Okra and chickpea curry
SERVES

Ready in 1 hour 10 minutes INGREDIENTS 1 large potato, peeled and cut into small chunks 1 large aubergine, cut into small chunks 1 small cauliflower, cut into small florets 350g okra, halved 2 medium onions, chopped 1 tbsp cumin seeds 6 garlic cloves, 4 finely chopped and 2 crushed 3cm piece of fresh root ginger, peeled and grated 2 chillies (red or green), deseeded and finely chopped 3 tbsp mild or medium curry powder, plus a pinch to serve 400g can chickpeas
2 tbsp tomato purée 2 x 400g cans chopped tomatoes 150g fat-free natural Greek yogurt Juice of 1 small lemon METHOD Preheat your oven to 220°C/ fan 200°C/gas 7. Put the potato, aubergine, cauliflower, okra, onions, cumin seeds, ½ tsp salt and some pepper in a very large, non-stick deep-sided baking tray or roasting tin (about 40cm x 30cm). Add a few tbsp water, toss well, spread
out in an even layer and roast for 20 minutes, tossing again and adding a splash more water halfway. Remove the tray from the oven and add the chopped garlic, ginger, chillies and curry powder. Gently stir everything together and return to the oven for 5 minutes. Meanwhile, drain the liquid from the chickpea can into a bowl and whisk in the tomato purée. Remove the tray from the

oven and add the chopped tomatoes, tomato purée mixture and chickpeas and stir well. Shake the tray to level the ingredients and return to the oven for 30 minutes or until the sauce has reduced and the vegetables are tender. Meanwhile, stir the crushed garlic into the yogurt, add the lemon juice and salt to taste, and sprinkle with a pinch of curry powder. Remove the tray from the oven and serve with the garlic yogurt.
METHOD Preheat the oven to 180°C/fan 160°C/ gas 4. Spray a large non-stick casserole pan with low-calorie cooking spray and place over a high heat. Add half the pork and brown on all sides then transfer to a plate and repeat with the rest of the pork. Fry the bacon briskly for 2 minutes and set aside with the pork.
Spring pork casserole Ready in 1 hour 50 minutes INGREDIENTS Low-calorie cooking spray 750g pork fillet (tenderloin), all visible fat removed, cut into large chunks 6 back bacon rashers, all visible fat removed, cut into thin strips 1 large onion, chopped 1 large green pepper, deseeded and

roughly chopped 2 garlic cloves, crushed 1 level tbsp plain flour 2 tsp mild curry powder 200g can chopped tomatoes 1 tsp dried oregano 200ml boiling chicken stock 2 large leeks, sliced 200g button mushrooms, halved Boiled dried rice, to serve
Add the onion, green pepper and garlic to the pan along with 2 tbsp water. Cover, reduce the heat to low and cook for 10 minutes or until soft. Uncover and stir in the flour and curry powder, followed by the tomatoes, oregano, stock, ½ tsp salt and some pepper. Bring to the boil over a high heat, stirring, then stir in the pork, bacon and leeks. Cover again and cook in the oven for 1 hour. Remove the pan from the oven and stir in the mushrooms. Cover again, return to the oven and cook for a further 30 minutes or until the pork is meltingly tender. Serve hot with the rice.
Tomato soup with turkey meatballs Ready in 50 minutes

INGREDIENTS 500g lean turkey mince (5% fat or less) ½ small pack fresh basil, finely chopped, plus leaves to serve 1 tsp dried oregano 3 level tbsp freshly grated parmesan cheese, plus 1 level tbsp to serve Low-calorie cooking spray 1 large onion, finely chopped 2 garlic cloves, crushed 2 tbsp tomato purée 2 x 400g cans chopped tomatoes with herbs 750ml boiling chicken stock 100g dried linguine or spaghetti, broken into 5cm lengths

We love the soft hues and delicate details in this gorgeous wedding. Heather shares her story... How did Anthony propose? “He proposed in Australia! We were travelling down the East Coast in a campervan, starting in Sydney. We stopped off at a campsite on the beach, and at sunset he gave me a book filled with all our memories, and at the end it read: ‘I bet you think this is a perfect setting for the perfect question?’ I turned the page and read: ‘Only 64 ♥ L OV E O U R W E D D I N G ♥ S E P T E M B E R / O C T O B E R 2 0 1 9
joking!’. Then the last page read: ‘Maybe you should turn around...’ and he was down on one knee!” What dress did you wear? “In my mind I wanted a lace, sleeved, fitted dress, but when I tried on this style it just didn’t suit me. The final dress was just perfect –
strapless with loads of layers and lace by Pronovias. I said yes to the dress at Dotty Bridal in Holmfirth. They’re an amazing shop, they made my experience so special.” And the accessories? “I bought a veil from Dotty Bridal and wore a Tiffany bracelet and necklace.”
What did Anthony wear? “Anthony wore an ASOS suit with a Next shirt and dickie bow ties from Slater’s.” How did you feel when you saw him up the aisle? “When I walked down the aisle and saw my husbandto-be, it was a mix of emotions! I was thinking

I thought I wanted something simple but as soon as I tried that style on, I knew I wanted something more dramatic. I tried on a fair few more dresses but kept on coming back to the second dress. and spend time outside; walking into the grain shed as a married couple; serving after dinner cocktails, and having all our friends and family on the dance floor.” What’s your saving tip? “We used Etsy to save on stationery/invitations. We
used lots of candles to add to the atmosphere in the grain shed.” Any advice? “Enjoy it! The day goes so quickly so take all the moments you can to remember it and soak it all up.”

