The whites range from Lemongreen to brown, the reds from purple to brown (again!), and the rosés from pink to orange. And while perusing at a wine tasting in town, you might have heard something along the line of “the color is garnet at the core with a tawny hue at the rim” and you probably shrugged your shoulders at those corksniffing phonies but let’s take a look at the information you can get only from the color of the wine.

The Age: A young wine will usu ally display a similar color at the core and at the rim of the glass. Whereas a
The Grape Varietal: While the color of a wine alone will normally not allow one to determine the grape used to make it, it will help to rule out some of the grapes that we have in our reper toire. For example it would be extreme ly unusual for a Pinot Noir to produce a deep purple wine or for a Viognier to show a pale lemon-green robe.

nless you are one of those people who gulps a full glass of wine after cheering with out even looking at it (let’s face it, we’ve all done it) the color of the wine should be your first contact with it. And if it seems quite easy at first glance, determining the color of a wine can prove to be challenging albeit rewarding as it will give you some very important indications about a wine. Why would it be challenging you ask. Well because there is much more than 50 shades of wine. Forsooth there seems to be 286 of them! At least ac cording to the WSET (The Wine & Spir it Education Trust) that uses 13 colors and 3 levels of intensity to classify the Red, White and Rosé wines. And that is not event counting the Orange Wines or the level of clarity of those wines!
wine that has aged significantly tends to see the color evolve from the core to the rim. For example an aged Nebbiolo could go from garnet to a more tawny or brown hue and a chardonnay’s color can range from gold to amber. And to make things a tiny bit more compli cated both old red and white wines will have the tendency to get closer to a brown color from the core to the rim. The Freshness: Contrary to the pop ular belief, not all wines are destined to age well. In fact, a very small portion of them are. A light white wine that is supposed to be opened while still young will start to show a dull yellow color after a few years. The color will lose its vibrancy and it will be con firmed that the wine is “gone” on the nose as the wine will have lost its fresh ness, fruit aromas and might even feel maderized (oxidized or cooked). This is unfortunately a common problem in Thailand as a few hours of exposure under the sun can considerably shorten the lifespan of a wine. What about the flavor’s Intensity? Well … not really. You would think that all highly concentrated reds would pack a punch and that a deep golden Chardonnay will be very fragrant and oaky but there are too many counterexamples to make it a rule of thumb in my opinion. In some cases the color might even influence you to wrongly think that a wine will be light or pro nounced in flavors. That is why in my humble opinion the aroma and flavor’s intensity of a wine must be determined on the nose and the palate only. But that, dear readers, is another story for another time.

I n 1889, during the reign of King Rama V, wealthy businessman Luang Sathorn Rajayutka, a Chi nese businessman turned royal elite, commissioned a house, more of a mansion really, to be built for he and his family. Rajayutka was known for building the Sathorn Canal. The neo-classical family home was later passed down to Luang’s descen dants. In the early 1920s, the site was converted into the majestic Hotel Roy al. Later, in 1948, it became the Russian Embassy, and was utilized as such for over fifty Recognizingyears. the immense historic value of the property, a development team worked closely with Thailand’s Fine Arts Department to carefully re store the home to its former glory and renamed it The House on Sathorn.
Major renovations were conducted on the four buildings and large courtyard, keeping the original main structure intact. Meanwhile, inside, the original color palette, intricate wooden staircases, and even the Sathorn Rajayutka family’s personalized fresco motifs were all meticulously restored by the Fine Arts Department. nationals and business partners Davide Luzatello and Luca Gavassa had worked together on Koh Samui since 2010 and were looking for new opportunities and a change of scene. Having checked out Hua Hin in late 2019, they decided to move and start a new restaurant here. A site on Soi 94 was secured, and after much planning, in late April 2020, they were ready to open. Unfortunately for them, Thailand’s mandatory Covid lockdowns were introduced at pre cisely the same time. The excellent news for Hua Hin’s dining public is they were able to weather the hardships thrown their way during the pandemic. They are now building a reputation for excep tional Italian Cuisine in a town with its fair share of Italian eateries. Davide runs the front of the house while Chef Luca delivers his fine Italian fare from a regularly changing dinner menu.

attracted them to the name. The light lavender to a deep royal purple of the saffron flower petals and precious scarlet stigmas from the flower’s centre play out in many ways with the restau rant’s colour scheme, including on din ers’ plates. Zafferanos offers a relaxed undercover alfresco dining terrace and an air-conditioned dining room where you can watch the kitchen’s action through the glass separating panel. Our Zafferano food journey started with a complimentary sharing plate of Bruschetta with tomato. Davide ex plains that this is an everyday practice though the actual Antipasto changes depending Chef’s desire. Our table shared two appetisers from a well-cu rated and not overwhelming selection.

