Alain Ducasse is one of the world’s most popular and well-known chefs. Born in 1956 on a farm in the Landes region, he started his culinary career at 16 in France’s southwest before going on to train with acclaimed chefs such as Michel Guérard, Gaston Lenôtre, Alain Chapel and Roger Vergé. From those experiences, he enjoys a legendary status in gastronomy.
Chef Ducasse won his first Michelin star as head chef at La Terrasse in the French Riviera’s classic Hotel Juana. His food at flagship restaurants like Louis XV at Hotel de Paris Monaco and Alain Ducasse at The Dorchester in London set his status as one of the world’s best chefs. He is one of only two chefs to hold 21 Michelin stars and the first to own restaurants in three cities, each carrying three Michelin stars simultaneously.
Today, the Ducasse portfolio includes 60 establishments, from haute cuisine restaurants to Bistros and Cafes, in seven countries on three continents. HOT Magazine recently had the pleasure of sitting down with Alain. THAI FIGHT is an extravaganza of Muay Thai that takes place in major cities inside and outside of Thailand. On Saturday November 20th, THAI FIGHT made its second appearance in Hua Hin, this time at Hua Hin’s True Arena for the THAI FIGHT Semi Finals.
Officially known as “World Thai Boxing Tournament Thai Fight VANA NAVA Hua Hin,” the event drew thousands of enthusiastic fans to witness Muay Thai fighters from around the world take on one another and Thai fighters at their national sport.
For those unacquainted with Muay Thai, it is a traditional martial art which has existed for a very long time. Some believe its origination goes as far back as the establishment of “Siam,” prior to the country being named Thailand.
In addition to the Thai Muay Thai fighters, there were fighters from France, Cambodia, Tunisia, Russia, Greece, Argentina, Belgium, Lebanon, Myanmar, Israel & Norway. Italian Restaurant La Gritta Welcomes Chef Giordano Roscini
Anyone who witnessed the growth of Italian cuisine in Phuket during the 2010s would remember the iconic restaurant La Gritta and its authentic cuisine, traditional menus, personal ised service and the friendliness that touched diners’ hearts.
Giordano Roscini, 40, formerly in charge of Alberto’s Pizzeria & Trattoria in Bangkok, is the new Chef de Cuisine of La Gritta at Amari Phuket. Roscini is a native of Amelia, Umbria – one of the most ancient towns in central Italy famed for its rolling green mountains, hearty food and robust wine.
Roscini will introduce new menus and elevate La Gritta’s traditional cui sine with modern culinary techniques honed from his years at the one Miche lin star Casa Batavia in London. He’s well-versed in picking the freshest and
seasonal ingredients for special menus and sticks to his farm-to-table tradi tions gleaned from his formative years working in Umbria’s farm hotels.
“I’m looking to bring high-quality ingredients to create menus from many regions. I will focus on unique and au thentic recipes, such as introducing the region of Sicilia because the food there is a little different from all the other parts of Italy,” Roscini said. “In Italy, the best cold cuts and cheeses are there – all with a variety. I will bring them from Italy to share with all my guests.”

Often misunderstood or over looked the Rhône vineyards are the perfect example of a healthy wine region that associates centuries of terroir, classic appellations and more adventurous wine making practices leading the new generation forward. However, it has its idiosyncrasies and when talking about the Rhône wines we will often separate them into 2 distinct areas, Northern and Southern Rhône. Without further ado let’s take a trip down the Rhône River.
Up North, The Starks.
They have been here forever; they are somewhat wild but well-mannered and they guard us against the North (Beaujolais). Situated under Lyon
often referred as the heart of French gastronomy flowing down south along the Rhône River, the Northern Rhône vineyards cover approximatively 5000 hectares with noble appelations such as Côte Rôtie, Condrieu, Saint Joseph, Crozes-Hermitage, Hermitage and Cornas.
The main grapes in Northern Rhône are Viognier for the whites and Syrah for the red. Marsanne and Roussane, both white grapes, are also widely used and sometimes as lower percentage in a red wine blend to stabilize its color. Northern Rhône wines are probably the most authentic expression of Syrah and any lovers of that grape ought to try it. Also, if you have a prejudice against Syrah being a full body powerhouse
then try to explore some appellations like Crozes-Hermitage where you can find some examples of medium body and more delicate Syrah.
