nside this month’s issue, we are pleased to take you back to the island of Phuket, the pearl of the Andaman’s. Since November 1, fully vaccinated international travellers have entered Thailand via Phuket without the need to quarantine, thanks to Thailand’s more relaxed ‘Test and Go’ program.

And despite an 18-month closure, Phuket has not lost its international appeal. Indeed, US NEWS ranked Phuket number 8 in their 2021 top 30 “World’s Best Places to Visit”, noting its outstanding sights, culture, scenic beauty, food scene, plus accommodation, boat trips, spa and wellness for all budgets as reasons for their endorsement. We wholeheartedly agree. One strong positive to come of no visitors is the island’s natural resources have had time to rest and rejuvenate. Always part of its allure, the island’s forests, beaches, coral reefs, surrounding islands, marine and landbased wildlife have all thrived and are in the best condition people can remember.

Patek Phillippe watches historically bring massive sums of money at auction, with many of the pieces made for dignitaries and some of the world’s most influential and powerful people. In 1933, legendary banker Henry Graves Jr. took possession of a Patek Philippe that he commissioned and which took eight years to create. The price was $15,000, a staggering amount at the time. The pocket watch has 24 functions, including a celestial chart that displayed the Milky Way stars above his Manhattan New York home. In 2014, that pocket watch set the record for the most expensive timepiece ever auctioned with a winning bid of 23.98 million dollars. Be Well Opens Satellite Clinic At Black Mountain The Be Well Medical Center opened its first satellite clinic on 12 November 2021 at Black Mountain. Be Well offers Western-style primary health care in Hua Hin, opening their first clinic in January 2020 at the Banyan Resort. Be Well has grown to nearly 2000 members and treats 50 – 70 patients per day, 7 days a week. Initially, the dominant group of members were Farang since they were familiar with

the concept from their home country. However, in the past few months, every second new member is Thai which shows their concept appeals to them as well. The Mayor of Hua Hin, Mr. Nopporn Wutthikul, officially opened the clinic attended by local dignities, leading medical professionals from Bangkok and Hua Hin, and key business leaders.

After an introductory address by Haiko Emanuel, founder of Be Well, Mr Nopporn Wutthikul spoke briefly on the importance of offering residents and guests a safe environment within Hua Hin, including medical care at an international standard. That is a difficult question, as I like to try different restaurants and cuisines. I do not have any particular favorite restaurant. I love a wide spectrum of food from a plain pasta dish with homemade tomato sauce to a fine dining dinner.

What do you like to do in your free time and why?

What did you know about Hua Hin before you moved here?

I enjoy working in and around the house, cooking, spending time with family and friends.

Hua Hin being a laid back beach town with beautiful surroundings has always attracted me since I first visited with some friends.

What would you recommend to new-comers to do in Hua Hin and why?

What do you like most about your profession? Meeting, as well as working with a wide variety of people from all walks of life. Another fantastic aspect is living and working in different parts of the world and learning as well as immersing one self into the cultures of the destinations. What do you like least about your profession? Due to the fact that the hospitality industry is a 24/7 operated industry and one spends large amounts of time away from home I at times miss being able to spend more time with the family.

Take a stroll along some of the beaches in Hua Hin in the early morning or at sunset. They can be quite magical. As mentioned Hua Hin so much to offer you will not be at a loss of picking something to do. Tell us a surprising fact that the public might not know about you? Was rather sporty when I was a bit younger and loved to ride a motorcycle whilst living in the Middle East. What is the most outlandish thing you have ever done and why? Bungee jumping. I loved the thrill and excitement whilst trying out something I had never done before.

What do you like most about Hua Hin? Hua Hin is a great family destination with a wide variety of activities to choose from.

PATEK PHILIPPE Handcrafting Luxury Timepieces Since 1851

W

hen it comes to impeccable craftsmanship, pioneering designs, and the rich history of Genevan watchmaking inventions, there is none more qualified than Patek Philippe. The company began its legacy in the nineteenth century, founded by Antoine Norbert de Patek and Adrien Philippe and has a tradition of innovation that has been crowned by over

one hundred patents. The brand is renowned for its hand-finished watches and skilled craftsman that ensure each and every timepiece is of the highest of standards. Before their formation, both Patek and Philippe were on their own journeys within horology. In 1839, Antoine Norbert de Patek formed a union with François Czapek and launched Patek, Czapek & Cie, the predecessor to the

