It’s easy to get caught up in day-to-day life; perhaps not quite living in survival mode, but something close to it. HOW THE SUCCULENT HIPPIE IS PUTTING DOWN ROOTS ACROSS THE SUSQUEHANNA VALLEY

Plants simply make people happy. And there’s one business taking root and spreading plenty of plant-y happiness across the Susquehanna Valley. It’s called the Succulent Hippie, but the name—and her career path—still makes small business owner Shannon Strevig laugh.

“I still can’t believe I opened a plant shop,” says Strevig, 25, of Hanover, York County. “As people are growing with plants I am too. What I know, I share with other people—we’re all growing together.”

The Succulent Hippie’s original Hanover location opened its doors a year ago, at the beginning of 2022. Filled with hundreds of gorgeous green plants—not just succulents, but leafy varieties too—the shop offers a full range of planting supplies including pots, soil, and lots of fun accessories, even apparel.

The shop’s popularity and following grew like a weed. Just eight months later, in August of 2022, the Succulent Hippie put down new roots, occupying the beautifully-lit, window-lined front area of Prussian Street Arcade in Lancaster.

“It’s very fun for us to expand to new people and give them a little taste of what the Succulent Hippie is all about,” Strevig says, admitting, “I don’t even feel like I’m working. It’s like a breath of fresh air when you walk in—you definitely can’t be mad around plants.”

Studies show that caring for plants and being around the color green is good for your health and wellbeing. And that’s how Strevig’s own journey with plants began.

She was one month away from graduating with her nursing degree when she fell down a flight of stairs and shattered her knee. Confined to bed, her leg in a cast, and not one to truly rest, Strevig considered her options for a bedside hustle. She dreamed up a side business creating succulent arrangements. Her mom faithfully delivered plants and soil, Strevig posted her creations to Facebook, and she discovered a big plant-y payoff.

The name of her business came out of the fact that she just happened to be wearing a tie-dye t-shirt the day she created the business.

Strevig never envisioned the Succulent Hippie growing into a full-time gig, but when her cast came off, doctors discovered her hip was broken as well—requiring surgery and a full additional year of healing, further postponing any hope of a nursing position.

At that point, she decided to go “all in” with plants, especially since she was realizing “plants

helped me through depression, being bed-bound,” and her customers were also tapping into the healing nature of plants in their daily lives.

As Strevig’s body healed, she ramped up her business plans. When the Succulent Hippie opened its doors in Hanover, it already had a thriving customer base on Facebook. Strevig hit the ground running by offering a fully-stocked plant shop, along with plant workshops for bridal parties, businesses, or groups. Customers can also order plant-y party favors.

Today, with locations in both Hanover and Lancaster, the Succulent Hippie continues to branch out by offering team-building events focused on the symbolism of potting a plant, allowing for growth—and less stress— in attendees’ lives.

Strevig sees her own growth and career path, intertwined with her growing knowledge of plants.

“At first, it was the color of plants, then I started to like the style—if they were vine-y or tall. Then I fell in love with propagation,” says Strevig, explaining that propagation is basically taking a cutting from a plant to grow a new one. Pothos are especially easy to propagate, she says.

Interestingly, she feels as though her nursing background has helped her develop a caring, green thumb.

“I’m very passionate about plants, and two years ago I probably didn’t think a second about plants,” Strevig says through laughter. “But having a nursing background, I‘m always wondering why—‘Why does this plant do this, and why does this one do that?’”

When it comes to success, Strevig is diggin’ it. She’s currently searching for additional locations where the Succulent Hippie can take root through pop-up shops— one in the York area, and another just over the Mason Dixon line in Maryland.

Plants aren’t the only things thriving at the Succulent Hippie. Another offshoot of her success? Relationships and friendships.

“At the end of the day, this feels like a family, rather than a business,” Strevig says, “because plants bring people together.”

Why Journaling Is A Must For Your Health

PER DIEM BLENDS LANCASTER COUNTY BOUNTY WITH ROCK LITITZ VIBE

Back in 2014, Rock Lititz brought a pulsating beat to the serene hills of Lancaster County.

If you want that kind of rural-rock mashup on a plate, come to Per Diem. It’s the place where, as the owners say, farm-to-table meets rock and roll.

Per Diem opened its doors on the Rock Lititz campus in 2018. This is not a kitschy tribute restaurant to the tours that rehearse there but an elegant spot for casual dining and gathering. Look for Rock Lititz-themed “Easter eggs” dotting the space, such as stage cards from Ozzie Osbourne and AC/DC tours, or ceiling beams repurposed from stage sets built at Rock Lititz.