A gorgeous wedding with a brilliant proposal story! Real bride Tasha tells us about her day... How did Matt propose? “I had arranged a surprise 30th birthday trip for Matt with his parents, his brother and his brother’s girlfriend, to Dubai. His brother slipped up and told him that I was taking him to Dubai but didn’t mention that himself and the rest of the family would be going, too. Whilst in Dubai we attended an amazing brunch at the Atlantis on the Palm. Matt was in the gardens and saw some canvases available to paint on. It was then that he knew this would be a great way to propose and painted the question ‘will you be my wife?’ on to one. I came out into the garden too soon and
was ushered away completely oblivious. Matt then called me over and asked me to marry him!” What dress did you wear? “I wore a beautiful Maggie Sottero dress called Jennita. It was a fit-andflare dress with cascades of embroidered lace appliqué,
a slimming bodice and a sweetheart neckline. I added a beaded, lace, embellished popover jacket by Sincerity in the day for added sophistication. The dress was from Creatiques – an elegant, stylish boutique in Portsmouth. Kayleigh was amazing. She put me at ease, was brilliant at

t’s the morning of your wedding! You’re probably in a world of sheer excitement and utter panic, and don’t quite know what to do with yourself. That’s totally normal! Sitting down and reading for a few minutes may feel like the last thing you want to do right now, but, trust us, this feature will rest any worries you have ahead of the big day, and get you even more excited about the nuptials!
The weather One of the biggest worries of every couple before the wedding, whether you’re marrying in winter or peak summer, you really can’t predict the British weather. So what’s the point in stressing over something you can’t change or affect? What you can do is prepare for all outcomes before the big day, so if the heavens open, you know you have places for guests to take shelter, and lots to do indoors if the garden games
are a no-go. Ultimately, adverse weather isn’t ideal, but it can work in your favour too… No squinty eye photos from the sun, no sweaty guests from the heat, and the opportunity to crack out the wellies and multi-coloured umbrellas for fun photos! Every cloud… Suppliers turning up You’re sat having your breakfast (if you can stomach it) and your mind starts wandering… What
if the band doesn’t turn up tonight? What if the florist gets stuck in traffic? Don’t stress yourself out with ‘what ifs’ or you’ll be a wreck all day! As much as you’ve been planning every detail of your wedding, some things may not go exactly to plan, but you are dealing with professionals whose sole purpose is to give you everything you’ve dreamed of for your big day. won’t want to tarnish that. It’s very easy to spread a bad word these days if they aren’t up to scratch. To ease any anxiety, you can always drop them a quick text or call first thing to make sure they’re all on track. Maybe ask a bridesmaid to do this so it’s one less thing for you to worry about.
Did I order enough food? In terms of the daytime food, often there are canapés going around, and lots of drink, so people aren’t usually ravenous come the wedding breakfast, but that said they will enjoy a good 1-3 course meal. Come the evening, the day guests, especially those that had a three-course meal, will most likely still be full by the evening, or will only want a little something to tide them over. The evening guests, depending on the time they’re invited, will have most likely also had something to eat before they came, but will also like a little something to tide them over. So ordering a meal per head in the evening is most likely going to be too much food. When working out how much food to supply in the evening, we suggest

The guests turning up Your guest list was created by you and your partner, filtered with only the closest friends and family you have. They will know that, and they will be there no matter what. Everyone loves a good wedding, especially one of those closest to you. If anyone was going to cancel, they’d have done it before today, so they WILL be there, fear not.

U
nderestimate this element of your wedding day at your peril! No need to be in the dark about your wedding photography; we shine a lens on how best to capture those most magical of moments with our five top tips for perfect photography… Candid camera Straightforward negotiating with your photographer in advance is essential. You’re the boss here, which means you get to decide which moments of the day you want your photographer to pay particular attention to. Whilst many photographers
prefer to work with a ‘set play’ – photos of the first dance, cutting of the cake etc – having a vision for how you see the day panning out will help you decide what (and when) you want to be photographed. In terms of chronology, then, knowing in the abstract (and before you sit down with your photographer) what sort of a day you want will be key in determining what sort of photos you want! Camera obscura Camera work should be unobtrusive. The idea is to capture some of the most meaningful moments of the day on film but not to feel stage managed or as though
you’re on a film set. A skilled photographer can get the footage they need without distracting you or the guests from enjoying the day, so make sure you check out examples of photographers’ work beforehand.
