I love takeaways as a treat, but am watching what I eat as I’m getting married this year. Friday night is homemade pizza night as my fiancé received a Ooni Koda Pizza Oven for Christmas.

The former – I’ve been keen to support local pubs and restaurants that have needed to move to takeaways during lockdowns.

I love a weekly takeaway but also try to cook healthy meals. I do a great lasagne with tortillas instead of pasta.

HAPPENING AT HARTS Our latest news and views

BIGGER HARTS Despite the continued uncertainty and disruption caused by Covid-19, and with many high street stores struggling, we have continued to buck the trend embarking on an ambitious multi-million pound expansion and redevelopment project. Last autumn saw the opening of the new garden department, now an integral part of the store. This light, airy space offers a much-improved customer experience with more room for permanent and seasonal displays. Another stage of the project - the store’s new carpark - was completed last December. This

We’re delighted to announce we’ve won the Good Retail Awards 2021 Sustainability Initiative Award. This award highlights our continual efforts to reduce the impact our business has on the environment. Whilst already recycling over 300 tonnes of wooden pallets, cardboard, plastic, metal and electrical items each year, we are always looking at any aspects of our business where further beneficial changes can be made. During our recent redevelopment work we installed LED lighting, an air-source heat pump and solar panelling, as shown here. Part-funded by Low Carbon Dorset as part of the European Regional Development Fund, this will save more than 46.2 tonnes of CO2 per year. Other areas highlighted were our eco-friendly packaging. We now use biodegradable Eco Flo (made from maize starch) instead of polystyrene packing chips and HexcelWrap - the industryleading sustainable alternative to bubble wrap. Cardboard boxes from suppliers are reused rather than recycled whenever possible and any new cardboard packaging is sourced from a company less than 10 miles away. We have also looked carefully at the products we sell, in terms of providing alternatives to singleuse plastics. Our ranges include biodegradable plates and bowls, natural alternatives to clingfilm, plastic-free paper and stainless-steel straws, reusable food and drink containers, composting bins and much more. Instore, plastic carriers are being phased out and replaced with environmentally-friendly paper bags.

S

ince getting through to the semi-finals of MasterChef in 2013, Ollie Hunter has been on a mission to get us thinking about the way we eat and live, to make the most of local produce and minimise waste. His new book, from which these recipes are taken, has a firm focus on sustainability when it comes to cooking, kitchenware and general living. “I accidentally became a chef really, not through ambition, but because of my love of nature. It is this passion that led my wife and I to buy a pub with the sole aim of making it the most sustainable pub in Britain,” he says. “It gave us a place to be experimental in solving problems around food waste, leading to creative solutions and delicious, sustainable food.” llie’s first book, asy Ways to oin the ood Revolution, outlined his 3 key principles when it comes to eating sustainably - which apply to the recipes in his latest book as well. These are zero waste, organic and sourcing 50% of what we eat from within 30 miles.

Line-caught Mackerel in Cream Sauce with Broad Beans, Leaves and Stalks “Mackerel is arguably one of the best fish you could ever eat. I have many happy memories of days spent fishing with my family off the Cornish coast, and of the joy of bringing our catch home. This recipe uses at least 60% of the broad bean plant - if we were just using the beans (and some people even like to remove the shells) it would only be about 15%! I also like to keep the broad bean casings to add to stock for risottos.” SERVES 4 4 line-caught mackerel, filleted and pin-boned Locally produced oil of your choice with a high smoking point, for frying Knob (pat) of butter 2 shallots, finely diced 80ml white wine 200ml double cream 200ml water 200g fresh broad beans (fava beans) 3 broad (fava) bean stalks, finely diced 200g fresh peas Small bunch of fresh dill, leaves only, chopped Small handful of broad (fava) bean leaves Sea salt

1 Place the 8 mackerel fillets on a baking tray, skin side up. Oil and salt both sides and turn the grill to high. 2 Heat a glug of oil, the butter and shallots in a large frying pan over a medium heat. Once the shallots are soft, add the white wine and reduce by half. Add the cream and water, season to taste and reduce the heat to low. 3 When the sauce is at a gentle simmer, add the broad beans, broad bean stalks and fresh peas. Cook for 4-5 minutes until the beans are soft or al dente, then add the dill. 4 Meanwhile, place the mackerel under the hot grill and cook for around 4-5 minutes until the skin is golden. 5 Spoon the sauce into bowls, place the mackerel fillets on top with any juice left from the baking tray, and garnish with chopped dill and the broad bean leaves.

