A Royal Gift: Princess Stages Madama Butterfly to Honor His Majesty's Birthday

In a triumphant display of artistic prowess, Her Royal Highness Princess Sirivannavari Nariratana Rajakanya presented a groundbreaking production of the world-class opera Madama Butterfly on July 23, 2024. Supported by the Tourism Authority of Thailand, this spectacular performance served as a heartfelt homage to her father, His Majesty the King, in celebration of his upcoming 72nd birthday and 6th Cycle anniversary on July 28.

The Thailand Cultural Centre hosted this remarkable event, with Their Majesties the King and Queen gracing the audience. Princess Sirivannavari's production masterfully blended modern and classical elements, creating a unique interpretation of Puccini's beloved opera that left spectators in awe.

As the head of the artistic committee and royal patron of the Royal Bangkok Symphony Orchestra (RBSO), Princess

Sirivannavari's involvement in this production was extensive and multifaceted. Her vision extended from costume design to stage setting, showcasing her diverse talents in music, fashion, and visual arts.

The RBSO, under the direction of German conductor Valentin Egel, provided the musical backdrop for the opera. This performance follows the orchestra's successful 2023 European tour, where they performed some of the Princess's own compositions, further cementing their status as Thailand's leading orchestra and a cultural ambassador for the nation.

Princess Sirivannavari's attention to detail was evident in every aspect of the production. She personally designed 14 costumes for the main characters, seamlessly blending traditional Japanese and Western styles. Her fashion team created an additional 40 costumes under her

guidance, all adhering to her brand's signature "super details" aesthetic.

The stage design, another of the Princess's contributions, featured an elegant pure white backdrop that served as a versatile canvas for the performance. This minimalist approach allowed the costumes to shine and each scene to take on its own unique character through clever use of lighting and projections.

The cast, carefully selected by the Princess, included renowned European opera singers such as Viktorija Miškūnaitė in the title role, alongside talented Thai performers. This international collaboration brought a rich diversity to the production, enhancing its cultural significance.

In an interview during dress rehearsals, Princess Sirivannavari spoke of her father's influence on her work ethic, emphasizing the importance of

patience and diligence in mastering one's craft. She expressed hope that this world-class performance would inspire art students and aspiring designers, showcasing the intersection of fashion, music, and theatrical arts.

The success of this production not only pays tribute to His Majesty the King but also highlights Princess Sirivannavari's remarkable ability to excel in multiple artistic disciplines. From the runway to the opera stage, her creative vision continues to push boundaries and celebrate Thai culture on a global scale.

As the curtain fell on this extraordinary performance, it was clear that Princess Sirivannavari had indeed created a royal gift worthy of her father's 72nd birthday celebration – a testament to the power of art to honor, inspire, and unite.

World Class Women’s Tennis Returns To Arena Hua Hin In September

World class women’s tennis will make an unexpected return to the Arena Hua Hin next month when some of the best WTA players from around the world compete for the Allied Thailand Open Hua Hin presented by Cal-Comp 2024, a WTA 250 event.

The WTA 250 tagline refers to the prizemoney total of $250,000 so it is no surprise that a strong field is expected in Hua Hin when the tournament is held September 14-22, 2024. It has attracted a line-up of Hua Hin fan favourites such as Dayana Yastremska and Magda Linette, both of who have previously been champions of the Thailand Open, traditionally held in February in the coastal resort.

An announcement was made by the WTA earlier this year that the tournament would be move away from Hua Hin to a new home in Singapore from February but thanks to longtime tour-

nament promotors Proud, APG and the Tourism Authority of Thailand, an additional WTA event in Hua Hin has been put on the remaining 2024 professional women’s tennis calendar.

2024 will therefore have the unique distinction of being the first year in which Hua Hin has had two WTA250 tournaments in one year, providing a big boost to Hua Hin’s sports fans.

As well as Yastremska, who was victorious in Hua Hin in 2019, and Linette, who lifted the trophy in 2020, the September tournament will feature former Australian Open champion Sofia Kenin and former World No.1 in doubles Ekaterina Siniakova. The strong Chinese trio of Xinyu Wang, Yafan Wang (both of whom reached the semi-finals of the February event) and Xiyu Wang are all scheduled to play.

“We are so happy that top level tennis is coming back to Hua Hin for

the second time this year,” said Eva Slaninkova, who is co-Tournament Director alongside Thai tennis legend Paradorn Srichaphan. “It’s a chance to celebrate all the fantastic tennis these wonderful pink courts have seen over the years. Players have always loved competing here and, as expected, it’s going to be another really strong lineup.”

