very warm welcome to Issue 16 of Kitchen. Hopefully, as you’re reading this, the time has at long last arrived when we are once again able to embrace family and friends we have not seen for a long time or celebrate eagerly-awaited weddings that seemed as though they’d never take place (in which case, our online wedding list service is worth knowing about!) As you may have seen in the news, companies around the world are facing unprecedented times. With stock and raw material shortages and an exponential growth in shipping costs, our purchasing team have been working hard to not only keep your favourite products in stock at competitive prices, but also to source some fantastic new ones. Our Coffee Shop Manager Ben is enthusiastic about sourcing ingredients locally and can adapt many dishes to be gluten free or vegan. In this issue you’ll find some glorious summer recipes - from Greek Cheese Pie through to Chicken Shawarma Flatbreads (I’ll be making these, they look scrummy). We also bring you an exclusive interview with Rockfish owner and champion of the UK fishing industry, Mitch Tonks, along with 3 delicious recipes from his brand-new book, The Rockfish Cookbook. My go-to drink on hot days is a refreshing Pimm’s, filled up with lots of fruit but minus the mint.
A crisp pinot grigio or sauvignon blanc on a summer’s evening is right up there. Pimm’s is also a great summer drink.
A Gritchie IPA which is very fruity and hoppy. Sadly though, 1 is never enough!

Drunken Prawns from Something Else Fishy in Milborne Port. This is prawns in Jack Daniels and sweet chilli sauce - the perfect combination.
Anything with prawns in, especially if paired with garlic and chilli. I also enjoy calamari, served with a squeeze of lemon.
A seafood paella with lots of king prawns, monkfish, fresh local mussels and chorizo.

Our new outdoor garden area.
After a visit to our new garden department, the answer is probably extremely well! The transformation from tired and cramped garden shop to modern and spacious integrated garden section is finally complete. Here you’ll find all your gardening needs catered for, from seeds, bulbs, garden paint and wood stain to compost with seasonal displays of bedding and plants for added inspiration. The final stage of our new department was the opening of a large, partially covered outdoor area, now packed full of colourful pots and plants. We stock popular brands such as Hozelock, Bulldog, Kent & Stowe and Burgon & Ball and, in addition, offer a great selection of gardening gifts. There’s also a large pet section stocking pet food, treats, bedding, toys, healthcare, bowls and feeding accessories, grooming, wild bird food and much more. Our Garden Department Manager Michael and his team have a wealth of knowledge between them and look forward to helping with any gardening or planting questions, or just chatting to you in general! The department is easily accessible with parking available right in front of the entrance. Add colour with our extensive range of plants.

LOFTY AMBITIONS Hopefully, by the time you read this, our latest venture – Harts Coffee Loft – will be up and running. Situated on the spacious first floor above the new garden department, Harts Coffee Loft seats 60 people and is the perfect place to take a break from shopping, meet up with family and friends over a freshly brewed coffee and cake, a delicious lunch or afternoon tea. Manager Ben and his team look forward to welcoming you between 8.30am to 5pm, Monday to Friday and 8.30am to 4pm on Saturdays, with meal options below: Breakfast Breakfast will be served from 8.30am until midday, Monday to Saturday. Choose from a selection of light options, such as scrambled eggs and smoked salmon on toast, or indulge in a traditional full English. Lunch Lunch is served between midday and 3pm, Monday to Saturday. There’s plenty of choice with soup, jacket potatoes, paninis and sandwiches, not to mention decadent desserts! Afternoon Tea Afternoon tea is available between 3pm-5pm on weekdays and 3pm-4pm on Saturdays. Treat yourself to a traditional high tea served on a 3-tier stand or choose from a selection of freshly made sandwiches, cakes and pastries with a hot beverage or refreshing cold drink. Many of the dishes on our menu can be adapted to be gluten-free or vegan and ingredients are sourced locally wherever possible. A children’s menu is also available.

