very heartfelt welcome to Issue 17 of Kitchen. Every year we have a heated debate on “when is it too early to mention Christmas?”. For those in the love group it’s never too early, whilst those in the loathe group think 24th December will be just fine This year, news of supply chain strains and increasing costs across all industries have hit the press, and we all have to consider how this will impact our business and lives. Here at Harts, we have invested in staff and stock, to meet demand for customers as well as supporting our employees. We are proud to be a Real Living Wage Employer and consider them to be part of the family. As I write, our warehouse is full, with more stock arriving daily, and we work hard to ensure all manageable overheads are kept to a minimum and our prices remain as competitive as possible. There will still likely be una oidable shortages this season though. f possible, buying your gifts earlier is advised to avoid disappointment. To get you in the mood, turn to page 6 for festi e ideas, including the ever-popular Wrendale tree decorations. In Happening At Harts, on pages 12 and 1 , you will see that our Coffee oft is open and in full swing, with daily specials and delicious cakes (all made on site) served in a light and spacious environment. For me, the festive season is all about spending time with family squeezing as many people in as possible for lunch, even if this involves dragging the garden furniture inside so everyone has a seat. In our Main Event feature on page 14, we hope we have catered for everyone’s preference - from turkey to nut loaf and the trimmings. One of my favourite Boxing Day traditions is making turkey curry. If you like a bit of spice we have a hot feature from Dorset’s own curry queen, Sarah Choudhury on page 19. THE SKY’S THE LIMIT For someone who admits to a fear of heights, Alan Cavendish, our Warehouse Manager, could have chosen a slightly more obvious option than jumping out of a plane when it came to fundraising. This was his third charity event, and his second supporting Forest Holme Hospice in Poole. In 2014 he shaved his head for Macmillan, raising more than £700. In 2017 he did his first fundraiser for Forest Holme, completing a wing walk and raising more than £1,200. This year he decided being strapped to a plane wasn’t adventurous enough, and instead completed a 13,500ft skydive with the Parachute Regiment at Netheravon, raising a whopping £1,300. After losing his brother, and then brother-in-law to cancer, Alan explained he felt the need to give back to the great charities that supported both men and their families through tough times. Forest Holme Hospice Charity supports the life-enhancing work of Forest Holme Hospice, part of University Hospitals Dorset NHS Foundation Trust. Established in 1994, Friends of Forest Holme, as it was known then, was set up to fundraise for a specialist palliative care unit. Over the years, the charity has been committed to funding additional nursing staff for the inpatient ward, two counsellors to provide psychological support to patients and their families, a variety of complementary therapies, medical equipment and practical fixtures and fittings to make the hospice a more homely environment. 12

A TASTE OF SPRING When he’s not busy preparing meals and snacks for customers, Coffee oft anager, Ben o ham, enjoys cooking at home. Risotto is a particular favourite of his and here he shares his recipe for a simple but super-tasty version.
RISOTTO PRIMAVERA SERVES 4 200g broad beans (frozen) 2 spring onions 150g petit pois 250g asparagus bunch 1 garlic clove 3 banana shallots 90g butter 1.2L vegetable stock 1 tbsp olive oil 100ml white wine 100g pecorino/parmesan 50g crème fraiche
1 Thaw the broad beans and peel. Snap the woody bottom of the asparagus and slice in half lengthways. 2 Finely dice the shallots, garlic and spring onions. Fry in the oil and 50g of the butter for 4-5 minutes until soft. Add the rice and stir for a few minutes until mixed and lightly toasted. Add the wine and stir until it has evaporated. 3 Make 1.2L of vegetable stock and gradually add 1 ladle at time to the rice until the liquid has been absorbed. Stir well after each addition.

This can take up to 20 minutes. 4 Steam the asparagus for 4 minutes. 5 After 15 minutes, add the petit pois and broad beans. Add seasoning to taste. The risotto should have a soft bite but not crunchy. Once all the stock has been used, stir in the grated pecorino or parmesan. 6 Add a spoonful of crème fraiche plus the remaining 40g of butter to make it extra creamy, before serving with the asparagus laid on top. Grate over extra parmesan if desired.

