EDITOR’S NOTE
This month’s “Let’s Go” takes us down to the south of Thailand. Sandwiched between Trang, Phatthalung & Songkhla provinces is the province of Satun. It’s a small province in southern Thailand that is located along the coast of the Andaman sea. It possesses almost 100 Islands; with some considered the most beautiful islands the Andaman Sea has to offer.
Satun also features interesting attractions about culture and the local way of life. Satun is near Malaysia, and as such a majority of the population is Muslim, with many being of Malaysian descent. This adds a colourful character to the town, especially when it comes to food and clothing.
If you crave good times, tan lines, and turquoise blue water, then dig out your suntan lotion and flip flops and turn to page 44 to find out why Satun is where you need to head to embark on your next tropical island getaway.
After a two-year Covid hiatus, the second edition of Mrs. National Universe took place in Bangkok from September 11th to the 14th. The women came from around the world, representing The United States, Japan, Belarus, Philippines, Laos, Kenya, Czech Republic, India, Thailand, Russia, Puerto Rico, & Sweden. The candidates were judged over the 4-day period on their social skills, confidence, personality, communication skills, on and off stage presentation, on and off camera presentation, runway skills, English speaking ability and more.
While in the Kingdom, the women participated in a cooking competition overseen by Chef Marco, the head chef of the Amari’s Italian Restaurant Prego, and they took part in a contemporary Thai flower making contest, overseen by Thailand’s top florist Sakul Inthakul. They also boarded a coach and headed to the UNESCO city of Ayutthaya, which at an earlier time was the second capital of the Siamese Kingdom.
Pull out your tuxedo or gown and turn to page 60 to find out which one of the Mrs. walked away with the big crown.
New monthly contributor Patrick Jacobs retired as a hairstylist with two goals, scuba dive much more and learn to play an instrument. He focused on his diving, which he thoroughly enjoyed, and while diving he took a lot of underwater pictures.
Patrick started posting his pictures to a Facebook group called Bangkok Photography. Dennie Cody is the founder of the group and Dennie started mentoring Patrick in how to be not a good photographer but a great one. Although Patrick sometimes chaffed at Cody’s gruff direct comments on the mistakes he was making, he realized overall that Cody was doing it because he saw something in him. Patrick also realized that his retirement goal of learning an instrument had been met as well, his instrument was the lens.
Patrick recently had an exhibition of his photographs, and he has shared some of them with us in this issue. Pour yourself a glass of wine and turn to page 70 to see what a real photographer can do.
Those are just a few of the stories you’ll find inside this issue. We hope you enjoy the read.

A Conversation With Lenka Marie Vomocil, Mrs. National Universe 2022
Lenka, you are from the Czech Re public, how long did you live there and what was it like growing up?
Yes I grew up in a beautiful historical small country in the heart of Europe Czech republic. I lived there till I was about 18 years old when I started full on traveling for modelling while still finishing my bachelors degree from Josef Skvorecky University in Prague. Now it might seem that I left my coun try so young because I didn’t like it there but I was just always a free spirit who dreamed about travelling the world and I am a very proud Czech woman and I am always beyond happy to come back home.
I was lucky to grow up in post com munist era so my childhood growing up in Czech republic was filled with joy and great memories.
Can you tell us a happy childhood memory?
I have recently lost my dad who was my favourite human in the world. Every memory tied to him is a happy memory. But if I have to name one, it’s the one where we would go every year to my grandmother’s village for a Christmas tree. We would walk in deep snow in this picturesque beauti ful woods for hours till we found the one special pine tree. My dad would cut it and put it on the top of a car and we would drive home while he was pretending to be the voice of a wind blazing by our car and I would have hours and hours long conversations with him. Those were the most pre cious moments I will cherish till the end of my life. My dad is gone too soon but instead of focusing on the loss I am thinking of how blessed I am to have such a wonderful father for so many years as not everyone is so lucky.
Your Country was known as Czechoslovakia until January 1st, 1993 when the country was peacefully divided into two independent states: Czech and Slovak Republics. What was the biggest difference that you noticed when the change happened?
Truthfully nothing really. The split was orchestrated by the Czech prime minister Vaclac Klaus and Slovak prime minister Vladimir Meciar. I don’t think majority of Czech and Slovaks wanted to split. I love my Slovak brothers and sisters and when we meet abroad we are always acting like one nation.
The big change was mostly after the Velvet revolution in 1989 when the generation of our parents went in the streets and protested so long that we finally forced the Russian army to leave and by the help of my personal hero and our first Czech president Vaclav Havel we instigated a true democracy and freedom after 3 decades of occupa tion and oppression.
