Dear Reader Welcome to Issue 7, Volume 4. Khun Lizzy is a Hua Hin icon and her MCC Gala Dinners are not to be missed. After a 3-month hiatus an excited crowd of over 160 people gathered for Lizzy’s MCC held this time, for the first time, at the Marriott Hua Hin Resort’s Ballroom. If you didn’t attend, read and see what you missed on page 26. Our “Let’s Stay” feature takes us to the Holiday Inn Bangkok. Her collection’s value has been estimated in the billions of baht. The world’s high profile auction houses know her well and she once famously outbid the Sultan of Brunei on a piece she wanted for her collection. She is also a great believer in giving back to the community. Her Maneemondcha Foundation provides educational scholarships to those less fortunate as well as helping many others. We first profiled Khun Sumanee in September 2015. This month we stop by again to find out more about her Maneemondcha Foundation. Tag along on page 54. Our “Let’s Go” feature this month takes us to one of the seven wonders of the world, Angkor Wat. ur July front cover photo is of Thailand Socialite, Khun Vachini Krairiksh. Vachini was bought up with strong core values of integrity and hard work being essential for success both in business and personal life. Determined to make her own mark in the world, Khun Vachini graduated with a Master’s Degree in Communication from an American University. She’s currently Group Director of PR & Marketing Communications for a large Thai MultiNational Corporation. Always an athlete, she works as hard at keeping her body fit as she does in her business career. HOT Magazine recently had the pleasure of sitting down with Khun Vachini to ask her about her interesting life and her passions. HOT Magazine: Khun Vachini, your celebrity status is well known in Thailand for being a fashion model and high powered business person. Your picture is often in the Society Pages of Thai newspapers and magazines attending gala dinners, charity events and restaurant openings. Can you give us some insight into your childhood growing up and did you always know you wanted to be a “Socialite?” K. Vachini: As a young girl, I was a girl lacking self-confidence, insecure and introvert. I believe that I’ve transformed from a “shy ugly duckling” to a “social swan” who now carrying myself with utmost style, poise and grace. I have never expected or wanted to be a “Socialite” when I was a young woman, rather always wanted to be a proud “Mother” and a successful “Businesswoman”. Unexpectedly, I’ve become a “Socialite” 10 years ago. During that time I enjoyed being in the limelight, being in the hub of the social scene, receiving attention, and maintaining a high profile. I surrounded myself with socialites, hi-so, celebrities, and the likes. HOT Magazine: At the age of 12 you were sent to the States to study, returning to Thailand with a Master’s Degree in Mass Communications. How do you think living those years in American shaped who you are today? K. Vachini: The fact that I studied and lived in U.S.A. for over 10 years apparently helped change me from the girl I was to the woman I am today. A woman who is loving, caring, confident, independent, positive, and intellect woman with a strong self-respect.

After being in the limelight for over a period of time, I’ve discovered “Myself” and a “True happiness”. Now my lifestyle revolves around family, and is more work-oriented. Mostly when time allows, I’d rather spend private time with only my loved ones. Yes, indeed we can find happiness in the simplest things in life: nothing extravagant, in a humble lifestyle. My mentality and attitude have changed through life experience and maturity. HOT Magazine: You are in terrific shape, how much time do you spend in the gym and are there other sports activities that you enjoy that help keep you look the way you do? K. Vachini: My passion for water-sports such as slalom water skiing, wakeboarding and surfing stems from my love of being in the sun and water. It’s about having a sense of freedom and feeling more alive. But more than that, I believe that in general ones should always look after one’s self: spiritually, mentally and physically to achieve a healthy body, mind, and spirit. I also like Martial Arts training and spending time in the gym. HOT Magazine: You’ve put your Master’s Degree to good use with your current position as Group Director of PR and Marketing Communications for the FICO Group. Did you “pay your dues,” working your way up the Corporate ladder of other companies to attain the position you hold today? K. Vachini: I can confidently say that I’ve worked hard and have earned the achievements. It was not from luck, but the opportunities combined with hard work, inspiration, motivations and skills. PR is most what I have passion for and it suits with my skill set and personality. PR is a ‘people person’ business that requires an outgoing personality, self-confidence and an understanding of human psychology. Therefore, when I choose this career, I must possess these attributes and have to know the likely pressure associated with this role. Frankly speaking, being well known in the society has strengthened the achievement of my PR career. HOT Magazine: The FICO Group’s holdings are quite diverse. What does an “average day” look like for you? K. Vachini: My role is to act as the Company’s spokeperson to the public in order to promote the Company and its affiliated brands and to enhance the Company’s recognition and sense of identity. I need to create a positive image with a consistent message in everything Fico does e.g. quality and best value. Brand building is one of the biggest mechanism I need to establish/increase in order for the Company to improve profits and keeps it ahead of competition. I need to develop and manage the multibrand portfolio, which plays a crucial role in producing sustainable earnings growth for the shareholders.