Cauliflo er Kedgeree with Smoked Salt and Boiled Eggs “This dish is so versatile and works as brunch, lunch, dinner or a late-night munch. Kedgeree is traditionally made with smoked haddock, but sustainablysourced smoked haddock isn’t always available, so here it is prepared with a large, white, creamy cauliflower instead.” SERVES 4 FOR THE CAULIFLOWER 1 large cauliflower, florets, leaves and stem separated 1 tbsp pumpkin seeds 1 large pinch of smoked salt 1 tsp curry powder Locally produced oil of your choice, for drizzling FOR THE RICE 2 onions, sliced thinly 6 garlic cloves, diced Large bunch of fresh coriander (cilantro), stalks diced, and leaves left whole 1 tbsp curry powder 1 tsp ground turmeric 1 tbsp ground cumin 4 cardamom pods, split 1 bay leaf 300g basmati rice Sea salt TO SERVE 4 eggs Black onion (nigella) seeds Plain yoghurt

1 Preheat the oven to 200C/Gas 6. Chop the cauliflower stem into chunks and the leaves into small pieces. 2 Place the cauliflower stem, florets and leaves with the pumpkin seeds in a roasting pan. Sprinkle over the smoked salt and curry powder and drizzle over a little oil. Toss together and roast for 15 minutes. Set aside until needed. 3 Add the onions to a large saucepan with a lid, along with a drizzle of oil. Cook over a medium heat for about 10 minutes or until the onions are nice and soft. Add the garlic and coriander stalks.

4 Dice the roasted cauliflower stem and add to the pan with the spices and bay leaf. Stir and continue cooking for 2–3 minutes. 5 Add the rice, a little sea salt and 600ml water and bring to the boil. Stir once to release any rice from the bottom of the pan. Cover the pan with a snuglyfitting lid, reduce the heat to low and leave to cook very gently for 12 minutes or until the rice is cooked through and the water has been absorbed. 6 Meanwhile, boil the eggs for 8 minutes or until hard boiled. Drain and run under cold water for a minute, then peel and slice in half. Set aside. 7 Remove the rice pan from the heat, uncover and remove the bay leaf and cardamom pods. Gently fork through the roasted cauliflower florets, leaves and stalks, and replace the lid for a further 2 minutes.

Homegrown Cannellini Beans with Sourdough “Cannellini beans are one of the easiest plants to grow and super rewarding for the fact that they require little growing space for the amount of crop they produce (as is the case with all beans). “I was pondering what to do with these little creamy delights when I remembered a fantastic restaurant in Tuscany that did them so simply – in a rich, herby sauce with a light drizzle of Tuscan olive oil and a chunk of bread... stunning.” SERVES 4 250g homegrown prime or dried cannellini beans (homegrown borlotti beans would also be delicious here) 1 large onion 4 garlic cloves 2 carrots, tops removed (and kept for something else) 1 sprig of rosemary, leaves stripped and stalk reserved 10 fresh sage leaves

2 Wash and peel the onion and garlic (reserving the cloves and onion) and add the peelings to a large saucepan with the drained beans, 5cm of carrot, the rosemary stalk and 4 of the sage leaves. 3 Cover with double the amount of fresh water. Bring to a simmer and cook, uncovered, for about 40 minutes until the beans are soft. Drain, reserving the cooking water and discarding the aromatics. 4 Dice the onion, garlic and remaining carrot and finely chop the remaining sage leaves and the rosemary leaves. Add these to a medium saucepan with a few glugs of olive oil and sauté over a medium heat for about 8 minutes, stirring occasionally, until soft. 5 Add the cooked beans and 250ml of the cooking water. Season with salt, bring to a simmer and cook for about 5 minutes or until all the water has turned into a creamy sauce. 6 About 5 minutes before the end of cooking time, finely slice the courgette stalks and leaves and stir into the beans. Serve the cannellini beans with chunks of sourdough bread and a drizzle of the best-quality olive oil.

