We are delighted to have you joining us again as we launch into another year of information we hope you will find interesting and useful. In this issue we are going to look at things that are pet-related, plant-related, food-related (you gotta eat!), and also, we’re going to take a look at how to get our home offices organized. Because this is our first issue of the year, we’re talking about the first half of January and in the first half of January the weather is often really cold. For many of us, that probably means a lot more time spent indoors, so in this issue and others this winter we’re going to look at ways to make the time indoors healthy and productive. Pets will also be spending more time indoors this winter, so we’re going to take a look at fabrics and finishes you can use in your home that are the most pet-friendly, not just during this “stay at home” part of the year, but in general. For instance, if you’re planning to get a new rug or some slip covers, or have furniture reupholstered during the quiet of post-holiday January, there’s some information in “Pet-Friendly Fabrics and Finishes” you might find helpful and interesting. Another area for special care during the winter months pertains to houseplants. Houseplants are basically indoors year-round, but even so, their needs are actually different in different seasons. In the winter, with changes to humidity and how you bring heat into your living space, houseplants can require adjustments to how you normally take care of them. Have you ever thought of taking a self-guided “cheesecake tour” in New York City? One of the most delightful cheesecakes, which is not the traditional heavier “New York Cheesecake,” is Italian cheesecake known as torta alla ricotta. We’re going to tell you a little about it and also, a few places to find it. And then for you traditionalists, we’re going to give you a “copycat” recipe for cheesecake from The Cheesecake Factory. The Tour Italian cheesecake, known as torta alla ricotta, is an excellent, lighter alternative to the heavier classic. Using ricotta cheese instead of the rich New York-style cheesecake ingredients, such as heavy cream and cream cheese, torta alla ricotta is dryer and more cake-like, but still wonderfully smooth and delicious. Here are a few New York City bakeries and eateries you might want to include in your own New York Cheesecake Tour. Rafele / Raffaele Ronca, a winner of Food Network’s hit show Chopped, is a co-owner and chef of Neapolitan restaurant Rafele at 29 7th Avenue South in the West Village. His cheesecake uses vanilla beans and buffalo milk ricotta for a light and silky texture and a pie dough crust. He infuses it with orange blossom simple syrup, and tops it with seasonal fruits such as caramelized figs or pears. Hearty Vegetarian Meals for Winter SOURCE: Various
Topping 1/2 C sour cream 2 t sugar Directions 1. Preheat oven to 475°F. Place a large pan filled with ½ inch water in oven. 2. Make crust: Mix graham cracker crumbs and cinnamon; add butter or margarine. Press crust onto bottom and 2/3 of the way up a 9-inch springform pan lined with parchment. Wrap a large piece of foil around bottom of pan. Freeze until filling in prepared. 3. Make filling: Use an electric mixer to mix cream cheese, sugar, sour cream and vanilla. Blend until smooth and creamy. Scrape down sides of bowl. Whisk eggs in a bowl; add to cream cheese mixture. Blend just until eggs are incorporated. 4. Remove crust from freezer and add the filling. Carefully place cheesecake into preheated water bath. Bake for 12 minutes; turn oven to 350°F and bake until top of cheesecake turns golden, 50 to 60 minutes. Remove cake to wire rack to cool. 5. Make topping: Combine sour cream and sugar; spread over cake. Cover and refrigerate at least 4 hours.

Here we have two delicious vegetarian recipes that are perfect for winter eating. The first uses sweet potatoes to create sweet-potato fettucine that you then toss in a gorgonzola and cranberry sauce. Total prep and cook time: 30 minutes. The second recipe is a fast one to prepare. It’s the kind of dish you whip up when you’re hungry and don’t want to spend a lot of time on prep. The source for each recipe is listed and if you visit those sites you will find many more vegetarian recipes to make and enjoy. Sweet Potato Fettuccine in Gorgonzola Sauce Source: liveeatlearn.com This Sweet Potato Fettuccini is tossed in a gorgonzola and cranberry sauce to create a decadent, gluten-free pasta dish that’s full of flavor and vitamins! The prep time is 10 minutes and cook time is 20. This recipe serves 2. Ingredients 1 large sweet potato peeled 1 tablespoon olive oil 2 tablespoon pine nuts 4 oz. gorgonzola cheese 1/4 cup heavy cream 1/2 cup dried cranberries Instructions Cut Noodles: Peel skin from potato. Use a mandolin slicer or large knife to cut potato into long, thin slabs. Slice each slab into fettuccineshaped noodles (stack a few slabs to make this go faster). Continued on page 8