Whole Roasted Golden Turkey with Roasted Grapes, Shallots & Rosemary SERVES 8 5kg Golden Turkey with giblets Sea salt and black pepper 1 bay leaf 3 onions, peeled and quartered 2 carrots, peeled and cut into large chunks 2 sprigs of rosemary 300ml water 3 tbsp of olive oil 3 tbsp of good quality balsamic vinegar 10 medium shallots, peeled 750g of red or black bunches of grapes, broken into small clusters on the vine 1 tbsp chopped rosemary leaves
1 Take the turkey out of the fridge a couple of hours before cooking and remove the giblets. If your turkey is trussed, it is best to remove the string before cooking. 2 Preheat the oven to 180C/Gas 4.

3 Season the turkey with sea salt and black pepper, place some of the onion inside the cavity and put in a large roasting tin, breast side down, with the giblets, bay leaf, onions, carrots, rosemary sprigs and the water. Place in the preheated oven. 4 After an hour, turn the turkey over and roast until cooked. To check the turkey is cooked, use a meat thermometer. You are looking to achieve a temperature of about 68C before resting the bird, the juices should run clear when the thickest part of the thigh is pierced with a skewer. 5 Remove from the roasting tin and leave to one side to rest for at least half an hour before carving. Do not cover the bird. Strain the juices from the roasting tray through a sieve and leave in a separate pan ready to complete the Madeira gravy (see next recipe). 6 Using the same roasting tray, gently drizzle some olive oil on the shallots and roast in the oven for 15 minutes. Add the grapes and season well with sea salt and the chopped rosemary, drizzle with more oil and balsamic vinegar if needed. 7 Serve the shallots and grapes around the turkey on a large wooden board or plate.
Rich Madeira Turkey Gravy Turkey roasting and giblet juices Vegetable stock 150ml Madeira 3 tbsp plain flour Sea salt and black pepper 2 tsp balsamic vinegar 1 tsp Marmite A knob of butter
1 Strain the roasting and giblet juices from the roasting tray into a measuring jug and skim off most of the fat, make the roasting juice up with vegetable stock to 1L of liquid. 2 Deglaze the roasting tray with the Madeira and strain into a saucepan with the turkey and vegetable juices. 3 Mix the flour to a paste with a little cold water and balsamic vinegar and whisk into the mixture in the saucepan. Season with a little salt and pepper. 4 Bring to the boil, whisking all the time, and allow to simmer for 20 minutes. 5 Whisk in the Marmite and a knob of butter. Check the seasoning and if the gravy is too thick, add a little more vegetable stock and serve immediately.

Italian Sage and Pancetta Stuffing Balls MAKES 12 3 shallots, peeled and finely chopped 1 large garlic clove, peeled and finely chopped 75g butter 350g pork sausage meat 100g pack of mortadella, finely sliced 150g white breadcrumbs 50g finely grated parmesan Juice of half a lemon 1 tbsp fresh sage, chopped 2 tbsp flat-leaf parsley, chopped Sea salt and black pepper 1 egg, beaten 12 slices of smoked pancetta 12 large sage leaves
1 Preheat the oven to 180C/Gas 4. 2 Melt the butter in a small frying pan and gently fry the shallots and garlic until soft. Leave to one side. 3 In a large mixing bowl, fork together the sausage meat, mortadella, breadcrumbs, parmesan, lemon juice, herbs and season with a little salt and pepper. Once well combined, add the beaten egg and stir well.

4 Divide the stuffing mixture into 12 equal-sized portions and use wet hands to roll into balls. 5 Place a large sage leaf in the middle of a slice of pancetta and put a portion of stuffing on top, wrapping the slice of pancetta around the stuffing: this will alter the shape slightly. (The stuffing balls can be frozen at this stage).