Buying in bulk is the way forward – it means there is less packaging, less energy spent on transporting the goods and it’s cheaper in the long run. Visit butchers, fishmongers or local farms to get the best deals on bulk buys. Another great thing to do is visit zero-waste shops and take your own containers to refill stations. Think about each item on your shopping list and consider what might be the most sustainable way of buying it, for example, getting your milk delivered the old-fashioned way in reusable glass bottles. By changing the way we shop, we can create demand and change the systems already in place. A great example of this change in action is the fact that supermarkets are slowly waking up to calls for less packaging as a result of demand from shoppers. ECO-FRIENDLY CLEANING

You can make a simple, ecofriendly cleaner for the bathroom and/or kitchen by mixing 1 part vinegar with 1 part water. You can leave naturally-scented ingredients like rosemary or lavender in the vinegar to infuse for 10 days before using, or add essential oils in a natural fresh scent of your choice. Leave for 1 week, then strain (if needed) and pour into a reusable spray bottle. You can also replace the vinegar with citric acid powder if you like, but use warm water to dissolve the powder. For tough surface stains, make a thick paste with equal amounts of bicarbonate of soda (baking soda) and water. Scrub this into

the affected area, leave it overnight and then wipe away the next day. KITCHEN ESSENTIALS

If you’re looking to shape up this spring, you can still tuck into a roast or burger-inspired bake - as these recipes from Slimming World prove

HEALTHY AND HEARTY Roast Leg of Lamb with all the Trimmings SERVES 4 1kg leg of lamb, all visible fat removed 8 garlic cloves, sliced 12 rosemary sprigs 1kg floury potatoes, peeled and cut into large chunks Low-calorie cooking spray 2 tsp garlic salt 4 level tsp gravy granules Steamed carrots, to serve Garden peas, to serve FOR THE MINT SAUCE Small pack fresh mint, leaves picked and finely chopped 2-3 tbsp wine vinegar (white or red), to taste Pinch of sweetener granules

1 Preheat your oven to 160C/ Gas 4. 2 Put the lamb in a non-stick roasting tin. Pierce all over with a 24

short, sharp knife and push in the garlic and rosemary sprigs. Season lightly and roast in the middle of the oven until cooked to your liking (about 1 hour 15 minutes for medium or 1.5 hours for well done). 3 Once the lamb has been in the oven for about 30 minutes, cook the potatoes in a saucepan of lightly salted boiling water over a high heat for 10 minutes or until just tender. Drain well and tip into a roasting tin sprayed with lowcalorie cooking spray. 4 Sprinkle over the garlic salt, if using, toss well and roast at the top of the oven for about 40 minutes or until crisp and golden. Meanwhile, put the mint sauce ingredients in a bowl and add 6 tbsp boiling water. Mix well and set aside.

CELEBRITY CHEF appearing regularly as a celebrity chef, and continues to be involved with restaurants internationally. Ken was born in 1949 in Tucson, Arizona, where his Cantonese parents had immigrated. After losing his father when Ken was just a baby, his mother moved to Chicago to be with relatives. As Ken grew up, he found American food less desirable than his mother’s cooking, so she would send him to school with a flask of hot rice and stir-fried vegetables. Aged 11, he went to work in his uncle’s restaurant, where he earned the equivalent of p a day. At 19 he headed off to California to study art history and French history. To pay his university fees, he began offering cookery lessons and quickly discovered his passion especially when it came to his native Chinese cuisine. He went on to teach at the California Culinary Academy in San Francisco, also travelling to France and Italy to explore gastronomy further. In 1981, the ew ork Times ran a profile on him which coincided with the publication of his first book. Soon after, the BBC got in touch, leading to his first T appearance on the series Ken Hom’s Chinese Cookery, accompanied by his second book of the same name. AN INSTANT HIT

His autobiography My Stir-Fried Life was published in 2016 and has since been translated for publication in China and Thailand. For many years, Ken has been an ambassador for the humanitarian charity Action Against Hunger and supports several others, including Prostate Cancer UK. He was diagnosed with prostate cancer just over a decade ago and has since made a full recovery. Savoury Beef with Asparagus Make the most of seasonal asparagus with this tasty recipe from Ken Hom. SERVES 4 450g lean beef steak 450g fresh asparagus 3 tbsp ground nut oil 100g onions, thinly sliced 2 tbsp black beans, coarsely chopped 1.5 tbsp finely chopped garlic 2 tsp finely chopped fresh root ginger 3 tbsp home-made or good-quality bought chicken stock or water 1 tbsp Shaoxing rice wine or dry sherry 1 tsp sugar salt and pepper 2 tbsp oyster sauce for the marinade 2 tsp light soy sauce 2 tsp Shaoxing rice wine or dry sherry 2 tsp sesame oil 2 tsp cornflour Salt and pepper