Some of the best examples of North ern Rhône wines available in Hua Hin are the Paul Jaboulet Ainé Domaine de Thalabert Crozes-Hermitage and Hermitage La Chapelle AOC. The lat ter is probably the most iconic wine in all Northern Rhône. As for the whites you will find that the Paul Jaboulet Ainé Viognier not only is a fantastic value white wine but, as pointed out by Thai cuisine reviewers and wine lovers Leigh and Shane of Feast Thai land, it goes remarkably well with Thai delicacies. Finally, the highest level of Viognier available is probably the
Condrieu White “Les Grands Aman diers” AOC. Condrieu is the home of Viognier and the only appellation in Northern Rhône producing only white wines. Those wines are great example of white wines with a good potential for aging.
Down South, The Lannisters.
They are regal, they are powerful and rich and sometimes slightly snobby to wards their neighbors up North, meet the wines of Southern Rhône. Situated around Avignon, a city with an exten sive history and the home of the papal castle, the southern Rhône vineyards are flatter, have a dryer Mediterranean climate and produce many famous ap pelations such a Châteauneuf-du-Pape, Côte du Rhône, Côte du Rhône Villag
es, Gigondas, Vacqueyras, Beaumes de Venise and Rasteau.
The main grapes are Grenache often grown on stony soils (galets) which strives in dryer climates and Syrah is also present. Grenache is quite versa tile in terms of fermentation and mat uration, from cold maceration, whole bunch fermentation producing lively and fruity wines to open top fermen tation for the traditional appellations such as Châteauneuf-du-Pape or Gig ondas.

A Conversation With Global Chef Alain Ducasse
Alain Ducasse is one of the world’s most popular and well-known chefs. Born in 1956 on a farm in the Landes region, he started his culinary career at 16 in France’s southwest before going on to train with acclaimed chefs such as Michel Guérard, Gaston Lenôtre, Alain Chapel and Roger Vergé. From those experiences, he enjoys a legendary sta tus in gastronomy.
Chef Ducasse won his first Michelin star as head chef at La Terrasse in the French Riviera’s classic Hotel Juana. His food at flagship restaurants like Louis XV at Hotel de Paris Monaco and Alain Ducasse at The Dorchester set his status as one of the world’s best chefs. He is one of only two chefs to hold 21 Michelin stars and the first to own restaurants in three cities, each carrying three Michelin stars simulta neously.
Today, the Ducasse portfolio in cludes 60 establishments, from haute cuisine restaurants to Bistros and Ca fes, in seven countries on three conti nents. Additionally, business branches specialising in events and catering, restaurant training and consulting, cooking schools, numerous cookbooks, and even luxury inns and hotels. In looking to rediscover the authentic taste of coffee and chocolate, Alain Ducasse Manufacturing commenced in 2013 and now has 33 Le Chocolat Alain Ducasse and Le Café Alain Ducasse specialist retail outlets across France and Japan.
HOT Magazine recently had the pleasure of meeting with the revered French culinary icon to learn more about his restaurants in South East Asia, his role as Culinary Director of this diverse gastronomic business, and his vision for the future.
HM. Your restaurants in Asia can be found in Thailand, Singapore, Macau and Japan. What is the attraction of op erating hospitality businesses in Asia?
AD. Having travelled to Asia for over 15 years, I’ve seen the growing interest in our business, the restaurant industry. The region has also devel oped as a popular business and leisure destination. Singapore has always been a leader in this space and continues to evolve. Even 25 years ago, the food proposition at Raffles Singapore was exceptional. Bangkok is one of the most dynamic Asian cities. You could say Bangkok’s dining scene is more revolution than evolution; such is the excitement. Importantly, all across the region, people want to discover new dining experiences.
HM. HOT magazine readers can easily experience two of your restau rants - Blue at ICONSIAM in Bangkok and OSTERIA BBR by Alain Ducasse at Raffles Singapore. Can you describe what diners could expect if visiting either of these establishments?
AD. At Raffles, the focus is Italian, between an Osteria and a Trattoria, inspired by my travels. The restau rant has a contemporary design yet is located in a landmark hotel. A unique combination that we wanted the set ting to reflect. OSTERIA BBR by Alain Ducasse is a modern vision of Italian cuisine but retains the roots of classic Italy. A more casual dining situation, great for sharing, while offering out standing food and wine.
Blue in Bangkok is a fine-dining Mediterranean in a new and highly modern location on the Chao Phraya. It is much smaller—just 45 seats—and complements the restaurant’s magnif icent location and plays to the city’s richness. It is contemporary and prom ises to take guests on an unrivalled culinary journey.
HM. How would you describe your role in this diverse global hospitality business?
AD. If we could compare it to a fashion organisation, you could say I am the Artistic Director. I have trusted people who manage the business side, allowing me to be creative – the Chef and Artistic Director. From fine dining to our latest manufacturing initiatives of chocolate, coffee, ice cream and now biscuits. I am involved from concep tion, teasing out the ideas until we get the final product. For example, the new biscuit range has been 18 months in the making. Just the time we spent on
finding the most suitable flour demon strates the dedication and attention to detail that has to be done.