You currently live in Hua Hin, Thai land. How long have you lived in Thailand and what made you decide to relocate?
Well I first came to Thailand when I was only 20 years old as a model and I instantly felt in love with the country and its people. I was very blessed as I always worked really well here and made many commercials and was able to go to islands for months at a time for adventure. I than met my ex-husband and relocated to his home country USA. Specifically New York. It was exciting at the time but I always felt an empty space in my heart as I missed Thailand so much. So when a job of fer came to come back to the “land of smiles” I packed my belongings and two days later I was on the plane back. Best decision of my life. This is my home for the past 5 years.
What do you like about Hua Hin?
Ah where do I begin? I love my sunrise runs at the 8 km long fine sand Hua Hin beach. I love hiking to the temple at Khao Takiap for its beautiful views. I always take my friends to visit the breathtaking Phraya Nakhon Cave. I love spending time at Cicada market for its great entertainment, food and handmade crafts and art. Truthfully the list goes on and on. What is there to not like about Hua Hin?
What are some of your favorite ac tivities?
When I am at home in Hua Hin I love running. I run 10 km a day. It is my moving meditation. I love yoga and Muay Thai. I love to go once in a while to my temple and spend a cou ple of weeks there meditating. I am a huge animal lover so you will always find me saving some animal or feed ing local dogs. I adore spending time with my partner and our dogs and my friends but my biggest passion was always travelling and getting to know other cultures and people from around the world. My newest endeavour is writing my first novel. Compilations of stories about the great adventures of my late father.
You recently won the Mrs. National Universe Pageant that was held in Bangkok. Why did you enter and what was one of your favorite memo ries from the pageant?
Yes. I am still pinching myself to make sure it wasn’t just a beautiful dream. I am thankful to our organiser Khun Tanya Siri Vijitsomphong for convincing me to join the contest and step outside my comfort zone. After my dads passing and years of Covid I kind of lost myself and thanks to Tanya and the entire organisation of Mrs. National Universe I was able to find the old confident self again. I went into it with a clear strategy: to be myself, work hard and give it my all.
Of course my favorite moment was when they called out “Czech Republic” as the winner.
But the entire program leading to the finale was amazing. We were treated as Queens at Amari Watergate Bangkok with special Gala dinner and sashing ceremony. I was honoured to learn the craft of Thai royal flower decoration, cooking one of the best 100 risotto in the world with Chef Marco from Prego Bangkok and I was absolutely amazed by the trip to the ancient city of Ayutthaya. The entire program was absolutely precise and I am forever thankful for this opportunity and also for finding new friends or as I say “new sisters in my fellow contestants from around the world. I am very blessed to be a new member of the Mrs. National Universe family.

et’s Meet , Khun Sukamal
What is your full name and age?
My name is Sukamal Mondal and I am 45 years young!
What is your current Job Position?
I am the Area General Manager of Amari Watergate Bangkok, flagship hotel under ONYX Hospitality Group. Along with that, I am also overlooking 8 properties in Bangkok. I began my journey with ONYX in 2006 where I was appointed as the Residence Man ager of Shama Century Park in Shang hai.
What do you like most about your profession?
Every day is a fashion show and the world is the runway.
How long have you lived in Bangkok, and where did you live prior?
I’ve been in Bangkok for 12 years. Prior to this, I was in China (Shanghai and Sanya) for 12 years.
What do you like most about Bang kok?
Thailand is known for its rich culture and tradition. With tropical beauty, ancient temples, amazing food and vibrant night life, Bangkok definitely has a charm to it. The county is known as the Land of Smiles for a reason and it truly does not disappoint. The people, the place and the values of Bangkok are unmatchable.
What is your favorite restaurant, and why?
Going back to my roots, my favorite restaurant has to be Rang Mahal. To me, good food comes with a touch of authenticity and a burst of flavors. I have been eating at Rang Mahal for quite some time now and it has always been consistent! Along with that, their new rooftop bar 1826 is also one of my favorites! You will find me there quite often after a long day to cool off with a drink!
What is your favorite “Special Oc casion” restaurant, and why?
My special occasion restaurant would be Jhol. With a kick to Indian cuisine, Jhol offers a dining experience like never before. The menu at Jhol is curated by the regional delicacies of coastal India using the best of season Thai produce.
What do you like to do in your free time, and why?
I am a complete health geek so when I do get some time off, I like to hit the gym. It allows me to work on myself, physically and mentally while also re leasing all the stress from the week. It is very important to look after the human body and give it what it needs.
Where do you recommend first time visitors to Bangkok go, and why?