Greek-Style Cheese Pie with Roast Sweet Pepper & Cherry Tomato Salsa Tuck into this Greek inspired pie and vibrant salsa accompaniment – a wonderful summertime lunch or supper dish. SERVES 4-6 FOR THE PIE 2 eggs 200g feta cheese, crumbled 200g full-fat soft cheese or cream cheese 250g ricotta 25g (5-6 tbsp) chives or the green parts from 2-3 spring onions, finely chopped 3 tbsp flat leaf parsley, finely chopped Freshly ground black pepper 4 tbsp rapeseed or olive oil
the pastry with oil. Place another sheet of filo on top of the first, again overlapping the edges, and brush with oil. Repeat until you have covered the inside of the tin completely and made a ‘shell’ for the filling. 4 Spoon the cheese mixture into the pastry shell and then cover the top layer by layer with the overhanging filo sheets, like wrapping a parcel, brushing with oil as you go. Finish by layering over the reserved filo sheet, folding and ‘scrunching’ to form a lid for the pie. Brush the top thoroughly with oil. 5 Bake in the preheated oven for 25 to 30 minutes until golden brown and crispy on the outside and set in the middle. Serve warm in squares or wedges.

In a small bowl, combine the finely chopped onion and garlic with the chillies, sugar, balsamic vinegar, oil and salt. Pour this mixture over the tomatoes and stir well to combine. 3 When the peppers are done, take them out of the oven and leave until they are cool enough to handle. Roughly chop each quarter into 6 or 7 smaller pieces and add them to the tomato mixture. Stir the salsa to combine the flavours, adding any juices from the roasting tin. 4 Scatter over the basil and gently mix through. Serve at room temperature.
TO MAKE THE SALSA 1 Preheat the oven to 180C/Gas 4. Start by washing and cutting the peppers into quarters. Put the peppers in a roasting tin, drizzle with a small amount of oil and roast in the preheated oven until soft and slightly charred at

Tagliatelle with Burrata and Burst Vine Tomatoes Burrata is a fresh, creamy cheese from southern Italy that has been called the queen of Italian cheeses. Here it is used in a simple but sumptuous pasta dish that only takes a matter of minutes, so you spend less time in the kitchen and more outside enjoying your meal. SERVES 2 225g tagliatelle 3 tbsp olive oil A good pinch of rock salt 1 tsp oregano 220g cherry tomatoes on the vine, a mix of colours is nice Half tsp of dried chilli flakes 1 tbsp of garlic oil 1 burrata ball Salt and freshly ground pepper to taste 2 large sprigs of basil, torn 1 sprig of fresh parsley, chopped
2 Meanwhile, pour the olive oil into a roasting tin and heat in a hot oven for approximately 3-4 minutes. When the oil is hot, carefully remove from the oven and add the tomatoes, sprinkle over the rock salt, oregano and the chilli flakes and roast for 5-8 minutes until just starting to burst.

Chicken Shawarma with Lebanese Watercress Salad and Garlic and Watercress Flatbreads
The following recipe has been created by Dorset-based chef Suze Morrison to celebrate British watercress. Grown in Dorset and Hampshire and in season from now until October, watercress is a nutritious addition to any summer salad. SERVES 4 FOR THE CHICKEN SHAWARMA 1.5kg boneless, skinless chicken thighs, cut into thin strips 2 onions, finely sliced 5 tbsp olive oil 1 tsp ground cumin 1 tsp ground coriander 1 tsp ground cardamom 1 tbsp mild curry powder 1 tsp baharat (a Middle Eastern spice mix) Half tsp sumac 2 tbsp honey 1 tbsp chicken stock powder FOR THE SALAD 4 baby cucumbers, shaved into strips with a vegetable peeler 3 tomatoes, diced 1 red onion, finely diced 50g watercress, chopped 20g flat leaf parsley, chopped 2 tbsp olive oil 1 tbsp lemon juice Salt and pepper to season FOR THE FLATBREADS 250g plain flour 1.5 tsp baking powder Half tsp salt 2 tbsp olive oil 1 tsp honey
2 Heat the oil in a large pan and fry the chicken and onions in batches until cooked through and lightly charred. Set aside.

