C

hef James Noble is no slouch in the kitchen. He initially developed his cooking skills at 3 Michelin Star restaurants in Europe, before spending 4 years as Mick Jagger’s personal Chef on his Caribbean Island. James then spent several years teaching at the Le Cordon Bleu Dusit Culinary School in Bangkok before opening his Boutique Farmer’s Homestay & Restaurant in Pak Nam Pran, outside of Hua Hin. James spent 7 years developing the farm side of the business with a simple concept, to produce food and products through sustainable, organic agriculture, using only local manpower with a no fuel farm policy.

International Motor Show, now in its 43rd year, is under way until 3 April at IMPACT Challenger Hall, Muang Thong Thani. Rolls-Royce is displaying their Black Badge Ghost and Cullinan. Both are available in any color you can think of, although the carmaker offers 44,000 to start. Unique to this latest iteration of the Black Badge is the Black Diamond finish. Comprised of five layers, this new color requires 100 pounds of paint.

In 2019 K.P. Ho, Founder and Executive Chair of Banyan Tree Holdings and Laguna Resorts and Hotels, offered James a partnership whereby James would provide organic produce to his Banyan Tree & Laguna resorts from a 500 rai plot in Chiang Mai. They named the business Ori9in Organic Farm. James also supplies well known Bangkok restaurants as well as the public who can order and have their quality produce shipped directly to them. HOT Magazine recently had the pleasure of sitting down with James to discuss this new venture which we’re pleased to share on page 28.

The Standard, Hua Hin’s New Place To Be Hua Hin’s newest resort, The Standard, has unveiled Praça, an upbeat beachside bar that brings a new sense of style and vibrance to the local social scene. Meaning “meeting place” in Portuguese, Praça is inspired by the beach clubs of the Mediterranean and has a casual, carefree ambience. Guests can stroll barefoot from the sand to the shady terrace, sip fabulous cocktails and savour sublime Thai bites. As the sun sets, the vibe picks up with house tunes setting the tone and people gathering to mingle under the stars.

If sand between your toes is not your thing, Praca’s heritage house, with its expansive veranda, provides the perfect setting to sit back, catch up with friends, make new connections, or simply unwind whilst gazing out across the shimmering sea. Chef Prasertchai “Jacky” Trongvanichnam, a former Iron Chef champion, has imagined an innovative Tapas style menu that feels fresh and playful while honouring the traditions of Thai street food. Think tempting shared dishes, flame-grilled meats, comforting rice and noodle bowls.

The not-so-standard cocktails infusing premium ingredients with local flavours and flair are equally inventive. Concoctions such as Holy Basil! (gin, pineapple, holy basil, betel leaf, galangal, lemon), and Born to Rum (white rum, banana, coconut milk, makrut leaf, lime juice) gives some sense of what to expect. Praça is the new place to be and be seen in Hua Hin. A space that brings the entire community – hotel guests, beachgoers and local residents – together in an easygoing yet upbeat atmosphere.

Beach Polo Returns to Hua Hin 9 April.

Save the date, Saturday, April 9th, that’s the day when for the 11th time polo will be played on the beach in front of the InterContinental Hua Hin Resort.

Hua Hin Resort for the opening ceremonies. After opening speeches, the action starts with a fashion show on horseback, horse racing and the final beach polo match.

The whole affair is a Charity Event for Princess Pa’s Nabha Project, and a donation of THB 1,500 is inclusive of food and non-alcohol drinks for both daytime and nighttime.

Beach Polo is one of the most fun events on the Hua Hin social calendar. The day and evening are full. Gates open at 12:30 pm to pick up gifts, enjoy welcome drinks, lunch, games & activities. At 2 pm the visually impressive horse parade travels down the beach until it reaches the InterContinental

Penfold Wine Dinner At Jaras Hua Hin The restaurant JARAS, at the InterContinental Hua Hin Resort, pairs contemporary Thai cuisine with the traditional service Thailand is famous for. In Hua Hin I really enjoy Harukaze. Fair price, great skewers and they decided that instead of offering mediocre imported fish, all their sashimi/sushi are using local sea life.