Like I mentioned, the ancient beau ty and temples of Bangkok cannot be missed. I would suggest tourists to visit Wat Arun or Temple of Dawn. It is one of the most famous temples, known for its beauty and signature charm of its decoration. Another place I would recommend would be Chatuchak or the JJ weekend market. Recognized as Thailand’s largest flea market, here you will find all sorts of goods from clothes, bags, shoes to household products.
On a night out with friends, where do you like to go, and why?
Sing-sing! This is an upbeat, funky and trendy club.
Tell us a surprising fact that the pub lic might not know about you?
Something that people might now know is that I am a great cook. I thor oughly enjoy getting into the kitchen and cooking up a storm for my loved ones. In fact, cooking is my stress bust er. It is extremely therapeutic! What is the most outlandish thing you have ever done?
Traveled to another country to meet a friend without any contact details! I made friends from Jakarta while out and about in Bangkok but later real ized we did not exchange numbers. Later that year when I flew to Jakarta, I actually made sure to search for them all over town! Funnily, I did happen to locate them! They were great hosts and showed me a good time in Jakarta.
L
et’s Wine , (Des)Passito
What do the Passito wines from Valpolicella and the Luis Fonsi’s 2017 hit song have in common you ask? Apart from the obvious pun in the title of this column, they both enjoyed a massive popularity in Thailand and are both responsible for a peak of activity at maternity services. No one can deny that Valpolicella Passito wines are gor geous and sexy and their high alcohol content made me tipsy on more than one occasion.
So without further ado let’s take a closer look at what makes Passito wines so special, starting with the Ap passimento method.
The method
Using the Appassimento method requires to harvest the grapes early so
that they retain a high acidity before being dried in an aerated building. Tra ditionally it was done using the wind only but modern technology allows for better atmosphere control. The drying will help to concentrate the sugars and the flavours. After the drying process the grapes are made into a wine that usually undergoes some ageing in oak. This method is used in various countries around the world but in Valpolicella or Jura (France) it became a defining characteristic of the region.
The grapes
The main grape used in Valpolicella is the Corvina Veronese, a native grape of the region. It is known to have a relatively thin-skin, low to medium tannins but a high acidity allowing it to endure the Appassimento process. It is
often blended with other local varieties such as Rondinella, Corvinone and Oseleta in smaller percentages.
The place
Close to Verona, the Valpolicella region has plenty of water around it with the Lake Garda to its left and the Adige river to its right helping the reg ulate the temperatures. The soil on the hills is volcanic with limestone giving more acidic grapes and in the plains the gravel and sand soil give fruitier grapes as it favors ripening.
The wines
The first offspring of the Appassim ento method is the Recioto della Val policella (DOCG). This sweet wine’s origin date back to the ancient Greeks and Romans. The fermentation is inter
rupted to retain a lot of natural sugar in the wine. The result is a sweet, intense and tannic wine that everybody should try at least once.
The story says that when an attempt at making a Recioto went wrong was created the Amarone. This dry to offdry wine was not meant to be but since became the most sought-after of all the Venetian wines. A good example of Amarone della Valpolicella (DOCG) would be the Allegrini Amarone Valpo licella Classico DOCG. Amarone wines are big and bold with an impressive bouquet of red and dried fruits, cherry liquor and oak aromas such as tobacco, chocolate or liquorice. They are also very high in alcohol, the minimum re quirement for an Amarone being 14% alc. Not for the faint of heart.
After making the Amarone the remaining skin and seeds (called the Pomace) can be added to a standard Valpolicella wine to create the Valpo licella Ripasso (DOC) with a second fermentation. Ripasso wines such as the Palazzo Grimani Valpolicella Ri passo DOC are considered to be very good value as they retain some of the characteristics of the Amarone but with a gentle price tag.
And finally there are wines with the mention “Appassimento”. For some reason these wines cannot classify as Amarone and are therefore sold with out the DOCG mark and at a much lower price. Sometimes it is because they couldn’t reach the minimum % of alcohol to obtain the DOCG or simply because they are not from Valpolicella. Those wines are usually of very good

Bangkok foodies are familiar with Jutamas “Som” Theantae from her two well-known Bangkok restaurants: Kar makamet Diner, which opened in 2013, and Karmakamet Conveyance which followed. The Pandemic interrupted these acclaimed restaurant’s stories, but now Chef “Som” has opened her latest enterprise, SOM’S TABLE, in a newly renovated traditional cottage on the tranquil shores of Khao Tao beach, in Hua Hin.
Chef Som discovered the historical house by the seaside and instantly fell in love with it. Shortly after, she decid ed that this location would be where she would open her restaurant.
