Cut a long deep pocket into the thickest side of each breast. Fill each of the pockets with the stuffing mixture, press the chicken breasts back into shape and tie them in 3 places with kitchen string, just tightly enough to keep all that lovely stuffing in the right place.

Arrange the chicken breasts on a rack set over a roasting tin, season lightly then brush each one with a little of the maple syrup. Roast for 35-40 minutes or until the juices run clear, basting twice more with maple syrup. Serve with your favourite vegetables.

POTATO LATKES WITH SMOKED SALMON

Ready in 45 minutes

INGREDIENTS

500g floury potatoes, peeled

1 medium onion

2 large eggs, beaten

Low-calorie cooking spray

200g smoked salmon (you’ll need 12 small slices)

2 tbsp fat-free natural Greek yogurt

Fresh dill sprigs, to serve Lemon wedges, to serve

METHOD

Preheat the oven to 150°C/fan 130°C/gas 2.

Coarsely grate the potatoes and onion using a box grater or food processor. Mix in ½ tsp salt and some black pepper and, working with a little of the mixture at a time, wrap small handfuls up into a square of muslin or a new, thin washing-up cloth and squeeze out as much excess liquid as you can.

Transfer to a large bowl and stir in the eggs.

Place a large lidded non-stick frying pan over a medium heat and spray with a little low-calorie cooking spray. Drop 4 slightly heaped tbsp of the potato mixture into the pan, spaced well apart, and flatten slightly with a spatula. Cover the pan with a lid and fry for 3 minutes or until golden brown. Lift the latkes on to a plate and spray the pan with a little more low-calorie cooking spray.

Return the latkes to the pan, browned-side up, and cook for 3 minutes or until irresistibly crisp on the outside and cooked through. Lift each batch on to a baking tray lined with kitchen paper (or greaseproof paper) and keep them hot in the oven while you cook the rest.

Ruffle small pieces of smoked salmon on to each latke and top with ½ tsp yogurt and a dill sprig. Serve hot with lemon wedges to squeeze over.

BLUEBERRY AND LIMONCELLO TRIFLE

Ready in 15 minutes, plus chilling

INGREDIENTS

4 sponge fingers

2 tbsp lemon juice, plus grated unwaxed lemon zest to decorate

1½ tbsp sweetener granules

100g blueberries, plus 50g to decorate

1 tbsp limoncello liqueur

½ level tsp arrowroot

1 level tbsp custard powder

200ml skimmed milk

2 x 120g pots Müllerlight Greek-style lemon yogurt

METHOD

Put the lemon juice and 1 tbsp sweetener in a small pan over a low heat and warm gently until the sweetener has dissolved. Add the blueberries, bring to a gentle simmer and cook for 1 minute. Stir in the limoncello.

Mix the arrowroot with 1 tsp cold water, stir into the berries and cook for about 30 seconds or until nicely thickened. Remove from the heat, leave to cool then spoon over the sponge fingers to give a lovely purple layer.

Mix the custard powder, 2 tbsp milk and the remaining sweetener in a heatproof bowl. Bring the rest of the milk to the boil in a small non-stick pan. Gradually whisk the hot milk into the custard powder mix, return it to the pan and bring to the boil over a medium heat, stirring. Cool slightly then pour over the blueberry layer. Cool completely then cover and chill for at least 1 hour.

Spoon the lemon yogurt over the trifle and scatter over the extra blueberries. Sprinkle over the lemon zest to serve.

How did he propose?

A BEAUTIFUL, ELEGANT WEDDING

Cara & Ben

A wow-factor traditional wedding for a wonderful couple. Cara tells all...

It was a hot Sunday morning, we cooked an English breakfast together in our home in London. After Ben took his last mouthful of eggs and hash brown, he disappeared for a few moments and reappeared holding a box with an engagement ring in it. He got down on one knee and asked me to marry him! We then went to celebrate at what would be our wedding venue – Monkey Island Estate.

What dress did you wear and where did you buy it?

Suzanne Neville, Pellicano with bow. I visit many bridal stores in London but the quality of Suzanne’s dresses was unmatched. I changed the design of my dress 3 times before the wedding day but I loved Pellicano from the new season, I knew I had to choose this one. I chose to complement the dress with the bow, which I removed for the breakfast. I had a pearl and crystal cathedral length veil and minimal accessories.

What accessories did you wear?

