like your dad and just drinking it with ice? ER: Most of the time but I do enjoy a good cocktail. One of my favorites is a Boulevardier which is bourbon, sweet vermouth, and Campari. HM: Campari bought Wild Turkey in June of 2009, were there any changes made with the new owner? ER: No sir, that’s the good thing about our industry, no one really understood how the bourbon industry worked. We were owned by Pernod Ricard, which is the 2nd biggest spirits company in the World, from 1981 to 2009. When they bought us I remember them sending us over a VHS video Cassette and it was the CEO and he said “Jimmy, you just keep doing what your doing.” Most of the brands you make and bottle today and you sell the next day. For us it’s 4 days of making it and then it sits for up to 13 years before we sell it, so we have a lot of money tied up in inventory. Campari has spent a lot of money on us. Pernod got so big we kind of got lost in the shuffle a little bit but Campari came in and spent 50 million dollars building a new distillery, 44 million building a new bottling facility and then a new warehouse. They’ve spent around 120 million dollars on us since 2009. For my little hometown, that’s huge. 70

HM: With the new factory I would imagine they brought in a lot of new automation. ER: Yes sir and I was behind most of that. We didn’t have computers at my distillery until 1990. In fact, I was the I.T. guy at the time because I was the only one who knew much about it. For me we can be much more consistent with computerization and automation. During my dad’s time, every valve was opened and closed by hand and he liked that “hands on” approach but with computerization we’ve become much more consistent. HM: With the advanced automation have you lost employees? ER: No, we actually have more employees now. Our company owns Sky Vodka and we do their bottling at our plant and when you factor in the growth in Wild Turkey sales we have almost double the number of employees that we used to have. HM: How big of a facility do you have in Kentucky? ER: We own 750 acres but that’s because before prohibition there were 13 distilleries in my little home town and now there are just two, us and Four Roses. When prohibition ended

we bought up a lot of the ground next to the river. As I said earlier, the river is our water source and the water is very very important to our product. We actually use though about 150 of those acres because we have so many storage buildings. I have 700,000 barrels aging in our 29 storage buildings. HM: Looking at your international market, has China kicked it? ER: No, not really but I am going there in August. We’re hoping they take a liking to it but we also have to worry that if they do that we can keep up because what I am making today I won’t be able to sell until 6 to 13 years down the road. This bourbon boom that were experiencing has caused this problem for a lot of distilleries, they weren’t prepared for it. My dad however, with all of his experience, he sort of understood and planned for it. I do long plan forecasting in November and this year I was looking at the year 2030. Marketing and Sales, they have big plans, but someone who has been in it for 37 years, you know there are always ebbs and flows and this has been a really big spike but there will be a leveling off point.
HM: What’s a typical day like for you at the distillery? ER: (laughing) Kids always grow up not wanting to be like their father’s but I have turned into my father completely. For me the first thing I do every day, like my dad, is walk around the fermentation tanks and see how it is going. I’ve then got 60 to 80 emails to answer, putting out fires. And then I’m in the lab tasting whiskey, you can’t do the tasting all at one time, so I taste throughout the day. In between I’m checking in with my warehouse gal, checking on what we need to pull and make sure its coming from the right places and I sit in on a lot of meetings, basically making sure all the pieces of the business fit together. Something else I do is take care of the private single barrel sales, which is quite big in America now. I’ll bring people in and have them taste several barrels and let them choose the one they want. Then it’s back to tasting Whiskey. Also, now that I am the face of Wild Turkey I have to be there to meet with VIP’s who are coming in to take the tour. Those could be big distributors, Big retailers or large bar owners; shakin hands and kissin babies as they say. HM: You’ve been here in Thailand for a few days now, where else have you been on this trip? ER: It’s been a 16 day tour. I started in Japan and was there for a week. Japan is our 3rd biggest market. When I started in 1981 export was 6% and Japan was probably 5 of that. They’ve always been a great brown spirits market, but it’s ebbed and flowed there. There are a lot more brands there and of course Japan’s Suntory bought Jim Beam Bourbon and they’ve pushed that hard. I’ve also been to the Philippines. I was telling my wife, the last two years I’ve been to Poland, Austria & Switzerland, places I never thought I’d sell bourbon, even the Asian countries where its so warm, you didn’t know whether bourbon would work, but it’s a really good brown spirits market. HM: Have you had a chance to see any of the city at all? ER: A little bit, I got to see some temples, rode on a long tail boat, took a tuk tuk, sky train and the subway, so I’ve experienced a lot of great things. It’s been really nice to see some of Thailand, I don’t usually get that luxury.