What is your current Job Position? Food and Beverage Director for the Standard, Hua Hin. Basically, anything going into your mouth in the property is under my supervision (i.e. food and drinks in case you were thinking of something else).

How long have you lived in Hua Hin or been coming to Hua Hin? It has been only 5 months since I moved to Hua Hin however, I have been coming here occasionally on weekends for the last 9 years. Perfect get away from Bangkok. What did you know about Hua Hin before you moved here? I was seeing Hua Hin as a giant golf course with beaches. Now realizing how much more this city as to offer; water sport, restaurants, temples, site seeing and golfs lol.

What do you like most about your profession? I would love to say the money but……. Joke aside the ability to lead a project from an idea to it full completion. For example, I might think that it would be nice to make the guest enjoy some oysters by the beach with a bottle of rose. Then I speak with the chef and the beverage manager, I do a little menu engineering and Voila. Rose Pearl promotion available at Praca; 1 bottle of rose with 6 oysters at THB1,900 *wink wink*.

In Bangkok, I frequently go for Chesa the Swiss restaurant. Need my home fix once upon a time. Cheese fondue every time regardless of the weather.

What do you like to do in your free time and why? Golfing. Shocker I know…. Beside this my perfect weekend would be summarized as follows: early 18 holes, lunch by the beach, book reading outdoor or explore the city on my bike, dinner at a restaurant, drink at home in front of a movie. At the end, I am hungover, belly is full, my skin is burn but I am happy as Larry.

What would you recommend to new-comers to do in Hua Hin and why? Relax. This is not Bangkok. Explore, try things. Don’t come to Hua Hin expecting a crazy night life. Enjoy the beach, the food and the nature. Otherwise, happy hour daily at Praca from 9.30 p.m. until late *wink wink*.

Tell us a surprising fact that the public might not know about you? I am a nerd. Not wearing a Star Wars pajama living in my mom’s basement kind of but I love fantasy reading. The Witcher, Warhammer and Lord of the Ring made my childhood and as mentioned before, my mentality never grown pass puberty.

What do you like least about your profession?

What is the most outlandish thing you have ever done and why?

The money….. joke aside, again, the fact that many will compare your hotel/ restaurant with others even if they have no similarities whatsoever. Because of this many F&B (in hotel more than anywhere else) end up having a similar offering. I strongly believe that if your concept is strong and unique, do not change it because of couple of critics. Standard has a famous moto “We welcome everyone, even though we are not for everyone” which made me fall in love with the brand.

This may sound boring but relocate to Asia was my biggest move. As a kid I kind of always knew that soon or late I would be in this part of the world. So right after graduating from Laussane, I went to do an internship in Sapa, a small town in Vietnam by the Chinese border. Many failures and success later, here I am.

What do you like most about Hua Hin? The versatility this city offers. You want a nice restaurant, plenty available. You want a day at the beach, here we go. Shopping? No problem. Golf? More here than hotels. Site seeing, plethora.

J

ames Noble has long advocated for food sustainability (healthy for our bodies and the environment), provenance (knowing its origin), and finding viable, sustainable quality local alternatives to imported foods. Not one who just expresses his views, James is very much about “walking the talk”. Boutique Farmers in coastal Pak Nam Pran, about 30 km south of Hua Hin, was the first practical iteration of these principles. James and his wife, Khun May, created a farm that quickly developed a devoted client base from the top-end hotels and restaurants in Bangkok and Hua Hin. All were receiving purposegrown organic produce and to their particular specifications. James, a Michelin Star trained Chef, also opened a small restaurant on-site, operating just three days a week, to educate the dining public on his food philosophy. It was soon a raging success, with restaurant seatings booked out weeks in advance, especially the “White Menu” Sunday lunches. People were ‘getting with the program’, and the Boutique Farmers reputation spread. The second iteration of James and Khun May’s project came when a joint venture opportunity with K.P. Ho, Founder and Executive Chair of Banyan Tree Holdings and Laguna Resorts and Hotels, presented itself in late 2019. This new operation is in the Chiang Mai region of northern Thailand called Ori9in Organic Farm. HOT magazine had the opportunity to visit the Farm and chat with James recently, and here’s what we learned. H.M. It could be said that you and Khun May have gone from Boutique to Behemoth when comparing your original Pak Nam Pran operation to Ori9in Organic Farm. Tell us about this operation. J.N. It certainly is not a behemoth, though we now have a 500 rai capacity here in Chiang Mai compared to our two rai down south. Currently, only 180 rai is actively farmed, with neighbouring farmers under a co-op arrangement producing on another 120 rai. Things have certainly grown.