I regularly use Facebook for mostly business and sometime personal. Using Facebook is part of my job description and importantly, since I’m a Group Director of PR and Marketing Communications of Fico Group, I use it for the main purpose of creating brand awareness, increasing my database (mostly locals), developing awareness of the Company and the affiliated brands. As a result of Facebook, I’ve gained clients and my role has been more productive. We need to use Facebook wisely and efficiently, otherwise it can invade our personal social life. My average day varies and I’d say very interesting and challenging every day, especially when you have to report and work directly to the Owner/CEO of Fico Group, Khun Krit Srichawla. HOT Magazine: You are married and have a child. How important is time management to you to allow for being a wife, mother, business person and keeping your fitness routine? K. Vachini: My goal is to strike a perfect work/life balance with a meaningful daily outcome for each of my four quadrants; Work, Family, Friends and Self. I believe that family and close friends are my ultimate happiness. At the end of the day, it’s all about balancing carefully the demands of both my private life and my professional career. I focus on inner contentment and try to pursue wisdom and a peace of mind, which I believe is the ultimate happiness. Living life with a purpose and being happy and content with my life, who I am, and what I have. It’s all about having found inner contentment and self gratitude. I’ve found the man of my life (Chris Venvell, my husband). I’ve learned that family love is the greatest and the strongest love of all. And to feel and have that is the biggest accomplishment for me. HOT Magazine: What advice would you give other women who look up to you and would like to attain the same success in their life as you have in yours? K. Vachini: I believe in confidence, self respect, not just for yourself but for others around you. When I feel confident I am able to carry myself well and able to take on any challenge that comes in front of me. Being proud in myself and I can do anything. I never compare myself to others or look down on others or think I am better – just think I am good enough and being the best that I can possibly be. Having compassion, self gratitude and positive attitude, this will definitely make my inner soul happy and those around me can feel that happiness.

What is your full name and age? 44 yrs What is your current Job Position? General Manager for Hilton Hua Hin How long have you lived in Hua Hin or been coming to Hua Hin? I moved here 4 months ago but have of course enjoyed Hua Hin for weekend breaks, while I lived in Bangkok. I am back the 3rd time in Thailand and find it as exciting as on my 1st visit. What did you know about Hua Hin before you moved here? A fantastic seaside resort town not too far away from the hustle and bustle of Bangkok. It is peaceful, safe and yet offer enough sport activities on land and sea. What do you like most about your profession? I truly enjoy travelling and exploring new countries and cultures including meeting new friends and colleagues in the various locations. It has always been a privilege and my personal motivation to help guests creating valuable memories, while I continue to develop my career and expertise What do you like least about your profession? There is not really anything to dislike once you have chosen your hobby to become your profession. The only drawback would be perhaps to say goodbye to your team and friends when the next posting comes up. What do you like most about Hua Hin? I enjoy the fresh air and clean environment on the seaside location 14

What is your favorite restaurant and why? Udom Potchana offers fantastic fresh seafood, while “Camp Meating” was an exciting and unique BBQ experience last April. What do you like to do in your free time and why? I enjoy watersports activities and am planning to take up kite surfing when the windy season starts this October, otherwise you might find me on my bike exploring the surroundings or playing squash at the Hilton. What would you recommend to new-comers to do in Hua Hin and why? Be open and meet people, they will surely be happy to share some of their great experiences and get you started right away. Tell us a surprising fact that the public might not know about you? Due to my passion for the open sea and boats I was part of the Auxiliary Coast Guard of the Philippines, while working and living there. What is the most outlandish thing you have ever done and why? For my birthday some years back friends chipped in and surprised me with a ticket to the open day on the race track in Dubai – which to my good luck – came with a helmet, gloves and a Porsche 911 key 