Missoma London Pearl Earrings. My dress was so detailed I really didn’t need any accessories so I kept it simple!

What did the groom wear?

A tailored black three-piece tuxedo from Suit Supply, woven by Vitale Barberis Canonico in Italy. A black velvet bow tie by Lavin and black velvet slip on tuxedo shoes. A white rose for the buttonhole.

How did you feel when you saw him up the aisle?

It was surreal. My focus was on him and only him, I couldn’t hear or see anything else around me. We had a string quartet playing and I have no memory of hearing them play, until Ben’s brother took a step to his right in floods of tears, blocking my view of my soon to be husband. In shock I think I burst out laughing!

Who were your bridesmaids and where were their dresses from?

Three of my best friends. Their dresses were from In the Style. The colour was Champagne satin and were one shoulder with draping down one side. The bridesmaids looked so beautiful and elegant.

What was your wedding theme and how did you create it?

Black tie dress code. Elegant styling, driven by an abundance of white flowers, everywhere. Flowers were such a huge part of our day, the venue really didn’t need all the flowers that we had as the grounds are so beautiful but we had them anyway and it looked even more beautiful

What was the highlight of your day?

Our room entrance! It was something we didn’t really think about too much beforehand. We hired The London Function Band who were absolutely fantastic, they had the guests standing and waving napkins to ‘Cant Take My Eyes Off You’ as we entered the ball room. We also loved our wedding ‘cake’ made by Monkey Island. It was a large summer Pavalova and everyone took a slice back to their hotel rooms for a midnight snack!

What was your best buy?

The London Function Band. We didn’t want a DJ and the music was important to us. They helped us from day one with planning and offered advice where needed. The energy and atmosphere throughout the evening was fantastic. They even got both our 85 and 90 year old grandmothers up on the dance floor to boogie! To this day our friends and family are still talking about how great they were.

What’s your saving tip?

Creating a realistic budget really helped us to save for the big day. We focused on aspects of the wedding that were most important to us being the venue, photographer, music and food, and made sure the majority of the budget was spent on these areas. We used a spreadsheet to track all of the expenses which ensured we stayed within our limits!

A WINTER WONDERLAND WEDDING

Faye & Taylor

A dreamy December wedding for a lovely couple. Faye reveals more...

How did he propose?

At home with our sausage dog, Richmond. Taylor played a video of our best memories and at the end the question came up on the screen. As a turned to look at him he was on one knee! It was perfect and felt so special. I sat on the sofa in silence straight after just looking at my ring, so happy that it had finally happened and I get to work planning immediately! Taylor had arranged a lovely romantic dinner that evening and as we sat in the taxi to the restaurant I couldn’t Whatsapp everyone quick enough!

What dress did you wear and where did you buy it?

We live in Dubai so my dress was purchased from a shop called Esposa Privé. It was so much easier to have a local shop for the alterations! The dress was called Alba by Enzoani. I had been to three shops before I finally found the one and for me. As soon as I put it on, I knew. My veil was a full length and pearl embellished, which hung longer than the end of my dress – that was an important “must have” for me.

What accessories did you wear?

My veil and gloves were both from Esposa Privé. I wore a handmade pearl necklace and drop earrings from Kiri & Belle. I will unashamedly admit that I had 5 pairs of shoes with me for the night before, the day

and evening party. Some decisions are hard to make! My shoes were a mixture of Loeffler Randall, Sophia Webster and René Caovilla. My evening dress was from Vanilla Studio in Dubai and I wore red diamond heart shaped earrings and necklace, which matched my red sparkly shoes.

What did the groom wear?

Taylor had his suit custom made from a shop in Dubai called Suited and Booted. He wore a three-piece tuxedo with his initials sewn into his cuffs and the date of the wedding on the inside of his jacket. He wore a pair of beautiful Christian Louboutin shoes, which we shopped high and low for, for months before! I may be biased, but he looked so handsome and I love having our photos and video to look back on to relive the day, over and over!

How did you feel when you saw him up the aisle?

It felt like a dream – everything we had planned and worked so hard to make our reality was happening. I couldn’t wait to get to the top of the aisle, and I know I was grinning like a Cheshire cat the whole way! I felt like nothing else mattered and was very present in the moment for the entire day. I am usually a top overthinker and over analyser but everything just seemed to fall into place perfectly.

Who were your bridesmaids and where were their dresses from?

