Bellissima Weddings opened her doors in 2001 with a definite mission in mind; to showcase some of the best bridal designers and labels in luxurious surroundings, so that all brides would experience bridal shopping as it should be. Your bridesmaids need to bite the bullet and be there to support you throughout your planning process, from wearing the dress you choose through to being available for rehearsals. Choose your girls very carefully, because the last thing you’ll want is to have your bridesmaids causing you more stress than comfort in the build up to the big day. It’s usually safer to go for family or long-term friends rather
than your ‘friend of the moment’. PUT THEIR SKILLS TO USE Do your bridesmaids have skills you can use on the day? Is one of them a natural performer and could sing during the ceremony? Can one bake your wedding cake? Is anyone crafty and can help make your stationery? The more they can input to your day the less stress for you and you’ll save money, too! PARTY PLANNERS Your bridesmaids will know you better
than most people, so trust them to choose the best hen party for you. This is the one time you don’t have complete control in the build up to the wedding. Big burger and fries

Ready in 45 minutes
METHOD
INGREDIENTS 1 onion, finely chopped 4 garlic cloves, crushed 1kg lean beef mince (5% fat or less) 2 tbsp Worcestershire sauce 4 eggs* 4 x 60g wholemeal rolls, split and toasted Salad veg such as shredded lettuce, sliced tomato and sliced red onion, to serve
Preheat your oven to 200°C/fan 180°C/gas 6.
For the chips: 1kg floury potatoes, cut into chips Low-calorie cooking spray
lightly and combine using your fingers. Divide the mixture into 8 equal portions and shape into burgers. Spray the burgers with low-calorie cooking spray and grill for 10-12 minutes or until cooked through, turning halfway.
First put the chips in a saucepan of boiling water over a high heat and cook for 5 minutes. Drain and return the chips to the pan, shaking it to rough up the edges. Transfer the chips to a non-stick roasting tin, spray with low-calorie cooking spray and spread them out in the tin. Cook in the oven for 25-30 minutes or until tender.
Spray a non-stick frying pan with lowcalorie cooking spray, place over a medium heat and fry the eggs to your liking.
Meanwhile, preheat your grill to high.
* Pregnant women, the elderly, babies and toddlers are advised to choose eggs showing the British Lion stamp if eating raw or partially cooked eggs.
Put the onion, garlic, beef and Worcestershire sauce in a bowl, season
Fill each roll with salad and 2 burgers. Top with a fried egg and hold it all in place with a cocktail stick if needed. Serve hot with the chips.

Fish and chips Ready in 45 minutes

INGREDIENTS 4 skinless and boneless cod fillets Juice of 1 lemon, plus wedges to serve 1kg floury potatoes, peeled and cut into thick chips 2 eggs 2 slices of wholemeal bread (from a small 400g loaf), crumbed A small handful of finely chopped fresh parsley For the tartare sauce: 200g fat-free natural yogurt 2 tbsp roughly chopped cocktail gherkins or cornichons ½ red onion, finely chopped juice of 1 lemon, plus wedges to serve A small handful of finely chopped fresh dill METHOD Preheat the oven to 200°C/fan 180°C/ gas 6 and spray two non-stick baking sheets with low-calorie cooking spray. Put the cod fillets in a bowl, sprinkle over the lemon juice and season to taste. Cook the chips in lightly salted boiling water for 5 minutes then drain and dry on kitchen paper. Return the chips to the pan and shake to rough up the edges, then tip them on to one of the baking sheets and spread them out. Spray with low-calorie cooking spray, season to taste and cook on the top shelf of the oven for 25-30 minutes. Meanwhile, lightly beat the eggs in a wide bowl. Mix the breadcrumbs, most of the parsley and some seasoning in another wide bowl. Dip each cod fillet first into the egg and then the breadcrumb mixture to coat evenly and arrange them on the second baking sheet. Put the fish into the oven on the shelf below the chips and cook for 15-20 minutes or until the fish is cooked through. Make the tartare sauce by mixing all the ingredients in a bowl, reserving a little gherkin and onion to sprinkle on top. Scatter the remaining parsley over the fish and serve hot with mushy peas, tartare sauce and lemon wedges to squeeze over.

Prawn noodle stir-fry Ready in 25 minutes INGREDIENTS Low-calorie cooking spray 250g vegetable stir-fry mix A large thumb-size piece of root ginger 200g fine or medium dried egg noodles 250g raw frozen peeled prawns, defrosted 1 bunch spring onions, finely sliced 2 tbsp reduced-salt soy sauce 25g coriander, leaves roughly chopped, plus sprigs to serve Juice of 1 lime, plus 1 lime cut into wedges to serve

METHOD Spray a large, deep, non-stick frying pan or wok with low-calorie cooking spray and place over a medium-high heat. When hot, add the stir-fry mix and the ginger, and cook for 4-5 minutes, stirring, until fragrant. Cook the noodles according to the pack instructions. Drain then rinse under warm water.
Meanwhile, add the prawns to the stir-fry and cook for 3-4 minutes, or until they’re pink and cooked through. Stir the spring onions, soy sauce and most of the coriander through the stir-fry, with the lime juice. Divide the noodles between 4 plates, then top with the stir-fry and scatter over the coriander sprigs. Serve with the lime wedges for squeezing.