6 Put on a baking tray and bake in the preheated oven for approximately 25-30 minutes or until golden.

Vegan Nut Loaf
processor, chop all the nuts as finely as you can.
You don’t have to be vegan to enjoy this very tasty turkey alternative.
2 Preheat the oven to 200C/Gas 6. Lightly oil, then line the base of a 900g loaf tin with baking paper.

3 Heat the oil in a large frying pan and gently fry the onion, celery, leek, mushrooms, carrot and pepper for 5 minutes, or until softened, stirring regularly. Add the garlic and cook for a few seconds more.
180g pickled walnuts, sliced 300g mixed nuts (such as almonds, hazelnuts, walnuts, pecans or Brazil nuts) 1 vegan-friendly vegetable stock cube 2 tbsp extra virgin olive oil, plus extra for greasing 1 onion, finely chopped 2 celery sticks, finely chopped 1 leek, trimmed and thinly sliced 100g chestnut mushrooms, finely chopped 1 red pepper, halved, de-seeded and finely diced 1 carrot, coarsely grated 2 garlic cloves, crushed 4 tbsp cashew butter 1 tsp dried thyme 1 tsp dried basil 1 tsp dried sage 1 lemon, finely grated zest only 4 tbsp milk alternative, such as soya or almond 100g fresh breadcrumbs 1 tsp sea salt Freshly ground black pepper
1 Put the nuts and stock cube into a food processor and blitz on the pulse setting until chopped into small pieces, but not fully ground. If you don’t have a food
4 Tip into a mixing bowl and stir in the cashew butter. Add the chopped nuts, pickled walnuts, herbs, lemon zest, milk, breadcrumbs and salt. Season with lots of ground black pepper and thoroughly mix. 5 Spoon the mixture into the prepared loaf tin. Press down firmly with a spoon to compact the mixture. Cover with foil and bake for 30 minutes. Remove the foil and bake for a further 20 minutes, or until the loaf is hot throughout and lightly browned. 6 Remove the tin carefully from the oven and cool for 5 minutes before loosening the edges of the loaf with a table knife and turning out on to a board or platter. Honey and Thyme Roasted Carrots When you’ve got the oven on for a roast, why not pop these carrots in too? Roasted, they ha e a wonderfully sweet, dense a our and velvety texture. SERVES 4
Brussels Sprouts with Clotted Cream, Horseradish & Smoked Bacon Eden roject head chef, Tony Trenerry, will convert even the most avid avoider of Brussels sprouts with his unique twist on a traditional recipe. SERVES 6 700g Brussels sprouts, trimmed, halved and washed 4 rashers crisp-cooked bacon, finely sliced 50g crème fraiche 25g clotted cream 2 tsp horseradish sauce
2 Bring a pan of salted water to the boil, add the sprouts and simmer for 4 minutes to blanch. Drain well in a colander. 3 In a frying pan, add the vegetable oil and fry the bacon strips until crisp and golden. Carefully remove from the pan with a slotted spoon and place on some kitchen paper. 4 In the pan, add the sprouts and sauté for a few minutes in the fat from the bacon until they just start to colour. 5 Remove from the heat and add the cream mixture and crispy bacon. CELEBRITY CHEF Q. How do you get the balance right between business and parenting? It’s sometimes very challenging but I include my children in everything I do. My eldest is 19, while my youngest is 9, and I have a 17 and an 11-year-old in between. Over the past few years, they have been my biggest fans and supporters. As a parent, single mum and business owner, they are my priority, but my work eeps us a oat so bein or anised structured and focused is essential when it comes to balance. Q. How important do you think it is to get children involved in cooking? I think it is one of the most important life skills and isn’t covered enough in schools. Over the past few years, I have worked with thousands of Bournemouth University students, teaching them about sustainability, cooking and budgeting around food. I’m currently working on workshop ideas for younger children. Q. What do you see as your most essential piece of equipment in the kitchen? I have a very old-fashioned stone pestle and mortar and something that looks like a glossy stone paving slab which was used by my grandmother to grind garlic, ginger, chillies, fresh herbs etc into a paste. I still use the pestle and mortar and there’s nothing like it. My grandmother is from Guyana in South America and she was an absolutely fantastic cook. She had 8 children and her life was all about cooking for her family, that’s where my mum learnt so much and passed it down to me! Q. What do you consider your biggest work-related achievement? Presenting BBC’s Inside Out about women in the Indian food trade. I was head hunted by a director for the BBC and I loved every minute filmin it. he pro ramme was screened in and went on to make it to BBC World News. It was translated into different lan ua es and also shown in India. Q. And your personal one? My personal achievement is managing being a mum while running my home. I’m grateful for everything I have in my life especially my parents and brothers who are unconditionally loving and extremely supportive. I’ve recently met the love of my life and am a true believer that life works in mysterious ways. Sometimes when you think everything is falling apart, it might just be making way for better things. Q. Where do you see yourself in 10 years? I’m 44 now and by then I’d like to be living near a lake, river or the sea, with my own boat and my soulmate! A beautiful kitchen and garden for entertaining all my friends and family is essential and by then I think I’ll be a grandparent too. Succulent Lamb Bhuna SERVES 2 1.5 kg diced lamb 1 onion, finely chopped 5 cloves garlic, finely chopped 1 tbsp grated ginger Half tsp salt (or to taste) Quarter green pepper, finely chopped 1 large tomato, finely chopped 1 tsp concentrated tomato puree 1 bay leaf 3 cardamon pods 1 inch cinnamon stick 1 tbsp mixed curry powder Half tsp turmeric powder 1 tsp garam masala 1 tbsp coriander powder Quarter tsp chilli powder (optional) Quarter tsp paprika 2 tbsp sunflower oil Fresh coriander for garnish 50ml water
1 Heat the oil in a large heavy bottomed pan. 2 Add the bay leaf, cardamon pods and cinnamon stick. 3 After a few seconds, add the garlic, ginger, onion, green pepper and salt and fry on a low to medium heat, stirring regularly until the onions soften. This will take around 5-10 mins. 4 When the onions start to