5 Weigh the dough and divide into 6 balls. ith a long list of accolades and awards to his name, you’d expect Mitch Tonks’ new book to feature some pretty impressive fish recipes. You wouldn’t be disappointed. The latest in a string of recipe books authored by the former fishmonger, acclaimed restaurateur, chef and father of 5 (a list that makes you feel worn out just reading it) has been described as a celebration of seafood, sustainability and seasonality. It is also the first to be named after his soon-to-be 9 Devon and Dorset-based seafood restaurants, dotted along a coastline he views as producing some of the finest seafood in the world. Mitch grew up in Weston-super-Mare, where early memories include helping peel and prepare shrimps and buckets of eels arriving at his grandmother’s back door to be boiled and jellied.

FROM FIGURES TO FISH
FISH FOR COMPLIMENTS From selling fish, to cooking and writing books on it, running seafood restaurants and championing the fishing industry, Mitch Tonks has a passion for poisson 20
Fast forward to the age of 27 and Mitch, then a father of 2, found himself working in accountancy to pay the bills. Feeling somewhat frustrated with his career path and seeking change, he decided to head in an entirely different route by setting up a fish shop in Bath. That led to FishWorks, a restaurant upstairs. Which led to another and then another. Things quickly snowballed to the point Mitch had an award-winning 13site chain of restaurants across London and southwest Britain. The expansion proved too rapid however, and Mitch parted company with FishWorks in 2008, a year before it went into administration. A DIFFERENT DIRECTION
Undaunted, he moved to Dartmouth and established The Seahorse with two other partners. The stylish restaurant, which commands views of the River Dart, has prided itself on sourcing the very best produce, and was a winner of the Observer’s Best UK Restaurant award.

The other eateries that have gradually come under his charge - Rockfishes in Dartmouth, Torquay, Plymouth, Brixham, Exmouth, Exeter, Weymouth and Poole Quay – follow the same strong family ethos. A new Rockfish is also set to open in Salcombe next year. Mitch remains a man on a mission. He is passionate about supporting the British fishing industry which was hit, for very obvious reasons during lockdown, with no restaurants or export market. His own boat, Rockfisher, supplies his restaurants, supplemented by fish selected from Brixham Fish Market. By the time you read this, his new venture will be well underway, a virtual seafood market where users can buy directly from fishermen and fish merchants. Kitchen magazine caught up with Mitch just as his restaurants reopened for the summer following lockdown. Q. What are your hopes for the UK fishing industry, after the impact of the pandemic and Brexit? I hope we really start to value our fishing fleet and the quality of the seafood around the shores of the UK. It would be wonderful to think the nation was eating and enjoying the wonderful stuff we land here, rather than exporting that to other countries while importing other seafood (typically cod and haddock which is a British favourite still). Q. Tell us about your new venture, Rockfish Seafood Experience Boxes and the thinking behind it? When restaurants were closed, we wanted
to connect with our customers and give them the Rockfish experience at home and the idea proved so successful we are carrying it on. We deliver a range of fresh seafood nationally every Friday, along with full instructions on preparing it. Q. Do you feel the British public are growing in confidence when it comes to cooking fish and trying unfamiliar types? Yes, I do - there are so many programmes, cookbooks and reasons to eat seafood and it’s definitely on trend. Q. What would you advise as the top 3 essential pieces of kitchen kit when it comes to preparing and cooking fish? Greaseproof paper, good oil and a roasting tray. Q. Who are your greatest influences in life and work? As I’m getting older, I find my children influence me an awful lot - I find them inspiring, great company and they make me
want to be a better person and a better dad. My friend Will Beckett who founded the Hawksmoor restaurants is a brilliant role model and influence too. We have worked together on Hawksmoor and Rockfish, where he is our chairman, for about 8 years and in doing so we have discovered a wonderful friendship which I am sure we will enjoy throughout our lives. Q. Your newest restaurants are in Weymouth and Poole. Do you have a favourite spot in Dorset? I adore Lyme Regis, one of the most beautiful places in the UK. I went there as a child and often visit to enjoy the pubs, a walk on the beach and some fish at my friend Mark Hix’s restaurant Q. Where do you see yourself in 10 years, and why? Crispy Fried Salt-&-Pepper Cuttlefish (Brixham Calamari) I’ve wanted to put cuttlefish on the menu for a long time but always thought the word cuttlefish would put people off. So, I thought ‘Brixham calamari’ would be a fair way to accurately describe how it tastes and where it comes from. Get your fishmonger to clean the cuttlefish – it is messy – then wash well to remove the ink. SERVES 4 AS A STARTER 400g cleaned cuttlefish 2 good handfuls of rice flour Vegetable oil for deep-frying 2.5 tbsp salt and pepper mix (see box out) 1 fresh red chilli, thinly sliced 2 spring onions, thinly sliced on the bias 1 lime, cut into wedges
1 Cut the cuttlefish into thin strips about the width of a pencil. Cut the tentacles into chunks. Put it all into a container of water. Place the rice flour in another container next to it. 2 Heat the oil in a deep pan to 170C. (If you don’t have a thermometer or deep-fat fryer, heat the oil in a deep pan – it is hot enough to fry the squid when a small piece of bread dropped in quickly fizzles and crisps.) In small batches, take the cuttlefish from the water and dip into the flour, giving it a good massage to get a sticky but light coating. Slip the cuttlefish into the hot oil. Fry for about 2 minutes or until firm, pale and crisp. Drain on kitchen paper. 3 When all the cuttlefish strips have been fried, put them into a bowl and liberally sprinkle over the salt and pepper mix. Give it a good shake. Serve sprinkled with the sliced chilli and spring onions, and with lime wedges.