We now supply fresh organic produce to hotel brands under the Banyan Tree umbrella and several other hotels brands like Melia and Le Meridian under Asset World Corporation ownership. Then there are a variety of restaurants with specific needs and quality Bangkok based purveyors like Sloanes. The critical criteria is that the seeds used to grow our client’s produce must be organic and, ideally, heirloom. Either they supply, or we source for them. H.M. So this is strictly a farming business now? J.N. No, we are an agro-tourism business as we still want the public to interact with us and learn about the food, just as we started at Boutique Farmers. During the non-rainy season (October to March), we operate our “Waiting for May” picnic restaurant. People can come to have a picnic in the gardens around the teak houses we built from trees on the property. All ingredients for the dishes on the menu are from the Farm and produced by us. This is gourmet picnicking, and as the name suggests, we work with what May and her team have harvested, so the menu changes.

Also, during the dry season, we create what we call “Amaze in Thailand.” The maze is within organic corn (maize) fields, with people paying a one-off entrance fee and spending as much time as they like in the labyrinth. Given that it is a living crop, we change the maze three times during the year. When it’s time to harvest, we donate the corn to food banks or sell it and donate the money to local charities. It’s great family fun, and don’t be surprised if you see “Amaze in Thailand” popping up in Pattaya, Phuket or Khao Yai over the coming years, thanks to some partners who have got on board with the concept.

H.M. How did COVID impact the business? J.N. With no international travellers, hotels and restaurants had to close or were very restricted in their operations, so we had to pivot the business quickly. We already delivered fresh vegetables and fruit boxes from the Farm to households across the north and Bangkok. And if anything, COVID reinforced in people’s minds that staying healthy with produce they knew was organic and fresh allowed us to increase this side of the business. In fact, it grew to be nearly eighty per cent of our output and has not decreased since

restrictions have relaxed, even though the commercial side is getting back to normal. Thankfully, people continue to want fresh from the farm deliveries to their door. H.M. The country is slowly opening up to international tourism, and local restrictions have eased, so what’s in the future for Ori9in Organic Farm? J.N. As international visitors do return, we are looking forward to having our hospitality partners’ businesses grow, and our organic produce continuing to be an essential element of their service offering.

Our Pharma+ (Pharmaceutical) area of the Farm is receiving increased interest because wellness in all its forms is something that people are much more conscious of now. We are talking about botanicals, herbs, spices and more. Clients are currently working with us to develop natural products for their Spas or other wellness applications. There are a lot of opportunities presenting in this area and some very exciting initiatives under discussion that I can’t talk about yet. hiang Mai’s dining scene is exceedingly resilient, even in these pandemic restricted times, if the sixty entries in the 2022 Michelin Guide Thailand are anything to go by. The Let’s Eat team had the opportunity to visit one of these highly regarded establishments recently to see what all the positive ‘noise’ was about. We are talking about Redbox, a seven-table restaurant sitting in a quiet residential street just a 5-minute walk from Chiang Mai’s trendy Nimman

area. 2022 is Redbox’s second consecutive year in the prestigious Michelin Thailand dining guide. It demonstrates the dedication, innovation, and consistency of the husband-wife creators of this modern Asian cuisine dining establishment. Chef Chindarnai ‘Dan’ Boonchaliew and food artist Pimmada ‘Pam’ Kankulsuntorn are both originally from Chiang Mai, though met in Brunei where they were both working. Dan had finished his education in Australia and went about developing his creative

cooking talents. In Brunei, 2015, they formed a delivered lunch box business with a Thai food emphasis called Redbox. Their part-time business was soon an all-out success, yet their hometown beckoned. Back In Chiang Mai in 2017, the couple took on the challenge of renovating a home from Khun Pam’s side of the family to create the current Redbox restaurant. It started with three tables and a kitchen garden out the back. They were open less than 20 months before achieving their first Michelin Guide

listing. Now with glassed-in side and front terraces, plus the home’s central ground floor room dedicated to dining space, this modest restaurant is at once elegant yet warmly inviting.

notes. The Malai, or “flower garland”, comprises premium gin Thai flowerinfused syrup and lychee, kaffir lime, and ginger. Spectacularly presented and equally as tasty.

