I love slow-cooked southern style greens like most people (Kale, collards, etc.) but there are definitely other ways to eat them that are healthier, taste great and are super filling. Use the whole leaf of collards, kale or chard. Wash well and de-rib. Layer the leaves and then roll them up. Slice on the rolled edge to make thin ribbons of the leaves (chiffonade). Guess what? In this form you can use them as a salad.With a great vinaigrette, they are delicious! Add anything you would normally add to your salad. I usually include small diced zucchini and yellow squash to the mix, red onion, any of the colored bell peppers (diced small). If you make quite a bit, you can store in a gallon storage bag with a paper towel.


This makes a hearty salad base that can be used for 2-3 days. Eat with grilled meat, tuna, roasted chicken or any kind of fish. I like a lemon vinagrette, but any salad dressing will do.If you have leftovers, heat up a pan with a little oil and sauté the vegetable mix.

Season with Goya Adobo; garlic, salt and pepper; or garlic and soy sauce. Because it is so thinly sliced it cooks up very quickly. It’s great as a side or over plain rice or pasta. This option provides some versatility and ensures you get delicious greens that maintain their nutritional integrity