Pizza ‘Claminara’ This method was inspired by Pizza Pilgrims, the best pizza guys in London. During the lockdown of 2020 they launched an at-home pizza kit that fascinated me. I watched their video on how to make a delicious pizza in a frying pan. It was genius and it works! MAKES 4 PIZZAS FOR THE DOUGH 7g sachet of fast-action dried yeast 500g strong white flour 325ml tepid water 1 tbsp olive oil 5g salt 5g caster sugar FOR THE SAUCE 1kg live clams 100ml white wine 1 bay leaf 1 pepperoncini – hot red chilli 20g butter 20g plain flour 200ml milk 2 garlic cloves, grated A handful of chopped curly parsley TO FINISH 1 tbsp grated Parmesan 1 mozzarella ball (about 125g), roughly torn
1 Make the dough by mixing together the yeast, flour, water, olive oil, salt and sugar. Knead on a floured surface for about 5 minutes to make a nice elastic dough. Place in a bowl, cover with a tea towel or clingfilm and leave to rise until doubled in size. This will take about an hour, depending on room temperature. 2 Knock the dough back, then divide into 4 portions. Pinch and shape each into a ball and leave under the cover of a towel to prove for 30 minutes. 3 To make the sauce, prepare the clams. First check all the shells are undamaged and tightly shut (or close when tapped). Rinse under cold running water to remove grit or sand, then put the clams in a pan with the wine, bay and chilli. Cover and steam the clams until they open, (about 2 minutes). 4 When cooled, remove the clams from their shells, keeping the meat and the
liquid; discard the shells and any clams that didn’t open as well as the bay leaf and chilli. 5 Melt the butter in a smaller pan and stir in the flour. Cook for a couple of minutes to make a roux. Mix the clam cooking liquid and the milk together and pour gradually into the roux, stirring or whisking to make a smooth white sauce. Add the garlic and parsley and simmer for 3-4 minutes. The sauce should be creamy and quite thick. Add the clam meat and stir through. Set aside.