Patek Philippe brand. The partnership lasted six years, with them creating several exceptional timepieces. Once their partnership was dissolved in 1845, they went their separate ways, producing timepieces respectively. Meanwhile, Jean Adrien Philippe was becoming recognisable as a driving force when it came to his inventions. He received a bronze medal for his keyless winding and hand-setting


system at the Industrial Exposition in Paris. He applied for a patent of this design and garnered the attention of many, including Queen Victoria. In 1851, both watchmakers came together to begin the brand Patek, Philippe & Ce- Fabricants à Genève, the start of the brand we know today. Their career spanned decades, and they continued to supply timepieces for royalty and aristocrats, among

others. New patents for their timepieces included a precision regulator, perpetual calendar mechanisms for pocket watches, and the first double chronograph. This resulted in the creation of the “Duke of Regla” Westminster chime pocket watch in 1910, the first complicated ladies’ wristwatch with a five-minute repeater in 1916, the first

split-seconds chronograph wristwatch in 1923, and its first wristwatch with a perpetual calendar in 1925. Patek Phillippe watches historically bring massive sums of money at auction with many of the pieces made for dignitaries and some of the most influential and powerful people in the world:

The Wall Street Crash of 1929, otherwise known as Black Tuesday, was the most devastating stock market crash in the history of the United States. It signalled the beginning of the 12-year Great Depression that impacted the world. Patek, Philippe was not spared from the abyss and suffered financial duress as many of its customers defaulted on payment obligations. To avoid being taken over by a competitor, the directors contacted brothers Charles and Jean Stern whose company ‘Cadrans Stern Frères’ produced topquality dials and ranked among Patek Philippe’s preferred suppliers. The two companies had previously enjoyed an amicable relationship. Prompted by their desire to preserve and perpetuate Swiss watchmaking tradition, the Stern brothers helped Patek Philippe out and took a stake in the company in 1932 and wholly acquired it within a year.

The company was kept within the Stern family, and in 1958 Henri Stern became president of Patek Philippe, with his son, Philippe Stern becoming president in 1993. Philippe Stern’s passion for timepieces resulted in the opening in 2001 of The Patek Philippe Museum in Geneva, considered one of the world’s foremost horology museums. It is currently celebrating its 20th anniversary. The “Temple To Watchmaking”, as it is referred to, houses over five centuries of watchmaking history and features an antique collection that includes

timepieces from the 16th century through to the Patek Philippe collection from 1839 onwards. The museum also boasts a library with over 8000 publications on time and time measurement. In 2009 Philippe handed his passion down to his son, Thierry, who became president of Patek Philippe and continues to run the last major independent, family-owned Genevan timepiece manufacturer to this day.

Henry Graves Jr., One Of The Most Consequential Watch Collectors Of All Time

H

enry Graves Jr. is best known for owning what was, for 56 years between 1933 and 1989, the most complicated watch the world had ever seen. Originating from a bid to outdo fellow watch collector James Ward Packard, the automobile manufacturer from Ohio, the watch cost Graves CHF60,000 (US$15,000) — nearly five times more than the sum offered by his

rival — and took eight years to design and manufacture. On 19 January 1933, Graves took delivery of the Patek Philippe Henry Graves Supercomplication, a pocket watch with 24 functions including a celestial chart that displayed the stars in the Milky Way above his Manhattan home at 834 Fifth Avenue.

The watch has since been re-sold three times, first to the now-defunct Time Museum in Rockford, Illinois, then for an auction record of $11,002,500 in New York (to the late Sheikh Saud bin Mohammed Al-Thani of Qatar), and finally in 2014 for CHF23.2 million (US$24 million) in Geneva, re-setting the record for the most expensive timepiece ever auctioned.


There’s more to the Henry Graves Jr. story than the Supercomplication, however. In fact, he is thought to have ordered some 30 unique watches from Patek Philippe, and today he is remembered as one of the most important watch collectors of all time. Henry Graves Jr. was born on 11 March 1868 in Orange, New Jersey, the son of a prominent financier. Based in New York City, Graves and his

wife Florence also had properties in Irvington on the Hudson River and on Saranac Lake in the Adirondacks, where they spent their holidays with their four children. The river and lake afforded Graves the opportunity to indulge in one of his greatest passions — boating. He also collected Old Master prints, Albrecht Dürer’s Adam and Eve among them.

More than anything else, however, he loved watches, particularly those made by Patek Philippe, the Swiss horology giant celebrated the world over for the precision and style of its luxury watches, its illustrious clients and sky-high prices. Of the top 10 watches sold at auction, eight were made by Patek Philippe, using the most brilliant craftsmen, mathematicians and astronomers.