Redbox offers a seasonal five-course set-price tasting menu or a comprehensive ala carte menu. There is also a signature cocktail menu offering a selection of twelve house creations in either mocktail or cocktail format. We sampled two. The Siamese Rice has Rohu Gin as the base, tamarind flavours, and sweet fermented rice

Our food journey started with two Amuse Bouche – a French term meaning “mouth amuser”. It is different from appetisers as these are not ordered by patrons but served free at the Chef’s whim. Amuse Bouche are said to prepare guests for the meal and offer a glimpse of the Chef’s style.

Chef Dan’s first choice was organic farm fresh cherry tomatoes. Some infused with Thai plum, others plump, naturally juicy, and flavourful. All artistically presented in the style of Ikebana (Japanese flower arranging) hanging from a bare plant frame in an impressive vase. The other was Ceviche of Thai Mandarin Orange atop Chiang Mai rice crackers with hints of lemongrass, lime with the freshness of the orange and gentle bite of the marinated shallot. Both highlight Chef’s talent hero-ing simple ingredients.

Our first starter was Thai Cigars - a playful dish looking like a spring roll, though providing all the taste components of Pad Thai. A filling of finely diced shrimp, peanut, bean sprouts with sweet overtones and the bite of tamarind without the noodles in the crispy deep-fried casing. This was tasty trickery worth revisiting. A Thai salad of lemongrass-infused prawns with roasted chilli was next. The ‘Dok Jok’ shaped rice cracker in the form of a lotus flower added a crunchy counter to the mouth-filling though well-balanced heat of the salad. Next, Satay style chicken skewers served with Chef’s homemade peanut dressing had overtones of a favourite found across Southeast Asia. Our final starter was indulgence in a bowl. A plump Hokkaido scallop marinated and slow-cooked and served still opaque in a creamy Thai onion sauce, with touches of roasted chilli oil and topped with rice cracker, rice tuille, crispy shallot and triumphantly finished with Osetra Caviar - the second most exclusive caviar behind Beluga. Textures, refined flavours, and tasty opulence skilfully married together.

Mains takes us to Ayutthaya and Surat Thani in Thailand and the Minangkabau region in West Sumatra, Indonesia. The Crown Grilled Barramundi with Seared Scallop in a lemongrass galangal broth. The ‘Barra’, as Australians like to call it (or pla kapong in Thai), is export standard and comes from dedicated fish farms in Surat Thani. The creamy broth with galangal and lemongrass is reminiscent of Thom Kha and works perfectly with the firm, flaky fish and perfectly seared scallop. Delight on a plate. Chef Dan’s pressure-cooked Beef Rendang uses beef cheeks that are soft and spoon-tender when served, with the intense tropical aromatics of the coconut, chilli, and spice. Served with house-made Naan and a chilli pickle, this is not as ‘dry’ as some Rendang, thanks to the deep, nutty, buttery sweetness of the retained coconut sauce. Thai Tom Yum Risotto with Chargrilled River Prawns, Prawn Bisque and Bell Pepper Ice cream. The prawns from Ayutthaya grilled in the shell with a bisque, including the shellfish brains for the ultimate umami flavour. The

risotto exhibits those quintessentially Thai hot and sour flavours of shrimp, tomatoes, lemongrass, galangal, chilli, kaffir lime leaves, onions, and a host of other lively ingredients and herbs. The yellow bell pepper ice cream brings a savoury coolness to the dish. Although Redbox has a small selection of changing desserts and sweet treats, including house-made macaron, truffle and praline, their signature dessert was nominated in the Top 5 Signature Dishes of Michelin Guide Thailand. This is where our Redbox food journey comes to a triumphant end. Their Siam Ruby is served to the table with theatre. A tall smoke-filled wine goblet, inside at the base a crumble of chocolate macaron and Thai coconut shortbread cookies, topped with handcrafted Thai Coconut ice cream and sprinkled with Golden Egg Yolk as seen in the auspicious Thai dessert, Foi Thong. Gula Melaka, a palm sugar syrup from Malaysia, finishes the dish. Yet another example of Chef Dan and the team’s creative, modern take and interpretation of Thai cuisine.