First, a classic from Chef Luca’s home region of Piedmont - Veal Carpaccio. Wafer thin veal lightly cured in lemon with peppery rocket, the bite of caper berries, rich creamy and slightly nutty and salty Grana Padano cheese finished with a light spray of white truffle oil. The Chef’s rendition of Shrimp Cock tail has all the ingredients on the plate, though as individual elements allow ing the diner to mix the crisp lettuce with some warm grilled prawns and classic cocktail sauce. Both dishes were a great introduction to Zafferano’s clas sic yet refined Italian Cuisine.
Next is the Pasta (entrée) course, and we sampled three outstanding dishes. Risotto has two choices – a beetroot risotto with Gorgonzola or risotto with porcini mush rooms. We went with the earthy sweet ness of the beets, the creamy rice, and the rich, salty bite of the blue cheese. A great marriage of flavours. Chef’s fet tuccine with lobster and clams - pearls of lobster meat in a tomato and seafood stock-rich sauce with hints of pepper was a triumph. Polenta gnocchi with a saffron and mascarpone cream rounded out our entrée. The carefully selected edible flow ers on the dish, which we were encour aged to eat, added a tasty extra dimension to the Eightplate.main dish choices are currently listed, with two being seafood. Our table chose the highly popular with Zafferano diners, Ossobuco alla Milanese. A classic of Lombardy, veal shanks slow cooked for 28 hours and, as is the tradition, served atop risotto alla Milanese. Fall of the bone, rich and tender veal, bursting with meaty flavoured sauce reduction from the cooking marinade, and creamy parmesan rich, saffron-infused risotto with hints of porcini and truffle proved to be outstand ing plate fellows. As one of our party de scribed, “Complex, with bags of flavour. In summary – Banging.”

Zafferano’s menu has a section dedi cated to Pizza, where diners can build their own from the picture menu. The family-sized Roman-style Pizza starts with tomato and mozzarella, and you choose your favourite toppings. Our table appreciated this concept as we were not constrained by the usual pizza combinations. The end result was outstanding, as ordered.
There are three classic Italian choices for Dessert, plus Hua Hin-made Bella Dolce ice cream. We sampled the Panna Cotta – smooth and creamy with the vanilla tones topped with a smattering of cranberries for a zing and accompanied by a mixed berry coulis. Chef’s Tiramasu is served rustic style and made with his special vanilla custard, lashing of cocoa on top, and dark chocolate drops around the side for added indulgence.

Created with the equal passion dem onstrated by Chef Luca is Zafferano’s wine and drinks list, which Davide oversees. Unless you are intimate with the Italian regional wines, I suggest you allow Davide to guide you as you are in very safe hands. There is also a good selection of wine by the glass. And with eight choices in the Grappa selection, we found Davide’s insights very rewarding. The casual open-air lounge area is ideal for those pre or post-meal drinks.
Zafferanos offers a simpler Pranzo or Lunch menu for a price ranging from 200 to 300 baht, depending on your choice. The lunch offer includes a main dish, a glass of white or red wine or on-tap Lao beer, and an espresso-style coffee to finish. Danang in Vietnam is one of those at just 90 minutes away. Voted the 3rd best city in Asia by the readers of Travel+Leisure Magazine, Danang is the fifth-largest populated city in Viet nam. It lies on the coast of the South China Sea at the mouth of the Hàn River and is one of Vietnam’s most important port cities. With broad beaches, fantastic street food, the fabled Hai Van Pass, and a growing collection of cafes, restaurants, and bars, it’s no wonder the residents of Da Nang sport some of the broadest smiles in the country. The warm sands of My Khe Beach sweep south from the mountainous Son Tra Peninsula. Da Nang hosts some of Vietnam’s top luxury resorts, but much of the beach still belongs to the people who make it their playground, gym, and source of livelihood.Theoldcity centre with its overflow ing markets and hushed pagodas still functions, just a few streets away from hipster cafes and designer boutiques. Ba Na Hill Ba Na Hill literally takes your breath away and takes most of the day to see it all. To get there you must take cable cars and it’s an impressive ride. CNN rated it one of the top 10 cable car systems in the world. It holds many records, including the longest gap, heaviest cable and great est change in elevation. With three lines of cable cars totaling 25 kilometers in length, the longest ride takes you about 20 minutes to get to the mountaintop.
Connecting the Marseille cablecar Sta tion to Le Jardin Station is the Golden bridge. It was famous even before its opening in 2018, and when it officially opened, the bridge created a worldwide phenomenon and was referenced as the most beautiful landscape on earth ac cording to Time magazine.
At the top of Ba Na Hills is a park featuring a replica European castle, and a spectacular underground amusement park carved into the mountain, featuring many types of rides. Located in the Truong Son mountain range at an altitude of 1487m, Ba Na is one of the most interesting areas in the region and often you can feel the four distinct seasons within a single day: morning - spring, noon - summer, af ternoon - autumn, and evening - winter. Many visitors to Ba Na take the hiking trails to enjoy views of the beautiful natural landscape.