Here, walls covered in greenery or stone provide texture, wood floors gleam, white chairs and tables contrast with black upholstery, and light pours in through floor-to-ceiling picture windows.

“There’s a vibe here that you don’t have to go to Philly for, you don’t have to go to New York for, you don’t have to go to LA for,” says Shannon Hamblin, marketing manager for Per Diem owner TFB Hospitality. “Per Diem has that very big-city feel, but we’re in the middle of a cornfield in Lititz, Pennsylvania. It’s very inclusive, but we like to make you feel like you’re in someplace exclusive.”

At Per Diem, food and beverages share top billing, and it all starts in Lancaster County.

“We’re surrounded by so many farmers, vendors, and purveyors, it would be almost silly of us not to incorporate these people into our dishes,” says Hamblin. “We have strong partnerships with a ton of different farms and venues in Lancaster. I would say that 90 percent of our menu at Per Diem is fresh, local ingredients.”

Even the specialty cocktails designed by bar manager Dan Zeiders—he’s the bearded guy wearing a Hawaiian shirt—are often inspired by finds from local purveyors. Zeiders has also been known to forage for ingredients on his forest walks, once transforming teaberries into bitters.

Per Diem serves dinner nightly and Sunday brunch, plus continental breakfast buffet for hotel guests that is also open to the public. Chef Travis Holder designs an extensive menu stocked with dishes for everyone’s tastes. Vegans and vegetarians might find a satisfying chickpea meatballs entrée with roasted red pepper coconut cream and white bean ragu. Fire-roasted pizzas offer available vegan cheese and gluten-free crusts.

Per Diem pizzas include such enticing options as bacon and brussels sprouts, spinach and artichoke, or spicy soppressata and hot honey. For entrees from the sea, try the crab bucatini or the seared scallops starter, served with heirloom cauliflower.

Meat lovers always have hearty choices, like the BBQ brisket sandwich topped with cherry cola BBQ sauce. The tour burger, a nod to Rock Lititz’s roots, features two beef patties, American cheese, special sauce, lettuce, house bread-and-butter pickles, and caramelized onion, all on a potato or gluten-free bun—the juiciest, tomato-jammy Big Mac you ever ate, with truffle frites on the side.

The tour burger might also appear on the brunch menu, along with a delectable lemon ricotta pancake, steak and eggs, apple and pecan salad, or Southern-style chicken and waffle with a buttermilk-fried chicken thigh poised on top of the waffle.

Of course, it’s not brunch without a cocktail (with mocktails available) such as the chai-tini made with vanilla vodka, chai, espresso liquor, milk, and the delightful touch of a Nutella rim. The bloody Mary is tantalizingly spicy with house-made mix, green chili vodka, and Old Bay rum.

Pastry chef Lydia Thompson caps your meal with a house-made, seasonal dessert. Selections range from the red wine cranberry cheesecake to the fudgy Andreas chocolate cake accented with pomegranate puree.

Per Diem attracts diners from throughout the region and beyond. They are drawn by the idea of a varied menu offering farm-fresh meals crafted from the renowned goodness of Lancaster County, all served in a modern, comfortable setting. Servers skilled at recommending dishes and pairings “make you feel super important,” says Hamblin. “They make you feel like you’re the only customer in the room.”

For those who enjoy stepping away from the table to dine, Per Diem’s lobby area has pool tables and QR codes for ordering delivery. From around April through October, diners can enjoy patio dining with firepits, cornhole, or Jenga, while ordering food and drinks that come straight to them.

“You don’t even need to sit inside the restaurant,” says Hamblin.

No matter what you choose to eat or how you choose to eat it, she adds, the overall Per Diem feel is one of thoughtfulness behind the food, drinks, décor, and experience.

“We have the most artistic people,” says Hamblin. “Every cocktail we have, every dish we have is really a work of art. It takes so many pieces of Lancaster County and Lititz and makes it into one dish.”

Fresh Recipes to Grab From Your Garden

LEMONY ASPARAGUS RISOTTO

The perfect creamy dish packed with fresh flavors! Buy the best fresh asparagus in Spring from your local farmers to create this wonderful rice dish.

1 lb asparagus, trimmed and chopped into 1/4 inch pieces, save some tops for garnish

2 Tbsp butter

½ tsp of red pepper flakes (optional)

1 small sweet onion, finely diced

4 cloves of garlic, minced

Juice and zest from 1 lemon

3½-4 cups warm broth

1 cup Arborio rice

¼ cup fresh parsley, chopped

½ cup dry white wine

½ cup grated parmesan cheese

Fresh ground black pepper and salt to taste

Optional toppings: parmesan cheese, olive oil, chopped parsley, asparagus tops, black pepper

Instructions

1. In salted boiling water, add asparagus pieces, cook for about 3 minutes, and then add to ice water to blanch.

2. In a large pan on medium high heat, melt butter, and add red pepper flakes and sweet onion. Cook until translucent and start to lightly brown. Then add garlic and cook for 1-2 minutes until fragrant.