Redbox impressed on many levels from the refined décor, Jim Thompson textiles for the tables, plus table ceramics and table pottery from two great Northern Thailand creative outlets, Doi Tung and Prempracha, are all examples. Through the professional service of the Redbox team, including Chiang Mai’s first sommelier, and ultimately, Chef Dan and Khun Pam’s innovative take of Thai and Asian cuisine would have this Let’s Eat group happily returning for another food journey. hey say that Diamonds are a girl’s best friend. But, after a visit to the Bangkok International Motor Show, I think a Bentley or Rolls Royce would certainly be a superlative substitute. Thailand’s premier auto show, the Bangkok International Motor Show, now in its 43rd year, is under way until 3 April at IMPACT Challenger Hall, Muang Thong Thani. Both luxury auto makers were on full display, along with 35 car and motor bike manufacturers. Acknowledging the inescapable transition to electric vehicles, there were also 20 different models on display in the shows EV Smart City zone. For the first time in Thailand, Bentley Bangkok unveiled two brand new hybrid models at this year’s show, the Bentayga Hybrid and Flying Spur Hybrid. The all-electric EV Drive mode in the new Bentayga Hybrid is optimised for short journeys and city driving, offering a highly practical range of 40 km (NEDC), while Hold mode is designed to preserve battery charge allowing customers to save it for a future journey beyond the reach of a charging station. The innovative E Motor is partnered with a 3.0 litre twin-scroll turbocharged V6 petrol engine delivering 443 bhp and 700 Nm of torque. Working together, they provide responsive acceleration that propels the Bentayga Hybrid from 0 to 100 km/h in just 5.5 seconds, before surging on to an impressive top speed of 254 km/h. The Flying Spur Hybrid represents a compelling fusion of handcrafted luxury and sustainable design, giving the owner the capability to drive emission-free without compromising on the exhilarating performance expected. The car pairs a 2.9-litre twin-turbocharged petrol engine with a 100 kW electric motor, to provide an effortless acceleration, alongside the ability to drive on electric power alone, which can reach 0-100 km/h in just 4.3 seconds, and a top speed of 285 km/h.

The other top luxury carmaker displaying at the show, Rolls-Royce, brought their Black Badge Ghost & Black Badge Cullinan. The show stopping Black Badge Ghost, in Artic White, has a 6.75L V12 Twin Turbo. The all-wheel drive, all-wheel steer luxury car offers the most responsive and dynamic drive the marque brand has ever achieved, and as they like to say, “the smoothest magic carpet ride sensation imaginable.” The 2022 RollsRoyce Black Badge Ghost and Cullinan are available in any color you can think of, although the carmaker offers 44,000 to start. Unique to this latest iteration of the Black Badge is the Black Diamond finish. Comprised of five layers, this new color requires 100 pounds of paint. The Black Badge’s 21-inch wheels feature barrels comprised of 22 layers of carbon fiber folded onto themselves, creating 44 total layers. While the reduction in weight won’t be felt in the 5,500-lb sedan, they make for an upgrade that is fun to look at and easy to brag about.

Launched in 2018, the Rolls-Royce Cullinan is named after the largest diamond ever discovered which now resides in the British Crown Jewels. The spacious cabin is lined in box-grain leather, lambs-wool carpeting, beautiful wood trim, and milled-aluminum accents. O

