THE JOY OF SPRING

SKI SEASON T

his time of year isn’t yet spring, but it’s barely winter. It’s not holiday, but it is a season—ski season!

If there is a reason to love this time of year, it’s the joy of spring skiing—my kind of skiing! With long sunny days and often light winds; it’s the optimal way to enjoy this downhill sport, slightly on the warm side where you can open your jacket a bit once you get warmed up. I’ve skied Aspen, Park City, Deer Valley, Vail and Purgatory, and I find every mountain has its own personality. I fell in love with the concept of a “ski valet” in Deer Valley, and Aspen is perfect for celebrity spotting and high fashion. Vail is the long-time classic with European vibes, and Purgatory is just plain beautiful. Park City offers luxury and charm, and it’s a haven for snowboard lovers. No matter where you ski, the opportunity to be present and absorb the beauty is the reason to go. After living in Arizona for three decades, I find my time in the mountains a total escape.

What makes skiing such a beautiful sport is the exhilarating, crisp mountain air, the scenic vistas and long-range views of the valley below from the mountain top. Friends are made on the gondolas, and a long day’s effort is rewarded at après ski. I always feel food and drinks taste better by a fire in the lodge. (Don’t miss stories in this issue on proper fondue and warm cocktails.) Luxury brands have gotten in the game on the slopes, with Veuve Champagne luxury yurts. And ski fashion has kept up with the experience with luxe brands like Goldbergh, Moncler and Bogner making an entrance on the slopes. It’s THAT beautiful inspiration that drove our cover for this issue. We took an editorial approach to ski fashion, bringing our friends Balenciaga, Balmain and vintage Chanel to elevate the look. What started out as a fashion shoot with my incredible team (my favorite days as a publisher) ended with me hearing the irresistible call of the snowy slopes and stunning mountains to make plans to suit up and carve my own trail once again. Wishing you joy and safety on the mountains this year. May every adventure inspire you to take time to smell and savor the scenery, and as always, Live Beautifully.

CALA CREATIONS Chef Beau MacMillan does it again with his newest creation. By Kaitlyn Beickel

MacMillan brings his incredible experience and international-recognition to the new restaurant, creating innovative yet simple dishes with a focus on healthy and local ingredients. Cala’s menu includes handmade pastas, seafood and extensive wine, cocktail and beer options. “Cala is a place that guests will find themselves not wanting to leave; it’s vibrant with great energy creating an immersive environment with an experience that offers something for everyone,” says MacMillan. “We’ve intentionally created a modern establishment with a perfectly curated vibe and approachable food that is incredibly cared for alongside unforgettable cocktails.” 42

Working with a dream-team that includes MacMillan, General Manager Rob Mier, Executive Chef Peter McQuaid and cocktail curator Clint Spotleson, Cala has the ideal setup for creating bold and refreshing food and beverages. Cala and Sanctuary Camelback Mountain aren’t the only endeavors the acclaimed Food Network chef is undertaking—MacMillan also oversees culinary direction at Money, Baby! in Las Vegas, and he is the Director of Culinary Operations for Clive Collective. “We don’t do anything basic in the concepts we dream up at Clive Collective,” says Mikis Troyan, co-founder and managing partner. “Cala will be unlike anything else in Scottsdale, and we can’t wait to create memorable experiences for our guests.” Cala offers both indoor and outdoor seating options, located on the bottom floor of the Senna House Hotel, ​​a part of the Curio Collection by Hilton. The space is nearly 5,000 square feet, with a 1,750 square-foot exterior patio and a 40-foot patio bar complete with cabanas and lush landscaping.

rancis and Dionne Najafi are wellknown in our community for their generosity, and this one-of-a-kind inclusive, innovative, impactful global initiative will advance one of the United Nations Sustainable Development Goals to provide quality education for all. Thanks to a historic $25 million donation from the Francis and Dionne Najafi Global Initiative, Thunderbird School of Global Management at Arizona State University will offer an accredited online Global Management and Entrepreneurship Certificate, consisting of five world-class courses in 40 different languages. Of the 100 million learners, the program will reach worldwide, it is estimated that 70 percent will be young women. The certificate will be covered by full scholarships and thus no cost to students because of the philanthropic support undergirding the initiative. “Our lives were transformed by access to quality education at Thunderbird, and we wanted to extend that same transformative experience to people around the world who lack access to quality education,” says the

P

rivate Chef Stacey Weber, founder of EAT! By Stacey Weber, was exposed to the joys of being in the kitchen and appreciating food from a young age. Since 2007, she has offered private chef, and mealprep and delivery services with an emphasis on local, organic seasonal ingredients. While she cooks for many athletes and celebrities, it was her grandmother who helped her see the delight that cooking for others can bring, and she fondly remembers spending time with her while she cooked.