Toast Pine Nuts: In a small sauté pan, toast pine nuts over medium heat until lightly browned, about 5 minutes. Remove from heat and set aside. Cook Noodles: In a large saute pan, heat oil over medium heat and add sweet potato noodles. Cook covered, stirring frequently, until noodles are slightly tender, 10 to 15 minutes. Warm Sauce: In a small sauce pan, heat gorgonzola and cream over medium-low heat until cheese has melted and mixture is warm. Remove from heat and stir in cranberries. Serve: Toss everything together and serve warm. As we sit here almost two years into the pandemic, this much is clear: working from home is a full-time reality for many people and at least a part-time reality for others. Whether you’re working from a table in the corner or a full home office, keeping your space organized is critical. All you need is a space that is equipped with good lighting, a desk or table, a comfortable chair, and a place to store your work papers, electronic devices and office supplies. It doesn’t actually need to be a full room. Here are some tips to help you get everything in order. Invest in basics. There is no “right” place to have a home office. Some people like to be in a busier spot, while others like a quieter location. It depends on the person and the job, including how much time you spend on video calls. You need to be comfortable in your space to be organized. If you’re sitting at a computer for most of the day, invest in a sizable table or desk and a
comfortable chair. If you don’t have good natural light, get a quality lamp or ring light. And if you prefer to stand up for a portion of the day, buy an adjustable desk. Also consider a footrest to help support your back, as well as a monitor riser or a larger monitor. Use additional organizational tools. Papers and mail tend to pile up on surfaces when people don’t have the proper tools to easily get rid of them. have a trash can nearby and possibly a recycling bin. Designate a specific spot – perhaps a tray or a different table – for personal papers so they don’t get mixed in with professional documents. Even if you handle almost everything electronically, there are some documents that need to be kept as a hard copy. That’s where a filing cabinet, drawer or portable filing box can come in handy.
It’s a new year, how about working on issues that are bothering you? Get help with relationships, anxiety, grief, and life transitions. Now is the time for a fresh start.
If you need to see something to remember it, use nearby vertical space for a bulletin or magnetic board, where you can post lists, passwords and so forth. Store extra office supplies somewhere convenient, but don’t overbuy. And have a spot for charging your devices. Note that not everything has to be utilitarian. A few personal items will warm up the space and you can also add plants, which can help reduce stress and increase productivity. Tidy up end-of-day. Make it a routine to spend five minutes straightening up your workspace before signing off. File papers, bus glassware and plates, and recycle or toss unneeded items. This will help you stay organized and will keep overall clutter to a minimum. At the start of the pandemic, our quickly created home offices were sometimes haphazard. But now that we have a little more clarity regarding our future work arrangements, it’s time to take a fresh look at our space and create a more functional setup for the new work reality.

