his month we are pleased to feature the much loved District of Khao Yai. Just 3 hours from Bangkok, this area is filled with exciting and fun things to do for all ages. To begin, the Khao Yai National Park is one of the most visited national parks in the country and is listed as a UNESCO World Heritage Site. Khoa Yai is also known for its wineries, golf courses, waterfall nature hikes, farm tours, wine tours, scenic mountain biking, theme parks with horseback riding, ATV adventures, combat-style games, and of course, shopping. The Standard Arrives In Hua Hin The first Standard Hotel, The Standard, Hollywood, opened on the Sunset Strip in 1999 in West Hollywood. The original investors were Leonardo DiCaprio, Cameron Diaz, Benicio del Toro, D’arcy Wretzky and James Iha. Since then, The Standard has opened hotels in Los Angeles, Miami, New York, London and the Maldives. In December, the first Standard Hotel in Thailand will open its doors in the seaside beach town of Hua Hin. The resort’s colourful collection of 199 rooms, suites and villas will be complemented by a pool scene reminiscent of the beloved Standard hotel in Miami. Each room will feature amenities to make guests feel at home right away, from comfy beds with soft, luxurious sheets to rain showers to soaking tubs or plunge pools to unwind in. The resort’s signature restaurant, the Lido Restaurant and Bar, is an Italian inspired eatery with year-round alfresco dining that transforms into an intimate dining experience in the evening. The Juice Café will offer a selection of coffees, fresh-pressed juices, smoothies, elixirs and healthy snacks. For beachside dining, the impeccably restored heritage house on the property will be reinvented as Praça, serving traditional Thai family-style dishes from local recipes paired with craft cocktails.

After a day of exploring, visitors can book an appointment at The Spa, which will reimagine the modern spa experience in a bright, inviting space with four private treatment rooms. park with horseback riding, ATV adventures, and combat-style games, it’s all here. Khao Yai is also home to one of the best national parks in the Kingdom. In short, Khao Yai is a perfect destination for family, friends, or just the two of you. The Khao Yai National Park is a UNESCO World Heritage Site and one of the most visited national parks in the country. It spreads across four provinces, namely Saraburi (west), Nakhon Nayok (east), Nakhon Ratchasima (north), and Prachinburi (east). The highest peak, at Khao Rom, is 1,351 metres above sea level. At the foot of
the mountain, you can already feel the drop in temperature and refreshing scents of damp earth as you approach the Park’s main gate. The abundant wildlife within the National Park includes over 300 species of birds, almost 70 different mammals, and 2500 plant types. Animals like monkeys (including gibbons), deer, hornbills, porcupines, and bats are everyday sights, but you may also stumble upon wild elephants, Asian jackals, bears, and even leopards and tigers in these forests. Cutting north to south through the Park, the jungle-shaded main highway winds through the heart of Khao Yai’s

lush wilderness, shooting off at several points where trekking routes begin and disappear into the dense forests. Street signs warn about the presence of wild animals, and often, you can spot monkeys idling in the middle of the highway. This main two-lane highway passes through all natural attractions and scenic points within the Khao Yai National Park. Heow Suwat (Suwat Abyss) and Heow Narok (Hell’s Abyss) Waterfalls are two of the most visited sites, and as their names suggest, they shoot straight down from a high cliff in one forceful plunge. In the rainy season, Heow Narok can be extremely slippery and dangerous.
It’s recommended to drop by the Park’s visitor centre to pick up a map to plan your journey. Enjoyable tours include hiking along the five scenic routes, wildlife watching at Nong Pak Chee or Mo Singto, and visiting various scenic viewpoints and the Park’s highest summit at Khao Rom. The road to the top, though, is very steep and rough, with deep potholes, depending upon when you go, and there are no hand railings, but the views of Khao Yai’s sweeping mountain ranges from the summit are more than worth the effort. Once you have fully discovered the National Park, you’ll still have plenty
to take in, and the GranMonte Estate is a good start. Just before you pass the National Park’s main gate, there’s a small side street that turns into an expansive valley where grapes are grown, harvested, crushed, and turned into fine wine. GranMonte Estate brought a slice of Tuscany’s sun-drenched vineyards to Khao Yai’s verdant foothills in 1999. The main highlight here is the cellar-door shop and the VinCotto restaurant, which whips up delicious pastas, salads, and hearty Italian main courses and desserts. The best time to visit is October-February, and guided tours of the vineyard are available on weekends.