THE

1 Place the beef in the freezer for 20 minutes. This will allow the meat to harden slightly for easier cutting. Cut it into thin slices, each around 4cm long. 2 Put the beef slices in a bowl and add the soy sauce, rice wine or sherry, sesame oil, cornflour, half tsp of salt and a quarter tsp of pepper. 3 Mix well and let the slices steep in the marinade for 15 minutes. Meanwhile, slice the asparagus on the diagonal into 7.5cm pieces and set aside until needed. 4 Heat a wok or large frying pan over a high heat until it is very hot. Add the oil and, when it is very hot and slightly smoking, add the beef from the marinade and stir-fry for about 2 minutes. Remove the meat and drain it in a colander. 5 Pour off all but just over 1 tbsp of the oil and reheat it over a

high heat. When it is very hot, add the onions, black beans, garlic and ginger. Stir-fry for 1 minute then add the asparagus and stir-fry for another minute. 6 Now add the stock or water, rice wine or sherry, sugar, 1.5 tsp of salt and half tsp of pepper. Continue to stir- fry for 3 minutes or until the asparagus is slightly tender. Add more water as necessary. 7 Quickly return the meat to the wok, add the oyster sauce and stir well. M

ost companies would feel proud to notch up 25 years or more in business but a 265th anniversary is on another level entirely. That’s the extraordinary milestone glassware maker Riedel reaches this year, dating the company back to 1756 - the year Mozart was born. Since then, no less than 11 generations of the Riedel family have been involved in moving the company forward through the centuries. Back in 1756, the historical country of Bohemia was part of the Habsburg Monarchy. It was here that Johann Leopold Riedel started the story of this family dynasty, which to this day remains inseparably connected with glass.

THE GENERATION NAME The tradition of the Riedels as glass makers encompasses unbelievable success stories but also major social upheavals, economic crises and personal tragedies. Through skill and creativity, the company withstood them all, from the end of the monarchy to the social upheavals of the newly established Czechoslovakia Republic, and the effects of the global economic crisis. The Second World War presented another challenge. Due to this, the glass industry was forced to change from manufacturing luxury goods to strategic war products. Walter Riedel, 8th generation of the company, worked on picture tubes, part of the radar used for monitoring airspace. When the Russian army conquered Berlin they were eager to locate the scientist behind this invention. Walter was forced to sign a work contract and held prisoner in Russia for a decade. By the end of the war in 1945, the Riedel family had lost all their property, factories and private assets. The future looked bleak, but Walter remained undeterred. In 1955 he received an offer of a new start in Austria, courtesy of the Swarovski family. Walter and his son Claus J, Riedel moved there and reopened their glass factory in Kufstein the following year. Some 65 years on, Riedel is still family owned and run and continues to go from strength to strength, introducing innovative new designs to this day. 34

THROUGH THE CENTURIES 1st Generation: Even before Johann Leopold Riedel (3rd generation) set up the first entrepreneurial glassworks, his grandfather Johann Christoph Riedel travelled around Europe as a glass merchant. 2nd Generation: Johann Carl Riedel (1701-1781) continued the business, manufacturing and decorating hollow glassware. 3rd Generation: Johann Leopold Riedel (1726-1800) became the founder of the entrepreneurial dynasty when in May 1756 he put the first Waldglas works into operation.

4th Generation: Anton Leopold Riedel (1761-1821) expanded his father’s business with an increased focus on luxury items, including the production of chandelier crystal. 5th Generation: Franz Xaver Anton Riedel (1786-1844) was a famous engraver and glass cutter and the first in the history of glass to melt two different colours of glass together. 6th Generation: Josef Riedel the Elder (1816-1894) took advantage of a newly opened train line in 1875, laying the foundations for further expansion.