Anantasila

A

nantasila in Kho Takiab is a real gem, both as a seaside resort and as a wonderful restaurant boasting gorgeous ocean views. Beachfront restaurants have a reputation for being a little pricier because of the location but Anantasila has always struck me as reasonably priced and I’ve been dinning there for over ten years. Further, in those ten years I don’t think I’ve talked to anyone who didn’t have praise for the restaurant. They consistently put out great food. The restaurant offers a covered dining area for when the weather is a little wet and a tree-canopied outdoor dining deck and beach bar, both offering unobstructed views of the sea and Kho Takiab shoreline. It’s a wonderful restaurant for a lazy lunch with a bottle 16

of wine or a relaxed dinner with two bottles. We recently had an outstanding dinner there that began with a couple of starters, Smoked Chicken Quesadilla and Queen Scallops. I’m a big fan of Mexican food and the Quesadilla, which was accompanied by guacamole and lime yoghurt did not disappoint. I’ve gone back just for those (and a margarita or three). The pan fried queen scallops were sautéed with bacon (what’s not to love about that) and topped with tomato and caper vierge, beautifully presented on the shell. We went a little over the top on the mains as we ordered the Chateaubriand for 2 as well as the Prawn and Asparagus Risotto. The Chateaubriand was

certainly enough for two people coming with 3 sides and 3 sauces. The meat was tender, flavorful and cooked to perfection. For sides we chose the jacket potato with sour cream, truffle mashed potatoes and vegetables from the fresh market. The accompanying sauces were their béarnaise, red wine shallot and a green peppercorn and pommery mustard cream sauce The Prawn and Asparagus Risotto was full of flavor and a sizable portion with fresh plump prawns. It was very good but didn’t get the attention it deserved as we were busily devouring the Chateaubriand. As full as we were, I still seemed to have room for desert and made two great choices. The chocoholic in me was


overwhelmed with the Dark Chocolate and Chili Fondant accompanied by a strawberry coulis and white chocolate ice cream. The second heavenly sweet was their Trio of Crème Brulee. The trio consisted of vanilla, chocolate and passion fruit and were sinfully delightful. Chef Hans came out of the kitchen at the end of our meal to greet us and told us that shortly they will be offering new menu items which we will certainly be back to try. Some examples of the new menu items include:

• Braised beef raviolis with wild

mushrooms, truffle jus and a petit herb salad • Moroccan styled chicken breast with baba ghanoush, ratatouille, spiced

sweet potato croquettes and lime yoghurt • King prawns alla American with lobster gravy, dry vermouth and tarragon • Rock lobster “Thermidor” with a mushroom, pommery mustard and brandy cream sauce baked with parmesan cheese • Grilled Australian Top Paddock lamb chops with truffle oil mashed potatoes and ratatouille • Anantasila steak pizza with ruccola, thinly sliced medium rare grilled Australian wagyu rump steak and béarnaise sauce But Anantasila isn’t just about fine dining, you can also get great hamburgers, sandwiches and some of the best pizza in Hua Hin from their wood fired pizza oven. The Anantasila Restaurant is one of our favorite restaurants and if you haven’t been there yet, definitely put it on your list to visit. It will become one of your favorites too. FORTY AND FABULOUS On June 18th, Khun Kam, owner of the Mozza Mia Mozzarella Deli and Wine Bar, held a "40 and Fabulous" birthday party at her restaurant located in the G Resort Mall shopping complex on Soi 94. Over 80 people attended the party to celebrate her birthday which had the theme “Glamour Like A Super Star”. Eighty two Hua Hin'ians showed up to network, socialize, drink beer and wine, eat delicious tapas, all while enjoying the music from Red Piano's house band. Anthony Kelly, owner of Red Piano was there to play host and he also got on stage to play and sing for the group. It was a great event with many people commenting that it was one of the best yet. One of the signatures of the Hua Hin Business Network is the "Marketing Minute" which is where a business person can get in front of the crowd for 60 seconds to tell their business story. MCC IGNITES AT THE NEW MARRIOTT HUA HIN RESORT On Tuesday June 28th, the Grand Dame of Hua Hin, Khun Lizzy, officiated over one of her most highly anticipated and enjoyable MCC events ever. Lizzy started MCC, which stands for Multi-Cultural Community, over three years ago and this time it was held in the ballroom of the new Hua Hin Marriott Resort and Spa. It had been three months since the last MCC event and MCC regulars couldn’t wait to get together again for a great night of socializing, delicious food, entertainment and dancing, all for a great charitable cause. Mario Hofmann, the Marriott’s Executive Chef, along with his entire team, put on an exemplary buffet accompanied by top notch service. The

