Speaking of dressing well, this issue marks the debut of an important relationship with guest stylist and top men’s fashion designer Mark Pomerantz. He is a man of quintessential style who knows how to Live Beautifully himself. We leaned on his keen sense of style and his latest collection for our fashion shoot for this issue at two locations: Set Jet and a private residence designed by Mark Candelaria and built by Barkan Development. It was exciting to see fashion through his eyes. As this year wraps up, I wish you beautiful moments with the people who mean the most to you, gorgeous celebrations and quiet moments to take in the year that has gone by. ART

OF

PAUL ECKE An amalgam of color, texture and movement, the Southern California artist’s paintings and ceramic pieces can be found in collections across the globe. By Fran Miller

W

ith a career that spans 40 years, Paul Ecke’s body of work can be found in homes and galleries throughout the world. A painter of contemporary non-figurative and figurative works on canvas and on panel, Ecke’s art is an amalgam of color, texture and movement— achieved through the application of oil and acrylic paints to canvas, applied by brush, hand and even trowel. The results are magnificent and colorful. Each work provokes thought and emotion, just as Ecke intends. “I visualize what type of art I want to create and develop the subject matter where hopefully my intentions will be interpreted for each viewer’s unique perspective. I visualize the materials that I want to use and begin to attempt to tell the story,” Ecke says. Educated at California State University, Fullerton, Ecke received degrees in art with an emphasis in ceramic arts and painting. He initially utilized his training by teaching others, and he was an art instructor within 30

the California public school system for ten years before making the daring move to pursue a full-time career and create his own art. That decision proved fateful and fruitful. Ecke’s paintings and ceramic pieces can be found in the collections of Manila’s Metropolitan Museum of Art Manila, Baja Mexico’s Cecut Museum, Daytona’s Museum of Arts and Science, and

ICONIC LIFE was fortunate to view Ecke’s work at the Markowicz Fine Art Gallery in Laguna Niguel where his newest series “White Water, Night Water” debuted. This collection of mixed media, pearl-embellished paintings was created to show growth in the artist’s personal and spiritual evolution. “I am honored and humbled to be amongst the talented artists in this renowned International Fine Art Gallery,” Ecke says. “Markowicz Fine Art helps to build artists’ careers through their professional and promotional platforms. I feel very fortunate and grateful to be a part of their community.”

wo-lifetime friends who share fastpaced careers, active families and enough stress to bring down a giant are now part of the sandwich generation caring for kids and parents simultaneously. So, what can reset one’s mindset and lifestyle faster than stopping to smell the eucalyptus during a wellness spa weekend retreat for two? Anne and I took nearly a year to get this real-life pause on the calendar, and only the commitment of two friends kept us from canceling the trip. We calendared the dates, made provisions for our families, scheduled time off work and just did it. We packed our yoga mats, reusable water bottles and sun hats and journeyed to Westlake Village, a little town outside of Malibu, Calif. with views of the Santa Monica Mountains. We agreed that we’d embrace all this weekend could offer and kept an open mind to get out of our comfort zones and experience everything. It all started with our wellness coordinator, who focused on our individual goals to personalize our time at the Center for Health & Wellbeing on property at Four Seasons

Westlake Village. Sarah helped create our ideal stay, complete with fitness classes, assessments and one-on-one consultations led by experts committed to our wellness journey. Of course, that also included healthy meals and time in the world-class spa. There are options as to how to program your stay. Some guests opt for group retreats, some are locals with memberships, and then there was the two of us that packed a lot of healthy, good stuff into three days on a wellness spa weekend. Upon arrival, we toured the facilities, got our itineraries and found spots at the beautiful spa pool, where we unwound from our trip and enjoyed a lovely lunch. An hour later, we were off to our assessments—I tested my VO2 max to determine at what heart rate I should work out for optimal results. Anne stepped into the BodPod for a body composition analysis. Once we determined we were not as fit as when we were 20, but not bad for today, we moved on to a sound bath meditation class—one of the available wellness electives—before dinner.

Knowing that our high school bodies had not completely given up on us, we fine-dined our way through a decadent yet healthy menu at Four Seasons Westlake Village’s Coin & Candor. Chef Jesus Medina offers health-conscious, wood-fired local dishes. We enjoyed octopus with charred serrano chili aioli and a wild mushroom truffle risotto. We also shared the striped bass with tomato mole and brussels sprout leaves and finished with an apple tarte tatin because, hey, we’ll be working out all day tomorrow. And indeed, tomorrow came too fast. We ran out of our room like executives late for a meeting with a coffee to go. We had an 8 a.m. meeting with Jenny, our fitness coach and soon-to-be tai chi instructor, who spent an hour teaching us stretching exercises for people who sit at desks and then a great express workout for women who want to be their flexible, active best. An hour later, Jenny handled us off to Rod, who had an obstacle course set up on the event lawn of the resort. There, we met a fitness member who worked out with us on a circuit-training loop that made us remember why you eat breakfast in the morning. As the day went on, we had life strategies coaching, where we talked about stress-reducing methods, a session on intuition and some marvelous wellness spa appointments followed by time in the spa steam room, sauna and jacuzzi. Oh, and we shopped at the spa boutique and purchased some fun finds. (I love spa boutiques!) Keeping up with our wellness weekend, we thought it healthy to sit by the pool at sunset and enjoy some friend time and a glass of rosé before heading to dinner. While we again dined at Coin & Candor, we enjoyed entirely different selections, noting the chef ’s versatility.