In 1986, he introduced the first machine-made glass based on wine varieties in history – Vinum! 11th Generation: Maximilian Josef Riedel (born 1977) became CEO of Riedel Crystal of America at the age of 25. He is also a designer and has won numerous awards for his designs. 12th Generation: Laetizia Riedel Röthlisberger (born 1974) is an attorney and sits on the family Board advising on legal matters, including design protection and copyright.

Decadent decanters Riedel decanters are stunning to look at, but also provide key benefits. With older wines they separate the liquid from any sediment, while with younger wines they increase aeration, offering greater complexity, flavour and aroma. Decanting also smooths out tannins and allows higher levels of fruit to come through.

Form and flavour We choose wine glasses for all sort of reasons, generally opting for something we find personally appealing or practical. However, Riedel take that a step further. Since 1958, the firm has been designing glasses, not only for aesthetics and functionality but also for taste. Georg Riedel, the 10th generation owner of the family business, explains that the company view a glass as a tool, crafted to enhance and balance the factors involved in enjoying wine - including fruit, neutrality and acidity. To do this, each Riedel glass is made considering 3 design elements - size, shape and the opening. The size controls the amount of air the wine is in contact with, the shape is responsible for the wine flowing to the opening and the rim’s diameter affects how it lands on the palate. The perfect glass brings out the fruity flavours of a wine whilst diminishing acidic or bitter qualities. For a Sauvignon Blanc, for example, a smaller mouthed glass ensures you tip your head back more while drinking. This keeps the acid receptors on the tongue away from the wine, enhancing the exotic fruit flavours often associated with this grape variety. In contrast, an oaked Chardonnay, benefits from generously shaped glass with a wide mouth. This directs the wine predominantly towards the sourness-sensitive edges of the tongue, helping balance acidity while the size of the bowl allows space for the wine to develop. Although Riedel don’t promise miracles – no glass is capable of turning cheap supermarket plonk into a vintage bottle, they promise you don’t have to have a highly educated palate or be a wine enthusiast to notice the difference the right glass can make.

Masticating Juicers A masticating juicer (also known as a cold press juicer or slow juicer) crushes and presses juice out of ingredients using a slow rotating auger (screw) and a screen. This process is very efficient and produces a higher yield of juice compared to a centrifugal machine. This method is also particularly suited for juicing fibrous leafy greens such as kale and wheatgrass. Very little heat is generated, and less oxygen incorporated in the juicing process thanks to the machine’s slow operating speed. This means less discoloration and an increased shelf life for the juice. Another benefit of masticating juicers is that they are much quieter than centrifugal juicers although they do tend to be bigger, heavier and more expensive. 40

Spring may not seem an obvious time for tucking into a bowl of soup, but these fresh flavours and healthy options will make you reconsider

Avocado Gazpacho SERVES 4 FOR THE CHILLED BROTH 300g ripe vine tomatoes, quartered 150g plain yoghurt 1 tbsp tomato puree Sea salt TO SERVE 2 perfectly ripe avocados, at room temperature A quarter of a sweet yellow or orange pepper, seeds removed and diced 3cm piece cucumber, seeds removed and diced 4 tsp extra virgin olive oil Freshly ground black pepper Sea salt flakes (optional) Crusty bread (optional)

2 Shortly before serving, prepare the avocados. Cut in half, remove the stone and score with a 1cm grid pattern, without cutting through the skin. Use a dessert spoon to scoop the chunks into a bowl. If it needs to stand for more than 10 minutes, dress with a little lemon or lime juice to prevent browning. 3 Using light fingers and a spoon, gently place an elevated mound of avocado pieces in the centre of each bowl. Pour a shallow pool of tomato broth around the avocado. Scatter the pepper and cucumber pieces on top. 4 Use a teaspoon to drizzle droplets of the olive oil across the surface, add a grind of black pepper and finish with sea salt flakes if using.

1 Whizz all the broth ingredients in a blender or food processor with 60ml water until smooth. Push the mixture through a sieve, ideally over a pouring jug. Cover with cling-film and refrigerate for at least 1 hour but up to 24 hours.

