Middle Eastern Couscous (Maftoul)
2-1/4 c. broth or stock
1 cinnamon stick
2 cardamom pods
1/2 tsp. salt (more if your stock is not salted)
Freshly ground pepper, to taste
1/3 c. chopped figs (or apricots or another dried fruit)
1/3 c. hot water or stock
4 T. butter
1/2 c. pine nuts
1-1/2 c. couscous Minced fresh parsley
• In a small saucepan, warm the stock with the spices.
• To prepare the fruit, soak the figs in the 1/3 c. of water or stock.
• Melt the 1 T. of butter in a small skillet on medium heat. When it melts, add the pine nuts and cook, stirring until they brown slightly, about 5 minutes. Set aside. Be careful: the nuts will continue to cook in the skillet after you take them off the heat.
• Melt 3 T. butter in a medium saucepan over medium-low heat. Add the couscous and cook, stirring for 1 minute.
• Strain the stock and add it to the couscous. Bring to a boil, then reduce heat to the lowest setting. Cover and cook 7-10 minutes until all liquid is absorbed and the couscous is cooked.
• Drain the figs and stir them and the pine nuts into the couscous. Fluff with fork to remove lumps. Serve with chopped parsley.

Happy Jazz Appreciation Month! We’ll kick off things on Monday, April 3, with a visit from jazz educator Monika Herzig to our weekday afternoon jazz program Just You & Me. On Thursday, April 6, host David Brent Johnson will feature records from the late 1950s and ’60s that brought together saxophone giant John Coltrane and Indiana trumpeter Freddie Hubbard. Pianist and IU Jacobs jazz alum Jake Richter will stop by the show on Thursday, April 27. This program will also offer a preview of the IU Jacobs School of Music’s spring jazz celebration highlighting faculty member Brent Wallarab’s Gennett Suite, an extended work inspired by legendary jazz recordings made in Richmond, Indiana during the 1920s.
Speaking of the 1920s, take a trip back 100 years for the Afterglow show on Friday, April 21, which looks at songs that hit big in 1923 and then stuck around. Afterglow also pays tribute on April 7 to the late songwriter Burt Bacharach, who passed away in February at the age of 94, and whose collaborations with lyricist Hal David found favor among jazz as well as pop singers of the 1960s.
You can hear more Freddie Hubbard on the April 7 edition of Night Lights that explores his early-1970s recordings for the CTI label. Other Night Lights shows this month delve into the jazz history of Detroit and Duke Ellington’s post-World War II big band.

Last month, we launched a new perennial design on some of our thank-you gifts for the Spring Fund Drive. The artwork is the outcome of a station collaboration with local artist Tonja Torgerson. Torgerson chose the plants in this perennial design for their symbolism: angelica symbolizes inspiration, and grape hyacinth represents knowledge or wisdom. Both are found all over Indiana and are common garden flowers in this region. The headphones have a nod to both the listeners and the makers. They are equipment hosts use in the studio when producing radio and are also a way people can engage with our programming, through listening. Iconic America: Our Symbols and Stories with David Rubenstein
Wednesday, April 26 at 10pm
David Rubenstein explores American history through a close examination of iconic national symbols: indelible artifacts, places, and archetypes. Rubenstein is on location and in conversation with historical thinkers, community members, and subject matter experts. Together, they dive deeply into each symbol’s history and how its meaning has changed over time, using these symbols as a gateway to understand America’s past and present.
The subjects of the series’ eight episodes are Fenway Park, the Hollywood Sign, the Gadsden Flag, the American Cowboy, the Statue of Liberty, the American Bald Eagle, Stone Mountain, and the Golden Gate Bridge. Shot on location across the country, Rubenstein invites historical experts and community members to examine myriad ways Americans engage with these subjects. The series spotlights how these icons were created and how the perception of them formed and changed. These manifestations of our cultural history are sometimes highly contested as different groups invest them with distinct meanings. The symbols that endure speak to what a society values and how people see themselves—and they help us to contextualize a nation’s shared past in the present moment.
Rubenstein journeys to an array of regions and communities, from Boston to San Francisco and New York to Oklahoma City. He conducts interviews with historians and history makers from the worlds of sports, politics, entertainment, and academia, including David “Big Papi” Ortiz (former Red Sox player) and Lake Iolani Stevens (Women’s Ranch Bronc Champion); Rep. James E. Clyburn (D-SC) and former Rep. Adam Kinzinger (RIL); Sylvester Stallone (actor, screenwriter, and filmmaker) and Melissa Rivers (writer, host, and producer); Hasan Kwame Jeffries (associate professor of history at The Ohio State University) and Michael Boulware Moore (chief executive officer of the International African American Museum).