But only a few people know that the rural heartland north of Wang Nam Kheo called Pak Thong Chai is the throbbing heart of Jim Thompson’s silk empire – where its fine quality silk comes from. The Lam Phra Phloeng reservoir is on the way to Khao Paeng Ma and Khao Yai National Park, from Wang Nam Kheo. Fronting one of Khao Yai’s verdant ridges and surrounded by a vast expanse of green fields, the reservoir offers a delightful break from long car journeys. It is a beautiful recreation area where you can enjoy fishing, bird watching, or lunch with a view. Should the reservoir’s laid-back pace beckon, you can hire a long-tail boat and journey up the river to Khun Jone and Khlong Ki Waterfalls.
If you’d rather skip the full glamour – and also save a few baht – then drive around on your own or head to the shop and pick up a few bottles. There’s also The Great Hornbill Grill, which serves up western and Thai dishes accompanied by breathtaking views of the vineyard.
If your idea of visiting a vineyard is to immerse in the whole viniculture experience, then head straight to PB Valley, the pioneer of winemaking in the Khao Yai area since 1989. Pass through endless rolling vineyards before arriving at the information centre, where you can sign up for a guided tour of the

Today it has become one the most popular tourist attractions in Khao Yai, with exciting cowboy shows, cattle herding, farm tours, horse-drawn cart rides, and ATV adventures. An overnight package comes with a campfire dinner and accommodation in its boutique tent – with all modern luxuries thrown in. Call a week ahead to book tours and activities, as the place is booked up fast, especially on weekends. Before expansive grape hills and adventure theme parks arrived on Khao Yai, golf was already a favourite pastime. Your choices range from the Jack Nicklaus designed course at Kirimaya – one of the most luxurious and bestkept – to Toscana Valley’s breathtaking Tuscan-inspired landscapes to standard courses set on a verdant sprawl at the picturesque foothills.

With increased competition from newer and more modern-looking hotels, The Greenery Resort has stepped up a notch by adding a theme park to its name. Mushrooms, oranges, grapes, milk jujubs, organic pumpkins, carrots, red oak lettuce, and green salads are among those grown here – simply take your pick. Khao Yai is accessible by two different routes from Bangkok, but the Saraburi-Pakchong route (Highway 2) is the most popular because it passes through many tourist attractions along the way. The Prachinburi route runs through Wang Nam Kheo and its steep slopes with sharp turns. No matter which route you take, these two merge at Khao Yai National Park’s headquarters.
Palio Village
Although you can take a bus from Bangkok’s Northern Bus Terminal to Pak Chong, then transfer to a song taew to the Park’s headquarters, it is not recommended because you will not be able to hitch a ride to visit various attractions once there. It’s better to rent a car or hire a van with a driver to experience all that Khao Yai offers. With so much to do, a day trip to Khao Yai is doable, but spending several days is a much better idea. A gentle reminder, If you happen to spot an elephant while driving through Khao Yai National Park, please don’t beep your horn as the noise can be highly unsettling to these magnificent ambassadors of Thailand.

VinCotto at GranMonte Vineyard, Khao Yai

ranMonte Winery in Khao Yai’s Asoke Valley has been cultivating grapes since 1999. It started as a hobby for soon to retire Bangkokian Visooth Lohitnavy. Some 22 years on, it has grown from the experimental 10 acres under vine to a vineyard of 40 acres plus a further 35 acres in the neighbouring Wang Nam Khiao region. Though Khun Visooth and wife Sakuna are still actively involved in the business, their two young daughters, Nikki and Mimi, now lead. Having

