he America’s Cup, the pinnacle of yacht racing, was first contested in 1851, making it the oldest trophy in international sport, predating the modern Olympic Games by 45 years.
The trophy’s roots date back to when a syndicate of businessmen from New York sailed the schooner America across the Atlantic Ocean for the World’s Fair in England. The schooner won a race around the Isle of Wight against a fleet of British yachts to claim the £100 Cup. From there, the United States embarked on what would become the longest winning streak in the history of sport. A 132-year stretch saw boats representing the country successfully defend the trophy 24 times from 1870 through 1980—until 1983 when Australia II became the first successful challenger to lift the trophy from the Americans. Earlier this month, off the coast of Auckland, the 36th Challenge for the world’s oldest international sporting trophy provided a thrilling series of match races. Sailing spectacular, futuristic, 75-foot, foiling monohull yachts, America’s Cup Defender, Emirates Team New Zealand, racing their secretive, Te Rehutai, faced the Challenger, Italy’s Team Prada-Pirelli racing battle-hardened Luna Rossa. Matthew Pearson, Founder of Airspeeder and Alauda aeronautics, recently revealed the world’s first fully functioning electric flying racing car.
The Airspeeder Mk3, is a full-sized remotelyoperated electric vertical take-off and landing vehicle (eVTOL). It will compete in an upcoming remotelypiloted Airspeeder racing series that will stand as a technical test-bed and feeder series to a manned racing series in 2022. The unveiling of the vehicle represents the realisation of more than three years of development work to create a sport that will accelerate a new cleanair aerial mobility revolution. Movenpick Asara Hua Hin Resort Executive Chef Josu Sedano Martin Shines At Exclusive Wine Dinner On Saturday March 6th, at the Mövenpick Asara Resort & Spa Hua Hin, an evening of fine dining took place that highlighted the talents of the hotel’s Executive Chef, Josu SedanoMartin. A product of the Basque Country of northern Spain, Chef, Josu put together a menu with a Mediterranean touch. Collaborating for the evening was Independent Wine & Spirit (IWS), who carefully selected old world wines that paired perfectly with the delicious courses served, like 40* Wild Salmon, Foie Gras Terrine, and Kurobuta Pork Belly. Hua Hin locals, as well as guests of the hotel enjoyed the special evening event.

Josu Sedano-Martin What is your full name and age? My name is Josu Sedano-Martin. I am 54 years old. What is your current Job Position? I am the Executive Chef at The Mövenpick Asara Resort & Spa in Hua Hin. How long have you lived in Hua Hin or been coming to Hua Hin? I have been coming to Hua Hin for many years as a visitor but moved in permanently last October after the compulsory quarantine in Bangkok. What did you know about Hua Hin before you moved here? I always liked the long stretch of beach, the fresh seafood restaurants and specially the golf courses. What do you like most about your profession? The ability to travel and work in different places in the world, meeting diverse cultures and cuisines. Putting a smile on the face of a satisfied guests is one of the most satisfying experiences. Having done several Hotel openings and coming back years later to those hotels and seeing those kitchens and restaurants you designed, some staff you hired, even some signature dishes still in the menus! What do you like least about your profession? Probably packing and unpacking, and the ability of some airlines to still lose your luggage. Also, saying goodbye to colleagues with whom you have shared so much after many months working in remote, beautiful places. What do you like most about Hua Hin? The size of the city, everything is at hand. The sea and its bounty and the perpetual smile and gentle disposition of the people.