“My grandmother was an absolutely phenomenal home cook, and we got to spend every summer with our grandparents. Her desserts were so great,” Weber says. “She was an old-fashioned cook, there was a stick of butter in absolutely everything she made.” After reflecting on the joy that watching her grandmother cook had given her and studying abroad in Florence, Italy, she decided to devote her career to food. “I started cooking, and it came so naturally to me; I loved it. Still to this day, I get excited about flipping through a new cookbook and looking at the pictures,” she says. “I just knew that was the path that was meant for me, and every day I feel that passion and excitement about food.” Stacey Weber began her journey as a private chef in Arizona with the goal of providing support with easily accessible healthy foods. She helped develop a nutritious culinary program for the Arizona Cardinals as their Executive Chef, and she has worked with Larry Fitzgerald and his family for years. “I got connected with some really great local athletes,” Weber says. “It’s been really fun over the years getting to know the players and the organization, which I can’t speak highly enough about.”

After gaining experience as a private chef, she realized how high the demand was for healthy, nutrient-dense options for busy families. pioneer for modern-day food television personalities, American Chef James Beard was one of the first hosts of a food program in 1946. The James Beard Foundation was established as a nonprofit organization in honor of Beard and his lasting impact on the foodies of the world after his passing in 1985. Moon says that Beard’s culinary impact was so vast that Julia Child and other colleagues of Beard came together to save his West Village home in Manhattan. “They raised the money for the down payment, purchased the brownstone, which is known as the James Beard House, and formed the James Beard Foundation as a place to celebrate and further the culinary arts in America.” Today, the James Beard Foundation offers the finest culinary news to the foodie community with the mission to “celebrate, support and elevate the people behind America’s food culture and champion a standard of good food anchored in talent, equity and sustainability.” “About a decade ago, we added programs that are focused on how the culinary industry could help create a better food world,” says Moon. “Looking at environmental sustainability, looking at gender, I’m looking at supply chain, 52

“A different chef, as many as 200 nights a year, would come and perform at the James Beard House to really showcase their cuisine and their view on American food,” says Moon. “It’s a huge honor and something that grew to be known as the Carnegie Hall for chefs. Life In a Different Key This touching, award-winning documentary shares the story of autism and friendship, and illuminates how kindness can make the world a better place. By Kaitlyn Beickel

H

ow can kindness make this world better? How do we connect with those who are different? Who was the first person ever diagnosed with autism? In a Different Key, an award-winning documentary seeks to answer these questions with deep empathy, sharing the story of the now-elderly man in rural Mississippi to get insights into his life.

The movie is based on the book of the same name written by Peabody award-winning television news producer and 25-year ABC News journalist Caren Zucker and John Donvan, an Emmy Award-winning correspondent for ABC. “That book really was the culmination of a decade and a half of work that Caren and I did together at ABC News,” says Donvan. “After her son Mikey was diagnosed, Caren made a big career decision and stepped off the fast-track of TV news producing, but stayed on as a TV news producer with a focus much more toward telling the stories of people on the autism spectrum.” In Zucker’s efforts to inform the general public on what autism really is, she enlisted Donvan to help teach her audience the importance of acceptance and friendship for someone who is different.

“It’s hard to believe today, but in the 1990s autism was still a very unfamiliar concept to most people and Caren wanted to change that. She asked me to be her partner in telling stories about autism at ABC News,” says Donvan. “We created a beat called “Echoes of Autism,” and we did a lot of stories for Nightline, the Evening News and Good Morning America about the realities of life on the autism spectrum.” The duo learned all about the different facets of autism through research and consider the news stories they produced and storytelling through In a Different Key an incredible vehicle for positive change. “As a journalist, I felt like it was really a gift that I could do the research and get the stories out there,” says Zucker. “I was learning about it and simultaneously I was trying to share it with the world for people who are on the spectrum, for families, but also for everybody else who didn’t know anything about autism.” After the success of some initial showings of their movie, Zucker and Donvan are looking forward to a national release later this year. “The movie will be showing on PBS broadcast nationally in September and in the