qualified in Oenology and Viticulture in Australia, Nikki is GranMonte’s winemaker and vineyard manager and Thailand’s only female winemaker, while Mimi takes care of all the company marketing activities. This family-run business currently produces 120,000 bottles a year, with just under a quarter exported to Hong Kong, Japan, and European markets. GranMonte wines have gained international recognition and won over a hundred medals and trophies from international wine competitions in
France, Austria, England, Hong Kong, Japan, Singapore and Thailand. And then there are the simple touches like the ‘wine salt’ present on each table. A salt infused with a Cabernet Sauvignon
reduction, dried and crystalised, reinforcing the overall wine theme. Two appetisers from the European menu plus one from the Thai started the journey. Pan-seared Foie Gras atop grilled apple slices, a balsamic glaze, grape, and verjuice sauce. Creamy, buttery, rich grilled liver offset nicely with a slightly sweet and sour sauce— indulgence on a plate. Next, Chicken Wrapped in Vine Leaves. Bite-size pieces of marinated chicken, wrapped in vine leaves and lightly fried, delivering soft, tasty crisp mouthfuls.
Two or three people would ideally share our Thai appetiser - Mieng Pla Tub Tim or deep-fried pieces of Red Talipia. This is a traditional snack from the central and Issan regions of Thailand, though elevated at VinCotto with the use of fresh fish (Pla) instead of dried shrimps. The name Mieng Kham translates to ‘one bite wrap.’ Take a highly nutritious cha phlu leaf top it with fish, diced pieces of shallots, chilli, ginger, roasted peanut, and some sticky sweet tamarind sauce, fold it, and pop it in your mouth – simply delicious.

Our Thai main is Kanom Jean. Unlike the street food and market versions of this Thai staple, VinCotto has created a refined restaurant version of this classic dish. The thin glistening white rice noodles remain a central element, as does the flavour-filled curry sauce. The vegetables, typically served fresh on the side, have been lightly battered and quickly fried for this rendition. Crumbed and fried prawns are also an addition, while pickled daikon and beans add a crunchy fresh element—a Royal household-worthy dish. Our other two main dishes transported us straight to a cosy French restaurant, and GranMonte’s iconic 2015 Asoke Cabernet Sauvignon-Syrah was the perfect companion to both. The slow-cooked Lamb Shank in Red Wine with braised vegetables can best be described as fall-off-the-bone heavenly yum. We also came to understand why the Coq au Vin is a Lohitnavy family favourite. Our deep wine-braised whole chicken leg was a comforting and flavourful delight with the accompanying potato, carrots and king mushrooms adding extra lusciousness to the sauce. Edif Piaf or Louis Armstrong’s version of La Vie en Rose playing gently in the background would have entirely transported us to that French Bistro.

Not only does winemaker Nikki make outstanding wines, she grows and preserves Vanilla beans, and this gentle but distinct flavour features in our first dessert. Apple Crumble with Vanilla Sauce and ice cream. The crunchy crumble atop oven-baked apples and raisins with hints of lemon married well with the warm vanilla-infused, not overly sweet sauce: the ice cream a delightful bonus. Grapes were the other theme in the remaining two desserts, though table grapes and not wine grapes. A creamy and suitably wobbly Panna Cotta topped with a grape preserve. And a biscuit crumbbased cheese pie with fresh grapes. All crowd-pleasing finishes to the meal. VinCotto opens daily from 7:30 am to 8:00 pm, with reservations recommended in the high (winter) season, long weekends, and holidays. he Principality of Monaco once again played host to the world’s leading boat show, the Monaco Yacht Show. Yachting enthusiasts, yacht builders, the wealthy, and the super wealthy gathered to show off their floating palaces or shop for the perfect new superyacht. His Highness, Prince Albert II of Monaco, joined in the festivities, as he has since the show’s 1991 inception.
Taking place from 22 to 25 September, the show is known for offering the largest display of Superyachts in the World. This year’s show was more diverse than ever, thus disproving the cautious predictions made by the organisers at the beginning of the summer. Week after week, the show came to life in sync with the increasing general excite-
ment. While 300 exhibitors and a maximum of 90 yachts had initially been announced, the 2021 MYS featured 440 exhibitors and 101 superyachts, worth an estimated €3.6 billion. Featured yachts included 37 new launches and 14 superyachts measuring over 70m in length.

Albert II, Prince of Monaco According to the show’s yacht builders and brokers, their visiting schedules were full from the very start of the event, and potential clients came on board with serious intent to buy, fitting in with the current rise in yacht sales. One of the largest superyachts on display was the 95-metre Kismet. Built by Lurssen and launched in 2014, the US broker Moran Yacht & Ship exhibited the megayacht with a selling price of €169 million. Other notable yachts included the 85-metre BOLD & the 72-metre AZTECA. Along with the megayachts, plenty of exhibitors showed off luxury tenders, water toys, & high-end automobiles.