On our third day, we again met up with Jenny, a patient tai chi instructor with graceful movements. She explained the benefits of the practice, and honestly, this was one of the big takeaways from the trip— more tai chi, please. Both energizing and relaxing, tai chi compels you to calm your mind and be present and active in almost every muscle in your body. We loved it, and I loved gaining a greater understanding of the practice. It resonated with me big time. We indulged in a yummy Saturday brunch and then left the property for a local hike. Even though it took us an hour to reach the trailhead, we hiked the path and returned to the Four Seasons Westlake Village with 20,500 steps achieved. It’s a good reminder that you can do anything with the support of a good friend. Plus, we talked the whole way. Pool time was in order next, and our wellness coordinator booked us a lovely private cabana to soak up the sun and reminisce about our amazing three days together. We walked into town that night—keeping the wellness theme going—for sushi and another sunset. By morning, we were feeling oh, so relaxed, rejuvenated and refreshed. We had done it! We quieted the noise, engaged in lots of healthy activities and gained some new tools we’d take home with us and make part of our lives, going forward with renewed energy and purpose. I’d like to end this story by telling you that Anne’s plane was not canceled and that we didn’t race to get her to an alternative airport to get her home. But, alas, we did it with a calm perspective and knowing that we learned strategies over the last three days that would remind us that this alone will not take us out of a Zen state. We realized that we could handle what life hands us—and wasn’t that part of what we were to learn this weekend? ICONICLIFE.COM

aguna Beach has it all, and the reasons to live within or to visit the Southern California enclave continue to grow. Surf and sand, luxurious hotels, panoramic ocean views, and destination-level cuisine are just a few of its many draws. The culinary scene, in particular, is noteworthy. While the casual burger joints and pancake houses of decades past can still be found, the region’s most popular dining spots feature a farm-to-table ethos fully endorsed by the region’s best chefs, for whom life and cuisine in Laguna Beach are a dream come true. Jared Cook, Fabian Sanchez and Omar Pineda are three of those chefs. We were fortunate to catch up with them to learn about the foods they love to cook, and their thoughts on Laguna Beach.

Born and raised in the Pacific Northwest, Chef Jared Cook graduated from Western Culinary Institute in Portland, Ore., and then relocated to Southern California. Cook has since worked in restaurants such as Laguna’s French 75, Costa Mesa’s Chat Noir and was promoted to executive chef at the Crow Bar and Kitchen. He now oversees the kitchens and creates the wine county cuisine at multiple RJB Restaurant Group restaurants in Southern California, where he partners with Russ Bendel, including Laguna’s Sapphire, Cellar. Craft. Cook. Cook, recognized as one of Orange County’s top culinarians, is known for his unique, out-of-the-ordinary farm-to-table cooking style. He loves the garden and uses organic heirloom vegetables, fruits and herbs harvested from Vine Restaurant & Bar in San Clemente, where he has created his own prolific, onsite garden. ICONIC LIFE: How long have you been based in Laguna? Jared Cook: Since early 2020, when Russ and I took over Sapphire. IL: How and where did you get your start as a chef ? JC: I was attracted to the industry because of my passion for food and horticulture. I knew I would be a chef from the young age of 14. I started cooking with my mom as soon as I could reach the stove. Julia Child and Great Chefs of the World were my favorite TV shows as a teen. IL: What do you enjoy most about your work at Sapphire? JC: I really love how Sapphire has become a staple of the local community. Seeing regulars every day is great. And seeing the ocean from the kitchen is pretty cool, too. IL: What are some of your favorite items to create in the kitchen? JC: Nightly specials. Specials are a huge focus for us because they allow us to keep things fresh and exciting and use whatever is at its peak in the season. I enjoy cooking local seafood and vegetables. And handmade pasta whenever I can.

IL: What are your favorite ingredients and/or signature menu items? JC: Crispy Meyer Lemon & Honey Duck Wings, Duroc Pork Schnitzel with Maitake Mushrooms, Prime Short Rib Bolognese, and Duck Meatballs. IL: Do you have local purveyors that you’ve befriended and trust? JC: When I can’t source from our Vine garden, I use Fresh Origins for garnishes, edible flowers and produce. IL: What makes Laguna Beach a special place to live and work? JC: I interned in Laguna Beach while at culinary school and started my career almost 20 years ago. I also got married here 10 years ago. Of course, the beaches are amazing. There are many great restaurants, and it still has a small-town vibe. IL: Where can you be found on your days off? JC: My wife was born and raised in Laguna Beach. She loves to take our daughters to Victoria Beach, where she went as a kid and the Sawdust Festival. I love to golf on my days off, so local courses such as Oak Creek, Monarch Beach, and, of course, The Ranch (Ben Brown’s) are favorites. I also like fishing around and outside of Laguna Beach.

Fabian Sanchez Chef de Cuisine, Oak Laguna Beach Chef Fabian Sanchez started cooking at home at an early age. He worked at several restaurants before beginning as a line cook at Oak Laguna Beach when it opened in 2017. His experience, dedication and love for the kitchen led to his promotion to head chef of the popular Laguna Beach restaurant. As head chef, Sanchez leads his team in ensuring it has all the tools necessary to execute delicious, quality dishes and provide the top-notch service for which the restaurant is known. ICONIC LIFE: How long have you been based in Laguna? Fabian Sanchez: I have worked in Laguna since the restaurant opened in 2017. It has been a fun ride, for sure. There have been many challenges to overcome, and in successfully doing so, we have contributed to a great community that loves and appreciates Oak and the staff. We find success in catering, participating in local events, and serving residents and tourists while making them feel at home. IL: What do you enjoy most about working at Oak? FS: I love everything about it, from the great kitchen team (we communicate and get along well) to the front of the house being great team players helping provide guests with excellent service. I love that all our ingredients are fresh and that everything we make is made in-house. IL: What are your favorite things to create in the kitchen? FS: Salads and everything that has to do with vegetables and fresh foods. One of our most popular dishes is the ceviche, a personal recipe. I remember coming to work one day and bringing some of my ceviche that I had made at home, and everyone at Oak loved it. The managers and owners then decided it needed to be on the menu and named it “Chef Fabian’s Ceviche.” IL: What are your favorite ingredients and/or signature dishes? FS: Some of my favorite items to cook are the Oak Street meatballs with tomato sauce and mozzarella cheese (which have been a menu staple since day one), our signature

Grilled Shrimp Tacos that bring the ocean to your plate, and our famous Oak burger made with wagyu beef and our special secret sauce. Our burger was recently voted Burger of the Month by the Orange County Register. These ICONIC dishes make people want to come back again and again. IL: Do you have local purveyors that you’ve befriended and trust? FS: I have a great friendship with our protein purveyor; he has been with us ever since the restaurant opened. His name is Marcos, and he’s always bringing the best quality meats in the market for us to serve to our guests. IL: What makes Laguna Beach a special place to live and work? FS: It’s the people because they’re the ones who make everyone feel welcome in this beautiful city. The beaches are another reason it is so special. Nothing is better than enjoying a delicious dish at Oak with a breathtaking view and cool ocean breezes. IL: Where might you be found on your days off? FS: With my family, at the beach, or enjoying Sunday Brunch & Beats at Oak.