meanwhile, we’re having some private sneak previews, one of them in Phoenix in May, to excite and get people inspired about seeing the film in the fall,” says Zucker. Zucker shares the spotlight in the movie, sharing her own experience with her son Mikey’s autism diagnosis. She didn’t know what the future would hold for her son, until she met the notable Denise Resnik, founder of the Southwest Autism Research & Resource Center, 25 years ago, creator of First Place Arizona, supportive housing for adults who have autism or other neurological challenges and all-around autism gamechanger on a national level. “I was so blown away with the community,” says Zucker. “Mikey is now a resident at a First Place and that is one of the stories that you learn about in the film, as well about my goal of finding a place in the world for him.” The movie has an important, yet simple message for the watcher—be ready and willing to be a friend to someone who is different from you. “Figure out what autism is and when you recognize that somebody you’re encountering in your life is autistic, be ready to be a friend, it’s really really that simple,” says Donvan.

METHOD

Place all the ingredients in a blender and blend on high speed to combine thoroughly. Let the blender run for about two minutes for a creamy-type Italian vinaigrette. Place any leftover dressing in a glass jar or cruet.

Combine all ingredients in a 12-ounce or larger jar with a tight-fitting lid. Cover and shake vigorously. As the vinaigrette sits, the chia seeds will swell and create a thicker texture. This is nice, because it helps the healthy salad dressing recipe to cling to the greens and allows you to actually use a lot less of it.

n the centuries and decades before metal, porcelain and resin became widely accessible materials for bathrooms, large wooden barrels were repurposed as bathtubs and basins in homes throughout the world. Durable and sturdy? Yes. Stylish? Not so much. Enter new, cooler luxury bathtubs.

“Why wood? It is not petroleum-based, casted or a refined product that involves massive amounts of energy to create,” affirms Katz. “We use FSC-certified hardwoods and have done lots of recycling and reclaiming of local trees for much of our work. At the end of the day, beautiful and timeless pieces are the most sustainable, because they don’t go out of style.” While Katzoff’s alchemy in transforming cool woodwork into a permanent fixture is top secret (after all, the best art always retains a sense of mystery), he discloses that the finished tubs are the product of a complex composite system that make the bathtubs functional, water resistant and able to withstand daily wear-and-tear. Any wood the customer wants, based on budget, can 64

be transformed into this lasting luxury—an exotic bathtub. “We first approached our tubs by coming from a place where we were interested in creating a visually striking sculpture that just happens to also be functional,” Katzoff explains. Although Katzoff’s focus on cool woodwork took shape in his adult life, he notes that from childhood forward he was interested in creating visual art as well as music. “I always had a good sense of proportion, color, space and design, without having had any formal education,” he says. “I continued this into my teens, as well as got involved with music and other creative disciplines. The road that led to my working with woods as a principal medium and delving into nature-inspired pieces originated with extreme sports trips I took with my friends later in my teens.”

Katzoff filled out his shop, NK Designs and Woodworking, by assembling a team of 25 artisans to work either in the design department or creating finished products which took shape as a profitable business focused on fusing art and practical design to specialize in what he calls functional sculpture. Beyond his Seattle gallery, Katzoff’s bathtubs are currently in six showrooms across the U.S. “From a wooden craft perspective, my work is informed by French stair builders and Norwegian boat builders,” he muses. “From an aesthetic standpoint, I find inspiration mostly in glass, metals and nature. I like to think our work lays somewhere in the shadows of Andy Goldsworthy, Victor Horta and Dale Chihuly.”

The ICONIC glass artist Dale Chihuly pays tribute to Frank Lloyd Wright and the Sonoran landscape in this dual Arizona exhibit. By Nora Burba Trulsson

B

eneath a concrete and stone bridge, a flock of amber-hued, heron-like glass spires rise gracefully from a shallow pool. Nearby, a grove of scarlet glass reeds and plump spheres punctuate the lawn in front of a low-slung building, their red colors echoing the structure’s architectural elements. The glass installations are by Dale Chihuly and can be seen at Taliesin West, architect Frank Lloyd Wright’s winter compound in the Scottsdale, Arizona desert. The installations are part of “Chihuly in the Desert,” an exhibition that marks the first time the internationally renowned artist has set his glowing, otherworldly sculptures against Wright’s architectural masterpiece, which is a National Historic Landmark and a UNESCO World Heritage Site. The six installations at Taliesin West reflect Chihuly and Wright’s common influences, including a love of nature, Japanese and indigenous art, and an instinct for organic design that reflects the environment. One of Chihuly’s installations, set on a landscaped prow at the edge of the desert, recalls the elongated forms of saguaros and the fierce spikes of agaves, while another, displayed on a low table inside what was once Wright’s living room, is a crystalline ode to Native American basketry, something both men admired. “Frank Lloyd Wright’s work and his approach to design have been an important influence on my artistic practice,” says Seattlebased Chihuly. “I’m excited to present my work against the inspiring architecture.” But “Chihuly in the Desert” isn’t just at Taliesin West. The exhibition, which runs through June 19, 2022, has a second, larger location a few miles away at the Desert Botanical Garden, where 13 installations are nestled into the landscape and several smaller works are displayed inside a gallery building.