One day tickets to the show were €500, with three day passes going for €1,350. If you are interested in chartering or purchasing a yacht, then the Saphire ticket is the one you want. The Sapphire Experience offers you a programme of activities operated by the official MYS concierge service: visits to the most outstanding superyachts at the MYS, meetings with the greatest yacht designers or builders, invitations to gala evenings or private cocktails aboard the yachts, a luxury tender ride off the Monaco bay, courtesy car service, etc. The price of the Saphire ticket isn’t listed, but as they say, if you have to ask the price, you can’t afford it.

The 2021 MYS appears to have benefited from the excitement spurred by this reunion, as well as from the favourable state of the market, with an increase in yacht sales over the last 18 months: clients have turned to yachting to escape the gloomy context that the pandemic has brought about and the frustration of having their freedom restricted. Therefore, 2021 has been a win-win for everyone involved in yachting. Thanks to the steering committee founded this year, we intend to pursue our collaboration in order to further improve the MYS for the 2022 edition”. A Conversation With Ms. Visootha “Nikki” Lohitnavy

isootha “Nikki” Lohitnavy is the Winemaker and General Manager for her family-owned and operated GranMonte Winery in Khao Yai’s Asoke Valley. Nikki also has the distinction of being Thailand’s only female Oenologist and Viticulturist.
Yai land, where her father dabbled in his hobby of grape growing and winemaking. That was back in 1999, and from that point on, family weekends and holidays were spent ‘on the farm’, sparking Nikki’s interest in all things’ botany, including her father’s viticultural pastime.

and Honours in Viticulture from the University of Adelaide (Australia). She is the only scholar in the university’s history to do so, and her research was published in two highly respected UK and US scientific journals. Returning to her homeland, Nikki adopted new winemaking innovations and techniques to the family’s GranMonte. The vineyard has now
expanded to 40 acres under vine plus a further 35 acres in the neighbouring Wang Nam Khiao region. It produces 120,000 bottles and is expected to grow to 300,000 a year. Nearly a quarter of the current production is exported to Asian and European markets. Commercial wine-growing in the non-traditional region of the ‘tropics’ has come about through several fac-
tors, including the impact of climate change in the traditional wine regions and through technological and viticultural advances. This ‘New Latitude’ viticulture is now found in Thailand, Vietnam and Bali and other unlikely locations like Bolivia, Ecuador, Kenya, Namibia, India and Sri Lanka. Nikki is now seen as a leader in this field and hosts visiting winemakers
and scientists to understand better how to adapt to the changing climate’s impact in their regions. Such leadership was acknowledged when Nikki was listed in Forbes’ Inaugural 30 Under 30 Asia (2016) alongside other “top promising young leaders, daring entrepreneurs and game-changers” in the manufacturing and energy sector.

HOT Magazine recently had the pleasure of sitting down with Nikki, and we are pleased to share our discussion here. Nikki, you took over as winemaker in 2008, so how has the vineyard and business evolved over these last thirteen years? The first few years focused on setting up systems and plans for our vineyard staff to manage their work efficiently and build and train a team that can work in a winery environment. Thai people know agriculture, but viticulture and winemaking are new, so training is essential. Viticulture is yet to be taught in the universities here. A vineyard works to a different schedule. For instance, we have now moved to harvest at night to ensure the fruit is best cared for. The harvest and crushing is the busiest time of year which then leads to the detailed winemaking process. So, working in wineries is a very different (agricultural) lifestyle. Once those systems were in place, I focused on the hospitality side, first expanding the retail shop. We created a restaurant in what was the family home and then expanded it. And about ten years ago we built our accommodation called GranMonte Wine Cottages. My sister Mimi has now come into the business to look after marketing and public relations. This has allowed me to focus on vineyard expansions, wine production, plus research and development.

The vision has always been to have a wine tourism business. Education is a big part of that in Thailand, where wineries and locally made wine are relatively new. Through our vineyard tours and tastings, we help people develop an understanding of the whole process. That gives our product context and something they can feel more of a connection to. Also, the restaurant and accommodation are now expected facilities when visiting a wine tourism business like ours. Current statistics suggest only 10 percent of the world’s winemakers and vineyards managers are women. However, female enrolment rates for Oenology and Viticulture courses are edging 40-50 percent. That puts you into an emerging vanguard. How do you see yourself in this context?