Omar Pineda Executive Chef, Starfish California Chef Omar Pineda’s culinary career in Southern California spans more than 30 years. He currently oversees the culinary teams at Starfish California’s Laguna Beach and Newport Beach locations, as well as the company’s quickly growing Coastal Catering division serving Orange and Los Angeles counties. Before joining the Starfish team in January 2023, Pineda was the regional executive chef for PF Chang’s, responsible for more than 30 locations. ICONIC LIFE: What do you love most about your work at Starfish? Omar Pineda: I love the culture, atmosphere, team collaboration, and the infinite possibilities of brand growth through our unique guest relationships. IL: What makes Laguna Beach a special place to live and work? OP: Laguna is surrounded by beauty, amazing beaches and stunning views. The longstanding relationship with our community, including all our locals and annual visitors, creates a unique dynamic. Now overseeing the two restaurants, I happily commute between locations, enjoying the scenery along the Pacific Coast Highway. IL: What are your favorite things to create in the kitchen? OP: Making sushi and creating traditional Asian dishes. IL: Where might you be found on your days off? OP: I like to relax at home, and one of my greatest joys is seeing my son play baseball. Architecture Embark on a captivating journey through the creation of this Laguna Beach gem— artfully influenced by the timeless spirit of Frank Lloyd Wright’s Fallingwater. By Sam Micatrotto Photography by Darlene Halaby

S

ometimes, the freshest designs have roots in the past. For one Laguna Beach client, the ICONIC Fallingwater residence designed by Frank Lloyd Wright in Mill Run, Pa., inspired the design of a beach house perched above the ocean below. The project began in 2008 and just recently saw its completion by the dream team of Sandra Vila, Rob Williams, Andrew Williams and Daniel Stewart. “Overall, the goal was to modernize what Frank Lloyd Wright did with Fallingwater and ultimately pay homage to his work. We wanted to strike a balance with how we live today and bring the house to scale,” Rob Williams, principal and lead designer of Studio 6 Architects, says. It took nine years until the house went under construction. During that time, they worked on bringing the design into the modern era with the collaboration of the client. The project team was looking for greater expertise to bring this MidCentury Modern design to life. In 2019, Sandra Vila, the founder and principal designer of Sandra Vila Design House, joined the team with an understanding of what the home needed to fulfill the vision.

With a diverse background in marketing, design and fashion, Vila’s signature lies in her ability to transform milieus of any style or genre into one-of-a-kind living spaces. “She presented her ideas to the client and just blew us all away,” Rob Williams says. With her intuitive blend of color, form and materiality, she orchestrated a refined and balanced design. Nestled in the coastal enclave of Laguna Beach, where the ocean’s majesty meets rugged cliffs, this residence stands as a testament to artistic ingenuity and architectural brilliance—a true embodiment of California’s coastal lifestyle while paying tribute to one of history’s most ICONIC homes. Due to the site’s exaggerated slope, “We opted for a step-down design and incorporated a daylight basement to take advantage of the incredible views. There are now almost 180 degrees of ocean visible from all levels of the house,” Rob Williams points out. “We demolished an existing structure, removed 250 truckloads of dirt, then built this home. It was especially challenging given the access to the site,” Andrew Williams recalls. “The heavy equipment operator put it best, ‘This is like building a ship in a bottle.’” The horizontal lines, stone overhangs and cantilevered roof design perfectly capture the essence of the warm contemporary style of the Fallingwater design. The home’s organic style and innovative engineering have paid tribute to the icon of modern architecture, Fallingwater.

“The goal was to design a home for today’s modern, coastal California lifestyle while paying respect to key details of the original Fallingwater house that the homeowners were inspired to recreate,” Vila says. “One of our favorite design aspects was incorporating a lighter, more contemporary color palette that still felt warm and inviting.” “In the Fallingwater home, and ours, we utilized a cantilevered design that plays with the horizontal aspects of the house and takes advantage of all the views from the property,” Rob Williams adds. Builder Andrew Williams also said this build was a once-in-a-lifetime opportunity for him. “Building a custom home is an intrinsically coarse and irregular feat that, when done well, brings good results,” he says. “This one is different. The resulting dynamic force from this collection of qualified professionals created a nearly perfect home. It’s all about the architecture and the client experience Studio 6 knew they were creating. After that, everything fell into place.” As for the interior, a unique mix of bleached walnut, natural stone and large-format Italian brushed ceramic tile enhances the timeless yet modern feel of the home. The 14-foot-high ceilings, clerestory windows and squared-off interior soffits add a special touch, giving the house a distinct and contemporary ambiance and setting it apart from its original style. Infusing luxury into the design without compromising on the client’s needs and aspirations was a feat gracefully achieved by Vila. Through collaboration and meticulous attention to detail, the design team created statement pieces that resonate with the homeowners’ tastes, such as a custom-tiered walnut and olive wood vanity inspired by an original Frank Lloyd Wright table for the powder room with hidden storage for toiletries and plumbing access that Vila designed. Nature-inspired surface-mounted lighting reminiscent of Fallingwater’s organic details further highlight the bond between nature and geometric design. “One of the most memorable experiences on the project was the interior design presentation,” Vila reminisces. “It was the first time we proposed to the client, architect and builder the concept of having the interiors epitomize a modern twist on the architectural style. From the organic finish materials to the nature-inspired lighting to the clean-lined timeless furnishings, the client told us we nailed it.” Tilework from Artistic Tile and Syzygy, which Vila sourced, is also reminiscent of Fallingwater’s detailing that inspired this design. Examples included carved limestone in the wine cellar, curved eaves in the powder room and unglazed footed bowls in the master bath. Semiprecious Tiger Eye stone was used on the island in the 2,000-bottle wine cellar. Hypnotic quartzite, with its beautiful warm tones and random pattern, was chosen for the bar to draw in the Fallingwater red window trim color. Vein-cut onyx was selected for its linear representation of the earth for the primary bathroom countertops.