Vegan Ramen SERVES 2 10g dried shiitake mushrooms 2 pieces dried kombu 500ml vegan stock 2 garlic cloves, peeled and bruised Thumb-sized piece of ginger, sliced 2 tbsp soy sauce 1.5 tbsp white miso 1 tbsp rapeseed oil 60g shiitake mushrooms, halved if large 140g firm tofu, cut into 2cm squares 2 baby pak choi, halved 1 medium carrot, julienned 1 small courgette, julienned 2 packs Taiwanese spicy noodles with sauce sachet TO SERVE Fresh coriander and chilli oil

1 In a large saucepan, cover the dried mushrooms and kombu with 500ml water and soak overnight. 2 Add the stock, garlic, ginger, and soy sauce to the saucepan. Mix the miso with a little bit of stock to loosen it then add it to the pan. Bring to the boil and simmer for 1 hour, until reduced by about a quarter. This step can be done ahead of time and stored in the fridge for up to 3 days. 3 Heat the oil in a frying pan over a medium heat. Sauté the mushrooms until golden, then remove from the pan. Add the tofu and brown on both sides. Pour in the sauce sachets from the noodles and reduce until thickened and glossy. Turn the tofu pieces to coat in the sticky glaze then remove from the pan. 4 Cook the noodles according to the instructions on the packet. Bring the stock back up to a simmer and add the halved pak choi. Cook for 1-2 minutes or until the stems are just tender. 5 Divide the noodles between serving bowls, use tongs to remove the pak choi and lay over the noodles. Pour over the broth and add the mushrooms, carrot, courgette, and tofu to the bowl. Garnish with fresh coriander and a drizzle of chilli oil. 1 Put your pan on a medium heat and add the oil, onions, red pepper, garlic, ginger, chilli, red Thai paste and tomato purée, then turn the heat to low and cook until the onions have softened, around 10–15 minutes. 2 Crumble in the fish stock cube and add the lime leaves, lemongrass, lime halves, fish sauce, soy sauce and most of the spring onions (leave some for a garnish). Put in the rice noodles, cover and cook for a couple of minutes until they slightly soften. 4 Check the smoked haddock fillets for bones and then add them, whole, to the pot with the coconut milk and coriander. Simmer until the fish is cooked and the noodles are tender. Garnish with the remaining spring onions. This goes well with toasted pitta bread. 54

Sweet Potato Brownies Brownies are traditionally made with lots of melted butter and sugar. However, this delicious version is made with steamed sweet potato and mashed banana, with just a few tablespoons of maple syrup, and contains no flour. MAKES 12 350g or about 2 small sweet potatoes, peeled and cut into small chunks 50g dark/bittersweet chocolate, broken into pieces 3 tbsp smooth unsweetened peanut butter 3 tbsp coconut oil 3 tbsp maple syrup 1 large banana, peeled and broken into pieces 1 tsp vanilla extract Half tsp ground cinnamon 3 eggs 50g unsweetened cocoa powder 1.5 tsp gluten-free baking powder

2 Cook the sweet potato in a steamer for 10–15 minutes, until just soft when pressed with a knife. 3 Meanwhile, put the dark chocolate, peanut butter, coconut oil and maple syrup in a small pan and heat gently, stirring until the chocolate has melted and the mixture is smooth. Take off the heat. 4 Transfer the sweet potato to a food processor, add the banana and blend until smooth. Add the vanilla and cinnamon, then gradually mix in the eggs. Add the melted chocolate mixture and beat until smooth. 5 Mix the cocoa and baking powder together. Add to the food processor and blend again until smooth.

Cranberry, Chia and Apple Muesli Bars These tasty, energy-packed, low-fat bars are sweetened with apples, dried cranberries and just a little sugar, then mixed with the tiniest amount of coconut oil to keep them moist. Egg and chia seeds bind it all together. MAKES 12 250g or 2 small dessert apples, cored and diced 2 tbsp water 2 tbsp coconut oil 150g gluten-free muesli 2 tsp chia seeds 2 tbsp dried cranberries 4 tbsp light muscovado sugar 1 egg, beaten

1 Preheat the oven to 180C/Gas 4. Line a 20cm/8in square cake tin with baking parchment. 2 Put the apples, water and oil in a pan, cover and simmer for 5 minutes, until the apples are soft, then mash them. 3 Stir the muesli, chia seeds and cranberries into the apple mixture, then mix in the sugar and beaten egg. Tip the mixture into the lined tin and press into an even layer with the back of a spoon.