What is your favorite restaurant and why? (please don’t promote your own restaurants) Daddy Deli in Hin Lei Fai by Chef Peter. His dry aged meat is cooked to perfection or wrapped for you to cook at home, the rest of classic dishes in the menu are flawless too. For a quick dinner on freshly made sushi you cannot go wrong with Aroi Sushi on Soi 6 and finally Duangkaew Cuisine on 83/158 will surprise you with some modern, perfectly executed dishes too. What do you like to do in your free time and why? I like sports. I enjoy tennis and golf, swimming, eating out and reading history and non-fiction books. What would you recommend to newcomers to do in Hua Hin and why? Enjoy the beach and the fresh seafood or admire the charming architecture of palaces and train station of the 20s and 30s of the last century. Visit the Cicada and Night Markets for great street food and souvenirs and play a round or two of golf. Tell us a surprising fact that the public might not know about you? Before realizing my true calling was cooking, I worked at a radio station as a newscaster and DJ and led my own heavy metal band. Not being able to sing to save my life that was something quite remarkable. What is the most outlandish thing you have ever done and why? Taking two speed boats, four scheduled flights, one train and a several rental cars to reach from a small island in The Turks and Caicos in the Caribbean to Bucharest in Romania in time to watch my football team, Athletic Club Bilbao, play, and lose, the Europa League Final 2012.

Charting The Future Course Of Thai Tourism at TTF 2021
M
ore than 400 tourism leaders and industry gurus gathered in Bangkok on Monday 22nd March, in a safe and socially-distanced format, for the 10th annual edition of the Thailand Tourism Forum 2021 (TTF), Thailand’s premier travel, tourism and hospitality powwow. Hosted at Conrad Hotel Bangkok, and organised by C9 Hotelworks hospitality consulting group, this year’s TTF took place amid the biggest crisis tourism has ever faced: the COVID-19 global pandemic. Against this unprecedented upheaval, many of Thailand’s

leading hotel operators and other key players came together under the #ThaiTourismUnited banner, creating a single unified voice to drive the Kingdom’s recovery. Despite the challenges faced by hoteliers and tourism providers in Thailand this year, registrations for TTF 2021 were full in three hours for the in-person event during which guests were presented with a content-packed agenda featuring some of industry’s most respected figures, including owners, presidents and chief executives. The event kicked off with a “Thai Hotel Leaders’ Roundtable” discus-
sion which saw the CEOs of Thailand’s biggest hotel groups discuss ways to revive the country’s tourism and hospitality sectors. The top-level debate included Thirayuth Chirathivat, CEO of Centara Hotels & Resorts; Stephan Vanden Auweele, Chief Hospitality Group Officer of Asset World Corporation; Bill Heinecke, CEO of Minor International; Dirk De Cuyper, CEO of S Hotels & Resorts; Marisa Sukosol, President of the Thai Hotels Association; and Salanroj Sutaschuto, Director of the Central and Eastern Regional Office of the Thailand Convention & Exhibition Bureau.

Bill Barnett, Managing Director of C9 Hotelworks, kickstarted TTF 2021 in his own inimitable style, with an opening address entitled “Lost in Thailand, The Ultimate Survival Story.” Attendees were then able to choose from a series of quick-fire “Bang Bang” forums and discussions, including an economic assessment of Thailand’s tourism sector; an overview of the Kingdom’s beleaguered aviation industry; an insight into innovation and disruption within the hotel sector, and many more. One of the most eagerly-anticipated sessions saw Jesper Palmqvist, STR’s Area Director for Asia Pacific, reveal the latest hotel performance data and analysis for Thailand, including forecasts for the future. Mr. Palmqvist said: “After a particularly challenging January 2021, Thailand’s hotels at least end the first quarter with similar patterns as seen by the end of 2020. There are early signs of reservations in June but also some for November-December. In light of Thailand’s dependency on international arrivals... the STR forecast for Bangkok has been downgraded for the full year of 2021. We do foresee 2022 as a bigger comeback year on many fronts across the country.”