When you own a pet there is a lot of responsibility that goes along with that. In addition to training, feeding, exercising and taking your pet to the vet, you also have to “pet-proof” your home in various ways. If you own pets and want your furniture and floors to last a good long time in good condition, you are probably best advised to use durable, easy-to-clean materials that resist stains on your furniture and scratches on your floors without absorbing too many smells. Ceramic and Porcelain Tile/ When you’re choosing a floor, aim for a tough material that won’t put your pet’s scratches on display. Ceramic or porcelain tile are good choices because they are scratch resistant and easy to clean. Also, because they are nonporous, they don’t easily absorb smells from dog or cat accidents. The grout however can be more absorbent, so applying a sealer two times a year is advised. Treated or Faux Hardwood / If stone isn’t your style, hardwood isn’t out of the question. Use a factory-finished floor rather than true hardwood if your goal is to prevent wear and tear. Just keep in mind that even treated wood is naturally more porous than other materials, so you’ll need to notice – and quickly clean up – spills and messes. animal messes and hair by investing in indooroutdoor rugs, which are designed with stain-proof, odor-proof synthetic materials. Wool Rugs / If you want a more traditional look, a low-pile wool rug may be the best option. Wool is naturally water resistant, so pet messes shouldn’t seep into it. It’s also relatively easy to spot-clean, but for tough stains, consider professional cleaning. No matter what, avoid high-pile rugs. Ultrasuede / To avoid having scratched-up upholstery, use fabrics that pets can’t easily get their claws into, such as ultrasuede or mohair. Ultrasuede, a synthetic form of suede, is also designed to be stain resistant. Leather / Because it doesn’t absorb pet smells and it’s easier to clean, leather could be a reasonable choice for furniture. With leather or faux leather you can simply wipe the pet hair off. But keep in mind, leather is easy to scratch. Canvas / For a more laid-back look that’s also easy to clean, consider canvas. If you choose a
couch with removable cushion covers you can routinely throw them in the wash. Washable Slipcovers You may want to consider a slipcover for better protection. If you get them in an easy-to-clean outdoor material they will withstand more use. Slipcovers also let you change the “look” whenever you wish.

Just because houseplants live indoors in a controlled environment for most, if not all of the year, that doesn’t mean their needs don’t change with the seasons. The winter might be considered a “dormant” season, but it doesn’t have to mean dead plants. Here are some suggestions from experts on how to care for houseplants during the colder months. Move outdoor plants in.Some houseplants thrive outdoors during spring and summer, especially in high-humidity areas, but they will struggle during winter. If they’re in pots and you can bring them inside, do so especially when overnight temperatures start dropping to between 50 and 55 degrees. Your subtropical plants, which include many houseplants, will turn to mush if they are exposed to temperatures close to 40 degrees. When you bring those inside, cut back dead leaves or branches so they can focus their energy on living leaves and new growth.
Check for pests. Before bringing any outdoor plants inside, make sure they are pest-free. Otherwise, all of your indoor plants will be infested before long. When you buy a new plant, you should always keep it isolated until you’re certain it is also pest-free. Dust the leaves. Plants collect dust and dust prevents the leaves from taking in the nutrients they need from the light. Because there’s already less light during winter, dusting the leaves is particularly important. Use whatever you have on hand: microfiber cloths with a spray of mild soap and water, baby wipes or a feather duster. Put them in light. Because many plants need more than five hours of direct sun a day and there’s less daylight in winter, feel free to move your plants around. Position plants in the brightest part of your home, if only for a few hours a day. If it’s hard to find natural light, invest in grow lights for the winter months. Keep plants warm – but not too warm. Cold air from a door, window or other drafty area will give plants a shock. Also, be sure your plant leaves aren’t touching windows that can get cold. At the same time, keep plants away from direct sources of heat, such as vents, heaters or fireplaces, so they

don’t get hot and dry out. Most houseplants will do well between 60 and 70 degrees. Reduce watering. If the air around the plant is cooler, it’s going to take in less water, because there’s less heat and light to help move water through the plant and evaporate it out of the leaves. Start watering once a week and adjust from there. If the leaves are getting yellow, brown or crispy, that means they need more water. On the other hand, if you put your finger in the first inch of soil and it’s damp, hold off on watering. Don’t forget about humidity. Many indoor plants are tropical and prefer more humid air. Humidifiers are an option, or you can put water in a tray filled with pebbles and set the plant on the rocks. The moisture will evaporate up and around the plant. You can also lightly spray the plants with water.
No fertilizing needed. You don’t need to fertilize plants in the winter. Hold off on repotting. Try to wait to repot – which stimulates growth – until spring, when the plant wants to be growing. March or April can be a good time.

Our local Lions Clubs in Lehigh and Northampton County held a Fundraising Bingo in November and slated to profits to be donated to Lehigh Valley Reilly Children’s Hospital. $8,500 was donated to the hospital on December 15.