“The owners were very receptive to our ideas for the interior finishes and furnishings,” Vila notes. “Understanding that this home was an opportunity to infuse their tastes into a specific architectural style, the goal was to embody a very specific design style while still providing comfort and functionality.” The home’s decor is a harmonious reflection of the homeowners’ personalities, with a diverse collection of artwork and cherished mementos from their travels thoughtfully displayed. Furnishings by Joseph Jeup, Altura, and A. Rudin were selected to complement the owners’ memorabilia. Hand-plastered wallcoverings from Holly Hunt, Maya Romanoff, Scalamandre and Phillip Jeffries adorn the walls, adding a tactile component. Luxe performance textiles, carefully chosen to withstand the coastal environment, contribute to the warm, neutral backdrop, allowing pops of the owners’ favorite colors to accentuate the home. The Fallingwater residence captures the essence of timeless design and the majesty of the Pacific Ocean. This Laguna Beach abode embodies the very spirit of Vila and Rob Williams’ artistic mastery and passion for creating environments that transcend time. With each element carefully chosen and every detail thoughtfully crafted, this home is a living masterpiece that stands as a testament to the magic that can be created when talent, vision and creativity converge.

here’s no question that the world of wine is set on a foundation of sophistication and luxury. Kerr Cellars wine is a prime example of refinement and quality at the highest level. What started as a mission to raise money for breast cancer research blossomed into a distinguished winery with a goal of excellence and merit in every bottle. Cristie Kerr, LPGA golfer and founder of Kerr Cellars, fell in love with wine while on tour and visiting Napa Valley in 2000. Her passion for it grew stronger as she continued to travel around the world and indulge in wine from various countries and cultures, learning about the winemaking process and what separates a good glass of wine from a great one. “Being a professional golfer, you get to travel around the world,” Kerr says. “On tour, I was able to learn about wine from South America, France, Spain, Australia, Italy, Germany, Switzerland and almost to the farthest reaches of the world. Wherever I would go for golf tournaments, I’d learn about wine in the local environments and heightened my love for wine.” Kerr was inspired to embark on a wine journey herself to curate impeccable wine appreciated and recognized for its unparalleled quality. In 2007, Kerr teamed up with Suzanne Pride Bryan of Pride Mountain Vineyards to create Curvature Wines with the sole purpose of donating 100 percent of the proceeds towards breast cancer research.

“Being able to go to all these different places and see how people make their wine and how hard they work was really inspiring to me,” Kerr says. “ When the Pride family asked us to come out to their winery, my husband, Eric, and I couldn’t believe somebody showed interest in wanting to do this with us. In May 2008, Eric and I met with Suzanne Pride Bryan, and she almost tried to talk us out of getting into the wine business. “When I told her I wanted to make 100 cases of a very high-end Napa Valley Cabernet and give 100 percent of the proceeds to cancer research, she looked at me and said, ‘ I’m a breast cancer survivor.’ It gave me chills. My mother was diagnosed with breast cancer, and it shook our family to the core. When Suzanne found out I wanted to raise the money for research, it changed the direction this whole conversation was headed because it was not headed in a direction where we would have our start in wine prior.” Curvature Wines delivered beyond the initial goal, and the brand raised more than $350,000 for breast cancer research. “I was so surprised by Curvature’s success,” Kerr says. “ We raised so much that we created a grant for breast cancer research at Stanford Hospital from the profits.”

The continued success of Curvature Wines solidified confidence in Kerr about the viability of a for-profit wine brand, and thus, Kerr Cellars was created. Established in 2013, Kerr Cellars has grown to offer a variety of wines sourced from vineyards on the Sonoma Coast and Napa Valley and offer a wine club. Kerr Cellar’s philosophy hones in on the importance of quality over quantity, with all its wines receiving a score of more than 93 points. Its most esteemed wine is the 2019 Wappo Vineyard Cabernet Sauvignon, receiving 97 points from accredited wine critic James Suckling. “You don’t cut corners. You source from the best vineyards to make the best wine. You use the best glass, make a beautiful label, use the best capsules,” Kerr explains. “I didn’t name the wine after myself because, as a professional athlete, I wanted people to judge the wine for what it was (is), not for who I was.” With recognition from Wine Spectator and its wine poured for diplomats at the White House, Kerr Cellars has established a reputation for opulence and luxury. Kerr’s passion for wine not only changed the lives of others with her foundation, which Curvature continues to contribute to but also made her a driving force in the niche community of fine wine.

hilly winter weather means indulging in winter soups and stews. We’ve gathered some tips and recipes for making the most delicious and soul-comforting recipes. There is a wide variety of delicious soups and stews that can be made at home—from classic chicken noodle soup to regional favorites like gumbo and pozole. “There is something so wholesome and soothing about chicken soup,” Debbie Kornberg, cooking coach and owner of Spice + Leaf, says. “It has a calming effect, as it nourishes the body and soul.” One of the most comforting winter soups is classic chicken noodle, and Kornberg offers tips for making it at home. “Our secret ingredient is flanken, which is Yiddish for cut beef short ribs. We also add carrots, celery and leeks. You can elevate the humble chicken soup by adding spices like turmeric or dill. Just remember to skim the fat off the soup,” Kornberg says. We’re also huge fans of regional winter soups. Gumbo, which is derived from the West African word for okra, is a Southern favorite with many variations and influences, including French and Native American. Commander’s Palace, one of New Orleans’ most ICONIC restaurants, has served gumbo for many years. “My favorite thing about gumbo is the different interpretations you can have all over the Southern region,” Meg Bickford, executive chef at Commander’s Palace, says. “You can go to anyone’s home and find a different style of gumbo simmering on the stove. It’s amazing how each gumbo can be so different, but it’s what brings our communities together.” On the heartier side of winter soups is the French stew beef bourguignon. Chef Vincent Guerithault of Vincent on Camelback in Phoenix has been making this classic dish for decades. He serves several types of soup at his restaurant, including lobster bisque and butternut squash soup and offers advice for making soups at home. “Soups are a great way to use leftovers. Many soups are stock based, others are cream based and some are vegetable based,” Guerithault says. “If you think about a soup as having one of these bases, it’s easy to pick a direction and get creative with ingredients you have at home. Add a little paprika and a pinch of cayenne, and you can elevate a winter soup that’s served hot with a different kind of heat.” Keep reading for recipes to help you make some of our favorite winter soups, courtesy of these awesome chefs.