In return, Graves’ patronage of the company was so significant that it would help to keep it afloat after the Wall Street Crash of 1929. Of the 30 watches Graves commissioned from Patek Philippe between 1922 and 1951, 15 are known to have survived, most of them now at the Patek Philippe Museum in Geneva. One of Graves’ earliest orders for Patek Philippe was a yellow-gold tonneau-shaped minute-repeating wristwatch, which he acquired on 16 June 1928 — after crossing the Atlantic on RMS Olympic, sister ship to the Titanic — while signing off the final drawings for the Supercomplication. Engraved on the case back with the Graves family crest and motto Esse Quam Videri (‘To be rather than to seem’), the yellow-gold model sold for CHF4,575,000, USD4,937,000, on 11 November 2019 at Christie’s in Geneva. It is thought to have been the first minute-repeating wristwatch made by Patek Philippe. (Wristwatches were still a relatively new invention at the time, and of the only three dozen minute repeaters made by the company in the 1920s and 1930s, Graves owned three, including a platinum cushionshaped minute-repeating wristwatch with Breguet numerals that sold for CHF1,205,000, USD 1,300,000 in 2014 at Christie’s in Geneva.) Almost 4cm long, the gold watch was also huge, even by today’s standards, while the sound of the minuterepeating mechanism was enhanced by the relative softness and malleability of the metal, in comparison to platinum. More to the point, Graves is known to have actually worn it. ‘For watch collectors, owning a piece from Henry Graves Jr.’s collection is the ultimate grail,’ says Alex Bigler, Head of Watches for Christie’s Asia Pacific. Five years later, Graves commissioned a pocket watch from Patek Philippe, the platinum open-face oneminute tourbillon no. 198’311, which was subsequently entered in the Geneva Astronomical Observatory Timing Contest of 1933 and awarded first prize with a record 872.2 points.

Delivered on 29 July 1935, it, too, was engraved on the case back with the Graves coat-ofarms and motto, and presented in a wooden box inlaid with a mother-of-pearl shield that replicated the family crest. When it was offered at Christie’s in Geneva on 17 November 2008, the 198’311 was one of three known Patek Philippe tourbillon watches made for Graves — including no. 198’427, which sold on 18 May 2004 at Christie’s in Geneva for CHF2,252,000 — and the only known and confirmed watch made for the collector that was not housed or held in Patek Philippe Museum in Geneva. It sold for CHF843,000.

In 1946, 13 years after purchasing the Supercomplication, Graves ordered another immensely complex watch, an 18K gold split-seconds chronograph wristwatch with Breguet numerals, which he acquired one year later. The split-seconds chronograph is considered one of the three most challenging complications in watchmaking, and ref.1436 is highly coveted by collectors as Patek Philippe’s first split-seconds chronograph wristwatch produced in series. It was introduced to the market in 1938 and discontinued in 1971, and only 140 examples of the reference were made.

The ref. 1436 offered at auction in November features gold Breguet numerals, which are often considered the most attractive dial variation, and thought to be the least common for this reference, with most examples featuring baton numerals or a combination of baton and Arabic. To date, just over a dozen ref. 1436 models have surfaced featuring a Breguet dial, including this one that last appeared at auction over a decade ago. ‘We are extremely honoured to offer this world-class trophy watch to our

international clients, collectors and all admirers of Patek Philippe,’ says Bigler. ‘It is seen as one of the brightest stars of an exceptional private watch collection, with the strongest provenance and desirability.’ After Graves died in 1953 at the age of 85, his collection passed to his daughter and thence to her son, Reginald H. PRU, Phuket

RU is Phuket’s only Michelin starred restaurant and has held the prestigious distinction of One Michelin star for three consecutive years (2019-2021). It’s ‘hidden’ within one of Phuket’s most renowned and exclusive private pool villa resort and residence, Trisara. The good news, though, is experiencing PRU is not restricted to resort guests only, so the Let’s Eat team went along to experience Chef Jimmy Ophorst’s award-winning cuisine. PRU stands for Plant, Raise and Understand, and it is all about sustainably

producing food in a farm-to-table concept. At first, PRU grew their vegetables, herbs and flowers for the kitchen at the Pru Jampa farm and sourced ingredients from Phuket and neighbouring Phang Nga and Krabi. The best local produce they could source. Over time Chef Jimmy and the PRU team met farmers and producers in different parts of Thailand with quality sustainable produce. The individuality of each ecosystem and the diversity from one to another also become apparent. The idea came to pair locally