3. Deglaze pan with white wine and juice of one lemon. Add Arborio rice, and stir to combine.

4. Once liquid is absorbed, slowly add a cup of warm broth at a time. Stirring constantly, repeat this step until all broth has been absorbed, or for about 20 minutes.

5. Once risotto is cooked through, it will have absorbed all the liquid and will still have a little bite to it. Then add in blanched asparagus, lemon zest, parmesan cheese, pepper, and salt.

6. Turn off heat, and stir until cheese has melted and everything has incorporated. Serve, and enjoy!

PESTO PARMESAN ZOODLES

A great low carb alternative to help that pasta craving! By utilizing zucchini as noodles, this recipe is not only healthy, but also quick to make and delicious!

3 medium zucchini (one end trimmed off)

Salt for water bath

6½-8½ oz container of pre-made pesto (would recommend refrigerated fresh options)

1 pint cherry tomatoes, halved

½ cup fresh chopped basil

Optional Garnish: parmesan cheese, basil leaves, toasted pine nuts, drizzle of olive oil

Instructions

1. Trim zucchini ends. Spiralize zucchini.

2. Put all your zoodles in a large bowl and cover with cold water and a few tablespoons of salt.

3. Let rest for 15 minutes. Drain and press out liquid. Then pat the zoodles dry.

4. Toss with pre-made pesto, cherry tomatoes, and chopped basil.

5. Place in bowl, and top with your optional garnishes.

6. Eat immediately, and enjoy!

Tip

• If you’d like to enjoy this hot, sauté zoodles in a skillet for 2-3 minutes before adding other ingredients.

GARLICKY PEANUT COLD NOODLE SALAD

Packed with flavors and textures, this cold noodle salad is sure to be a winner! It’s easy to make ahead of time to use for meals throughout the week!

Pickled veggies

1 hot house cucumber, julienned

½ red onion, thinly sliced

1 large carrot, julienned

2 cloves garlic, minced

1 Tbsp salt (or to taste)

1 Tbsp sugar

½ cup rice vinegar

¼ cup Gochugaru flakes (Korean red chili flakes)

Noodles

8 oz pkg vermicelli rice noodles

1½ Tbsp sesame oil

2 Tbsp chopped garlic

1½ Tbsp Gochugaru flakes

3 Tbsp peanut butter powder

1 Tbsp tahini paste (can use peanut butter as a substitute)

3 Tbsp soy sauce

1 Tbsp oyster sauce

2 Tbsp brown sugar

¼ cup chopped scallions

2 Tbsp rice vinegar

½ cup ice cubes

1 head iceberg lettuce, chopped

Optional Toppings: Thai basil, chopped peanuts, chili crunch, sliced scallion, poached chicken, roast pork, or air fried tofu

Instructions

1. First, chop up, mix, and prepare your pickled veggies in a bowl. Cover, and set aside in refrigerator.

Tips

• For an easy protein addition, try poached or rotisserie chicken!

• If you like things extra spicy, try adding a finely minced Thai chili (wear gloves) to your garlic and oil mixture while it’s cooking!

2. In a large pot, cook your vermicelli noodles according to package instructions, and then drain and run under cold water until cold.

3. While cooling, add garlic, sesame oil, and Gochugaru flakes until fragrant, about 1-2 minutes. Immediately remove from heat and add remaining ingredients except lettuce.

4. Stir in ice cubes until they have melted and you’re left with a nice creamy cold sauce. Toss in noodles, and stir until well combined.

5. To plate, divide pickled veggies, noodles, and lettuce into four bowls. Top with optional garnishes, and enjoy!

Greenery that Thrives on Neglect and Reason for Popularity

Plenty of home and alone time during the early part of COVID created opportunities and desires for new types of parenting to help break the isolation between four walls. Some people became first-time pet parents; others seeking a little less responsibility opted to adopt plants instead.

The fast-paced horticulture business of 2020 and 2021 has slacked off a bit as those plant parents have returned to work and gotten busier.

“People are just trying to appreciate the plants they have and to keep them happy,” said Heather Jones, a container gardening designer for Esbenshade’s Garden Center in Lititz. “They aren’t necessarily going to keep buying at the level they were.”

Perhaps that explains a new plant trend for 2023—to parent plants that require even less work and a slightly less of a green thumb.