It marks an unprecedented third time that the garden is featuring Chihuly’s art amidst its specimen cactus, mature desert trees and arid-region plants—and it’s not just a three-peat of the previous shows. This is all new, with brilliantly hued installations spread out along the Garden’s looping trails. It’s no surprise that Chihuly’s colorful, organic works are popular with audiences in Arizona and around the world—the artist has exhibited in Venice, London, Jerusalem and countless spots in the

United States, and his works are part of the permanent collection at museums like the Met and Smithsonian. Learning from traditional glass masters in Italy, Germany and Czechoslovakia as a youth, Chihuly turned that knowledge upside down to create his own art. He influenced a generation of studio glass artists through his Pilchuck Glass School, located north of Seattle. Not bad for someone who originally thought he wanted to go into textile design. But the desert—and both exhibit locales—are alluring to the 80-year-old artist. “I grew up surrounded by water in the Pacific Northwest,” Chihuly explains, “so working in deserts has a unique appeal. This opportunity to present my work in these two distinct environments is particularly interesting. It’s wonderful that these two Arizona organizations are working together to bring arts experiences to their communities.” ICONICLIFE.COM

uxury lifestyle group Tonino Lamborghini—yes, that Lamborghini—recently celebrated its 40th anniversary. Since its founding in 1981, the brand has brought its bold, avant-garde Italian DNA to multiple industries, reflecting the boundless curiosity and eclectic spirit at the heart of every member of the family.

in full lockdown, he realized that his grand plans to celebrate the 40th anniversary of Tonino Lamborghini would likely not happen, so instead he created a book honoring the brand’s heritage and journey. The coffee table book charts the evolution of Lamborghini’s business empire and the brand’s signature designs.

Ferruccio Lamborghini, the founder’s first son and current vice president and CEO, tells us that his family has always been involved in somewhat disconnected industries: tractors, cooling systems, cars, wine and now with Tonino Lamborghini, fashion, lifestyle, watches, food, beverage, furnishings and even residential buildings and hotels.

“When it comes to design, we always want to be cutting edge and we try to represent—through the products— our target customer, which normally is quite bold,” Lamborghini says.

“My father’s vision for the Tonino Lamborghini brand was always to propose a lifestyle brand,” Lamborghini says. “360 degrees for every moment of life.” He admits that everything doesn’t initially make sense together, but through the lens of curiosity, it does. “Curiosity is the key,” he says. He always tries “to look for something new and different, and to always feel hungry.”

ou may have seen Celebrity Chef Scott Conant on the Food Network as a judge on Chopped, the host of Chopped Sweets or co-hosting Beat Bobby Flay, but did you know he’s also the proud owner of three restaurants? We’re kicking off Dinner & Drinks with Conant at his Italianinspired steakhouse in Scottsdale, The Americano. The Americano offers an elevated yet approachable menu, with pasta, fine steaks, Italian antipasti and Mediterranean seafoods. Beyond his impressive career as a TV personality and restaurant owner, Conant has published three cookbooks, the most recent of which is PEACE, LOVE AND PASTA. His cookbook highlights the mouth-watering, Italian meals that he grew up with, as well as the dinners he makes today for his own family. So, what is for dinner and what are we having for drinks?

SPICED DUCK BREAST, FOIE GRAS MEATBALLS, BABY KALE & POMEGRANATE JUS SUNCHOKE PUREE Ingredients 4 sunchokes skin on, cut into thin slices 6 ounces shallots sliced 1 sprig thyme 1 pinch of chili flakes Olive oil as needed Water as needed Salt as needed

POMEGRANATE SUGO Method

First, cook shallots in olive oil until tender and sweet. Next add sunchokes and cook for 5 minutes without browning. Cover with water, add thyme and chili flakes and cook until a soft consistency. More water may be needed, and it is very important that the skin is fully cooked. If you have too much water and the sunchokes are ready, do not throw away the cooking liquid, reduce it and use it to thin out the puree. “All of the flavor is in the water!” says Conant. Purée in a blender and emulsify with olive oil. Season the mixture with salt and pass through chinoise cloth. If the purée is too liquid, you can hang it in cheese cloth overnight. Sauté baby kales with EVOO for one minute.