sourced produce with lesser-known ingredients foraged from the same ecological habitat. As Chef Jimmy explains, “We wanted to go further than having all produce locally sourced. We started creating dishes that tell the story of a place, a particular ‘terroir’, to use a French agricultural term. For example, a dish using river prawns from the Tapi River in Surat Thani province. We looked for ingredients in the same ecosystem as the prawn and experimented with sauces made from smaller fish found in this river, vegetables or plants grown

in or around this river. Ultimately this dish becomes the perfect picture of that fantastic ecosystem.” PRU’s culinary style is founded on Western tradition while drawing out subtle and bold flavours from the herbs, flowers, plants and roots that grow wild in their garden or the different ecosystems their produce comes from. This dedication to sustainability saw PRU receive another accolade in 2021 – a Michelin Green Star. Thailand’s first and only restaurant to receive such distinction.

Their dishes tell stories, and unlike many restaurants, diners are offered a set five or seven-course ‘Experience’. There is also a five-course Vegetarian Experience. Options to add on a Discovery or Premium wine pairing or specially created juice-based non-alcoholic drinks paired with each course are available. Our Let’s Eat team chose the fivecourse Experience with the matching non-alcoholic drinks pairing. Our specially printed menu listed the dishes, each starting with the name of the region the dish is focused on. Our server

introduced and explained the drinks as they arrived for each course. Our first dish takes us to Khlong Yai in Trat on Thailand’s southeastern corner bordering Cambodia. Delicate fingers of dry-aged mackerel plus a tartare of mackerel with flavours of cucumber and dill. As a counterpoint, petit gel droplets of Ceylon Oak or Kasum fruit, as it is also known, give a sweet-sour note. The dish is finished with a cold tomato consomme gently infused with lemon balm. On the Phang Nga side of Sarasin bridge connecting Phuket to the mainland, Tha Nun is our next stop for a dish simply titled Black Crab and Wild Mushroom. Fresh crab meat salad, pickled young coconut heart, smoked crab egg roe, and a foam of crab and wild mushroom. Hints of green shiso, a member of the mint family that traditionally accompanies sushi and sashimi, add an extra delicate note. Hua Hin in the Prachuab Kiri Khan region is our next stop. Sun Choke, also called Jerusalem artichoke, is a variety of perennial sunflowers grown for its edible low-starch tuber. It looks much like a small potato but tastes like a water chestnut. Chef Jimmy serves the Sun Choke three ways in this dish – roasted, pureed, and thinly sliced, accompanied by apple and chrysanthemum gel and fig leaf oil. The bones of the sturgeon fish from Thailand’s first and only Black Cavier farm, also found in Hua Hin, help create the sauce this dish’s star component sits upon. The simplest of ingredient, elegantly elevated and delicious.

With Duck as the hero, we are taken to Pak Chong, a district adjacent to Khao Yai National Park in Nakhon Ratchasima Province. The duck breast is brined in honey and aged for a week before being wood fire roasted. This is accompanied by a duck rillette sitting on a delicate beetroot carpaccio. Snake radish leaves dress the rillette. An intense and near syrup-like reduction of duck stock and port wine finishes the dish. It is easy to understand why this is one of PRU’s signature dishes. Dessert takes us to Nakhon Si Thammarat for a Mangonteen and Cashew Nut Mousse, with the passionfruity sweet, sour notes of beal fruit and the gentle perfume of pandan. Yet another pretty-asa-picture dish and a stylish way to finish our five-course PRU dining Experience.

Though we soon discover that is not the case. A trolley arrives, offering a selection of eight kinds of cheese. Goat or cows milk from soft to hard and all crafted in Thailand. Here is another example of PRU’s storytelling and diner education on show. Our server introduces each cheese’s regional origin and asks us to select any or all we wish to try. Our highlights were a goat’s milk cheese from the Chiang Rai region and Manchego-esque hard cheese from the central region. PRU is a sophisticated, intimate and romantic restaurant with capacity for 25 diners only, so reservations in advance are essential. Currently, PRU operates from 6:00 pm Thursday to Monday evenings. huket has reopened, and we believe now is the best time for a first time or rediscovery visit to the “Pearl of the Andamans.” But first, let’s cover some simple entry requirements for visitors. Since July of this year, international visitors have entered Phuket under the ‘Sandbox’ program. As of 1 November, fully vaccinated international travellers can now enter Thailand quarantine-free thanks to the more relaxed ‘Test and Go’ program. And from mid-October, fully vaccinated domestic travellers are free to visit Phuket by registering in advance via the website www. gophuket.com. And despite an 18-month closure, Phuket has not lost its international appeal. Indeed, US NEWS ranked Phuket number 8 in their 2021 top 30 “World’s Best Places to Visit”, noting its outstanding sights, culture, scenic beauty, food scene, plus accommodation, boat trips, spa and wellness for all budgets as reasons for their endorsement. We wholeheartedly agree. One strong positive to come of no visitors is the island’s natural resources have had time to rest and rejuvenate. Always part of its allure, the island’s forests, beaches, coral reefs, surrounding islands, marine and land-based wildlife have all thrived and are in the best condition people can remember.