I had 5 bridesmaids, my sister, three of my childhood best friends and my Dubai bestie! Our theme was black tie so the bridesmaids wore a bardot pleated full length black dress, purchased from SilkFred. It is always hard finding a dress that suits different body shapes but everyone was so happy and felt comfortable! They wore their own black shoes and I surprised them with matching pearl jewellery. The black bow they wore in their hair was a last minute on the day decision and were handmade by my hairdresser, using the ribbon purchased for the bouquets!

What was your wedding theme?

When thinking about our theme, we knew we wanted it to be a chic magical winter wonderland. Lots of twinkly lights, golds, mirrors and whites. Our flowers were mainly white with some eucalyptus and sprigs of lavender. The lavender was dotted around our venue to symbolize my late sister, everywhere I looked there was a little bit and that made me know she was there. We had a floating flower cloud as you entered the orangery and a light up twig tree, which held lots of glass and mirrored baubles – this really made the room sparkle in the evening.

What was the highlight of your day?

Having everyone together. Living abroad means we don’t

A BEAUTIFUL WEDDING IN BATH

Paul & Paul

This gorgeous couple celebrated their day in style! Our grooms share their story...

Tell us about the proposal

We have a family connection to Pembrokeshire in Wales and were spending a long weekend in a beautiful hideaway on the beach in Abermawr close to St Davids. Sitting by the roaring log burner with the autumn winds blowing and looking out on the raging sea, Paul C proposed and produced a pair of vintage wedding bands. Having lived together for six years, the timing was perfect. It was a beautiful occasion and very memorable!

How did you decide upon your venue and why did you choose it?

We chose the Royal Crescent Hotel for our wedding because firstly, it seemed the obvious choice in terms of what Bath meant to us. There is nothing more iconic than the backdrop of The Royal Crescent itself, so once we had completed our initial walkaround at The RCH, it was clear we both felt it was the perfect choice in terms of style and space (I must add, we turned up unannounced and without making an appointment - the team were so incredibly obliging and that initial introduction to the Hotel made such a lasting impression). We soon established The RCH would be able to cater for our needs and our wedding size - so it was a very natural progression.

In terms of mid-size weddings (we had 40-60 guests in mind) there are very few Hotels across the region that could cater for us without expecting exclusive use at a premium. It was clear very early on that The Royal Crescent Hotel would work closely with us to tailor-make the day and provide enough space for a ceremony, champagne reception and dinner in different rooms and locations, so we could make best use of the hotel and gardens without

compromising the enjoyment of other guests. In the absence of a church wedding, we also wanted somewhere that created a sense of occasion with a formality to the proceedings. The backdrop of The Percey Blakeney Suite with its architectural detail, breathtaking views and ‘ceiling to floor’ picture windows was the perfect setting for the ceremony.

What did you wear?

We decided that we wanted our wedding to have a sense of occasion. Given it was Autumn and with a late afternoon ceremony and reception followed by dinner as the evening light faded, we felt ‘black tie’ would create the sense of style and glamour we were looking to achieve. We were fortunate to find Tim at Gieves & Hawkes in Bath who offered an incredible level of service in choosing the right fabrics, cut and style for our bespoke dinner jackets and trousers. Paul C opted for a white silk tuxedo with satin lapels whilst Paul M chose a contrasting velvet black jacket.

How did you feel seeing each other for the first time on your wedding day?

We didn’t have a ‘big reveal’ as we decided to enter the wedding ceremony together and we had been staying in the hotel the night before. Safe to say that as we were waiting to enter the Percy Blakeney Suite to see our guests and make our wedding vows we both had a tear in our eyes as the string quartet played our entrance music - it was a magical moment.

Was there a theme?

We wanted the ‘wow’ factor with the backdrop of the

hotel and the Royal Crescent so black tie was the obvious choice. We wanted to provide our guests with singularly the most memorable experience and with the help of the Royal Crescent Hotel we were able to achieve that with our choice of champagne, wines, food, flowers and live music.

What was the highlight of your day?