As I was playing college tennis in the United States I had some injuries that had me on the sidelines for a while. Once I started working with Peter Burwash International, I learned the fundamentals and applied them to my game, it helped me not only to play better tennis, but to take some stress away from my body.

The following tips will help you playing smoother tennis:

Amber Kitchen Now Serving Sunday Roast

n Sunday June 26th, the Hua Hin Marriott Resort’s Amber Kitchen inaugurated their Sunday Roast. Hotel General Managers, Executive Chef’s, Restaurant Owners, Media and special guests were invited to be part of the Inaugural event. “The Marriott’s Executive Chef, Mario Hofmann said that when he put the brunch together he didn’t want it to be the “Be All, End All” of Sunday Brunch’s, where you would find Alaska King Crab and Boston Lobsters etc., instead he wanted a brunch that had a homey family feel and priced accordingly. “ European and Thai food were all well represented and the deserts were deliciously plentiful. The Roast featured many “Live Stations.” The standout being their “ROAST OF THE DAY” which on this day was a whole leg of pork slowly roasted and marinated with fresh herbs and garlic. Other Live Stations served freshly prepared Wiener Schnitzel, Truffle Pasta with grated Parmesan and Rueben Sandwich’s with beef pastrami, emmental cheese and sauerkraut on dark rye bread. Sunday classics included grilled chicken breast in a creamy mushroom sauce and Hungarian pork goulash braised with onions and peppers. A few of their Signature Thai dishes included Moo Krob Phad Ta Krai, Stir fried crispy pork belly with lemongrass, Goong Ma Kham, Fried Prawns with tamarind sauce and fried shallot and Pla Kra Pong Nueng Manao, Steamed Seabass with chili and lime sauce. The Sweets were certainly covered with just a few standouts being their Cheese Cake, Sacher Torte, fresh from the oven Apple Strudel and their Mango Mousse tartelettes. MISS GRAND THAILAND Beauty pageants are never in short supply in Thailand, owing to the natural beauty of so many Thai women. This past June was no less, as the Miss Grand Thailand competition got on its way to provide a dazzling evening of costumes, dresses, beauty, fun and entertainment to all of those who were present. Part of the Miss Grand International pageant that we spoke of a few issue back, it showcased seventy seven of the best costumes each province in Thailand had to offer. OT Magazine first had the pleasure of speaking with Khun Sumanee Guna-Kasem back in September of last year. For those that don’t know her, Khun Sumanee is a well-known Thai Socialite, business woman and one of the most prolific collectors of antiques in Thailand. Her collection’s value has been estimated in the billions of baht. The world’s high profile auction houses know her well and she once famously outbid the Sultan of Brunei on a piece she had to have for her collection. Her father started his career as a policeman but advanced in Government, so much so that by the time war broke out in Viet Nam he was sent to Saigon as Thailand’s Ambassador. While he was in Saigon Khun Sumanee was sent to England to further her studies. In 1962 Khun Suminee married Pracha Guna-Kasem who was working for Thailand’s Foreign Affairs Ministry. Pracha’s first foreign posting was to Cairo where they spent two years. They then moved to Hong Kong where Pracha was posted as Thailand’s Consul General spending three and a half years there. From Hong Kong they were sent to the United States where for six years her husband was Thailand’s Permanent Representative to the United Nations. Khun Sumanee says that for her husband it felt like home as he had received his Doctorate in Philosophy from Yale University after attending Oxford on scholarship. Khun Sumanee enjoyed her time in New York and became acquainted with many famous people including Jacqueline Kennedy Onassis and Neil Armstrong, the first man to walk on the moon. After New York Khun Prascha was sent to Geneva as Thailand’s Ambassador. It is here that she purchased many of her most extraordinary Jewelry pieces from the world’s best known auction houses. Prascha’s final Ambassadorial posting was to France and Algeria. Khun Sumanee lives in a ten story building with a personal staff of 50. The building was a gift to her from her father almost 50 years ago, shortly after she wed. She recounts that back then foundations weren’t made of steel and cement rather they used hard woods. She remembers her mother going down to the Chao Phraya River to meet the barges carrying some of the 5,000 teak logs that were harvested in the north of Thailand for their building’s foundation. Fourteen years ago she and her husband set up a foundation called the Maneemondcha Foundation which provides scholarships for underprivileged Thai’s. Because of her father’s love for dogs, as does she, the