HM. With such a diverse global enterprise, how do you maintain your businesses’ quality, consistency and ongoing creativity?
AD. All of this would not be possible without the human factor and talent of our collaborators across the business. The Chefs and leaders have all worked and trained with me before taking charge of one of our restaurants. They understand my ideas and how they can evolve and transform them. I also fos ter young talent, particularly those in
their 30s. This generation brings a par ticular mentality and energy that rubs off on others already with us. They are contemporary and daring, and these characteristics help us evolve. We respect our history, though we must remain relevant. This talent is helping us do that and building our future.
HM. Is there a city or global location where you don’t have a restaurant but would like to, and why?
AD. I do not know this location as yet. I am looking and will know when I find it. This is the adventure and jour ney I am on.
HM. Many of your restaurants have achieved great accolades, including Michelin stars. Do you have favourites within this diverse collection?
AD. They are all important and rel evant. If I had to nominate favourites, it would be my first restaurant and the next one. New favourites could also be ideas that are yet to be fully evolved. Already we are conscious of how food can influence health, so we use less salt, fat, and sugar when creating our restaurant dishes. We have also started a new R&D department working on what we see as the future. Initiatives like food lines with up to 85 per cent veggie-base, propagating sea vege tables, and even a non-meat burger called Burgal. Leading the way to find solutions to issues linked to the chang ing climate and food security is where we aim to be.
HM. What dishes or culinary styles do you create and share when you have downtime with family and friends at home?
AD. Simple and fresh, served family style, with the produce from my local market. This is our food at home.

Named after Stamford Raffles, Singapore’s founder, Raffles opened in 1887 as a 10-room beachfront hotel operated by Armenian brothers, the Sarkies, who also helmed the Eastern & Oriental Hotel on Penang Island. THAI FIGHT True Arena Hua Hin
THAI FIGHT is an extravaganza of Muay Thai that takes place in major cities inside and out side of Thailand. On Saturday November 20th, THAI FIGHT made its second appearance in Hua Hin, this time at Hua Hin’s True Arena.
Officially known as “World Thai Boxing Tournament Thai Fight VANA NAVA Hua Hin,” the event drew thou sands of enthusiastic fans to witness
Muay Thai fighters from around the world take on one another and Thai fighters at their national sport.
In addition to the Thai Muay Thai fighters, their were fighters from France, Cambodia, Tunisia, Russia, Greece, Argentina, Belgium, Lebanon, Myanmar, Israel & Norway.
This was the semi-final event for the 2022 Royal Cup Provided by His Maj
esty King Maha Vajiralongkorn for the male fighters with Her Majesty Queen Suthida providing the Royal Cup for the female fighters.
For those unacquainted with the sport, Muay Thai is a traditional mar tial art which has existed for a very long time. Some believe its origination goes as far back as the establishment of “Siam,” prior to the country being named Thailand.
Back then, Muay Thai was used for military purposes. The fighters fought with bare hands, which later evolved into rope-bound hands. This was called “Muay Kard Chuek”, with each hand being wound with rope up to the elbow. The thickness and stiffness of the rope being used could result in the death of an opponent.
Nowadays, with Muay Thai being a spectator sport, softer and thicker
leather gloves are being used for increased safety and it has become without doubt, the national sport of Thailand.
There is a lot of ceremony & legend around Muay Thai, one being the Pa hung, victory incantation. Legend has it that the monk Somdet Phra Panarat of Ayutthaya created a spell for King Naresuan to recite every time he went into battle. Supposedly, this brought
the king victory over the Burmese and ultimately led the Siamese people to freedom.
During World War I, when Siam sent troops to aid their allies, it was said that King Rama VI led a prayer group to recite the Pahung incantation, which led the troops to victory.
Since the olden days, Muay Thai has been a sport with a master, known as a Kru, and every boxer has his own kru. Before every fight, fighters pay respect to their Kru in the form of a dance which is called “Wai kru.”
The Mongkol headband worn by Muay Thai fighters during their pre-fight Wai kru dance is also part of the ceremony. For the fighters, the Mongkol is a talisman that supposedly brings prosperity to its wearer. It is usually made from holy thread or raw fibers that have been consecrated by Muay Thai masters before being wrapped and bound into a band that is worn around the head, with a long tail hanging down the back.