It’s great to see more women in this industry. When I was studying in Australia, around 20 percent of our classes were female. In one of the leading Australian wineries where I worked, the mix was more 50:50 in those senior positions. However, in Europe, I did not see such a high female presence.
been accepted accordingly. It’s what I love and put in more than 100 percent. The only situation I’ve ever encountered was my high school careers advisor in Melbourne, who said you shouldn’t study Oenology because you are an Asian female. I guess she was wrong.
I’ve never thought women could not do this job. I think it’s for everyone - all the tasks. In the vineyard, harvesting, to in the winery from cleaning the pumps and the fermentation tanks – everything – women can do as well as men. In fact, seventy per cent of our team of some 50 staff are female, including my assistant winemaker, who has been with me since 2010.
You could be viewed as a trailblazer in the world of winemaking here in Thailand and internationally. Would you encourage other women to take up this profession, and what advice would you give them?
I’ve never really encountered any challenges or been treated differently as a female in this industry. I’ve always worked hard and, as part of the team,
I absolutely encourage anyone to take up this career path, especially young Thais interested in wine. The industry is still young here, so we always accept people looking to do their internship. Be it students from horticulture, entomology and geology. These studies are all critical in viticulture.
I know one young lady who did her internship with us and wanted to study oenology, so I suggested some universities and assisted as best I could. She has now completed her qualifications and is working in Bordeaux, France. Maybe she will come back to Thailand one day and share her knowledge as well. So, my advice is simple - it’s possible, just go for it! Is there anything else you would like to add? We are excited about our new plots at Wang Nam Khiao, which will add to our range through different varieties. Even though it’s less than 100 km away, the microclimate and soils are different, meaning different wines. Our Thai wine industry is developing continually. Our wines win awards internationally, and we encourage the public to give them a try and support us as we grow. By Michael Cullen

ilent-Yachts, built in Thailand and Italy, recently announced the sale of their first flagship yacht, the Silent 100 Explorer. The first unit of its four-deck 100 Explorer series, it is scheduled for delivery in 2023. The 102ft, 440GT solar-electric catamaran, has a beam of 45ft and a towering height of more than 34ft. Designed by Marco Casali, the 31m cat offers the living space of monohull motor yachts sized between 40-50m, according to Silent-Yachts. Michael Köhler, CEO and founder, of SilentYachts, said: “This new sale comes after the sale of three of our 80ft models in rapid succession and confirms the market’s interest in the superior comfort of catamarans and solar energy for propulsion needs plus all the household appliances on board.”
UNLIMITED RANGE Like all Silent catamarans, the Silent 100 Explorer has a silent solar-electric drivetrain and worldwide cruising capabilities, following all the brand’s models from the former Silent 64, which in January 2018 became the brand’s first solar-powered production boat to cross the Atlantic Ocean. Solar cells on the 100 Explorer provide up to 40kWp (kWp stands for the ‘peak’ power output in kilowatts), while clean solar electrical energy is stored in a battery bank with a capacity of up to 800kWh. Coupled to twin 340kW (@700rpm) electric motors, the Silent 100 Explorer has an economic speed of 6-8 knots, cruising speed of 10 knots and a top speed of 14-16 knots. The solar panels are in the hardtop, which slides apart to reveal a fly deck that can also serve as a touch-andgo helipad. Because solar energy is completely renewable, the Silent 100 Explorer has an unlimited range, like all other Silent models, with diesel generators providing back-up auxiliary power. There is never a need to search for a marina to charge the batteries, get ice, refuel, or fill the water tanks and the yacht can virtually cruise for weeks without fuel or the need to start the generator. Casali said: “The Silent 100 Ex-

plorer is a great challenge, taking the solar revolution of Silent-Yachts to the superyacht level. It will bring the experience of cruising to the next level, becoming a world reference for responsible yachting always connected to respect of the environment. “Furthermore, the available spaces, fully customisable by the clients, allow for unique internal and external areas such as owner’s quarters or large saloons that aren’t even achievable on much longer monohull superyachts.” Compared to the Silent 80, the 100 Explorer has an extra deck and much more space outdoors and indoors. As well as the enormous full-beam master stateroom with private office forward on the main deck, the 100 Explorer has five en-suite guest cabins on the main deck and in the starboard hull.