foundation also looks after 800 dogs in Thailand. Khun Sumanee has 5 dogs herself, each with their own nanny.

He later became a politician in the Banharn and

Khun Sumanee: Basically, my husband felt the same about giving back to the community as I did. We both wanted to see the people of our country grow and prosper. Further to this, we both felt very strongly that he was helping all Thais through his work in the diplomatic service.

HOT Magazine: You have your own charity organization called the Maneemoncha charity project, can you tell us about it and who the beneficiaries are of your charitable giving? Khun Sumanee: I am extremely fortunate for the opportunity to create a charity. It is a wonderful feeling to be able to give to the community. My family’s Maneemondcha Foundation is primarily designed to further education, including providing scholarships, for the

‘less fortunate’ of Thailand’s younger generation. Children, who may otherwise not have been able to acquire certain skills and knowledge, will therefore be better prepared to lead productive and enjoyable lives. The family agreed that this issue is also necessary to further Thailand in a successful and prosperous way. My father always said ‘knowledge is the greatest treasure’ and this is so true. Maneemondcha is my way of sharing in a positive and respectful way.

HOT Magazine: You mentioned to us last year that both you and your father shared a love for animals and because of that shared love you felt it important to look after many of Bangkok’s homeless and helpless street dogs and cats. Can you tell us more about that? Khun Sumanee: My father and I had a very strong bond and a mutual love of all animals. Maneemondcha is committed to the care and future well-being of Bangkok’s stray animals. Sadly, there are too many homeless dogs and cats living on the streets. Maneemondcha aims to improve their quality of life in whatever way possible. I am aware how important

this was to my father and I know that any efforts on my part would please him so much. HOT Magazine: Through all of your husband postings and your travel around the world, you have amassed what has been described as one of the largest private collections of beautiful art, jewels and antique furnishings in Thailand. What are your thoughts on what will become of it upon your passing?

L

ong before the Portuguese historian Diogo Do Couto drew these conclusions from the marvelling sights before him in 1586, the imperious temple of Angkor Wat had already been transformed from a Hindu temple to one representing Buddhism. A transition that set the symbolism of its religious affiliation to this day. Much of the commissioning behind the construction of Angkor Wat is enshrined in myth and legend. One of the many stories told about its origins regards the temple to have been built

as a directive from Hindu god Indra, known as the King of the Devas (Devas being benevolent supernatural beings). Others, such as the thirteenth century Chinese diplomat Zhou Daguan, assured that the entire structure had been erected overnight by what he claims was a divine architect. The “City of Temples� as its Sanskrit etymology translates to, was dedicated to Hindu god Vishnu the Protector, and was built during the reign of the Khmer King Suryavarman II. The monarch would never see the finished product of

such symbolic construction. Symbolic, for this was not only the largest religious monument in the world; it was to be, though unknown to him at the time, the largest religious monument to have ever been created to this date. Neither would it have been known to him that upon his death (almost a century and a half later) a series of internal and foreign religious power struggles would culminate in Buddhism emerging as the state religion of the Khmer Empire under his grandchild Indrawarman III. This thus settled the turning point of a quest

It is of such extraordinary construction that it is not possible to describe it with a pen, particularly since it is like no other building in the world. It has towers and decoration and all the refinements which the human genius can conceive of. There are many smaller towers of similar style, in the same stone, which are gilded. to claim power of the greatest shrine in South East Asia. Such covet led to it never being deserted at any point of its history, remaining in continuous usage since its creation unlike other temples. Its curious westward orientation was a topic of mystery during early years, for the west is set to symbolise the direction of death, convincing many that Angkor Wat was a tomb. Much debate led to the common current consensus that the site may have served simultaneously as a temple and as a mausoleum for its creator, Suryavarman II.