he giant rain tree’s enormous umbrella-shaped crown towers above and easily shades the open-air deck of Kampu, Mövenpick Asara Hua Hin’s signature restaurant. And by no coincidence, Kampu is also the Thai name for rain trees. Our party is undercover in Kampu’s two-tiered alfresco dining area. Gently cooled by the sea breeze, ratan bladed fans whirr overhead, while timber and burnt orange hues give a comforting appeal. The afternoon sun dances off the oceanfront pool, stretching invitingly in front of us. The Gulf’s dark sea green waters reach out to the horizon. This is picture-perfect, tropical Thailand, style dining. We are here to sample the Mediterranean fare from Kampu’s culinary team under the guidance of new Executive Chef Josu Sedano-Martin, who joined the resort in October 2020. Chef Josu hails from Bilbao, in the Spanish Basque Country, so it could be said that the Med’s food is in his blood. Our food journey starts with Cucumber and Basil Gazpacho, served chilled as is the style and poured theatrically into our bowls. There sit three quenelles of Requesón, an Iberian style ricotta plus delicate gel cubes of aloe vera flavoured with lime. This light, herby, and cooling soup takes on a creamier texture when mixed with the cheese and is a totally pleasing start to our meal. Classic Caprese Salad is given a twist with cherry tomato sized balls of (ciliegine) mozzarella cheese, fresh cherry tomatoes, tomato flavoured sponge, and fresh avocado, topped with caviar sized balsamic pearls and petit basil tips. A light and refreshing take on this classic Italian salad. Our final starter is Steak Tartare though once again, Chef Josu and the Kampu team have added their own flair to this classic. A blend of raw beef, diced onions, capers and Worcestershire sauce, is served topped with a cured quail egg yolk and punchy mustard flavoured balls. All accompanied with fingers of toast. The made-in-house Sriracha sauce served separately on the plate adds additional heat if you so choose. This is Steak Tartare taken to a higher level and one our party enjoyed immensely.

The main dishes selected included Risotto Nero. A jet-black with squid ink creamy risotto topped with diced local grilled squid, crunchy flash-fried dried shrimp, plus a deep-fried baby squid. A rich, from the sea, inspired risotto. And keeping with the ocean theme was a Sherry steamed fillet of Sea Bass served atop a bed of butter beans, together with local razor clams and pipis. Squid ink adds colour contrast to the plate. Our final main dish is Angus Beef Cheeks, slow-cooked for eight hours and shares the plate with oxtail filled cannelloni. Foie Gras oil adds to the already rich flavours. Maple glazed carrots accompany. This is delicious tender beef, lusciously rich and meaty sauce with Foie Gras oil for added indulgence. Kampu offers Mövenpick branded house wines from Italy and Switzerland by glass and bottle to complement the dining experience. We sampled an Italian Pinot Grigio from the DOC region of Friuli Colli Orientali, Italy’s eastern hills that sperate it from Slovenia and were impressed with its quality. The Southern Italy Primitivo (or zinfandel) red wine from the Apulia region was a delightfully brash wine: a dark, high alcohol, fruit bomb.

In chatting with Chef Josu about dessert, we learn that no matter in which Mövenpick property across the world you are, six signature dishes will always be on the menu. The Steak Tartare we had earlier is one, as is our first sweet dish – Swiss Carrot Cake. The Kampu version is a modern take on the original and is gluten-free. Two delectably light squares of cake sitting on a not-too-sweet carrot and orange sauce, a sprinkling of granola for crunch and a luscious mascarpone and vanilla ice-cream.
Continuing with the modern interpretations is Kampus Mango Sticky Rice - a much loved Thai classic. Delicate squares of fresh local mango are accompanied by a coconut cream pannacotta, a similarly sized pearl of mango juice, a mango and coconut macaron, mango puree, sticky rice and black sesame ice cream. These types of modern culinary interpretation has this writer calling for “more, please!”