It’s very hard to decide on one as the whole day was seamless from beginning to end. But if we were to be pinned down for an answer, I think it’s two occasions. The most emotional moment was walking up the staircase into the Percey Blakeney Suite with the string quartet playing. There was the most serene and special atmosphere and you could feel the love and anticipation as we entered the room with the Autumn sun streaming through the windows - unusual for late October so we felt incredibly lucky! Secondly, was after the Champagne reception as we walked through the gardens from the hotel to the Montagu’s Mews restaurant with our guests lining the walkway and upon entering the private dining room, everyone cheering and clapping as our Master of Ceremonies announced our arrival. The room looked so incredibly glamorous with candle-lit tables and flowers by Edward Allen and new interior decor by Woodhouse and Law. It was truly a snapshot of the day that we will never forget.

I think the greatest compliment you can receive is when all your guests tell you ‘it was the most elegant and joyous wedding we have ever attended’. Credit must go to Katie, Martin, Lorraine and the team at The Royal Crescent for setting the scene and creating a truly magical day with 5-star service and Michelin-worthy food to complement the luxurious surroundings. Our day was perfect in every conceivable way and we have so many beautiful memories captured in print courtesy of the incredible talent that is Simon Biffen Photography.

What was your best buy?

Taittinger on tap! It almost broke the budget but all the guests commented on what a fabulous gesture it was and it certainly got the reception off to a good start!

What’s your saving tip?

All our wedding stationery (invitations, place cards, menus and thank yous) were sourced from Papier, the online bespoke stationers. The quality, choice and style were exceptionally high.

HOW TO WRITE A

Wedding Speech

Whether you’re the best man, maid of honour or a parent, these pointers from Laura Bremner, Wedding Coordinator at Hensol Castle, will help you write the best speech possible...

KNOW YOUR AUDIENCE

Understanding your audience is crucial. A wedding reception typically includes family, friends and possibly even colleagues of varying ages. That is why you should keep your speech appropriate for all ears. Avoid controversial topics, inside jokes that few will understand and overly sentimental stories that might embarrass the happy couple.

STRUCTURE YOUR SPEECH

A well-structured speech has a clear beginning, middle and end. Start with an engaging opening, perhaps a personal anecdote or a quote about love. The middle should then focus on stories or experiences with the couple, highlighting their qualities and journey together. Conclude with heartfelt wishes for their future.

KEEP IT CONCISE

While it’s tempting to share every memory, it’s important to remember that less is more in this situation. Aim for a speech that lasts no longer than five minutes. This ensures you maintain the audience’s attention and keep the event moving smoothly. Reading your speech out loud will help you to gauge its length and adjust as needed.

HUMOUR IS YOUR FRIEND

A bit of humour can go a long way in keeping your speech lively and enjoyable. Gentle teasing is fine, but steer clear of jokes that could be misinterpreted and might offend the couple or any of their guests. The goal is to celebrate the couple not to roast them.

THANK THE IMPORTANT PEOPLE

Take a moment to acknowledge and thank key individuals such as the couple’s parents, the wedding party and anyone who played a significant role in the wedding. This adds a gracious touch to your speech whilst recognising the efforts of those who contributed to the special day.

PRACTISE MAKES PERFECT

Rehearse your speech multiple times. Practising helps you become familiar with your content which will help you deliver your speech smoothly. Consider practising in front of a friend or family member who can provide constructive feedback.

TOAST THE NEWLYWEDS

Raise your glass and invite the guests to join you in wishing the couple a lifetime of happiness.

HONEYMOON BLISS IN Prague

Consider this beautiful spot in the Czech Republic to celebrate your newlywed status!

Nestled in the heart of Europe, Prague, the capital of the Czech Republic, is a city that feels like a fairytale come to life. With its stunning architecture, cobblestone streets, and vibrant culture, Prague offers an unforgettable honeymoon experience. Whether you’re exploring historic landmarks or indulging in local cuisine, this enchanting city provides the perfect backdrop for

romance. To make your honeymoon experience even more seamless, book a luggage storage in Prague like Bounce, allowing you to explore the city unencumbered and fully enjoy every moment together. Here’s a guide to making the most of your honeymoon in Prague.

The Magic of the Old Town

Begin your honeymoon in the historic Old Town Square,

where you can admire the breathtaking Astronomical Clock and the Gothic spires of St. Vitus Cathedral. Stroll hand in hand through the cobblestone streets, taking in the beauty of the pastel-coloured buildings. Don’t miss the chance to climb the Old Town Hall Tower for panoramic views of the city—a perfect moment to capture with a photograph.