n a sunny morning, I ventured across town with photographer Daniel Herron to the jewel on the river Chao Phraya, the legendary Mandarin Oriental Hotel Bangkok, to meet the man behind the relative newly opened store “PRESTIGE Luxury tableware.” By just entering the lobby to this grand hotel, you step into elegance and a sense of history. Since its opening in 1879, the Mandarin Oriental has hosted royalty, actors and other celebrities in all fields in life. Elizabeth Taylor, Audrey Hepburn, Sir Richard Attenborough, late Princess Diana, Mick Jagger, Louis Armstrong, & Tom Cruise are on their “sign-in please” list, among many more. It is ranked as one of the best hotels in the world. To enter the old wing with its light and inviting lounge is like entering a world of calm and elegance. The hotel has lately been renovated for $ 90 million. Within the Mandarin Oriental, you’ll find the store Prestige. When we visited, we were greeted by Pedro Da Costa, a young, handsome man who openly expressed his passion for exclusive labels, unique fashion, and his belief that good manners matter. Pedro was born and raised in Portugal, next to Porto City. At the age of 19, Pedro decided to leave his parents and sister and move to Monaco, where he was offered a job in hospitality and the gastronomy field. He then went on to work at the iconic French hotel Cap Estel for seven years. Pedro has a partner, Eric Guias, who already had all the contacts for the products Pedro wanted to display and sell, and the two men are now working together. The masterpiece displayed in the store is a huge vase in a glass display case from the French label Daum, founded in 1879, “The Cavalcade Prestige Vase”. With its impressive height, this magnificent vase is one of the largest vases in the Daum collection. The colour is amber, and it weighs an astonishing 62.3 kilos. The vase is mounted on a patinated bronze base, and the vase depicts a herd of horses running fearlessly in the wild. The vase has a price of around 100,000 Euros. The vase in the Prestige store is # 9 in a limited edition of 50, but only 26 vases have been produced. Number 8 is located in Singapore, and it has a bluish transparent colour. A few potential customers have been interested in purchasing this masterpiece, but you can still see the vase in the store as of the date of this publication. Pedro offers a fantastic variety of famous French labels. A beautifully set table with crystal glasses from the Czech Republic, porcelain from Bernardaut & cutlery from Christofle Paris, plus stunning flower decorations from a shop not far from the hotel constitutes the store’s centrepiece. I had the pleasure of sitting down with Pedro for a little Q & A.

ADB: Pedro, you’ve now been in Thailand for seven years. What attracts you to the Kingdom? PDC: Thailand is different from the other South-East Asian countries. It’s something with Thailand that attracts me, like a magnet, and I want to learn more about this beautiful country, the friendly people, explore the white sand beaches and the inviting sea. I also like the bustling Bangkok. It’s a fascinating city, the only things I’m not keen on is the heavy traffic and the sometimes not too good air. It’s a big city, and perhaps that just comes with the territory. ADB: How did you get the idea of opening the PRESTIGE-store at Mandarin Oriental Bangkok Hotel? PDC: It started with Covid, all the problems it has caused us and still does. My brain is always working and never seems to stop being creative. I was longing to do something that reflected my background, my professional expertise and the love for good manners and also, not to forget, the Arts of the table. I started Etiquette workshops and that led me and took me all the way to Mandarin Oriental

Bangkok Hotel. It was like I pushed the right button at the right time. ADB: Who are your customers? Is it the visiting foreigners or the domestic Thais? PDC: The Thai people have shown considerable interest in our products, especially for the two mentioned brands. The Asian people buy to enhance their lifestyle because of the product’s image. Like we sell and feature in Prestige, Labels show a kind of status, a high social ranking. It’s not ostentatious, more a showing that you have succeeded in life and that you are proud of it. ADB: Do you travel around in search of the outstanding pieces showcased in your store? PDC: No, but the fact that I have been working in the luxury market before makes it easy as I have contacts, like my mentioned partner Eric and the right people helping me to bring products to the Thai market and convince them that we need it here. ADB: Do you have any labels you wish to expand into?