Our final dessert links with another theme found across all Mövenpick hotels – chocolate. The simply named Manjari Chocolate Fondant is a velvety chocolate pudding with a smooth, gooey centre. Manjari single-origin dark chocolate couverture (cooking chocolate) from Madagascar with its high 64% cocoa content is what makes this chocolate fondant exceptional. Oh, and the beetroot foam atop, the beetroot-coloured soil and the just perfect vanilla bean ice-cream. During our late lunch, we got to see Mövenpick’s famous Chocolate Hour. As this privilege is strictly for in-house guests, we could not participate; just look on in envy. The Airspeeder Mk3 represents a giant technical leap forward in the development of the world’s first racing series for electric flying cars. The 2021 flying electric race vehicles will be operated by expert remote operators on the ground. The remote operators will have a suite of technologies and engineering elements never before seen on an eVTOL craft, and include LiDAR and Radar collision avoidance systems that create a ‘virtual forcefield’ around the craft to ensure close but ultimately safe racing. The Mk3 features a carbon fibre frame and fuselage chosen for its strength, stiffness and lightweight properties, which ensures maneuverability, performance and efficiency. The carbon fibre frame and fuselage adds a vital mechanical layer of safety, which will be further enhanced by a full carbon fibre monocoque body to be introduced on the Mk4 vehicle.

The Mk3 speeders are laid-out in an ‘octocopter X formation’. This provides significant advantages to pilots in terms of maneuverability and stability. Flying at speeds in excess of 120 Km\h, the pilot will be able to make the same sharp hairpin style turns as a Formula 1 car but with the added third dimension of being able to move vertically. The octocopter configuration also adds an important measure of vehicle redundancy and will ensure the craft can safely land and remain in control should a rotor or battery system fail. Airspeeder Grand Prix’s will include rapid pit stops. To facilitate this, Alauda’s engineers have developed an innovative ‘slide and lock’ system for the rapid removal and replacement of batteries when on the ground, this technology debuts on the Mk3. A strategic layer is added to the sport with this approach as teams will be able to adapt battery strategy depending on the dynamic requirements of that particular section of the race. For example, for courses requiring more maneuverability but less straight line speed, a lighter battery pack can be easily selected to deliver more maneuverability at the cost of raw power or endurance. 2020 saw an extraordinary year of progress for Airpseeder and Alauda. The unveiling of the Mk3 craft represented a landmark moment in the development of both the racing series, Airspeeder, and Alauda, the manufacturer that will create the vehicles that race in it. In the Spring of 2020, the

company received significant institutional backing from Saltwater Capital and Jelix Ventures. This cash infusion accelerated the growth at the firm’s first technical HQ in Adelaide, Australia with senior engineers joining the firm from leading names in performance automotive, aviation and motorsport. Matt Rodgers was brought on as Head of Composites and will lead all aspects of composite design for the craft’s monocoque structural chassis. He will also build a global network of cutting-edge manufacturing partners and build a team of highly skilled technicians as part of the establishment of a UK manufacturing footprint. At its heart, Airspeeder is a clean-air sport with a purpose to accelerate a mobility revolution that responds to the global need for a more sustainable future. Matt will therefore take a lead in exploring natural fibre alternatives to further reduce resource consumption. Another key hire was Brett Hill. Since joining, Brett has applied the fastidious approach required for leading-edge engineering to the development of the Mk3 and Mk4 electric programmes. Brett’s aerospace experience was gained from senior roles at Boeing, where he led teams in key disciplines including military testing programmes, aerodynamic analysis and analysis of advanced composite structures.

Exhilarating Racing At The 36thAmerica’s Cup
O
ff the coast of Auckland, the 36th Challenge for the world’s oldest international sporting trophy provided a thrilling series of match races through mid-March. Sailing spectacular, 75-foot, foiling monohull yachts, America’s Cup Defender, Emirates Team New Zealand, racing their secretive, Te Rehutai, bested the Challenger, Italy’s Team Prada-Pirelli racing battle-hardened Luna Rossa. The score of 7 to 3 match wins belies the closeness of the duel, with the first half of matches being even. The ‘first-boat-to-win-7’ contest was sailed on three courses all in New Zealand’s inner Hauraki Gulf, between March 10th and 17th. Unseasonably gentle winds of sub-10 knot most days, found both contestants at times challenged to stay on their foils, but also periodically attaining speeds over 40 knots when gusts blew through the course. The races were generally two per day, lasting approx. 25 minutes each – and were broadcast around the world, free to air on Sky Sports, NBC Sports, TVNZ, RAI, and Sky Italia, as well as on the America’s Cup YouTube channel and Facebook page.