caramelise, add the turmeric, coriander, garam masala, mixed curry powder, chilli powder, paprika and tomato puree and stir well. 5 Add 50ml water and stir well, then add the tomato. 6 After about 10 minutes, you will notice a little oil come to the top of the mixture. This

Butternut Bhaji This dish pictured on the right of the bhuna) makes a great accompaniment to the lamb. SERVES 2 1 small/medium butternut squash (peeled and finely diced) 1 medium onion, finely chopped 4 cloves fresh garlic, finely chopped 1 tsp coriander powder 1 tbsp cumin powder Quarter tsp turmeric powder 1 tsp concentrated tomato puree 1 tbsp sunflower oil Coriander or spring onion to garnish 25ml water
1 Heat the oil in a heavy-based pan 2 Add garlic, onion and salt. 3 Allow to soften and then add cumin, turmeric and coriander powder, along with the tomato puree. 4 Add the water and allow to cook on a slow heat for 5-7 minutes, then turn to a medium heat for 3-5 minutes. 5 Add the butternut squash, stir well and cover. Cook for about 15-20 minutes on slow heat to allow the squash to cook through properly, stirring regularly. 6 When done, serve and garnish with fresh coriander or spring onion. means the spices are cooked and it is time to add the diced lamb. After doing this, stir well and cover. 7 Cook for around 15 minutes, regularly stirring to ensure it doesn’t burn and for the last 5, cover and leave on a slow heat.

Spiced Grilled Seabass SERVES 2 1 whole seabass (cleaned and gutted) 2 tsp garlic granules 2 tsp cayenne pepper A few fresh or dried curry leaves 1 tsp mustard seeds Salt and pepper Squeeze of fresh lemon 2 tbsp olive oil FOR THE TOMATO AND ONION BASE 1 large shallot, finely chopped 3 small plum tomatoes Fresh coriander Pinch of salt 2 tbsp olive oil
1 Make incisions along the sea bass on both sides, then sprinkle some of the garlic granules, salt and pepper directly onto the fish, followed by a squeeze of lemon and sprinkle of cayenne pepper. 2 Heat a glug of olive oil on a baking tray, then, when the oil is hot, add the mustard seeds and curry leaves and allow them to pop and sizzle. Then add the garlic granules and cayenne pepper. 3 Place the seasoned fish directly onto the heated tray into the spice mixture for 1-2 minutes before turning the fish onto the other side to seal it. Add another tbsp of olive oil onto the fish and then place the tray under a medium grill.