Hoi An Hoi An, another must see destina tion, is a World Heritage Site. Here the bold march of progress peters into a leisurely amble. In this one-time trading port, the Thu Bon River mean ders past crumbling shop houses and weathered pagodas, while sampans come and go from the old ferry quay. Outside the Old Town, two-lane roads slice through waving rice fields and emerge at a frothy coastline. Stay a couple of days, and Hoi An’s easygo ing beauty and lantern-lit nights may leave you hopelessly beguiled. Merchants from China, Japan and later Europe settled in Hoi An from the 15th to 19th centuries, creating a unique architectural fusion. The Marble Mountains are a range of peaks located to the south of Danang. Each of these picturesque marble and limestone hills is said to represent one of the five elements of the universe: water, wood, fire, metal and earth. Sacred in ancient Buddhist and Hindu culture, the Marble Mountains are home to many caves and tunnels that house shrines and sanctuaries. Visitors can also climb a stairway to the sum mit, which offers stunning views of the surrounding area. The best time to visit is just before 7am. This compelling collection of pa godas set atop a marble will welcome throngs of visitors later in the day, but still feels fresh and sacred at sunrise. Wander around photogenic pagodas, feel cool currents of air in ancient caves, and climb to the lookouts for panoramic views. If you enjoy visiting pagodas, 15-minutes from there by car you’ll find the Linh Ung Pagoda, an enormous complex with a towering statue of Lady Buddha which is said to protect Da Nang from storms and bad weather.

Another World Heritage site is the My Son Sanctuary, once a place of burial and worshiping for Champa kings and royalty. It is known as one of the main centers of Hinduism in Southeast Asia. The surviving structures date from the 7th to the 13th cen tury.

The Cham Museum in Danang is one of the country’s top museum’s and has one of the largest collections of Cham sculpture and artwork in the world. The Cham people once ruled much of Central Vietnam and their temples have been excavated around Da Nang. The original museum building dates back to 1915 and is a work of art in itself. It’s since been expanded in the 1930s and in 2002.
The best months to visit however are from March to May and September to October, when the weather is warm. June to August sees little rain and the sea is clear and calm. The rainy season from November to February brings long rains and moody weather.
Danang is a place you can travel with peace of mind. Its people are as friendly as ever, its food is as delicious as ever, and its culture is as alluring as ever. Getting here is easy from Bangkok with many direct flights, and it is a great destination year-round.
Hue City Located on the Huong (Perfume) River, Hue City is a must-see destina tion on Vietnam’s heritage trail. Just three hours drive north of Danang, Hue was the imperial capital city of Vietnam for approximately 150 years during feudal times (1802–1945). Al though many of its finest buildings were destroyed during the Vietnam War, the city is still a stunning land of pagodas, temples and tombs that will fascinate visitors.
The Son Tra Peninsula strikes out into the ocean, its densely forested hillsides are home to the endangered, red-shanked douc langur - one of the world’s most striking primates. Grab some binoculars, hire a motorbike, and head out for a day of wildlife spotting.