6 Shape each ball of dough into a disc to fit the pan you are going to use. Push up a raised rim all around. 7 Preheat the grill. Heat your ovenproof frying pan over a high heat and, when hot, place one of the pizza dough discs in it. Spread a quarter of the clam sauce over the pizza, up to the raised rim. Sprinkle with a little Parmesan and dot some mozzarella liberally all over the pizza. Cook for 4-5 minutes or until the bottom of the pizza is crisp. 8 Place the pan under the hot grill to finish cooking – the edges will rise and blister and the cheese will melt and brown. Once the pizza looks full of appeal, take it out and serve, then repeat with the remaining pizza dough discs and topping.

Singapore Chilli Crab If you have ever visited Singapore, you will have experienced the famous, very delicious chilli crab. It is the national dish. Easy to make, it is a firm favourite in the Tonks household. SERVES 2 1 cooked crab, weighing about 1kg 4 tbsp cornflour Vegetable oil for deep-frying FOR THE PASTE 8 fresh red chillies, roughly chopped 75g peeled fresh ginger, roughly chopped 4 garlic cloves, peeled 1 tbsp shrimp paste – you can buy this in Asian stores Vegetable oil for frying FOR THE SAUCE 2 tbsp palm sugar or soft brown sugar 4 tbsp tomato ketchup 2 tbsp sriracha chilli sauce 1 tbsp soy sauce 200ml chicken stock 2 eggs, beaten TO GARNISH 2 spring onions, finely sliced A handful of chopped coriander
1 Open the crab. Place it on its back, put your thumbs under the back legs and push up until the crab pops apart (this can be difficult, but it will open). Keep the top shell (clean and dry it) and the brown meat but drain off any water and discard the dead man’s fingers – the small feathery things on the body (you may also find some in the top shell) – and any membrane. 2 Pull off the claws, cut them in half and give the pieces a good crack so the sauce will be able to get into the meat. Cut the body into 6 by first cutting it in half, top to bottom, then slicing in between the legs so each leg has a clump of body at the end of it. 3 Put the pieces of crab body and claws in a bowl. Sprinkle over the cornflour and toss, making sure everything is completely coated. Heat the oil in a deep pan to about 160C. Working in batches, deep-fry all the pieces of crab for about 3 minutes. Drain on kitchen paper. 24
4 To make the paste, blitz the chillies, ginger, garlic and shrimp paste together in a food processor. Get a wok or large frying pan nice and hot, then add a little oil and fry the paste for a few minutes. Add the sugar followed by the ketchup, sriracha and soy. Stir together, then add the stock and mix well. 5 Add the pieces of crab and the brown crab meat and cook for 5-6 minutes. 6 Remove and place on your serving dish or in the crab shell, if using for decoration. Turn up the heat under the wok and stir the beaten eggs into the sauce. As soon as you start to see strands of white appear, remove from the heat and pour the sauce over the crab. Garnish with spring onions and coriander and serve.

Pickled Summer Vegetables This is an easy and tasty way to pickle vegetables for using in salads, sandwiches or serving with barbecued food. MAKES ENOUGH TO FILL A 1L JAR 1 tsp coriander seeds Half tsp fennel seeds 200ml warm water 6 tbsp caster sugar 1 tsp fine salt 300ml cider vinegar 2 bay leaves Zest of half an unwaxed orange 400g fresh vegetables (such as radishes, fennel, red onion, carrots)
You will need a 750ml to 1L wide-necked glass jar with a lid, a Kilner jar or several smaller jam jars, thoroughly washed and dried. 1 Firstly, toast the coriander and fennel seeds in a dry saucepan for 1- 2 minutes over a low heat. Carefully add the water, sugar and salt to the pan and stir to dissolve.
4 Fill your clean and dry jar with the sliced vegetables then pour the pickling liquid over them. Put the lid on tightly and allow to cool completely before labelling and storing in the fridge. ack in 1848, a young potter, Jacques Henry started pursuing his passion in a small workshop in Marcigny, a village in Burgundy. Just 2 years later, at the tender age of 20, he began travelling around France, meeting more experienced potters and developing his craft as a ceramist. La Maison Henry (later to become known as Emile Henry) was born. Jugs, terrines and soup tureens came to life in his hands and the business grew to employ a workforce of about 20 people. Jacques had a son, Paul, who
shared his father’s passion and by 1900, La Maison Henry pottery was to be found on all the best Parisian tables. In 1911, Paul designed what was to become the symbol of the company, the ruffled pie dish. The workshop suffered during the Great War, because of a lack of labour. Paul’s son, Emile, went to fight in 1914 but returned in 1922, determined to get the business firmly back on its feet. The company faced hardship again through the Second World War but recovered and flourished once more. When Emile died in 1950, his son, Maurice, found himself head of the company, aged 32. An artisan engineer in a rapidly expanding company, he set about modernising production techniques,