The Mongkol supposedly originated with a master who was skilled in the magical arts. According to the story, he conducted a ritual where he hyp notized a snake into biting its own tail, forming a circular shape. He roasted the snake and submerged it in holy wa ter made from coconut oil and herbs. He then bound the snake circle in a talisman cloth and gave it to one of his students to keep on their person when ever they went out to battle. Today, the Mongkol is used as an accessory to symbolize tradition and culture and is considered to be a crucial aspect of Muay Thai.
The next big Muay Thai fight, named “THAI FIGHT 100 Years Nakornban,” will take place on Saturday, December 24, at the Nimibutr Building, National Stadium in Bangkok. by Alain DucasseFirst established within Raffles Singapore in 1896, the historic Bar & Billiard Room (BBR) has served as the backdrop of many unique Raffles stories. The 124-yearold building started as a club during British colonial rule and continues to be the social gathering space of choice for travellers and the local community. The much-loved Bar & Billiard Room continues to evolve.
Returning with a new chapter in 2019, though interrupted by the pan demic, OSTERIA BBR by Alain Ducasse reopened its door in August 2021. At OSTERIA BBR, celebrated master chef Ducasse has delved into his decades of culinary exploration and gourmet discoveries from Italy, creating a menu of modern and energetic Italian dishes with authentic flair.
When challenged with designing the restaurant, acclaimed Paris-based firm Jouin Manku created a contemporary setting while retaining striking archi tectural features like the expansive window, pillars and original floor tiles in honour of the historic Raffles Bar & Billiard Room. Their design has the open kitchen as a prominent feature, with an overarching bronze canopy topped with a striking blue sculpture reminiscent of fish swimming across the sea, extending to the vaulted ceil ing.
The dark timber tones are gone, with the bar and open kitchen all bright white, enlivening and opening up the space. Terracotta tones and darker shades of red in the upholstery and seating add splashes of colour, as do the ultramarine blue water glasses adorning each table setting. Enveloped and hidden by the tropical gardens, the alfresco dining terrace facing Beach Road is particularly inviting in the evening.
Italian chef de cuisine Francesco Soletti was the legendary chef’s choice to make the Ducasse culinary vision for OSTERIA BBR a reality. Having worked with Chef Ducasse at the three Michelin-starred Louis XV restaurant at l’Hôtel de Paris Monaco, Chef Soletti understands his mentor’s approach and leads the OSTERIA BBR kitchen brigade.
On entering the elegant, lively BBR, I recommend spending a little time in the cosy bar for an aperitivo, cocktail, wine, or, perhaps, sampling the on-tap Birra Menabrea from Italy’s Piedmont region. Their Camparitivo Happy Hours on Thursdays to Mondays from 6 to 8 pm, with choices like Campari Spritz, Aperol Sour, and Garibaldi, are a fantastic way to ease into the evening.
Once ensconced at your table or perching at the counter seating en circling the open kitchen, the menu provides choices from ala carte with its produce-driven antipasti dishes, fresh ly-cooked pasta and risotto, seafood, grilled meats and wood-fired pizzas. If you are unsure what to select, the curated Tentazioni (Temptation) menu takes you on a handpicked journey of seven signature dishes, with a wine pairing as an additional option. Lunch diners also have the choice of a two or three-course set meal.
Menus are seasonal though signa ture antipasti dishes like Marinated Sea Bream enlivened with the famous Amalfi lemons or the Sicilian Mazara del Vallo Red Prawn Tartare and caviar stand out. For pasta, try the Sea Urchin Risotto or Eliche di Gragnano featuring fresh fusilli pasta with juicy Maine lobster. Straight from the wood-fired pizza oven, the Cetara Pizza celebrates the village by the same name on the Amalfi Coast village known as the Land of Anchovies and especially its revered anchovy sauce.
Dishes on the Secondi (second or main plate) that caught our attention include Crazy Water Sea Bass with clams. As did the Rack of Lamb with Artichoke or Chef’s Cacioucco-style Fish Soup. A refined take on this classic fish stew, native to the western coastal towns of Tuscany.
Round off the meal with a selection of classic Italian desserts such as tira misu and affogato, though I suggest the Fragola e Pistacchio (strawberries with homemade pistachio ice cream). And you cannot pass up one of Chef Ducasse’s most famous dessert cre ations – Baba al Limoncello Panna Montata (Baba with Limoncello and whipped cream).
Sundays at OSTERIA BBR are all about Brunch with a 120-minute free-flowing epicurean experience featuring delectable Italian pleasures alongside curated Champagne, wines and cocktails. Specialities to savour in clude fresh oysters, burrata, a fine array of Italian cold cuts and artisanal chees es, scrambled eggs with sea urchin and caviar, fresh made pasta and lobster. This is indulgent brunch dining.