Oat and Fruit Loaf Cake egan, heart-healthy and full of fibre thanks to the gluten-free oat flour, this is particularly good served in toasted slices, spread with nut butter. It is sweetened with date syrup and caramelised ripe bananas. SERVES 8 115g sultanas 120ml hot tea 12 cashew nuts 1 tbsp coconut oil, plus extra for greasing 3 ripe bananas, halved lengthways Juice of half a lemon 3 tbsp apple juice 120ml date syrup 225g gluten-free oat flour 2 tsp bicarbonate of soda Half tsp salt

2 Preheat the oven to 180C/Gas 4. Grease a 900g/2lb loaf tin and line with baking parchment. 3 Melt the coconut oil in a frying pan over a medium heat and fry the bananas for 1–2 minutes, until golden. Turn them over and repeat on the other side. Remove the pan from the heat and set aside. 4 Put the lemon juice and apple juice in a blender. Discard the soaking water from the cashews. Add the cashews, caramelised bananas to any liquid collected in the frying pan, and the date syrup. Blend on high for 20–30 seconds, until combined, then pour the banana mixture into a large mixing bowl. 5 Sift the oat flour, bicarbonate of soda, salt, cinnamon, ginger and nutmeg over

We often associate pasta with the dried, ready-made variety but there is nothing quite like making your own from scratch. Valentina Harris is an authority on Italian food, with 20 cookery books to her name and her own BBC series, Italian Regional Cookery. Here, she provides general tips and a recipe for fresh egg pasta, otherwise known as sfoglia, which originates from Emilia-Romagna, a region in northern Italy. Home-Made Italian Pasta (La Sfoglia) MAKES AROUND 4 SERVINGS 400g soft wheat flour 4 large eggs

1 Measure out the flour and tip it on to your work surface. Make a hollow in the pile of flour with your fist. 2 Beat the egg lightly in a bowl, just enough to blend the yolk and white together, and pour into the hollow.

3 Blend the egg and flour together with your fingertips until a lumpy mass has been formed, then pull everything together with your hands. 4 Knead the mixture into a smooth ball of dough. Do not press the dough hard on to the work surface or stretch it as you knead. The technique simply involves a rolling and light squeezing action with both hands. When the dough feels cool and waxy and springs back immediately when lightly pressed with a finger, it is ready. Do not over-knead or the dough will lose all its elasticity. 5 Wrap the dough in cling-film or a clean cloth and leave to rest for at least 20 minutes before starting to roll it out for cutting.

PERFECT PASTA USING A PASTA MACHINE

1 Break off a piece of rested dough the size of a small fist, then flatten it out with your hands. 2 Push the dough through the widest setting on your pasta machine. Fold this in half and repeat. 3 Do this three times or until the air pocket, which should form at the fold, audibly pops. In Italy the phrase is: “la pasta canta!” (“the pasta sings!”).

ROLLING BY HAND

Roll out the rested dough as thinly as possible with a strong, long rolling pin. Keep rolling it, moving it around to be sure it isn’t sticking to the work surface, until it is really elastic, smooth and shiny. It should cool down considerably as you work it, and you will feel it drop in temperature. When it is ready, the sheet of dough should feel like a brand-new, slightly damp chamois leather. It must not become brittle or it will crack when you cut it. You can keep it pliable by covering it with a slightly moist clean cloth when you are not working with it, though the real secret is to work as fast as possible. CUTTING EDGE

You can cut your pasta into the desired shape as soon as it is dry enough to roll up without it sticking to itself, either by hand using a sharp knife, a special wheel, or by using the cutter on a pasta machine. Once cut, you can use the pasta immediately, or let it dry out further by leaving it exposed to the air for about 30 minutes. Some people like to drape long strands of pasta over a rolling pin or similar, so it is suspended and the air flows around it. If you are making a stuffed pasta shape such as ravioli, use soft, moist pasta, otherwise it will not be possible to close each parcel securely.

4 Move the pasta machine down to the next (narrower) setting and continue to wind it through the rollers to the last or penultimate setting on the machine, depending on how fine you want it to be, rolling the dough twice on each setting. 5 Lay the finished sheet of pasta carefully on to a floured surface. If you are going to make filled pasta, use it immediately. If you are making ribbons of pasta, such as tagliatelle, leave the uncut sheet of pasta to dry out to a parchment texture before you cut it. 6 Now take another lump of dough the size of a small fist, flatten it, and begin again exactly as described in step 1. Do this with all the pasta you have made. 7 Keep an eye on the sheets of pasta you have rolled out. Put them on a floured surface to dry. Remember, they will not be easy to cut if they are too dry. To keep them moist, cover with moist, clean cloths.