4 While the fish is under the grill, heat a wok with olive oil, the chopped shallot and tomatoes and allow to soften. Add some salt and pepper and cook slowly. 5 After about 5 minutes, remove the tray with the fish from the grill and carefully pour the oil from it into the tomato and onion mixture in the wok. Put the fish back into the grill for a further 10 minutes or until crispy and golden. Remember to turn it over so that both sides are cooked thoroughly. 6 Stir the tomato and shallot mixture and cook for a few minutes before dividing between 2 plates. Place a fillet of grilled seabass directly onto each pile of onions and tomatoes and garnish with fresh coriander to serve. 22

apping into their Scandinavian roots, a Minnesota couple spotted a golden business opportunity in the aftermath of WWII. Dave Dalquist, a SwedishAmerican and his wife Dotty, a Danish-American, were convinced there was a strong market amid the sizeable Scandinavian population in the American Midwest. After being reunited when Dave returned from military service, and with $500 to their name, they moved quickly to launch a kitchenware company and in 1946, Nordic Ware was born. The couple bought a small aluminium firm and began manufacturing traditional cookware products, such as rosette iron (a pastry mould), krumkake iron (a wafer cookie press), platte panne and ebelskiver pan (both pancake pans).
Among Nordic Ware’s extensive range is one particularly famous piece… the Bundt® pan. In 1950, Dave Dalquist was tasked with recreating something from the old country - a heavy iron cake mould known as a bund. He replicated the mould in cast aluminium and trademarked the name Bundt®. Despite a modest launch at the time, sales of the Bundt® took off from 1966 when a woman from Texas won second place in a national baking contest for a cake made using the Dalquist-designed pan. Now the Bundt® can be found in more than 75 million households around the world and from producing a handful of specialty Scandinavian cookware products, the company has grown to become an international success, However, Nordic Ware has retained much of its original identity. Although bakeware, cookware and grilling accessories are distributed globally, most products are still made in Minneapolis, and the company remains family-owned and operated today,

Neapolitan Marble Bundt® Cake To celebrate their 75th anniversary and new Braided Bundt® design, Nordic Ware partnered with baker, author and TV personality, Edd Kimber who created this striking recipe specifically for the Braided Pan. SERVES 15 FOR THE BASE BATTER 340g unsalted butter, room temperature 450g caster sugar 6 large eggs 2 tsp vanilla extract FOR THE CHOCOLATE BATTER 85g plain flour 50g cocoa powder 1 tsp baking powder Half tsp fine sea salt 40ml sour cream FOR THE WHITE CHOCOLATE AND RASPBERRY BATTER 250g plain flour 2 tsp baking powder 1 tsp fine sea salt 80ml sour cream 75g white chocolate, finely chopped
as you go, or use piping bags for the neatest finish. Whichever you choose, add the batter in slowly, little by little, gradually increasing the height.
3 tbsp freeze dried raspberry powder A little red gel food colouring FOR THE VANILLA GLAZE 150g icing sugar 2 tbsp milk 1 tsp vanilla bean paste Small pinch of salt
1 Prepare your Bundt® pan by brushing with softened butter and dusting with a thin layer of flour. 2 Place the white chocolate into a heatproof bowl and set over a pan of simmering water and heat, stirring occasionally, until fully melted. Remove from the heat and set aside whilst you prepare the cake. 3 Place the butter and sugar into a large bowl and using an electric mixer, beat on medium speed for about 5 minutes or until light and fluffy. 4 Add in the eggs one at a time, beating until fully combined. Mix in the vanilla. 5 Scrape a third of the batter into a