The double story 80-year-old wood en heritage house lies amidst local seaside residents’ homes and has a stunning, uninterrupted view of white cream sands and admiral blue sea waters, framed by moored fisherman boats and coconut trees.
The restaurant is cosy with just 18 seats inside and 6 to 12 seats outside.
The menu available at SOM’S TABLE is an A La Carte, Carte Blanche Menu, meaning “according to the menu or chef”, which changes daily to weekly based on what the Chef creates and availability of fresh produce.
The comforting dishes are designed to bring the feeling of warm familiari ty, with portions friendly for sharing. Menu highlights include fresh hand made pasta, freshly baked bread with herbs from her garden, a Catch of the day fish from the local fishermen, along with succulent Lamb & Beef dishes.
The meals are also fitting to pair with the selections of fine wines which Chef Som has curated to compliment the SOM’S TABLE dining experience.
Our HOT Magazine Let’s Eat team visited SOM”S TABLE on August 28 when Chef Som collaborated with acclaimed French Chef Hervé Frerard, Montien, the Hotel Surawong Bang kok’s Culinary Director, for a “Classic French Escoffier” inspired 5-course degustation dinner.
Guests were taken on a culinary journey through France, bringing back the pure taste and technique of Escoffier-cooking yet with each Chef’s personal touch and flair. These two culinary masters had previously col laborated for their first 4 Hands event at a sell-out Valentine’s Day Dinner in 2021 at Karmakamet Conveyance.
Their classic Escoffier food tour start ed with an Amuse Bouche from each Chef – a Pate with figs and a fried and fresh oyster on ice. A creamy appetiser of soft boiled egg on a buttered crouton infused with black truffle, chanterelle mushroom and parmesan cream. At lantic Skate Wing atop a confit of shal lots with a butter sauce and fish eggs. Looking golden and glorious, a Pithiv ier (round pie) of pigeon and Fois Gras sitting in a Jus flavoured with Maderia and Australian Truffle.
Veal Tripe, perhaps not a regular modern menu item, though indeed a classic from Escoffier’s time, was cooked for 28 hours in a Provencale sauce, accompanied by garlic confit and Italian basil oil. The 4 Hands dinner was brought to a boozy close with a Traditional Rum Baba fea turing a light Financier, a Rum Jelly with dazzling amounts of rum and topped with a generously calming Vanilla Cream.
Som’s Table opens at 4 pm from Thursday to Monday, and book ings are strongly recommended. Enquiries and reservations can be made at +66 (0)97 287 2442 or visit www.somstable.com

Let’s Go, Satun Province
If you crave good times, tan lines, and turquoise blue water, then hop in your car and head south to Satun. Satun is a small province in southern Thailand that is located along the coast of the Andaman sea. It pos sesses almost 100 Islands, with some considered the most beautiful islands the Andaman Sea has to offer. Besides its picturesque islands, Satun also features interesting attractions about culture and the local way of life.
Satun is near Malaysia, and as such a majority of the population is Muslim, with many being of Malaysian descent. This adds a colourful character to the town, especially when it comes to food and clothing.
Unlike the other Muslim majority provinces in Thailand, Satun does not have a history of political confronta tion with the central power in Bangkok or of tension with Buddhist’s which
makes up the majority of Thailand’s population. Malay Muslims in Satun are substantially assimilated and rare ly sympathise with separatism from Thailand, in contrast to the Malay Muslims in Pattani, Narathiwat, and Yala. Satun town, the province’s cap ital, is a sleepy township that typically only sees travellers who are en route to either the offshore islands or Malaysia. However, mainland Satun does feature the Thale Ban national park, which contains a number of waterfalls and a large lagoon surrounded by towering mountains. For size, it has a total forest area of 1,212 km2 which equates to over 40% percent of the provincial area.
From the port town at Pakbara, the top island destinations in Satun are Koh Tarutao and Koh Lipe, idyllic and generally undeveloped, the islands are renowned for their spectacular natural beauty.
In 1897 Satun became part of Mon thon Syburi (now Kedah), which in 1909 was divided between the British Empire and Siam as part of the An glo-Siamese Treaty of 1909. While most of Kedah was ceded to Britain, Satun was awarded to Siam because it had a relatively large Thai population. Satun was then incorporated into Monthon Phuket. The monthon system was end ed in 1933, and Satun province became a first-level subdivision of Thailand.
Since Satun had belonged to the Kedah Sultanate, which had a strong relationship for many centuries with both Ayutthaya and Siam under the Chakri dynasty, its Malay Muslims commonly intermarry with Thai Bud dhists without serious religious hesita tion. This custom has created a distinct social group known as samsam, mean ing a mixed person.