Ingredients 32 ounces pomegranate juice 250 grams duck jus (fortified with caramelized shallots, thyme and chili flake strained at least 5 times!)

Method

Place pomegranate juice in a wide pot, and cook on high heat, reduce rapidly, skimming as it reduces. Paint down the sides with a pastry brush and water to keep the sugars from burning. Reduce to about 185 grams, or until it’s a light syrup. Strain and cool rapidly over a dry ice bath. Mix 85 grams of reduced pomegranate juice with 300 grams of duck jus. Adjust seasoning if needed.

Ingredients

2 sunchokes, washed dried skin on 1 box kosher salt

Method

12 grams orange, using only the rind of half an orange with no pith (pre-dehydration) 12 grams fennel seed 2 grams pepperoncini, crushed red pepper flakes 14 grams paprika 0.6 grams pimenton (sweet) 0.4 grams cinnamon pieces

Bake at 375 degrees until soft. Remove from salt, dusting off excess. Chill then cut in half if small, or quarter if large. Reserve.

Method

Spread a 2-inch layer of kosher salt on to a half sheet pan. Place sunchokes in (from the first half of the recipe) on top of the kosher salt.

DUCK & FOIE GRAS MEATBALLS Ingredients 1 duck leg ground, clean weight no skin 1 chicken breast, boneless skinless 3 ounces panko 7 ounces milk 5 garlic cloves, pre-roasted 5 grams fennel seed, toasted ground 4 grams coriander seed, toasted ground 3 grams paprika 145 grams foie gras, marinated, small diced 12 grams salt, kosher 3 grams crushed red pepper flakes

Method

Soak panko in milk for at least 30 minutes. Purée chicken breast with garlic cloves in a food processor. Combine all ingredients in a large mixing bowl over ice and mix by hand to incorporate and emulsify. Check seasoning. Portion using a half-portion scoop. Shape into balls and reserve.

Using a vegetable peeler, carefully peel the orange rind, without the pith. “It is easier to peel the rind without pith using a cold orange versus a roomtemperature orange,” says Conant. On a flat microwavable plate, layer dry paper towel and evenly place the orange rinds on top to dehydrate. Microwave for 1 minute. Repeat this process for about 5 minutes or until the orange rinds are dry and feel crisp, using fresh paper towels underneath the orange rinds for each microwave session.

DRINK

Lightly toast the dehydrated orange peels and spices in a small sauté pan over a low heat for about 3 to 5 minutes.

Ingredients

Place all ingredients into a spice grinder, grind to a fine powder.

GARNISH IT! 1 duck breast, seasoned with salt and spice mix, cooked medium rare & rested 1 ounce pomegranate duck jus 2 to 3-piece sunchokes roasted 1 ounce baby kale, sauté a la minute or charred in the broiler. Do not wilt 6 to 8-piece pomegranate seeds 3 each foie gras duck meatballs, seared and glazed in jus Maldon salt Extra virgin olive oil

Place quenelle of purée off-center of the plate. Box the duck and cut into 3 pieces crosswise. Arrange duck on plate, 2 pieces skin-side up, one flesh-side up, in a circular pattern.

I

n North Scottsdale, a modern desert ranch house was newly crafted to be both an elegant abode for entertaining and a practical, kid-proof residence for a couple with three young boys. But before the organic and stylish home could be conceived and built, several dozen desert “giants” had to be accommodated. “This house sits on five acres,” says builder Brad Leavitt, founder of AFT Construction, who spearheaded the project. “It was filled with about 30 Saguaros, which are protected by Arizona law. We had to tag and move them before we could clear a building site.” Leavitt moved the Carnegiea giganteas—which can grow to be 50 feet tall and up to nine tons in weight—and dubbed the home “Saguaro Grove” in their honor. Working with the couple to design and build their

dream home, Leavitt put together a team that included architect Cory Wiebers, interior designer Kristen Forgione and landscape designer David Creech to hammer out a plan and forge a style. “The initial big question was, what is the perfect family house?” explains architect Wiebers, who bonded with the clients over the fact that he, too, had young children. “That drove the floor plan, and, in turn, the whole house.” He came up with an 8,200-square-foot plan centered upon the U-shaped main house, with a owners’ suite to one side of the great room, kitchen and dining room; and a three-bedroom boys’ wing on the other side. A separate guest casita, which doubles as a home office, is attached to the main house via the porte cochére.

