TRÈS EURO. There’s really nothing like Choux Choux in all of Victoria. A deli in the most authentic sense, this traditional French charcuterie is run by Luke and Paige Young. What makes it authentic? The boutique is the only one on Vancouver Island bringing in whole pigs before before deftly transmogrifying them into mouth-watering works of edible art. The thrill of being a “first true” for Victoria seemed like a great opportunity to the Youngs, and after living in cities like Toronto and Vancouver, a desire to quiet their lives was a key second. Yet in the three years that Choux Choux has been churning out its porcine pleasures, the Youngs have discovered that good things grow in the quietest of places. “Slowly but surely, good things are happening and you can see it happening,” says Luke, “especially all the new restaurants – that’s what gets me stoked – the Red Fish Blue Fish guys, Jeff at Pig, that sort of thing.”