PDC: Oh yes, two brands come immediately into my head, VISTA ALEGRE, a Portuguese label that was founded in 1824, dinnerware, vases, decanters and decor etc. and the famous, iconic PETROSSIAN, the Caviar brand that was founded in Paris 1920. Both those brands will be arriving at the store in the near future to enhance the store concept. ADB: Speaking of enhancing your store’s concept, tell us about your Caviar event. PDC: Yes, we are going to have a very exclusive event when the Petrossian caviar arrives. We will have a tasting of 3 different caviars along with Champagne or Vodka if preferred. We will also serve a special signature cocktail for our non-alcoholic guests. The caviar company Petrossian is a family-owned company in Paris and considered the best in the world. Bangkok is ranked as the second city in Asia, after Tokyo when it comes to caviar lovers. ADB:

terested in dinnerware and exclusive decorating products? PDC: No, not always, but definitely by everything around the Arts of the Table. To set a welcoming table has always been inside me, and it might originate from my family and the European style. In Europe, we are quite traditional, and in my family, when we gathered together for dinner, we set the table with our best china and cutlery on most occasions. ADB: You are giving classes to teach people etiquette. Have these classes become popular? PDC: Yes, indeed they have. I thought it might become a success, but I couldn’t dream that it would happen so fast and so easily. Thai people are the most common attendees. Their wish is to improve in how to organize banquets, weddings, private parties etc. and not only the usual Thai way, and they want to impress foreigners, by also adapting to our traditions and way of style. Women are, of course, more open to learning about etiquette, but one can see men start thinking out of the box nowadays. Also, Thailand’s sexual diversity gives a kick to etiquette and to adapt our modern lifestyles, and it’s amazing to see and follow how it is evolving. The young generation is most willing

to learn and adapt, longing to enhance their skills when it comes to international manners. They are driven by the social media presence that is deeply anchored in their social behaviours that is influenced by Public Individuals. ADB: You are also a man very interested in fashion. You always appear at events in outstanding outfits. Where does your interest in fashion come from? PDC: Well, I’m obsessed with details, and I quickly can see them, but if you are raised with six aunts and the family has a textile company, it might not be a wonder that I have an interest and eye for fashion. As a young boy, I often walked around in the factory, and I had the opportunity to sew myself. I enjoyed touching the different fabrics and look at the prints. Today I love to mix different styles and the way I dress very often expresses my mood, or my state of mind. I also always respect the dress code on invitations, it’s important.

Most of my outfits are made from my own ideas. I really like to mix and match, especially with women’s clothes that we men can wear without making a too feminine appearance. ADB: If you could invite one special person in the world for dinner, who would it be, dead or alive, where would the dinner take place, and what would the preferred table setting look like? PDC: I would have loved to spend that dinner with my late mother. She passed away 26 years ago, unfortunately. As I am a very social person who really loves spending time with friends, the list can be very long, so I can’t tell.

A cocktail bar that operates three nights a week (Friday to Sunday), only seats five guests for pre-booked 5:00 pm or 7:30 pm seatings and does not serve alcohol. Yes, Intangible is hard to define. Intangible is the genius of Khun Key, or Keyologist as he prefers who has more than 14 years in the food and bev-

erage industry. Key gave up alcohol a few years back for his well-being, but there is no anti-alcohol agenda here. Having studied natural ingredients and beverages based around tea and coffee, amongst other things, he has created a curated journey that guests travel through for each of the evening’s seatings. Along the lines of a Chef’s Table, Key’s beverage creations are the

The Service 1921 Bar Within the grounds of Anantara Chiang Mai is The Service 1921 Bar, located in a colonial building that was the British Consulate some 100 years ago. The bar occupies the ground level, while a restaurant by the same name fills the top floor. The designers ran with a British Secret Service theme when repurposing the building, hence the name. Guests upstairs can take the challenge of finding a hidden dining room only accessible through a secret bookshelf, or hang out in the whiskey room, post-meal. The ground floor is alfresco seating overlooking the lawns or in the timber-panelled bar and ‘mission room’. If members of your party are being loose with the truth, then perhaps some time in the interrogation room is in order.

The beverage lists continue the Secret Service theme in naming cocktail collections under Secret, Signature and Royal heading. Gin also makes a strong appearance. traditional Japanese guesthouse, a ryokan is a quintessential experience that most visitors to Japan have on their ‘must-do’ list. Ryokans date back to the Edo period (1603-1868), providing overnight lodgings for lords, samurai warriors and other travellers walking between villages and regions. This light garment is offered to guests to wear during their stay. The idea is to don the Yukata for your bathhouse visits and around the ryokan, allowing you to fully immerse yourself in tradition.