But as much as it was a blessing, Angkor Wat led equally to the interest of colonialism, particularly from the French, who saw the appeal in its potential as one of the primary factors to make Cambodia part of their network of protectorates. Great cultural benefit was obtained from it back in Europe, through exhibitions and proud showcasing of its great historical value. Displays, museums and fairs were wholly dedicated to the marvel, which catapulted its fame in the old continent. The temple overcame several obstacles since the end of the

French protectorate, such as the reign of the Khmer Rouge which left the site to decay due to theft and civil war damage, and bombings from the United States that struck a pavilion. The former’s confrontation with Vietnam equally caused certain damage to some of the parts, but at large, the nine century-old temple has against all odds, retained its structural integrity. The sanctuary, has one of its instant appeals in the symmetrical approach to its architecture, which provides it with a sharp and attractive image. Surrounded

by a perfectly square moat, Angkor Wat was mostly unaffected by changes in the advances of vegetation due to this stretch of water that separates the main section on which it is situated, from the outer forest area. Appealing too, is the central quincunx, which towers famously over the skyline. Made of sandstone, the usage of which had been mastered by architects of the twelfth century, it is rich in detail and carvings from an array of different periods can be seen enshrined across its walls. The bas-reliefs tell a story meant to be viewed counter-clockwise, something contributing to the ancient hypothesis that it was a burial site, given the Brahminic tradition leading to celebrate funerary processions in such order. It is of little wonder, given all these factors, that Angkor Wat was placed under the UNESCO Heritage site category in 1992. Angkor Wat is thus, as one would expect due to both its symbolism and its history, one of the most visited sites in the region. Numbers were as few as slightly over seven thousand people twenty years back. The appeal that Southeast Asia generated provided it with a sharp increase of visitors over the years, which today stands at almost three and a half million annual tourists. The increase in the infrastructural efficiency has been a large contributor to this too. As roads of greater capacity opened, the route became more appealing to all those wishing to visit the temple with ease. One of the most appealing road networks for instance, is that which connects all the way out to Thailand, through which access to Cambodia and the ancient site is very convenient. But if your thought is to travel by air, in a more comfortable and even smoother journey, one can travel to Siem Reap International Airport. Cambodia’s busiest airdrome is fantastically connected to an array of destinations throughout the entire region, with flights coming in from as far as Japan. The conveniently placed airport is only five and a half kilometres away from the site, making it a comfortable ten minute drive away. Tourism has equally brought a rather large quantity of revenue, much of which is used in order to remodel and maintain the Wat, as well as to keep the site clean. Most of the conservation though, is done by government sponsored specialist organisations, rather than by the local authorities. The success of Angkor Wat’s commercialisation was not without hard work however. Extensive restoration processes to keep it from decaying have been common. An appeal made by former Cambodian King Norodom Sihanouk placed it on the UNESCO World Heritage in Danger list, attracting the attention of organisations who took the challenge of refurbishing it. Previously, the task had been carried forth by the Archaeological Survey of India, who passed it onto the French once 60

the latter came to recognise the reigning Cambodian government of the time. The move was to be positive, as the Indian effort had at times come under scrutiny due to the effect that the chemicals they used had on the stone. Today however, it is the representation of a well-managed conservation project, as its maintenance is efficient and careful. Angkor Wat is a monument of marvel: made of history, memories, religion, mythology and a large proportion of immaculately polished sandstone, it represents everything Cambodia has gone through as a nation and through everything its stands for. Majestically centred on the national flag is the frontal view of its towering quincunx, carrying the pride and joy of the country’s allegory. We recommend that you visit Angkor Wat if you have not yet done so, but remember to be a productive tourist, adhering to ways that will preserve its beauty and legacy. After all, as Henri Mouhot once said: “To Khmer People, Angkor Wat is more than just an ancient pile of stones, it is more than just the remains of a highly advanced kingdom, it is more than just a tourist attraction - to the Khmers it is a symbol of hope.�

ithin one of the most exclusive quartiers of the Thong Lo high society, lies an appealing little section of a boat-themed restaurant. A step into the Fat’R Gut’z is a step laid into a picturesque representation of the Nautilus. Jules Verne described such vessel as being a “masterpiece containing masterpieces”, words which represent this establishment to perfection. Greeted by a massive anchor at the entrance, upon which lies the menu, the feelings of being transported back to the seas of the 19th century further permeate the imagination as one is seated. A large antique table with complementary bar chairs lies below the discrete brio of beautifully designed rustic light bulbs, which hang from a sea-themed interweaving ceiling of metal rods. To the beat of the DJ’s selection, we were brought master mixologist Joseph Borowski’s finest creations. Commissioned all the way from New York and delighting us with his cocktail shaker until the end of this year, he started us off with a citrusy Jellyfish Juice. Named after a famous shipwreck like every other cocktail in the menu and particularly so for the gelatine textures of every sip, it combined a deep mint champagne with fruity grape and pineapple flavours, a definite tongue teaser which culminated onto the next drink: the Lancastria. This flamboyant cocktail could enter a best hair-do contest and win first prize. Topped with a spiralling coil of candy floss which blends into the green beauty of its Sauvignon Blanc, lemon and vodka, it has a serene and balanced taste, made tangy by the lemon and sweetened slightly by its styling hairstyle. The crimson-toned Southstreet Mojito came next, fruity, aromatic and soft to the palate, it’s one for the rum lovers. It couldn’t have ended without the Tugboat, this classic-looking peachpink cocktail, with its Chandon Brut and raspberry touch was a truly refined grand finale to the cocktail round. Our Epicurean journey started with a Fresh Tuna and Avocado Salad and it solely got better from there. Flavourful, smoky, creamy and with the distinct touch from the avocado’s aromatic essence, it ended in a beautiful nutty touch granted by the complementing pumpkin seeds. Subsequently came the Premium Oysters, which only took a bite to fall in love with. Incredibly fresh and palatable, their flavour was gorgeously enhanced by the shallots, the classic lemon and the chili sauce. It didn’t take long for the Deep Fried Onion Rings with Tartar Dip to make their presence on the table, and it took even less for them to disappear from the plate in which they were brought. Extremely crispy, with a touch of

sweetness and a grand smoky aroma, the flavour went perfectly hand in hand with the tartar sauce. A true delight. Then came the Seared Scallops with Avocado. Fresh, toothsome, balanced to perfection by the avocado and finished in style with the bacon’s crispy touch, it was truly magnificent. Along with it they brought a Thai Style Spicy Seafood Spaghetti, which continued to gain our devotion. With a peppery touch of personality and a distinctive seafood flavour exalted by the soft meaty balance of the shrimp, it spoke both Thai and Italian to perfection. Suddenly, as things couldn’t have possibly gotten grander, they did, and in what style! Out came a colossal Fish and Chips Bucket, which daringly stole everyone’s attention. Three large crunchy

fillets on the most comfortable-looking bed of chips, along with side crucible’s of tartar sauce, ketchup and a guacamole mixture, it left us lost for words. Tangy, crispy, juicy and distinctly creamy, one would have truly travelled twenty thousand leagues under the sea to be given a bite. The evening culminated with a Yin and Yang round of desserts: a set of chocolate brownies with strawberries, soft, moist and with a marvellous chocolate sauce, they were truly marvellous. The antithesis was reserved for last however: an absolutely stunning plate of white chocolate pudding with yogurt, which granted a smooth, creamy, light, balanced and aromatic flavour to the dish. Served on a mound of crusty crumble, the velvety and crunchy combination was truly heavenly.

Back in 1870, Jules Verne once wrote: “The sea is everything. It covers seven tenths of the terrestrial globe. Its breath is pure and healthy. It is an immense desert, where man is never lonely, for he feels life stirring on all sides.” We now know this was an allegory to the Fat’R Gut’z, for the Fat’R Gut’z truly is everything.