When in Satun, be sure to check out the marine national park Mu Ko Phet ra. Located in the Strait of Malacca off Thailand, the park consists of open water and around 30 islands with rich coral reefs around them.
Many of the islands are marked with steep limestone rocks with little beach es and are used as temporary refuges by fishermen during the fishing season. Established in 1984, Mu Ko Phetra is the 49th national park and 14th marine national park of Thailand. Almost 95% of the park is open water. Of the islands, the two largest are Ko Phetra and Ko Khao Yai, and several islands are marine turtle egg laying sites.
On the island of Ko Khao Yai you will find Ao Kam Pu Bay which has a small canal originated by a waterfall in the bay. Ao Kam Pu Bay is the most tranquil beach throughout the year and you can see the coral reefs and marine creatures along the coast during the lowest tide period. The main feature of Ko Khao Yai Island is the sculpture beautifully crafted by nature. It is a nat ural bridge stretching out into the sea and the boats can pass under it during the low tide.
In the caves of the cliffs high above the ground on some of the islands you’ll find swiftlets breeding and building their nests. Several islands were placed under concession for decades to collect bird nests. They are highly valuable and closely guarded with firearms. Traveling to those islands should be done with local tour companies as their boats are recognized and ignored by guards.
Lovely to see and worth visiting is Ko Lao Liang which consists of two similar islands, separated by just 300 meters. The smaller, northernmost island is Ko Lao Liang Nuea, and the larger island to the south is Ko Lao Liang Tai. Both have gorgeous beaches and shallow reefs.
Another must visit is the Tarutao Na tional Park which consists of 51 islands in the Strait of Malacca. There are two island groups in the national park, Ta rutao and Adang-Rawi, which are scat tered from 20 to 70 kilometres’ distance from the south-westernmost point of mainland Thailand. The park covers an area of 1,490 square kilometres with the southernmost end of the park lying on the border with Malaysia, just north of Langkawi. Tarutao became Thailand’s second marine national park in 1974. Interestingly, in times long ago, pirates used the island of Tarutao as a hiding place after attacking cargo ships, and it was also the setting for Survivor: Thailand, the 2002 season for the U.S. reality television series, Survivor.
Worth seeing attractions in the Adang-Rawee Islands are Pirate Wa terfall, a small waterfall with a basin to detain water all year, and Chadoe Cliff, the view point on Adang Island. Offer ing beautiful scenery, it takes around 40 minutes to climb up to this cliff but on arrival you’ll be rewarded with the whole view of the island.
When planning a trip to Satun province be sure to pay attention to the weather. Winds coming off the Indian ocean pick up moisture and dump heavy rains from May through October. The other six months of the year it receives little or no rain. Also, the monsoon winds make boat travel off coastal Satun dangerous from May through October. Every year during the rainy season, which is considered 16 May to 15 Novem ber, the island National Parks, including Koh Tarutao and Koh Phetra are closed for visitor safety.

Patrick Jacobs, An Artist With A Lens
Patrick Jacobs interest in photog raphy started in his late teens. After retiring from a career as a hairdresser he had two retirement goals. One was to scuba dive much more and the other was to learn to play an instrument.
He focused on his diving, which he thoroughly enjoyed, and while diving he took a lot of underwater pictures.
He started posting his pictures on a Facebook group called Bangkok Photography. Dennie Cody is the founder of that group and Dennie started mentoring Patrick in how to be not a good photographer but a great photographer. Although Patrick sometimes chaffed at Cody’s gruff di rect comments on the mistakes he was making, he realized overall that Cody was doing it because he saw something in him.
Patrick went to work on his photog raphy skills, and he realised that the instrument he had wanted to learn, his second retirement goal, was his camera.
Patrick’s signature logo is appropri ately the turtle, as his art has crawled out of the sea, and he now takes pic tures on land as well.
He recently had an exhibition at the Standard Hotel in Hua Hin where he displayed his pictures which were printed on aluminum using a process called sublimation.
The process involves printing the photo on paper first, and then transfer ring the pigments onto the aluminum.
Once dry, the aluminum is heated which causes the pigments to permeate into the metal which is then lacquered for UV protection.
They come in 2 sizes and there will be only 5 of each print created. Patrick also prints his photographs in the tra ditional way which can be had in any size.
In addition, Patrick is publishing a photojournalistic book about Hua Hin’s fishermen, their lives and their work, which will be out soon. Calen dars and postcards are also available.
We are also pleased to announce that going forward, Patrick will be a regular monthly contributor to this magazine. To view more of Patrick’s photographs, you can go to www.facebook.com/ patrick.jacobs and he can be reached at Patrickhasselt@hotmail.be