The first day of racing took place on March 10th and ended with one win each with New Zealand’s Te Rehutai taking the first race and the victor of the Challenger Series, Italy’s Luna Rossa taking the second. A scheduled rest day followed. Race Day 2 saw Luna Rossa take an early series lead, only for Te Rehutai to equal it in the second race of the day. Day 3 was the inverse of Day two; another win each. Six matches sailed had the series neck-andneck at three races each. The draw endured through Day 4, when both boats attended the start line, only to have racing abandoned for lack of wind. On racing Day 5, during the 7th match, Te Rehutai lifted the national spirit of NZ when she revealed superior boat-speed. Having lost the start to a quick Luna Rossa, Te

Rehutai trailed for two legs. Then her speed differential of three knots on the upwind leg 3 allowed Te Rehutai to snatch and hold the lead. Race 8 on Day 5 provided the most dramatic action. Trailing again from the start, Te Rehutai attempted to overtake Luna Rossa on leg 2, downwind in very light winds. Alas, its boat speed dropped, and as it did, Te Rehutai fizzled to a stop as it came off its foils. Team NZ grinders toiled mightily and finally regained flight but were a hopeless 2km behind as Luna Rossa had soared ahead on foils. Then Lady Luck intervened. The hitherto infallible, Luna Ross in rounding a mark only two legs from the finish also dropped off its foils, surrendering its handsome lead. This time Te Rehutai romped by, and suddenly, Emirates Team NZ held a two-race lead.
Race 9 was the first held on the inner harbour ‘Stadium’ course, where landbased audiences could easily observe the duel. Luna Rossa won the start, and led narrowly for most of the race, sailing ‘elbows out’ (yachting parlance for employing every technique to prevent the hind boat passing). On leg 5, Luna Rossa tacked immediately ahead of Te Rehutai, intending to bequeath them a wake of bad air. But Te Rehutai sailed away to the other side of the course, and in a puff of better wind stretched out to a 250m gain, taking the lead. Suddenly it was ‘Match Point’. The second race of that day was abandoned as the wind direction was too variable. In the 10th and Final Race on Race Day 7, Te Rehutai won the preferred side of the start, crossed the line doing 32 knots, and led at every mark to win by over 600m. The faster boat, defender, Te Rehutai had retained the champagnefilled, America’s Cup at the Royal New Zealand Yacht Squadron. Job done! According to Jimmy Spithill, Helmsman of Luna Rossa, ““… at the end of the day, Emirates Team New Zealand was simply too strong. It really did feel, at times, like we were taking a knife into a gun fight.”

Just two days later, it was announced Britain’s Royal Yacht Squadron Racing, represented by INEOS Team UK, headed by yachting legend Sir Ben Ainsley and financially backed by British billionaire, Sir James Ratcliffe had been accepted as the Challenger of Record for the 37th Challenge for the America’s Cup, commencing in 2023. Protocols will be published within 8 months; the venue is yet to be finalised, but the AC75 Class of foiling monohull will perform again. Footnote: Team New Zealand’s designer Dan Bernasconi claims to have just one regret from the winning the 36th America’s Cup. Phang Nga is located on the west side of the Malay Peninsula, one of the provinces located in the south of Thailand, with the Andaman Sea’s refreshing shore to its west, Phang Nga Bay to the south, as well as Phuket Province, which is connected by a highway bridge. This province is blessed with the many islands located in what’s known as the Phang Nga Bay; amongst them lies the famous James Bond Island, a limestone rock in the middle of the sea, shaped in the magnificent form of an upside-down cone. This fairytale-like sight was featured in The Man with the Golden Gun in 1974, a James Bond movie that made Thailand a marvelled tourist destination
with an only upward trajectory. To ensure the protection of these rare, almost mystic islands, in 1981, the Phang Nga Bay National Park was established, which is how the Bay remains exotic and humble even with the many local and international visitors. Phang Nga is also famous for two other island chains, the Similan Islands and the Surin Islands, two of Thailand’s most prominent diving destinations. What makes Phang Nga such a great holiday destination are the many beautiful sights all around the province. Apart from the James Bond Island, there are many other great things to see such as Ko Panyi, a unique fishing village on stilts giving it the impression of it floating right next to an enormous island that looks like a floating bolder. The town is comprised of a large Thai Muslim community providing an extra zest to those who enjoy culturally dynamic trips.