separate bowl. To this third, add the ingredients for the chocolate batter, mixing until a smooth cake batter is formed. Into the remaining mixture, add everything for the white chocolate and raspberry batters, except the melted chocolate, raspberry powder and food colouring, mixing to form a smooth cake batter. 6 Take this batter and divide again into 2 equal portions. To 1, mix through the melted chocolate and to the other, mix in the raspberry powder and a little food colouring to make a vibrant pink. 7 To portion the batter into the tin, you can either spoon the batters in, trying to keep each batter neatly inside each section of the tin, alternating the colours
8 Give the pan a couple of sharp taps on the worksurface so that the batter fills every nook and cranny of the pan. Pop the cake into the oven for about 55 minutes or until a skewer comes out clean. Remove the pan from the oven and set onto a wire rack to cool for 10 minutes before inverting the cake and allowing it to cool fully. If you are opting to make the vanilla glaze, do this before turning the cake out and use as soon as it has been removed from the pan. 9 To make the glaze, add everything to a bowl and mix to make a smooth glaze. The finished texture wants to be on the thin side – you may need to add another half tbsp of milk. 10 Whilst the cake is still hot, use a pastry brush to coat it in the glaze which will turn slightly translucent. The finished cake will keep for 2-3 days if well covered.

Classic Carrot & Coriander Soup SERVES 4 1 tbsp vegetable oil 1 onion, chopped 450g carrots, washed and sliced 1 clove garlic, crushed 1 tsp ground coriander Squeeze of lemon juice Freshly ground nutmeg to taste Salt and freshly ground black pepper Single cream to serve (optional)

Stir in the ground coriander and plenty of seasoning and cook for 1 minute. 2 Add the stock and bring to the boil, cover and simmer for 20 mins or until the carrots are really tender. Stir in the fresh coriander. 3 Transfer the soup to a food processor. Add the lemon juice and nutmeg to taste and adjust the seasoning as necessary. Reheat until just hot but not boiling and serve. Pea, Basil & Mint Pesto SERVES 4 AS A SNACK 400g fresh podded (or frozen) peas 10g basil leaves 10g fresh mint leaves 100g roasted cashews 4 tbsp olive oil Juice of 1 lemon Half a garlic clove, chopped A good pinch of sea salt and black pepper
1 Preheat your oven to 190C/ Gas 5. 2 Place the cashews on a baking tray and roast in the oven for 10 minutes, giving them a shake halfway through. Remove and leave to cool. 3 If using fresh peas, pod them and add to a pan of boiling water. Cook for a couple of minutes until tender, drain and run under cold water to cool. If using frozen peas, defrost first then add to your food processor, along with the rest of the ingredients. Whizz until smooth.
Tahini & Soy Dip
1 In a bowl measure out your tahini, yoghurt, soy, lime and water.

2 Chop your coriander and garlic and grate the ginger.
10 tbsp tahini 300g Greek yoghurt

Brown Sauce A fantastic home-made version for bacon butties and much more. MAKES AROUND A DOZEN 250ML BOTTLES 1L vinegar, malt distilled 250g muscovado sugar 15g turmeric 1 tsp mustard powder 60g sea salt 4 garlic cloves, finely chopped 1 lemon Finger-sized piece of fresh root ginger, peeled and shredded Half tsp cayenne pepper Half tsp black pepper, freshly ground 1 small white cabbage 500g turnips 500g carrots, topped, tailed and peeled 500g onions (medium) 500g cooking apples 500g dates
1 Make sure that you have enough bottles and lids for the recipe - they can be washed and heated once the sauce is cooking. 2 Prep all the ingredients by peeling where necessary, then chopping roughly into medium-sized pieces - the sauce will be processed once cooked.