We were so looking forward to an evening at the Fireplace Grill and Bar, a gastronomic haven that first opened its doors in 1966. Upon arrival my gaze was instantly drawn to the pulsing heart of the establishment - an open culinary theater where Chef Kung, a 30-year veteran of the restaurant was holding court. We were immediately greeted by staff whose smiles beamed. Soft jazz music wafted in the air. I was impressed by the ambience, defined by the dark wood tones.

The menu immediately caught my eye, showcasing local and international influences. Each plate that emerged from the kitchen showed evidence that the Chef has a passion for quality food and a flair for presentation.

Our dining experience commenced with an amuse-bouche, a delightful poached oyster adorned with a vibrant green sauce and glistening caviar, courtesy of the chef. I noticed that the poaching technique and green sauce retained the oyster’s freshness. The caviar showed a twist of luxury, adding both texture and depth. The green sauce enhanced the briny taste of the oyster

Our first starter for the evening arrived shortly thereafter, Escargot and Garlic Basil Bread. The escargots, nestled in their shell, exuded such a wonderful aroma. Each bite melted in my mouth, the luscious garlic butter sauce enhancing the flavor. The bread was ideal for soaking up the sumptuous sauce.

Continuing with the French theme, we were served French Onion Soup. The broth was robust, simmered to perfection. The caramelized onions’ sweetness balanced perfectly with the broth. This delightful jewel was topped off with a bubbling, golden brown Gruyere’ cheese. Each spoonful evoked images of a French bistro.

Now it was time for the Apulia Burrata Cheese, served with Roasted Tomatoes and capers. This is a stunning testament of simplicity and the quality of ingredients. This dish is a vibrant palette of colors. The soft centered burrata sits alongside the roasted tomatoes and covered in a generous cluster of capers. The first cut reveals a luxurious creamy center that gently flows into the roasted tomatoes. The capers’ briny burst elevates the dish to a palate pleasing delight. This is Italian cuisine at its greatest. As the escargot and French onion soup had transported me to France, I closed my eyes and found myself in the sun-drenched terraces of Apulia, Italy.

Our final starter of this epicurean adventure was their Lobster Bisque., a creamy concoction that is made to indulge. The bisque was velvety as it was poured over a generous portion of tender lobster morsels, all delicately finished with a swirl of cream. Once again, I was transported to France, this time a bistro on the beach.

Our first Main arrived and with it the seafood theme continued. Before us was a beautifully plated Seared Toothfish. Prepared flawlessly, it arrived with a golden crust that retained the fish’s flaky texture. This denizen of the far southern oceans was enhanced by a white wine cream sauce. A rich but not overpowering taste was the result. The petite asparagus added a slightly crunchy, vibrant touch, which contrasted with the buttery components of the fish.

Renowned for their expertly prepared steaks, The Fireplace Bar & Grill had us eagerly awaiting the arrival of their Australian Stockyard Tenderloin. When it graced our table, the tender cut was accompanied by a rich red wine jus and a vibrant medley of vine-ripened tomatoes, promising a truly indulgent dining experience. Cooked to a perfect medium-rare temperature, the tenderloin was exquisitely tender. The rich marbling provided a wonderful depth of flavor. The red wine jus enhanced the delicate cut of beef. Bursting with sun-kissed tang, the vine-ripened tomatoes provided a lively acidic balance to the luxurious dish. Words escaped us as we savored every decadent bite of this gastronomic delicacy in reverent silence.

On to desserts, our flavorful odyssey reached new heights with the theatrical presentation of the Crepe Suzette, masterfully prepared tableside. I sat transfixed, bearing witness to the culinary artistry unfolding before me. Delicate, gossamer-thin crepes sizzled in the pan as a tantalizing concoction of orange juice and Gran Marnier simmered nearby. Suddenly, flames danced across the pan in a dramatic flambé, capturing our rapturous attention. In a photo-worthy moment, the dangling orange zests ignited in a brilliant azure blaze, their citrusy aroma tantalizing the senses and whetting our anticipation.

When the exquisite crepes finally arrived, lacquered with a sublime, orange-infused sauce, each bite revealed a masterful interplay of flavors. The crepes' buttery richness harmonized exquisitely with the vibrant tang of the orange essences, delighting the palate with sublime balance. More than just a dessert, this was an unforgettable multi-sensory experience, a testament to the consummate craftsmanship in transforming ordinary ingredients into gustatory poetry. Next was the New York Cheesecake served with Strawberries. The sweetness and tang of the light and fluffy dessert was a perfect balance of flavors. The strawberries added a burst of refreshing flavor enhancing the overall experience.