As the sun sets, the square transforms into a romantic hub, illuminated by soft lights. Consider dining at one of the outdoor cafes, where you can sip Czech wine and savour traditional dishes like goulash or svíčková. The ambiance is alive with street performers, adding to the magical atmosphere.

Charles Bridge: A Stroll Through History

No honeymoon in Prague would be complete without a walk across the iconic Charles Bridge. This 14th-century masterpiece is lined with statues and provides stunning views of the Vltava River and Prague Castle. Early morning is the best time to visit, as the bridge is less crowded and you can enjoy a quiet moment together.

As you stroll, look for the statue of Saint John of Nepomuk—legend has it that touching his statue brings good luck. Feel free to make a wish together, adding a touch of whimsy to your romantic journey. After crossing

the bridge, explore the picturesque streets of Lesser Town, with its charming cafes and boutique shops.

A Day at Prague Castle

A visit to Prague Castle is essential for any honeymooning couple. This vast complex includes the stunning St. Vitus Cathedral, the Old Royal Palace, and the beautiful gardens. The castle’s history dates back to the 9th century, and wandering through its grounds feels like stepping into a storybook.

Consider booking a guided tour to learn more about the castle’s rich history and secrets. Afterward, take a leisurely walk through the Royal Gardens, where you can enjoy the tranquillity and beauty of the surroundings. Pack a picnic to share on the grassy slopes while soaking up the panoramic views of the city.

A Romantic Evening Cruise

As evening falls, treat yourselves to a romantic dinner cruise on the Vltava River. These cruises offer a unique perspective of the city’s illuminated skyline, with the lights of Prague Castle and Charles Bridge reflecting on the water. Many cruises include a delicious dinner featuring traditional Czech cuisine and live music.

For an even more intimate experience, choose a

private boat ride. This allows you to enjoy the sights at your own pace, with a bottle of champagne to toast your love under the stars. The serene atmosphere of the river combined with the city’s twinkling lights creates a magical setting that you’ll cherish forever.

Exploring the Enchantment of Vyšehrad

For a quieter escape, head to Vyšehrad, a historic fortress that offers stunning views of the city and the Vltava River. This lesser-known gem is perfect for couples seeking a peaceful retreat. Explore the beautiful gardens, visit the Basilica of St. Peter and St. Paul, and walk along the ramparts.

Vyšehrad is also home to a charming park where you can relax and enjoy each other’s company. The area is steeped in legend and history, making it a perfect spot to reflect on your journey together and dream about your future.

Indulge in Czech Cuisine

A honeymoon in Prague wouldn’t be complete without indulging in the local culinary delights. Explore the city’s vibrant food scene, which ranges from traditional Czech fare to modern fusion cuisine. Don’t miss trying trdelník, a sweet pastry often filled with ice cream or chocolate, perfect for sharing.

For a romantic dinner, consider dining at a Michelinstarred restaurant or a cosy bistro tucked away in a charming alley. Pair your meals with Czech beer or wine, as the country is known for its excellent brews and emerging vineyards.

Art and Culture: A Day of Discovery

Prague is rich in art and culture, making it an ideal

destination for couples who appreciate creativity. Spend a day visiting some of the city’s many galleries and museums. The National Gallery and the Museum of Decorative Arts offer fascinating collections that showcase both historical and contemporary works.

In the evening, catch a performance at the National Theatre or the Estates Theatre. The ambiance of these historic venues adds to the romance of the experience. Whether it’s opera, ballet, or a concert, sharing a cultural experience will deepen your connection.

Relaxation and Wellness

After a few days of exploring, take some time to unwind together. Prague is home to numerous spas and wellness centres where you can indulge in a couple’s massage or relax in a sauna. Many spas incorporate traditional Czech treatments, including beer baths and herbal remedies. Consider booking a private wellness experience for just the two of you, allowing you to recharge and enjoy each other’s company in a tranquil setting.

Final Thoughts: Creating Lasting Memories

As your honeymoon in Prague comes to an end, take a moment to reflect on the memories you’ve created together. From the romantic strolls along the river to the breathtaking views from the castle, each experience has contributed to the tapestry of your love story.

Prague is a city that captivates the heart, making it a perfect destination for newlyweds. With its rich history, stunning landscapes, and vibrant culture, your time in this enchanting city will undoubtedly be a cherished chapter in your journey together. Embrace the magic of Prague and let your love story unfold amidst its charming streets and timeless beauty.