while retaining the authenticity of the handcrafting skills. He and son, Jacques were eager to offer durable, attractive ceramic products made using new technologies. As a tribute to his grandfather, Jacques changed the name of the company to Emile Henry in 1982 a salute to the passion which had been handed down from generation to generation. An amateur gourmet, Jacques used his training as an engineer to design dishes which made cooking easier. Studying everything in the smallest detail, he created an in-house laboratory for research and development in 1983. After much research, the company created the first colourful dishes for use in the oven in 1986. It was a breakthrough, and the colours helped attract increasing numbers of international customers. In 1989, the firm’s highly successful pie dish became an iconic piece in American kitchens. As the company continued to innovate, the tagine, designed by Jacques, was crafted in 2005. It became the centrepiece of a new ‘Flame’ range, made from the first ceramic which could be used directly on a flame and all direct modern heat sources. Jean-Baptiste, Jacques’ son, took over the firm’s reins in 2012, embracing and promoting the fact that production is 100% made in France, as it always has been. As the business continued to flourish, JeanBaptiste designed the bread cloche, which became another iconic piece just 2 years later. Today the company continues to evolve, proud to use its skill and knowledge to help make cooking and baking easier and more pleasurable for households the world over.

Mango Tarte Tatin with Lime Caramel Use the right cookware and a great recipe to conjure up this delicious dessert SERVES 8 1 roll of puff pastry (pre-prepared or frozen) 150g caster sugar 60g unsalted butter 1 lime 3 to 4 mangoes 30ml coconut liqueur
1 Peel the mangoes and cut them lengthways to remove the stone and produce two thick slices. 2 Spread out the caster sugar evenly in the base of the tatin dish and place on a medium heat (medium power on an induction hob). Leave to melt and caramelise until it forms a brown caramel. 3 Stir several times during cooking to bring the sugar from the edges towards the centre. 4 Incorporate the butter gradually in small pieces, then leave to ‘boil’ until smooth. 5 Add the finely grated lime zest and pour in the coconut liqueur. Still on a medium heat (medium power), allow to reduce to obtain a creamy caramel. 6 Remove from the heat and arrange the mango slices tightly, rounded side down in the caramel. 7 Place the puff pastry over the top and tuck in the edges, then put in a preheated oven and bake for approximately 50 minutes at 200C/Gas 6. 8 Leave to rest for 5-10 minutes before turning out onto a serving platter. STOP THE SCALE W hether it’s for the first cuppa of the day, a mid-morning coffee or boiling water for recipes, there aren’t many days when your kettle is left sitting idle. This continual use means it will soon get clogged up with limescale, especially as around 60% of the UK is classed as having hard or very hard water. Although hard water isn’t bad for you (back in the day people enjoyed its healing effects - the mineral-rich springs in Bath being a good example), if it is heated or left to stand, the dissolved minerals in it solidify as the moisture evaporates. These solidified minerals are called limescale (or calcium carbonate). Once this starts to build up it can be difficult to remove. It will ruin the flavour of your brew and make your kettle less efficient. The best way to remove limescale is with a mild acid. This can be done with a proprietary descaler or by using natural acids that can be found in most kitchens, such as vinegar, lemon or lime juice. The key thing is to ensure the acid remains in contact with the limescale for at least an hour. USING A DESCALING PRODUCT
Dilute the cleaner (which can come in powder or liquid form) with water according to the manufacturer’s instructions, pour into the kettle and then boil. Leave for at least an hour or ideally overnight. Empty the kettle, then rinse well and the inside of your kettle should be clean and sparkling again.
HOW TO PREVENT LIMESCALE As any good doctor will tell you – prevention is better than cure! So here are a few tips to help keep that pesky limescale at bay. • Use a water filter to remove the mineral deposits in hard water before adding to the kettle. • Get into the habit of regularly descaling your kettle. About once a month is ideal to stop the limescale building up too much. • Invest in a descaler ball or fur collector. They only cost a couple of pounds each and you just need to pop one into the kettle. An occasional rinse will keep it in good working order • If you are buying a new kettle, look for a built-in limescale filter and a concealed heating element
NATURALLY DOES IT
Although putting vinegar in your kettle might sound weird, it is actually pretty effective at removing limescale. Fill the kettle with equal parts white vinegar and water. Boil the kettle then allow it to cool down. Empty the kettle then rinse thoroughly. Refill the kettle with water and boil once more. Finally empty the kettle to remove any aftertaste of vinegar. Other alternatives to white vinegar are lemon or lime juice. A few spoonfuls of baking soda also work well.
Look for a kettle with a removable limescale filter. This can be easily rinsed under the tap or washed in the cutlery rack of a dishwasher.