The parade of sweet indulgences concluded with homemade Chocolate and Vanilla Bon Bons - dainty morsels that were nothing short of edible jewels. The chocolate and vanilla bon bons were rich, decadent orbs whose external shells shattered with the gentlest bite, unveiling an exquisitely silky, molten core that coated the tongue in velvety rapture.

With the final savored bite, the curtain fell on our grand epicurean escapade. I would be remiss not to mention the vast array of wines featured by the Fireplace Grill and Bar. Our choices came from the menu of over three hundred different wines. The reds paired wonderfully with the beef. The whites enhanced the seafood dishes. Our dining attendant paired them impeccably with our servings.

It would be unforgivable to conclude this gastronomic memoir without paying homage to the restaurant's hospitality professionals who tended to our table. They exuded an impeccable blend of warmth and refinement, their attentive service and genuine congeniality enveloped us in an atmosphere of gracious welcome that elevated the entire dining experience.

The Fireplace Grill and Bar not only delivers an exceptional array of fine foods, but also embodies the pinnacle of culinary artistry. Each dish demonstrated a commitment to flavor, presentation, and most importantly, quality. For fifty-eight illustrious years, this bastion of gastronomy has reigned supreme, an unrivaled beacon guiding discerning palates through a sumptuous exploration of global flavors and techniques. In recent years, artificial intelligence (AI) has made remarkable strides across various industries, from finance to healthcare, and now it's making its presence felt in the world of wine. The question of whether AI will replace sommeliers is not only pertinent but also sparks debate among wine enthusiasts, professionals, and technologists alike. While AI offers incredible advancements in precision, efficiency, and data analysis, it is crucial to emphasize that the sensory human experience, which lies at the heart of sommellerie, remains irreplaceable. However, this doesn't mean that AI won't play a significant role in reshaping the profession.

Can AI do better?

Sommeliers are revered for their deep knowledge of wine, their ability to pair wines with dishes, and their talent for enhancing a dining experience through their recommendations. This expertise is grounded not only in technical knowledge but also in sen-

sory experiences, taste, smell, and the emotional connection that a sommelier can create with a guest. These aspects of the profession are rooted in human intuition, experience, and the ability to read subtle cues from guests, something that AI, with all its advancements, still struggles to replicate fully.

AI, however, has the potential to revolutionize certain aspects of the sommelier's role. For instance, AI-driven platforms can analyze vast amounts of data about wine, including vintage quality, flavor profiles, and even the chemical composition of wines. Such data analysis can lead to highly accurate recommendations based on past preferences, regional trends, and even the specific details of a meal.

Early adopter markets are more likely to make the shift.

In markets where technology prevails over tradition, or in countries where the culture of sommellerie is not as deeply rooted, AI could very well take on a significant role, possibly even replac-

ing some of the traditional sommelier positions. Countries like the United States and China, where technology is rapidly integrated into everyday life and where the tradition of wine is not as entrenched as in Europe, are likely to be early adopters of AI in this space. In these regions, AI can offer a level of convenience and efficiency that appeals to both restaurants and consumers. AI sommeliers could easily become a norm in establishments where the cost of employing a highly trained human sommelier might be prohibitive or where the speed and precision of AI are valued more than the human touch.

However, it is important to recognize that in countries where the culture of wine and sommellerie is deeply ingrained, such as France, Italy, and Spain, the adoption of AI will likely face significant resistance. In these regions, the sommelier is not just a professional but a cultural icon, a custodian of tradition and craftsmanship. The human element in selecting, presenting, and discussing wine is seen as an art form,

one that AI, no matter how advanced, cannot fully replicate.

AI still can’t open that bottle though, can it?

One critical area where AI falls short is in the service aspect of sommellerie. Tasks such as opening a damaged cork, properly decanting a bottle, and ensuring that the wine is served at the correct temperature require a level of manual dexterity, experience, and situational awareness that AI cannot yet replicate. These service skills are often performed under pressure, in the dynamic environment of a busy restaurant, where the ability to remain calm and composed is essential. This tactile and interactive aspect of the sommelier’s role is deeply human and remains beyond the reach of current AI capabilities.

The shape of sommellerie to come.

The world of sommellerie, like many other fields, is not immune to the broader impact of AI and new technologies. While AI may not replace sommeliers entirely, it will undoubtedly influence

how the profession evolves. For instance, AI can serve as a powerful tool for sommeliers, offering insights and data that enhance their recommendations. Sommeliers who embrace AI may find that it augments their abilities, allowing them to focus more on the experiential aspects of their role while leaving the more analytical tasks to technology.