CHICKEN AND ANDOUILLE SAUSAGE GUMBO COMMANDER’S PALACE

INGREDIENTS ¼ cup vegetable oil 3 pounds chicken cut into medium sized pieces 1 pound Andouille sausage cut into 1/4” discs 2 tablespoon Creole seasoning 1 cup vegetable oil 1 ¼ cup flour 1 pound onion, medium diced ½ pound celery, medium diced ½ pound green bell pepper, medium diced ½ cup garlic, minced 1 teaspoon cayenne pepper 1 tablespoon salt 4 bay leaves 3 quarts chicken stock 3 green onions, cut thin on the bias 1 tablespoon Filé powder Additional seasoning as needed

METHOD

Place a large, heavy soup pot on the stove over medium high heat for four minutes. Pour in ¼ cup of vegetable oil and swirl to coat the pan. Season the chicken on all sides with the Creole seasoning and brown in the pot in small batches to ensure it’s evenly browned on all sides. When the batches of browned chicken come out of the pot, let them rest on a plate or serving platter to catch any juices. When chicken is done browning, brown all the sausage and render for three to four minutes to release all the smoky fats into the pan. Remove the sausage and let it rest with the chicken. To the pot, add the additional one cup of oil and shake in the flour to start making the roux. Using a heavy, square nose wooden spoon, continually scrape all the brown pan drippings into the roux to begin the gumbo. Constantly stir over medium high heat until the roux becomes the shade of peanut butter. At this point, carefully stir in the onions, celery and green bell pepper and continually mix as the vegetables start to release steam and caramelize into the roux. When vegetables are wilted and slightly brown, stir in the minced garlic, cayenne, salt and bay leaves, and continue to cook for one minute until flavor is released and pungent. Slowly add the stock while stirring constantly so the gumbo starts to thicken without forming roux balls. When the stock is added and the sauce is smooth and shiny, add the chicken back to the pot and bring to a simmer. Skim the pot free of all fats and foam and reduce the heat to low. Continue cooking the gumbo by stirring occasionally and skimming as needed for 50 minutes. Add the sausage, green onions and any additional seasonings as necessary such as Louisiana hot sauce and Worcestershire. Remove the pot from the heat and shake in the file’ powder to finish. Optional to serve with rice.


BEEF BOURGUIGNON VINCENT GUERITHAULT

INGREDIENTS 1 pound beef top round cut into 1-inch cubes 1 cup red cooking wine 1 quart unsalted beef or veal stock 1 cup pearl onions 1 cup sliced portobello or cremini mushrooms 1 cup peeled and sliced carrots 1 tablespoon olive oil 1 tablespoon unsalted butter 1 teaspoon tomato paste 1 teaspoon all-purpose flour Pinch of dried thyme, dried rosemary, salt and pepper

METHOD

Season beef with thyme, rosemary, salt and pepper and sauté on high heat with olive oil until browned. Add wine and reduce for two to three minutes. Add beef or veal stock and cover with lid, simmering for at least two hours. Add pearl onions, carrot and mushrooms and return to low heat for 30 minutes. In a separate pan, melt butter and add flour on medium heat. Whisk while bubbling for 30 seconds. With a ladle, add one cup of stock liquid from simmering beef, whisking in to blend the flour. Add tomato paste and whisk. Pour thickened tomato stock mixture back into simmering beef pot and bring to a boil while stirring. Serve with mashed potatoes or gratin dauphinois.

TRADITIONAL CHICKEN SOUP DEBBIE KORNBERG

INGREDIENTS 1 whole chicken with skin 1 pound flanken (beef short rib) ½ pound carrots, cut into coins or use baby carrots and keep whole 2-3 celery stalks, chopped 2 onions, medium, chopped 2 leek stalks, cleaned and chopped Salt as needed 1 tablespoon dill leaves (optional) 1 teaspoon ground turmeric (optional) Vermicelli egg noodles (optional)

METHOD

Place the whole chicken and flanken into a large pot. Add enough cold water to cover the chicken. Slowly bring to a simmer and continue cooking for about two hours. After two hours, check chicken with a wooden spoon. If the chicken breaks easily, it is fully cooked. Otherwise, continue cooking chicken until it reaches this point. Next, using a slotted spoon, skim the fat off the top of the soup. You can discard it or save it in a jar and use as a cooking butter/oil alternative. Keep in the refrigerator. Add carrots, celery, onions and leeks to soup. Note: It is important to carefully clean each leek by slicing it down the middle and rinsing with water to ensure all of the soil has been removed. Optional: For additional yellow color and flavor, add turmeric to soup. For additional herbal notes, add dill. Continue to simmer for an additional 30 to 60 minutes. It is ready to serve but is best the next day when all of the flavors have settled in together. Remove the chicken, flanken and vegetables from the soup before serving. For extra comfort, add cooked vermicelli egg noodles to soup when ready to serve. Salt as needed.

id you know that building a home is considered the third most stressful life event? For custom homes, add 18 to 36 months of planning, design and construction, as well as common issues such as being over budget or behind schedule, requiring an overwhelming number of decisions and uncertainty of how to establish a budget that includes each aspect and amenity. One begins to wonder if it is possible to optimize this process to make it less risky, more rewarding and enjoyable. It’s a similar situation that Keith Galbut and his wife, Becky, faced when building their home and it’s what led to the founding of Advocate - Residential Construction Advisors. A practicing lawyer with a focus in business and construction advisory for approximately 20 years, Galbut knew all too well the challenges clients so often see in building their luxury dream homes, which led him and the Advocate team to develop a “master plan” to ensure a smoother, less risky, more cost effective and enjoyable process. “This process of building a luxury home should be an enjoyable experience that is fun, productive, creative and centered around camaraderie, teamwork, and high productivity,” Galbut says.

That might sound unattainable at first, but Advocate works to make it feasible with three overarching objectives: 1). Thoroughly determine the homeowner’s objectives; 2). As Galbut says, the biggest reason challenges arise in homebuilding is due to losing sight of the original objectives: “The surest way to create disconnect between the earliest objectives and how things evolve is by not being disciplined to that original strategy.” He notes, “Building a custom home is certainly not for the faint of heart – it takes a lot of work from engineering,

design, and construction means and methods. When all these extraordinary minds are focused on the client’s best interest, some tremendous results are created.” By having Advocate at their side, the homeowner’s objectives are made the center of every team members’ goals, whether it be the designers, architects, or builders. This provides a focal point for the entire team to work from, goals for the team to work toward and allows Advocate to serve as a single point of contact and driver of the timeline. M

odernist spec homes in the Greater Phoenix area usually have “safe” designs—lots of white, a few glass walls and all the amenities that the real estate market demands.