ood isn’t the only thing that benefits from seasoning – the pans you cook with do too, as head chef Lou Condie explains. “I’m a big fan of cast-iron pans and have 2 special ones just for steak no one else is allowed to touch!” says Lou, co-founder of Bliss Food Co in Swanage. “Seasoning cast-iron pans is important – it has nothing to do with salt and pepper but instead involves applying many layers of oil. These are then baked on to the pan through a process called polymerisation. This maintains the naturally non-stick coating and sears meat, fish or vegetables with a unique finish.” 60
Lou says her locally sourced fillet steaks receive many compliments and attributes this not just to the quality of the meat, but also to the way she cares for the pan she cooks it in. “You get to a smoking point which tastes like chargrilled, but it’s from a pan! The smoke just seeps up through the meat, adding flavour – there’s nothing quite like it.” Here Lou explains her seasoning method. YOU’LL NEED: A quality unsaturated oil. Unsaturated oils are more reactive than saturated oils, making it easier for them to form a protective layer on the metal and “polymerise”. Pure, organic
flaxseed oil is commonly thought of as the best, grapeseed is another option. A soft cloth or some paper towels Aluminium foil If you have a new pan – steel wool If you have an old pan – a stiff brush
1 Invest in a quality pan. Most new cast-iron pans can be purchased “preseasoned”, and this is a great base layer to begin with. However, it is still recommended to add layers yourself. 2 Fill a sink with hot water. Most importantly, do not add soap! 3 Wet the brush or your steel wool and

CARE FOR CAST IRON scrub the entire pan down – every inch! The top, bottom, sides, handle – all of it! 4 If your pan is an older version and has spots of rust, be sure to scrub down to the bare metal. 5 Dry the pan well. If you need to, you can place it over a medium heat on your stove to dry it out. 6 Once the pan is dry (and cooled) take
a little flaxseed or grapeseed oil and rub it in with your soft cloth or paper towel. Aim to coat the entire pan with a thin layer of oil across and into all parts. Make sure any excess is wiped away. The pan should look nearly dry once you’ve completed this step. 7 Once your pan is beautifully covered in oil, place it upside down inside your oven. Pop some aluminium foil on the
bottom rack to catch any drips and bake for 1 hour at 230C. 8 Once the pan has completely cooled off, remove from the oven. 9 Then, repeat the oil layering and baking process at least 3-5 more times. The effort will be worth it. You should now have a glossy, naturally non-stick, black seasoning on your cast-iron pan!
HOW TO MAINTAIN YOUR PAN Lou advises: • Always preheat the pan before use – cast iron takes longer to heat and you want that distribution of temperature right before you add food. • Avoid frequent cooking of foods that are high in acidity like tomato sauces – over time they can break down the pan’s seasoning. • When cleaning your pan, the no soap rule is fine, and a very small amount of completely natural soap will also work but is not necessary. Be brave – simply use hot water and retain the integrity of your seasoning! • Always rinse and dry completely. If you aren’t using your pan more-or-less daily, pop unsaturated oil on it and leave it to sink in. Lou opened Bliss Food Co with friend and business Partner Sally Poole in 2017. A
Our family business for more than 100 years
t the age of 17 Walter Hart, an apprentice blacksmith, joined the Royal Field Artillery as a farrier. In 1919 he was demobilised from the army and established his own blacksmith business in Sturminster Newton, just a brief canter away from where we are today.