“While the great room and dining area are more formal, we included many family-friendly touches in the house,” says Wiebers. “There’s a family room that separates the boys’ wing from the rest of the house, a big drop zone off the garage that has five big lockers and a bench for everyone’s stuff, and a big laundry and craft room with windows that have views of the desert mountains.”

front courtyard, a steel-framed glass door makes for a dramatic entry element, while in back, deep roof overhangs shade the glass expanses of the home, which open up to the pool patio.

Even the family Fido was considered—a dog room has food storage, washing facilities and access to a fenced-in dog run.

“The house was built with wood and steel beams to create all the open space,” explains builder Leavitt, who worked with his company team members Paul Lundgren and Susan Cenatiempo on the home. “We have many volumes with vaulted ceilings, clerestory windows and sliding glass walls that bring the outdoors in.”

In elevation, the home makes a nod to the neighborhood vernacular with its smoothplastered, sand-colored walls, double-pitched cement tile and standing-seam metal roofs, stone accents and corbel details. Inside the

Interior designer Forgione and her team played off the architecture’s neutral tones and traditional-meets-modern design with a cool, earth-toned palette and comfortable furnishings upholstered in kid- and dogproof fabrics. Wood and copper pieces add organic touches throughout. Contemporary art and super-graphics—including one in the boys’ wing that reminds them to “Work Hard + Be Nice to Your Brothers”—add a finishing polish to the interior. Outdoors, most of the Saguaros and other larger desert plants and trees were replanted, and landscape designer Creech created a modern planting scheme closer to the house in front and softened the pool patio and ramada with beds filled with

other arid-region plantings and cactus. While the pool, with its generous baja shelf, and spa, are just outside the back of the home, the sloping site was terraced to include a large lawn area and a basketball court below the house. Completed in 2021, the house has become a comfortable home for its occupants and blends happily into the surrounding community. “The great thing about this house is how it’s filled with natural light,” says Wiebers, “and how it connects to the outdoors. You can see for miles through the windows and from the patios.” And, adds Leavitt, “The Saguaros are still there.”

erived from the French word meaning “to melt,” fondue has humble beginnings but has evolved over time into a meal that is enjoyed for special occasions, romantic date nights and holiday entertaining. Fondue has origins in 18th Century Switzerland as a way to stretch resources during the winter months. When bread would get stale, melted cheese would soften it, and wine was often added. Fondue became a Swiss winter tradition and is known as one of Switzerland’s signature dishes. Fondue was introduced to America at the New York World’s Fair in 1964 as an art itself. The Melting Pot restaurant group opened its first fondue restaurant in 1975 in Florida and

has since grown to more than 100 restaurants, proving the company knows exactly how to make fondue. “Fondue is the ultimate sharing experience, but one that allows each person to customize their dining options and flavors. Having fondue is both interactive and experiential,” says Jason Miller, Melting Pot’s Director of Culinary Innovation and Development, who shared one of the restaurant’s best fondue recipes with us. “Our guests truly enjoy fondue cooking with family, friends and loved ones because of the togetherness that fondue dining can create. If you want to know how to make fondue, let’s go back to the beginning. “More than four decades ago, the menu was much simpler with more traditional fondue offerings that centered on just a few proteins and oil because of the cooking style known as Bourguignonne,” Miller says. “Over time, the cooking style options grew to include a few seasoned bouillons like our signature vegetable-based bouillon. There is also our red wine, garlic and mushroom Coq Au Vin broth, and our Caribbean spiced Mojo bouillon, which is a guest favorite. In recent years, the cast iron grill has become another option,” he says. A typical fondue meal starts with cheese fondue followed by a fresh salad, entrée and chocolate fondue with variations for each course. In addition to traditional favorites like Wisconsin cheddar with pretzel bread and 116

classic Alpine, Melting Pot offers several options for cheese fondue, such as spinach artichoke and local specialties like hatch green chile cheddar. The Melting Pot’s chocolate fondue options include s’mores, white chocolate, dark chocolate and flaming turtle. “Our caramel and candied pecans are flambeed tableside,” Miller says. “The flaming rum casts a blue glow that burns off while toasting the pecans and the fondue itself lending another facet to the decadent flavors.” With many people ordering takeout during the pandemic, restaurants are offering fondue to go with instructions on how to make fondue at home. “Melting Pot To-Go is currently available at select locations and is a great way to bring our fondue experience into your home with different options,” Miller says. “Some locations are offering a three-course menu that includes cheese fondue, salad and chocolate fondue. Some locations have expanded offerings that include skewers of our signature proteins fully cooked to enjoy at home along with our signature sauces.”