Ultimately, the world of wine, like many other industries, is on the cusp of transformation. Sommeliers, far from being replaced, may find that their role evolves in partnership with AI, creating new opportunities and challenges in this age-old profession. Simon Bell's Approach to Running Bangkok's Largest Hotel

The five-star Bangkok Marriott Marquis Queen's Park is the city's largest hotel with 1,388 rooms. It operates eight restaurants (four on-site, four at Asiatique), multiple bars, a luxurious spa, three grand ballrooms, and various meeting spaces.

Riding herd over it all is Australian Simon Bell who has been the hotels General Manager for the last five years. Simon grew up on the Gold Coast in Australia, one of the top holiday destinations in the country with some of the best beaches in the world. Growing up he has fond memories of riding his push bike down to the beach with his surfboard under his arm to catch some early waves as the sun rose over the horizon.

Simon’s interest in hospitality came from his parents who ran their own customer service business. Growing up on the Gold Coast and with it being the playground for international tourists,

he was surrounded by beautiful international hotels. As they were building the first Australian Marriott Hotel on the Gold Coast, he watched it come out of the ground and decided that he really wanted to work there. The Marriott took a chance on the young 19 year old with no tertiary education, and 32 years later he’s still working for Marriott International.

He shared that he feels like one of the luckiest General Manager’s in the company, growing up through Marriott and having some amazing leaders above him. He says that a lot of people saw in him what he couldn’t see in himself. They gave him opportunities in many different departments including the Rooms Division, Revenue Management, Finance and Sales and Marketing. Some of those leaders are still in the company today in very senior roles.

HOT Magazine had the distinct pleasure of sitting down with Simon to find out what it’s like to be in charge of the largest Marriott Property in South East Asia.

HM: With over 5 years at the helm of this landmark property, what have been some of your proudest accomplishments that have left a lasting impact on the guest experience? And what have been the biggest operational challenges you've had to navigate during your tenure?

SB: I am very proud of our entire team for their accomplishments over the last five years. Of course, this period coincided with the biggest challenge the hospitality industry has ever faced – the global pandemic – but we have successfully navigated this and look forward to a bright and exciting future.

In terms of achievements, hosting some of the region’s most prestigious events and spectacular weddings, we were the host hotel for the worldwide FIFA conference as well as many other international conferences. The numerous international awards we have received are also very pleasing. The launch of a series of innovative off-site dining and social venues at Asiatique The Riverfront is moving Bangkok’s F&B scene forward.

HM: As the first and only Marriott Marquis hotel in the Asia-Pacific region, how have you been able to infuse the brand's signature luxury and innovation into this property's unique Thai identity and local context?

SB: Our entire property is defined by its seamless blend of world-class international hospitality and authentic local Thai elements. This is reflected not only in our warm and gracious Thai hospitality, but also by our services and facilities. Most notably, Siam Tea Room, our popular Thai restaurant and café, showcases highly authentic Thai cuisine with time-honoured recipes, and its elaborate wooden sala entrance was built by hand by Thai national artist Thawan Duchanee. We also adorn every guestroom and suite with traditional Thai elements.

HM: With your track record of successfully opening new hotels, what fresh concepts or industry-first initiatives have you introduced at this well-established property to redefine the standard for luxury hospitality in Bangkok?

SB: Bangkok Marriott Marquis Queen’s Park is the flagship Marriott Marquis hotel in Southeast Asia, the largest hotel (in terms of room count) in Bangkok, and one of the city’s leading

conference and banqueting venues. At the time I took over, it had only recently re-emerged from a comprehensive renovation, rebranding and relaunch under the Marriott brand. As a hotelier, this represented an exciting opportunity and I was honored to be entrusted with such an important role.

HM: Managing a hotel of this scale with 1,388 rooms requires exceptional operational efficiency. What strategies have you implemented to maintain consistently high service standards across all guest touchpoints, from check-in to check-out?

SB: The essence of hospitality remains the same, whether you are managing a boutique hotel with 20 rooms or a large city hotel with 1,388 rooms. The key is to treat every guest as an individual and provide warm and personalized hospitality. Of course, operating a larger hotel requires organization and processes to be implemented to ensure its smooth running, especially at touchpoints such as check-in/ out, and breakfast service. But through innovative solutions and associate training, we have been able to maintain high service standards.

HM: The hotel's expansive 5,000 sqm’s of event space positions it as a premier MICE destination. How have you elevated the meetings and events offerings during your tenure to attract high-profile corporate and social gatherings?

SB: Our talented and proactive events team have staged many of the city’s biggest events and talk-of-the-town weddings. Our 30 meeting spaces have been curated to cater to every size and style of events, including three ballrooms, an elegant Pool House, residential style Apartments and Pavilions, private dining rooms and more, and a virtual tour from our website helps international clients to discover their perfect venue.