However, a recently built 7,100-square-foot spec home in Paradise Valley pushes the envelope with its minimalist design and narrow market focus. Created by a talented team that includes architect Erik Peterson, interior designer Meredith Smyth and landscape designer Jeff Berghoff, the residence has been dubbed the “Museum House” for its airy simplicity. “This house definitely has a bachelor pad vibe to it,” says Peterson, principal of Scottsdale-based PHX Architecture. “Because my firm also has an office in Beverly Hills, we’re seeing a lot of that look in the Los Angeles area, which we thought would translate well to Arizona.” “This really isn’t designed as a family home,” echoes Smyth, who, along with Peterson, worked with developer Paramount Building Solutions and builder Sapanaro Development on the project. “I see the potential buyer as a super-entertainer, a super-host who’s well-traveled and throws large events.” Presented with an empty, flat lot in a long-developed neighborhood, Peterson noted that the corner lot had mountain views on two sides but next-door views of a neighbor’s tennis court. “To get the views and maintain privacy, we reversed the plan,” Peterson explains. “The backyard faces the street, and the free-standing casita provides privacy. You drive around to the front.” The architect designed an H-shaped plan for the house, with an entry courtyard flanked by the garage and primary suite wings and the backyard anchored by a zen-like swimming pool. “The central core, which is the kitchen, dining and living areas, are pretty much all glass,” Peterson says. “The glass walls and doors go up 13 feet high and have a very thin aluminum framing system that’s virtually invisible, which blurs the line between indoors and out. The natural light here is spectacular,” he says. Peterson went with bright white walls inside and out, something he could do in this setting as it was nestled into an established neighborhood and not on a desert lot, where blending into the landscape is necessary. Inside, Phoenix interior designer Smyth of Smyth House played up the simple architecture with a well-edited choice of finishes, materials and millwork. “The look is clean and simple, but it’s also warm and hand-crafted,” she points out.

Flooring in the main spaces are agglomerate marble, a terrazzo-like material that lends a subtle sheen to the setting, contrasted by the warmth of the kitchen’s rift-sawn white oak cabinetry. Hand-crafted concrete tiles clad the fireplace mass that separates the living and dining areas, while the high ceilings are clad in wood, adding an organic touch to the interior. The open kitchen is perhaps the piéce de résistance of the interior, featuring a generously sized, quartz-clad island and back counters with windows overlooking a small courtyard marked by mid-century modern style metal screens. “This kitchen has no upper cabinets,” says Smyth. “Everything seems hidden behind cabinetry doors, yet it’s fully functional. But the real workhorse is the large back kitchen, which has full-size appliances and a huge display cabinet for serving pieces that’s perfect for a caterer.” Smyth staged the home with stylish furnishings that appear to be collected over time, mixing in touches of wood, stone and metal and choosing upholstered pieces with curvaceous lines as a counterpoint to the home’s rectilinear lines. For a glass-walled flexible room just off the main living area, Smyth chose to show it as a den. “This could easily be an office, too,” she remarks. “This is not a ‘safe’ spec home that most developers would take on,” Peterson concludes. “We did narrow the scope of the market for most spec homes, but we are appealing to a sophisticated buyer.” The current listing price is $10.3 million.

We talked with Chef Alex Stratta to find out what he likes to serve at a party. Plus, he shared some down-to-earth advice on making parties lovely every time. Chef says, “Know your guests and their preferences. Knowing what your guests enjoy and remembering that they are vegetarian or gluten-free, for example, shows a great level of care. Create a theme for your party, even if it’s subtle. It will guide your decision-making on which foods work well together, what beverages to pour and how to create inspired decor.” To avoid stress, plan menu items that don’t require much last-minute attention. Always balance fish, meat and vegetable options to suit every palette. Make sure that drinks

and food are served at the correct temperature. Pre-chill bubbles and white wine at 49 to 55 degrees F, slightly warmer than refrigerator temps. Red wines should be slightly cooler than room temperature, around 68 degrees F. Take the time to make or buy good, purified ice. Crystal clear ice balls are best for single-liquor cocktails. “My days in fine dining taught me to always have spotless stemware. This is not a job for the day of the party. When you are not in a rush, handwash your stemware in warm water with odor-free soap. Allow your glasses to dry on a rack and then polish with a polishing cloth,” he says. “Lastly, if you want to have the greatest success impressing your guests, keep it simple and elegant and do simple things well. DEVILED EGGS WITH SMOKED SALMON AND OSETRA CAVIAR (MAKES 24 CANAPES)

INGREDIENTS 12 large organic eggs ½ cup avocado ¼ cup crème fraiche 1 teaspoon red wine vinegar Salt and pepper

(MAKES 28 CANAPES)

RILLETTES 1 pound fresh salmon filet (bones/skin removed) 1 tablespoon olive oil ½ cup red onion ½ cup fennel ¼ cup Italian parsley ½ cup firm sour cream 2 tablespoons fresh-squeezed lemon juice Salt and pepper to taste

Place the eggs in a pot of warm water and boil for six minutes on a low simmer. Drain and chill in iced water until cold. Peel the eggs and cut them in half vertically. Remove 1/8 inch of opposing sides of the egg (so they don’t slide). Gently remove the cooked yolk and separate the cooked yolks from the whites, refrigerate the whites to drain and cut the side down of each egg on an absorbent towel. Place the cooked yolks, cubed avocado, crème fraiche, vinegar and seasonings in a food processor and blend well until smooth. Once the mixture is smooth and creamy, place in a plastic piping bag and refrigerate until needed. Once chilled and the whites have drained well, cut the piping bag ½ inch from the tip and overfill the whites with the purée.

GARNISH 4 ounces Scottish smoked salmon 2 ounces Osetra caviar 2 tablespoons chives (minced) Working with the 24 egg halves with piped filling, drape a slice of salmon on the egg and garnish with a small rounded spoon of caviar. Finch the top with minced chives.