Fondue options have progressed over the years to meet a variety of tastes and dietary preferences. Vegan, vegetarian and gluten-free ingredients can still make some of the best fondue recipes.


Though demand was a little low previously, people are now rapidly seeking how to make fondue at home. “We have been doing our cheese and chocolate fondue to-go for the last three years with not much popularity because guests have only known Geja’s as a dine-in experience,” Lawler says. “With the recent pandemic, our to-go program has gained awareness and popularity. Since fans of Geja’s fondue enjoy all three courses, we will lend out our equipment and provide all the wares and food to create the complete Geja’s experience.” In addition to dine-in and takeout options, fondue can be made at home. Miller offers some cooking tips to make some of the best fondue recipes.

A fondue pot complete with dipping forks can be purchased for under $100. This is a great investment for those who are serious about trying the best fondue recipes. “Many people have found that a small investment in a quality fondue set makes the whole experience even easier. If you don’t have a fondue pot, a double boiler is recommended because using a sauce pot to simmer water with a metal bowl on top that is warmed by the steam from the simmering water prevents direct heat from scorching your fondue,” Miller says. “Using bamboo skewers as fondue forks and a plug-in hot plate and a stovetop-safe crock to enjoy the fondue at your dining room table will also work and give you a whole new experience to enjoy.”

“Compound chocolate works best and can be melted down with just a touch of water to help keep it smooth as you whisk it. Cheese fondue can be done in a similar manner

by heating up a liquid base such as beer, wine or vegetable stock, then adding some aromatics like fresh chopped garlic, mustard, Worcestershire sauce and pepper. Whisk in the shredded cheese of your choice,” he says.

INGREDIENTS

4 ounces white wine (Chardonnay or Chablis works well, or vegetable broth can be substituted) ½ tsp shallots, finely chopped ¼ tsp Dijon mustard 5 ounces shredded Swiss Cheese (Emmental, Raclette or your favorite swiss type cheese– alone or blended) 1 ounce shredded Fontina cheese 2.5 ounces cornstarch ½ tsp scallion, sliced

In a mixing bowl, toss the shredded cheeses with the cornstarch to evenly coat the cheese and set aside. Add the white wine to the fondue pot or double boiler. Add shallots and Dijon mustard to the warm wine and stir with small whisk or fork. Allow the mixture to thoroughly warm up before adding cheese. Add one-third of the cheese and mix thoroughly using a small whisk or fork. Add the next one-third of the cheese and mix thoroughly using a small whisk or fork. Add the remaining one-third of cheese and mix thoroughly until all the cheese is melted and incorporated. Use a whipping motion to fluff up the cheese. DARK BELGIAN CHOCOLATE FONDUE FOR TWO GEJA’S

INGREDIENTS

METHOD

6.25 ounces milk chocolate 1.5 ounces bittersweet chocolate 2 ounces freshly brewed coffee ½ ounce milk

Place milk and coffee in a double boiler; heat until the mixture is steaming. Add chocolate and stir until completely blended. Let cook for 30 minutes. Do not let the chocolate fondue boil. Transfer chocolate to fondue pot.

triking a balance between old and new—style and function—is a specialty of designer Kaitlyn Wolfe, founder of Iconic Design + Build. The interior designer and licensed general contractor says that she crafts spaces that “maximize the minimal,” taking into account each client’s goals without any added frivolity or clutter. When Arizona-based blogger, content creator and influencer Lola Garcia was looking to update her Mid-Century Modern Scottsdale home, she knew that Wolfe was the perfect designer for the job. “Kaitlyn's style is far from anything I’ve ever seen before, especially local to Arizona. I knew this home needed something unique and I wanted to branch away from “the norm” that I often saw on social media. Every design she creates is different from the next yet stays true to herself and that is what I love the most about her. She is also one of the greatest people. Loyal and kind to the people she works with, professional, and so creative.” said the reality show starlet. “It had undergone previous remodels and additions, but the remodels were now dated and didn’t fit the original architectural intention of the home,” recalls Wolfe. “We loved the existing materials such as the exposed slump block, floor-to-ceiling glass windows, skylights, fluted cabinet doors, Mid-Century glass block windows and the expansive views of the golf course and mountain range.” “We were excited when Lola approached us to design her new home, as we are inspired by her lifestyle and brand that she has created,” says Wolfe. The impetus of this home’s design was to honor the home’s architectural history, while creating stylish and fresh interiors that transcend time. Surfaces and materials were thoughtfully selected to reflect that goal. A Mid-Century Modern staple—walnut—was used in both the flooring selection as well as the kitchen cabinetry to create design continuity while paying homage to the original architecture style. While the home’s aesthetics were of utmost importance, so too was the practicality of