Forget that finicky fiddle leaf fig (Ficus lyrata) that was the darling of the COVID era. Enter instead the hardy cactus and Pothos plants, which Jones says are “extremely easy to take care of.”

“If you don’t know anything about plants and buy a Pothos as your first plant, you’re going to gain a lot of confidence because it’s hard to kill. It’s been really popular here since summer and we’re selling a lot,” Jones said.

COLORS THAT POP

Another hot trend? Hot colors. People want plants not necessarily with yearround blooms, but with eye-popping foliage colors—think neon, marble, golden, and jade Pothos. The names conjure the brilliant hues of the leaves.

Regardless of whether someone seeks color or bloom, it’s important— especially for those who seek easy care—to remember the challenges of indoor gardening. Plants that can endure low light, lower humidity, and fluctuating temperatures will do best. That generally means the hardiest houseplants come from the tropics, the desert, or the understory of the jungle, explains Karl Gercens, East Conservatory Manager for Longwood Gardens.

Gercens says prospective plant owners seek “absolutely indestructible plants,” so if that’s what they want, they should consider snake plants (Sansevieria, now known as Dracaena), which are perfect for people who struggle to keep anything alive.

“You can have a collection—different colors, textures, shapes, and sizes,” Gercens noted. “You can create little families of these plants and realize that they are so different. Even though they are in the same genus, so much is different. Can you believe these are related?”

If the snake plant’s not for you, Seth Pearsoll, Creative Director for the Pennsylvania Horticultural Society’s Philadelphia Flower Show, agrees that one of the many varieties of Pothos is the way to go.

“I’m seeing a lot of people nerding out into the world of Pothos, which was at one point a very entry-level houseplant—a gateway plant,” Pearsoll said. “There’s quite a bit of room in the market to test your collection without worrying about it. Pothos is always the place to start.”

Saintpaulia (African Violet)

HARDY HERITAGE

What’s old is new again and that means grandma’s plants are as cool as grandma, and hardy too, Gercens says of Begonias, African violets, peace lilies (Spathiphyllum), and Boston ferns (Nephrolepis exaltata). Other forgiving plants Gercens recommends include the cast iron plant (Aspidistra), Chinese evergreen (Aglaonema), dumb cane (Dieffenbachia), Anthurium, and of course, succulents, like the “super cute” string-of-pearls (Senecio rowleyanus), a hanging succulent. Pearsoll also raves about the trend towards foliage drama that people can attain with the bright greens and purples of begonias and Calatheas.

“I feel like people are coming to Calatheas the way people were going to orchids,” he said. “They have incredible foliage and incredible patterning.”

Similarly, Cheryl Burill—chief operating officer of Royer’s Flowers and Gifts with locations in Camp Hill, Carlisle, Chambersburg, Columbia, Ephrata, Harrisburg, Hershey, Lancaster, Lebanon, Reading, Shillington, Wernersville, and York—agrees that while the peace lily evokes days yonder, it is the most popular plant Royer’s carries.

“Everybody likes them and they’re so easy to take care of. With those little white blossoms that it has and its name, people like to send them for a lot of different occasions,” Burill said.

Since Esbenshade’s has greenhouses that also produce vegetables, it was deemed an essential business during the pandemic that could remain open. At Royer’s, however, people had to wait, so once they were able to go back into the stores, Burill says, “Oh, the questions they had,” noting that succulents were quite popular then.

Although Pearsoll sees a move towards more feathery ferns, that passion doesn’t come without warning: while they’ve got a lot of personality, the maidenhair (Adiantum) and asparagus ferns (Asparagus setaceus) require a lot more love and attention.

Pearsoll also notes what he describes as an “almost anti-trend” in the current houseplant market, and that is to find one small houseplant to love and nurture, remembering that a small plant that might come from even Home Depot is going to grow with good care. He suggests “creating relationships with that one friendly plant you’re committed to.”

If my pandemic babies are any indication of how plant parenting is going, these experts seem to have described my every experience; not to mention the plants I chose: Pothos, peace lily, and snake plant. Time at home gave me the opportunity to develop a watering routine, and as a result, my plants have flourished, including a no-longer-trendy fiddle leaf fig that thrives in my bedroom window. Eh, who needs to follow trends. In 2023, we can be the trendsetters.

PLANT PARENTING TIPS

A houseplant is not a perfect decorating accent–it can’t go in a dark empty corner. Place houseplants in light-filled areas. In too-little light, plant leaves may become dull and drop off.

Make a watering schedule, and stick to it.

Don’t worry about following Instagram trends of accessorizing or fertilizing your plant.

Don’t worry about plants believed to be poisonous. Your pets could never eat enough of —or want to eat enough of—any of them to be toxic. They don’t taste or feel good in the mouth.