We also leverage the strength of our Marriott Bonvoy Events program to reward meeting planners, and our Green Meeting solutions enable businesses to weave CSR elements into their events.

HM: Leveraging your regional connections as a past business council leader in Seoul & Singapore, have you been able to drive increased corporate and MICE business to the Bangkok property, cementing its reputation as a preferred destination for regional and global organizations?

SB: I always strive to raise the profile of our hotel, promote our facilities and services to our partners, and drive business to our hotel.

HM: With 10 distinctive restaurants and bars, the culinary offerings are a key draw for the hotel. What innovative culinary collaborations or themed experiences have you spearheaded to keep the dining venues fresh, exciting and in tune with evolving guest preferences?

SB: We are always striving to elevate the culinary scene in Bangkok. The opening of Asiatique Ancient Tea House late last year marked the latest phase of our innovative off-site F&B strategy. Since the launch of Sirimahannop, our reimagined Thai tall ship, in 2019, we have now expanded to four original dining and social venues at Asiatique The Riverfront, the heritage-inspired lifestyle destination on the banks of the Chao Phraya River.

At the hotel, Goji Kitchen + Bar regularly partners with responsible, premium suppliers and guest chefs to showcase the finest ingredients, from wagyu beef to Tasmanian salmon. Akira Back, our top floor Asian restaurant, was recently named as the #1 fine-dining restaurant in Bangkok.

HM: As sustainability becomes an increasingly crucial priority for hotels, what eco-friendly practices or

cutting-edge green initiatives have you implemented at the Bangkok Marriott Marquis Queen's Park in recent years?

SB: Bangkok Marriott Marquis Queen’s Park is fully committed to sustainability, in every area of our operation. Food waste reduction is one area in which we have led the way. Since Goji Kitchen + Bar became the first five-star hotel restaurant in the world to achieve The PLEDGE™ in 2019, the hotel has donated thousands of tonnes of excess food to Scholars of Sustenance (SOS) to help feed disadvantaged people in Bangkok.

We have also eliminated single-use plastics, introduced electric vehicle (EV) charging stations, adopted energy-saving lighting, developed an organic rooftop herb garden, and we consistently practice sustainable sourcing strategies. Under Marriott’s “Serve360” culture of “Doing Good in Every Direction,” we also strive to make a difference in our community through CSR and local outreach programs.

HM: Reflecting on the challenges faced during the pandemic, what key lessons in crisis management have you applied to strengthen your leadership approach and better prepare the hotel for future disruptions?

SB: It is important to remain flexible and adaptive to any situations that may arise. No-one could have predicted the

global pandemic, but I am proud of how well we coped with the unprecedented challenges it presented. It taught me the importance of always taking care of your team members. For many hoteliers, the post-pandemic period presented a talent crunch as they were unable to replace the staff they lost during the pandemic. This is a lesson that if you take care of your team now, they will repay your faith in the future. This is a core pillar of the Marriott philosophy and we will always adhere to that, whatever challenges we may face.

HM: Building a strong service culture is critical for a hotel of this scale. How have you empowered and motivated your team to consistently deliver exceptional hospitality that exceeds guest expectations?

SB: Marriott’s “Putting People First” philosophy has been integral to our business for more than 95 years. We empower every associate to be the best they can be, through structured training and development programs, and clear career paths. It is not a coincidence that many of our GMs started in entry-level positions and have worked their way up. We inspire our associates to take pride in their work and reward them for their efforts, including regular internal Awards of Excellence. And we also encourage them to live a healthy life through our TakeCare program.

HM: Looking ahead, what is your long-term strategic vision for further elevating the Bangkok Marriott Marquis Queen's Park as a world-class luxury destination that sets new benchmarks for hospitality in Thailand's capital?

SB: We recently launched Teeshot Bar, an innovative new sports bar and social venue that harnesses cutting-edge technology including golf simulators, football games and karaoke machines. This is set to become one of downtown Bangkok’s most exciting new venues for local residents, sports fans and business groups. Looking ahead, we will continue to innovate across every area of our business to raise the bar for international hospitality in Bangkok. Stay tuned for further updates!

HM: Finally, on what’s probably a rare day off, what do you like to do or where do you like to go to decompress.

SB: On my rare days off, I love to travel with my family, and Japan is our favorite destination. We enjoy skiing there, as it's a perfect way to decompress and spend quality time together. The combination of Japan's beautiful landscapes, rich culture, and worldclass skiing resorts makes it our go-to place for a special getaway.