Bella & Sam After several postsponements and many highs and lows, this happy couple finally said ‘I do’. Bella tells all... What was your wedding date and venue? We originally were meant to get married on Sunday 16th August 2020. However due to COVID, we had to postpone 4 times. We eventually became Mr and Mrs Charman on Thursday 23rd December 2021 at Kingscote Barn, Tetbury. The day was full of emotion because I sadly lost my dad to COVID in January 2021, which was hard as he should have been there for our original date. The day was beautiful, and it was everything we wanted and more. Kingscote looked after us from the time we booked the venue, to postponing four times, and on the day. We couldn’t fault them. They were one of the best decisions we made.
design was Made with Love and the dress was called Sasha. Laura and the team at The White Collection were incredible, they made me feel so special and comfortable and I couldn’t fault them at all. I loved their mantra in the dressing room, and I knew then that I had to get my dress from there. Whilst picking my dress we had champagne, marshmallows and when you say yes to the dress, you get a polaroid to keep to remember the special moment. This was a very special touch. I also got my alterations done by Abigail Westrup Bridal (https://abigailwestrupbridal.com/ about/). Abi has the premises next door and she works closely with the team at The White Collection. Abi and The White Collection kindly kept my dress in storage for two years because we had How did Sam propose? to postpone so many times. What did the groom wear? The groom, best men and groomsmen wore black chinos and a tweed jacket from M&S, white shirt from TM Lewin, forest green ties from Burtons, black suede Chelsea boots from Hush Puppies and Sam also wore cufflinks from Faye Page with co-ordinates from Kingscote Barn and the beach Sam proposed to me on. How did you feel when you saw him up the aisle? I was full of emotions seeing Sam standing at the end of the aisle. I was overwhelmed with emotion that the day was finally happening, and I was going to marry my best friend in a room full of our dearest people. Sam looked incredibly emotional, and I knew walking down the aisle without my dad was going to be hard, but having my youngest nephew next to me, all our friends and family in one place with our favourite song playing, I knew it was going to be ok. I walked down the aisle to The XX, Angels, this was very special as we played this song to dad when we turned off the ventilator. I knew as soon as it started playing and looking into Sam’s eyes that we were going to be ok, and that Sam
was going to look after me for life. It was a very special moment. Who were your bridesmaids and where were their dresses from? My bridesmaids wore an emerald green dress from Monsoon. My bridesmaids were my maid of honour Kelly, my sister Kelly, Fi (who sadly had COVID and had to tune in via TEAMS on the day), Laura, Corrin, Clarrie, and my goddaughter Erin and niece Sophia were flowergirls. What was your wedding theme and how did you create it? We went from a summer beach theme in August to a winter wonderland theme in December. We decided to make a lot of the decorations ourselves. We painted baubles in emerald-green for our placenames, we made our own lanterns, we made our own decorations for inside the lanterns and our own Mr and Mrs wreath. We had a lot of Christmas trees everywhere and fairy lights and we really wanted people to feel the Christmas spirit on the day. We had welcome drinks of mulled wine and cider and a gin bar. We had sparklers in the evening around the 10ft Christmas tree outside at Kingscote and we wanted people to wake up on Christmas Eve ready to celebrate again with their M A Y / J U N E 2 0 2 2 ♥ L OV E O U R W E D D I N G ♥ 71

family and friends. The bridesmaids had leather jackets with their names on the back to keep them warm. The flowers had pinecones in them, and we wanted everyone to smell fresh pine wherever they were. The day felt magical, and I would highly recommend a cosy Christmas theme. What was the highlight of your day? There are so many it’s hard to pick one. I loved getting ready with my close friends and family in our matching pyjamas and spending some time together in the morning, it was so exciting being on site as guests arrived. I loved our musician for the day https:// michaelmulhollandacoustic.com/. Michael played an acoustic set on the top of the balcony as the guests arrived. He played songs all day that were special to us and have significant memories. Michael was a real highlight – he made people cry, smile, laugh, dance, and sing their hearts out. It was very special seeing Sam at the end of the aisle and I will never forget seeing him, that image will stay with me for life. Finally, we loved our wedding breakfast and speeches. my nephew and I did one. The speeches made people laugh and cry and the room felt full of emotion. It was beautiful. What was your best buy? We kept many of our suppliers within 5 miles of Portishead, and this felt special. We wanted to support local businesses and try where possible to keep costs down. We made most of our decorations, and we decorated the barn ourselves.

Anja & Casa We can’t get enough of this sophisticated day. Real bride Anja shares her story... How did your partner propose? My partner proposed to me in January of 2020. We went to the beach after work on a beautiful, balmy summer’s evening. He was acting very strange the whole time – at some point I was looking at the waves and when I turned around he had a ring in his hand. We’re both very outdoorsy, so this was the perfect proposal!
What dress did you wear and where did you buy it? I wore a gorgeous dress by Elbeth Gillis – the Charlotte gown with a removable off-the-shoulder collar. Both of these pieces are from her Grace collection. And the accessories? My whole wedding was very simplistic, down to the accessories. I only wore a pair of pearl chandelier earrings

wedding was extremely intimate – there were only 9 people in total, this in itself was a highlight for me, because I was completely present for every moment of our big day. What was your best buy? Hands down my dress by Elbeth Gillis. The material is so incredibly luxe, it really made me feel like royalty!