WHAT TO ADD?

As an overall rule, short shapes are best with chunky sauces, and flat ribbon shapes or spaghetti-like shapes are best with smooth sauces – but there are many exceptions! Another rule of thumb is that strong, garlicky, spicy sauces are not considered the best accompaniments for the delicate richness of fresh egg pasta, since they overpower it, but are perfect with dried durum-wheat pasta, whereas creamy, cheesy sauces will suit either type. On the whole, so long as the sauce wraps itself around the pasta, rather than staying behind as a separate element in the pan or serving bowl, then the partnership has worked.

A

Our family business for more than 100 years

t the age of 17 Walter Hart, an apprentice blacksmith, joined the Royal Field Artillery as a farrier. In 1919 he was demobilised from the army and established his own blacksmith business in Sturminster Newton, just a brief canter away from where we are today.

As Walter’s reputation and the business grew, one of his sons, Bill, joined the family business in 1941 and helped his father shoe horses, mend cart wheels and carry out other general repair work. In 19 5 Walter’s second son, ddie, finished his National Service in the RAF and joined the burgeoning family firm. In 1949 the business outgrew the small workshop, and new premises were constructed on the fringes of a marshy area of town called Butts Pond. We still call this home to this day. Two wonderful blacksmith shops and forges, costing the princely sum of £800, were erected. Sadly, neither are still standing, but you can still see on display, in our store, one of the original anvils and shoeing tools used by Walter all those years ago. Around the time of the new forges, a decision was made to branch out. As Eddie was never that fond of horses, he started retailing agricultural ironmongery, and manufacturing basic farm implements. By 1973, with farrier work in decline, the manufacturing side of the business had taken off and a brand new factory was built to support this success. Harts was well regarded through the UK farming community, most famous perhaps for its yard scrapers and feed trailers, and exhibited at all the major county shows. Eddie had created a major manufacturing business, and chose to refuse offers from leading national companies to buy him out. He saw the greater value, like today’s generation, in seeing the family business continue. Eddie’s son Philip joined the business in 1979 and set about transforming the retail shop from an agricultural supplier into a modern, country department store. The local hardware shop had burnt down and closed, and this was the launch pad for the retail arm of the business. The old forge buildings were demolished, and a purpose-built shop and offices were erected. With the business growing, the store was extended in 1984 and again in 1991. Philip always had his eye on the next big thing and, with that in mind, Harts took its first tentative steps into mail order in the early nineties. Some early success gave us the encouragement we needed, and our first trading website was launched in 1995 - one of the first operational and trading sites anywhere in the country (we had a feature written about us in the Daily Telegraph at the time). 64

Continued growth saw yet another expansion of the retail premises in Sturminster Newton in 2003. The online side of the business had proved successful but was being driven forward without a proper direction for a while until Philip’s two sons left university, and joined the family firm in . ohnathan and raham were able to bring a much greater understanding of the modern, technological world and provided the next generational drive to push forward rapidly with our online presence. The right staff and ingredients were in place, and with hard work and perseverance, as well as quick lessons learned, the internet business has grown very rapidly, becoming a well-respected, national award-winning enterprise. ur , square foot despatch centre was completed in 2010 and a new suite of sales offices shortly after in 1 , both purpose-built to give our mail order customers the same level of service and efficiency that our store customers have enjoyed for so many years.

Since then we have continued to grow as a business to become a leading independent retailer, recognised with a number of local and national awards. The store now encompasses many more departments, including Garden, Tools, Electrics, Camping, DIY, Giftwares, Housewares, Storage, Clothing, Bathroom and of course Kitchen, and is a wonderfully relaxing environment to shop and work in. ur online presence has increased significantly too and a new, innovative and modern website was launched in 2018. In 2019 we celebrated our 100th anniversary with a series of in-store events and promotions themed around family and food. After 40 years in the business, Philip decided it was also a fitting time to relinquish his custodianship of the business. Philip’s son, Graham, has taken on the role of MD with his other son, ohnathan, becoming finance director. Work also started on the ambitious multi-million pound redevelopment of our store and garden shop.