As Walter’s reputation and the business grew, one of his sons, Bill, joined the family business in 1941 and helped his father shoe horses, mend cart wheels and carry out other general repair work. In 1945 Walter’s second son, Eddie, finished his National Service in the RAF and joined the burgeoning family firm. In 1949 the business outgrew the small workshop, and new premises were constructed on the fringes of a marshy area of town called Butts Pond. We still call this home to this day. Two wonderful blacksmith shops and forges, costing the princely sum of £800, were erected. Sadly, neither are still standing, but you can still see on display, in our store, one of the original anvils and shoeing tools used by Walter all those years ago. Around the time of the new forges, a decision was made to branch out. As Eddie was never that fond of horses, he started retailing agricultural ironmongery, and manufacturing basic farm implements. By 1973, with farrier work in decline, the manufacturing side of the business had taken off and a brand new factory was built to support this success. Harts was well regarded through the UK farming community, most famous perhaps for its yard scrapers and feed trailers, and exhibited at all the major county shows. Eddie had created a major manufacturing business, and chose to refuse offers from leading national companies to buy him out. He saw the greater value, like today’s generation, in seeing the family business continue. Eddie’s son Philip joined the business in 1979 and set about transforming the retail shop from an agricultural supplier into a modern, country department store. The local hardware shop had burnt down and closed, and this was the launch pad for the retail arm of the business. The old forge buildings were demolished, and a purpose-built shop and offices were erected. With the business growing, the store was extended in 1984 and again in 1991. Philip always had his eye on the next big thing and, with that in mind, Harts took its first tentative steps into mail order in the early nineties. Some early success gave us the encouragement we needed, and our first trading website was launched in 1995 - one of the first operational and trading sites anywhere in the country (we had a feature written about us in the Daily Telegraph at the time). 64

Continued growth saw yet another expansion of the retail premises in Sturminster Newton in 2003. The online side of the business had proved successful but was being driven forward without a proper direction for a while until Philip’s two sons left university, and joined the family firm in 2006. Johnathan and Graham were able to bring a much greater understanding of the modern, technological world and provided the next generational drive to push forward rapidly with our online presence. The right staff and ingredients were in place, and with hard work and perseverance, as well as quick lessons learned, the internet business has grown very rapidly, becoming a well-respected, national award-winning enterprise. Our 60,000 square foot despatch centre was completed in 2010 and a new suite of sales offices shortly after in 2013, both purpose-built to give our mail order customers the same level of service and efficiency that our store customers have enjoyed for so many years.

Since then we have continued to grow as a business to become a leading independent retailer, recognised with a number of local and national awards. The store now encompasses many more departments, including Garden, Tools, Electrics, Camping, DIY, Giftwares, Housewares, Storage, Clothing, Bathroom and of course Kitchen, and is a wonderfully relaxing environment to shop and work in. Our online presence has increased significantly too and a new, innovative and modern website was launched in 2018. In 2019 we celebrated our 100th anniversary with a series of in-store events and promotions themed around family and food. After 40 years in the business, Philip decided it was also a fitting time to relinquish his custodianship of the business. Philip’s son, Graham, has taken on the role of MD with his other son, Johnathan, becoming finance director. In 2021, work completed on an ambitious redevelopment of our store and garden department, with the addition of a coffee shop.