Another interesting community are the Sea Gypsies, who live on the small island of Ko Surin. The people of this little seafaring community live their lives as traditionally as it gets, even with the many curious tourists around. Another extraordinary National Park within Phang Nga is the Khao LampiHat Thai Mueang National Park. Here, one can go to both Namtok Ton Phrai and Namtok Lampi, large waterfalls with various levels which flow smoothly all year round. The Hat Thai Mueang is also one of the most significant attractions, a long beach where the sea turtle festival is held year after year to create awareness, foster, and protect the highly-endangered species that is the turtle. Between October and March, turtles lay their eggs on the beach, and a fence is put around them, so predators don’t have access. Once the eggs hatch, the turtles are taken care of and looked after until they are released back into the wild, a process that usually takes place at the beginning of March. Similar to the freeing of sea turtles, Phang Nga is notorious for its many enchanting annual festivals. Just a few include Watermelon Day, when plenty

of watermelons are offered, and a beauty contest is held, the Vegetarian Festival and the Sea Gypsy Boat Floating Festival, which celebrates and worships ancestors spirits. At the festival, fortune telling is practiced, and music and dance performances occur all over the province. An important aspect of Thai culture is their temples. Although you may feel like you have seen it all in Bangkok, there are a couple of temples that are of great importance in Phang Nga and are entirely unlike those you may have visited in the big capital city. One of them is Wat Suwannakhuha, also known as the Cave Temple. This magical place has various caves within the temple’s boundaries, exemplifying the inexplicable greatness of mother nature. Another famous temple is the Wat Rat Uppatham, also known as Wat Bang Riang. The temple, located on top of Khao Lan hill, contains several structures, such as a highly detailed, bell-shaped pagoda known as Chedi Phutthanthambanlue. The Pagoda, at the very top of the hill, gives visitors the chance to overlook the many surrounding mountains as well as a giant Buddha statue and the angelical beauty of a Guan-yin Chinese Goddess statue, a clear representation of the beauty of coexisting religions. Transportation to the district is a little unconventional. The nearest airport to Phang Nga Province is the Phuket International Airport, although there are frequent buses from Bangkok and other provinces, both air-conditioned and non-air-conditioned. Within the province, you’ll find the primary mode of public transport is the famous songthaews, the bulky pickup trucks with seating at the back for customers. However, the favorite transportation mode would undoubtedly have to be strolling through the towns while getting a golden tan. Phang Nga is a destination where you can find eternal sunshine, local people’s warmth, translucent water bodies that magnify rare beautiful animal creatures, and the sea’s gentle breeze. All of which work in perfect unison to make this province the unimaginable paradisiac holiday spot you thought you could never find.

This year, visitors will witness a new special zone dubbed “Smart EV City” that features the new generation’s lifestyles. The 42nd Bangkok International Motor Show is organized under the theme of “Shaping the Next Chapter.” The epidemic crisis has caused significant impacts, leading to the development of innovations and technologies to suit the new way of everyday life. Novel visions and conceptual ideas are the consequences of improving the nation’s economy for public wellness and living quality.