Cut the salmon into 2- to 3-inch pieces and place them in a bowl. Coat lightly with olive oil and season. Place on a baking dish and spread out to an even layer. Cook for eight minutes at 350 degrees F in a convection oven, cool and reserve. Dice the onions and fennel to 1/4-inch dice, coat lightly with oil and season. Cook slowly in a heavy pan over low heat until soft and translucent. Cool and reserve. Combine the cooked salmon with the vegetables and fold in the remaining ingredients, squashing by hand until smooth. Cool and refrigerate and cover for at least three hours to come together.

Toss the whole thighs in the ingredients and store them in a shallow container with plastic wrap pressed against the meat. Cover tightly with additional plastic wrap. Refrigerate for up to three days. Heat a grill to medium heat and season the marinated chicken well with salt and pepper on both sides. Gently grill chicken to an internal temperature of 150 degrees F and allow five minutes for the chicken to rest on a rack. Refrigerate until thoroughly chilled (about four hours) and dice into 3/8-inch cubes. Refrigerate again until needed.

Combine all prepared items in a mixing bowl and stir with a spatula (or spoon). Mix well and season with salt and pepper. Refrigerate for one to two hours. Serve on crostini, crackers or mini toast. For gluten-free, serve on endive leaves. ICONICLIFE.COM

CHEESE PUFFS (MAKES 40 BITES)

INGREDIENTS 11 ½ cups whole milk 4 ounces whole butter 6 ¼ ounces AP flour 1 teaspoon salt 1 teaspoon granulated sugar 1 teaspoon white pepper 5 whole eggs 6 ¼ ounces grated Manchego cheese

METHOD

Simmer water with butter, sugar and salt and add flour in a slow and steady stream. Stir over medium heat for four minutes. Place the warm paste in a mixing bowl fitted with a paddle and mix at medium speed. Add eggs one at a time as the dough incorporates. While the mixture is hot, grate the cheese and mix until the cheese has melted into the dough smoothly. Place dough in a piping bag and pipe in ½-ounce dollops (the size of a chestnut) onto a baking dish fitted with a piece of parchment paper and cool. Once the portions have cooled, roll them into even balls and, place them on a half-baking sheet fitted with a silpat* and refrigerate (or freeze) until needed. Preheat a convection oven to 450 degrees F with a high fan, and bake the cheese puffs for five minutes. Turn the fan to low, lower the temperature to 350 degrees F for two minutes, turn the sheet pan, and then another two minutes or until evenly golden brown. Serve warm or at room temperature. *A non-stick baking sheet made of food-safe silicone and fiberglass mesh

CHOCOLATE BUDINO (MAKES 12)

INGREDIENTS

VANILLA CREAM

2/3 cup granulated white sugar 2/3 cup Dutch-process cocoa powder 4 tablespoons cornstarch ¼ teaspoon salt 3 ½ cups whole milk ½ cup heavy cream 8 ounces bittersweet chocolate, finely chopped 2 teaspoons vanilla paste 2 tablespoons dark rum

1 pint heavy cream ¼ cup powdered sugar 2 teaspoons vanilla paste

METHOD

Whisk sugar, cocoa, cornstarch and salt in a two-quart saucepan. Slowly add milk and cream, whisking constantly. Bring ingredients to a simmer over medium heat. Cook, while whisking, until thickened and beginning to bubble at the edges of the pan (about 12 to 15 minutes). Add chocolate and stir until smooth (about 30 seconds). Remove from heat, then stir in vanilla and rum. Divide between 4-ounce ramekins, cover with plastic wrap and chill until set (about 1 1/2 hours).

METHOD

Place the chilled cream, sugar and vanilla into a mixer with a whisk attachment and stir slowly to combine ingredients well. Turn up the speed and whisk until it forms firm peaks, then place in a piping bag and reserve refrigerated until needed. Pipe the vanilla cream over the set chocolate mousse and garnish with a dusting of cocoa powder.

GRILLED NAAN CROSTINO INGREDIENTS 8 8-inch fresh naan breads 2 tablespoons extra virgin olive oil Salt to taste Get a grill hot and lightly brush bread with olive oil and grill on both sides until toasty. Chill on a rack, cut into 1/8 wedges of round bread and use as a canape base.

GARNISH 1 cup navel orange segments drained well 1 cup fennel (thinly sliced and chilled on ice, drain well) 8 red radishes (thinly sliced and chilled on ice/drain well) Italian parsley (picked leaves) 1 teaspoon lemon juice 2 tablespoons extra-virgin olive oil Salt and pepper to taste 1 pint salmon rillettes 28 triangles of grilled naan crostini

METHOD

In a chilled bowl, mix the orange, fennel, radishes and parsley leaves. Season with lemon juice, olive oil, salt and pepper. Scoop about one ounce of salmon on each triangle and garnish the top with the dressed vegetables and orange segments. Serve chilled.

SERENGETI NATIONAL PARK

Tanzania has 22 national parks and several game reserves and conservation areas that occupy about onethird of the country. Each is a magical destination for nature and wildlife safaris. Many visitors also like to hike the tallest mountain in Africa, Tanzania’s Mount Kilimanjaro. I love the beaches, culture and history of Tanzania’s famous and exotic island, Zanzibar.

Serengeti National Park is in northern Tanzania and is unequaled for its natural beauty. Serengeti means “endless plains” in the Maasai language. It is one of the world’s most celebrated wilderness areas. Year-round, the Serengeti is a photographer’s and naturalist’s paradise, with abundant elephants, buffalo, giraffes, lions, cheetahs, leopards, rhinoceros, hippopotamus, crocodiles, and migratory wildebeest and zebra. The park is also home to more than 450 bird species.

The Republic of Tanzania was formed in 1964 with the union of Tanganyika and Zanzibar. Julius Nyerere was the first president of Tanzania. He helped bring 120 tribes together and establish a national language, Kiswahili. Many credit him with creating the unified Tanzanian national identity. Samia Suluhu Hassan is the current president. She is the country’s first female president and the first president born in Zanzibar.

One of the greatest spectacles in the natural world is the “Great Migration of Wildebeest” and other grazing herbivores across the Serengeti-Mara ecosystem. I soaked in the beautiful terrain and nonstop parade of animals consisting of over one million wildebeest, some 250,000 zebras and countless Thompson’s gazelles.