According to Rosie, there’s nothing complicated about preserving once you know the basics, as she explains. “All the spoilers of food – yeasts, moulds and bacteria - need moisture to thri e. f the moisture isn t there then they can t grow. Eating a diet made up of dried goods isn’t very convenient or interesting however, so we prolong the life of a variety of ingredients by adding a combination of nature’s preservatives – sugar, salt and vinegar. Think jams, jellies, cordials, pickles, chutneys, sauces, mustards. There’s a method of preserving for everything.” 60

3 Place all the ingredients, except the sugar, into a large pan and put over a medium heat. Cook together, stirring occasionally, until the vegetables and fruits are softened, then add the sugar, stirring well to dissolve. 4 Cook on until the ingredients have thickened a little - around 1hour total cooking time. Allow to cool a little and then pass through a food processor in small batches to produce a smooth sauce. 5 As each batch is completed, pour into a clean pan until all of the contents are smooth. Reheat gently for about 15 minutes and then pour into the heated, dry bottles.

Winter Warm Plum Chutney Lovely warm spices give this chutney a great a our MAKES AROUND 12-14 250G JARS 1.2 kg plums, halved and stoned 450g cooking apples 675g (3-4) onions peeled and chopped 225g sultanas 450g muscovado sugar 600ml red wine vinegar 1 tbsp sea salt 1 cinnamon stick 2 tsp allspice berries, whole 1 tsp cloves, whole 2 tsp black mustard seeds Thumb-size piece of fresh root ginger, no need to peel
1 Put all the spices and the ginger into a muslin square and tie with a piece of clean string, or use a spice bag. Bruise the whole spices slightly to release the flavours by using a rolling pin or wooden spoon. 62
2 Place all the other ingredients into a large pan, and add the spice bag, then bring to the boil, before turning down and simmering until the chutney is soft and thick. Stir occasionally to make sure the chutney doesn’t stick to the pan. This will take around 60-90 minutes.

3 In the meantime, wash your jars in hot soapy water, rinse and place upside down in a warm oven, around 50-100C to dry and sterilise. 4 When you are ready to jar up, take the pan from the heat, and put onto a heat-proof surface. Place your jars beside the pan and carefully ladle your chutney into the jars, right up to the top. Use a jam funnel if you have one. Check for any air pockets that may be visible and prod with a dinner knife to disperse them. Put the lid on immediately. 5 Your chutney will shrink as it cools, forming a vacuum pocket at the top of the jar which will keep the contents safe for many years. Leave your chutney to mature for 4-6 weeks before enjoying with cheese or cold meats.

TOP TIPS FOR MAKING JAM • Use very fresh fruit. Over-ripe fruit is not suitable for jam making. Pectin is a natural plant thickener, essential to achieve a good set and is at its highest level in fruit just before it is ready to be picked so also include a few under-ripe fruits if possible. • You will need acid as this helps to extract the pectin from the fruit whilst cooking. Add the juice of 1 lemon per kilo of fruit during the cooking process. • To test if your jam is ready after cooking, test a blob on a saucer by pushing it with the side of your finger. If you see a ‘crinkle’ your jam will set in the jar. • Fill your jars right to the top leaving no gap. Apply the lid immediately and as the jam cools, it will shrink, creating a vacuum space to keep the contents safe for many years. You do not need to keep jam in the fridge even after opening. • There is no wrong jam except burnt jam. Everything else can be used and do remember, homemade jam will never look or taste like mass-produced jam and that is a very good thing!
TOP TIPS FOR CHUTNEY • Chutney is simple to make mainly because you are not trying to achieve a set. It can be made from virtually any combination of fruits and vegetables and most require all 3 preservatives – vinegar, salt and sugar. • The consistency is controlled by the length of time the ingredients are cooked for. Long and slow is the best way. • Make sure that the vinegar you buy has a minimal acetic acid content of 5% or higher and has the word ‘vinegar’ written on the label. Some shops sell Nonbrewed Condiment which tastes fine on chips but will not preserve food.
Candied Peel This may appear fiddly but is easier than it appears. Candied peel can be chopped and sprinkled over ice cream, added to batters for muffins, breads and cakes and used to garnish citrusbased cocktails. MAKES APPROX 350-400G 350g orange peel (approximately 4 large oranges) 350g white granulated sugar 28g caster sugar
1 Start by taking the peel from the oranges in quarters – cut right round the orange from stalk to stalk, then again at right angles to the first cut. 2 Take off the peel, then weigh the total amount together – it should be around 350g. The amount of granulated sugar you use should

Lift the peel out of the pan and spread onto silicone paper set on wire trays. 6 Leave to dry for 24 hours at room temperature. 7 Place the caster sugar into a small bowl and dip each piece of peel to coat. Candied peel can be stored in an airtight jar for up to 6 months.