Phuket’s Beaches Phuket has some of the most amazing beaches in Thailand and all of Southeast Asia. Phuket’s west coast beaches are known for their stunning beauty, fantastic sand quality, clean, calm waters, and the potential for spectacular beach sunsets. Here are some favourites. On the lower west coast, Kata and Karon Beaches, with their long, broad expanses of sand, are relaxed, family-friendly holiday locations. Both offer an abundance of accommodation, eating and entertainment venues behind the beach, meaning they are self-contained holiday destinations in their own right. Patong’s famous 2.5 km long beach remains inviting, with its water sports and choice of speed and longtail boats ready to whisk you out on excursions and day trips. The entertainment and shopping strips immediately behind the esplanade are just starting to reopen, though slowly. It will be a while before Patong’s famous nightlife rebounds.

Phuket Old Town History buffs and photographers will relish the Sino-colonial architecture, historical buildings and museums found around Phuket Old Town. The Thai Hua Museum on Krabi Road is an excellent place to start, delving into tin mining history and Phuket Town itself. It also has a fantastic display of historical buildings around the Town Centre and a paper map to create your walking tour. Be sure to return Sunday evenings for the Walking Street Market. Stretching along Thalang Road with restored Sino-Portuguese houses as the backdrop, this is a market worth visiting. Stalls line each side and middle of this busy walking street, with entertainment, food, ice creams, drinks, and arty nicknacks. Boutiques, cafes, bars and galleries in some of the buildings are also open. A great market to sample the diversity of Phuket street food. Ethical Elephant Encounters - Visitors can find several elephant sanctuaries in Phuket, though Phuket Elephant

Sanctuary is recognised as the most ethical in their care and treatment of these revered pachyderms. No riding or bathing with the elephants, yet lots of opportunities to be close and see these rescued giants being themselves. Temples Big Buddha (Phra Phuttha Mingmongkhon Akenakkhiri) is a 45 meter tall seated Buddha covered with beautiful Burmese white jade marble. The sculpture sits high on a hill and is visible from many southern parts of the island. The views provided over Chalong Bay alone are worth the visit. Wat Chalong (Wat Chaitararam) is the highly revered and most significant temple in Phuket. Locals claim to experience miracles, and it is known for its healing role in fighting between Chinese secret societies in the late 1800s. The wat is on the way to Big Buddha, making it convenient to experience the two in one outing.

View Points With at least ten viewpoints overlooking the island’s cities and beaches, you can go to a new one every day. Some are harder to access than others, requiring some trekking or scrambling. Promthep Cape, on the southern tip, is one of the most popular, especially for sunsets and has a large car park. And just 1.5km north is Windmill Viewpoint, between Nai Harn and Prompthep, with fabulous views west. You can also catch sunrises from there. Rang Hill lies northwest of Phuket City, providing city and distant beach views. Photographers might prefer to visit in the early evening, as the lights start to twinkle across the island. Panwa Viewpoint, also known as Khao Khad Views Tower, offers 360° views over southern and eastern Phuket. Located on the way to Cape Panwa, this lesser-known viewpoint has ample parking. The stairs are a bit of a climb yet more than worth it once at the top

Phuket has 32 smaller islands, some just 15 minutes by boat. Koh Racha and Koh Hea (Coral Island) are popular, as are Koh Maiton and Koh Khai, with visits that include swimming, snorkelling and other water fun. Take your pick of a longtail boat, speedboat, or catamaran tour for day visits. If you seek something a little different, Koh Yao Yai and Koh Yao Noi are two larger, though less visited islands in Phang Nga Bay. Swim in secret lagoons, be in awe of the imposing limestone karsts, catch glimpses of traditional island life, spot hornbills, and dine on fresh seafood at quaint beachside restaurants, with the catch coming directly from the fish and lobster farms immediately offshore.

Phuket Dining Since 2015, Phuket has been designated a UNESCO Creative City of Gastronomy, making it the first city in Thailand. Phuket’s Baba cuisine was the reason for this listing and recognised the traditional food of Baba-Peranakans. Descendants of the early, mainly Hokkien Chinese who migrated here.