Now, let’s get there and explore! Most guests fly into either Kilimanjaro International Airport (IATA airport code: JRO) near Arusha and Moshi or Julius Nyerere International Airport (IATA airport code: DAR) near the coastal city of Dar es Salaam. 136

The migration is usually in Tanzania for nine months (mid-October to mid-July) and Kenya for about three months (late July to early October). Once you pick your travel dates, it’s time to choose the best lodge with a prime location so that you are likely to be closest to the Great Migration of The Wildebeest.

NGORONGORO CONSERVATION AREA

In northern Tanzania, the Ngorongoro Conservation Area is named after the Ngorongoro Crater, Earth’s largest intact volcanic caldera. Due to its enclosed geography, wildlife does not migrate here. The Ngorongoro Conservation Area has become a natural sanctuary for some of Africa’s densest populations of large mammals. The conservation area also contains Olduvai Gorge, one of the most important paleoanthropological sites in the world, made famous by the work of Louis and Mary Leakey, famous archaeologists.

TARANGIRE NATIONAL PARK

In northern Tanzania, with the lovely Tarangire River, Tarangire National Park is famous for its giant elephants and many majestic baobab trees. Other wildlife includes zebras, gazelles, elands, impalas, giraffes, buffalo, dik-dik, African wild dogs, cheetahs, leopards, lions, olive baboons, wildebeest, and more than 550 species of birds.

In southern Tanzania, Ruaha National Park is the second-largest national park in East Africa. Ruaha has the largest concentration of elephants here, with a population of nearly 10,000. Plus, Ruaha is home to 10 percent of the global lion population. Other native animals include leopards, cheetahs, zebras, elands, giraffes, impalas, bat-eared foxes, snakes, crocodiles, and jackals. Ruaha is a spectacular destination with a low visitor count of about 20,000 per year.

NYERERE NATIONAL PARK

Established in 2019, Nyerere National Park was formed by taking over the northern part of the famous Selous Game Reserve. Located in southeastern Tanzania, Africa’s largest national park boasts one of Tanzania’s largest concentrations of wildlife. The park has yet to be frequented by many guests, making this destination a hidden gem. The park is remote, pristine and unspoiled. Here, the great Rufiji River—the largest river in Tanzania—has a healthy population of hippos and crocodiles. Exciting activities include riverboat safaris through channels, lagoons and swamps to spot wildlife. The park is also home to a traditional village that provides cultural exchanges and insights into the local people’s special and unique way of life.

MAHALE MOUNTAINS NATIONAL PARK

Set among the spectacular, forested slopes of the Mahale Mountains, the Mahale Mountains National Park was created to protect the hundreds of chimpanzees that inhabit the region. Mahale contains nine other primates: two species of Galago—bush babies, vervet, silver and red-tailed monkeys, yellow baboon, Angolan, and red colobus, and the robust chimpanzee. Mahale Mountains National Park is renowned for its fantastic sunsets over Lake Tanganyika, the world’s second-longest and second-deepest freshwater lake. The lake is home to at least 400 species of freshwater fish, of which about 250 are cichlids and 98 percent are endemic. The park’s breathtaking habitats include a mosaic of overlapping rainforests, woodlands, bamboo forests, montane forests and mountain grasslands. The area contains at least 337 bird species, many rare and endemic to the Albertine Rift.

SINGITA GRUMETI RESERVE

I have saved the most exclusive and luxurious game, nature and lodging experience to talk about last—the Singita Grumeti reserve managed by the esteemed Singita group. Located in north Tanzania, adjacent to the Serengeti National Park, the reserve is integral to the Serengeti-Mara ecosystem and can only be described as magical. The Tanzanian government created the reserve in 1994 to protect the path of the annual wildebeest migration and the indigenous biodiversity of this vast and vital ecosystem. In 2002, the Grumeti Fund was granted the right to manage and conserve the land spanning 350,000 acres. In 2006, Singita agreed to take over the management of the entire reserve. SHINING THROUGH TIME The Times Square Ball by Waterford Crystal, a beacon of opulence and a symbol of the world's most extravagant New Year's celebration. By Sam Micatrotto

A

s the clock strikes midnight on New Year’s Eve, the world holds its breath as all eyes turn to the dazzling spectacle unfolding in Times Square. It’s a moment of anticipation, celebration and sheer extravagance that has captured the hearts of millions for over a century. The ICONIC Times Square Ball is already an emblem of opulence, and the exquisite craftsmanship of Waterford Crystal makes it even more breathtaking.

CENTURY OF SPLENDOR: THE TIMES SQUARE BALL’S JOURNEY

Tourists and New York locals have been congregating in Times Square to welcome the New Year since 1904. But it wasn’t until 1907 that the inaugural New Year’s Eve Ball made its grand descent from the flagpole atop One Times Square. Crafted by Jacob Starr, a skilled immigrant metalworker, this first-ever ball was an exquisite fusion of iron and wood, adorned with one hundred 25-watt lightbulbs. Throughout the years, the ball has seen several transformations. In 1920, a 400-pound wrought iron ball replaced the original. By 1955, it morphed into an aluminum marvel weighing a mere 150 144

pounds. The 1980s saw a whimsical twist when it transformed into a glowing apple, symbolizing New York’s allure in the “I Love New York” campaign. But tradition reigns supreme, and in 1995, the ball regained its classic radiance with aluminum skin, rhinestones, strobes and computer controls.

ENTER THE CRYSTAL ERA: WATERFORD’S DAZZLING CONTRIBUTION

The turn of the millennium ushered in a new era for the Times Square Ball. In 2000, Waterford Crystal took center stage in the redesign, marrying cutting-edge lighting technology with timeless elegance. This crystalline masterpiece would mark the start of an exciting new millennium. Fast forward to 2007, the centennial anniversary of the ball drop tradition, calling for a luminous makeover. Modern LED lighting technology replaced incandescent bulbs, ushering in a new era of brightness and color. The spectacular Centennial Ball inspired the creation of a permanent Big Ball weighing nearly six tons and measuring 12 feet in diameter. Adorned with 2,688 crystal triangles illuminated by 32,256 LEDs, this monumental masterpiece now graces the New York skyline year-round, a beacon of splendor above Times Square.