a functional space for a family with two young children. Wolfe says she “completely changed the functionality of the kitchen by closing off one doorway and opening up two more doorways to adjacent spaces. We loved the intimacy of the kitchen but we were able to maximize the space, making every inch functional.” The Iconic Design + Build team refinished some of the existing cabinetry with fluted doors, adding in some new custom cabinetry in a white, frameless European style to give the kitchen a whole new spirit. Echoing the client’s request for functionality, the soft furnishing selections in the adjacent living room space create a warm, family-friendly environment perfect for movie nights and entertaining. Through the use of durable–yet beautiful–fabrics like a white bouclé sectional and wool rug, the space has an elegant and understated feel. The Iconic Design + Build team was also brought in to update the dining spaces, including the breakfast nook and formal dining room. A fun dose of color was implemented in the breakfast nook via a custom emerald green-upholstered floating bench. A geometric light fixture and a gallery wall full of ICONIC images complete the space with a lighthearted, Palm Springs-inspired design. The formal dining room became less formal to fit the client’s everyday needs. “With its indoor-outdoor feel, we layered it with neutral textiles such as a dhurrie rug, leather and walnut dining furniture and a cloud-like chandelier that gives off a comfortable, warm glow,” says Wolfe. “Our clients wanted to play off of the architecture of the home while keeping it clean, minimal and kid-friendly,” she says of the overall goals. With the primary spaces in the home transformed by Wolfe’s magic touch, the client is ready to progress to the next stage of the renovation. “We’re excited to enter the second phase of the project,” she says. “Lola has been an incredible client to work with, and we are very fortunate to have had the opportunity to partner with her.”

recent al fresco lunch enjoyed at Santa Barbara’s Satellite restaurant confirmed the region’s culinary unity and joie de vivre. As Kyle and Ashley Hollister shared the origins of their T.W. Hollister & Co. vermouths, which are made with botanicals from their family’s historic Hollister Ranch, Satellite proprietor Drew Cuddy served bespoke cocktails created with the fortified wine, while backyard gardener Sarah Bourke poured her Sideyard Shrubs made with locally gathered fruit. Rachel Greenspan, founder of Michelin Bib Gourmandrecommended Bettina Pizzeria, waved a friendly hello as she wandered by, and Jane Chapman of Jane Restaurant pulled up a chair to join the conversation, sharing the COVID-19 origins of her Communal Table dinner party venture. On this day, at this hour, the palpable camaraderie of this group of gastronomic entrepreneurs revealed a cohesive community of artisans and dreamers who are shaping Santa Barbara’s food and beverage scene, and its farm-to-table, Coastal California ethos. And their efforts are spectacular. eatured on exhibition in renowned design museums around the world, Italian industrial designer Joe Colombo’s striking ICONIC 1960s furniture, lighting and decor is well-known for its innovative yet functional forms. Even after his unexpected passing in 1971 at age 41, Colombo’s contemporary works continue to inspire and delight, carrying on his innovative spirit. Named lovingly after his wife, Colombo’s illustrious Elda chair revolves 360 degrees and looks like something straight out of a science fiction movie. One of the first furniture pieces he designed, the ergonomic chair was brought to life in 1963 by Italian manufacturer Comfort and was most recently crafted by LONGHI S.P.A., an Italian contemporary living brand.

Colombo studied at the School of Architecture of the Polytechnic Institute in Milan until 1955 when he had to take over the family business (which entailed manufacturing filaments) following the death of his father. His knowledge of architecture is evident in the mathematical way he approaches furniture design, and his futuristic look is what makes his pieces truly unforgettable. Although the Elda chair was designed in the 1960s, Colombo’s unique forward-thinking approach makes this piece timeless.