A
Our family business for more than 100 years
t the age of 17 alter art, an apprentice blacksmith, joined the Royal Field Artillery as a farrier. n 1919 he was demobilised from the army and established his own blacksmith business in Sturminster Newton, just a brief canter away from where we are today.

As Walter’s reputation and the business grew, one of his sons, Bill, joined the family business in 19 1 and helped his father shoe horses, mend cart wheels and carry out other general repair work. n 19 5 alter s second son, Eddie, finished his National Service in the RAF and joined the burgeoning family firm. n 19 9 the business outgrew the small workshop, and new premises were constructed on the fringes of a marshy area of town called Butts Pond. We still call this home to this day. Two wonderful blacksmith shops and forges, costing the princely sum of £800, were erected. Sadly, neither are still standing, but you can still see on display, in our store, one of the original anvils and shoeing tools used by Walter all those years ago. Around the time of the new forges, a decision was made to branch out. As Eddie was never that fond of horses, he started retailing agricultural ironmongery, and manufacturing basic farm implements. By 197 , with farrier work in decline, the manufacturing side of the business had taken off and a brand new factory was built to support this success. arts was well regarded through the farming community, most famous perhaps for its yard scrapers and feed trailers, and exhibited at all the major county shows. Eddie had created a major manufacturing business, and chose to refuse offers from leading national companies to buy him out. He saw the greater value, like today’s generation, in seeing the family business continue. Eddie s son hilip joined the business in 1979 and set about transforming the retail shop from an agricultural supplier into a modern, country department store. The local hardware shop had burnt down and closed, and this was the launch pad for the retail arm of the business. The old forge buildings were demolished, and a purpose-built shop and offices were erected. ith the business growing, the store was e tended in 198 and again in 1991. Philip always had his eye on the next big thing and, with that in mind, arts took its first tentati e steps into mail order in the early nineties. Some early success gave us the encouragement we needed, and our first trading website was launched in 1995 - one of the first operational and trading sites anywhere in the country (we had a feature written about us in the Daily Telegraph at the time). 64

Continued growth saw yet another expansion of the retail premises in Sturminster Newton in 2003. The online side of the business had proved successful but was being driven forward without a proper direction for a while until Philip’s two sons left university, and joined the family firm in 006. ohnathan and raham were able to bring a much greater understanding of the modern, technological world and provided the next generational drive to push forward rapidly with our online presence. The right staff and ingredients were in place, and with hard work and perse erance, as well as uick lessons learned, the internet business has grown very rapidly, becoming a well-respected, national award-winning enterprise. ur 60,000 s uare foot despatch centre was completed in 010 and a new suite of sales offices shortly after in 01 , both purpose-built to gi e our mail order customers the same le el of ser ice and efficiency that our store customers have enjoyed for so many years.

Free, Fast Delivery We endeavour to pick, pack and despatch all orders placed before midday on the same day. We offer free, next-working-day delivery to UK mainland addresses on all orders over £50. Eco-Friendly Packaging We try to reduce our environmental impact wherever possible. We reuse cardboard boxes where we are able to do so, and our packing filler is an eco-friendly, biodegradable “green-fill”. This can be reused, composted, or dissolved down the sink - how many retailers can say that?
On-Site Warehouse We take great care when packing all parcels to ensure they reach you in perfect condition. With the exception of a few items that are shipped directly from the manufacturer, all products ordered on our website are despatched from our on-site warehouse. We do not employ any thirdparty fulfilment services, meaning we can maintain our quality control levels to the highest standards.
